ake a look around you. Seguin is changing before our very eyes. Blink, there’s a new skate park and a splash pad at Park West. Blink, there’s a new world-class roller coaster at ZDT’s. Blink, there’s a beautiful, newly restored boutique hotel and high-end chophouse. Blink, and well, you get the idea. Seguin is changing – evolving, if you will – at a rapid pace. Change for the sake of change is not always, perhaps rarely, a good thing. But change for the sake of progress and amelioration, the likes of which we are experiencing in Seguin, is almost always a good thing. The folks here who bring you Seguin Sizzle recognize that, which is why we’re taking a hard look at where we’ve come from and where we want to go with your magazine. A Adrian Davila’s passion for cooking is woven into his DNA. A gene that has been passed down for generations, from his grandfather to his father and now him.
“Being in the restaurant since I was a young child, seeing how things work and doing these things, it has become normal,” Adrian said. “It has become a part of me. These things are not anything new, they are part of life. Being like that, normalcy to me was seeing 500 chickens being cooked, 1,000s of sausages being produced, cooked and distributed.” Growing up in an atmosphere like that gave Adrian the edge he needed to take his skills further. “From a very young age, I was around so much food that when I got to a certain point — my grandfather and father had both already established who they are in this business — I began looking beyond to make my mark through catering,” he said. “My wanderlust led me into other forms of cooking, taking this business and passion into the next level.” Through the years, his travels and in his own kitchen at the family restaurant, Adrian was able to taste various culture’s different styles of cooking and used them as inspiration. “I get a lot of my influences from my travels and just seeing the different techniques and styles within

Adrian’s Vaquero Chili Prep time: 10 minutes Cook time: approx. 2 hours Yields: 30-40 servings Ingredients: Course ground chuck 20 lbs Salt — 3 tbl Pepper — 3 tbl Bay leaf — 8 to 10 leaves Garlic — 3 tbl Beef base — 1 cup Cayenne pepper — 1 tbl & 1 tsp Onion powder — 2 tbl Chili powder — 4 cups Oregano — 1 tbl Cumin — 2 tbl Tomato sauce — 2 cups Chopped canned tomatoes — 4 cups Optional: cooked pinto beans — 8 cups
Directions: Using a large stock pot; preferably a Dutch oven. 1. Place chili meat in Dutch oven and fill with hot water to cover slightly above the meat. 2. Simmer over medium heat for 25-30 minutes. 3. Drain water from pot over colander ; this allows for removal of excess fat. 4. Season meat with all dry ingredients. 5. Add wet ingredients. 6. Cover with water, again slightly over meat 2 to 3 inches. 7. Stir all ingredients 8. Cook uncovered at a simmer, not a boil at medium heat for 45 minutes to an hour. 9. Add cooked pinto beans, recipe to follow. Top with chopped onion and grated cheddar cheese, accompanied by cornbread.

Whether in the kitchen, in front of a grill or pit, Adrian said there is always one constant. “What comes out of our kitchen has to be homemade, it has to start with those fresh ingredients and with a certain passion or it’s not going to come out right,â€? he said. “I have always believed that if you start with the right ingredients and implement the right techniques, with an equal amount of passion and love, you will come up with great food.â€? But itis not just the perfect blend of ingredients and outside inspiration that Adrian looks to when creating his works of art. ´<RX KDYH WR WUXVW WKHVH WHFKQLTXH DQG WLPLQJ Âľ KH VDLG “I’m a big outside-the-box thinker, but when it comes to technique, I’m a firm believe in time-tested techniques.â€? One of those techniques is what set Adrian apart. “The vaquero style,â€? he said. “It’s taking a lot of basic elements and cooking over the coals, cooking over the flames. It’s a rustic style of cooking that is very colorful. It’s basic, good, fresh ingredients with time tested techniques.â€? While diving into the culinary world is part of who Adrian is, he said there is a certain joy he gets out of doing it. “When I am in the kitchen is when I am most comfortable,â€? he said. “I love to cook. I have always felt like cooking was one of the things that God really gave me a talent for. The reason I cook, and what drew me to cooking in the beginning, was being able to create something for somebody with your thoughts, with your hand, with your mind and whenever you see it get to the table, you are helping to create memories. Drive your hips back and down as you press the knees apart, maintaining a flat, neutral spine until your hips reach parallel with the floor. Press through your heels and return to starting position.

She is well known throughout the community for her love of shoes, but what people don’t know about Marty Keil is that she’s a conscientious shopper. The majority of the items Marty has in her closet have either VXSSRUWHG VRPHRQH LQ QHHG RU KDV Ă€QDQFLDOO\ DVVLVWHG D VPDOO business owner in a third world country. Marty has about 20 pairs of Toms canvas shoes, among others she has purchased during her trips to Mexico and Italy. “The neat thing about buying Toms is that the company helps someone in need with every purchase of a pair of shoes,â€? she said. “Not only that, but you can throw them into the washer if they get dirty and are great shoes to travel in.â€? “Every time I wear a shirt or slip on a bracelet, it brings a memory of an exciting time in my life,â€? she said. “I can remember who I was with, where I was and what I was doing when I purchased it. That is what I love about my clothes.â€? Even as a young child, Marty has always had an eye for fashion and creating clothes that were unique. Growing up in Houston, Marty remembers how jealous she would feel when her young friends would go to department stores with their mother and come back with all the latest fashions. “We never bought clothes at department stores,â€? she said. “I ZRXOG JR WR WKH VWRUH ZLWK P\ PRWKHU DQG SLFN RXW DQ RXWĂ€W , UHDOO\ liked. My mother would turn it inside out and study it very closely.â€? Marty said they would leave the store and head straight to the fabric shop where she would pick out a fabric and her mother ZRXOG WKHQ UHFUHDWH WKH RXWĂ€W “I was very young back then and I couldn’t appreciate how fortunate I was that my mother knew how to sew,â€? she said. “I wore the latest fashions too, except I was fortunate to have them custom made just how I wanted them.â€? A graduate of Texas Lutheran College, Marty recalls with a laugh how she and her roommate had one thing in common. “Our mothers used to make our clothes,â€? she said. “All the girls on campus would come to our room and raid our closet.â€? Marty said she has grown a lot since her college days but one thing remains the same — the respect she has for each event she attends. As the wife of Don Keil, Seguin’s mayor, Marty attends many events, dinners and galas in the community. “For example, if you attend a Seguin Chamber of Commerce PL[HU \RX GRQ¡W ZDQW WR VKRZ XS ZHDULQJ MHDQV Âľ VKH VDLG ´<RX need to have a little respect for the event you are going to and dress accordingly.â€? Marty said in order to keep up with all her events, she invests in a few classic pieces of clothing such as a pair of black slacks, a black pencil skirt and a black dress. “I buy a lot of separates because you can interchange them to PDNH WKHP ZRUN IRU DQ\ HYHQW Âľ VKH VDLG ´<RX FDQ JR D ORQJ ZD\ with separates.â€? Marty loves to add colorful scarves and jewelry from her travels WR JLYH KHU RXWĂ€WV KHU VLJQDWXUH WRXFK Although she mostly lives in her Toms, she does love dressing up and wearing heels — most of which were purchased at a shop in Santiago, Mexico. “I love these heels,â€? she said as she lifted a gray and black short16 Sizzle ~ winter, well done

Marty pulled out a pair of gold earnings adorned with a dangling pearl and a necklace resembling a Spanish rosary from her jewelry box. “These are my favorite because of all the little detail that went into making it,â€? she said of the earrings and necklace. “I like to wear them with a simple Mexican blouse and a pair of jeans.â€? Many people might believe that dressing up one’s animal is only for the humor of their human; however, dog clothes have actually evolved into something much more. “Part of it is actually for function,â€? Hepzibah Hoffman-Rogers, owner of Thunderpaws Canine Solutions, said. “My French bulldog Lilo gets really uncomfortable if the temperature is under 70. For her, it is a lot of function, but then, the fact they can be cute and DPXVLQJ IRU PH LV MXVW D EHQHĂ€W :H KDYH GRJV EHFDXVH ZH HQMR\ them, and there is no reason not to.â€? At Hepzibah’s store in downtown Seguin, they offer a variety of dog clothes that are not just about fashion, but functionality. “We have got everything from the really whimsical little doggy skirts to more practical sweaters, jackets and hoodies,â€? she said. “We try to keep it mostly on the functional side, but we do offer just some fun ones.â€? One of the more useful items the dog trainer said her store carries is the thunder shirt. “They help to reduce anxiety in dogs, and about 80 percent of dogs see a reduction whether it’s from stress because of people in their home, travel or new experiences,â€? Hepzibah explained. “They can even help dogs that have seizure disorders. One of the things I love about them is if they don’t help, they guarantee them 100 percent. he autumn air was crisp this particular evening in October at Gruene Harley Davidson. The setting sun splashed orange and purple hues as the few remaining fall birds that were left danced across the sky. It was a picturesque scene as any, but as the sun faded, the derby girls got down to business. With a familial aura, women of varying ages,
ethnicities and builds, laced up their skates, donned their knee pads and buckled their chin straps. “Let’s go ladies, line up,” coach Stephanie New said. “It’s time to get to work.” As Stephanie got her skaters ready, someone turned on music. “Time to practice falling,” she said.

There’s a saying in roller derby, 41-year-old Tania Fricke said. “Tattoos and spice, and bruises on ice are what derby girls are made of,â€? she said, smiling. “It really kind of takes a rough and tumble personality.â€? Clearly, derby girls, as they call themselves, are a breed unto themselves — especially the Wurst Girls. The New Braunfels-based team, which accepts women from Seguin to San Marcos, started in February and is hoping to have LWV Ă€UVW RIĂ€FLDO ERXW LQ HDUO\ EXW XQWLO WKHQ LW¡V WLPH WR ZRUN What’s striking about the Wurst Girls is the variety of athletes on the team. From baristas to stay-at-home moms and a city councilwoman, ladies from different walks of life converge for what they call an escape. “I work in customer service, so I know how rude some people can be,â€? 22-year-old Lacey Barr said. “Roller derby is a way for me to release that frustration. Even if I just skate around in circles for
an hour, it helps relieve the days stress.â€? Allison said. “I haven’t skated since I was a child, and it was like Bambi on ice. But everybody here is really encouraging.â€? Allison has been with the Wurst Girls for about six weeks and said she still is learning the challenging sport. Âť

I want us to have a good team.� While for skaters, such as Allison, the close-knit nature of the group is her favorite aspect of the Wurst Girls, others like the physicality. “For a lot of girls, it’s the sisterhood, but for me it’s being physical,� Tania said. “I have my hands full with three teenage kids and this gives me a release.� “And it (roller derby) teaches them (her kids) that I never give up. I’m always here practicing, being reliable and accountable, that’s good for my kids to see. BS ING W E BS R ay South Texans don’t like beer, and we’ll call BS — brewing that is. BS Brewing poured its first pint in June 2013 and hasn’t looked back since. Founder Brian Schmoekel said his company makes an artisan product different than those of Anheuser-Busch or MillerCoors. “There’s nothing wrong with big beer,” Schmoekel said. “They make a consistent product, but it’s like going to a fast food restaurant. With us, we’re more like a family-owned burger joint. There’s a lot more care and a lot more focus here.” “When a person calls here, I’m going to answer the phone — I’m the owner; I’m the guy who brews it,” Brian said. “Good luck talking to anybody up the chain at the larger breweries.”

Pecan Ale with Honey ABV 6.12 percent
College Chronic Red Ale, ABV 7.5 percent College Chronic is a red ale that is hopped with three different hops over a 90 minute boil. A blend of dark roasted barley and chocolate malts give this ale its red color and malty sweetness. Seguin Ale (pale ale) ABV 6.2 percent There are plenty of great citrusy pale ales out there that have a wonderful floral nose. Seguin Ale isn’t one of them, BS Brewing pushes the opposite extreme. They use high-acid hops both in the boil and dry hop and only hold back the bitterness to add a little flavoring of noble hops right before knock out. Seguin Ale is a punch to the mouth with a spicy, bitter flavor. It leaves your taste buds shocked and the back of your tongue asking for more.
The Seguin-based start up really takes pride in making artistic ales that maintain Lone Star sensibilities. “We take an aggressive approach to a warmer fermentation ale,” founder Brian Schmoekel said. “We use a lot of grain. We try not to use too many adjuncts.” Generally speaking, Brian said BS Brewing tries to let the malt speak for itself. “Even our American pale ale, Seguin Ale, has a really strong malt presence because a lot of the pale ales, or IPAs, use hops as the driving flavor force — aroma,

Moreover, the brewer said that loyalty isn’t exclusively ale-related. “My beer speaks for itself, but the whole culture of shopping local in Seguin is great,” he said. “There are so many new, and even long-time, businesses that are finally starting to be appreciated.”

However, Brian also said that having a consumer base as proudly local as Seguin’s definitely helped. “One thing I have always noticed about Seguin — and I was born and raised here, went to high school and TLU — was that Seguin really takes care of its own,â€? Brian said. “Over the past 10 years, ‘support local’ has become a popular phrase, but it’s always been like that here.â€? Regardless of what exactly makes it a success, the love and passion that is Seguin Brewing Co. was born of Brian’s original brewing hobby. Eventually, that hobby morphed into a business that’s helping quench beer lovers’ thirst in Guadalupe County. Shaun and Brian have made the ales their own through a distinct vision for flavor while maintaining and honoring the Lone Star and German heritage of the beers. “We brew more traditional style beers,� Brian said. “We do a lot of German backbone recipes, and we’ll do a modern take on it.� Shaun referred to their beers as German brews with a “Texas twist.� While some craft beers can be more than 10 percent alcohol, Seguin Brewing Co.’s ales range from 5.2 to 7.9 percent. “Everything is about easy; drinking you have to be a craft beer aficionado to enjoy our ales,� Shaun said.

Artisan lumber By Jessica Kuhn
T
here are certain skills, techniques and styles one can only learn by experiencing different adventures and cultures. Something, artisan and fine furniture maker, Jody Fletcher has spent his life doing — traveling the world. “I lived in the Outback in Australia for two years on a cattle station,” Jody said at his home, which sits along Geronimo Creek outside of Seguin. “We were 72 miles from the nearest telephone.” For Jody, trekking across the world has become a part of his nature. “I did a lot of traveling around, mainly hitchhiking down I-10, coast to coast,” he said. Early on in his life, Jody made the realization he was an artist, constantly seeking a way to release his creative visions. “I started designing and building furniture and really enjoyed it,” Jody said. “I have always had an artistic
vent, and I found furniture making is a way for me to be able to express my artistic side and make a reasonable living as well.” After spending a year or two making self-taught furniture pieces, Jody said he decided it was time to expand his knowledge of the craft. “In 1982, I went to the Primrose Center for Fine Woodwork and Furniture Design,” he said. “I was actually quite honored to have studied there. The year that I applied there were 34 applications and only 14 were accepted. So I sold everything I owned and used that to do the course in Montana.” It was there Jody would discover his fondness of Japanese tools and techniques as well as his mentor George Nakashima. “My designs are largely influenced by the works of Mr. Nakashima, a noted Japanese/American wood artisan,” he said. “Like him, I specialize in live edge furniture where I manipulate the wood as little as possible. I try to ‘read’ the timber and allow it to tell me how and where it should be used.” Using his newly-learned design, concept sketching and woodworking techniques, Jody hopped on a plane, heading back to Australia.
Australian Influence Along with the live edge, the type of wood itself also became a fascination of Jody’s while navigating Down Under. “People would say can you make a coffee table, telephone table, bed head or whatever, and in the meantime, I had fallen in love with this wood called jarrah,” Jody said. “My biggest commission in Australia was a 14-foot wall unit made all out of jarrah. I put right up to 2,000 hours into that. It was a monster.” According to Wood Solutions’ website, jarrah trees are found in the south-western corner of Western Australia and are hardwoods known for being versatile. “The color for one, the deep red,” Jody said, explaining his admiration of the wood. “A lot of people refer to it in the U.S., if they have ever heard of it at all, they call it Australian mahogany because of the color, but it is much more dense, much harder and heavier than mahogany. It is just a beautiful wood.” Another wood that caught Jody’s eye while exploring near Perth, Australia came from a place known to the locals as the “Valley of the Giants.” ´<RX FDQ·W LPDJLQH KRZ ELJ WKHVH WUHHV DUH WKH\ PDNH D OLYH RDN look like a weed,” he said. “The yellow tingle (tree) grows very sporadically like only 10 miles wide and 30 miles long roughly.” Moreover, Jody said most of the area is either part of a state or national park or has been deemed a conservation zone.

“So even if the tingle tree falls over, you can’t touch it because they consider it natural habitat,” he said. “They don’t want people going in cleaning up the forest floor.” However, Jody said, by luck, he was able to acquire some before packing it up for a journey back to the states. “The yellow tingle you can’t buy for love of money, and I managed to stub my toe on four tons of it,” he said. “I got real lucky there. I have made a banquet table that is a single slab top, 12 feet long and 3 feet wide, named ‘From the Valley of the Giants.’” Jody said his sister gives him a hard time about naming his furniture, though, she doesn’t quite understand the relationship he has with the pieces he crafts. “I try to read each piece and let it tell me what I should be doing with it,” he said. “Just like those chaise lounges — Roy and Dale — that I won the best Texas style category for at the Texas Furniture Makers show in Kerrville.”
Native Texan Even with spending a good bit of his life in Australia, Jody said he never forgot his Texas roots. “When I lived in Australia, I told people I was a transplanted Texan because I’m dual citizened,” he said. “I never really missed Texas until I came back after 27 years, and then, I got to missing it real bad and had to come home to the armadilla.” Once back in the Lone Star State, it didn’t take long for Jody to start working with one the state’s native trees — mesquite. “I got an uncle down on Highway 16 in South Texas, and he has a ranch,” he said. “He built a tank, and when he did, the water drowned to reveal big mesquites.” Using a bulldozer and chainsaw, Jody searched through at least a half dozen burn piles, dragging out the biggest pieces he could salvage. “When I got the first batch of it, about a half dozen logs, this one particular log was bent in sort of an ‘S’ shape,” he said. “When the first slab came off the saw mill and I held it up, that match pair of chaise lounges is what I saw in my mind. I was able to make both lounges out of the one log.” The executive director of the Kerr Arts & Cultural Center, who hosts the Texas Furniture Makers show, applauded Jody’s representation of Texas style. “This matching pair of lounge chairs is covered in cowhide, with rustic live edge wood, corrugated metal and horse shoe accents and are titled ‘Roy and Dale,’” Debbie Minns said. “If that doesn’t fit the Texas theme, I don’t know what would. Jody implied that the chairs were designed in a way that allows one to be comfortably seated while wearing spurs and a western hat.” The artisan said just being in the show was remarkable, but it never hurts to win something. “I felt quite honored to have been accepted to the Kerrville show because it is a juried process for acceptance, and then, the show itself is juried,” he said.
“Of course to win a prize, I became a prize-winning furniture maker/designer. It only takes one.” Like with the mesquite used for the lounges, Jody said all of the wood he uses for his masterpieces is reclaimed. “I like trees, and I like to see them growing,” he said. “I will put on my greenie cap I suppose and say that it is more eco-friendly. It reduces my carbon footprint, and it is more natural.” Furthermore, Jody said he enjoys seeing the saved wood or other materials, like scrap metal, become his art. “I like being able to do something with the wood that would other wise be going to waste,” he said. “Every piece of wood has it’s own inherent beauty. My aim is to make the most of that beauty and transform that natural characteristic into something attractive and functional.”

I can guarantee it’s going to cost more for me to give you an estimate or quote than it will wind up costing if you trust me to do it by the hour.
