Texas Hill Country EGG NOG

4 cups milk 5 whole cloves ½ tsp. of vanilla extract 2 cinnamon sticks 12 egg yolks

1 cups sugar 4 cups light cream 2 teaspoons vanilla extract ½ teaspoon pumpkin pie spice 2 cups light rum (optional) ½ gallon Blue Bell Pecan Pralines ‘n Cream

Combine milk, cloves, ½ tsp vanilla and cinnamon sticks in sauce pan. Heat over lowest setting. Bring to a slow boil; about 5 min. Beat the egg yolks by themselves until they are lighter in color. In large bowl, combine egg yolks and sugar. Whisk until fluffy. Slowly add hot milk mixture in to eggs. Pour mixture back in to saucepan. Cook over medium heat stirring constantly until thick. DO NOT BOIL. Strain to remove cinnamon sticks and cloves. Let cool for 1 hour. Stir in cream, 2 teaspoons of vanilla, rum (optional), and pumpkin pie spice. Refrigerate overnight. Add a ½ gallon of pecan Pralines ‘n Cream just before serving.
