2018 is going to be a great year! The taste of roast turkey, prime rib, mashed potatoes and gravy, Christmas carols, and bonus family time are now distant memories.

January is a great time to take an inventory of our families, our businesses, our lives, and ourselves. We reflect upon past decisions to help us make better choices. Fitness and health become more of a focus for many. It could be that the American custom of gorging ourselves during the holidays has something to do with that, or it could be that many want to start some new healthy habits.

The planning and setting of goals each year is also commonplace during January. It seems as if an invisible reminder pops up after the 1st, and speaks to us about what we want to accomplish and within what time frame. I find myself doing this regularly every year. It brings new hope for possibilities and outcomes that we imagine and dream about.

As I reflect on 2017, I think back on all the blessings in my life. I also think about one troublesome thing that my team and I learned. The number of individuals being fed by the San Antonio Food Bank every month is more than 60,000 and 35 percent are children.

We were shocked, and it became immediately apparent that we needed to help more of those in need. Our goal in 2018 is to raise awareness about the problems we face in San Antonio and the surrounding communities. By giving a voice to organizations like the San Antonio Food Bank and the many others that fight endlessly for humanitarian causes and provide assistance for hundreds of thousands of citizens in our communities.

As we begin 2018, join us in some very important reflection and planning for the year. Think about the blessings in your life, and then plan on how you can unite with us to help those that are less fortunate. As William James, the Father of American psychology once said, “Act as if what you do makes a difference.

It does.”

Galpão Gaucho The independent Brazilian steakhouse on Loop 1604 is a cause for celebration.

estaurateur Alberto Wachholz comes from the Southernmost tip of Brazil, an area where his home country, Argentina and Uruguay share a tradition of cooking huge skewers of meat over an open fire. Once the meat is ready, it’s carved to order for all to enjoy. That’s the idea behind the popular Brazilian steakhouse concept, and it’s the standard that Wachholz and his partner, Jovani Gava, hold true to in Galpão Gaucho, which is located on Loop 1604 near Bitters Road.

Chefs bearing spears of freshly cooked meat regularly drop by your table, offering to carve you juicy cuts of rib-eye, filet mignon, beef tenderloin, leg of lamb and the Brazilian favorite, picanha, which is top sirloin.

Galpão Gaucho, whose name roughly translates from the Portuguese into Home of the Gauchos, sticks closely to authenticity from start to finish. People can tell there’s a relaxed and welcoming feel to the restaurant, and the staff is trained to make sure that you’re taken care of in the manner that you’d like. “Service is different for everybody,” Wachholz says. “We want to give the customer what he or she wants.” It’s one reason why the independent restaurant been a success since its doors opened in 2015. “This is not an everyday meal,” Wachholz says. “It’s a celebration. And we want people to have a good time when they come here.”

You might start your meal unwinding over a cocktail, such as the caipirinha, which is a refreshing Brazilian drink made with limes and sugar as well as the local firewater, cachaça. From there, you move on to the massive salad bar, which features more than 40 items, from hearts of palm, asparagus and artichokes to apple salad, deviled eggs and smoked salmon, all prepared daily. There are even some warm dishes, including black beans and rice. All of these are traditional too, Wachholz says. (If you’re just not into all that meat, you can limit your all-you-can-eat meal to the salad bar and revel in multiple visits to the displays of cheeses, cured meats and even the savory Brazilian-style potato salad.) This is also in keeping with the customs of the restaurateur’s home country, where the men tend the meats while the women get together to plan out the rest of the elaborate spread.

A great many Texas carnivores are willing to celebrate the all-youcan-eat protein feast offered at Galpão Gaucho almost any night of the week. You can find them among the birthday parties, business meetings, romantic dinners and any other type of gathering you can think of.

For those who haven’t been to Galpão Gaucho or any other Brazilian steakhouse, the presentation of the meal is fairly straightforward.

While you’re eating your salad, your side dishes will likely arrive. They include mashed potatoes, polenta, caramelized bananas and pão de queijo, irresistible cheese puffs or rolls. Then comes the meat. Next to each person at the table is a two-sided token. When you turn the green side up, expect to see skewers of meat whizzing right to you. In addition to multiple cuts of beef, you can feast on chicken, sausage, ribs and even grilled salmon. As long as the green side is up, meat will come your way. All you have to do is tell each chef how you want your meat cooked. Most people prefer medium rare to medium, Wachholz says, but if you want something different, including well done, just let them know and they will make sure the meat is cooked to your desired doneness.

When you want to take a rest (and you will likely want to take a rest once or twice), simply turn your token over, so that the red side is up.

You can go from red to green and back again as many times as you want to over the course of your meal. Plus, if you want to sample a particular cut of meat, such as lamb chops or beef ribs, just let any of the chefs know. They’ll make sure you get it as soon as possible.

The point, Wachholz says, is for you to have meat that is sizzling hot from cooking over the coals. At American steakhouses, you may get a large cut of steak that’s hot for the first few bites. Then what are you left with? Why not just enjoy a few bites at a time of, say, filet mignon and then switch to a juicy morsel of bottom sirloin?

You may think after all that meat that you’d be finished, but your meal doesn’t have to end there. Brazilians love desserts, especially something light and fruity to aid with digestions. Their favorite is the

traditional Papaya Cream, in which fruit is blended with vanilla ice cream and topped with crème de cassis. (A strawberry version is also available.) The rest of the sweets include such international treats as flan, tres leches, crème brûlée and cheesecake as well as a molten chocolate cake. Or you could drink your dessert: The flaming Carajillo mixes Licor 43 with espresso for a fiery finish to a dramatic meal.

Wachholz and Gava learned their trade in their home country and while working for one of the international Brazilian steakhouse chains for more 15 years. They went through four corporate buyouts and had seen how once-authentic flavors become diluted with each ownership change. So, they decided to strike out on their own and share with American diners something closer to the tradition they knew. That’s why the churrasco, or grill area, at Galpão Gaucho features the meats being cooked directly over fiery briquettes of mesquite charcoals, not a gas grill. This makes all the difference because the fat from the meat can drizzle onto the hot coals, causing smoke to be released, thereby adding a smoky flavor to the meat.

Since the San Antonio location of Galpão Gaucho opened 2015, the owners launched a sister restaurant in California’s Napa Valley. A third will open in Cupertino, California, in January 2018. Each location reflects the area in which it’s located while being as true to tradition as possible. That means the meats in San Antonio are seasoned a little more strongly, because of our shared preference for bold flavors. Most cuts will only be sprinkled with rock salt, in true Brazilian style, though there is also a spicy picanha with the flavor kicked up a notch. Napa diners prefer less salt and, of course, they want their

own wines to go with the meat – a move that has prompted the restaurant to expand its already fine list at both locations. The Cupertino restaurant may go a step further and offer diners a Brazilian specialty that would have limited appeal here and in Napa, chicken hearts.

“There’s a large Asian population in Cupertino, and this is something that Brazilians have in common with Asian people,” Wachholz says.

Here in San Antonio, diners looking for a place to host a large party, from wedding receptions to business meetings, can check out the restaurant’s four private dining areas, which can seat anywhere from 50 to 100 guests. Screen projectors and sound systems are available in all of them. Galpão Gaucho also offers a happy hour Sunday through Friday that includes special prices on appetizers in case you find you can’t handle the full meal experience.

After you’ve had your fill, the folks at Galpão Gaucho hope you leave with a more than a full belly. They want you to realize that you’ve had an authentic taste of Brazilian culture and will return the next time you have something to celebrate.

Churrascaria: This is Portuguese for a Brazilian-style steakhouse. A related word is “churrasco,” which is a type of grilling skewered meat over charcoal.

Caipirinha: Brazil’s favorite cocktail is made with a local liquor called cachaça, which is mixed with muddled limes and sugar.

by Lorelei Helmke An amazing thing happened this winter season; it snowed in South Texas. For one day we built snowmen and had snowball fights.

Time stood still as we all danced in the delicate flakes falling to earth. We tried to catch snowflakes on the tips of our tongues. We were in awe of the glorious white that covered our world. By the afternoon, it was gone, but that feeling stays with us.

In my house, this means we make fabulous comfort foods, like soups, chowders and chili. We want to be warm and cozy inside and even though we have days in the 60’s scattered in between the cold days, a “cold day” state of mind remains.

There is a wine based drink people have consumed for hundreds of years. The origins of Gluhwein go back to the beginning of wine culture in Europe. It begins the Romans who brought wine to Europe would heat their wine and add spices. I guess being from a much warmer climate the Romans needed to find ways to keep warm.

Another account of the evolution of Gluhwein is that in 400 A.D. monks began warming and spicing their wine. Centuries later, Gluhwein became popularized when Count Joh IV of Katzenelnogen, a German nobleman and grower of Riesling mulled his white wine during the holidays. This traditional version was low in alcohol, so children were allowed to drink it with gingerbread cookies. It can be found in every Christmas Market throughout Germany.

The recipes pass down from generation to generation and have become as much a part of our holiday celebrations in America as egg nog. But the holidays are not the only time we can benefit from Gluhwein. Skiers warm up with Gluhwein all season long.

There is nothing better than coming off the slopes, getting out of those ski boots and curling up by a fire with a cup of warm spiced wine. It’s a tradition all through Europe and seems to be catching on stateside lately. Each year I see Gluhwein or Glogg Moe present in the stores and among wine and foodie websites.

If you are planning a ski vacation this New Year, you can expect to find this glorious concoction perfuming the air at many ski resorts throughout Europe and places like Lake Tahoe. It is after all the perfect après ski beverage.

Gluhwein has many different variations. Some add brandy or rum or vodka. It seems each region offers it’s own twist on this delightful tradition. To make traditional German Gluhwein warm a bottle of dry red wine with the juice of 2 oranges. Remove the zest from the oranges in wide peels to use in serving. Add one cup of simple syrup (1/4 cup sugar heated and dissolved in 2/4 cup water), 20 whole cloves, 2 cinnamon sticks and 2 whole star anise. Let this warm on the stove (do not boil) for at least 20 minutes. Serve in mugs with a slice of the orange peel.

White Gluhwein starts with a fruity Riesling. From there it can be made in a similar way as the red. Using mandarins instead of oranges and adding lemons to the mix gives this version fabulous layers of flavor. The addition of apple juice is also an option.

To either of these styles of Gluhwein alcohol can be added for that extra warming kick. Tradition calls for white rum or vodka.

Amaretto can also be used. This style is referred to as Gluhwein mit Schoss or Gluhwein with a Shot.

Another, more elaborate version of Gluhwein is called Feuerzangenbowle. It is prepared using a bowl set similar to a fondue set. Place the wine and spices in the bowl. A metal grate the Feuerzange is placed on top of the bowl and a sugar loaf, about 7 inches long, is soaked in rum placed on the Feuerzange and set alight. The burnt sugar blends with the mulled wine in a very impressive display.

Gluhwein all around the world: In Brazil it is served as a part of Festa Junina, during their winter In Chile it is called candola in the south and vino navega’o in the north and traditionally consumed on Winter Solstice eve, June 23rd.

In Poland grzane wino is served and they also have a method for preparing mulled beer or grzane piwo.

In Portugal Madeira wine and Port wine is used to make vinho quente.

In Quebec, Canada red wine is mixed with maple syrup and hard liquor and heated. This is called Caribou.

In France, vin chaud consists of red wine, honey, cinnamon and orange and must not be too sweet.

In the Republic of Macedonia it is called vareno vino. They serve it throughout autumn and winter. It is prepared using pepper and used as a flu and cold preventative.

And back in Texas, we add our own style. This year, before the snow, I prepared a Sangria in the style of Gluhwein. Using orange liqueur, a cranberry simple syrup, orange slices, cranberries, and cinnamon sticks. Served chilled on ice with a splash of Topo Chico for bubbles. It was sumptuous!

January and February will most likely bring us many more days of boots, sweaters and coats. There are still many more soups on the menu at my house – healthier ones with the new year. I see no reason at all not to have an occasional pot of Gluhwein on the stove.

Because, Baby, it’s still cold outside…….

to add are a few statement making accessories. Embroidery and lace embellishments have long been a classic western staple along with ultra feminine ruffles.

I love the combination of a corset worn over a simple peasant blouse with a long tiered skirt. You don’t even need to add anything more to the neckline.

However if you prefer a more simple silhouette to begin with, then now’s

the time to layer on the turquoise necklaces, bracelets and rings.

There is something so ethereal and beautiful about a woman when she wears turquoise jewelry. Maybe because it is perhaps the oldest stone in mans history, the talisman of Kings, Shamans and warriors.

The beauty of turquoise is as if it was carved out of a blue sky and slipped into the earth. Native American Indians consider turquoise to contain very powerful metaphysical and spiritual healing powers.

I know what you’re thinking….genuine turquoise can be really expensive.

Whether you buy the real thing or not, there are some remarkable well made faux turquoise pieces out there that are worth considering. Just make sure you know what you are buying.

Any reputable seller should be able

to tell you about the quality of your intended purchase. Howlite is a stone that is often dyed to look like genuine turquoise, but at a fraction of the cost of the real thing. I have read in many research articles that only 1% of the turquoise in the retail market is the genuine deal. Contrastingly I have seen some stunning Native American sterling silver and turquoise pieces that are signed or initialed by the artist that are true investment pieces.

Another striking look is to layer and stack costume jewelry bangles and bracelets that normally on their own, wouldn’t necessarily be considered western. It works every time, especially combined with more classic western wear fabrics, like leather, suede or fringe.

As far as footwear goes, remember that purchasing legendary, top notch quality cowboy boot brands like, Lucchese, Ariat and Old Gringo, to name a few, are also investment pieces that will last for many, many years.

The two top categories within organizing is time management and paper clutter whether you work in an office or run a household.

These and other questions will help pare down on your decision. Here are a few app options: Grocery List – for a simple to-do list Getting Things Done – for detailed task organizing Checkvisit – tasks can be organized into a task hierarchy to keep track of the order you need to work in. Upload files to online storage space as a backup copy of content from your hard drive. Retrieve documents or photos from any device anywhere.

Share phots with family and friends, send large videos with a simple link. Everything you keep in Dropbox is synced automatically to all your devices.

Picasa – is a digital photo editing and organizing manager plus a photo sharing website.

Google Drive – can open up to 30 kinds of files inside your browser. It also opens Photoshop files even if you don’t have Photoshop on your computer. Drive also creates a “quicklook” experience inside your browser to make it easier to go through and find files. `

• Password Keeper

This category has so many forms to stay organized and on time; wall calendars, book form and online like Google Calendar which can be shared with family or co-workers. Phone calendars sync to all devices and can also be shared by others. If you are not crazy about your phone calendar because it doesn’t give you a lot of personalize options, then check these out.

Sunrise – this is probably one of the easies calendar apps to use. If you travel, the time zone support automatically adjusts your appointments to the correct hours. The weather feature is based on your location Tempo – for the professional. One of the popular features, when you add a meeting the app lists the invited contacts. Click on a contact’s name and you get additional information from social media. The app also finds documents associated with the specific event such as an agenda or notes for a quick refresher.

Donna - like Siri, Donna is a personal assistant. This app syncs with Google, Yahoo, Exchange and iCal. It informs you about local weather, gets you accurate meeting directions with real time traffic and travel time.

Keeping information safe is a big concern and being able to put our hands on them at a moment’s notice is key.

LastPass - an award-winning app! You only have to remember one password, the LastPass master password. Offline access to your data via browser extensions and mobile apps. Sync all of your passwords and logins across all of your computers and devices. LastPass never has the key to your encrypted data, so your information remains safe.

1Password – stores your logins, credit card and secure notes. Log in to websites without having to remember any of your passwords, fill credit cards and identities without typing any information. Has a powerful search to find what you need. One Master password. A consumer favorite.

by Steve A. Martinez Jr. The San Antonio Stock Show and Rodeo is one of the premier rodeos in the nation, named the Large Indoor Rodeo of the Year for 12 consecutive years. Production of this 2-plus week long event requires over 6,000 volunteers to execute all of the details that make it one of the largest events in San Antonio. The San Antonio Rodeo draws in over a million people each year, and has become a staple event for Rodeo-goers. The rodeo is run by the San Antonio Livestock Exhibition Executive Committee, or SALE, “a volunteer organization that emphasizes agriculture and education to develop the youth of Texas.”

Since the association implemented the scholarship fund in 1984, it has donated more than $186 million dollars through scholarships, grants, endowments, cattle auctions and other means. Not only is the San Antonio Stock Show and Rodeo one of the most entertaining events of the year, it has made its mark on Texas by supporting the youth and contributing to the future of agriculture. College Rodeo

History

In 1854, in an emerging Texas cattle town, history was made when one of the first ever Texas Agricultural Fairs was held in San Antonio. In the following years, many other fairs and expositions came to San Antonio and all encountered the same problem, inadequate facilities to accommodate their needs. It was evident South Texas was in dire need of facilities to serve as a showplace for a livestock exposition.

This cry for greater accommodations was heard in the early 1940s by Joe Freeman, the man who began the movement, which eventually gave birth to the Joe and Harry Freeman Coliseum. Freeman’s two prime interests were youth and the agricultural and livestock industries. His dream was to build a coliseum to be used for a number of events, but specifically, a livestock exposition for the youth of Texas. After assembling a number of volunteers, ranging from cattlemen to sports-minded citizens, the movement began to construct this multi-purpose coliseum. The years of gathering support and money paid off when construction began in January of 1948. In the following September, the Joe and Harry Freeman Coliseum was opened to the public.

On February 17, 1950, a landmark event took place with the first Annual San Antonio Stock Show & Rodeo. The first exposition met with unqualified success, entertaining more than a quarter of a million visitors, an unheard of record for an opening show.

In 1984, a very forward thinking SALE Executive Committee began to think about encouraging 4-H and FFA high school students to continue their interest in the agriculture industry by majoring in agricultural-related studies in college.

So was born the SALE Scholarship Fund, which

awarded fifteen, four-year scholarships totalling $90,000 to students entering Texas colleges in the fall of 1984.

In 2003, another milestone year in the history of the San Antonio Stock Show & Rodeo, the first time since 1950, the rodeo & concert performance was not held in the Freeman Coliseum but in the brand new, state-of-the-art facility, the SBC Center, located right next door (The SBC Center is now known as the AT&T Center). The Freeman Coliseum then became the home to hundreds of commercial vendors providing the perfect venue for rodeo patrons ready to shop.

Since SALE’s inception in 1950, the Stock Show & Rodeo has grown to be one of the largest and most prestigious, single events in San Antonio with over one million visitors entering the grounds each year.

Rodeo

The rodeo consists of seven PRCA events as well as a Grand Entry, Mutton Bustin’, Calf Scramble and Xtreme Bulls. Mutton Bustin’ is a huge crowd pleaser and one of the most popular events. During each rodeo performance, a few lucky kids get to climb on the back of a dashing sheep and hang on for six exciting seconds.

The Calf Scramble, also during the rodeo performances, is when 24 4-H and FFA members compete to catch, halter and coax one of 12 calves across the winners line. Xtreme Bulls, back for the 10th year in a row, is the most intense bull riding competition in professional rodeo. It takes place on the final Saturday of the show, February 24th at 1pm. The tradition of pairing Xtreme Bulls with electrifying musical performances continues this year with an appearance by LoCash.

The College Rodeo showcases competitive athletes from college rodeo teams in the Southern and Southwest Regions. Come experience western heritage in action as these contestants compete for added-money and awards for AllAround Male & Female Athletes and All-Around Male & Female Teams. Rodeo events include Tie-Down Roping, Steer Wrestling, Team Roping, Barrel Racing, Breakaway Roping, Goat Tying, Bareback Riding, Saddle Bronc Riding and Bull Riding. The Collegiate Ranch rodeo is a battle of cowboy grit in true Ranch Rodeo style, as teams from Texas Tech and Texas A&M take it all out on the dirt. It will put teams of real working cowboys in direct competition with one another in events that working cowboys and ranch hands do every day. Special appearances by the Texas Tech Masked Rider and University spirit groups make this a must see event! This year’s College Rodeo events are February 11th at 4pm. and held in the Expo Hall. Tickets are $20, which includes grounds admission.

Family Entertainment

The Family Fair is an area that provides a wide variety of interactive activities and attractions geared towards family fun and education and live musical entertainment. Little Buckaroo Farms offers visitors a chance to see the agricultural origins of the food and fiber needed for daily living. Exhibits show agricultural production from farm and ranch to the kitchen table.

Visitors to Little Buckaroo Farm can sample southwest dairy products, see a live beehive, take a picture with a farm animal or try their hand at goat milking. The Petting Zoo where visitors young and old will enjoy these playful and friendly exotic and domestic animals.

Carnival

The San Antonio Stock Show & Rodeo is proud to welcome one of the largest carnival providers in the United States, the Wade Show Carnival. Thrilling rides including the Turbo Force, Italian Twister, Slingshot, Tango and Force Ten provide hours of fun for everyone. New rides this year are The Enterprise and the Power Surge. Challenge a friend and test your skill level at any of the games and win one of the

many prizes. Li’l Partner Land is the perfect spot for the little ones, specifically designed to meet the needs of parents with small children.

Last, but not least, top off your good time with a taste of the mouth-watering foods served on the Midway, such as funnel cakes, turkey legs, candy apples and cotton candy.

Shops at the Rodeo

Shop till you drop at The Shops at the Rodeo marketplaces where over 250 themed retailers showcase their wares. There are three locations, inside Freeman Coliseum, Expo Hall and Expo Hall. Numerous hand-selected vendors showcase items such as home furnishings, accessories, leather goods, custom boots, clothing and jewellery. From shabby chic to old west, there is something for all tastes! You can also find other vendors located throughout the Stock Show grounds, in front of the barns along Freeman Blvd and on Bickett. These vendors feature agriculture related items such as tractors and horse trailers, fencing, hay bailers, irrigation systems, horse pens, cattle scales, animal feed and a wide array of agriculture supplies.

The San Antonio Stock Show & Rodeo attracts some of the biggest names in music. Each performance begins with a rodeo, which lasts just under 2 hours. After the rodeo there will be a brief intermission (about 20 minutes) followed by the concert. Tickets are available at a variety of price levels. All seats are reserved. From dropping into Parsenn Bowl or skiing the trees at Winter Park, to gliding through the snow-covered meadows at Devil’s Thumb Ranch or Snow Mountain Ranch, to exploring the winter wonderland of the western side of Rocky Mountain National Park, here’s how to experience the winter grandeur of Grand County.

Sitting in a high mountain valley, Grand County is surrounded by the Arapaho National Forest and three wilderness areas. It is a haven for downhill skiing, snowmobiling, and Nordic skiing in a picturesque setting. Fraser Valley was inhabited by both the Ute and Arapaho Indian Tribes and was discovered by pioneers around 1820. It has been a mecca for logging, mining, ranching, and the railroad since its first settlers arrived around 1850.

When Winter Park Ski Area opened in 1940, the railroad helped the ski industry flourish. You can take the historic ski train from Denver to Winter Park. On Saturdays and Sundays through March 25th, you can catch the Winter Park Express at 7 a.m. from Denver Union Station.

You’ll be at the base of Winter Park at 9 a.m. That’s a way to beat the I-70 ski traffic! The train leaves Winter Park on Saturdays and Sundays at 4:30 p.m. and arrives back in Denver around 6:40 p.m.

This year there are additional round-trips on the first Friday of February and March. There is a Hertz in Fraser if you want to rent a car or use the free county bus system.

Spend a Friday on the slopes of Winter Park Resort. It opened on January 28, 1940, Winter Park is Colorado’s longest continually operated resort. With seven territories, including the terrain park, Winter Park, itself, is grand getting over 29 feet of snow annually on its 3,081 skiable acres. Take the Cirque Sled to drop into serious steeps of extreme, double-black diamond terrain. Enjoy some phenomenal glade skiing in Eagle Wind. My favorite is dropping into Parsenn Bowl first thing in the morning. With the sun shining on the bowl, it looks like you are skiing on diamonds. Then, you get to wind through some glades for excellent tree skiing. You’ll grin ear-to-ear and laugh gleefully like I do if you ski Parsenn on a powder morning. Vasquez Ridge is another favorite. It takes a little time to get over there from Winter Park, but you won’t have crowds once there. You have to feel the “No Pain, No Jane” of bumps and glades on Mary Jane, the territory named after a

well-known madam and lady of the night from the mining and logging heydays of the late 1800s. You can’t call it a Winter Park ski vacation, without at least one time on Cranmer Run. On my three-day Grand Getaway, after I took a free ski lesson on Friday morning, that afternoon I traded my skis for snowshoes so I could get a different view of Winter Park. Plus, my legs were completely shredded from several hours of glade skiing. I re-fueled with a homemade soup at Back Bowl Soup Company in the Village. Do the Half and Half. You can’t go wrong with a great grilled cheese and roasted tomato soup.

Their Never Summer is a real winner too. Sneak in for breakfast to splurge on one of their cinnamon rolls. You’ll work off the calories on the slopes.

On the Winter Park Snowshoe Tour, you ride up a chairlift then take a relaxing walk back down to the base. You snowshoe on wildlife game trails and summer mountain biking trails through the forest as you learn about Winter Park’s history and native plants and animals.

It’s a great way to enjoy the serenity of the forest and learn something along the way.

A couple of other activities I highly recommend in Winter Park Resort – après ski with a margarita and fish tacos at Lime or a charcuterie board with a craft beer or wine at Vertical Bistro & Tap. Laugh until your belly aches as you zoom through the banked curves of the Coca-Cola® Tube Park, glide across the ice in the outdoor Village Ice Rink, and cruise up the mountain on a scenic snow cat tour. Do what my cousins and I did on our tour and have a mega snowball fight during one of the mountaintop view stops.

Enjoy après ski in Heck’s Tavern. It’s the liveliest spot on the ranch and bears a striking resemblance to the famous Timberline Lodge at Mt. Hood, Oregon. Sip on a craft cocktail and chow down on their Deviled Eggs with pickled radish and honey mustard aioli. Trust me, you’ll order a second round. Add a side of their to-die-for fries. You’re on vacation, go for the splurge!

Let the worries of the world along with the aches and pains of a day of skiing melt away with a restorative treatment in the Ranch Creek Spa. Relax in a fluffy robe with a cup of the ranch blend tea while relaxing by a crackling fire before or after you drift off to la la land in the Ranch Creek Spa Signature Massage, Head-to-Toe Honey Hydration Wrap, or Eminence Vitaskin Facial. I felt a million miles away during my massage at Ranch Creek Spa. It is the ultimate “Calgon, take me away.”

Restaurant and Saloon. They serve up elegant mountain fare like Rocky Mountain Stuffed Trout with braised fennel, sundried tomato, orange, and truffle wild rice. Try the Wagyu burger too. Devil’s Thumb has its own Wagyu cattle herd grazing on the ranch.

Some of the best Nordic skiing in the country is also at Snow Mountain Ranch. As you traverse the trails, don’t be surprised if you see Olympians-in-training gliding by you. The Nordic Center has more than 120 kilometers of skiing, snowshoeing, and fat tire biking trails.

Beginners can ski on short loops while experienced racers can train on longer trails with steeper climbs. You can rent gear from the Nordic Center and they offer lessons, including the Learn to Ski Package, which includes classic equipment rental, trail pass, and one-hour group lesson.

Snow Mountain Ranch is part of the YMCA of the Rockies. Stay in one of their lodge rooms or cabins. The accommodations are rustic, but comfortable. Snow Mountain Ranch will give your family great quality time together. You don’t have to leave the ranch for food. They serve up breakfast, lunch, and dinner in an all-you-can-eat buffet styledining hall.

From your cabin or while you’re out adventuring, keep an eye our for moose. They are frequently seen at the Snow Mountain Ranch. If you do see one or four, like I have on multiple visits, keep your distance.

Moose are not keen on people, but they are wonderful to watch from afar. Go fat tire biking, dog sledding, tubing or ice-skating. They also have a plethora of indoor activities including roller-skating, swimming, a climbing wall, and archery. Your kids will not get bored here!

If you’re interested in backcountry skiing, but have never tried it, take the Intro to Backcountry A/T (Alpine/Touring) Skiing. It’s a new program this winter and you’ll learn the basics including avalanche safety and

backcountry preparedness as you ski for about 3-4 miles.

Their snowshoe trails take you through a winter wonderland. Snowshoe to Rowley Homestead for a journey back in time to see what ranch life was like in the late 1800s and early 1900s. Write a note or prayer and put it in your coat pocket. Snowshoe to God’s Mailbox and place it inside. It is truly a snowshoe experience unlike any other.

Just a short drive from Devil’s Thumb Ranch or Snow Mountain Ranch is Grand Lake. Its winter claim to fame is the “snowmobile capitol of Colorado.” It’s also the only place where you can snowmobile through a small section of Rocky Mountain National Park. You can also explore the less-traveled side of the park on cross country skis or snowshoes.

My cousin and I braved frigid January temperatures to go on a “Ski the Wilderness in Winter” experience on a ranger-led cross-country ski adventure. Knowing the basics of Nordic skiing helps and you do have to bring your own gear or rentals. The Kawuneeche Valley is a serene part of Rocky Mountain National Park. Kawuneeche is Arapahoe for Coyote, so you’re cross country skiing in the valley of the coyote. It’s a ski outing with a lesson in the natural world as the ranger tells you about your surroundings.

On my ski adventure we started in the trees then traversed a beautiful meadow.

Needing to warm up and wanting to chow down on some great grub, we headed over to Sagebrush BBQ & Grill. With peanut shells on the floor and western décor, this is the go-to joint for barbecue in Grand Country.

Go hungry. They serve up a lot of food. The building was originally a jail in the late 1800s.

offered that day, go for that. Try the Wild Game Sausage Platter, Pulled Pork, House-Made Meatloaf, Sagebrush BBQ Buffalo Burger, or Rocky Mountain Elk Burger. For non-meat eaters, go for the Veggie Platter with four sides, like homemade baked beans, and cornbread or garlic bread.

On Sunday morning, we had a need for speed and revved up our adventure by going snowmobiling. Grand Lake is the only town in Colorado where you can cruise through downtown on a snowmobile. Our Grand Adventures guide, Snowmobile Steve took us for a spin through town then off to the only part of Rocky Mountain National Park you can snowmobile through. It’s just a couple of miles but the snow-covered forest is spectacular. We continued on into the Arapahoe National Forest. Since it snowed heavily the night before, we got to take a detour and let ‘er rip in an open meadow.

As soon as our snowmobile tour was over, we bolted over to go on the intermediate level ranger-led snowshoe tour. It started with a short snowshoe slide downhill into a world of snow covered trees. There was so much untouched snow it looked like giant pillows of snow on the ground.

Snow globe was the image that kept popping into my head as I listened to the crunch of the snow under my feet. This adventure is a workout with a big payoff. Adams Falls is only accessible by snowshoe in winter. You’ll stand in awe at the base looking up at the falls covered in snow and ice, then again as you climb uphill. You end up climbing above the falls with the 500-foot elevation gain quickly. That’s what makes it an intermediate tour and the effort is worth it for the stunning views.

After a day of adventure, time to relax with après ski and a soak in a hot tub to get ready for more winter fun on a Grand Getaway.

asked Bob to explain. See if Bob’s frustrating experience sounds familiar. Before he played, Bob went to the practice range to hit a few warm-up shots. Smooth swings and nice shots signaled great things to come. Confident, he could not wait to get to the first tee. Unfortunately, his first shot looked nothing like the ones just executed on the practice tee. He felt as if someone had shot him with a stun gun in the middle of his swing causing his ball to careen wildly off-line. The rest of his round followed the same erratic pattern. “I don’t know why I ever took up this tortuous sport” Bob reflected. “After all, this is supposed to be relaxing, right? Then why does a round of golf feel like being water-boarded by the golf course? I just don’t know what’s wrong?”

My guess is that many of you are nodding your heads right now. You, too, just like Bob, have wondered if you suffer from Multiple Swing Disorder.

So what do you do after one of these soul-twisting times on the golf course? That’s right, you head for the practice range to fix your ailing swing or even take a lesson for some needed help. You start hitting it better, and then it is back to the links only to repeat the same excruciating experience. And the cycle continues. Do not feel alone. Even the guys you see on television on Sunday afternoon share your experience. This is common to us all.

You may be surprised to learn that we have a lot in common with the Apostle Paul. What is that you may be wondering? Well, I’m guessing Paul must have been a frustrated golfer to write “For that which I am doing I do not understand; for I am not practicing what I would like to do, but I am doing the very thing I hate.” Who of us hasn’t wondered this? What keeps us from doing that which we want to do—that which I just proved on the practice range I know how to do? Good grief! What is going on?

What I learned from my own painful and expensive experience as a professional golfer is that I was trying to fix an internal problem with an external solution. I finally asked myself one day, “Okay Jim, you hit the ball fine on the practice range and then terrible on the golf course. Did you lose your swing on the short walk to the first tee in a time span of fifteen minutes or did something else keep you from

swinging the way you know how to swing?” I admit I am a slow learner, but that question started me thinking about what I had been doing all my life.

We all have what might be called our “outer game” consisting of what we do physically and mechanically in our swings. We also have what may be called our “inner game” consisting of our thoughts, attitudes and feelings. We can have a good “outer game” that will never work on the course and especially in competition if we have a poor inner game.

Most of us try to fix the outer game when it’s an inside job all along. Make no mistake, we need good fundamentals and all of us can improve our swings, but it’s all an exercise in futility on the golf course if our inner games are failing.

So what about Bob? Bob was, as usual, hitting beautiful shots on the practice tee, so I immediately invited Bob to play a hole or two to show me what happens on the course. Bob hit his tee shot down the first fairway leaving himself about one hundred forty yards to a center cut pin.

“What do you think?” I asked Bob. “Well, there is a ditch in front of the green, a lake to the right and a big bunker to the left of the green” Bob replied.

“Bob, you have just seen everywhere you don’t want the ball to go. Now I guess you are going to try to not hit it there. Is that right?” “Yes” answered Bob. “Bob, we need to take a new approach. Where do you want the ball to go?” “Left center of the green just short of the hole” Bob declared. “Good. Let me walk you through this, and do what I say as I say it. Start from behind the ball and focus on where you do want the ball to go. Walk to the ball aiming the clubface to your intended target. Take your grip. Take one look at your target. Make a smooth swing.” Bob followed my instructions perfectly, and to Bob’s amazement the ball flew straight to the center of the green.

Golf lessons for life: Remember to look at the target just in case you want your ball to go there.

Don’t try to fix an internal problem with an external solution. Know where the source of the problem is, and solve it there. It worked for Bob. It’s worked for me. It worked for Paul. I hope it works for you.

There are so many great things that need to be highlighted but, due to some recent tragic events I felt the first topic I needed to write about was depression. When it is ignored or untreated, it can truly lead to heartache and tragedy. So many of us in today’s world suffer from some sort of

depression at some time in our life. Most of the time, it is never as extreme as these recent tragedies but may still be extreme in other ways if gone ignored or untreated. It is not easy living in today’s world and some of us may not cope with problems as well as others and may become more depressed. Depression and mental illness can sometimes lead to loss of job, family, friends and tragically sometimes life. I felt so strongly about discussing this topic that I have

seen destroy lives that I wanted to bring our readers an expert on the matter. C.W. Roskelley is an author and leading expert on depression.

His book shares his own tragic story of depression and how he overcame it with God, change of heart and mind. For the first time, I am bringing in a guest writer to share his story and give us advice on how we can make changes in our lives to help us to stop the suffering that depression may cause.

Depression and the Incredible Power of Directed Thoughts: Turning Lemons into Lemonade All sorts of information filters through my email.

Most of it is deleted but some is enjoyed over and over again. One of my favorite video series is of babies and their expressions as they have new experiences such as holding a puppy or tasting a new food. One video in particular always brings a smile and a laugh as I watch the facial expressions of babies who taste, for the first time, a slice of lemon. Their eyes squint, their chubby cheeks elevate, their mouths pucker and often they get the uncontrollable headshake and shimmer, like I get when I take volatile tasting cold medicine. After watching a few of these babies and watching their reactions I not only laugh and smile but I find that I also begin to squint and pucker my lips. My salivary glands contract and I must swallow repeatedly.

I even seem to have the flavor of lemon in my own mouth - a similar physical, mental and chemical reaction as the babies, but without actually experiencing a real lemon. Just thinking about it, you also likely had some of the same symptoms as I. Interesting, isn’t it that just our thoughts can create for us a very real reaction, as if what we are thinking about is actually happening to us.

With the previous example it is not surprising that modern psychology has determined that the way we feel mentally, emotionally and physically is dictated by a very delicate balance of hormones, enzyme systems and neurotransmitters, known as a “chemical set point” and that each individuals chemical set point is influenced mostly by the things we allow on the stage of our minds. Holistic, hopeful and optimistic thoughts create for us a healthy and happier physical experience, and degraded thoughts, hopelessness and pessimism creates a chemical set point, which, if persisted upon, leads to unhappiness and ultimately toward mental and emotional disease.

One of the most recognized psychologists of our time, Dr. Martin Seligman writes in his book Learned Optimism, “Depression results from lifelong habits of conscious thought.” He explained that antidepressant drugs are among the most prescribed medications in advanced cultures. Dr. Seligman suggests that depression is an epidemic and antidepressant drugs an inadequate means barely holding back the prevailing flood.

Modern psychology has determined that the great depressants are thoughts of distrust, fear, unforgiving, selfishness, hopelessness, disdain, holding a grudge, regret, despair, anxiety, pride and anger-essentially all pessimistic thought patterns. The frequency of these thought patterns seem to be increasing in our selfish and

godless society where the dominant media and commercialism promote and exaggerate the baseness of mankind and morality. These thought patterns create a chemical change, which results in, degraded mental, emotional and even physical health. Prolonged uses of these thought patterns become our permanent reality-mental and emotional disease.

There are many forms of therapy used to combat mental and emotional disease: Cognitive therapy from a benevolent therapist is intended to change thinking patterns of clients. EEG or neurofeedback is intended to positively change brainwaves toward a more healthy state. All forms of mental and emotional therapy are intended to effect positive improvement by altering conscious thought patterns. Having experienced and authored descriptions of several therapy types I feel all are beneficial in the navigation toward wholeness; however we can do much in the way of effecting positive change for ourselves by understanding, recognizing and changing our own damaging thought patterns.

Modern psychology has also discovered thought patterns that improve the effectiveness of neurotransmitters, they influence youthful hormones for our benefit and elevate human physiology for our healing. The great discovery of the most effective anti-depressants are exercise, good diet, love, compassion for self and others, forgiveness, charity, service, gratitude and trust. Research has shown that the last three are potent, life changing, antidotes for depression: Find a way to serve a greater cause like humanity, country or God. Actively look for reasons to be grateful for life, employment or family. And most important search to find your divine origins and come to trust that God loves you and exists only to make you whole and happy, that his or her success and contentment is dependent upon yours.

The USS Iowa is a battle ship that weighs over 55,000 tons. The rudder, which steers the direction of this massive ship, is very small in comparison (less than .05% of the total weight/volume), but that small director sets the intention of that great ship and navigates its course across the vast oceans under all conditions. So it is with us, only a small change in our thought patterns will result in a significant difference in the course we experience in life and how long it takes us to reach our holistic harbor. Instead of saying “I am fat, tired and stupid” a small change in thinking and a more optimistic approach would be to replace those thoughts with “I can improve my physical appearance”, “I will feel better after…”, and “ I do not know, only because I have not yet been educated in that subject.” We need to have a more optimistic outlook and the result will be more joy and peace in our lives.

We can reverse the effects of mental and emotional disease and set a course for warmer, calmer waters by: 1. Avoiding damaging thought patterns like holding a grudge and judging others. Ignore the media barrage of death, doom and a powerless God. Spend less time tuned in to the negative volley of the world we live in and more time exposed to good literature.

2. Recognizing and taking personal responsibility for the thought patterns that make you feel ill.

3. Look for the possible good in all difficulty.

Look for solutions and look for personal growth opportunities. Stop looking at your problems as permanent and pervasive (impossible to overcome), there are always helpful solutions, you just need to look for them.

4. Serve the common good. Serve others, community, country or God. 5. Distract yourself from damaging situations by doing something active like exercising, going for a walk, a bike ride, dancing, or reading a wholesome book.

6. Look for reasons to be grateful. Write down 5 things you are grateful for each day. Research has shown that gratitude is one of the most potent antidepressants.

7. Trust in God, that he loves you and wants you to be successful and happy. Trust is very powerful and removes anxiety and worry.

In summary: Human experience is an effect.

Human thought is the cause. We think, and with those thoughts we create our world that we experience. It goes beyond influencing, shaping or guiding. We establish our own happiness or misery, we harvest in life, only and exactly what we sow in our minds. Take full accountability for your thoughts so you may turn those lemons into lemonade-something sour into something beneficial.
