Underground cafe offers gourmet eats By McKenzie Wedel

R

athskeller Café is situated in the basement of the former Keidel Hospital, which was built in 1893. With exposed rock walls throughout, it creates a unique eating experience in Fredericksburg. The cool and cozy confines create a welcome respite from the hustleand-bustle of Main Street. Seating is scattered around a semi-open kitchen and there are larger tables in more private rooms toward the back of the restaurant. Rathskeller offers a variety of foods from traditional German fare to steaks and seafood. “We sell our German food the most,” said Executive Chef Glenn Jung. “At lunch time, we sell a lot of the salads. We have several different salads like a Chateau Salad and the Greek Salad. In the evening, we sell more steaks and seafood.” The Chateau Salad features mixed greens with grilled chicken, egg, avocado, tomato and cheddar cheese. The Greek salad features mixed greens with grilled chicken, hummus, olive relish, red onion, feta cheese and a toasted pita. For more filling fare, there are German schnitzels, chicken fried steak and more. Jung prides himself in creating tasteful dishes that he hopes people will enjoy. “I want to create things that I think people will enjoy,” said Jung. “If it’s something that they rave about, that’s what I like.” His favorite dish to make is the Central Texas Ribeye. The hand-cut, 13-ounce steak is charbroiled and served over a bacon-jalapeño-portabella mushroom glaze and cheddar mashed pota-

Rathskeller is located at 260 East Main Street. A menu can be found at www.rathskellerrestaurant.net. They are open from 9 a.m. to 3 p.m. and from 5 p.m. to 9 p.m. Wednesday through Sunday. They are closed Tuesdays.

toes and green beans. The restaurant offers lunch and dinner specials throughout the week, and breakfast specials on the weekend, another aspect that Jung enjoys. “I like the specials, it allows me to create whatever I feel,” Jung said. “My big thing is sauces. I take the lemon pepper grilled Chilean sea bass and make a cilantro lime cream sauce and top it off with a cucumber avocado pico de gallo.” They also offer different wines from California, Italy and even some local wines as well as beer. On Friday and Saturday nights, the restaurant features local talent on the stage. Currently, keyboardist Rob Mahoney takes over Friday nights while harp player Emily Jumes lends her talents on Saturday nights. “I believe our quality is good and we strive to make people happy,” said Jung.

Look for the yellow fork and spoon for healthy dining choices

O

ffering “A Better Choice for Life,â€? the ÂĄPor Vida! program helps diners spot healthier menu choices in local restaurants. With a simple glance at a menu, diners are made aware of healthy entrees by a simple symbol: a yellow fork and spoon intertwined in the shape of a heart on an orange background. Registered dietitians work with local eateries to identify or create menu choices that meet the ÂĄPorVida! guidelines. Those guidelines guarantee an entrĂŠe and two sides total no more than 700 calories, 8 grams of saturated fat, 0 grams of trans-fat, 12 grams of added sugars and 750 milligrams of sodium. No fried foods, hydrogenated or partially-hydrogenated oils qualify.
