ACCESS

TO HEALTHCARE SCREENING A Tale of Two Patients So far, I have discussed with you many ways to live heBreast cancer is one of the leading causes of death among women in the United States and other parts of the world. (One in eight women will develop breast cancer during her lifetime.) Over the last twenty-five years of my practice, I’ve seen many patients with this disease. Some are still alive today while, unfortunately, others have not had the same fate. Although disease prevention is ideal, early detection is the next best option. When diseases are detected early, then the patient has the ability to respond more favorably to the treatment of choice because the earlier a disease is diagnosed, the more likely it is that it can be cured or successfully managed.

Several years ago, a patient of mine, a healthcare provider, came to me with the complaint of a lump in her breast. I quickly assessed the patient and then ordered a series of tests to clearly define the nature of this breast lump. After the mammogram was completed, a mass was confirmed. In most cases, patients with complaints such as an unusual swelling or growth will be recommended by their primary care physician to have specific health screenings, to fully determine the cause of such abnormality. In this particular case, a mammogram and a breast sonogram were the tests of choice. After reviewing the mammogram result with the patient, I immediately sent her to the surgeon for evaluation and a subsequent breast biopsy. The results of the biopsy showed that the mass was indeed a cancerous tumor. As soon as the lump was confirmed to be cancer, the patient was quickly referred to the appropriate subspecialty doctors for treatment. She responded well to treatment and remained cancer free for many years. Surprisingly enough a few years ago this same patient returned again with the same complaint of a lump, but this time in the other breast. We followed the same diagnostic pathway and the patient had her mastectomy and was doing well.

Then one day she came to me complaining that she just 4 | GETHEALTHY | JAN-MAR 2018

did not feel right – as if something was wrong but she couldn’t tell what it could be. She was getting tired easily although she did not have any significant pain nor was she necessarily losing weight. However, given her history of bilateral breast cancer, I decided to order what is called a metastatic workup for her. This screening is designed to look for certain types of cancers such as breast cancer that may have spread to other parts of the body such as the lungs, liver or kidneys. Unfortunately, we found a tumor in one of her kidneys that was also malignant. With a sense of urgency, we worked to get her treated. Finally, the patient had the kidney removed and she is now doing very well. Having access to healthcare is very important.

Without access to healthcare, this patient’s story would probably be very different.

Typically, initial mammograms are done at age forty unless a patient displays symptoms that suggest that a mammogram be done earlier. For example, I had another patient who was in her thirties who came to me with the complaint of a lump in her breast that had grown exponentially over the last several weeks. When I examined the patient, I realized that things were not looking good for her at all. A mammogram and a sonogram were ordered immediately and these tests confirmed that she did indeed have a mass that had all the characteristics of malignancy. She was then referred to surgery and had her mastectomy done but it was already too late. The cancer had spread to many of her internal organs. The cancer had now gone from an early stage, where the disease would have been more manageable, to an advanced stage. The treatment was not effective because the cancer was not detected in time. The patient suffered. She endured much pain despite appropriate pain management until we eventually lost her. This story is to emphasize that disease prevention is the gold standard, but the next best thing is early detection. ►

FINDING AND TREATING DISEASES at an Early Stage Can Save Lives There are many reasons why diseases such as cancer and Alzheimer’s can be detected late. One of the most common reasons is that people often do not know what to look for or some of the common signs and symptoms associated with the disease. Unfortunately, around 1 in 4 of cancers is diagnosed through emergency admission to hospital. Most of the patients diagnosed in this way usually do not have favorable outcomes and their chances of survival are extremely low. Another reason why detection may be late is that sometimes, patients are afraid to confirm their fears. They oftentimes do not want to hear that they have cancer or Alzheimer’s disease or diabetes. These illnesses are life-threatening and a diagnosis can be terrifying. Some people may not

know how to handle the news or how to cope with those kinds of grim circumstances.

Although it may be a scary scenario to face, early detection and diagnosis save lives. In fact, studies show that in both breast and ovarian cancer, more than 90% of women diagnosed at the earliest stages survive their disease for at least 5 years compared to around 15% for women diagnosed with the most advanced stage of breast cancer or around 5% for women diagnosed with the most advanced stage of ovarian cancer. Even 70% of lung cancer patients will survive for at least a year if diagnosed at the earliest stage compared to around 14% for people diagnosed with the most advanced stage of disease. ► Cont. on page 7

For cognitive degenerative diseases, early detection can help in many ways. For example: 1: Catching the disease at a stage when it could still be reversed: even if there is an underlying dementia such as Alzheimer’s disease, diagnosis, and treatment of reversible conditions can help to improve brain function and reduce symptoms.

2: The disease may still be treatable and treatment could result in a full recovery or at least greatly reduce the chances of further decline.

3: Early diagnoses are also more accurate because the patient might still be able to answer key questions or report concerns that others may not notice. These kinds of results are more difficult to achieve when a large part of the brain has become affected.

4: It will allow the patient to participate more in the preparation of short-term and long-term care and planning such as legal and financial matters as well as being able to make their wishes known to their family members.

5: It will also allow the patient the opportunity to reprioritize how they spend their time so that they can enjoy and make the most of it such as spending time with family and friends, traveling or creating a deeper spiritual connection with God. 6: An early diagnosis will also help the family to prepare for the disease through education.

Educating your family members about the disease will help to reduce their stress as well as feelings of regret and remorse.

Individuals diagnosed early in the disease process can take advantage of support groups in the early stages and learn tips and strategies from others in similar situations to better manage and cope with their symptoms. New research and technology are emerging every day and there are clinical trials that help to further the development of treatments to improve the care of patients suffering from disease and increase their opportunities. Advocacy groups also help others to understand more about diseases and the stigmas associated with them.

For example, mental changes in a person who has some kind of cognitive degenerative disease can attribute those changes to the disease rather than to their own personal failings.

Altogether, these advantages result in a higher quality of life for the person afflicted, less stress for family care partners, and more time to treasure the present and prepare for the future. ► Cont. on page 9 GETHEALTHY | JAN-MAR 2018 | 7

In 2010, the U.S. Department of Health & Human Services Centers for Disease Control and Prevention reported that seven of the top ten causes of death in the United States were the result of chronic diseases. Heart disease and cancer alone accounted for nearly 48% of all of those deaths. In 2012, the American Diabetes Association did a study that confirmed that approximately 29 million people in the United States have diabetes. That is 9.3% of the national population. Of that 29 million, 8.1 million were undiagnosed. Diabetes is the leading cause of kidney failure, lower-limb amputations other than those caused by injury, and new cases of blindness

among Americans today. Worldwide, there are about 300 million diabetics and that number is continuously rising. If present trends continue, experts believe that diabetes will afflict nearly 1 in every 3 people in their lifetime. So when you think about just how many people might actually have diabetes and don’t know about it, it is quite alarming. Nearly 27.8% of people living with diabetes don’t even know that they have it and therefore are not treating it. Physicians and medical experts are becoming increasingly alarmed at the rate of people who are dying from hypertension-related deaths such as heart failure or kidney failure. In 2015, a new report was released by the American Heart Association that confirmed that deaths caused by high blood pressure were on the rise. High blood pressure is one of the greatest risk factors for a wide variety of serious and potentially life-threatening medical complications, and cardiovascular disease is still considered one of the biggest killers in the United States. Approximately 80 million Americans are afflicted have the condition under control. In fact, some experts believe that there 10 | GETHEALTHY | JAN-MAR 2018

are populations suffering from hypertension that go undertreated. Awareness campaigns and community-based initiatives help more and more people to control their blood pressure successfully, but these measures are oftentimes not enough. However, as healthcare systems around the country better implement evidencebased prevention and treatment guidelines from the AHA and the American College of Cardiology, a slight decrease in the number of American deaths attributed to heart disease and stroke was reported according to new statistics from the American Heart Association. â–ş Cont.

Q:

I have pre-diabetes and I am not actively doing anything to lower my blood sugar. Am I in danger?

A: Yes you are in danger. Pre-diabetes should be treated using healthy lifestyle changes. Prolonged elevated blood sugar places patients at risk for many diseases such as heart disease, renal failure and early death.

Q:

I would like to change my eating, but I am not sure how to begin.

A: Changing eating can sometimes be difficult, so I suggest that you start slow. Try to remove all foods that are dangerous for your health such as processed and red meats, sugar, and fried foods. Then add more of these foods to your diet: vegetables, fruits, whole grains, nuts and seeds.

Q:

I have a very stressful job and I noticed that my blood pressure is usually high at work Could the job be affecting my blood pressure?

A: Any form of acute or prolonged stressful situation could have a negative effect on blood pressure.

During stress the body releases certain hormones, catecholamines, as a compensatory mechanism. However prolonged elevation of these hormones, as seen in chronic stress could indeed lead to elevated blood pressure as well as other medical issues such as tachycardia or cardiac arrhythmia.

Q:

I have high cholesterol and my friend has been encouraging me to eat oats daily, can this really decrease my cholesterol?

A: Yes, studies have shown that the consumption of a diet high in fiber has many health benefits, such as: lower the LDL or bad cholesterol, improving blood sugar level and reducing the risk of colon cancer.

Q:

I know that physical exercise is important to maintain good health but I don't have the time to exercise.

What do you recommend?

A: There are various ways to add exercise to your daily routine. Here are few practical suggestions: 1. Park your car far from your office and walk.

2. Use the stairs.

3. Stand and work if possible.

4. Walk in place three minutes every hour.

5. Be creative and keep your body in motion.

The Importance of Health Screenings

Early detection and having an adequate level of access to healthcare can increase a person’s longevity and quality of life. It is vital that patients report any changes or concerns that they are experiencing to their primary care physicians as soon as they appear. Because most patients have not had medical training of any kind, it is common that, although they may be experiencing symptoms of chronic illness, they may not be able to identify them as the first signs of a potential health problem.

This is why regular health screenings are so crucial.

They are intended to identify health concerns before they develop any further and therefore increase the patient’s chance of a successful treatment plan and possible full remission of the disease. Health screenings such as mammograms, pap smears, and colorectal tests can find cancer at its early stages when the with high blood pressure and only about half of those people diseases are easier to treat and the patients will be more receptive to the treatment.

The different types of health screenings will mostly be recommended for a patient dependent upon that person’s age unless they are showing signs that a screening should be performed earlier.

• Breast cancer screenings (Mammograms) – Women ages 40 and above should get yearly mammograms to test for breast cancer.

• Colon and rectal cancer and polyps – Both men and women should begin these health screenings starting at age 50 and above.

Flexible sigmoidoscopy every 5 years Colonoscopy every 10 years Double-contrast barium enema every 5 years CT colonography (virtual colonoscopy) every 5 years

• Cervical cancer screenings (Pap smears) – This health screening is not recommended for women under the age of 21 unless they are showing signs 12 | GETHEALTHY | JAN-MAR 2018

that a screening should be performed earlier.

However, from age 21 to 29 a Pap test should be done at least once every three years. HPV testing is usually not conducted unless the patient has an abnormal pap smear. Between the ages of 30 and 65, however, both the Pap smear and HPV test should be done. If a woman has had her uterus and cervix removed (a hysterectomy) for reasons other than cervical cancer, these types of screenings need not be completed.

• Prostate Cancer – The American Cancer Society recommends that men ages 50 and above be screened for prostate cancer, or younger if they have a family history of the disease.

• Blood Pressure – Both men and women ages 20 or over should be tested at least once every two years for high blood pressure. Typically, high blood pressure symptoms go unnoticed which makes this disease increasingly dangerous.

Screenings are the best way to determine, treat and potentially reverse high blood pressure.

• Blood Glucose – At age 45 and above, both men and women should have their blood glucose levels tested by their primary care physician at least once every three years unless there is an indication that the screening be done earlier.

• Cholesterol (fasting lipoprotein profile) – Beginning at age 20, the fasting lipoprotein profile should be conducted at least once every 4-6 years for people of “normal risk.” High-risk individuals should see their primary care physicians about regular screenings, especially if they have a family history of the disease. High cholesterol elevates a person’s risk for heart disease and stroke.

Of course, a person’s health history is a great influencer of the needs of each individual patient. A primary care physician should always be consulted for the best course of action. ►

THE GOLDEN STANDARD

Early detection greatly increases a person’s receptiveness to treatments of several different diseases and chronic illnesses; however, disease prevention is the “Golden Standard” that every person should strive to achieve. There are several ways that you can help to prevent disease and chronic illness in your own life through lifestyle choices that you make. In Summary The “access to healthcare” situation in the United States has been unreliable at best for several years. However, in 2014, 32 million Americans flooded the medical healthcare system with the passing of the Affordable Care Act. Unfortunately, this measure did not solve the problem and millions are still either not insured at all or are under-insured. The Office of Disease Prevention and Health Promotion announced that its goal for 2020 was to improve the American people’s access to comprehensive and quality health care services. Vegan "Cheese" Sauce

Vegan "Cheese" Sauce INGREDIENTS: ½ cup raw cashew nuts (raw) 3 tbsp nutritional yeast flakes 2 cups water 2 tbsp corn starch 1 tbsp fresh lemon juice ¼ tsp garlic powder 1 large medium red bell pepper 1 ½ tsp salt ½ tsp onion powder

Chile and Lime Quinoa

PREPARATION:

INGREDIENTS:

Blend cashew nuts in ½ cup water until smooth, add the remaining ingredients and blend until smooth. Add sauce to sauce pan and cook for 5-7 minutes on low heat, stir continuously until thickened. Remove from heat and enjoy. May use as a dip, spread or for macaroni and cheese.

Lettuce Wraps INGREDIENTS:

Red bell pepper ½ cup carrots diced Tofu (Firm) Soy crumbles ½ cup celery diced 4 cloves garlic 2 tbsp minced ginger 4 green onions 1 small can water chestnuts Lettuce leaves

SAUCE INGREDIENTS: 1 tbsp rice vinegar 1 tbsp sesame oil 1/3 cup teriyaki sauce

Add sesame oil to a skillet, add garlic and ginger cook and stir 2 minutes, add carrots, celery, bell pepper. Add Tofu and crumbles cook another 6 to 8 minutes, add sauce, chopped water chestnuts, and green onions. Serve on lettuce leaves and top with peanuts or cashew pieces.

Place quinoa in finemesh strainer rinse well under cold running water.

Combine quinoa and 1 cup water in small saucepan; Bring to a boil over high heat. Reduce heat to low; cover and simmer 12-15 minutes or until quinoa is tender.

Drain, Cover, let stand 5 minutes. Stir jalapeno, green onion, oil, lime juice, salt cumin, chili powder and Mrs Dash into quinoa.

Fluff mixture with fork.

Serve warm or at room temperature.

PREPARATION:

½ cup quinoa 1 small jalapeno pepper minced 2 tbsp finely chopped green onion 2 tbsp olive oil 1 tbsp fresh lime juice ¼ tsp salt ¼ tsp cumin ¼ tsp chili powder 1/8 tsp Mrs Dash

2 cups vanilla flavored soy or almond milk 1 cup quinoa, rinsed 1/3 cup raisins Pinch of ground cinnamon 1 cup fresh or frozen fruit 2 tbsp of walnuts

PREPARATION: In a small saucepan, bring milk to boil. Add quinoa and reduce the heat to simmer and cover until milk is almost absorbed, approximately 15 minutes. Stir in the cinnamon, fruit, and cook another 2-3 minutes. Sprinkle with toasted nuts.

Begin by standing with your body turned at a 90 degree angle from a wall.

Place feet shoulder width apart and pointed straight.

Hold medicine ball with both hands at chest level with your elbows exed.

Initiate the movement by contracting your glutes and rotate your body quickly toward the wall, pivoting your back leg as your body turns. Use your entire upper body to push and release the ball toward to the wall as hard as possible.

Do not allow your shoulders to shrug as your throw the ball.

Catch the ball and repeat as quickly as possible with form.

Multiplanar Step Up

Begin by standing in front of a box or platform with feet shoulders-width apart and pointing straight ahead (hips should be in a neutral position).

Lift one leg directly beside balance leg, hop up and land on top of box on one leg. Hold for 3-5 seconds. Repeat.

Advanced: Use the same format to hop forward and lateral (left and right).

Single Leg Romanian Deadlift

Begin by standing with feet shoulderswidth apart and pointing straight ahead (hips should be in a neutral position). Lift one leg directly beside balance leg, bend from the waist and slowly reach hand down toward the toes of the balance leg (Keep the spine in a neutral position and avoid hunching over). Slowly stand upright activating abdominal muscles and gluteal muscles.

A LOS EXÁMENES MÉDICOS

Una historia de dos pacientes El cáncer de mama es una de las principales causas de muerte entre las mujeres en los Estados Unidos y otras partes del mundo. (Una de cada ocho mujeres desarrollará cáncer de mama durante su vida.) Durante los últimos veinticinco años de mi práctica, he visto a muchos pacientes con esta enfermedad. Algunas todavía están vivas hoy en día , mientras que, por desgracia, otras no han tenido la misma suerte. Aunque la prevención de enfermedades es ideal, la detección temprana es la mejor opción. Cuando las enfermedades se detectan temprano, entonces el paciente tiene la capacidad de responder de manera más favorable para el tratamiento de elección debido a que cuanto antes se someta un diagnóstico de la enfermedad, mejora la posibilidad de ser curado o manejado con éxito.

Hace varios años, una paciente mía, una proveedora de cuidado de salud, vino a mí con la queja de un bulto en el pecho. Evalué rápidamente a la paciente y luego pedí una serie de pruebas para claramente definir el naturaleza de este bulto en el pecho. Después de realizar el mamograma, se confirmó una masa. En la mayoría de los casos, los pacientes como inflamaciones inusuales el crecimiento el médico de cabecera recomendará exámenes de salud específicos, para esclarecer la causa de tales anomalías. En este caso particular, una mamografía y una ecografía de mama fueron las pruebas de elección. Después de revisar el resultado mamografía con la paciente, inmediatamente la envié al cirujano para su evaluación y la posterior realización de una biopsia en un seno. Los resultados de la biopsia mostraron que la masa era de hecho un tumor canceroso. Tan pronto como se confirmó que el bulto era cáncer, la paciente fue remitida rápidamente a los médicos de subespecialidades apropiadas para el tratamiento. Ella respondió bien al tratamiento y se mantuvo libre de cáncer durante muchos años. Sin embargo, dada su historia de cáncer de mama bilateral, decidí ordenar lo que se denomina un estudio metastásico. Esta evaluación está diseñada para detectar algunos tipos de cáncer como el cáncer de mama que se pueden haber propagado a otras partes del cuerpo como los pulmones, el hígado o los riñones. Por desgracia, nos encontramos un tumor en uno de sus riñones que era además maligno.

Con urgencia, se procedió a darle tratamiento. Al final a la paciente se le extrajo un riñón y ahora está bien. Tener acceso al cuidado de la salud es muy importante. Sin acceso a la salud, la historia de esta paciente probablemente habría sido muy diferente.

Por lo general, las mamografías iniciales se realizan a los cuarenta años a menos que una paciente presenta síntomas que sugieran la necesidad de hacer antes una mamografía. Por ejemplo, tuve otra paciente que estaba en sus treinta años, que vino a mí con la queja de un bulto en su pecho que había crecido mucho en las últimas semanas. Cuando examiné la paciente, me di cuenta de su situación no pintaba bien en absoluto. En 2010, los Centros para el Control y Prevención de Enfermedades del Departamento de Salud y Servicios Humanos de EE.UU. informaron que siete de las diez causas principales de muerte en EE.UU. eran el resultado de las enfermedades crónicas. Las enfermedades del corazón y el cáncer solos representaron casi el 48% de todas esas muertes. En 2012, la Asociación Americana de Diabetes realizó un estudio que confirmó que aproximadamente 29 millones de personas en EE.UU. tienen diabetes. Es decir el 9,3% de la población nacional. De esos 29 millones, 8,1 millones estaban sin diagnosticar. 3 Actualmente la diabetes es la principal causa de insuficiencia renal, amputaciones de miembros inferiores que no sea aquellas causadas por una

lesión, y nuevos casos de ceguera entre los estadounidenses. A nivel mundial, hay cerca de 300 millones los diabéticos y ese número está continuamente en aumento. Si la tendencia actual continúa, los expertos creen que la diabetes afectará a casi 1 de cada 3 personas en su vida. Así que cuando se piensa simplemente en la cantidad de personas que tienen diabetes y no lo sabe, es bastante alarmante. Casi el 27,8% de las personas que viven con diabetes ni siquiera saben que la tienen y por lo tanto no la están tratando. Si se deja sin tratar y sin el acceso adecuado a la atención de salud, la diabetes en última instancia, pueden llevar a la muerte prematura y/o a una mala calidad de vida. ► GETHEALTHY | JAN-MAR 2018 | 27

En 2015, un nuevo informe publicado por la American Heart Association confirmó que las muertes causadas por la presión arterial alta están en aumento. La hipertensión arterial es uno de los mayores factores de riesgo para un amplio variedad de complicaciones médicas y las enfermedades cardiovasculares todavía se consideran unas de las más grandes asesinas en EE. Debido a que la mayoría de los pacientes no tienen entrenamiento médico, es común que, aunque pueden experimentar síntomas de enfermedades crónicas, puede que no sean capaces de identificarlos como los primeros signos de un problema potencial para la salud. Esta es la razón por la que son cruciales los exámenes de salud regulares. Están diseñados para identificar problemas de salud antes de que empeoren y por lo tanto mejorar la posibilidad de un tratamiento exitoso o la curación total de la enfermedad. Los exámenes de salud, tales como mamografías, pruebas de Papanicolaou y exámenes colorrectales pueden detectar el cáncer en sus primeras etapas, cuando las enfermedades son más fáciles de tratar y los pacientes serán más receptivos al tratamiento Los diferentes tipos de exámenes de salud se recomiendan para un paciente dependiendo de la edad de la persona a no ser que muestren señales de que el examen se debe realizar más temprano.

• Cáncer de colon, rectal y pólipos - Tanto los hombres como las mujeres deben comenzar las pruebas de detección a partir de los 50 años en adelante. Los médicos también recomendar: • • • •

La sigmoidoscopia flexible cada 5 años La colonoscopia cada 10 años Enema de bario de doble contraste cada 5 años La colonografía CT (colonoscopia virtual) cada 5 años

• Detección de cáncer de cuello uterino (prueba de Papanicolaou) - Este control de la salud no se recomienda para las mujeres menores de 21 a menos

que muestren señales de que se debe realizar antes un examen. Sin embargo, entre los 21 y 29 años la prueba de Papanicolaou se debe hacer al menos una vez cada tres años. La prueba del VPH por lo general no se lleva a cabo a menos que el paciente tenga un Pap anormal. Entre las edades de 30 y 65 años, sin embargo, se debe hacer tanto la citología como la prueba del VPH . Si a una mujer se le ha extraído el útero y el cuello uterino (histerectomía) por razones distintas al cáncer de cuello de útero, no se necesita realizar este tipo de prueba.

• El cáncer de próstata - La American Cancer Society recomienda que los hombres de 50 en adelante deben tener examen de cáncer de próstata, o mas joven si tienen historia familiar de la enfermedad.

• Presión arterial - Tanto los hombres como las mujeres de 20 años de edad o más deben realizarse exámenes de presión arterial alta al menos una vez cada dos años. Normalmente, los síntomas de la presión alta pasan desapercibidos lo que hace que esta enfermedad sea cada vez más peligrosa. Los exámenes son la mejor manera de determinar, tratar y revertir potencialmente la presión sanguínea alta.

• Glucosa en la Sangre - A partir de los 45 años, tanto hombres como mujeres deberían revisar sus niveles de glucosa en la sangre por su médico de atención primaria, al menos una vez cada tres años a menos que exista una indicación de que el examen se debe hacer antes.

• El colesterol (perfil de lipoproteínas en ayunas) - A partir de los años 20, el perfil de lipoproteínas en ayunas se debe realizar realizan al menos una vez cada 4-6 años para gente de “Riesgo Normal”. Los individuos de alto riesgo deberían ver su médicos de atención primaria para los exámenes regulares, especialmente si tienen antecedentes familiares de la enfermedad. El colesterol alto eleva el riesgo de enfermedad cardiaca y accidente cerebrovascular en una persona.

Hay varias maneras de que usted pueda ayudar a evitar los problemas y las enfermedades crónicas en su propia vida a través del estilo de vida que lleve. Obtener de forma regular las vacunas para algunas de las enfermedades más comunes no sólo le ayudará a evitar enfermedades, sino que además evitará el contagio de esas enfermedades. En Resumen La situación de “acceso a la salud” en los Estados Unidos no ha sido confiable desde hace varios años. Programa DE FARMACIA La doctora Dona Cooper, en cooperación con el Cooper Wellness Center y el Banco de Comida RGV, han lanzado recientemente el programa de Farmacia, diseñado para proporcionar un mejor acceso a frutas y verduras saludables. La mala nutrición y la obesidad son dos desafíos en el Valle del Río Grande. La baja accesibilidad a los alimentos nutritivos ha causado graves problemas de salud a los residentes en algunas de nuestras comunidades.

Nuestra asociación con el jardín comunitario ha mejorado la calidad de la nutrición y aumentado el consumo de frutas y verduras para nuestros pacientes y nuestra comunidad.

Aquí en el Valle del Río Grande, la diabetes, así como otras enfermedades relacionadas con la dieta, son un problema grave. Este innovador concepto de "prescripción" de verduras frescas a sus pacientes ha sido la visión de la doctora Cooper durante años.

En su práctica de Medicina Interna, la doctora ha encontrado que los remedios más eficaces son aquellos que tratan los problemas de raíz.

Chile y Lima Quinoa

INGREDIENTES: PREPARACIÓN: Licue las nueces ½ taza de nueces de la india en ½ taza de agua (crudas) hasta que queden 3 cucharadas de hojuelas de suaves, agregue los levadura nutricionales ingredientes restantes 2 tazas de agua y continúe licuando 2 cucharadas de hasta que quede harina de maíz suave. Agregue 1 cucharada de la salsa a la olla jugo de limón fresco y cocine durante 5-7 minutos a ¼ cucharadita de ajo fuego lento, revuelva en polvo continuamente hasta 1 pimiento rojo mediano que espese. Retire del grande fuego y disfrute. Puede 1 ½ cucharadita de sal usarse como dip, para ½ cucharadita de cebolla en untar o para comerlo en polvo macarrones con queso.

PREPARACIÓN: Agregue aceite de sésamo a una sartén, agregue el ajo y el jengibre y revuelva durante 2 minutos, agregue las zanahorias, el apio y el pimiento. PREPARACIÓN:

Rinde 4 porciones ½ taza de quinoa 1 pimiento jalapeño pequeño picado 2 cucharadas de cebolla verde finamente picada 2 cucharadas de aceite de oliva 1 cucharada de jugo de lima fresco ¼ cucharadita de sal ¼ cucharadita de comino ¼ cucharadita de chile en polvo 1/8 cucharadita Mrs Dash

Coloque la quínoa en un colador de malla fina y enjuague bien con agua fría.

Combine la quínoa con una taza de agua en una cacerola pequeña; Llevar a ebullición a fuego alto. Reduzca el fuego a bajo; tape y cocine a fuego lento de 12 a 15 minutos o hasta que la quinua esté tierna. Escurrir y cubrir; déjela reposar por 5 minutos. Agregue el jalapeño, la cebolla verde, aceite, jugo de lima, comino sal, chile en polvo y Mrs Dash a la quínoa. Mezcle o bata con tenedor hasta que quede esponjoso. Sirva caliente o a temperatura ambiente.

Tazón de Quínoa para Desayunar

Envoltorios o Rollitos (wraps) de lechuga INGREDIENTES:

INGREDIENTES: 2 tazas de leche de soya o de almendra con sabor a vainilla 1 taza de quínoa, lavada.

1/3 taza de uvas pasas Pizca de canela molida 1 taza de fruta fresca o congelada 2 cucharadas de nueces

Almuerzo

La lechuga envuelve 3 envolturas de lechuga (1 taza de mezcla de verduras rellena en 3 envolturas en total) 1/2 taza de arroz integral Vaso de agua

PREPARACIÓN: En una cacerola pequeña, hierva la leche. Agregue la quinoa y reduzca la temperatura para cocinarla a fuego lento, cubra hasta que la leche se absorba, aproximadamente 15 minutos. Agregue la canela, la fruta y cocine por otros 2-3 minutos. Espolvorear con nueces tostadas.

Cena

1/2 taza de quinua chile 1/2 taza de brócoli 1 taza de ensalada de espinacas y col rizada, vaso de agua

Zancadas para caminar

Comience el movimiento de pie con las piernas a la distancia de la cadera. De un paso largo hacia delante con la rodilla derecha, mientras te desplazas hacia abajo con la rodilla derecha a 90 grados (no permitas que la rodilla pase por delante del pie derecho), tu rodilla izquierda debería tocar el suelo.

Vuelva a la posición de pie y repita ahora con la pierna izquierda.

Comience de pie con el cuerpo girado en un ángulo de 90 grados desde una pared.

Coloque los pies separados a la altura de los hombros y apuntando directamente. Sostenga la pelota medicinal con ambas manos al nivel del pecho con los codos flexionados.
