Toldedo Bend Getaway
A Weekend of Renewal
Being a parent can be overwhelming.
In the raising of babes, the taxiing of future NFL, NBA, and MLB hall of famers, doing our best to read food labels and ingredient lists, keeping up with assignments, fundraisers, and various checklists sometimes we can feel like we are going to lose our ever- loving - minds. It is vital to our sanity to seek solace in the quiet, in the peaceful. So, my husband and I replaced the kids’ ball bags for out overnight luggage, dropped the kids with Papi and Grandma, pointed our compass north, and drove the curves and hills that are characteristically East Texas to find ourselves relaxing a tiny bit more with every passing pine tree. For parents looking to embrace nature on a weekend getaway, Toledo Bend offers a laid back atmosphere to wet your line, pack a picnic, or watch the stars. No cell phone coverage, no internet, just coffee, two lane roads, and a whole lot of fresh air. We hiked dirt roads of Indian Mounds National Forest, tickled the edges of the water hiking the Toledo Bend shoreline, and took time to feel the breeze blowing off the docks. Mother Nature has a way of melting the stress right off your back. Of course, food should be a part of any successful getaway! We enjoyed a nice breakfast at Martin’s Corner in Milam, a quaint gas station with the duck hunters coming in off the water from an early morning hunt. Martin’s Corner boasts “The Best Breakfast in Town” on their road sign, and I am sure that it is true. Driving around exploring the Louisiana side of Toledo Bend, we spotted another hole-in-the-wall, Pepe’s Mexican Grill. I can assure you, they offer the best darn Mexican food east of the Neches River. It’s the kind of place that makes you say, “Oh, THAT is what Mexican food is supposed to taste like.” It’s fun to find gems on an adventure, to not have to be anywhere at any particular time, just enjoying a memory waiting to unfold. Discover some down time in the welcoming arms of the tall timbers of Deep East Texas – and Southwest Louisiana. Toledo Bend is just far enough to be considered a getaway, but close enough to not to drain precious weekend time all on the road. When you find yourself all caught up in the toils of life and you need an escape, seek the best the Pineywoods has to offer – the sweet salvation of a little R & R. Food For Thought
We eat every day. Morning. Noon. Evening. For people with food sensitivities, diabetes, or heart trouble, eating can be more of a challenge than it is for the rest of the world. I seem to be allergic to just about everything: wheat, dairy, chocolate, eggs, bananas, soy, vanilla, vinegar, and more other foods than you would believe. Today, I would like to share some tips that have helped me deal with my food allergies – and feel better! I had to rethink what breakfast, lunch, and dinner look like for me. I get inspiration from other cultures that have different eating styles. It takes a bit of time and patience to wrap your mind and train your taste buds to be receptive to different foods as “comfort foods”. Creating new recipes and Say, “I saw it in SETX Family Guide”
food traditions is a challenge. It requires performing some self evaluation and prioritizing health and wellness over our sense of taste and “that’s-how-I’ve-alwaysdone-it” mentality. Once mornings were for pancakes or French toast. Now, I have black beans and rice or a chicken breast with broccoli. My spaghetti noodles are made out of corn these days, not flour. In time, our taste buds adjust and we learn to eat, and enjoy, the new foods. I had to learn to take extra time while shopping to really look deeply at what foods I am buying and bringing into our home. I am learning to evaluate what nutrients we are lacking in our meals and to consider what questionable food habits I am passing on to my children. The first and best thing we can do is be the model. There is no need for a total 100% sugar free, vegan lifestyle if that is not your preference or dictated by your doctor. However, there is always room for adjustments that will help with blood pressure, inflammation, cholesterol, diabetes, ADD/ ADHD, sensory issues, and more. Long-term improvements come from making healthy eating a long-term lifestyle, not a quick fix. I had to sincerely resolve to make choices that would give me and my family life. Everything we put in our mouth is one choice closer to death or one choice closer to life. Everything we feed our children is leading them one step closer to death, diabetes, heart disease, obesity, OR one step closer to life, strength, clear mindedness, longevity, and a reduced chance of disease.
Whoa! What can we do in your shopping, meal planning, recipes that will bring LIFE to our babies? Raw veggies such as baby carrots, cucumber slices, snow peas, cherry tomatoes, yellow/ red bell pepper strips, broccoli & dips like guacamole, salsa, and hummus are great appetizers. Whip up stir fry using more vegetables and lean meats than rice, serve salads as a meal instead of an appetizer, and add more veggies to your soup, goulash, jambalaya, gumbo, and cowboy stew than potatoes, noodles, or rice. Are you looking for a better carb? Use cauliflower, zucchini, and butternut squash instead of potatoes and rice. Say, “I saw it in SETX Family Guide

Fruits in season are always the most affordable. Binge on cherries, blueberries, and blackberries when they are at their peak freshness – and lowest price. Try freezing grapes (not for babies or toddlers). Try new fruits like mango or kiwi, combine apples or bananas with peanut or almond butter, and buy frozen fruit for smoothies. During harvest time, take your children to pick local fruit, so they will understand where their food comes from and when different produce peaks. In Southeast Texas, strawberries usually peak in February and March. Blueberries will peak in June. Dewberries and may haws peak during late April and into May. Satsumas, kumquats, and lemons peak between Thanksgiving and Christmas. Backyard pears are a late summer fruit. Beans are inexpensive and easy breakfast, lunch, or dinner. Experiment with black beans, pinto beans, red beans, butter beans. Top your beans with bacon, chives, sour cream, cheese, salsa, tortilla strips, or serve with Southern hot water cornbread or homemade bread! Nuts & seeds are rich in fiber and very filling. They are a staple food in my pantry. They travel well, can be used in many different ways, and last a long time in the freezer! I will always associate winter time evenings with shelling pecans and hearing the shells pop as Papa threw them in the fire place. I love to add nuts and seeds to my salads and stir fry! Substitute flax, applesauce, or coconut/ olive oils and olive oils for eggs. The right choice depends on what your recipe needs: moisture, leavening, or binding. Be creative with herbs and seasonings to excite the palate and bring excitement to your new recipes. Reduce milk in your recipes or substitute nut milks, flax milk, or juices! Find the right one/s for you. I prefer coconut milk. My husband likes cashew milk. Say, “I saw it in SETX Family Guide”

Choose backyard raised chicken, grass fed beef, organic, local venison, pork, or catch your own fish from Lake Same Rayburn and seafood from Sabine Pass or Keith Lake! You will discover that you will crave good food as you wean yourself off sodium, sugar, and preservatives. The processed chemicals are addictive and make your body crave more and more of them. When you give yourself a chance to NOT desire processed food you will eat less in general because you will be meeting your body’s nutrient needs through real food. Visit the local Silsbee and Beaumont Farmer’s Markets as a family outing or a Saturday morning date. Be encouraged, parents! Soon, you – and your family – will be eating and feeling better.
