As families mature, parents are often left cooking for one or two.

“Cooking for one or two can be challenging since most recipes serve at least four people and others take time to prepare,” said Brianne Langdon with the Hood County Office of the Texas AgriLife Extension Service.

| CHICKEN FAJITA KITS Chicken fajita seasoning mix (You can use your own store bought seasoning if you want.)

12 boneless chicken breasts, sliced 3 green bell peppers 3 red bell peppers 3 yellow onions (or your favorite onion) 2 tablespoons chili powder 1 tablespoon salt 1 tablespoon paprika 2 1/2 teaspoons chicken bouillon powder 1 1/2 teaspoons onion powder 1/2 teaspoon garlic powder 1/2 teaspoon cayenne pepper 1/4 teaspoon crushed red pepper flakes 1/2 teaspoon cumin ■ In a medium bowl, mix the seasoning ingredients together and set aside.

■ Divide the cut up chicken into 3 portions and place each portion in a quart size freezer bag, making sure to squeeze excess air out of bag.

■ Sprinkle the seasoning evenly among the three bags of chicken.

■ Divide the bell peppers and onions into 3 portions. Place each portion in a quart size freezer bag (NOT the chicken bag, but a new bag).

■ Place one bag of seasoned chicken, and one bag of veggies in a gallon size freezer bag.

■ Squeeze excess air out. Label and freeze all bags.

■ To prepare fajitas: Thaw in refrigerator overnight. When ready, add oil to pan, then sauté chicken until cooked through.

■ Add veggies (they should be wilted from thawing) and continue cooking until heated through. Makes 3 kits that would easily feed 3-4 per kit.

■ This is another recipe p that is easyy to adjust the amount by reducing the recipe or by dividing into smaller portions. You can use this chicken on healthy fajita chicken salads or even splurge a little on chicken fajita nachos. There are many uses.

| STIR FRY FREEZER MEALS Note: This recipe makes one batch and serves two.

Multiply these ingredients as needed for the number of dinners you plan to make.

Ingredients for the stir fry base 1/2 cup uncooked white or brown rice 3/4 to 1 pound chicken (substitute pork, beef or tofu) 2 cloves garlic, smashed 1 bay leaf 1 bell pepper (or other vegetable, equal to 1 cup chopped) Ingredients for the stir fry sauce 2 tablespoons soy sauce 2 tablespoons dry sherry 2 tablespoons water, chicken broth or vegetable broth 2 tablespoons brown sugar 1 tablespoon rice wine vinegar 1 teaspoon sesame oil 1 teaspoon cornstarch, optional for a thicker sauce Directions n Prepare the rice according to package directions.

Allow to cool. Transfer to freezer bag or container. Refrigerate until ready to freeze with the other ingredients. n Poach the chicken (or pork or beef). Place the meat in a pot and add the garlic and bay leaf. Cover the meat with a few inches of water. Bring to a full boil over medium-high heat and simmer 10 to 13 minutes. n Slice meat and place in a single layer on baking sheet lined with parchment paper. Top meat layer with another sheet of parchment paper. n Slice the pepper or other vegetables into bitesized pieces. Trim the ends from sugar snap peas, if using. Place vegetables in a single layer on second layer of parchment paper. n Freeze the vegetables and meat until solid, at least four hours. n Place frozen meat in one bag and frozen vegetables in another bag. n Prepare the sauce. Whisk together the ingredients for the sauce, then pour it in a freezer bag. Press out as much air as possible before closing and make sure the bag doesn’t have any holes or leaks. n Package the stir fry dinner together. Place the bags of chicken, vegetables, rice and sauce in a large plastic bag or freezer container. Print or write out the preparation instructions below and place in the bag.

Preparation instructions n Defrost sauce packet in a bowl of hot tap water. n Heat rice in microwave safe container in microwave for about 2 minutes. n Cook the meat. Heat 2 teaspoons of oil in a skillet over medium high heat. Add frozen meat in single layer, stirring occasionally. Cooks 4 to 6 minutes until heated through. n Add frozen vegetables to the skillet with the chicken. Cook, stirring occasionally, until vegetables are hot and crisp tender, 3 to 5 minutes. n Mix with the sauce. Pour the warmed sauce over the chicken and vegetables. Stir until the sauce is thickened and coats all the ingredients, about 1 minute. n Serve over rice.

| RECOMMENDED FREEZING LIMITS The Texas AgriLife Extension Service recommends the following freezer limits for different foods: n Breads – 1 month

n Sandwiches – 2 weeks

n Casseroles – 3 months

n Uncooked eggs – 6 months

n Soups – 6 months

n Vegetables – 6 months

n Meats – Fresh: 1 year; Cured: 1 month

n Fruits – 6 months

n Fish – 3 months

| CHUNKY CHICKEN-BARLEY SOUP 2 cups chopped cooked chicken (approximately 1 1/2 pounds raw chicken) 1 cup chopped onion 1 cup chopped carrot ½ cup chopped celery 2 garlic cloves, minced 2 tablespoons olive oil, divided 2 (14-oz) cans low-sodium fat-free chicken broth 1¾ cups water ¼ teaspoon salt ¼ teaspoon dried thyme ¼ teaspoon pepper ½ cup uncooked quick-cooking barley n Cut chicken into small bite sizes pieces. Heat 2 tablespoons of oil and cook chicken. In 6-quart pot, heat 2 tablespoons of olive oil, sauté the onion, carrot, celery and garlic in hot oil over medium high heat for 5 minutes. Make sure you don’t allow the garlic to burn. n Add in the chicken broth, 1¾ cups of water, salt, thyme, and pepper. Bring to a boil; reduce heat, and simmer, partially covered.

Continue simmering until vegetables are tender. Once vegetables are tender, add chicken and barley; cook 8 to 10 minutes or until barley is tender. n To freeze, cool soup completely and place in a 1-gallon freezer bag. Label your bag and place in the freezer for up to 1 month. You can also divide this and have half for a meal, letting the other half cool and then put it in the freezer in a smaller portion size for later. n To serve, thaw the soup and simmer over low heat, stirring occasionally until the soup is heated through. n Serves 4 Source: Fix It & Freeze It, Heat It & Eat It - Southern Living

The Brunswick bar with a triple arch at Farina’s Wine Bar & Cafe has connections to a sinister side of American history. It was once in a Chicago bar frequented by Al Capone.

Gary Farina From castles to Capone Gary Farina was just days from opening Farina’s Wine Bar & Cafe on the Granbury square when he unwittingly found himself in the middle of a shoot-out between law enforcement and a suspect on the run.

Luckily, he escaped unscathed.

There was irony in the barrage of bullets that flew that day, as Farina and workers scrambled for cover on the eatery’s patio just yards from Granbury City Hall.

A man who, decades ago, bellied up to the vintage bar that Farina purchased and installed in his new Granbury restaurant was no stranger to shoot-outs.

That man was American gangster Al Capone.

On the Bar Itself

“It’s a Brunswick bar, made by the same company that makes pool tables.

They were the premier American bar builders in the 1800s and early 1900s, and this (bar) is one of those. It is solid tigeroak.

“I did some hunting around for this particular type of bar – Brunswick with a triple arch.

“We had to bring it up with a big truck.

I thought it was absolutely perfect for the building. It is the exact, correct era for the building, and I thought it would be a great addition.”

On the Connection to Capone

“It was originally in a bar in Chicago, and the history on it is that it was a bar where Al Capone and his men used to hang out. I don’t have the name (of the bar). I’m trying to do more research.

“It was in that bar from the time it was built until the 1950s, then it was moved to another location in Illinois.

“Once that place closed, it was put in storage.”

On the Building’s Other Unique Assets

“It (the Wine Bar & Cafe) has arched doors that were castle doors from Europe from the 1700s. There is a transition piece near the bar that I found in a warehouse in Iowa that goes perfectly.

“The upstairs B&B (bed and breakfast) has some very unique, rare pieces. There is an Italian bed from the 1700s. There is a Renaissance Revival American bed that

| BEDROOM AND BATHROOM SAFETY LOOSE TOWEL BARS OR CURTAIN RODS This could be a sign that an older adult is grabbing on to these for support. Adding grab bars near shower/tub units and the toilet can help prevent falls and other accidents.

NON-SLIP IN THE TUB Add a rubber mat or adhesive non-stick decals to the bottom of a tub. Check online or at a bathroom or discount store to find what you need.

SAFE ENTRY TO TUB If the bathtub is too high, such as a claw foot tub or antique tub, add a tub transfer bench. Check online or at a medical supply store for various options.

TALLER TOILETS Add a raised toilet seat for stools that are too low. Contact a plumber about installing a lower profile stool if your senior’s toilet is too high.

THROW RUGS Remove throw rugs or use double-sided tape or a rug pad to secure the rug to the floor. For small tears, a little glue or carpet staples can fix the problem.

ome inspections aren’t just for new homeowners. Experts say that a home inspection should be an annual date on the calendar.

“As we age, we experience the natural aging effects, such as decreased muscle strength, poor balance, poor eyesight and stiff joints. These are all changes that contribute to a heightened risk for falls,” said Brandy Zambrano, owner of Home Instead Senior Care.

Falls are the most common cause of nonfatal injuries and hospital admissions for older adults. Keeping seniors safe at home starts with family intervention.

“It can be as simple as making sure your parents are using assistive equipment to avoid falls and being aware of and acting on the potential risks around the home,” Zambrano explained.

Safety advocates are now calling on adult children to dedicate one day a year to perform a safety check of their senior loved one’s home.

“Check in on seniors regularly,” Zambrano said. “Assess the senior’s balance, proper fitting clothing, remove clutter from pathways, make sure they are using assistive devices (walkers and canes) as needed, and wearing shoes with non-slip soles.”

In addition, walking in stocking feet on wood or tile floors should be discouraged for loved ones.

It’s also helpful to organize the house so items used most frequently are at waist level, she added.

Throw rugs can be removed or secured with non-slip backing.

When guests are in your home, it may be wise to remove throw rugs, or walking with the guest, advising of possible tripping hazards such as a step down or up. n

H

ood County resident Evelyn Guerin said after her husband was diagnosed with Alzheimer’s disease, she just started getting in the driver’s seat of the car when they had to go somewhere.

Guerin said dealing with the issue early helped. She cared for him for 10 years before he died in 2005.

“After awhile, it just seemed normal to him,” she said. “It was easy for me.”

However, Guerin, who runs the Alzheimer’s Support Group for Hood County, said a lot of caregivers have a difficult time with the transition.

Not easy

“It’s a toughy,” she said. “Some have all kinds of issues, and men especially don’t like to give up their keys.”

Guerin said some people hide the car keys but help look for them when they’re really not lost.

Guerin recommends getting the Alzheimer’s patient’s doctor involved.

“We tell people to go to the doctor with them and have the doctor write up a prescription that says no driving,” she said.

“Then you have that piece of paper that the doctor said they can’t drive.”

Caregivers can also enlist the help of the driver’s licence office.

“You can also go to the driver’s license office and have them take a test so the driver’s license people can say they can’t

Texas Department of Public Safety Senior Trooper Dub Gillum said law enforce-

ment is available to help when a decision is made to take away the keys.

“The family can be afraid of being perceived as the ‘bad guy’ if they confront or instigate a driver license revocation, suspension or termination,” Gillum said.

“This is where the police and Highway Patrol can step in and play that role. It is our job to ensure public safety on the roadways. We can instigate a medical review or examination to determine if a driver license should be taken away.”

In denial

Guerin said sometimes caregivers are in denial.

“They say he still knows where he’s going,” she explained. “That’s when people get lost, and the police have to be called.”

Guerin said the Alzheimer’s Support Group offers education, advice and support for caregivers.

“The more we educate the people the better off we’re going to be,” she said. “It’s easier to deal with things when you know what to expect and how to do it.”

The Alzheimer’s Support Group meets the first Monday of every month at 10 a.m. at Acton United Methodist Church, 3433 Fall Creek Highway. For more information, contact Guerin at 817-326-2355.

pring is right around the corner, and the breathtaking Clark Gardens Botanical Park is right in the next county.

Day trip, anyone?

Located on Maddux Road in Weatherford, the 50-acre park makes for a scenic excursion for friends, couples, parents and grandparents. At times throughout the year, special events are held for children.

At Clark Gardens, even dogs are welcome, as long as they are on a leash and their owners clean up after them.

Visitors may find it hard to believe that the stunning garden was once a mesquite pasture. It changed slowly, over many years, because of the hard work of Max and Billie Clark.

“Their hobby was landscaping,” said 16 | Prime | February 2015

their youngest daughter, Carol Clark Montgomery, who is director of Clark Gardens.

“They started planting plants that could live in an arid climate like ours, and ones that do not require a lot of care or tending.

“Irises became a prime plant for us.

“My father has always loved trees, and he just started planting saplings on what was then an open pasture. It was not built for the public; it was built for their enjoyment.”

Max Clark is now 87. He still works in the gardens, about 50 hours a week, his daughter said.

Billie died four years ago, “but was every bit as involved in the garden as he was,” Montgomery said.

In 1997, the couple hosted the American Iris Society’s National Iris Show. That was

Clark Gardens features 4,000 different irises, according to Director Carol Clark Montgomery. when the idea to open the gardens to the public was born.

In 2000, the idea became a reality.

According to Montgomery, about 100 acres that are not open to the public help sustain Clark Gardens Botanical Park. The acreage holds greenhouses and water supplies.

“We do a rain collection system here,” she said. “There are a series of man-made lakes built to collect water and a few wells (to) irrigate the garden.”

Not surprisingly, the Botanical Park is a popular location for weddings and receptions.

Features that are popular wedding spots include: the Channel Garden; a chapel with stained glass windows; and the Rose Pavilion. The 1,000-square-foot pavilion is able to seat 115, with a covered arbor and waterfall backdrop.

There are two large, permanent tents for wedding receptions and other events.

On Saturday, April 4, Clark Gardens will sponsor an Easter Egg Hunt & Celebration.

It will be from 10 a.m. until noon. There will be crafts for children, an Easter Egg hunt and an opportunity to take “selfies” with the Easter Bunny.

The next day – on Sunday, April 5 – there will be a community wide Sunrise Service.

Clark Gardens Botanical Park is open certain times of the year. During the times it is closed, special appointments can be made by calling the business office at 940-6824856.

This year, the Park will be open March 6 through July 5 and then from Sept. 3 through Nov. 29. During those times, no appointment is necessary. However, in bad weather, it is advisable to phone ahead.

General admission is $9 for adults, $7 for seniors 65 and older, and $5 for ages 4 through 12. Children 3 and younger get in free. Admission fees and public and private events are necessary to pay for the Botanical Park’s upkeep, said Montgomery.

uits aren’t the only thing that can be tailored to fit individual needs.

Exercise programs can also be altered to accommodate your needs or limitations.

The Hood County YMCA doesn’t have physical fitness trainers waiting at the door, with whips in hand, to motivate their clients.

Health and Wellness Director Holly Martin said that the Y tailors programs for “health seekers.”

“Everyone has those same fears,” Martin said of the uncertainty many feel before going to an exercise facility. “It’s a place 22| Prime | February 2015

tailored just for them.”

According to the President’s Council on Fitness, Sports and Nutrition, less than 5 percent of adults engage in 30 minutes of physical activity daily.

Older people aren’t the only group suffering from being overweight and out of shape. The Council’s report states that about 15,000 potential military recruits fail their physicals each year “because they are unfit.”

Decision time

Once a health seeker comes in and indicates they want to make positive changes in their life, the staff members at the Y focus on connecting.

A staff member will do a wellness con-

sultation to find out what changes are desired.

“It is different for every person,” Martin said. “It has to start with that connection with (the staff), seeing that we are a resource for them.”

Martin said that 50 to 60 percent of the population are health seekers, although many start and stop multiple times.

“Your mind can be your greatest barrier,” Martin said. “We’re never going to discourage. We will only encourage you.”

Martin said that the fitness trainers are there to provide guidance, accountability and motivation.

“We don’t ever want anybody to feel like they are coming in and being alone,” Martin said.

‘Creative’ approach

Even those who already have developed barriers because of physical problems can find a program to fit their situation, with the staff “getting creative” in the approach.

“There is a way to move everybody’s body,” Mears said. “We have several machines that are non-impact.”

“Exercise is the best preventive medicine,” Mears said.

Martin said, “We have the tools and resources.”

She emphasized that it’s important to make exercise a priority so that it won’t get pushed off your daily calendar.

“You have to put the time and effort into making that change,” Martin said. “It’s definitely a new way of life. In order to see those results, you have to create a new life. This is the only body that you’re given.”

The thing to do is embark on a fitness plan before major body breakdowns become problematic.

“You want to change out of inspiration, not desperation,” Mears said. n

Mears said there’s a wide range of fitness options so that participants get “individual attention that’s specific to their needs, their goals.”

She added, “No one knows your journey like you do.”

Correct technique always trumps speed for the new health seekers at the Y. “It’s about executing with proper form,” Martin said. “You can’t compare yourself to other people.”

Martin added, “It’s not about the amount of time” spent exercising.

Martin said, “We celebrate small changes because small changes make a big difference.”

In addition to getting yourself to get up and move, nutrition is also a vital part of an overall picture of health, Martin said.

“It’s not just exercise that’s going to help you,” Martin said. “(It’s also) making sure the exercises are going to be right for us.”

Sharon Johnson finds fun, friends and active lifestyle with Senior Circle

TEXT BY DEBBIE SCHNEIDER he Senior Circle is said to be a circle of wellness, circle of influence and a circle of friends.

For Sharon Johnson, it’s all of those things and more.

Her first exposure to Senior Circle came through friends.

“They were going on a trip in November 2003 and invited us to go as their guests,” Johnson recalled.

“First we joined for the activities, and then we realized there was so much more we could do,” she said of Senior Circle.

Johnson not only participates but is also is a regular volunteer with Senior Circle.

Johnson moved with her husband to Granbury in 1996. When he passed several years ago, Johnson said Senior Circle “was an anchor for me.”

She came to realize “my husband went home, but God didn’t take me home. I still

want to live life to the fullest.”

Senior Circle offers a chance to “do things with people from all walks of life,” she said.

“We have programs with health professionals, and we have opportunities to improve our health. There’s walking groups, yoga, exercise classes and other things to keep you active,” she noted.

Harbor Lakes Administrator Vicky Black pointed out that one of the things residents lose and miss the most when they leave their home to enter a nursing facility is their beloved pet.

“It makes it more home-like for them,” said Black, who noted that Trouble started visiting about a year and a half ago when Director of Nursing Deb Strickland brought her in after buying the dog as a Christmas present for her husband. “They reminisce. It brings back those memories.”

Trouble – and other pets utilized in other facilities such as Trinity Mission locally and many others nationwide – bring joy.

“You can see it in the residents’ faces,” Black said. “They know Trouble.”

On this particular morning, relatives of two other Harbor Lakes residents brought their dogs. Trouble playfully pranced around one of them – who, by house rule, was on a leash.

“Several people, their families bring their dogs in,” Strickland said. “That really helps them heal faster, when they get to see that member of the family.”

Strickland and Black both used to work at Trinity Robbie Scheuerman, a resident of Harbor Lakes Mission, where Trouble began her Health and Rehabilitation, gets some sugar from Trouble, a 2-year-old Airedale terrier that brings therapy “work.” joy to many residents at the facility once a week.

“They do miss Trouble over there,” Black said. “I think it helps build staff morale, too.”

Linda Kimbrell, activity director at Trinity Mission, said that on the last Friday of each month, a local pet store provides animals such as rabbits, birds, tortoises and dogs to interact with the residents.

Also, a physical therapist brings her own dog five days a week to Trinity Mission.

Perfect fit Not only does Trouble have the perfect calm demeanor for the senior residents at Harbor Lakes, she’s also a perfect size, at 55 pounds. But she did not have any formal pet therapy training.

“It just so happens that her personality fits so well,” Strickland said.

But it’s a different kind of Trouble at home, according to Strickland.

“At home, she’s into everything; she just runs amok,” Strickland said. “Here, she’s just quiet. I’m going to put her in obedience school to teach her tricks.

“She’s just a really good companion. She goes everywhere with us. She’s kind of part of the family.”

Before Trouble arrives, sometimes residents will come by Strickland’s office, where the dog is kept during lunch time.

“They will roll up to the door and look,” Strickland said.

But their most interesting connection is they are “totally awed,” as Lee put it, by a bicycle wheel.

Brightly decorated bicycle wheels whimsically fill their front and back yards.

The wheels are decorated with translucent dinner plates and saucers, beads, antique buttons and blue beer bottles.

Lee and Goforth have creative streaks and cleverly think outside and inside the wheel. They started repurposing the wheels in October.

“We try to see how funky we can make something for as little as possible,” Lee said.

Anything for a wheel Goforth said they’d do anything for a wheel. One time she tried to get a wheel out of a trash bin but had to get a coat hanger because she couldn’t reach it.

“I got it but was afraid I was going to fall in head first,” she said laughing.

Together they started going to the Hood County Boys and Girls Club Resale Shop, garage sales and other resale shops in search of wheels, plates and saucers.

Sometimes they can’t find matching dinner plates, but that’s not a problem for them. They make do with what they have.

“At one point, Judy’s home looked like she was in the plate business,” Lee said, laughing.

A spark of excitement is evident when Lee and Goforth walk

This bicycle wheel adorns one of the trees lining Leslie Lee’s driveway in deCordova Bend Estates. She said she got the idea of putting beer bottles on a bicycle wheel from Pinterest and thought it was “funky.” into Lee’s back yard to show a visitor their creations.

“You should see this glisten in the sun,” Goforth said.

Lee explained they use translucent dinner plates between the spokes because the light from the sun shines through.

While there is an artistic side to their wheel art, Lee, a retired science teacher, said there are a lot of physics lessons to be learned.
