THE GRANDE DAME OF GRAND COTEAU Chef Carol Baugnon of Creola Café serves passion one plate at a time

owntown Grand Coteau is lined with one of a kind shops and eateries. Nestled in the heart of it all is Creola Café (284 E. Martin Luther King Dr.). With a chef whose personality is larger than life, this quaint café may be small, but it is mighty!

At 65 years old chef Carol Baugnon, a real estate agent, found herself needing a change of pace. Baugnon, having catered events in her spare time, always loved cooking - an art she learned from her mother growing up in New Orleans.

Her catering caught the attention of a wedding guest whose friend owned a space downtown, and after speaking with him Baugnon was inspired to open up a cafe. The restaurant, which has been opened for nearly 10 years now, Baugnon was lovingly given the name “Creola” by Baugnon’s sister.

At Creola Café Baugnon is the sole chef assisted by a single waitress.

The unconventional kitchen houses less than a handful of outlets and no oven proving that with talent and creativity anything is possible!

On the menu are homemade soups, salads, sandwiches and desserts using only the freshest and highest quality ingredients. In addition to the everyday menu, Baugnon offers a special of the day uniquely planned by whatever she is in the mood for.

The restaurant accommodates up to 22 people inside with additional outside seating available. During the bustling lunch hours of 11 a.m. to 2 p.m. Thursday through Saturday these seats are occupied by a mixture of loyal customers and travelers alike stopping in for a meal but leaving with a one of a kind experience.

What makes Creola Café so unforgettable for her patrons? Baugnon told 337, “It’s like having lunch at my home. Cooking is my passion.”

JUSTIN Famed dancer, instructor and choreographer returns

By Barbara Dauterive Acadiana born and raised, Clare Cook has been a student of dance since age three.

She attended DeLarue Dance Centre, learning a mélange of dance. Graduate of St. Thomas Moore, Cook shined on the Sparkler dance team.

CLARE COOK DANCE THEATER As a result of hard work and passion as a dancer, CCDT was founded in 2011. Cook says, “It’s about selfexpression, creativity and collaboration; it’s about life and keeping it real!”

CCDT’s first major production was titled “Show Me Real.” This was an original work dance-theater piece that Cook wrote in collaboration with writers and composers. The show was chosen to be part of production at The New York Musical Theater Festival.

She would continue dance training at LSU (performing with the Cangelosi Dance Project), the University of MassachusettsAmherst, and The Ailey School in New York City. Cook earned an MFA from New York University’s Tisch School of the Arts.

Cook and husband, Dr. Robert Austin, moved back to Acadiana in 2015. Dr. Austin completed his general surgeon residency at New York Methodist Hospital and has joined Lafayette General Hospital.

Cook is excited about their future in Lafayette. CCDT expects to keep growing by creating more opportunities for professionalism in dance in Lafayette and surrounding areas.

There will be training for professional dancers who are looking to continue studies and performance. CCDT plans to continue creating and producing new dance performances for the public to view and learn from on a higher level performing art component.

Douet: I work fulltime at CleanCut, LLC along with owning 4-D Container Rentals.

337: What do you love about your job(s)?

Douet: Helping the community.

337: If you could give one piece of safety advice to the general public, what would it be?

Douet: If you come across a safety hazard, don’t ignore it. Fix it or report it to someone. Most fires or accidents come from ignored hazards.

337: What is one of your funniest/ craziest experiences while on the clock?

Douet: As firemen we see some pretty crazy stuff. The funniest thing I have seen was a fully geared fireman disappear into a flooded ditch and then pop right back out (We can laugh because he was OK).

337: What tip would you give someone interested in following in your footsteps?

Douet: Don’t come with the mindset of being a hero. Come in with the mindset that you want to help your community

and the communities around you.

The reward is much greater!

337: How can the public help you and/or your station?

Douet: Scott Fire Department puts on an annual skeet shoot to help purchase the safety equipment needed perform the task at hand.

The skeet shoot is Sept. 3. Even if you don’t shoot, please come out and have a good time with us.

337: Tell us about your family.

Douet: I have a beautiful wife, Michelle, and a new born daughter, Lilith. I enjoy every moment I spend with them.

DEBT DIET

A radical approach to paying o debt

The common wisdom is that you should pay o debt with the highest interest rate ďŹ rst and then move down the list to lower interest rates later. This is what I use to do and will not argue the mathematics with anyone.

But there is a better way! Start a debt snowball and pay them o smallest to largest (balance that is).

THE RADICAL RUNDOWN Make a list of all outstanding medical bills, debts, loans, etc. Everything from the past due monthly bills to car notes to the student loans you have been carrying for years makes the list.

The only caveat is your home mortgage. This goes in a dierent step.  Once you have made the list and ordered it from smallest balance to largest, begin by making minimum payments (staying current) on all listed debts. Anything extra in your monthly budget goes to pay on the smallest debt.

When the smallest is paid o, continue making minimum payments on all the others.

However, bump up the next smallest debt payment by what you were throwing at the ďŹ rst.

You will now have more money to pay down the second since the ďŹ rst debt has been paid o.  WHY THIS WORKS The main criticism of this plan is that by ignoring interest rate you are potentially paying more in interest charges along the way.

Mathematically I cannot disagree with this. However, bettering your ďŹ nancial picture is about results.

I can tell you that I have personally paid o debt both ways in the past, and the debt snowball method worked for me (and many other of my clients) with exponentially greater results. It is not uncommon for me to see $30,000 debt reduction in a six-month period by some of my motivated clients.

THE SWEET TASTE OF VICTORY This method starts o with celebrating the little victories. Each time you clear a debt is a psychological victory and calls for a small celebration. If only in your head, the pleasure of striking that debt from the list motivates you that much more to attack the next.

As the list becomes smaller, less stressful and more manageable, you will ďŹ nd yourself increasingly motivated to ďŹ nish rolling the growing snowball.

WHEN HE RISES

By now most people are aware that actor Dylan Walsh is residing in Acadiana. Yes, spectators still discretely snap pictures of him enjoying brunch at Ruffino’s with his beautiful girlfriend, Leslie Bourque, and their two allAmerican children.

I mean, who in our area hasn’t seen Secretariat? And if the answer is by chance you, please do yourself favor and support Louisiana’s film industry by watching one of the most beautifully made movies of all time.

Did I mention the seven-award-nominated film was partially shot in our own backyard?

All that aside, what really stood out during the interview Walsh granted 337 magazine was the sense of normalcy he manages to keep amidst a bustling career.

He’ll be enjoying the various family-oriented activities our Cajun Heartland is known for on a Saturday only to catch the red eye to Vancouver come Monday morning.

Through our chat Walsh kept such a humble attitude. The father of five and International Press Academy’s Satellite Award nominee admitted to never watching himself on the big screen and spoke about how much he enjoyed the local festivals, playing tennis and dining at area staples like Pamplona Tapas Bar and Dark Roux.

We talked about serious topics such as the downturn in the economy and even the AIDS epidemic, which is an ever-present topic in his latest television miniseries: ABC’s “When We Rise.”

All to quickly the interview was coming to an end, and the conversation gently shifted back to something Walsh had planned for his family over the long weekend. Only then did he get a twinkle in his eye.

CGI CGI, the world’s fifth largest independent information technology and business process services company, is creating a state-of-the-art technology center at the UL Lafayette’s Research Park.

The new center will bring 400 IT jobs and generate an estimated economic impact of more than $90 million annually over the next five years.

ENQUERO California-based enterprise solutions company Enquero is in the process of building its first-ever agile delivery center in Lafayette, providing software products and services to commercial clients around the globe. The center is expected to create more than 300 new local full-time jobs with benefits.

NONPROFIT SPOTLIGHT

Habitat for Humanity More than just building homes

By Cecile Walters Hebert You may have seen the quaint new homes on the corner of Pinhook Road and Magnolia Street that have popped up in the past year.

Located in the historical McComb-Veazey district, the 13-home pocket neighborhood was dreamed up by Habitat for Humanity as part of their mission to revitalize urban neighborhoods with in-fill construction.

Melinda Taylor, executive director for Lafayette’s Habitat for Humanity program, spoke with 337 about this focus and the group’s future plans.

NEIGHBORHOOD REVITALIZATION INITIATIVE “Grant money from Lafayette Community Development, Lafayette Consolidated Government and the Neighborhood Revitalization Initiative (NRI) a federal program, gave us the money to purchase the lots from two separate land owners,” said Taylor.

“We met with the McComb-Veazey Neighborhood Coterie to better understand what the community wanted to see done.” Porches, sidewalks and designs that fit into the existing landscape were established “wants” from these meetings.

COLLIGATE COLLABORATION Habitat has also involved the University of Louisiana at Lafayette’s architectural program to collaborate on a few of the homes built in McComb-Veazey. Relying on the creativity of graduate students in the program, Habitat was able to build a four-bedroom house for the Benoit Family within budget, and it’s large enough to accommodate seven people.

RESTORE RETAIL Habitat has more ways to pitch in than most nonprofits, not all of which involve paint brushes or nail guns. Their ReStore is a retail shop for gently used housing materials, supplies, appliances and furnishings.

Think Goodwill meets Home Goods. “We are always looking for retail volunteers in the ReStore,” confirmed Taylor.

Not Your Mamma’s Brass What’s old is new: trends for 2016

By Cecile Walters Hebert It used to be where a buyer wanted the entire “family” of fixtures for their home. The six arm chandelier over the dining room table complimented the four arm version of the same material and finish that was hung over the breakfast nook, and the pendants over the island matched those, as did the drawer pulls.

Nowadays, anything goes. Eclectic pairings of materials, textures, colors and finishes are all the rage for the “jewelry of the home.”

COLORS Caramel, flat brass, winter gold, antique gold, brushed brass…one thing is for sure; The trending colors are warming up.

“We saw less of the brushed nickel and chrome this year and plenty warm hues,” confirms Sherry Hernandez of Teche Lighting.

The finishes are brushed or flat, not like the shiny brass doorknobs we know from the 1990s.

BULBS Many fixtures focus on the beauty of the bulb itself. Edison bulbs with intricate filaments easily steal the show with the Quorum Island fixture.

Beware that these beauties shine a very yellow hued light, so placement in a home or outside is key to really appreciating what it offers.

SHAPES “There were a lot of geometrical shapes being showcased this year,” said Sherry, “throwing back to the midcentury modern and transitional styles.”

These geometrical shapes are coming in a variety of colors, some with a rustic feel to them. Think Jetson’s meets Restoration Hardware.

OUTDOOR Outdoor living has spiked in the past few years. Practically all new construction homes have a covered outdoor living area incorporated into their designs.

Lighting companies have taken notice. Where there were once two or three outdoor fixtures at market, now each supplier has multiple outdoor options resembling the indoor fixtures already in production.

Keep in mind that outdoor fixtures need to be rated for outdoor use. “Damp-rated and wet-rated fixtures will ensure compliance with building codes and stand up to the humidity of South Louisiana,” said Kim Gauthreax of Teche Lighting.

Mad For Metals World-class architectural elements coming out of Maurice

W

hat started as a budding love for making chic jewelry developed into a hot and heavy romance for working with metal.

Local artist and craftsman Ralph Goodyear is proving time after time that he has an eye to envy and a potential that is without limits.

He is leaving people speechless by mixing mediums and adding high-end details. Always a teacher and forever a student, the blackmetal artesian draws inspiration from various periods in art history and uses every tool to his advantage (literally -- a hammer and anvil to the latest in laser cutting technology).

Goodyear brings a level of ironwork to Acadiana that has never been seen before. The international attention he is garnering is another gold star for the gorgeous area of Maurice. It’s the city in which he sources most of his materials and conducts the challenging fabrications.

The blending of industrial components with natural elements makes Goodyear’s contemporary art interesting, while the hints of eras past makes each unexpected piece unique and timeless.

From delicate Champagne stands to lavish chandeliers – or as he put it, “…from jewelry to big jewelry…,” it defies logic as to how effortless and artfully perfect each of these refined pieces look and feel.

ORNATE ENTRANCEWAY: Truthfully, this is one of those projects where pictures don’t do it justice. It is one of three eye-catching doors made for a client’s home. The way the various lights reflect through the day is enough to make any passer-by swoon.

TROPICAL LANDSCAPING Backyard changes in latitudes

By Justin Price www.EcoScapesLafayette.com Warm breezes, deep shade, margaritas and a cool pool. This is one way to beat the Louisiana heat.

Although we are about 7 degrees in latitude north of the actual tropics, we are still able to bring the elements of that landscape into our own spaces.

THE CANOPY Plants, of course, are the essence of tropical landscaping. They must be chosen carefully since Lafayette gets the occasional hard freeze that ruins plants such as queen palm.

Sylvester and windmill palms are more cold-hardy choices for this quintessential tropical tree.

These will create the canopy, while the midlevel is filled with various textures such as philodendron, our native dwarf palmetto, various gingers, elephant ear, bird of paradise or even Australian tree fern.

UNIQUE SPECIMENS • Clumping bamboo is great for screening a view or filling a sunny corner. Here we can bring that relaxing sound that only bamboo blowing in the wind can give.

• Hibiscus is a favorite tropical flower, and we have many beauties to choose from. Try adding some perennial hibiscus such as “Red Wave,” which will reliably emerge every spring with beautiful flower and leaf colors.

• The purple and white of “yesterday, today and tomorrow” makes a unique specimen to enjoy by the walkway. Lantana makes a free-flowering ground cover that attracts butterflies.

A LUXURIANT TOUCH Situate plants where they are best viewed from sitting areas and walkways, with multilayer interest and colorful surprises around the bend. Use earth-tone pavers or natural stone for hardscaping.

A small pond or a fountain, or a combination of these, can add a luxuriant final touch to the tropical paradise. Lily pads and papyrus planted in shallow water make for curious conversation pieces.

As the song goes, “Changes in latitudes, changes in attitudes.” If you love the tropics, bring a taste of it into your backyard.

Buck & Johnny’s chef is a familiar face with mad plating skills

By Curt Guillory, “Grillin’ with the Guru” Dining out in South Louisiana is somewhat of an art form. The varieties of quality restaurants available are almost limitless, and just when you think you’ve seen it all, along comes Buck & Johnny’s.

ITALIAN IN THE HEART OF CAJUN COUNTRY If you find yourself driving in the beautiful historical district of Breaux Bridge, you’ll notice a brick and glass wonder of a building that used to be a car dealership. That’s Buck and Johnny’s.

A few years back a couple of locals, David Buck and Johnny Raymond decided to buy the old building. The duo has brought it back to its former glory and given it new life as a reimagined eclectic Italian eatery.

CHEF TONY DOES ITALIAN When preparing for this article I was given the name of the chef for Buck and Johnny’s as a contact: Tony Savoy. It was familiar to me, but surely it couldn’t be the young, smart, hungry Chef Tony Savoy chef I cooked with at Oakbourne Country Club well over 20 years ago, could it? Yes. Yes, it could.

Catfish Breaux Bridge Colorful Cobb Salad

For those of you who don’t know chef Tony has been around the Acadiana cooking scene for quite a while now. When looking at the eclectic menu, it’s easy to see Tony’s influence throughout.

Praline chicken? Yes, please! Crabmeat crustini? Absolutely! And then there are incredible little things like: catfish savoy; crab-stuffed catfish topped with crab portabella sauce; and chicken atchafalaya (boneless grilled or fried chicken breast topped with pepper jack cheese, grilled onions, mushrooms, diced tomatoes and tasso).

A traditional caprese salad is there as well.

Thick slices of ripe tomato complement equally thick slices of whole milk mozzarella cheese. Throw some fresh basil leaves, extravirgin olive oil and a balsamic reduction in the mix, and you have the answer to our steamy hot South Louisiana days.

AND THEN THERE WAS PIZZA Having and eclectic menu of well prepared, unexpected dishes is all well and good, but this is a South Louisiana Italian restaurant after all, and we want pizza.

The dough comes fresh from Poupart’s Bakery, so ’nuff said about that. Looking through the menu you’ll see specialties such as marghartia and bianca, and you can also make your own from a full list of great ingredients.

Look closer and you will see the steakhouse.

Roasted garlic cream sauce, mozzarella Parmesan, blue cheese, prime rib, mushroom and caramelized onion…just take my word for it and go get it.

Other choices include the Ragin’ Cajun, caveman and bayou blast. Sauces include pesto, garlic herb oil, barbecue sauce and roasted garlic cream to name a few. You can really let your imagination run wild. Stay hungry.

1 whole chicken cut apart 1 large yellow onion sliced 1 box chicken broth 1 teaspoon turmeric salt/pepper to taste butter 3 cups long grain basmati rice ½ cup olive oil ¼ cup water

2 cups dried barberry (sub cranberry if desired) ¼ cup slivered almonds ¼ cup slivered pistachios 1 teaspoon ground saffron dissolved in 4 tablespoons hot water butter 1 stick sugar 5 tablespoons

PREPARATION Cook chicken in chicken broth with the onion, salt and pepper with turmeric for one hour on low.

When chicken is cooked down, add 2-3 tablespoons of butter and 1 teaspoon of the saffron liquid and set aside.

Rinse rice and add one tablespoon salt and 4 cups water and soak for two hours. Bring a pot of water to boil, drain rice then add to boiling water. Cook rice until al dente and drain.

Put ¼ cup olive oil at the bottom of the pot and add a few drops of saffron. Add drained rice back to pot, and add ¼ cup water. Start cooking rice with high temperature for 3-5 minutes then turn down the heat to low and cook for 50 minutes or longer.

In a small pot melt 2 tablespoons of butter and add barberries.

Sauté, mixing constantly so it does not burn, on low for 5-10 minutes.

Add a teaspoon of saffron liquid and set aside.

In two other small pots melt 1 tablespoon butter each and sauté slivered almonds and the pistachios for 5-10 minutes mixing frequently.

PLATING After rice has cooked, set aside one cup of it. Add 2 tablespoons of the saffron liquid and mix well for later garnish.

Place rice on a platter in one layer, sprinkle 1/3 of the barberries, 2 tablespoons of sugar and half of chicken pieces. Repeat another layer of rice, 1/3 barberries, sugar and the rest of the chicken (creating a pyramid with layers). Decorate the top with the saffron rice (saved in a bowl earlier), the remaining barberries, almonds and pistachios.

Serves 6.

Henri’s Pastries Martha Stewart-approved baker found at area markets

By Ann B. Dobie Where a career will take even the most thoughtful planner is impossible to know. Unpredictable twists and turns are an inevitable part of life.

Ask Henri (short for Henrietta) and Kevin Moore, for example. When she graduated from the University of Louisiana at Lafayette (then USL) with a degree in fine arts, she knew she didn’t want to teach, but she did want a way to exercise her creativity and her eye for design.

Kevin, also a USL graduate, earned a degree in math with a minor in computer science and worked for a time for a local computer company.

Then they discovered baking.

THE BEGINNINGS Henri’s interest in going public with her baking dates back to a citywide garage sale held in Lafayette one weekend in 1985. She and her friend Sheila secured a booth and displayed their goods for sale. To their surprise they sold everything they had on the first day, bringing in $500 by selling nothing that cost more than $1.

Kevin got involved first by helping with the grocery shopping. Then one day, in a pinch, Henri asked him to lend a hand with a groom’s cake she was making. He was hooked, and today they both bake their cakes and bread and pastries.

HENRI’S SPECIALTIES Henri and Kevin have a wide variety of best-sellers. There is focaccia, a flat, whole-wheat bread that they top with caramelized onions and garlic and fresh vegetables, all covered with Ricotta, Feta or Parmesan cheese.

Wedding cakes, each one designed for a specific bride, are another specialty. Some are covered with sugar roses and leaves painted with white chocolate; others are “naked,” undecorated by icing but filled with Bavarian cream between the layers and adorned with fruit on each tier.

Henri’s King cakes are, she says, the authentic version, made with brioche dough, pecans, walnuts, brown sugar, cinnamon and butter.

There is no icing. Definitely no icing.

Her cheese ribbons became so popular that they were featured on Martha Stewart’s television show, with credit given to Henri.

FINDING THE TREATS When they are not baking, Henri and Kevin are busy marketing their individual cheese cakes topped with strawberries dipped in chocolate, creamy chocolate treats, pecan squares and countless other treats at farmers’ markets and festivals.

Saturday mornings and Wednesday afternoons (4-7 p.m.) find them at the Horse Farm in Lafayette, Tuesdays in Lake Charles, and once a month they go to Abbeville. Then there are special occasions such as the Saturday before Easter when they marketed their breads and pastries in Abita Springs.

Clients who can’t make it to a market can simply place an order by email (KMOORE0752@bellsouth.net). Telephone calls are likely to interrupt the baking process, leaving Henri to wonder after hanging up: “Did I put the salt in?”

Apparently degrees in fine arts and math can lead to some surprising ends. Who would have guessed when they graduated from college that Henri and Kevin Moore’s commitment to baking extraordinary treats would bring satisfaction to their customers and fulfillment to themselves? Baking, it turns out, can be art.

Luke: I have been married to my husband, Ray, for nine years and have two boys, Sawyer and Baylor, and a Maltipoo named Mox.

337: What are your interests?

Pagitt: Spending time with my family, attending my children’s sporting events, exercising, interior design, gardening and reading both nonfiction and spiritual books. I also love learning about skincare and collecting makeup.

Pagitt: After graduating from Lafayette High School, I attended USL and ULL. I obtained a degree in dietetics and a bachelor’s degree in nursing.

Pagitt: Nursing is a wonderful and rewarding profession. It is true what they say “when you love what you do, you will never work a day in your life.” I always worked with some amazing nurses that have inspired me to always be better. I have always thought that I am doing the work that God has created me to do, to touch other people’s lives in a positive and influential way.

337: What are your hobbies?

Luke: I love interior design, residential construction, architecture and landscaping. I also enjoy writing, shopping and wine tasting.

Luke: I chose the nursing profession because it is a very versatile career that offers a vast array of working environments. I had majored in a few other disciplines before pursuing my BSN (marketing, elementary education and business administration).

Luke: In the nursing profession, you will continuously learn. You will always feel challenged. You will touch others’ lives in ways you may not realize. And you will feel a compassion for your patients you did not think was possible.

Luke: I have done mission work at an orphanage in Juarez, Mexico. I have also been involved in philanthropy and community service projects both here and in my hometown for organizations such as The American Cancer Society, Bayou Habitat and TARC.

Young: After graduating Breaux Bridge High School, I studied Dental Assisting at Acadiana Area Career College. Then I became a certified Expanded Duty Dental Assistant through an LSU dental school program.

Young: I guess many people would describe my personality as easygoing, caring and kindhearted. I try to be as genuine and honest as possible, which is the kind of personality and attitude perfect for working with children. Especially when it’s their first trip to the dentist (it can be a little nerve racking).

337: What lead you to your profession?

Young: In grade school I had braces and never missed a six-month check up with the dentist. I was always intrigued by the assistants and all they did to contribute to patients having great smiles!

337: Have you ever done community service?

Young: Working for Dr. Hendry has led me to do some awesome volunteer work, such as being a helping hand every year at the Miles Perret Games of Acadiana and also assisting in free dental screenings for the 232-HELP association (Colgate bus) for families in need of a good dental home.

Also, I’ve had the experience of volunteering with my mom at the Acadiana Outreach Center.

Clarke: Yes. One of my closest friends and her mother helped me to get involved with the Louisiana Lion’s Camp. It’s a wonderful nonprofit camp that allows children with different medical diagnosis to attend a summer camp where their needs can still be met. It’s truly a beautiful place that brings lots of joy to so many!

Angelle: I love eating chips. And you should see me, I’m so good at it. Salt and Vinegar chips are my jam. Also, I love playing board games, dancing in the mirror and watching movies.

Angelle: There are so many moments, small and big, that make it all worth it. From seeing a patient get discharged back to their home to watching a stroke patient get movement back in their arm…there are too many to name. What I find most rewarding about my profession is the profession itself.

Angelle: Nursing, like most areas of health care, is a career that involves the mental, spiritual, physical and emotional parts of a person. It’s not easy, but it’s always rewarding.

337: When did you graduate and how long have you been in practice?

Hendry: I received my Degree in Pediatric Dentistry in 1979 after attending Spring Hill College in Mobile, Al. and LSU School of Dentistry in New Orleans, La. I moved to Lafayette in 1980 (my wife’s hometown) and opened my private practice August 1980.

337: What habits do you maintain that attributed to your success?

Hendry: My wife and I couldn’t have children so I always treated my patients as if they were my own.

337: Medical professions are often laden with long hours, paperwork and stress. How do you ďŹ nd balance as to not be overwhelmed by such a demanding industry?

Hendry: Golf. Golf is the only thing I do slow. I work fast, talk fast, eat fast and drive fast (love corvettes). Golf slows me down.

337: What are some of your favorite places to cut loose?

Hendry: Oakbourne Country Club, Tsunami, Ruth’s Chris, Ruffino’s and Mazen’s. I enjoy a well-served meal with family and friends.

337: What is one common medical myth you hear in your practice? Set us straight!

Hendry: Not to worry about baby teeth because they are only going to fall out. Baby teeth are important! They control diet, facial growth and even help develop good speech patterns.

Marino: My success can be directly attributed to how I was raised. My father taught me how to balance a checkbook when I got my first job at 13 years old, and my mother instilled in me that the greatest long-term rewards stem from hard work and perseverance in the present.

337: What is one of the most difficult obstacles you have had to overcome?

Marino: By far the most difficult obstacle I faced to date was having my first child and finding a way to maintain a high-quality level of output at work. Through prayer, meditation and help from family I created a nice balance which enables me to focus 100 percent on my family when I am home and 100 percent on my patients and business when I am at work.

337: What is your favorite area activity?

Marino: My favorite activity by far is taking our boat out for a ride on either the Vermillion River, Bayou Teche or Atchafalaya Basin to enjoy nature.

337: What is a common medical misconception you hear too often?

Marino: A misconception about chiropractic that we not only hear constantly in practice but truthfully plagues our community as a whole is the perception that it’s “us against them” in regards to medical doctors. CHANGING IMAGINATION INTO IMMERSION While guided imagery and similar relaxation techniques are common in self-help books and counseling offices, it can be a rather difficult for some people and actually induce stress instead of reducing.

Whether it be due to mental distractions, lack of optimism in the process, or simply a poor imagination, many people struggle to truly engage the imagery itself.

With the increased availability of virtual reality, however, the ability to move past imagination into immersion will likely break down these barriers to relaxation for many. Imagine the difference between being asked to imagine you are floating on a cloud and actually being able to look around and see yourself floating on a cloud.

This immersive imagery, combined with possible relaxation scripts and soothing music, may finally help people who have struggled to relax with more traditional methods.

AN OLD IDEA RENEWED The mental health field has used virtual reality in some form for years to aid in areas such as PTSD for veterans and systematic desensitization for phobias. However, what makes this time in technology more exciting is the accessibility of it all.

This year consumers may be able to use virtual meditation regularly in their own homes as a way of maintaining mental well-being rather than just the crisis intervention of the past. I am personally excited to work this new technology into both my clinical and personal work - happy little clouds and all.

“In addition, aerial yoga provides total body benefits including increased strength and flexibility and improved body control,” she said. Genee’ was invited to attend a concert for her niece at Our Lady of Wisdom on UL Campus during Christmas week. She arrived only to find Dane standing in the middle of the church (he was living in Houston). He got down on one knee, and after saying yes, violins started playing in the background as the choir was practicing.

Friends and family attended a week of festivities to celebrate the couple in Puerto Morelos, Mexico. The ceremony was held ocean-side adjacent to a Mayan-style Gazebo, and the ambiance set by a violin soloist.

Escorted by her father, the bride wore a chapel length, strapless gown from Casblanca’s Rose Collection. It had a modified sweetheart neckline finished with a scalloped eyelash trim and adorned with beads, sequins and pearls throughout.

On her wrist, Genee’ wore her grandmother, Sadie Betar’s, pearl bracelet in her honor. The bride also wore a flower comb hair piece borrowed from her sister-in-law, Bria Majors.

Guests attended a cocktail hour and were entertained by a Mariachi trio. They continued onto the reception held in the ballroom.

The newlyweds were surprised with a New Orleans-style Second Line, complete with custom made umbrellas and monogramed handkerchiefs for all guests.

Glow sticks, a photo booth and props were added touches throughout the night, which ended with a dazzling send-off complete with sparklers.

Built in the 1930s, a former elementary school gym has become one of Broussard’s premier event venues. Owners and father/son duo Dwayne and Jesse Regan acquired the property with no specific plans in mind.

Seeing the potential in the space they began hosting private parties for their family and friends.

After receiving positive feedback and encouragement, the Regans decided to turn their personal pastime into a public profession.

In June 2009, after completing a six-month renovation, the venue was ready to host its first contracted event. Wanting a name that was easily recognizable Jesse suggested The Madison (inspired by the very street it’s located on).

Dwayne and Jesse say the business model has evolved over time but was always designed to be multipurpose. AV equipment supports business functions while the layout of one large open room can accommodate weddings and receptions with ease.

The first venue of its kind in the Broussard area, The Madison remains unique in design. At 7,000 sq. ft., accommodating 549 people and currently booking more than 60 events per year, the space has become highly sought after for businesses and charitable organizations alike wanting to work with personable professionals.

The startup years allowed Dwayne and Jesse to hone in on what it is that they do best: personally dedicating themselves to ensuring each and every event is custom tailored to the client’s needs. One example of The Madison lessening 70

PEPPERONI PIZZA PRETZELS 1 tablespoon extra-virgin olive oil 1 tablespoon cornmeal 1 tablespoon all-purpose flour 1 can (13.8 ounce) Pillsbury refrigerated classic pizza crust 36 slices of pepperoni 8 pieces (1 ounce each) mozzarella string cheese 4 teaspoons grated Parmesan cheese 1 cup tomato pasta sauce, heated

Sprinkle flour over work surface. On floured surface, unroll pizza crust dough; starting at center, press dough into 16x10-inch rectangle. With pizza cutter or knife, cut dough Trenton and Isaac Potier with lengthwise into 4 (2 ½-inchtheir pizza pretzels. wide) strips.

Evenly place 9 pepperoni slices on each dough strip, leaving ½ inch on each end uncovered. Cut each string cheese in half lengthwise.

Place 4 cheese halves on pepperoni on each dough strip, overlapping ends to fit.

Bring up sides of each dough strip over pepperoni and cheese, and tightly pinch together, stretching dough as necessary to fully enclose cheese and pepperoni; pinch ends to seal. Lightly roll and shape into 16-inch logs.

To make pretzel shape, form each log into U-shape, then cross the ends and fold dough over so ends rest on bottom of U-shape. Place pretzels on baking sheet. Brush pretzels with remaining ½ tablespoon oil; sprinkle with Parmesan cheese.

Bake 13 to 17 minutes or until pretzels are golden brown. Serve warm with pasta sauce for dipping.

By Barbara Dauterive At the young age of three, Abby Vidrine, now 14, started dance. “I love the way dance allows me to express myself,” Vidrine told 337.

Don’t let this dancer’s petite appearance fool you.

She has big plans and a demanding schedule filled with school and dance.

When it comes to her performances, Vidrine focuses on perfecting her technique and having fun.

She pays special attention to diet, supplements, hydration and rest.

Her maturity and determination aids pushing boundaries and striving for perfection. She completes eighth grade at L.J. Alleman to begin high school at Lafayette Christian Academy in the fall.

Vidrine recently returned from the Velocity Dance Convention at Planet Hollywood Las Vegas. This national competition is for the most highly skilled dancers competing for Maximum Velocity Artists scholarships.

National talent scouts attended the convention for recruitment, and performers competed chance to be in Hailee Steinfeld’s (actress/singer best known for her roles in “True Grit” and “Pitch Perfect 2” and nominated for multiple major awards) new music video.

Abby was honored to compete alongside some of the best dancers in the nation. She remains humble and dedicated to her studies while looking forward to her next opportunity to dance.

Ragin’ Cajuns volleyball looks to rebound after 2015 setback Following a disappointing 6-23 campaign in the 2015 season, the University of Louisiana at Lafayette volleyball team has its sights set on improvement in the 2016 season.

Head coach Heather Mazeitis-Fontenot said although the team was young in 2015 and won’t have Sara Mossakowski coming into the new season, the 2016 squad has another year of experience under its belt.

“Last year we were very young,” she said.

“Now we have a more experienced team and leadership.”

The Cajuns added three players in the offseason to add depth to the team and are expected to make in impact: Faith Bolin, Dree’Ana Abram and Katherine Young.

Bolin is an outside hitter from Wylie (Texas) High School. Last fall, she ranked Top 125 on Maxpreps.com’s list of Texas High School senior kills leaders.

Abram is a middle blocker from Creekview High School in Carolton, Texas. Abram is expected to add depth to middle for the Cajuns this season.

Young was a high school teammate of current Ragin’ Cajuns Sydney Davis and Hanna Rovira at St. Joseph’s Academy in Baton Rouge.

Mazeitis-Fontenot said her team is expected to have good firepower on the outside in the 2016 season, spearheaded by sophomore Hanna Rovira and junior Stacey Reilly.

Redshirt junior setter Jessica Bartczyszyn and senior middle blocker Chanelle Gardner

are other key players for the Cajuns, according to the coach.

“She (Gardner) is our rock star in the middle,” Mazeitis-Fontenot said. “She anchors our offense.”

Mazeitis-Fontenot said the injury-plagued 2015 season helped the team focus on what’s important.

“We had our best season in about 25 years in 2014,” she said. “Had we not had the season we had last year (2015), we wouldn’t be on the incredible incline that we’ve been on since the spring, which has everyone focused and aiming for the conference title.”

Experience and leadership are expected to be the keys for the 2016 version of the University of Louisiana at Lafayette soccer team.

With 12 seniors leading the senior-laden squad, along with the top five scorers from the 2015 season returning, the Cajuns seem poised to eclipse the 8-10-2 record from last season.

“The experience is a lot better,” said head coach Scot Wieland. “All of the girls are really invested. They are a great close group.

“Having returners who can put the ball in the net it’s huge.”

has all of its top hitters back.

Some of the key players expected to be catalysts for the team’s success are Goalkeeper Cosette Morche, Midfielder Kimberly Grasso and forwards Annika Schmidt and Yazmin Montoya.

In addition, nine players were a part of the 2016 signing class.

“Our signees have experience at high levels of play, which is critical,” Wieland said.

Wieland also stated that the signings have added to the team’s depth, which is important for any team in any sport.

“It’s a long season,” Wieland said.

“To have equal talent not only keeps our play at a high level, but it

keeps the players healthier.”

Wieland said the team concluded spring practices heading in the right direction with the focus on the fall when the season starts.

The addition of assistant coach Lisa Mann, along with the focus of the seniors have put the team in a good position heading into the season, Wieland said.

“I couldn’t have been happier with the returning senior leadership and the overall team chemistry,” Wieland said. “We’re excited about the fall.”

The team has been hitting strength and conditioning hard to gear up for the preseason, which kicks off the first week of August.

The Sport of Kings reigns in Louisiana

By Jacques Dupuis In Sportsman’s Paradise, we love good food, good drinks and good times.

We have a rich history in horse racing that traces back to French Canadian settlers’ running on homemade bush tracks.

The 337 is home to two of the four race tracks currently racing in Louisiana. Evangeline Downs Racetrack, now in Opelousas, opened 1966 (in Carencro). Delta Downs Racetrack in Vinton opened in 1973.

The Fairgrounds Race Course in New Orleans is the nation’s third longest continuously running race track (running since 1872). Harrah’s Louisiana Downs in Bossier City has been operational since 1974.

Thoroughbreds are majestic in appearance. Each has their own strut, personality and flair. Some are aggressive and feisty, and others pay attention to every sound, flash or movement. Some will seem to smile for the camera, their head held high and ears perked, while others are quiet and reserved as they are prepped for the race.

Each race has “favorites” and “longshots.” How do you know who will win? Walk around, ask those in attendance and you will get as many answers as to each horses identifying number.

Everyday handicappers read the past performances to make an “educated guess.” Others use non-analytical methods: favorite numbers, a horse’s appearance or their unique name.

One by one the horses enter the starting gate and wait for the bell to ring. All at once the steel gates snap open, the horses bolt out, and the track announcer begins the call of the race.

The rolling thunder of hooves pounding the dirt gets louder as they cross in front of the grandstand the first time. People along the rail jump and cheer for their horse to go to the front.

Circling the track, horses vie for the lead. Coming down the stretch, two horses separate from the pack.

The onlookers root loudly for their horse to win as they cross the line.

Both LSU Track and Field teams are enjoying high national rankings with the men’s team sitting at No. 3 and the lady tigers occupying the No. 6 position according to the Cross Country Coaches Association power rankings.

Nethaneel Mitchell-Blake charted nation leading performances in both the 4x100 meter and 4x400 meter relays, while Morgan Schuetz chalked up a personal best 2:02:29 in the women’s 800 meters, cutting close to a full second off her precious time.

The men’s 4x400 meter relay team consists of LaMar Bruton, junior Michael Cherry, senior Cyril Grayson and senior Fitzroy Dunkley.

The team recently broke UCLA’s standing 29-year record at Bernie Moore Track Stadium with a time of 3:00:38, beating Mississippi State by a massive five seconds.

Mikiah Briscoe (junior) helped the lady tiger’s cause by tying the No. 3 placement in the NCAA’s all conditions ranking for the 100-meter dash with a wind aided time of 11.17 (+3.5).

The LSU Lady Tiger’s Beach Volleyball Team was recently had some players selected for the Coastal Collegiate Sports Association (CCSA) honor roll. Not one player, not four players, not 10 players, but 14 Tigers were selected for the honor.

Qualifications for selection are that students must have earned a minimum 3.0 GPA on a 4.0 scale at the conclusion of the past fall semester, with no failed classes.

According to lsusports.net, associate head coach Russell Brock was quoted as saying, “Academics are something we take really seriously, and we talk about it and focus on that. It’s definitely a priority, and it’s something that we feel represents our program.”

The list of accomplished athletes included: Helen Boyle, Ashley Allmer, Victoria Boraski, Jeni Clark, Megan Davenport, Emma Hiller Lilly Kessler, Cati Leak, Maddie Ligon, Katie Lindelow, Callan Molle, Carly Morris, Taylor Wilson and Cheyenne Wood.

Looks like these ladies are killing the grades as well as the ball.

Daigle TIGER TENNIS JUNIORS NAMED TO ALL-SEC SECOND TEAM Justin Butsch and Jordan Daigle were given the honor of All-SEC Second Team recently.

Daigle, solely a No. 1 court player, was ranked as high as No. 22, while Butsch is the No. 76 ranked player and has logged time on courts one, two and three this season.

The pair were responsible for the Tiger’s only two wins against Vanderbilt in the SEC tournament, and both have enjoyed previous All-SEC accolades including SEC AllFreshman Team (Butsch), and All-SEC First Team (Daigle).

Both players will return to Baton Rouge for their senior years. Now that’s one heck of deuce!

New Orleans

Several new hotels have opened in New Orleans this spring, with more on the way.

The Marriott’s European hotel line, Moxy, made its debut in New Orleans’s city’s Central Business District, one of the first for the U.S. The Hyatt House New Orleans Downtown, connected to the Hyatt Regency, features apartment-style rooms focused on extended stay.

The Ace Hotel New Orleans located in a historic 1928 Art Deco building opened in March with its 234 rooms and the hotel’s signature restaurant, Josephine Estelle, helmed by Memphis James Beard Award finalists Andy Ticer and Michael Hudman.

By Suzanne Brevelle, Avenues To Travel Planning travel these days can bring you from one side of the emotional spectrum to the other. Travel searches can make you cry one day and make you laugh hysterically the next.

Searching on your own can be very stressful for some. That’s when you contact a specialist: YOUR TRAVEL AGENT. There are many misconceptions about travel agents these days, and the biggest is that if you book with a travel agent you will pay more. WRONG! A travel agent can help you get the most out of your travel budget. The experienced travel agent will be able to help you determine where you should splurge and where you should be conservative. Inexpensive travel does exist.

There are a few things to keep in mind when you are searching for inexpensive travel: the busy season, the tourist area and extra expenses for tours and activities. If you consider these three ideas when you are planning, you can save yourself money and headaches.

WHEN DO YOU WANT TO GO?

The first thing to consider is when do you want to go.

Most destinations have a high season, low season and shoulder season. Low season and oftentimes shoulder season are the most cost effective because weather can still be good and the areas are not overcome with travelers so hotel rates will be reasonable.

But, did you ever think high season could be inexpensive? Many of the tour operators take advantage of the larger number of travelers during the higher seasons so they are able to negotiate better rates simply because of larger numbers.

For example, did you know there was a direct flight from New Orleans to Cancun? How about a direct flight from New Orleans to the Dominican Republic?

Well, there is (from the end of May until the first week in August). You can go anywhere from three nights up to an entire week.

That is high season. Children are on vacation, and everyone wants to go to the beach. Demand, demand, demand.

The tour operators are gambling on that. And that is how they can provide lower fares during this time.

WHERE WILL YOU STAY?

The next thing to think about is where will you stay.

Do you want to stay in the middle of all the activities (better known as the “tourist area”) or do you want to 98

stay on the outskirts of the attractions?

Hotels in the heart of the area tend to ask higher nightly rates because they are providing a convenience for you not necessarily the best accommodations for you. Did you know that most hotels on the outer areas may offer more to their guests such as free shuttles to local attractions, free breakfast and even a free shuttle from and to the airport?

These little things add up quickly. If not planned for, they can push your budget over the limit. Luckily, if you are aware that these complimentary things exist, you can use your budget for more important things like the attractions that brought you there in the first place.

WHY ARE YOU GOING TO THIS PARTICULAR DESTINATION?

A good question to ask yourself when you are planning is why am I going to this particular destination? Am I going to relax? Am I going to experience the culture and adventure?

If your answer is to relax then you should pick a destination that will provide you with the most options to plan and pay before your arrival. An all-inclusive resort is the most popular way to achieve this.

Once you arrive everything is at your fingertips: your airport shuttle, meals, beverages and even some of your activities. Even all-inclusives can get pricy though so you and your travel agent should determine what is most important to you.

For example, do you want a really nice room with a butler and chef? Or would you rather stay at your destination for seven nights.

If you picked your destination because there were the most things to do, then we suggest that you plan and pay for those activities in advance. That way you can work them into your budget.

Many locations will bundle the excursions so that you can take advantage of lower pre-paid rates.

Again, this is something you and your travel agent should discuss. Just because you can does not always mean you should!

Maybe one experience will encompass what there is to see and do in that area. Then you are not wasting your time and money doing the same thing over and over.

Through The Sandbox children (and children at heart) can play interactive games designed by students of the local Academy of Interactive Entertainment.

337: Which song from “First Train” has the most meaning?

Boudreaux: “Why Don’t We” is the only song on the record with that sort of serious tone. It’s also pretty personal, and one of those everyone can relate to.

It’s about the hustle and bustle of the world sort of getting in the way of a good thing. We lose sight sometimes of what’s important, and the message is “why don’t we just get back to us?”

337: Tell us where you grew up and what age music became a part of your life.

Boudreaux: I grew up in Carencro/ Lafayette area. I played sports, but music was always a big part of my life. For my 17th birthday my parents bought my first guitar from a pawn shop. The rest was history.

337: Briefly describe your experience on season five of NBC’s “The Voice.”

Boudreaux: It was a whirlwind. I had a great time and made lifelong friends, but it was more of a production than I could have imagined. It was a once in a lifetime opportunity, and I’m grateful for the experience.

337: What artists are you inspired by?

Boudreaux: I was inspired very early on by many of the local greats: Tommy Mcclain, Warren Storm, Lil Bob, Jonny Adams, Wayne Toups and Damon Troy. I was also inspired by soul staples such as Otis Redding, Wilson Pickett, Stevie Wonder, David Ruffin of The Temptations and Bill Withers.

337: Where did you get your inspiration when putting together your debut album?

Boudreaux: A few of songs were pretty personal. Others were more concept songs, but

even those have personal tidbits and truth in the lyrics. I’ve always loved soul music, not just because it sounds good but because you can feel it.

337: Favorite place to perform in the 337 area?

Boudreaux: That’s a tough one. Each place here has its own personality.

I like Feed ‘N’ Seed a lot because it’s such an intimate room; the stage is low and close to the crowd, and we always have a good time there.

Blue Moon has something real special about it. It’s a staple here for sure. The Grouse Room also has an awesome stage and sound with a swanky atmosphere.
