Fun With Food! by Tamara Burke When I was a young girl, my mother put me in charge of desserts in our household. I remember starting with easy jello recipes, then slowly getting a little more elaborate as my experience grew. Still to this day one of my all-time favorites is one that can be surprisingly easy; is very light and refreshing, especially this time of year; and can be done together with the kids. The strawberry angel food cake is a delicious cake that would be great to make either for Easter dinner or for a Mothers’ Day treat. Thiss cake can be put together in as little e as 30 minutes, or you can take the home made route and make the angel food cake part from scratch. For the easy version all you need is 4 ingredients: a store bought angel ngel food cake, a pint of heavy whipping cream, sugar and strawberries. To get started, find a pretty platter to put the cake on and place pieces eces off either foil or wax paper under the edge off the cake like so that you’ll remove ove after frosting to keep the platter clean: lean: Now comes some e fun for the kids – using a melon baller llerr or o a nifty tool forr coring strawberries es or es or tomatoes, tom to to om mato ttoe to oes, o oe esss,, have e es, haave vve e the kids core the top of the strawberries taking out the stem and leaves from the top. Rinse the strawberries well and let drain in colander or on a towel. Next it’s whipping time! Pour the whipping cream in a large and deep metal or glass chilled bowl. Beat the whipping cream with either hand held beaters or a standing mixer equipped with wisk. Slowly add 2 tablespoons of sugar (more or less to taste) and continue whipping until soft peaks form. Let the kids have fun with covering the angel food cake with the whipped cream. While they are having tons of fun slathering (and sampling) the whip cream, slice the strawberries in half from top to bottom. Have the kids creatively place the strawberries all over the cake by gently pressing them in to the whip cream. After all the strawberries have been strategically placed, gently remove the liner pieces under the cake and voila! Dessert is ready! Keep this cake refrigerated until ready to serve. Happy Easter and Happy Mother’s Day to all!!

A Common Carpet Problem - "Pooling" Do you have strange looking lines in your carpet and you are wondering where they came from? Pooling (refer to picture on the left) is a characteristic of many cut-pile carpets and rugs. Pooling is a sharp change in pile direction creating serpentine like lines in the carpet. The pile of the carpet will lie in opposite directions on each side of this line. This condition can occur anywhere in the carpet and not just in the traffic lanes. In some cases, pooling will continue across seams and even onto different carpet, while in other cases it may stop at a seam. Pooling While the carpet or rug pile on either side of the pooling line usually shows very little distortion, the pile within the line is usually severely crushed or distorted. Pooling can occur in all types of carpet fibers, all types of carpet, and in all methods of installation. Even replacing the carpet with the good news is that it will not lead to new carpet will not always insure that premature wear of the carpet and will have pooling will not happen again. So how do no effect on the durability of the carpet you prevent or correct pooling on your carpet? Unfortunately pooling is effectively permanent and not covered under most manufacturer's warranties. While it is not correctable with cleaning or any other known method, the good news is that it will not lead to premature wear of the carpet and will have no effect on the durability of the carpet. The carpet mills have spent millions trying to figure out why this occurs and how it can be prevented and they still do not have definitive answers. So how can you prevent it or at least lessen the chances of it being noticeable. Since you can't get rid of it once it occurs then the only thing to do is to make a smarter choice when buying carpet. There are a few things to look for when buying carpet that will help minimize the chances that this occurs to your investment. Since pooling mostly occurs in cut-pile style carpet, choose a loop style So how do you prevent or correct carpet. A loop-style carpet is the best choice pooling on your carpet? when you are concerned about pooling. Also you could choose a bold and busy pattern that would help to disguise any pooling. Lastly, the shade or color of the carpet you choose will help. When concerned about pooling choose a lighter colored carpet. Lighter colored carpets tend to show less contrast between darker and lighter shaded areas, where as darker colors will tend to exaggerate the differences. Childhood Diabetes: What Can We Do? In the last issue, we discussed the epidemic of blood sugar problems in America and some of this epidemic’s causes. Today I would like to expand upon this topic and provide some solutions. Some overlooked conditions that affect blood sugar include but are not limited to poor adrenal function, stress, and liver function. We will address these individually beginning with adrenal function. Poor adrenal function leads to difficulties in maintaining optimal blood sugar levels. The reason behind this poor function is that the adrenal gland produces cortisol. Cortisol is used by the body for many purposes, but cortisol’s crucial purpose in relation to blood sugar levels is to break down glycogen stores and bring glucose into the blood stream to feed the brain and body Reactive hypoglycemia causes your blood sugar to drop too low between meals. when blood sugar levels drop low. Therefore, if you have weak adrenal output and cortisol levels are too low, you may be susceptible to a condition called reactive hypoglycemia. Reactive hypoglycemia causes your blood sugar to drop too low between meals. High stress situations, conversely, cause cortisol levels to be too high. If cortisol levels are too high, they break down glycogen stores and bring too much glucose into the blood stream, causing elevated glucose levels. Unfortunately, most people do not have their cortisol levels tested to determine if this is a factor in their blood sugar condition. Another factor is the liver. The liver is the main location where glycogen is stored. If the liver does not metabolize as it should, glycogen stores do not break down properly and can wreak havoc on blood sugar levels. The other major factor in maintaining a healthy blood sugar metabolism in a child is getting adequate amounts of physical exercise.
The current medical model of treating blood sugar disorders is mainly to prescribe drugs to lower blood glucose. Very little testing of the causes of these disorders is done because it does not change the treatment. However, to solve the underlying problems and restore the body to an optimal level of health, we must conduct a more complete investigation. I would like to discuss some of the solutions that are available to help improve blood glucose levels and overall metabolism. First, diet plays a major role. A diet high in carbohydrates – simple or complex – produces higher levels of blood sugar. A diet high in fiber, including fresh fruits, vegetables, meats, and healthy fats, will help to slow down the digestion and
8 The Whole Kid and Kaboodle Spring 2015
absorption of the food consumed and keep blood glucose levels at a more constant state. This is especially important in the morning. Unfortunately, many children eat mostly carbohydrates in the morning when what they need is lots of healthy protein and good fats. As a result of a high-carb breakfast, by the time they arrive at school and are inside the classroom their brain is starved for energy because of the high blood sugar and insulin surge which creates a reactive hypoglycemic state. This makes learning, paying attention, and sometimes staying awake difficult. The other major factor in maintaining a healthy blood sugar metabolism in a child is getting adequate amounts of physical exercise. Exercise helps to maintain a normal, sensitive insulin response at the cellular level. As a result the cells can uptake the insulin and glucose to provide energy to the cell. Without exercise the body becomes even more insulin resistant and ultimately leads to Type 2 diabetes. A child should be experiencing as much physical activity as possible on a daily basis. Because children typically sit in a classroom Monday through Friday, they do not get much movement or exercise. It is vital that families work to incorporate physical activities, such as walking, hiking, biking, sports, and weight lifting. Several other factors, including chronic inflammation, low grade infections, and autoimmune disorders, also cause blood sugar problems, but it is best to first address diet and exercise and then test further for deeper causes. The bottom line is that if we keep doing what we have been doing, we will keep getting what we have been getting. This is tragic and unacceptable. It is time for a change, and this change must begin with you and your family. In next month’s article we will discuss learning disabilities and how to overcome them. If you would like our office to help you and your children in your journey toward an optimal and healthy life, please contact us at 281-354-8330 to schedule a consultation. Take the Plunge and Make Great Memories. Who can put a price on a good memory? A good memory is such a valuable thing. As parents my wife and I try to do what we can to intentionally build good memories with and for our family and daughter. In reality every single event of our lives becomes a memory, I read somewhere that the human brain has the capacity for over one million years of memories. Incredible. We use only 100+/- years of the brain’s capacity. All those memories rest in our subconscious waiting to be triggered; a smell, a sound, a song, a picture, a statement, these all possess the power to awaken our memories and bring them to the forefront of our conscious. I remember the very first swim competition I entered when I was a child in Scotland. All I had to do was swim one length (25m) of the pool. I don’t really think I knew how to swim, but I must have got caught up in the enthusiasm and I entered anyway. The day for the swim competition arrived and my Dad walked with me to the pool, a few miles from our house. The closer we got to the pool, the more
The next thing I remember was slowly sinking toward the bottom of the pool.
concerned I became. I asked my Dad if he knew how far 25 meters was and he said, “Yes”. Then, he took time to pace out the distance to give me a visual. When the time for my race arrived, I went to my lane. I must have been very confident of my ability to dive into the water. Then, I looked up in the stands to see my Dad, he waved and gave me the thumbs up. I was ready. Next, the command was given to take our marks and they blew the whistle to go! I plunged in. The next thing I remember was slowly sinking toward the bottom of the pool and then the lifeguard jumping in to rescue me. On the way home, I don’t really remember what my Dad said to me, but whatever it may have been it wasn’t humiliation and it didn’t discourage me from getting back in the pool. He still believed in me, in fact, he was proud of me for taking the plunge. We were even laughing about it all by the time we made it home. Looking back now I find it very funny. You might be wondering why I shared this memory. Is it really a good memory? Well the walk to the pool with my Dad and his encouraging words and belief in me made it one of my best swimming memories ever. In the years to come I would swim competitively and win a lot of races and even today I still enjoy swimming close to a mile each day. Good memories are powerful. I have many other great memories with my parents but this one always seems to stick out. My Dad taking the time to be with me, meant the world to me. It still does.

Many have very painful memories and even reading this article and connecting memories even to parents can be extremely difficult. However. there is good news. Behaviorists, the scientists who study what effects our behavior, are discovering that we have the ability to actually change toxic memories. As incredible as it sounds, by identifying toxic memories and applying forgiveness we no longer have to feel trapped by negative memories. It
As incredible as it sounds, by identifying toxic memories and applying forgiveness we no longer have to feel trapped by negative memories then becomes possible to re-write the final outcome of those negative experiences in a way that can empower us and no longer debilitate us. Even painful childhood memories can be re-written. The act of forgiving has more to do with releasing you from toxic emotions than saying that whatever was done to you was or is OK. By forgiving someone who hurt you, you are not saying what you did to me was right. By forgiving, you are saying I am no longer going to allow what you did to me to define me. Jesus modeled this on the cross. This horrific moment of torture and abuse, became his great triumph. As he hung there painfully dying, he cried “Father forgive them, they don’t know what they are doing”. Jesus makes this power to forgive available to us. No matter how tough it may have been for you growing up, you can chose to break any toxic memory cycle and start building good memories with your family. Intentionally making the effort to be present with your family, sharing laughter & speaking words of encouragement, forgiveness and life will go a long way toward planting the seeds in your kids hearts that will become memories they will cherish forever, propelling them on to even greater things.

Neuroscience and Wellness Our bodies and brains respond to everything that we expose them to and everything around us. If we place ourselves in stressful situations or expose ourselves to harmful actions our brain chemistry changes and our bodies follow suit. Scientists have found that long term exposure to stress in any form will affect physical health. For example, children who are raised in an environment that is too strict or too lax have a higher risk for early obesity. Adults who spend years working in jobs they hate are considerably more prone to conditions ranging from depression to obesity to heart conditions. Neuroscientists have learned that stresses like these can cause a partial disconnect between body and brain. The brain no longer instructs the body to develop in healthy ways and the body no longer listens to the better signals from the nervous system even when they are present.
The ability of the human body to repair itself is incredible. Practices such as mindfulness and focus on the breath can help realign the connections. The brain and body check in with each other and begin to work in concert. When this happens, changes can occur that are nothing short of miraculous as the ability of the human body to repair itself is incredible. When you treat the root causes of health conditions and weight gain, the self-soothing behaviors such as poor eating, drinking, and overreactions to stress are no longer needed. The brain corrects the body and the body corrects itself. The fight-flight brain stem reaction can shift into patterns that make sense for the given situation. With that alteration the part of the brain responsible for rational thinking is free to actually do its job as well. Stress hormones are reduced and we become healthier people.
Scientists have found that long term exposure to stress in any form will affect physical health.

SMALL MIRACLES HAPPEN SOMETIMES Twenty years ago we didn't have a lot OF MONEY and my husband told me to get me an extra set of keys before I get locked out of my car ,and wouldn't be able to get back in IT, and it would cost me to get someone out to unlock my car for me, well I never did so one day I went to HUMBLE to the store and I parked the car locked the door to the car and left my keys inside, the minute I did that, the words of my husband came to me about you better get that extra key before you lock yourself out of the car. I didn't think I would ever do that, but here I am and don’t want to call him and say “ I didn’t do what you asked me to do,” I was feeling so bad that I began to pray as I was standing out by my car. The wind began to blow and something caught on my shoe. When I looked down there was a $20.00 bill stuck on it. I reached down and picked it up, looked around to see if anyone had lost it but no one was nearby, I didn’t see a soul so I called a wrecker service. The wrecker driver came to un-lock my car and the charge was $20.00, GOD supplied my need so I went straight to the auto place and got me an extra key made and told my husband what happened. GOD IS GOOD AND HE CARES ABOUT US AND OUR NEEDS. Audrey Thomas

Glutathione…. What it is, and why you NEED IT! Glutathione is an antioxidant. An antioxidant is a chemical that reverses cell damage. There is more to it than that, but suffice it to say that this molecule repairs and regenerates the DNA at the cellular level. Some call Glutathione the master antioxidant. It is also known as an intracellular antioxidant. This means that the molecule gets into the cell and protects it and repairs it against free radicals. What is a free radical? Think back to your high school biology: Covalent and ionic bonds. When the molecules change composition, the leftovers are ‘free’ and they do damage within the cellular structure. Glutathione comes to the rescue, sort of like pac-man, and destroys or neutralizes the free radicals before they can do harm to your body. Your body makes it, Glutathione comes to the rescue, sort of like pac-man, and destroys or neutralizes the free radicals before they can do harm to your body. but if you are 45 or older, you have far less than you need. If you have a chronic disease, then you have even less. So where do I get glutathione? Some foods have it: Chicken, chickpeas and lentils combined with eggs, garlic, onions, broccoli and cauliflower will give you the necessary ingredients for your body to make Glutathione. Nuts, fresh fruits, some vegetables, and poultry or fish also provide Glutathione. These days you can also purchase good, bio-available glutathione from a good naturopath. Besides free radical rescue, glutathione also helps with many diseases: Cystic fibrosis, Cardiovascular disease Liver disease Autoimmune disease Lung disease Neuro-degenerative disorders Aging If that were not enough, glutathione also helps the body detox from heavy metals and chemicals in the body. Research has found that glutathione helps to remove environmental toxins known as xenobiotics. (Health Revelations, February 2015) We have heard many reports of healings and improvements with the addition of Glutathione to the p 14 The Whole Kid and Kaboodle Spring 2015

Memory Café If you eat at Christopher’s Italian Restaurant in Atascocita on the first Tuesday of the month, you may hear laughter or singing emanating from the private room at the back. Gathered at tables there, enjoying a meal together, are people who have never met before. Many of them were here last month too, but they do not
Many of them were here last month too, but they do not remember being here. And they do not remember one another. remember being here. And they do not remember one another. This is Kingwood Memory Café – a fun social time around a shared meal for people in the early stages of memory loss, accompanied by their care partners. Wives bring their husbands, husbands bring their wives, daughters and sons bring their moms and dads, and sometimes grandchildren come along too. The rule is, “There are no rules.” No behavior is judged or criticized. Ask the same question many times, and everyone keeps answering as if they have never heard you say that
The rule is, “There are no rules.” before. If you have trouble figuring out how to put on your jacket – which hand goes into which sleeve – no problem. They will only laugh with you. They never laugh at you. Donna Composto was inspired to start Kingwood Memory Café after visiting a support group for people in early memory loss, run by Teri Miller of the Alzheimer’s Association in Houston. Composto wanted to make a difference for families in similar situations in the Kingwood area. In researching group formats, she learned of Memory Café, which originated in the U.K. and came to the U.S. in 2008. It seemed to be just what she was looking for, so she shared the idea with her friend Barbara Hemphill. They decided to lead the café together. What Does a ByParent Facilitator Do Delona Laxton I am often asked what a Parent Facilitator does. My stock answer is I work with high conflict parents to move beyond the past hurt that they always want to bring up, and identify the issue at hand. Once we identify the issue we then work on ways to solve that issue so that everyone can live with the outcome. Simply put, parent facilitators teach self-mediation. The next question is usually what makes a case high conflict? Well, when I hear this my inner Jeff Foxworthy pops to the surface.
If you call your child’s father the “sperm donor”…. tIf you call your child’s father the “sperm donor”…. tIf you call your child’s mother the “bicked witch”… tIf you can’t discuss your child’s grades without discussing your ex’s lack of mental acuity … tIf your sole purpose in life is to find ways to irritate your ex then … tIf you use your child as a messenger to your ex … tIf you insist that your ex return the broken water bottle just so that you know that it in fact is broken … tIf you think the court orders only apply to your ex … tIf you think your child should call his new stepmom/dad, “mommy” or “daddy”… tIf you use your children as pawns to get what you want … tIf you argue over what name your child is to be called … tIf your child has the lead in the school play and you cannot allow your ex to attend because he/she came home drunk one night five years ago … tIf you think it is okay for stepdad to take your child hunting for the first time instead of dad … tIf you think it is okay for stepmom to take daughter to buy her first homecoming dress instead of mom … tIf you delight in sharing your feelings about that no good, stubborn, south end of a north bound mule to your children …
If you delight in sharing your feelings about that no good, stubborn, south end of a north bound mule to your children … You might have a high conflict case.
… You might have a high conflict case. It is difficult sometimes not to laugh at some of the crazy stuff we see parents do. But, the inability to let go of the past in order to move forward is the primary reason for the conflict. It is okay to feel hurt or betrayed but it is not okay to allow those feelings to take control and prevent you from being the best co-parents you can be. Conflict is never good for the children and parents who can identify the issue they need to deal with; offer possible solutions to the issue; and negotiate a resolution without resorting to hiring a lawyer and going to court are working together in the best interest of their children. Unfortunately, it usually ends up in court in front of a judge who decides he/she does not want to micro-manage the family and orders the parents to work with a Parent Facilitator. If you notice that you are having difficulty co-parenting, then talk to your co-parent or your attorney and discuss the possible benefits. 22 The Whole Kid and Kaboodle Spring 2015

Do you have game? By: Bella Flores
Do you have game? Golf game that is. Some people think hitting this little white ball around a course is hard. Well let me tell you my journey. My name is Bella Flores and I am 9 years old. Golf is My GAME. My favorite color is pink, blue, and lime green. I play almost every day to get better. I love animals, do you? I love to play golf in the rain. I have a little sister named Mia she is very funny. She always tells the same joke. “What type of bear has no eyes???? A gummy bear. Never gets old. I started playing golf when I was 7. Why do I love golf? Because it's a mental game and you have to put your thinking cap on. For instance, what club should you use or how far do you want to hit it. When I get on a beautiful golf course I feel like I am a pro (sorta like LPGA Pro Paula Creamer). Its golf heaven hearing the birds and smelling the fresh cut grass. So how do you get better at golf? Practice and golf programs. Most people think it’s a lot of money to play but you can start off with these yearly programs which I paid with my monthly allowance of $30.00 for the WHOLE YEAR. I started off in the First Tee of Greater Houston and you can join too. I joined around 2 years ago at the Golf club of Houston location (formerly Redstone) I learned a lot of golf etiquette from the classes, like how to mark your ball, type of golf clubs to use, what a fairway is, and most importantly how to be respectful to other players. I just started this year to volunteer to be a golf junior mentor and I helped the PLAYers class by showing them the nine core values. The program has many levels to start with and everyone is welcomed to join from 7 years and older. Not only boys play golf. Girls can too. A wonderful program is LPGA Girls Golf that helps build relationships with other girls. We have lots of activities at the events like decorating cookies or making ball counters after an hour of practicing different drills. It’s great to meet other girls with outstanding personalities and the same interest of golfing. Check out their website below and email me what the five E's are at Girls Golf or what the nine core values are at the First Tee. I will pick a random winner and send them a golf gift to get you started on your journey. Want to get better or have questions. Nancy Sez Often when people find out that I am a psychotherapist they ask me a therapy question. I don't always have an easy answer (or the one they want to hear) but I generally do have an opinion I'll share. While waiting with my husband at a doctors’ appointment recently one of the attendants asked me, "So how can you make sure that your kids stay on the right track and don't get into drugs and things and how do you know what’s going on with them?" I smiled at him and held up the book I was reading, "The Hour That Matters Most, The Surprising Power of the Family Meal." It doesn't come with a guarantee but extensive studies have shown spending time with family makes children between the ages of 13 and 24 the happiest and 67% per cent of teens in America want to spend more time with their parents. "Not my kids, " you say. You might be surprised but I have had many adolescents and young adults actually tell me that. "Not my kids, " you say I remember one 18 year old boy saying how much he enjoyed it when his family use to sit down together and eat dinner. His mom who was sitting with us looked stunned and said, "I didn't know that." The Family meal offers a way for busy families to reconnect and re-define who they are individually and collectively.
