The team of Chefs at Diamond Point Catering offer a variety of contemporary items that no one else in Corpus Christi offers! Starting with quality ingredients, proven recipes and a dynamic team of professionals, the final creations are served up hot (or cold), with innovative presentations that raise the catering bar in Corpus Christi and South Texas. Diamond Point features an array of seasonal and custom menus. Some of Diamond Point’s custom options are the “Margarita Shrimp Pipette”, (you shoot a taste of margarita, while munching a cilantro and lime marinated grilled shrimp) and Chicken

Curry Cones, pairing our famous chicken salad with a light dusting of curry in a mini cocktail cone. Brian Campbell, the Director of Catering, actually built the serving vessels for these as he could not find one that fit his imagination. Imported from the east coast, the Edible Asian Spoons come in a variety of flavors that provide both sweet and savory options for dessert or passed salad course. Two innovative ideas that Brian has introduced to Corpus Christi is “Butler Passed, Shucked Oysters” and “Oysters 9 ways”. You will have to schedule an appointment to hear about how this works! Presentation is just as important as the quality of the food. Coming up with clever ways to serve traditional items is always a fun and exciting challenge.

Serving up the Grilled Vegetable Display in a giant fire pit or rustic drawers and candelabras always gets noticed. Cooking on-site and in front of your guests makes an impression too. “Pasta Shaken not Stirred” is a fun twist on your classic pasta bar. Keeping up with food trends around the world is a tedious job but someone’s got to do it! The team of professionals at Diamond Point catering are avid travelers, who love coming home with inspiration from a recent trip or experience that will add wow to their menu or events. Attending and producing local events, national conventions, statewide food shows and online research are just some of the ways they are leading the market locally. New trends we are preparing that continue to gain momentum at our events are Craft Cocktails, lots of fusion dishes and interactive food stations. Their philosophy is that if you constantly try to “out do” yourself, you will harness the passion, keeping the creative flame alive. Diamond Point Catering is the exclusive caterer at The Courtyard at Gaslight Square, but is also a preferred caterer at many other venues in Corpus Christi and the surrounding areas. Diamond Point offers full service planning, production and ndustrial catering too! To find out more about their services and to see photos, go to http:// Fall 2015

Tips for Brides & Grooms: Our advice is just that not everything will go exactly as planned. Bridal party members will disappear during pictures, you may have trouble with bustling you train, you may not get time to sit down and eat, or you may be like me and forget your bouquet when you walk down the aisle! This is okay. Just remember that this is your night and try your best to savor it. It will fly by before you know it. And then really all the little homemade details and touches, really making it a personal night. I feel that made a difference from everything we’ve heard from family, friends, and guests. It’s your day and it should represent who you are. Plans for your lives together? Right now we are working on Clay going back to school. For the next year he will be finishing up to become a certified wind turbine technician. After that we look forward to growing our little family together and traveling.

Mr. & Mrs. Easton Justin & Kelsey How did you meet? Online

college on the USS Lexington on the top deck.

First Date: Halloween, dinner and USS Lexington for the haunted house. It was a wonderful evening!

Best part of planning your wedding? Planning exactly what we wanted together. We had a lot of fun making our own decorations together and of course way too many Hobby Lobby visits!

When did you know you found the one for you? Bride: I feel like I knew from the very first date. He was a complete gentleman and went out of his way to make me smile.  Groom: When she didn’t break up with me during duck season! I was gone every weekend hunting but she was happy that I was happy.

Favorite Part of Your Wedding Day? Bride: My mom walking me down the aisle and seeing Justin looking incredibly handsome! He was so excited to see me and I remember telling my mom I could not stop crying! Groom: Finally seeing Kelsey walk out the door and down the aisle.

How did the Groom propose? Justin proposed the day before I graduated
