Cover Feature Our cover story is a feature by freelance writer Jenice Johnson on Scott and Charlotte Gilmore. The couple is known in Forney and Terrell for the Housewarmers service they provide in welcoming new residents to the cities.

In Terrell and much of the surrounding area they are better know as the owners of Shall We Dance, a studio where they teach a variety of classic ballroom dance techniques.

While many couples reaching their 70s and 80s focus on slowing down their pace the Gilmores are moving full speed ahead. I think you will find Jenice’s feature revealing about the couple’s past that includes service as a missionary in Thailand and as an Air Force intercept-processing specialist during the Cold War.

Character Counts Max Slayton is a quiet, unassuming man who has a

servant’s heart, according to co-worker Veronica Wilkerson at Anderson Clayton Bros. Funeral Home. Max is featured in this edition’s “Character Counts” feature.

His story shows how sometimes life sends us on an entirely different pathway than we planned or ever expected. Max grew up in Terrell and entered the family’s carpet business as a young man. While he volunteered with the local fire department for years he never imagined a late-life career in the funeral home business.

But with his sincere level of compassion, Veronica says he is a natural for helping area families navigate through what are often their darkest days as they plan services to celebrate the life of a deceased family member.

Kaufman businesswoman Rosa Lee Foster has met the challenges that a failing heart can give. Jenice Johnson shares Rosa Lee’s story in our KCL Charm section.

Rosa Lee was told about a year ago that half her heart stopped working and the other half was functioning at only 30 percent of capacity. Then in January, another curve ball came her way when she went into atrial fibrillation. I think you’ll find Rosa’s story inspiring.

Cook’s Corner Kaufman resident and chef Kyle Glasscock is featured in this month’s Cook’s Corner. His love of cooking and getting creative in the kitchen took him to chef school and a career of cooking for others on a professional basis.

Kyle shares tips that he has learned from years of experience and also passes along a recipe for a dish that can be prepared at home in about 25 minutes while serving as wholesome, healthy meal.

Kaufman County is seeing a rebound — not a boom — but a steady increase in residential construction activity after the recession.

T

hat rebound is being felt more in some parts of the county than others with the Forney area seeing the bulk of activity. And, as always, it is being driven by demand.

As population grows so does the need for more housing.

The county’s population has grown about 5.1 percent from the 2010 Census count of 103,346 to a Census Bureau estimate of 108,568 in 2013.

Terry Roberts, broker/owner with RE/MAX Landmark with offices in Heath, Terrell and Canton, said the county’s housing market has come a long way since the depths of the recession.

“Things have improved tremendously,” she said. As an example, through the first three quarters of 2014 there had been 1,422 housing units sold in the county. That pace was at a rate to eclipse all of 2013, Roberts said.

By the end of October 2014, properties worth $238.8 million had been sold in Kaufman County. That was up considerably from the $191.9 million worth of homes sold in the first three quarters of 2013, Roberts said.

The news for people selling their homes was also positive with the average sales price

jumping. “The average sold price climbed 30 percent from 2009, with it was $129,355, to the third quarter of 2014 when it was $167,664,” she said.

Forney — a hot spot Through the first part of this decade the city of Forney and the Forney ISD area has led Kaufman County in population increases — by a long shot.

The city’s population jumped 14 percent between the 2010 Census count of 14,608 and the official Census Bureau’s estimated population in 2013 of 16,650.

With housing developments like Devonshire, Windmill Farms and Gateway Cedars those increases in population have driven the demand for more housing and developers are working to meet that demand.

Terry Roberts, broker/owner with RE/MAX Landmark with offices in Heath, Terrell and Canton, said the Forney Independent School District area is hot.

Roberts said that is reflected in sold volume, average price homes are selling for and the number of days that homes are on the market before they are sold. After bottoming out with about $15 million worth of homes sold in each of the fourth quarter of 2010 and the first quarter of 2011 the dollar volume was more than double that for each quarter of 2013 and 2014 with the rebound starting to gain momentum in the second quarter of 2013.

individual villages with homes selling in the $200,000 to $400,000 range.

Windmill Farms is a 3,000acre development whose developers boast an array of amenities with open spaces accented by lakes, parks, biking and jogging paths and a swim center. Both Windmill Farms and Devonshire boast about the quality of Forney schools and the city’s easy access to downtown Dallas.

Terrell picking up In Terrell, Terry Capehart, city development services director, said that city too has seen the housing market bounce back. Terrell population grew about 3.4 percent, or by 531 people, between the 2010 Census count of 15,816 and the Census Bureau’s 2013 estimate of 16,347.

While the Terrell housing rebound is not on nearly the same scale as Forney, it does show a solid trend toward improvement. After only six new home construction permits were issued in 2009, Capehart said more than 30 home permits were issued each in 2013 and 2014.

“It’s been a straight shot

out of recovery,” Capehart said.

He expects housing activity to gain steam going forward.

During the height of the prerecession bust about 120 homes a year were being built in Terrell in 2006 and 2007, he said.

“Not only are we seeing more homes being built, but the valuation of those homes has jumped 228 percent,” he said. The average value of a Terrell home permit issued in 2009 was about $93,000 and in 2013 it had climbed to about $152,000.

While some of that activity is in new developments, Capehart said the city has seen a demand increase for building on lots in older established parts of the city.

“We’ve been very aggressive in getting rid of substandard housing,” he said. Terrell is offering incentives to builders in the form of developer agreements and that is helping spur some activity.

“Of 245 lots we have dormant, we have developer agreements on 190 of those,” Capehart said. “We’re also seeing commercial development and valuations go up — and it’s commercial that drives jobs www.kaufmancountylife.com

and the need for more housing.”

Terrell has a 61,000 squarefoot Buc-ee’s travel center under construction with a Dairy Queen that open in late 2014. Both of those are in the triangle area where Interstate 20, Spur 557 and FM 148 converge.

“We have Chick-fil-A, Starbucks and Aldi’s in negotiations to build out there too,” Capehart said. “Buc-ee’s construction is running about two months ahead of schedule.”

Owners of the McDonald’s franchise for Terrell are planning to start construction on a new location on State Highway 205 between CVS Drug and Arby’s. When that McDonald’s open the owner plan to raze the I-20 and State Highway 34 location and build a new restaurant there, Capehart said.

Kaufman — hopeful future In Kaufman the city’s population grew by slightly more than 200 people between the 2010 Census count and the Census Bureau’s 2013 population estimate of 6,922 people.

That represents a 3.3 percent growth.

Marcy Ratcliff, development services director for the city of Kaufman, said housing growth there has been slow because there are no large areas of land that have existing access to utilities.

Camden Homes is among the builders active with new construction in Terrell.

“We are seeing some in-fill home building going on,” Ratcliff said. One of the things she hopes will help spur housing construction in coming months are plans of a developer to buy a whole phase of lots in the Prairie Creek development and start building on those lots.

“Construction there was going really well before the economy tanked,” Ratcliff said. Construction of a State Highway 34 bypass around Kaufman is also expected to open up for land for potential development, she said.

On the commercial end of construction, Kaufman saw a new Walmart open in early 2014. Ratcliff said a new 14,400-square-foot strip center is being developed in front of Walmart with seven tenant spaces.

“We’re truly excited about that project,” she said. Coming to Kaufman will be new locations for telephone cell providers AT&T and Verizon along with a new dentist office, restaurant, barbershop, nail salon and a specialty popcorn shop.

Construction efforts in Kaufman are not only focused on new development. Ratcliff said the city has received a $390,900 grant from the Texas Department of Transportation to makeover the sidewalks around the downtown courthouse square.

“As part of that project we’ll also be replacing antiquated water and sewer line and making the area ADA accessible,” she said. “It will also include landscaping and street lighting that should really liven up downtown at night.”

cott and Charlotte Gilmore own a cottage-style dance studio behind their Terrell home called Shall We Dance, and have been dancing since the 1980s. The encouragement they give to their students is undeniable, even seeing potential in first-timers Charlie and Sandra Bridges.

As the couple glided across the hardwood floor, Mr. Gilmore danced along to demonstrate as Mrs. Gilmore gave precise instruction: “Try to find the downbeat,” “Your hands and your eyes are her signals,” and eventually telling Mrs. Bridges that “she looked like a dancer.”

Whenever mistakes were made, Mrs. Gilmore gave very descriptive instruction with gracious yet definitive teaching.

After the session, Mr. Gilmore gently teased the Bridges in Shakespearian style “methinks thou doth protest too much” when they said they couldn’t dance and he told them they were fast learners on their first try. Then the Gilmores took

The Gilmores are an active couple that has been married 36 years. Mr. Gilmore is “pushing 70” while Mrs. Gilmore is in her 80s but they evoke a timeless quality in their craft and lifestyle. Looking around the studio you will find framed posters of past dance appear-

The quilt is a story itself and came from a time that Mrs. Gilmore, a retired executive director of what is now known as the Environmental Co-op, was a missionary in Thailand.

She taught women in a small village how to quilt and as a result, they gave her their completed accomplishment.

Mrs. Gilmore even speaks fluent Thai. Mr. Gilmore speaks Russian and was once a voice

intercept-processing specialist in the Air Force during the Cold War. In more recent times, he retired as a nursing home administrator.

Not only does the couple teach dance to students three to four nights a week, they are co-owners of Housewarmers in Forney and Terrell. Housewarmers acts as a welcoming committee to new residents and presents them with a basket of goodies on behalf of local businesses. Mr. Gilmore does the legwork while Mrs. Gilmore handles the books and design.

“I feel very blessed that I’ve managed to get to this point in my life and still have the ability to learn new skills,” Mrs. Gilmore said. “It keeps me dancing. I’ve had some health problems which could easily be used as an excuse but I'm going to keep going as long as I can.” www.kaufmancountylife.com

The Gilmores are gearing up for a very active dance season, continue to receive students throughout the year who want to learn how to dance for weddings and proms and they have also been asked to give demonstrations in the area.

The duo keeps a lively schedule and wouldn’t have it any other way.

The Gilmores attribute much of their vitality and good health to dancing, which they say, is “good brain exercise.”

Mr. Gilmore used to be an avid runner and goes to the gym six hours a week. Both he and Mrs. Gilmore attribute their vitality to good genes but also said, “Dancing is good brain exercise.”

“Because you are learning new steps, you are making your feet do something new,” Mrs. Gilmore said.

As members of First Christian Church, Mr. Gilmore recalled a time when they taught dance to one of their fellow church members who had a stroke. The couple worked with him for months and eventually his movement and even his speech improved.

“Dancing has lots of benefits for us. We meet so many new people,” Mr. Gilmore said. “It’s a socialization process and we feel like very proud parents when our students get over a hump and start really dancing.”

Faith in God and her patrons keeps Rosa Lee Foster from stopping what she loves.

A

lways the consummate woman-on-the-go, business owner Rosa Lee Foster isn’t one for idleness or sitting still no matter what.

She has run her highly popular RL Western Wear and Rustic Furniture Shop in Kaufman since 2006 and draws clientele from all over the metroplex — even as far as Denton, TX. Although normally in good health, a few years ago Ms. Foster said she was often out of

breath and tired. She admitted that she just thought it was “old age” and let it go on for about a year. After everything she went through, her advice to women is to not ignore it when feeling the symptoms she experienced.

After a six-day stint in the hospital last year, it was recommended that Ms. Foster visit a cardiovascular specialist and her youngest son, who is a firefighter and EMT, advised that she see Dr. Michael Isaac at Medical City Hospital in Dallas.

The doctor discovered that the left side of Ms. Foster’s heart stopped working and the right side was only performing at 30 percent. She had to wear a LifeVest external defibrillator for 90 days — every day, all day.

The vest, which continuously monitored her heart, functioned as a life-saving device — delivering a shock if her heart went into life-threatening arrhythmia. Eventually she received an internal defibrillator and pacemaker. www.kaufmancountylife.com

Recently Ms. Foster said she was finally getting her energy back and she could breathe easily again. For every curve ball, her perseverance remains immeasurable. On Jan. 14 of this year Ms. Foster’s heart went into atrial fibrillation. At press time she was awaiting the all clear to have four vessels around her heart frozen through a process called Catheter Ablation.

works at the shop and keeps a watchful eye over her. She said Mrs. McKenzie makes sure to quickly stop her if she catches her potentially overextending herself.

“Every day I’m inspired by her strength just being a business owner — despite the illness,” Mrs. McKenzie said. “We are open six days a week and there is not a single day she doesn’t step foot in it. She is a hardworking woman. It is because of her that I want to own a business of my own some day.”

Many of Ms. Foster’s friends have retired but she prefers to stay busy, especially with her five grandchildren and the shop. The youngest is six years old and he loves coming into the store and talking to the customers — just like his RoRo, as he affectionately calls Ms. Foster. He even knows how to run the cash register. She likes to tell him, “One of these days this is all going to be yours.”

Ms. Foster said a lot of her strength comes from her faith in God and her patrons, many of which are repeat customers. They continue to give her kind words of support and tell her they are keeping her in their prayers. You don’t have to be in the shop long before you hear the See HEART, Continued on pg. 43 16

Cooking is a passion for Kaufman Chef Kyle Glasscock.

F

or Kyle Glasscock being in the kitchen is a passion he savors. That passion led him to chef school and a career cooking at some of the region’s fine dining establishments.

Today he does cooking more for family and friends and may cook up jams and jellies along with his wife Ann to give as gifts during the holiday season.

He said many people get frustrated after watching cooking shows on television when they try to replicate what big name chefs are whipping up.

Kyle Glasscock says he uses his collection of cookbooks more for inspiration to create his own variations rather than using recipes straight out of the books.

“It can be too complicated if you try to do those same recipes at home,” Glasscock said.

By taking some of the same ingredients, usually including a protein, people can prepare quality, healthy meals at home — and usually in 25 minutes or less.

While he owns a collection of cookbooks, rather than using recipes out of many of them, Glasscock uses the cookbooks as a springboard for ideas to create his own take on preparing a meal from scratch.

thing that is relaxing and enjoyable,” he said. “Getting a family together in the kitchen can be quality time.”

Glasscock encourages sautéing vegetables rather than steaming them. This, he says, both improves the flavor and results in vegetables that are healthier.

“I like to use real ingredients and fresh foods rather than processed foods,” he says. “In the kitchen, anything you can do to minimize using manufactured foods improves the quality of what you’re eating.”

Fresh vegetables in season are a staple and he enjoys spending time in the kitchen with his children.

“Both of our children love to cook and that is gratifying,” he said of the fifth grader and high school freshman he and Ann are raising in the couple’s Kaufman home.

He suggested people learn basic cooking techniques and then use those to get creative and experiment on their own.

“Don’t worry, if you screw up just improvise and go on,” Glasscock says. And, while fine dining establishments may place an emphasis on making a meal look pretty, he said that is not as important as cooking food that tastes good.

“Being a great cook is much more important than the presentation,” he says. As an example, during a recent demonstration, cooking a dinner of roasted pork tenderloin with balsamic butter sauce with a side of

“That has been like a pilgrimage about every year,” he said. In addition to the competition, he enjoys meeting other barbecue and smoker cooks.

As the season warms up Glasscock can be found near a barbecue grill cooking up some of his favorite foods. He has participated in the annual Terrell Heritage Jubilee Barbecue

“Mom and dad did a lot of entertaining while I was growing up,” Glasscock said. He had enjoyed getting involved and watching the role that good food made when friends, family and even strangers gathered.

So without a job he attended

an orientation that El Centro College in Dallas held on the institution’s culinary arts program. He was interested, filled out an application and went through an interview and screening process that included taking a taste test and identifying a variety of spices.

In 1993 Glasscock entered El Centro’s three-year training program, which included onthe-job apprenticeship.

“I did it because cooking was something I enjoyed,” he said.

“This was before the popularity of the Food Network and all the chef shows that have become common place on television.”

Part of his training took place at what was then the Harvey Hotel in Addison. The facility is now a Crowne Plaza .

It was there where he was grounded in a variety of tasks involved in presenting a fine dining experience to patrons.

“They gave business travelers good food and clean rooms,” Glasscock said. From washing dishes to learning proper knife skills, he was exposed to a variety of different stations involved in banquet and buffet preparation.

“From salads and cold prep to breakfast and cooking omelets and butchering I got exposed to it all,” he said. “There were days when I cooked 300 omelets.”

His career as a chef has taken him from fine dining duties at McArthur’s in Dallas to a production kitchen cooking up baked goods and desserts shipped from Boston to Los Angeles.

Glasscock also did a stint at a restaurant associated with a bed and breakfast inn, operated a restaurant in Terrell and most recently helped the Brookshire’s www.kaufmancountylife.com

Grocery Co. kick off their Fresh concept supermarket in Tyler.

Glasscock said he played a major role in helping develop the Fresh concept and worked on fine-tuning about 1,500 recipes that were used in their operation. “That was fun,” he said of the experience that lasted about four years.

But a family with growing children that were becoming involved in more and more activities caused him to re-think his career as a chef and the long, odd hours the job took.

“Some weeks you could put in a hundred hours on the job,” Glasscock said. He’s not sure what career path his life may take in the future, but one thing he is sure of — the joys of cooking will remain a part of his life.

Funeral Home co-worker Veronica Wilkerson says Max Slayton is humble but very caring.

ax Slayton is a humble man who has difficulty talking about himself, according to Veronica Wilkerson who works with him at Terrell’s Anderson-Clayton Brothers Funeral Home.

“He’s always used to being in the background but he does so much for so many people,” she said.

He was born across the street from where he has worked the past 25 years in a hospital that used to be located

on Nash Street. He has not strayed far from there his entire life.

Slayton said he has a love for Terrell and Kaufman County and has no desire to go too far from his roots.

He grew up in Terrell, was active in the Kiwanis Club’s K-Kids program as a student and graduated from high school in Terrell. Slayton worked in his family’s carpet business for years.

At one point early in his adult life he had hoped to have a career as a fireman or as an emergency medical technician.

He spent 19 years with the Terrell Volunteer Fire Department heeding the call to service when the need arose.

The funeral home’s John Clayton offered Slayton a job when he was 35 years old and

Slayton worked at the funeral home during the day doing whatever jobs needed done, from maintenance to custodial work while attending, EMT school and night and riding with an ambulance crew as part of his training.

Slayton said he was quite a bit older than the rest of the student EMTs, who were mostly in their late teens or early twenties.

In 1993 Slayton went through a tough time of personal loss with his own family. A brother-inlaw, his 11-year-old daughter and his mother all died that year.

After spending time working at the funeral home while also being an EMT student, he decided he liked the opportunity to work with people during a tough time in their lives when they were planning the funeral for a family member.

“I realized this was what God had called me to do,” Slayton said. He changed gears and headed off to the Dallas Mortuary School for 12 months. There he excelled and won the school’s Bill Pierce Award, which was voted on by fellow students.

“This job isn’t really like a job for me,” he said. “It’s like helping take care of family. I really see it as a calling from God.” Wilkerson said Slayton has a natural talent for empathizing with people and working with them in their time of sorrow. “He’s just so compassionate,” she said. “God has put him through so many trials that he can relate to people.”

Wilkerson has worked with him for the past eight years at Anderson-Clayton Funeral Home.

She said his knowledge of the mortuary business has been something she has drawn from and learned from. He has helped people develop cemeteries. “He’s the go-to person in this area when someone is planning a cemetery,” she said.

Slayton is the general manager for three area funeral homes.

When Slayton is not on the job, he might be found at First Baptist Church of Terrell where he serves as a deacon. He has been active with the church in participating in mission trips and other activities.

He has been on mission trips to Denver, Colorado Springs, Amarillo and Beaumont. He has also participated in missions closer to home in Terrell.

“But my biggest passion is coaching Upward Bound basketball,” he said. Slayton can often be

found at the church gym coaching kids and nurturing them in their faith.

Slayton said he well knows how something that on the outside may not seem to have much of a religious tie like basketball can make a big difference in a young person’s life.

While growing up in Terrell his family was active in the Presbyterian Church and he played basketball in a league sponsored by churches. “I came to know the Lord while playing church league basketball,” he said.

This past winter he was a coach to the Upward Bound team the Spartans, which was made up of second and third graders. Wilkerson said Slayton goes beyond the simple role of being a coach when he is with the students.

“He takes such an active interest in them that they really look up to him and see him as Prince Charming,” she said. “He cheers them on.”

Wilkerson said on the job or out in the community Slayton shows a level of truly caring that people can relate to. “So many people in Terrell know him and want to work with him — Max is truly a servant,” she said. “He shows so much sympathy and empathy because of what he has personally been through that he can relate to what people are going through.”

Wine & Dine Jamie Chavez has held so many jobs in the restaurant industry that it made sense for him to become an owner one day.

That’s exactly the path he chose in February 2011 when the previous owners of Double T Steak and Grill in Terrell decided to retire.

Rather than see the business close down, Chavez stepped in to operate it himself.

The renamed Terrell Steak and Grill, at 307 E. Interstate 20, has made a few changes since it opened in 2001. To enhance the family atmosphere, the restaurant became non-smoking last year.

Chavez has held just about every position in the restaurant business during the past 25-plus years, from dish-washer to manager. Among the changes introduced by Chavez is a banquet room that can be reserved by large groups, and some changes in the menu to generate more lunch business. He said the staff prides itself on quality food and friendly service.

The restaurant, which has eight full-time employees, is open for lunch and dinner every day except Monday. It also has a catering operation. For more information call 972-524-9998.

He and his wife Jill Slayton have three children and three grandchildren. When not working or serving his church or community, he enjoys spending time with his family.

Slayton said one of the biggest honors of his career in the funeral business has been to participate in helping the families of all five military servicemen from the Terrell area that died in the line of duty. “I feel really blessed to have been able to help them,” he said.

Wilkerson said he has a natural ability to relate to family members. “The take away with Max is what you see is what you get — he’s here to take care of each and every family that comes through our doors to help them celebrate the life of a loved one.”
