The History of Cajun PowerÂŽ Cajun Chef Caro, creator of Cajun Power products, began cooking at a young age. He started helping his mother in the kitchen and soon discovered his passion for cooking. His mother, Gertrude, ďŹ rst introduced him to the basic concepts of true Cajun cooking and from there he dedicated his life to studying the traditions of the Cajun people. Chef Caro discovered that the secret of Cajun food and cooking was in the seasoning and quickly became a student of his mother and the older generation of ladies who would prepare food for the farmers in the ďŹ elds. He

took these wonderful old ideas and incorporated them into his restaurant which he ran for over 10 years. It was during this time he began creating some of the wonderful gourmet avors you can now enjoy through our Cajun Power line of products. The Cajun Power name and trademark stemmed from his proud Cajun heritage, and his love for traditions past. Chef Caro is considered an authority on the art of authentic Cajun cooking and remains dedicated to creating products that are true to his Cajun culture of Southwest Louisiana.

A Well Used Stove Wow, how times have changed! At just about every intersection across America, you can’t help notice the many fast food restaurants that surround us! We barely need a kitchen table anymore because we eat most of our meals in the car. It’s hard to imagine that just 50 years ago, the typical American home actually had a well-used stove. I remember growing up and coming home from school everyday to a house that smelled like Southern cooking. On the weekends, momma and maw-maw used to make cookies, tarts, and every other Cajun treat imaginable. My mother just turned 95 and she still has her original stove! A Tribute To Our Late Father and Mother I would like to express my feelings about my parents who instilled the importance of family, love, kindness, and being conďŹ dent in what you believe. Being productive in life was a must so we could enjoy the joi de vie (joy of life). Our Father, Buddy, also known as “uncle Easy,â€? was a kind, Southern gentleman always happy and positive. Buddy owned a very successful grocery business where farmers and plantation owners traded vegetables, eggs, and chickens for canned goods. Because of my Father’s business, I was able to spend eight years with these farmers and their families. The farmers’ wives who were taught how to cook from their mothers and grandmothers, shared with me their secrets and tips. Their knowledge, along with my mother’s, came from a combination of French, Spanish, Indian, and African descent. My mother, Gertrude, or Gammie, was a tough little cookie. She was a wonderful cook and could make magic out of anything. She could take the simplest of ingredients, work her magic, and serve it in any ďŹ ve star restaurant. Gammie’s vision and attitude was that anything is possible if you really want it. She taught this whole heartedly to my brother and I which gave us the courage to handle anything that came our way. Wow, what a mom! Gammie knew and taught me that Cajun cooking was a recipe in itself. This knowledge of how to use the right blend of those herbs and spices came straight from generations before her. The ďŹ nal result of this creative ingenuity was, and remains what we now understand as “the art of Cajun cookingâ€? passed down from generation to generation. Although many never knew how to read or write, they were pure geniuses in that art of Cajun cooking. I am so thankful for my heritage and to the cooks of generations past. I am also thankful for a mother who insisted on “popping the whipâ€?. My Fast, Easy, and So Good line, as well as all of my seasonings and sauces (which I call my “make doâ€?), was a direct result of Gammie and Buddy’s training, support, and love. I knew I had done it right when my mother would say, “How did you do that?â€? I would also like to thank my brother, Alfred II, for his support throughout my endeavors leading to the fulďŹ llment of my dream of seeing Cajun Power Sauce reach the table of virtually every household around the globe. an old dirt road I remember the ďŹ rst time I handed out a bottle of our original recipe garlic sauce. I was a young man eager to show my creation to the world and proud to ďŹ nally put my years of experience into a bottle. What does an old dirt road and Cajun Power Sauce have in common? Many years of traveling and learning the art of seasoning Cajun food. When we talk about good food, we talk about seasoning; in fact, the secret is in the seasoning! As a young boy, I would travel down old dirt roads and knock on the doors of the old farmers’ wives who would be preparing the classic Cajun meals. I remember asking how they made the roux, browned the gravy, and made the roast so tender. One elderly farmhouse wife pulled me toward her and said I had to just look in the pot and watch her do it. In those days, they just put a little bit of this and a little bit of that‌and that was the secret. So, I often found myself traveling that dirt road just to master the art of Cajun food. I guess you could say that there’s a lot of old dirt road in that bottle of garlic sauce!

Spotlight on Production With over 70 products, everyday is a busy day at the Cajun Power factory. There’s always sauce to be made, gift boxes to be packed, or bottles to be labeled. Haroldlyn Comeaux, a long time Abbeville resident, oversees much of the production and supervises the production team. Also, Sid Savoie from Lafayette, takes care of much of the prep work involved in the production processes. Chances are they’ll have a hand at packing your order and sending it out with care. We’re proud to have them as a part of our team.
