A Family Affair



Brian Broaddus and Bill Sprouse, along with wives Jennifer and Kimberly, opened the Four Tines at the Surrey on February 1, 2021, at 403 East Highway 21. Bill comes to the restaurant with 25 years of experience in the field, and together Bill and Brian have provided catering to Caldwell and the area for a few years. Bill had thought of opening a restaurant over the years. Although he and Brian had cooked together from time to time, the partnership didn’t become a reality until their cooking of steaks took off. People from as far away as Houston were asking for catering of their steaks. Soon their business grew too large for home distribution. The Surrey Restaurant then came on the market. It was the perfect opportunity for them. They felt that Caldwell would be open to a restaurant that offers what they as a family enjoy eating. They believed if they liked the food, others would too. Things worked out, and they began the process of opening Four Tines at the Surrey. After the business purchase, the restaurant was de-cluttered and deep cleaned. The lighting was changed inside and out. The buffet area was re-covered. New kitchen equipment was added, as was new cooling. And they bought a char-griller, fryers, and a new flat top grill. The owners are proud of their food and work hard to offer the best to you, the customer. They cut their own meat, even grind the hamburger meat, and make their own salad dressings, Ranch, Thousand Island, and Honey Mustard, as well as whipping their own butter and whip cream for desserts. Four Tines is open Monday-Thursday 11-8:30 p.m. Friday-Saturday 11:00-9:00 p.m. Sundays 11-2:00 pm. The restaurant offers a buffet 11:00-2:00 daily. Full menu is available all day. The variety of foods on the menu includes grilled steaks; chicken fried steaks; shrimp, grilled and fried; crawfish, oysters in season; fried porkchops; and burgers w/ wo cheese. And they have a great chef salad. The buffet offers four proteins, which always includes chicken fried steak and fried fish, as well as a salad bar and assorted veggies. Rolls, as well as dessert choices of cakes, cobblers, and puddings complete the items. We all know that restaurant ownership is demanding. “It’s hard work with preparing, cooking, serving, cleaning…but it is rewarding work,” Brian says. He enjoys people, and they are happy to be providing them with delicious food. The restaurant is a family affair. Bill’s children, Preston, Payton, and Ashlynn, as well as Brian’s son Ryan are employees. And Brian’s daughter Riley helps too. They’re keeping it in the family. Be sure that you drive down Hwy 21 and pull off at the Four Tines at the Surrey…you won’t be sorry you did.
