30th Annual Crockett County DeerFest

The 30th annual Crockett County DeerFest will be on Saturday, December 2, 2017. The event will again be held at the Fair Park Convention Center in Ozona. Check out their website at deerfest.org. The dinner will be served at 5:30 p.m. General admission (includes meal) is $10 per person. Attendees are fed a meal of chicken-fried deer, turkey, axis, deer sausage, deer chili, deer tamales and brisket.

To claim firearm prizes you must have proper identification. A physical address must be on your driver’s license or ID. If a physical address is not on your ID, then you must present your voter registration card or your hunting license with a 911 address along with your driver’s license.

High Roller, as well as individual door prize tickets are available at Wool Growers and Triple C Hardware. The High Roller door prize tickets are sold in books of 100. All you have to do is give us your name, address and phone number one time.

We will keep track of your book number during the event and call your name if you are a winner.

The newly elected officers are: President Martin Childress; 1st Vice President - Jimmy Nowell; 2nd Vice President - Michael Mitchell; Secretary - Megan Nowell; Treasurer - Travis Davidson. Board Members are: Gary Yeager, Daun Williams, Ben Forehand, Ryan Cathy and Dominique Perez

The Crockett County DeerFest was created 30 years ago as a community wide appreciation banquet for hunters. Typically 1,000 to 1,500 people attend the event and approximately $80,000 in prizes are raffled. Over the years, the DeerFest Association has raised enough money to build the Crockett County Convention Center in which the event is now housed. After construction, the building was donated to the county.

Rachel Maldonado and Timothy Maldonado were the 2017 recipients of the Crockett County DeerFest Scholarships of $2,000 each.

As always, 10% of the admission is donated to the West Texas Rehabilitation Center of Ozona. After the 2016 event we donated $2,000 to the West Texas Rehab of Ozona.

The Crockett County DeerFest Association has purchased equipment and put a roof on Ozona Community Center Day Care and helped finance the construction of the Crockett County EMS building. Over the years the DeerFest has contributed to the American Cancer Society, Blessings in a Backpack, Boy Scouts, COZ 4 OZ, Crockett Co. Care Center, Crockett Co. Civic Center Youth, Crockett Co. EMS, Crockett Co. Library, Crockett Co. Senior Center, Crockett Co. Sheriff’s Department, Crockett Co. 4-H, Cub Scouts, DARE, FFA, Girl Scouts, Helping Hands, Knights of Columbus, Ministerial Alliance, OLPH Youth, Ozona

Chamber of Commerce, Ozona Community Center, Ozona Youth Baseball, Ozona Volunteer Fire Department, Ozona Wellness Center, Ozona Women’s Forum, Ozona Women’s League, Preceptor Mu Chi Chapter, Project Graduation, Relay for Life, Salvation Army, Texas Challenge Academy, Toys for Tots, West Texas Rehab, Wounded Warrior Project and YMCA Youth Football.

All monies are raised from the sale of door prize tickets, admission fees and our donors’ generous contributions. Among prizes given away in 2016 were 80+ guns, $10,000 in Cabela gift cards, a number of wonderful miscellaneous items and a 2016 Polaris Crew Cab Ranger. This year we will be giving away a commemorative 30th Anniversary Winchester 30-30, a 2017 Polaris Ranger Crew, a 2017 Polaris Ranger, over 80 guns, $10,000 in gift cards and much more.

BY DAN WADDELL, Crockett County Game Warden Howdy folks! I’m Dan Waddell, your newest game warden in Crockett County, Texas. You can call me Dan, Danny or Daniel. It doesn’t matter to me as long as you call me for supper. Just kidding! What a great place to live and work. The weather is moderate and the people friendly.

Can’t ask for much more than that and I’m really glad to be here.

Since there are no significant

changes to the laws governing hunting in Crockett County this year, I’d like to take a few words here to introduce myself. I am a West Texas boy. Born and raised in San Angelo, I attended Wall schools and then San Angelo Central for a semester.

In 1986, my family moved to Odessa and I finished high school there. So, I reckon my transfer to Ozona pretty much puts me back home, a place I haven’t been in a long time. It’s always good to go home, isn’t it? After high school, I served a few years in the military and CONTINUED ON PAGE 5

•WADDELL - CONTINUED FROM PAGE 4 then returned to West Texas to go to college. After college, I joined the U.S. Border Patrol as a patrol agent in Brownsville, Texas. After seven years on the border, I felt a desire to try once again to become a Texas Game Warden, the best job in law enforcement. The second time was a charm and I made it in. I have served as a warden altogether for twelve years in Sanderson, Brownsville/South Padre Island, Gonzales, and now Ozona.

All of my family, except my children, are in or near San Angelo. My daughter, Danielle, is married and lives in Prescott, AZ. My son, Lane, has been in the coast guard for five years and is currently serving in Panama City, FL. He will soon graduate from the Naval Diving and Salvage Training Center there and by the time you read this, will be stationed in Virginia Beach.

Enough about me. Let’s talk hunting!

As I write this in the dog days of mid-August, I’m reminded of a movie line by rancher Wil Andersen in The Cowboys (1972) as he lay dying. “Summer’s over,” says he, to which Mr. Nightlinger warmly responds, “Just about.” It is painfully obvious Mr. Andersen is making a metaphorical reference to the frailty and brevity of life. Now, I hate to wax too poetic here, however, Mr. Andersen does have a point. Life is terribly and tragically short and we ought to make the most of every moment.

Yes, literally, summer is over, but all is not lost. We still have school days, oh yes, those dear old golden-rule days; the beauty and moderate weather of autumn; family get-togethers; Thanksgiving and Christmas holidays; West Texas football, Friday night lights, hot dogs and cold Coca-Cola, popcorn and hot chocolate; and last, but definitely not least...deer season! Autumn is my favorite season of the year for these and many other reasons… and I bet it’s yours, too.

When I was a kid, hunting season was on my mind all year as I practiced on ground squirrels, rabbits, paper plates and aluminum cans. I spent the dog days like pretty much all country boys in those days: swimming, fishing, playing, shooting, eating watermelon and pining for opening day. If only every day could be opening day! It came and went like lightning. It was over before I knew it. Alas, as summer always

ends, so does deer season.

So, make the best out of it this year. Get out in the field and take a kid hunting. For that matter, take YOUR kid hunting, regardless of his experience. He will never forget trips to the field with dad or his first harvest experience. They grow up so quickly. So, metaphorically speaking, before “summer” is over, spend time with your son or daughter outdoors this year. You won’t ever regret it.

Wind Chill Chart

The term wind chill refers to the cooling effect wind has on the skin together with the temperature. As winds increase, heat is carried away from the body at a faster rate, driving down both skin temperature and eventually the internal body temperature. The wind chill chart describes an equivalent temperature at which the heat loss from exposed flesh would be the same if the wind were near calm. A strong wind, even in moderately cool weather, can cause a wind chill far below freezing.

Who needs to take Hunter Education?

With hunting season under way, don’t forget hunter’s education if you’re not yet certified.

With the option to take a hunters education course online, now it’s easier than ever to get a hunter education certification.

To hunt legally in Texas, anyone born after Sept. 2, 1971, must complete a hunter education training course or purchase a one-time deferral, good for one license year. To make this process easier, the Texas Parks and Wildlife Department now offers the option to complete training courses online for Texas residents 17 years and older.

TPWD also offers other convenient methods of getting certified. One is the basic hunter education course, which is designed for novice and young hunters and requires six hours of classroom instruction. Another is the enhanced hunter education course, a combination online and home study program that requires up to five hours in the field. A third option is the advanced hunter

education course, which requires more than six hours of instruction and includes more content than the basic and enhanced courses.

Each of the courses cost $15, and the passing grade for all courses is 75%. Minimum age of certification is nine years old.

As dove season opened last year, one of the most frequent citations game wardens issued was for hunting without hunter education certification. Since mandatory hunter education first started in 1988, the number of hunting accidents and fatalities has declined to fewer than 3 per 100,000 hunters.

Accidents involving those who had completed hunter education courses are only in the single digits each year.

The certification is valid for life and is honored in all other states and provinces.

Tooth wear and replacement is one of several methods for aging white-tailed deer. Texas Parks and Wildlife biologists have been using this deer aging technique to manage deer on ranches, wildlife management areas and by county since 1965. Although this method is not perfect, it has been used for decades in the successful management of deer herds in Texas. Deer are aged by examining the wear and replacement of the premolars and molars of the lower jaw. As a deer grows older, its teeth continue to wear. As the enamel begins to wear away, and exposes the dark dentine material, noticeable distinctions in tooth wear occur between each age class.

Deer are aged in year and half increments, such as 1 1/2, 2 1/2, 3 1/2, etc., since fawns are born from late May through July and are not harvested until the fall hunting season.

Biologists, landowners or land managers may be interested in deer ages from a deer management standpoint.

Age data provides information about deer herd characteristics, hunting or mortality pressure on a particular age class, and progress of the wildlife management program.

Age data becomes a valuable piece of information when used with other data such as antler characteristics, dressed body weights or lactation in females. Deer herd trends can thus be monitored if enough data are collected over time.

Often these trends can be related to a particular management style, climatic conditions or any other factors affecting deer. Dressed body weights, age and antler measurement data should be collected every year and from every deer harvested. Collecting partial data, only occasionally during a season, or every couple of years may result in land managers making uninformed decisions about deer management.

Aging deer using the wear and replacement method is not difficult, but it does require practice. When aging a deer, it is helpful to cut the skin along the edge of the jaw to allow better inspection of the teeth. Do not cut the skin if planning to mount the deer. Taxidermists will cape out the deer head and save the lower jaw if asked. A jaw spreader and small flashlight may also be used to prop open the jaw while examining the teeth, especially when the skin is not to be cut.

Be sure to remove any food particles or debris to maintain a clear view of the teeth along the jaw. Inspect teeth on both sides of the jaw to confirm that wear is consistent.

...Texas records first cases of disease in free-ranging whitetail, elk

TPWD Announces 2016-17 CWD Monitoring Results AUSTIN – Texas recorded a couple of unwanted firsts for chronic wasting disease (CWD) during statewide surveillance efforts for the 2016-17 collection year, including detections in a free-ranging whitetail and a free-ranging elk.

The Texas Parks and Wildlife Department (TPWD) surpassed its statewide goal of 6,735 CWD samples, collecting 9,830 from hunter harvested and road kill deer, and other susceptible cervid species, between March 1, 2016 and Feb. 28, 2017.

Sampling objectives were established by TPWD wildlife biologists based on deer densities within each of the 41 Deer Management Units (DMU) in Texas and other factors to establish sufficient confidence of detection if CWD were present within those localized populations.

TPWD wildlife staff collected CWD samples from a variety of locations including: road kill deer, deer processors, private ranches, wildlife management areas and state parks, and voluntary and mandatory hunter harvest check stations. Of the 9,830 samples collected, 23 percent were road kill. Exotic species that have been sampled include axis deer, fallow deer, red stag, sika, and elk; although there is no evidence that axis and fallow deer are susceptible to this disease.

Among the CWD positives detected in Texas this past season, some notable firsts: The first confirmed case of CWD in a free-ranging Texas whitetail was detected in a hunter harvested 1 1/2 –year-old buck submitted for sampling within the Surveil-

lance Zone 3 located in portions of Medina, Uvalde, and Bandera counties.

The first known free-ranging elk in Texas to test positive for CWD, harvested by a hunter in Dallam County.

The first known case of a captive-raised white-tailed deer in Texas that live tested “not detected” for CWD, but after being harvested by a hunter on a release site three months later tested positive for the disease.

To date, Texas has recorded 49 confirmed cases of CWD, of which 26 were discovered in captive deer breeding pens, 5 were hunter harvested on breeder deer release sites, 16 were free-ranging mule deer, 1 was a free-ranging elk, and 1 was a freeranging white-tailed deer.

“The good news is so far our sampling in the Tran-Pecos has only detected CWD in the Hueco Mountains area,” said Dr. Bob Dittmar, TPWD wildlife veterinarian. “Since 2012, the disease has been found in 13 mule deer out of 117 tested in the Hueco Mountains area for an 11 percent prevalence rate.”

Dittmar also expressed guarded confidence that CWD has not spread outside the Hueco Mountains area based on increased sampling in the surrounding ranges.

“The mandatory sampling in the TransPecos SZ helped get an increase in sampling from the Delaware Mountains this year and while we have accumulated a decent number of samples around the Guadalupe Mountains, both remain areas of concern and we still need some more sampling out there.” Dittmar noted.

Chronic Wasting Disease, what you need to know CWD is a progressive, fatal brain condition that affects some species of cervids (including, deer, elk, and moose). There is no vaccine or cure. An animal may carry the disease for years without outward indication, but in later stages of the disease, signs may include listlessness, lowering of the head, weight loss, repetitive walking in set patterns, and lack of responsiveness.

CWD is not new; it was first documented in Colorado in 1967 and since then has been ‘found in two Canadian provinces and nearly half of the states in the United States. It is almost impossible to eradicate once it becomes established. But what we can do is manage the disease and minimize the risk of it spreading to both wild and captive deer.

The first case of CWD in Texas was discovered in 2012 in a free-ranging mule deer in an isolated area of far West Texas. The first case of CWD in Texas white-tailed deer were found in four deer-breeding facilities in 2015 as a result of routine disease monitoring, which is required by TPWD regulations. Significant disease-management challenges arose after it was found that there was widespread movement of deer between the infected breeding facilities and numerous other breeding facilities scattered across the state and released into the wild.

The Texas Parks and Wildlife (TPW) Commission adopted comprehensive CWD Management Rules on June 20, 2016 that address CWD management associated with permitting programs that authorize intensive deer management activities, and were developed through a collaborative process that involved substantial stakeholder input. Additional rules regarding CWD monitoring zones and carcass movement restrictions were adopted by the Commission on Aug. 25, 2016.

As new cases of CWD were discovered in additional captive deer breeding facilities as well as free-ranging deer and elk in 2016/2017, the TPW Commission adopted modifications to the rules pertaining to live-deer movements into, within, and out of CWD Containment Zones and Surveillance Zones. Both sets of rules are intended to reduce the chances of spreading CWD and increasing the chances of detecting and containing CWD in areas where it might be present.

Because it’s possible that CWD can be spread through infected carcasses, it is recommended to leave viscera, brain, and spinal tissue at the harvest site, especially in areas where CWD is known to occur. Disposal in a Class 1 landfill is also an option.

Deer harvested from areas being managed for CWD should be processed individually and separately from other carcasses, with the packaged meat retained until test results are received.

All internal organs and inedible carcass parts should be left at the site of harvest.

Clean processing knives and equipment of residue and disinfect with a 50/50 solution of household chlorine bleach and water. Wipe down counters and let them dry; soak knives for one hour.

Cutting and Processing

What parts can I use?

There are some parts of the deer you should never eat, even if the animal looks healthy.

The parts listed below are tissues where prions generally concentrate.

Common sense precautions while handling and processing deer should be taken at all times. Chronic Wasting Disease (CWD) is one of many diseases that can affect deer. CWD is a fatal transmissible neurological disease that affects cervid species such as white-tailed deer, mule deer, elk, red deer and sika. It is classified as a transmissible spongiform encephalopathy, a family of diseases that includes scrapie (found in sheep) and Bovine Spongiform Encephalopathy (BSE; found in cattle). Much remains unknown about this disease.

The peculiarities of its transmission, infection rate, incubation period, and potential for transmission to other species are still being investigated. What is known is that CWD is invariably fatal, and can be passed directly from deer to deer and indirectly through environmental contamination. Scientists believe CWD is caused by a misfolded protein (“prion”) that replicates and infects other normal proteins. Prions generally concentrate in the brain, spinal cord, eyes, lymph nodes and spleen, and they are shed in saliva, urine, blood, soft-antler material, feces, and from decomposition of an infected animal. There is no scientific evidence that chronic wasting disease can infect humans or domestic livestock.

If removing antlers, soak the blade of the saw used in a bleach solution for one hour.

If hunting within a CWD Containment Zone or High Risk Zone, it is recommended that harvested deer be quartered and head detached in the field and all other carcass parts be left at the site of harvest if it is not possible to dispose inedible carcass parts in a landfill (or buried at least 6 feet deep).

Bone out the meat from the deer and remove all fat and connective tissue (the web-like membranes attached to the meat). This will also remove lymph nodes.

These inedible parts also should be left at the site of harvest, or disposed of in a landfill, or buried at least 6 feet deep.

Thoroughly clean and sanitize equipment and work areas with bleach solution after processing.

Never eat meat from a deer that looks sick.

AUSTIN - The Texas Parks and Wildlife Commission has approved amendments to chronic wasting disease (CWD) management response rules based in part on discovery of the disease in a free-ranging white-tailed deer west of San Antonio. The changes address containment and surveillance measures, and permitted movement of live deer, in portions of Bandera, Medina, and Uvalde counties as well as zone delineations in the northwest Panhandle.

Last year, the Commission established a CWD Surveillance Zone (SZ) in portions of Bandera, Medina, and Uvalde counties as a result of CWD being confirmed in permitted deer breeding facilities in the area. A containment Zone (CZ) was not established in this area because the disease had been detected only in permitted deer breeding facilities or their adjacent release sites, all of which had been issued hold orders or quarantines by Texas Animal Health Commission; these measures included requirements that satisfied the need for a CZ. This par-

The state’s wildlife disease management response focuses on an early detection and containment strategy designed to limit the spread of CWD from the affected area and better understand the distribution and prevalence of the disease.

The detection of CWD in a free-ranging whitetail in Medina County this season resulted from enhanced voluntary testing of hunter harvested deer, allowing TPWD to initiate proactive measures aimed at containment rather than reactive steps targeting control. “The more effective we are at containing this disease within a limited geographic area, the better it will be for our wildlife resources and all those who enjoy them,” Dittmar said. “We want to thank the Texas hunting community for its strong support of our management efforts; we cannot combat the spread of CWD without it.”

ticular SZ was exempted from mandatory sampling and carcass movement restrictions in lieu of a local voluntary hunter and landowner effort to submit samples.

However, CWD was subsequently detected in a free-ranging white-tailed deer within that SZ, which introduced an epidemiological imperative to designate that area as a CZ by emergency rule and require CWD testing and restrictions on movement of live deer and hunter-harvested deer.

The new rules replace the emergency rules and establish as a CZ all land located within two miles of the property boundaries where CWD has been detected in permitted deer breeding facilities, and within five miles of the approximate location where the CWD-positive free-ranging whitetail was harvested. A SZ is proposed for all land that does not fall within the proposed CZ, but is surrounded on the north by F.M. 470, on the east by F.M. 462, on the south by U.S. Highway 90 and the west from the intersection of U.S.

90 and the Sabinal river, following the river north to the intersection of F.M. 187 and north along F.M. 187 to F.M. 470.

Amendments to the SZ delineations in the northwest Panhandle extending the zone east of the cities of Amarillo and Dumas have also been adopted by the Commission to make sample submission and carcass disposal more convenient for hunters.

The newly amended rules also provide greater latitude for permitted movement of live deer as it relates to CWD containment and surveillance zones. Under these new provisions, permitted movement of captive deer into a CZ or SZ may occur, as well as movement within the zones by permit holders having Transfer Category 1 or 2 status provided certain guidelines are met.

Harvest on release sites must be equal to or exceed the number of breeder deer introduced that year and deer may be released from TC 2 facilities to an adjacent release site once “Not Detected” tonsil biopsy test results are obtained.

Packaging and Storing Wild Game at Home

Game meat can provide a nutritious, tasty, and sometimes less expensive alternative to the traditional meat products sold in grocery stores. Nevertheless, you need to handle and store game meat properly to keep it from spoiling or allowing the growth of disease-causing organisms (pathogens) that can cause foodborne illness. Game meat is defined as the meat of any animal that is hunted for food or sport instead of being raised on a farm. Examples are deer, elk, wild hogs, and game birds such as quail, pheasants, or turkeys.

To keep your game meat safe to eat, field dress the carcass with the right equipment and under the proper conditions. Although the techniques for field dressing vary by the type of game animal, some important basic tools are common to all: • Rubber gloves • Clean, sanitary knives • Coolers that are sanitized, insulated, and large enough to contain both meat and ice • Ice from potable water • A plan for transporting the carcass from the field into an insulated cooler or another coldstorage unit as quickly as possible To enable the meat to cool more quickly, trim large muscle cuts into small pieces, and package them individually before moving them to a refrigerator or freezer. Do not package, chill, or freeze large cuts of meat because they require more energy and time to cool and freeze completely than do smaller cuts. Freezing smaller cuts also helps maintain overall meat quality longer by minimizing exposure to air and re-sealing, which can result in off-odors.

Maximize the airflow in the cooler to make sure that the meat cools adequately. After the carcass has been properly field dressed, cut, and cooled to below 40°F, it is ready to be packaged

(Fig. 1) for storage in the freezer.

Freezing is the easiest way preserve wild game. Freeze meat at 0°F or below as quickly as possible to reduce or inactivate pathogen growth and other chemical changes that can affect its quality.

Done properly, freezing causes little to no loss in the nutrient content of wild game meats.

FREEZING GAME MEAT By following basic guidelines for freezing, you can help ensure a safe, high-quality product. Use packaging material such as butcher/freezer paper, flexible freezer bags, or a vacuum sealer and compatible packaging for small cuts of meat. All of these materials work well if used correctly. If you use a vacuum sealer, follow the manufacturer recommendations for selection of packaging materials and vacuum conditions. Do not try to vacuum-seal using films or packaging materials not recommended by device manufacturer, because the heat sealer may not be rated to melt the plastic enough to create a strong, airtight seal.

Vacuum-sealing meat also helps prevent potential freezer burn and spoilage. When using freezer bags, press each package to expel as much air as possible before closing it.

For paper packages, follow the steps below and label them with the date and contents.

PRESERVING MEAT QUALITY Two common problems to avoid in meat freezing are rancidity and freezer burn.

Rancidity is a chemical change that can produce an off-flavor when fat from the meat is exposed to air for too long. To control rancidity, use packaging materials that prevent air from reaching the meat, and remove as much air as possible from the packages before freezing.

Vacuum packaging also can help prevent rancidity.

Freezer burn is a discolored, grainy spot where the meat appears to be dry and tough. It is caused by excess moisture loss that results in formation of ice crystals. Although freezer burns can reduce the quality of the meat by causing off flavors, it does not cause illness.

To prevent freezer burn, package the meat properly and cool it quickly.

STEPS FOR PACKAGING MEAT IN PAPER FOR FREEZING STEP 1 Wrap the meat in plastic cling wrap.

STEP 2 Place the wrapped meat in the center of freezer paper.

STEP 3 Bring the opposite sides of the paper together and fold down the edges about 1 inch deep.

STEP 4 While folding down the edges, push out the air.

STEP 5 Fold the ends tightly to form a V. STEP 6 Flip the package so that the seam

17 is down. Fold the ends over each other.

STEP 7 Seal the edges with freezer tape.

STEP 8 Label the package with its contents and the date.

Keep your freezer in a cool, dry, ventilated place. Never put it in direct sun or next to a stove or water heater, which makes it difficult for the freezer to remain at 0°F or lower.

Also, be sure the freezer sits level, and avoid overloading it.

Overloading can slow down the freezing rate and could reduce the meat quality.

Instead of stacking the packages in one area of the freezer, spread them out to allow air circulate among the packages more easily, which helps the product freezer faster.

For best quality, the U.S. Department of Agriculture recommends consuming frozen wild game within 8 months to a year.

If you store meats in the refrigerator, keep them at 40°F or below, and eat or freeze them within 2 or 3 days. Use an appliance thermometer to make sure that your refrigerator stays at the proper temperatures.

To keep the meats from contaminating other foods in the refrigerator, store them separately from the other foods.

The Secret Lives Of Big Bucks

By Larry D. Hodge Few things hold more fascination for hunters than white-tailed deer, especially big bucks. Yet despite all the attention they receive in print, video and deer-hunters’ dreams, we actually know very little about many aspects of bucks’ lives.

The mystery is part of the fascination these phantoms of the forest hold for hunters. On some level, I think we understand that the hunter who brings home a buck is taking part in a saga that spans aeons and yet reaches its denouement in seconds. Holding an antler, we clutch the physical manifestation of a natural process the understanding of which eludes our grasp. In the final analysis, a hunt for a buck offers perhaps the most intense and personal connection to the little-understood ways of nature most of us are ever likely to have.

Why deer have antlers at all is a mystery, says Bob Brown, chair of the department of wildlife and fisheries sciences at Texas A&M University. “Why are antlers necessary? Why do deer expend so many resources on growing antlers? We’ll probably never really understand that - that’s why they are so fascinating.”

While we don’t know much about why deer grow antlers - and only members of the deer family, including elk, moose, and caribou, do - we know quite a bit about how they do it. Here again, though, some mystery - and perhaps a bit of magic - remains.

The yearly beginning of antler growth in whitetailed deer is related to the fact that the earth is tilted on its axis. As the earth travels around the sun and begins to point its north pole at the sun, days in the Northern Hemisphere grow longer. The lengthening photoperiod stimulates a buck’s pituitary gland to begin producing hormones that control skeletal growth, and the first bone begins to grow from the pedicels, or bases, atop the deer’s head. The process begins a few months after the old set of antlers is dropped; in Texas, sheds begin to hit the ground anywhere from late December to late March.

Deer native to equatorial regions, such as axis deer, grow and lose their antlers at different times of the year and have a year-round breeding system.

White-tailed deer in the Southern Hemisphere follow a similar pattern to their northern kin, although the seasons are reversed and they drop their antlers just as bucks in the Northern Hemisphere are coming into the breeding season.

Why are lengthening days the stimulus for the most important event in a white-tailed buck’s year?

Bill Armstrong, a Texas Parks and Wildlife biologist on the Kerr Wildlife Management Area, speculates that natural selection may be the answer. Over extremely long periods of time, bucks outside the equatorial region that passed on their genes were those that bred at the time of year that resulted in fawns being born in early summer, when food was plentiful and fawn survival was higher. Near the equator, seasons are less pronounced, and the availability of food does not fluctuate as much. Therefore, the timing of births is not as critical to survival of the offspring. “Different animals interpret the photoperiod differently,” Armstrong says.

“You have a genetically controlled photoperiod, but you also have environmental influences that sometimes override that photoperiod.”

The entire story of a buck’s life is, in fact, a constant balancing act between hormonally induced changes in its body and the struggle for physical survival. These two opposing forces clash most dramati-

cally during the time bucks are growing antlers. Ironically, this is the Dark Age of bucks’ lives, a time little studied or understood, since most people find bucks far more interesting after they already have racks. But the changes that take place in the buck’s body - and atop his head - from April through September determine whether he becomes just another deer or a bad case of antler avarice come hunting season.

“About the first of March, the lengthening photoperiod says, ‘Antlers fall off,’” says Armstrong. “Then the buck begins to rebuild his body from the stress of the rut.” (Bucks eat little during the breeding season and may lose 25 to 30 percent of their body weight.)

Testosterone production almost ceases when antlers are shed, and bucks become more docile and social.

They go from being combative loners ready to take on all comers to just one of the guys in a bachelor group. “It makes sense when you put it all together,” says Donnie Frels, manager of the Kerr WMA. “Your antlers fall off, and you become a lot nicer, because it wouldn’t be good to be aggressive around other bucks that still have their antlers.”

Dramatic physical changes take place. Bucks begin losing their winter hair and start growing a summer coat lighter in both color and thickness. Hair is mostly protein, so a diet high in protein is required. Spring forbs and browse supply the protein, but antlers are bone tissue, and there is no readily available source of calcium and phosphorus in the quantities needed.

“Some of the bigger deer will grow more than 170 inches of antlers between March and the end of August,” Armstrong says. “That’s like you cutting off both your legs and growing them back in three months.”

Since the deer can’t get all the raw material they need for this rapid growth of antlers from their food, they borrow it from within their bodies. In a process similar to osteoporosis in humans, minerals are taken from ribs, sternum and skull and redeposited in the antlers.

Bone density may decrease as much as 30 percent.

Growing antlers and hair at the same time puts tremendous demands on the buck’s body, and eating dominates the agenda. Deer raised in the Kerr WMA’s experimental pens begin eating heavily in April, and by late August are eating about seven pounds of food a day. Early on, much of the food is converted to hair and replacement bone. “Antler growth is really slow at first and stays slow until about the third week in June,” says Gene Fuchs, a biologist on the Kerr. “Then some deer will put on four to five inches in three weeks, as much as half an inch a day on each point. As a rule, deer 2-½ years old or older will have all their points showing by the middle of July.” Antler formation is said to be the most rapid growth known in the animal kingdom. (As impressive as white-tailed antler growth is, it is tiny compared to that of elk and moose.)

During the growing period, antlers are covered and nourished by a thin layer of skin known as velvet.

(Happily for the deer, the blood-rich velvet serves as a sort of radiator, helping cool the deer’s body during the summer.) The antlers appear to be sensitive and are easily damaged, so bucks tend to protect them.

This may be one reason for their lack of aggression during this time. If bucks do fight during this period, they flail at each other with their forefeet, much as does do. If an antler base (or pedicel) is damaged while in velvet, somehow the deformity that results becomes “remembered” by the nervous system and will be replicated in future years.

Social standing within a group of bucks becomes established as the antlers develop. Conventional wisdom holds that the deer with the biggest antlers will dominate the others. But there may be a surprise

19 lurking here, too, says Bob Brown. “Even when deer don’t have their antlers, there are still dominant animals. One European study shows that large antlers may be the result of being the dominant buck, not the cause,” he says. Possible explanations are that dominant animals may get more to eat and that antler-growing hormones are both the cause and result of social dominance.

While humans tend to recognize particular bucks by their antlers, the deer themselves recognize each other with or without antlers. However, their interactions with each other depend partly on which has the bigger headgear. Bucks in the research pens at the Kerr have their antlers sawed off each October before the rut begins, to keep the deer from hurting each other. Dramatic changes in behavior sometimes result. “We have 2-year-old deer that will fight 5-year-old deer after we saw their antlers off,” says Gene Fuchs.

“When they fight without antlers - which doesn’t start until about a month after the antlers are sawed off little bucks don’t back away from the older deer.”

Attitude may play a part, says Bill Armstrong. “I think there are some deer that just think they are bad. They are like the 5-foot 1-inch guy who goes into a bar and walks up to a 7-footer and gets whipped.”

By about the first of September, antler growth is complete. Suddenly bucks undergo a transformation. A sharp rise in testosterone level triggers a shutdown of the blood supply to the velvet. The velvet dies and sloughs off with amazing speed. “Velvet is shed and antlers are completely polished [by rubbing on brush or weeds] within 24 hours,” says Fuchs.

“Some velvet comes off just like a rotten banana peel without any rubbing. I’ve seen deer at 10 a.m. one day with no sign of shedding velvet that had completely polished antlers at 9 a.m. the next day.”

The growth of antlers in white-tailed deer is closely linked to the ability to breed. Not until growth of the antlers is complete is a buck capable of producing sperm. Loss of the velvet signals that a buck is capable of breeding. Bucks lose interest in eating, reducing their food intake by half to three-quarters.

Now reproduction is the name of the game. By this time all the bucks in a given territory know each other and the rank of each within the hierarchy, so real fights between them are few. All-out battles generally occur only between bucks that are strangers to each other and meet when one invades another’s territory while searching for does. “Bucks probably use the time they spend in bachelor groups to figure out who is boss,” says Bill Armstrong.

The objective of being the boss probably is related to the drive to reproduce. Dominant bucks - whether they have the biggest antlers or not - are believed to do most of the breeding. (Confirmation may come from a recent TPW study. See sidebar “Does Size Matter?”) But there is no doubt what a buck’s role in life is. “A buck’s job is to breed does,” says Armstrong. “The rest of the year they are just mountain lion food.”

That assessment, while biologically apt, fails to convey the wonder of an animal whose whole life - and success therein - revolves around how many inches of bone it can sprout from its skull during a five-month period each year. This daunting task is made more difficult by the fact that the process begins in winter and peaks in late summer, the two times of the year when the quantity and quality of food available are at their lowest. Production of a massive set of antlers under such adverse conditions truly is the mark of a creature superior to others of its kind. Perhaps that, more than anything else, explains why antlers fascinate and excite human observers.
