‘Crockett Co. DeerFest will return in 2021’

For more than 30 years, the Crockett County DeerFest has been an annual tradition held in Ozona every December.

In this unprecedented year of 2020, the Crockett County DeerFest Board of Directors has decided to cancel this year’s even due to the COVID-19 pandemic.

“With the gathering restrictions imposed by Governor Greg Abbott, the board could not see a way to hold the event and feel like we could raise enough funds to continue our community service donations,” said DeerFest Board President Ben Forehand. “Even though we regretfully voted to cancel this year’s event, our board pledged to guarantee funds to all of our volunteer groups from the 2019 event.”

Even though Crockett County DeerFest will not hold an in person event this year, the organization is still seeking donations to help fund local organizations.

“As always, the Crockett County DeerFest Board is humbled and honored by any and all donations we receive. Crockett County DeerFest will return in 2021,” Forehand said.

The Crockett County Deerfest was created 30 years ago as a community-wide appreciation banquet for hunters.

Typically 1,000 to 1,500 people attend the event.

They are fed a meal of chicken-fried deer, turkey, axis, deer sausage, deer chili, deer tamales, and brisket.

Over the years, the Deerfest Association has raised enough money to help fund the construction of the Crockett County Fair Park Convention Center in which the event is now housed.

The Deerfest Association has purchased A/V equipment and put a roof on the community daycare center.

The association helped finance the construction of the Crockett County EMS building.

Along with this, the Deerfest contributes yearly to the Crockett County 4-H, Knights of Columbus, Our Lady of Perpetual Help Youth Ministry, The Ministerial Alliance, The Crockett County Volunteer Fire Department, The Boy Scouts, The Cub Scouts, The Girl Scouts, The Crockett County Youth & Civic Center, The Ozona Community Center and the Crockett County EMS. The DeerFest also helped fund this year’s annual Fourth of July Fireworks Show.

Each year, 10% of the admission proceeds are donated to West Texas Rehab. After the 2015 event, the association donated $2,000 to the West Texas Rehab of Ozona.

To date, Crockett County Deerfest Association, with help from its generous contributors and sponsors, has donated over $452,669.62 back into the community.

DeerFest also contributes to the education of local youth by giving annual scholarships.

The 2020 DeerFest scholarship recipients

were: Jacob Childress, Braeden Gutierrez, Manuel Torralba, Humberto Torralba and Carlie Ramos.

The 2020 elected officers are: Ben Forehand, president; Michael Mitchell, vice president; Jimmy Nowell, vice president; Jared Shaffer, secretary and Amy Cowley, treasurer. Board members are: Ryan Cathy, Zared Harrison, Shelby Harrison, Mike Lee, Dom Perez, Daun Williams and Gary Yeager.

All monies are raised from the sale of door prize tickets, admission fees and donors’ generous contributions. Among prizes given away in 2019 were a 2019 Mahindra ROXOR UTV, a Honda Rancher 420, 91 guns, $10,000 in Cabela’s gift cards and numerous additional prizes.

“Without your help, none of this would be possible. We humbly ask that you keep us on your list of charitable donations so that we may continue to pay it forward,” Forehand said. “Crockett County would not be what it is today without the foresight of the founding members or the continued community support. We will need your support again this year and next year. It is the people of Ozona, with the help of Crockett County Hunters, who have made DeerFest what it is.”

This year started off really good but has turned dry as of late in the summer. All in all the critters that I have seen look very healthy and the deer herd seems to be plentiful. As our department moves in a more digital direction, you will find the Outdoor Annual in an app form for your devices. This will include all of the changes for the upcoming season as well as season dates and most of the information you will need to be successful.

I really like the new format of the Outdoor Annual and think that it makes it very easy to find the particular animal and season for that animal. I still receive several calls every year over trespass issues. If you open the downloaded app and click on the hunting tab you will find this answer under general regulations. The trespass information is on the page that discusses unlawful

You will find that in Texas it is unlawful to enter property that is agricultural, fenced, posted with signs, or marked with purple paint without the expressed permission of the owner. If you would like further information on trespass it is found in the Texas Penal Code section 30.05. The purple paint isn’t new but I wanted to make sure people are aware that this does in fact mean no trespassing.

In short it is illegal to possess a deer or any part of a deer that has been hit by a motor vehicle.

Although this law has been around for sometime we still find many hunters do not know about it or have not been to a class. Hunter Education is required for all hunters including out of state hunters born on or after September 2, 1971. If you do not have Hunter Education and fall within the age requirement you are eligible to purchase a Hunter Education Deferral. The deferral may be purchased only

Welcome hunters to Crockett County, Texas.

We are glad you are here and hope that you have a pleasant experience and a successful hunt.

There are several changes this year to the Outdoor Annual (OA).

Firstly, many of you probably know that there were fewer OAs available overthe-counter last year. This year there will not be any in print. The department has moved the OA to a completely digital format.

You can download the Texas Outdoor Annual app from the app store to

your mobile device. Once downloaded, the information can be accessed even when in no-service areas.

Here are a few nice upgrades to the app this year: Users can see sunrise and sunset times for their current location. They are accessed when sunrise and sunset regulations are referenced for migratory game birds: OA app > Hunting > Seasons by Animal > Dove; also accessed when selecting: Menu > Sunrise & Sunset. Users can see saltwater species identification illustrations when accessing the OA: OA app > Fishing > Saltwater Fishing > Bag & Length Limits page.

Some of you may also have noticed that recreational boating regulations are now included in OA app. I have encountered several canoeists and kayakers this year with no PFDs (life jackets). Remember, if it is windblown, powered mechanically (even a trolling motor), or paddled, poled, or oared, it is a vessel and you

must have PFDs for every person on board. On vessels under 26 feet in length, children under 13 must be wearing a size-appropriate PFD while underway, drifting, not at anchor or made fast to the shore. This requirement includes paddleboards as they are considered vessels now.

Inflatable rafts and kayaks are also vessels and occupants must have PFDs. Inner tubes are not vessels as they are propelled by hand or current.

The OA can also be accessed online at: https://tpwd. texas.gov/regulations/outdoor-annual/. On the landing page you will notice that the various sections of the outdoor annual are printable and available for download in PDF format. Lastly, Texas game wardens appreciate your support. Who needs to take Hunter Education?

Every hunter (including out-of-state hunters) born on or after Sept. 2, 1971, must successfully complete a hunter education training course.

Proof of certification or deferral is required to be on your person while hunting. Minimum age of certification is 9 years.

Cost of a single-day in-person course is $15. Persons 17 years of age and older have the option of taking the course in person or online. The cost of an approved online course varies by provider. For information about various course options, call (800) 792-1112 or visit TPWD Hunter Education.

AGE REQUIREMENT If you were born on or after Sept. 2, 1971, and you are: • Under 9 years of age: You must be accompanied. Accompanied means: By a person (resident or non-resident) who is at least 17, who is licensed to hunt in Texas, who has passed hunter education or is exempt (born before Sept. 2,

1971), and you must be within normal voice control.

• Age 9 through 16: You must successfully complete a hunter education course or be accompanied.

•Age 17 and over: You must successfully complete a hunter education course; or purchase a “Hunter Education Deferral” and be accompanied.

MILITARY & LAW ENFORCEMENT HUNTER EDUCATION EXEMPTIONS The following persons are exempt from requirements to complete a hunter education course to hunt in Texas: • Active duty members and honorably discharged veterans of the United States armed forces; • Active duty members or those who have previously served as members of the Texas Army National Guard, Texas Air National Guard, or the Texas State Guard; or • Persons who are serving or have previously served as

a peace officer as described by Subdivision (1), (2), (3), or (4), Article 2.12, Code of Criminal Procedure.

PROOF OF CERTIFICATION Proof of certification or deferral is required to be on your person while hunting. Certification is not required to purchase a hunting license.

HUNTER EDUCATION DEFERRAL Allows a person 17 years of age or older who has not completed a hunter education program to defer completion for up to one year. A deferral

Common Sense Precautions FOR HANDLING AND PROCESSING DEER

Normal field dressing and trimming fat from meat will remove lymph nodes and other parts that accumulate prions. The diagram shows some main locations of lymph nodes and other tissues where prions concentrate.

Do not shoot or eat any part of a deer that appears sick. If hunting within a CWD Containment Zone or High Risk Zone, please accurately document the location of any deer that appears sick and contact a TPWD office or call TPWD headquarters in Austin toll-free at (800) 792-1112 and enter 5 for wildlife and 1 for general wildlife information. Or contact TAHC toll-free at (800) 550-8242.

Wear rubber or latex gloves.

All internal organs and inedible carcass parts should be left at the site of harvest.

Clean processing knives and equipment of residue and disinfect with a 50/50 solution of household chlorine bleach and water. Wipe down counters and let them dry; soak knives for one hour.

There are some parts of the deer you should never eat, even if the animal looks healthy.

The parts listed below are tissues where prions generally concentrate.

Common sense precautions while handling and processing deer should be taken at all times. Chronic Wasting Disease (CWD) is one of many diseases that can affect deer. CWD is a fatal transmissible neurological disease that affects cervid species such as white-tailed deer, mule deer, elk, red deer and sika. It is classified as a transmissible spongiform encephalopathy, a family of diseases that includes scrapie (found in sheep) and Bovine Spongiform Encephalopathy (BSE; found in cattle). Much remains unknown about this disease.

The peculiarities of its transmission, infection rate, incubation period, and potential for transmission to other species are still being investigated. What is known is that CWD is invariably fatal, and can be passed directly from deer to deer and indirectly through environmental contamination. Scientists believe CWD is caused by a misfolded protein (“prion”) that replicates and infects other normal proteins. Prions generally concentrate in the brain, spinal cord, eyes, lymph nodes and spleen, and they are shed in saliva, urine, blood, soft-antler material, feces, and from decomposition of an infected animal. There is no scientific evidence that chronic wasting disease can infect humans or domestic livestock.

General Precaution

What parts can I use?

Wear rubber or latex gloves.

If removing antlers, soak the blade of the saw used in a bleach solution for one hour.

If hunting within a CWD Containment Zone or High Risk Zone, it is recommended that harvested deer be quartered and head detached in the field and all other carcass parts be left at the site of harvest if it is not possible to dispose inedible carcass parts in a landfill (or buried at least 6 feet deep).

Bone out the meat from the deer and remove all fat and connective tissue (the web-like membranes attached to the meat). This will also remove lymph nodes.

These inedible parts also should be left at the site of harvest, or disposed of in a landfill, or buried at least 6 feet deep.

Thoroughly clean and sanitize equipment and work areas with bleach solution after processing.

Clinical symptoms/signs of sick deer

Never eat meat from a deer that looks sick.

Please note that many diseases in deer cause many of the same symptoms as CWD, and not all symptoms/signs of CWD will occur in all cases.

The department will make every effort to publicize the designation and location of CWD Zones and check stations, as well as any special regulations that may be adopted following the publication of this guide. A hunter who harvests a CWD-susceptible species outside a CWD Zone and wishes to have the animal tested for CWD should contact a wildlife biologist in that area.

How to Bring Harvest to Check Stations

All CWD-susceptible species harvested within the CWD Zones listed are required to be sampled for CWD. Carcass movement restrictions do not apply if the carcass will not be moved outside of a CWD Zone. However, it is recommended to always properly dispose of unused carcass parts.

A hunter who leaves a CWD Zone with a harvested animal must quarter the animal and remove the head from the carcass 2–3 vertebrae below the head.

Place head in a plastic trash bag and keep cool until arriving at a CWD check station.

Heads can be disposed of at the CWD check stations provided the hunter has a CWD receipt, which serves as a proof-of-sex document.

WILD GAME CHILI 2 poblano chilies 6 ancho chilies ½ lb. bacon, ground 1 lb. venison, ¼” cube (hindquarter is the best) 1 lb. wild boar, ¼” cube (hindquarter is the best) 2 lbs. yellow onions, ¼” dice ½ cup garlic, minced 2 ribs celery, diced 2 cups tomatoes, ¼” dice 2 cups veal stock Juice and zest of 1 lemon 2 tablespoons brown sugar 3 tablespoons cumin ¼ cup chili powder 2 tablespoons salt 2 teaspoons cayenne (diced jalapeño or serrano peppers are a great substitute for dry cayenne) Blister skin from poblanos, peel, then remove seeds and ribs. Cut into ¼” dice.

Remove seeds from ancho chilies. Soak in half cup water to soften about 10 minutes.

Purée in blender with a little veal stock. Set aside.

Render the fat from the bacon and reserve the cooked bacon and the drippings.

Clean all the venison and wild boar free of connective tissue and silverskin, and with

a sharp knife cube into ¼” pieces.

Next, brown the meat in small batches using high heat, a large heavy pot or skillet and several tablespoons of bacon drippings. By cooking in small batches you will sear and brown the meat quickly. This will give you the proper texture and color -- rich brown, not gray.

Remove the meat and set aside while you sauté the onions, garlic, celery, and poblanos in the same pot used for the meat. Add bacon drippings as needed.

Add the cooked bacon, then the tomatoes, veal stock, lemon juice and zest, brown sugar, cumin, chili powder and puréed anchos.

Bring to a boil and reduce to a simmer. Add the browned meat and simmer slowly for 45 minutes to an hour, adding a little beer or water as it becomes too thick.

Toppings vary from salsa to grated cheese, goat cheese or flavored sour creams. We are partial to our Tomatillo White Chocolate Sauce as a topper.

BROWN VEAL STOCK Yield: 1 gallon

½ cup vegetable oil 8 lbs. veal bones, browned (we use lots of wild game bones, as well) 1 lb. mirepoix, browned-50% onion chopped; 25% celery, chopped; 25% carrots, chopped 2-3 oz. tomato paste

4 cloves garlic, whole 1 tablespoon whole black peppercorns 3 bay leaves 2 cups burgundy 6 quarts water Preheat oven to 400º Place bones in a single layer in a large pre-heated pan with ½ cup of oil. Roast 2 hours.

Add mirepoix and tomato paste in the last twenty minutes to caramelize.

Transfer all to stock pot and deglaze pan with burgundy.

Scrape fond (the brown bits stuck to the bottom) from roasting pan and add to stock pot.

Cover everything in stock pot with cold water and bring to a boil.

Reduce to a simmer. Skim scum periodically. Simmer six hours, adding more water to cover bones as needed.

Strain and refrigerate or cool.

If you want deeper, richer stock, keep simmering, but do not reduce over 50% more.

WILD BOAR SCHNITZEL 2 lbs. raw, boneless loin of boar (makes 6 medallions) 2 tablespoons Smoke Rub 2 cups bread crumbs 2 eggs, beaten 1 cup milk 1 cup flour ½ cup clarified butter Salt and pepper to taste 1-1/2 cups Hudson’s Apple Cider Brandy Sauce (see below) 1 Granny Smith apple, julienned Season the loin with the Smoke Rub and smoke it 1 to 1-1/2 hours until medium rare to medium, an internal temperature of 140º. Slow smoking helps to tenderize and imparts a delicious flavor.

Remove from smoker and refrigerate whole.

Grind dried bread crumbs in food processor. We use crumbs from our pumpkin bread, but a dried French loaf or sourdough is fine.

Slice loin into medallions ½” to ¾” thick. Between plastic wrap, pound with a mallet to an even ¼” thickness. Season the pounded medallions with salt and pepper.

Combine eggs and milk and beat to make egg wash.

Pass seasoned medallions through flour, then egg wash and then bread crumbs.

Heat the clarified butter in a large sauté pan over medium-high heat until shimmering (325º -- 350º).

Carefully lay in 3 cutlets and cook 1-1/2 to 2 minutes per side until the crust is set and golden. Turn and cook the other side for an additional 2 minutes. Remove from heat and hold warm. Repeat with remaining cutlets.

Combine Apple Cider Brandy sauce and julienned apples in a saucepan and warm through. Spoon onto plate and top with schnitzel.

APPLE CIDER BRANDY SAUCE ¾ cup apple juice concentrate, thawed ½ cup water 2 tablespoons garlic, chopped 4 tablespoons red onion, diced ½ cup brown sugar, packed ½ cup brandy ½ teaspoon salt ¼ teaspoon white pepper Combine in a saucepan, bring to a boil, reduce to a simmer, and cook 10 minutes.

Adjust seasoning and serve hot under the schnitzel.

SMOKE RUB A little bit salty but goes great with anything smoked on the grill.

1 cup paprika 1/3 cup onion powder 1/8 teaspoon cayenne ½ teaspoon white pepper 2 teaspoons dark chili powder 3 tablespoons brown sugar ½ cup granulated garlic 1 teaspoons curry ½ teaspoon black pepper ¼ cup kosher salt Combine and use freely to coat meat.

DRY VENISON SAUSAGE Harold Farley, Bastrop, Texas

30 lbs. Venison 15 lbs. Boston Butts 12 oz. Salt 1 cup Black Pepper 2 tablespoons Red Pepper 3 tablespoons Sugar 1-½ teaspoons Garlic Powder 1 oz. Salt Peter 2 oz. Mustard Seed Grind the meat and mix in the seasoning. Stuff into sausage casings.

Smoke 150º for 3 hours in a smokehouse.

Remove heat and smoke for 24 to 36 hours or until sausage starts to wrinkle.

Hang in a dry area for about 1 month.

VENISON IN BEER MARINADE Mrs. F.E. Pritchett Stephenville, Texas

large Onions, sliced Carrots, sliced stalks Celery, diced cloves Garlic, diced teaspoons Salt teaspoon Pepper, fresh ground ½ cup Sugar ½ teaspoon Cloves, Allspice, and Basil 2 Bay Leaves 1 tablespoon Parsley, chopped 1 quart Vinegar 1 quart Water 1 pint Beer ½ cup Salad Oil Sauté onions, carrots and celery in oil for 10 minutes; add remaining ingredients.

Simmer 30 minutes, then chill.

Place in large earthenware bowl or crock and add 3 to 4 lbs. of venison, cut in 2-inch pieces (shoulder, neck, breast or other tough portions).

Let stand in refrigerator for one to two days, turning several times.

Place meat and marinade in large kettle; bring slowly to boil.

Cover and cook over low heat for two hours.

Thicken liquid for gravy if desired.

ROASTED QUAIL WITH MUSHROOMS J. E. King, Angleton, Texas

Serves 4.

4 Quail 4 slices Bacon 1 tablespoon Oleo 1/4 cup Lemon Juice 1/2 cup Hot Water 1/2 cup Fresh rooms, chopped

and chili powder to your taste.

Add the jar of mole and continue to stir to keep the meat from sticking.

Add water as needed to have a gravy texture. Cook for an additional two hours until meat is tender.

Serve with flour tortillas and pico de gallo sauce.

KERRVILLE VENISON KABOBS David Sinclair, Kerrville, Texas

Mush-

Wrap bacon around quail and secure with skewer or toothpick.

Place birds in shallow buttered pan; cover and bake at 350º for 25-30 minutes.

Baste with mixture of lemon juice and water - continue to bake until birds are tender.

About 20 minutes before birds are done, add mushrooms.

Excellent served on toasted buns or rice with gravy.

FERAL HOG GUISADA Jerry Delgado, China Spring, Texas

2 bell Peppers 2 Large Onions 1 Jar of Mole 4 Serrano Peppers 1- 50 lb. Feral Hog Salt Fajita Seasoning Chili Powder Start with a young feral hog diced up in 1/2 inch size.

Using a wash pot or large 5 gal. pot, pour about 1 cup of Wesson oil in the pot.

Dice up the bell peppers and onions. Fire up the pot.

When the oil gets hot, place the diced bell peppers, serrano peppers and onions in the pot and lightly brown.

Place the diced feral hog in the pot and add about 1 quart of water.

With a large spoon, stir and cook for about one hour.

Add salt, fajita seasoning

Venison, cubed 4 cups Soy Sauce 1 cup Apple Cider Vinegar ½ cup Tarragon Vinegar 2 cups Vegetable Oil 12 cloves Garlic, chopped 2 tablespoons Lemon Pepper (lite) 2 teaspoons Ginger Onion, chopped No Salt Blend all the ingredients; add the meat and refrigerate for 12-24 hours.

Remove meat, skewer and grill until tender.

Discard remaining marinade.

CHICKEN FRIED VENISON E.L. King, Angleton, Texas

Venison Steaks Eggs Flour Vegetable Oil Seasoned Salt and Pepper Start with good red meat.

Tenderize with a meat mallet or the edge of a small dinner plate.

Dip each tenderized steak in 1-2 large eggs beaten with just a bit of water.

Quickly dredge both sides in flour.

Place in hot skillet (iron is best) in about 1-2” of hot vegetable oil.

Season with seasoned salt and pepper and lower heat to medium.

When outer edge starts to turn a deep golden brown, turn the steak one time only.

Remove and drain on plenty of paper toweling.

Serve with loads of buttery mashed potatoes.

JALAPEÑO BIRD AND RICE John LeLeux, Kenedy, Texas

Game Birds 1 stick Oleo 2 cups Green Onions, chopped 1 cup Celery, chopped ¼ cup Water 2 cups Rice, cooked ½ cup Pimentos 1-2 chopped Jalapeño Peppers You can use dove, quail, chicken, etc. Bone birds and cut into small pieces.

Melt oleo in cast iron skillet and brown birds slowly.

Add onions, celery and water; cook until tender.

Add rice, pimentos and jalapeños. Cover and bake in oven at 350º for 10 -- 15 minutes. Serve piping hot.

For more flavor, season rice by cooking in broth or adding seasonings.

COOK-IN DOVE Jesse Miller, Lake Jackson, Texas

Breasted Doves, breast plate attached Maple-cured Bacon Several Small to Medium Potatoes 1 medium Onion 2 cloves Garlic Carrots/Bell Pepper (optional) Wrap dove breasts with a slice of bacon and place a layer of wrapped dove breast on the bottom of a crock pot or slow cooker.

Chop the onion and garlic cloves very finely and mix well.

Core the potatoes and fill the core with the onion-garlic mixture, plugging each end of the core with small pieces of potato and then place a layer of potatoes over the layer of doves.

Repeat process, layering doves and then potatoes until the cooker is filled.

Add a chunk or two of carrots and bell pepper, mainly for color.

Season to taste with salt and pepper.

Watch closely so the doves don’t overcook and fall completely apart.

Serve with rice.

AgriLife Extension wildlife specialist shares readiness tips Written by Carrie Baker, carrie_baker@tamu.edu Every great hunter knows that success throughout the season is more likely when not left to luck alone. Making sure to develop a game plan early will pay off in the late-autumn rut.

Hunters will be looking for their opportunity to take a shot when deer season opens.

Opening day for deer season kicks off for bow hunters in 252 Texas counties on Oct. 3 and runs through Nov. 6. Rifle season follows and spans from Nov. 7 through Jan. 3 in the North Zone and Jan. 17 in the South, with a special South Zone late season lasting through Jan. 31.

John Tomecek, Ph.D., is no stranger to this process. As a Texas A&M AgriLife Extension Service wildlife specialist and an avid hunter and gamesmen himself, Tomecek knows that when hunting, preparation is key.

Ensuring that preparations are complete and everything is ready to go is half the battle, and half the fun.

“Good planning makes all the difference,” Tomecek said.

“Planning should occur at the individual, party and property level. Individuals should know their goals and limitations and make a plan for achieving their goals during the season.”

MAKING A GAME PLAN

The best way to prepare is to scope out land and plots and talk with landowners to begin developing a plan. If they aren’t already, trail cameras should be set, and hunters should review footage—early and often—to pattern movement.

Hunters should also take time to head out to their trails to clear brush and any debris that might have built up to pave the way for a clean shot and ensure easy access in and out of

land around their stand or blind. This also includes having the foresight to check blinds for any damage and survey for unwelcome critters like raccoons, mice, bird or insect nests.

This helps take care of unwanted surprises and alleviates any burden or time constraints hunters might run into if they push it too close to opening day.

“Nothing dulls the excitement of opening day more than discovering unexpected guests—like yellow jackets or black widow spiders—and having to make a rapid, noisy exit from your blind,” Tomecek said.

While food plots should already be underway, making sure to monitor and maintain them through mowing, spraying, weeding and fertilization is a never-ending task. Hunters should also make sure to routinely visit their plots before opening day to check for any signs of deer.

All of this information will be helpful to hunters as they start to determine where to hunt and what times of day usually see high activity. While there is never any guarantee, keeping detailed notes about deer movement between now and opening day is a smart, easy way to increase the likelihood of a successful hunt.

ROUTINE GEAR INSPECTION

Strategizing is a good start, but at the end of the day it comes down to execution of that plan, which starts with making sure gear and equipment is ready to go.

When it comes to hunting, there is plenty of equipment involved. From blinds to clothing, harvesting tools and rifles or bows, each piece of gear plays an important role in hunting readiness.

“Many hunters pull their gear out of storage right before the season begins, but hunters ought to spend time all year maintaining their gear and practicing their marksmanship,” Tomecek said.

Smaller field-equipment preparations like checking batteries in flashlights and rangefinders are often overlooked steps, but ones that can have a big impact on ease of experience the first morning of your hunt.

While clothing may not initially register as equipment, for deer hunters ensuring that clothing is appropriate for weather and environmental hazards is a must. Folks should also take care to properly clean and treat clothing to eliminate odors.

Deer have over 297 million olfactory receptors in their nose, making them incredibly sensitive to surrounding scents.

Ultimately, Tomecek said at a minimum, bows and rifles should be inspected for safety and accuracy. Taking the time to sight in bows and rifles gives hunters plenty of time to find the right setup and adjustments that work for them, to assist in a

Plus, it never hurts to get in a little extra target practice.

Practice makes perfect, and hunting is definitely no exception.

Hunting is a sport of safety, and safety should go farther than responsible management of weaponry. For those in stands, returning home safely starts with double-checking access and safety equipment like ladders, climbing sticks, platforms, straps and harnesses for any rust, damage or breakage and replacing anything that raises concern.

A PROPER, LEGAL HARVEST

A successful hunt is a safe and legal hunt. Before hitting the blinds on opening day, hunters should brush up on regulations enforced by Texas Parks and Wildlife Department, including those relating to licenses and permits, bag limits, tagging and chronic wasting disease.

These regulations are put in place to ensure the long-term management of white-tail deer populations in Texas, and it is critical that hunters are familiar with them.

“Always, check your Outdoor Annual for the areas in which you’re hunting. The Outdoor Annual is online and on the app. thithat works great, all available through Texas Parks and Wildlife,” Tomecek said. “Some general regulations apply everywhere. Check for special regulations in the county of harvest and be diligent at your recordkeeping.”

Valid hunting licenses are required of Texas residents to hunt on public or private lands and can be purchased online or through various local retailers, along with tags and other permits.

In the event of a successful harvest under a hunting license, one should be prepared to tag the animal and log the hunt, immediately. The tag from the hunter’s license must be filled out with information pertaining to the type of deer and date of kill prior to field dressing.

As long as evidence of tagging and proof of sex is ensured, deer can be transported.

As a preparation for by-the-book field dressing, hunters should ensure that equipment used for field dressing is in good shape and easily accessible prior to opening day, either in the field, back at base or at a hunter’s residence.

Knives and replacement blades should be sharpened and cleaned, and hunters should take time to pack disposable gloves.

When it comes to processing the meat, Tomecek said those looking to butcher their own game should do research ahead of time.

“Online resources make this far easier than it once was,” he said. “Otherwise, there are many quality professional game processors across the state.”

A final consideration for hunters in CWD Containment and Surveillance Zones is following protocol for reporting of Chronic Wasting Disease, a contagious, deadly disease in deer that causes a variety of somatic and neurological symptoms and poses a threat to conservation of deer in Texas.

Deer harvested in these localized zones, must be taken to check stations managed by Texas Parks and Wildlife Department within 48 hours.

A GREATER APPRECIATION FOR NATURE AND THE FOOD IT GIVES Hunting is as much a sport as it is a livelihood for individuals, families and local communities.

“For many, opening day is the return to familiar places, smells and sights,” Tomecek said.

“The air is electric with the promise and excitement of the coming weeks. It can be very busy in communities where hunting is a cornerstone of the local economy, as a kind of nature tourism.”

It’s this very draw to nature that sends thousands of resi-

dents and visitors to the field.

“Hunting is not all about harvesting an animal, it’s about interacting with the natural world around you in a very basic way—being a part of the ecosystem,” Tomecek explained.

He cited documented evidence, which promotes that time spent outdoors increases personal health and teaches hunters, young and old, a variety of critical skills.

It also puts food on the table for thousands of Texans each year, while helping manage the white-tailed deer population statewide.

“Careful management, according to science, has produced a situation where, in most areas, we have as many deer as the ecosystem can support,” Tomecek said. “Hunting provides us an opportunity to remove hungry mouths from the landscape to ensure that a smaller population of deer—what the landscape can naturally support—remain healthier, as does their habitat.”

So, harvesting of deer comes with great reward, but also great responsibility. Key to assuming this responsibility as a hunter is being informed and prepared prior to opening day.

For new hunters, this can be daunting, but Tomecek contends learning the trade is a beautiful thing and nothing novices should fear.

“Hunting is a tradition that requires a great deal of learning and time in the field,” Tomecek said. “I would suggest that folks seek out an experienced hunter as a mentor. There’s no shortage of folks glad to help a new hunter. These mentorships serve as a great reminder that even the best hunters didn’t become an expert overnight.”
