I have been well pleased with my advertisement in Postcards Magazine. I received so very many nice compliments from the story you ran on Laura’s Cleaning Services. I have several new customers because of the story. Two men called me up within a few days of each other laughing about the story about the crawl space and freezer chest. We laughed together. One customer called us in to do a deep clean (which includes cleaning the refrigerator & oven), taped to the freezer was a sign eye level that said “Don’t look in the freezer.“ I took a picture of the sign because it made us laugh. Getting to the ROOTS of the Matter Recently, my sweet husband and I had the blessing to attend a beautiful wedding down south of us in the Shiner area. On the way down, we were passing through Yoakum, which is the area where my Dad was born and raised. I commented to Wes that several family members were buried near there, including my paternal grandparents. Wes said we should go by to pay our respects since we weren’t in a time crunch. He asked me if I remembered where the graves were. I jokingly told him I did… ”The last time I was here, they were right on the other side of that tent.” He laughed and said something rude about the way my brain works. The day was gray and windy and COLD. I had no intention of staying long, but Wes was curious as to “who was who.” After I pointed out grandparents, aunts and uncles, (and my toes began to freeze), I headed for the car. Wes continued to explore, and took some photos of some very old, very interesting looking headstones. When he got back in the car, he asked me if I knew who Samuel Stevens was and showed me one of the pictures. I knew he was family, but didn’t know off the top of my head exactly where he fit. Thanks to FindaGrave.com, I was able to tell Wes that Samuel was actually my great-great grandfather! My Aunt Nancy Page is the genealogist in the Stevens family, and I know she has shared all this information with our bunch before. Maybe I was too young. Maybe I was too busy running after little ones. Or maybe at the time, I just didn’t think it was important enough to pay attention. Whatever the reason - good or bad - it was suddenly very important to me. Who were these people who were partially responsible for my being here? We continued to dig and to research. By the end of the weekend, we had visited four cemeteries and the graves of my grandmother and grandfather, great grandmother and great grandfather, two great-great grandmothers and grandfathers, two great-great-great grandmothers, AND a four time great grandmother! I think once you become a grandparent and begin to truly realize your own mortality, it makes you wonder if future generations will ever know about you. My brother Dan and his wife Kelli gave my mom the “Storyworth” gift. She spent a year answering a different weekly question about her life. I have thoroughly enjoyed helping her create the book these stories will become. It has reminded me of how incredibly special my parents are and how I want my children to remember that. I want them to know how much I loved MY grandparents and how amazing they were. Last weekend really drove home how amazing it is to know where you come from…how wonderful it is to know the stories of your family. I encourage you to write yours down.

Not long ago, I had a reader tell me “she felt like she knows me,” although we had just met. I am sure it’s because I try not to “put on airs” as my grandmother would say, and pretend to be something (or someone) I’m not. I’m just me. The great, great, make that grate-ful, granddaughter of men and women who were ordinarily extraordinary. How cool is that?

Gradylene Pate With grit and grace, with tenacity and a tender heart (AND at the age of ninety-two), Gradylene Pate has journeyed through life with energy and enthusiasm, and as Reverend Ellen Willett of the First United Methodist Church in Huntsville attests, “She has left everyone else sitting in the dust on many occasions!” Let’s meet this determined and energetic lady. 14 Postcards Magazine: Piney Woods Edition | April 2022

Please share some information about your early years. I was born in Dallas, was an only child, and loved music at an early age. In fact, one of my earliest memories was of standing on the kitchen table, entertaining all who would listen, with my best rendition of “The Good Ship Lollipop.” I was all dressed up and emulating one of my idols, entertainment sensation Shirley Temple, who was a couple of years older than me. I told my mother that I looked just like Shirley Temple, but a doubtful glance from her informed me she didn’t believe a word of it! I guess the only truth of it was that I loved to sing! I started piano lessons at age six, prior to our family moving to Houston a couple of years later with my father’s job change.

Your love of music was apparent at an early age. Did you accomplish some educational goals in this field? I graduated from Southwestern with a degree in math, and as you know, math and music have a lot in common. My husband Robert also graduated from Southwestern, then went on to Perkins School of Theology at Southern Methodist University. My plan was to teach high school while he got his degree, but upon meeting the superintendent, my plans changed. He informed me that I “looked younger than the high school students,” and if I would take twelve hours at SMU over the summer, he would hire me to teach elementary school in the fall, which I did. I later went on to teach high school math for several years as well. I looked a little older by then and could also stand my ground with that age group. I loved teaching, loved my students, and was thrilled to see them understand and excel in math.

It is told that you can still hit the high “C” when you sing. That is quite impressive! Well, there might be some exaggeration in that statement, but I can still come close to it. I started singing in the adult choir at my church in Houston when I was twelve years old. I love singing the old hymns, such as “Abide With Me” and “God Be With You Till We Meet Again.” In addition to singing in the church choir, our school choir would sing with other performing groups such as the Houston Symphony. After my husband graduated from seminary, he served at thirteen different appointments. One of these was in Winnie, Texas; while there and again, after moving to Woodville upon my husband’s retirement, I had the opportunity to sing with the Beaumont Interfaith Choral Society. This is a large group representing more than forty area churches and synagogues which performs major classical and contemporary works of the great masters. In addition to singing, I have also provided piano accompaniment in the various churches we have served in, as well as directed the choir when needed. Our first appointment happened to be here in Huntsville for two years at the Wesley Foundation.

We are certainly blessed to have you back in Huntsville. In what activities have you been involved since returning? I have been a member of the First United Methodist Church since 1998 and have enjoyed singing with the Chancel Choir. Occasionally, I will pick up donuts on Sunday morning to treat the college students at church, since they usually haven’t had breakfast. And, in the past, I have participated in a number of mission trips with the church. I enjoy reading. School teachers like to read! My late husband and I had two sons. Robert lives in Huntsville, and he and I enjoy lunch together every Sunday, either dining at home on his wonderful cooking or at a local restaurant. Our other son Larry lives in Buna. I also have four grandchildren and one greatgrandchild.

What advice do you have for a young person, or for that matter, a person of any age? Work hard! That’s the way you learn to do anything well. And it brings great joy to you as well. Stay active. I’m grateful I’ve had good health that has allowed me to participate in so many wonderful experiences.

We will now hear a few thoughts about you from a friendly admirer, Reverend Ellen Willett. Reverend Willett, please share some thoughts and fun facts about Mrs. Pate. I have known her for many years and would love to. She is generous to a fault and never asks for help nor complains about anything. She is always generous with her time and talents and kind to sing whenever asked, whether it be for a funeral or other special event. We always loved having her on mission trips, and as already stated, her energy level and work ethic would leave many of us sitting in the dust! She not only outworked us, but would do the tougher tasks we shunned, such as climbing a tall ladder to the roof of a building. She would paint, clean, and do any task that needed to be accomplished. And she did all this while being the oldest person on site! We

took a mission trip to Nashville, and as we gathered together in the morning to leave on the bus, here came Gradylene, walking across the parking lot pulling her roller bag behind her. She had not wanted to leave her car parked in the church lot while gone, nor did she want to trouble anyone to come and pick her up from her home several blocks away. While on this trip, we slept on cots in the church gym. Gradylene was always up early, her bed made to perfection, pillow fluffed, and she, ready for action. If a piano were available, she would practice for an hour or so, something she has always enjoyed doing. She is generally quiet, but will let you know in a firm way how she feels about something. In other words, she tells it like it is, in a nice way of course. And although you would never know this from her petite figure, she loves sweets! I would always do the cooking on mission trips, and she invariably asked, “What’s for dessert?” Gradylene is a pure joy to be with. Our church is blessed to have her!

Know Your Amendments Like a Pro Have you ever stood at the back of the garden center and stared in amazement at seemingly endless shelves of products for soil amendments and fertilizers? They appear to say basically the same thing, but not quite; you are really confused and do not want to read every label.

Blood Meal – 12-0-0, is a slow-release natural form of nitrogen. Application rate - 2 lbs per 100 sq’ for deep green growth on all outdoor shrubs and trees. It is used especially on pansies or any plant requiring an organic nitrogen base.

The following is a short run-down of basic amendments:

Bone Meal – 0-10-0, Is a slow-release natural form of phosphorous. Promotes sturdy roots, blooms, and fruit/vegetable yield. Bone Meal stimulates growth and maturity of plants and is most often used on bulbs. Apply 2 tsp. under bulb when planting.

Ammonium Sulfate - 21-0-0, Fast release nitrogen for rapid green up and growth in lawns. Ammonium Sulfate makes soils more acidic; especially used on pecan trees and blueberries for fertilization. Pecan trees – Use 1 cup per tree every 30 days in April, May, a Nitrate of Soda nd June on year 1, and 2 cups per tree on year 2. Mature trees will require 2 cups per every inch of diameter and apply 3-5’ away from the trunk. Blueberry bushes will require 8 tbsp per plant every 30 days beginning in April – June. Apply 18” away from trunk and water in well. Compost piles – Great accelerator for a home compost pile. Apply 1-2 lbs per 10 sq’ and to each 6” layer. Aluminum Sulfate - Creates acid conditions in soil; used often to correct alkaline soil without a heavy dose of nitrogen. Aluminum Sulfate is commonly used to turn hydrangeas a deep periwinkle blue. Apply in March and April for blue hydrangeas in May.

Gypsum – Fast-acting gypsum is used to help loosen compacted soil and repair salt damage. Quickly aids in allowing better air circulation and water penetration for better root growth and deeper roots. Gypsum is excellent in treating animal urine spots and stopping harm from urea. Apply 1 lb, per 250 sq,’ on lawns or 1 lb, per 100 sq,’ in a garden. This is a definite “go-to product” for creating beds around new homes with thick contractor’s clay around foundation. Iron Sulfate – AKA copperas. Iron Sulfate will correct chlorosis or yellowing of the leaves caused by lack of iron. Chlorosis is most often seen in gardenias, azaleas, and nutrient-poor soil. It also aids in creating an acid environment. 4 lbs covers 1000sq or 1 lb per 250 sq’.

Magnesium Sulfate – Contains a soluble source of magnesium for chlorosis and blossom end rot. Magnesium Sulfate will also create white hydrangeas when color is not desired. Apply at the rate of 1lb per 100 sq’. Nitrate of Soda – Fast-release nitrogen without acid base. Zinc Sulfate - A dry formulation of zinc for application around fruit trees. Corrects deficiency that causes deformity of fruit, prevents and corrects Rosette on pecans. Foliage spray: 1 tablespoon per 3 gallons. Soil treatment: 1-3/4 lbs. per inch of diameter. Zinc sulfate is commonly used to control rosette on pecans….. apply ½ lb for every ½” of trunk, in April, May, and June.

Most independent garden centers will use the Fertilome or HI-Yield brands for several reasons. Their products are generically labeled to bring the consumer price down (like generic aspirin), and both brands are made in Texas and formulated for Texas climate and growth. So, the next time you are shopping, you will be armed with all the info needed to be a pro. Many of the HI-Yield products are lower in cost than known brand names, and the above amendments are used when consumers come in with results of a soil sample that needs to amending to grow successfully. Last month, Postcards Magazine had the exclusive privilege of debuting the new single of country artist Elle Townley on PostcardsLive.com. The song, “One Too Many Heartaches,” eloquently shares the idea – hearts may break, but there is always hope for healing. It’s a powerful message from a very young artist. When you hear her voice, it is hard to believe she is only 13 years old. We visited with the 8th grade singer from Georgetown, Texas about her incredible path so far in the music business and where she hopes her journey will take her.

We often start by asking people to tell us about growing up, but you are still growing up. So, where do you call home? And please tell us about your family. I was born in Round Rock, but in 2018, I moved to Georgetown. I live with my mom and dad and have two older sisters. My oldest sister lives in England, and my middle sister is a senior at Texas A&M. I also have a gray cat named Ellie and a spotted one named Penelope.

When did music become part of your life? I have been singing as long as I can remember. Friends and family would hear me sing and tell my parents they needed to get me into singing lessons. So, I took my first singing lesson at age 6, and I’ve been singing ever since. Music has always been inside of me, but in the 4th grade I decided to start writing lyrics and songs, and in 5th grade I went to Nashville and had my first songwriting session. That’s when I realized and proved to myself I could do this. I picked up guitar about three years ago. I’m always excited to get the chance to perform – it’s something I really enjoy doing.

When was your first performance? My first performance was at Round Rock Market Days, and I was terrified. I was 8 years old. But my parents gave me some good advice. They told me I shouldn’t let fear get in the way of doing what I love, and that’s singing. And seeing the faces of people that day changed my life.

Who are your musical influences? I listen to so many different genres of music. I really like country the best. I like old country, but I like some of the new stuff as well. My main influences would be, first, Miranda Lambert. First of all, she’s a Texan, so you’ve gotta love her. She has awesome lyrics. They are so descriptive, and she has a sassy attitude. I also love Hardy. He’s just an incredible

So, your first writing session was in 5th grade? Yes, I was 9 years old, so it was really nerve wracking to talk about deep feelings and put them into a song. But after that session, the rest of them were so fun, and songwriting is like therapy for me. So, it’s really easy for me to put my feelings down on paper now.

songwriter and really paints a picture with his words. A lot of big artists cover his songs, so that’s really cool. And I love Carrie Underwood. She just delivers so much power, even in her softer, slower songs.

Has anyone ever told you that you sound like a young Kasey Musgraves? My producer has said exactly that.

How would you describe your sound? I listen to a lot of music, and I perform some rock songs and some modern country and old country – so I don’t know if there is an exact genre that I fit into, but I would say contemporary country is the closet.

You’ve been singing for several years already. What do you consider your biggest accomplishments? My biggest accomplishment would be recording the singles that I wrote, but I have also done a lot of competitions here in Texas. I did the Old Settler’s Music Festival and won the youth talent competition. I get to go back and perform on the main stage in April. And I was a Top 5 finalist at the Houston Rodeo Rockstar competition in 2020 before it got shut down because of COVID.

Let’s talk about the brand new single, which we were pleased to get to debut for you at PostcardsLive.com and our Facebook page. The song is called “One Too Many Heartaches.” I cowrote this song with Britton Cameron. It’s about how much it hurts to be heartbroken. Originally, I wrote it about an experience with a friend, but when I took it to my cowriter, we put a romantic spin on the song. There is a line that says, “I will keep these walls down if I can keep you around,” and I really wanted to communicate that I will be vulnerable for that person if they promise not to hurt me; so that’s a really important line to me. So far, I’ve gotten great feedback.

What do you hope people feel when they hear the song? This song has a dual meaning. I wanted the person I originally wrote

Tell us about your friends. My friends are really supportive of me. I am really glad I have the friends I do. It took me a while to find the right ones. They come out and support me at my gigs. I really love having them in my life.

What musical goals have you set for yourself? “I want to continue to grow as a songwriter and musician and master my craft, but one day I hope to be playing sold-out stadiums with everyone singing along with me to one of my songs. That would be my dream come true.

As a Postcards Texas Talent artist, let’s talk Texas. What are some of your favorite things about the Lone Star State? There are so many amazing places in Texas. I really enjoy South Padre. The beaches are so peaceful, and I enjoyed the time with my family there. And you can’t go wrong with the barbecue in Texas. Black’s BBQ is so good!

What would people be surprised to learn about you? I really enjoy studying Latin. It is a really cool language because you can see what English is made from.

Best advice you’ve ever been given? Everyone tells me to learn as many songs as I can – covers – and those will help me write my own songs, because you learn from those.

You are so articulate. It’s hard to believe you are in the 8th grade. What advice would you give other young people who want to follow a dream? I would say what my parents told me – don’t be afraid to go after your dreams. I don’t think it really matters how young you are if it’s something you really love to do. Just go for it. If it makes you happy, that’s what you should do.

DEAR GABBY Why, oh why, do I have to continually change the passwords on my computer programs? Some sites will still take the password I had three pets ago, and some seem to be temporary and have to be changed every time I try to access the site. I am not a young person, and I could remember a few, but each program has different password criteria. I know it’s for my own good, but my identity would not be an improvement to anyone’s. Any ideas? BETTER SORRY THAN SAFE

DEAR B S T S Ideas, yes. Solutions, no. All my passwords are protected by senility. I tried using the required letters and numbers and came up with “14days”, but it was two week. Then I tried “beefstew”, but it’s not stroganoff. I had one site with a requirement of eight characters and a number, so I picked Snow White and the 7 Dwarfs. Nope, that didn’t work. I finally got so frustrated that I typed in all the naughty words I have ever heard, and guess what? That username was already taken! I gave up. GABBY

Although it was meant to be a secret, Sally Van Dyke wasn’t particularly surprised when the Brenham High School Band arrived in her yard in February 1954 to announce that she had been selected as junior queen of that year’s Brenham Maifest. After all, why else would she have been whisked away under cover of darkness several weeks before to visit the home of a local seamstress? “The lady that was going to make my dress and my train had to get started,” Sally explains. After being announced as junior queen, she recalls riding to the home of the senior queen, who was surprised. “She was in the band, and she had on her band uniform. She changed her clothes and put on a cute little party dress.” Sally has many other Maifest memories. A lifelong resident of Brenham, her family has lived in the town for generations (One ancestor fought in the Battle of San Jacinto and then moved his family to Brenham.). “My dad was the first junior king, and my mother was a senior queen, and both of my children (son and daughter) were king and queen at some time, and all four of my Brenham grandchildren,” Sally says. “We have a lot of stories.” Throughout the decades, Maifest has provided the Van Dyke family with a constant reminder of the goodness of small-town life.

Celebrating youth

For centuries, Germans celebrated spring during the month of May, often by building maypoles, which townspeople danced around, and by holding festivals. When German immigrants settled in Brenham in the 1800s, they brought the ancient tradition of Maifest (pronounced “Mayfest”) with them. Brenham’s Maifest traces its heritage back to 1874, when townspeople begin holding an annual Volksfest (folk festival). In 1881, the festival officially became Maifest. Except for a few years during the two world wars, Maifest has been held every year since 1881. Over the decades, countless Brenham residents—as well as out-of-town visitors—have enjoyed the festival’s small-town charm, warm hospitality, and German flavor. Brenham’s Maifest is often recognized as being the oldest festival in Texas. It all begins each January, when the year’s royalty is announced. The junior king and queen are elementary school age, while the senior king and queen are typically seniors in high school, Sally says. The kings and queens then climb aboard a Brenham Fire Department truck for a cruise around town, and the year’s Maifest tradition comes to life once again, promising to provide memories for the younger generation of Brenham residents.

Catherine Kenjura remembers her very first Maifest when she was just three years old. “I was what is called a train bearer for the queen,” she says. “I remember being in the parade and waving at people.” She also remembers “moms gushing over us and getting us ready.” She participated at Maifest “from three to 18 and every year in between,” she says. Today, Catherine is the president of the Brenham Maifest

She invites Brenham residents, as well as out-of-town visitors, to this unique festival. “It’s a celebration of youth,” she says. “It’s really about kids and watching the community come together and use their talents to put this on,” as Brenham residents become costume designers, script writers, choreographers, float builders and more. This year’s Maifest will be held Friday and Saturday, May 6 and 7, with an early start on Thursday, May 5 for a carnival. “Parents like it, because it’s not enormous. It feels really safe,” Catherine says. The theme for junior participants this year is “Lights, Camera, Action! Maifest 2022”; the theme for senior participants is “And the Award Goes to. . . Maifest 2022.” The themes will influence the festival’s entertainment and parade floats, as well as participants’ costumes. “There will be lots of movie characters,” she says.

Catherine suggests attending the downtown parade on Saturday morning at 10:30, then heading to Fireman’s Park, where, according to Sally, Maifest has been held “forever and ever and ever.” There, Catherine says, visitors can eat lunch and sample some “German soda water.” (The Texas chapter of the Zythological Society of North America will provide beer tasting.) Vendors will sell food, including authentic German cuisine, as well as crafts and other wares. 100 years old. And of course, there is the Maipole, based on a Bavarian design that dates back to 1762. A traditional dance around the Maipole kicks off each year’s festivities. During the day on Friday, and again on Saturday, local residents will pool their talents and efforts to set the stage for each evening’s coronation. (The junior coronation is on Friday night; the senior coronation is on Saturday night.) Groups of children of all ages will perform song and dance routines they have been dutifully rehearsing. As the evenings progress, cover bands will provide music for dancing. On Friday night, Royal Dukes Band will play its blend of high-energy rock, pop and country. On Saturday night, The Common Ground Band will play its self-described “southern rock country blues.”

Held on the first weekend of May, Maifest typically coincides with Mother’s Day weekend, and is a good opportunity for those who have moved away to return to their roots. Although Sally says Maifest participation has “ebbed and flowed” over the years, the tradition continues. “It is always fun,” she says. Past kings and queens are encouraged to attend and are recognized when they return to Maifest. One year, she says, dresses of former senior queens were modeled by girls who participated in Maifest that year. Sally has seen Maifest evolve over the years. For example, in the past, talented local seamstresses made costumes for children in keeping with the year’s themes, but today, many costumes are ordered online. In addition, Serenade (the announcement of the year’s kings and queens) is now held at a local park’s amphitheater instead of the front yards of the newly-recognized royalty. However, many traditions remain at this annual event. Sally appreciates the emphasis that is placed on the young people of the community. She remembers years when there were hundreds of participants, yet “every child walked down the walkway; every child was introduced by name and took a bow,” she says. “To me, that is one of the special things about Maifest during the years. How many people in the U.S. get to ride a float and go through town and wave? How many get to walk in a coronation and get individually introduced?”

Slow Cooker Pineapple Pulled Pork

(Polish dish combining bacon, fried cabbage, and egg noodles.)

Ingredients

1 (3 lb) boneless pork butt roast

1 lb bacon 1 onion, diced

1 (20 oz) can unsweetened crushed pineapple in 100% pineapple juice

1 (16 oz) pkg egg noodles

2 Tbs minced garlic

1 head cabbage, sliced

2 Tbs ground cumin

salt and ground black pepper to taste

2 tsp kosher salt 1 tsp red pepper flakes 1 pinch freshly ground black pepper to taste

Directions Step 1: Snip bacon into small pieces with a scissors and cook in a large skillet over medium heat until crisp, stirring often, about 10 minutes. Cook and stir onion with bacon until translucent, about 5 more minutes; set bacon and onion aside, leaving drippings in the skillet. Step 2: Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain.

Directions Step 1: Place pork roast into a slow cooker. Combine crushed pineapple, garlic, cumin, salt, red pepper flakes, and pepper in a bowl. Pour over pork roast. Cover slow cooker. Step 2: Cook on Low until pork roast is cooked through, about 8 hours. Remove pork roast from slow cooker, cut off any fat, and shred the meat using 2 forks. Return meat to the slow cooker and mix with the juices.

Step 3: Transfer bacon and onion mixture with drippings into the pot used to cook the noodles and cook and stir cabbage until coated with drippings. Cover pot and cook until cabbage is tender, 10 to 12 minutes, stirring occasionally. Gently stir in noodles and season to taste with salt and black pepper.

Chef’s Notes: If you like, you can crisp up individual servings of shredded pork in a skillet over medium-high heat, no oil necessary.

Cold Chicken Macaroni Salad Ingredients 2 each skinless, boneless chicken breasts, diced 4 cups elbow macaroni 4 large eggs 1 cup mayonnaise, or more to taste 4 tsp white sugar 4 tsp white vinegar 1 tsp onion salt 1 tsp salt 1 tsp prepared yellow mustard

about 8 minutes. Drain and rinse under cool water. Step 3: At the same time, place eggs in a saucepan and cover with water. Bring to a boil, remove from heat, and let eggs stand in hot water for 15 minutes. Step 4: Remove eggs from hot water and hold under cold running water to cool. Peel and dice eggs. Step 5: Mix mayonnaise, sugar, vinegar, onion salt, salt, mustard, and pepper together in a large bowl. Mix in diced eggs, pasta, and chicken, adding a little more mayonnaise if too dry. Chill for at least 1 hour, or up to 8 hours or overnight before serving.

Step 4: Bring to a boil over high heat. Boil and stir until sauce is thick and shiny, about 2 minutes. Set aside 1/3 cup strawberry sauce; cool. Cover and refrigerate remaining sauce for serving.

Step 5: Beat cream cheese in a mixing bowl with an electric mixer until light and fluffy; gradually beat in condensed milk. Mix in lemon juice and vanilla extract, then beat in eggs on low speed until just combined. Pour half of cream cheese mixture over crust; drop half of reserved strawberry sauce by 1/2 teaspoonfuls on cream cheese layer. Carefully spoon remaining cream cheese mixture over sauce; drop remaining strawberry sauce by 1/2 teaspoonfuls on top. Cut through top layer only with a knife to swirl strawberry sauce. Step 6: Bake in preheated oven until center is almost set, 45 to 50 minutes. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Serve reserved strawberry sauce with cheesecake. If the sauce it too thick, stir in water.

Chef’s Notes: Lighter and creamier than many cheesecake recipes. As an alternative, try vanilla wafers crumbs for crust.

at a time, until mixture holds together when you squeeze it. Wrap with plastic wrap and let rest in refrigerator for at least 2 hours.

Cover lightly with plastic wrap and refrigerate. Roll out remaining dough into a 10-inch circle and cut into lattice strips.

Step 4: In a medium saucepan, combine cooked rice, milk, orange zest and 1 tablespoon of sugar. Cook over low heat, stirring frequently, until mixture is creamy and thick. Remove from heat. Whisk 3 egg yolks with 1/3 cup sugar in a large bowl. Gradually add hot rice mixture, about a cup at a time, whisking constantly. Stir in ricotta cheese, cooked raisins and cinnamon. Add vanilla and orange flower water. Let mixture cool to room temperature.

Step 7: In a large glass or metal mixing bowl, beat egg whites until stiff peaks form. Fold 1/3 of the whites into the batter to lighten it, then quickly fold in remaining whites until no streaks remain.

Step 5: Preheat oven to 350 degrees.

Step 9: Bake in preheated oven for an hour, or until pastry is golden brown. Cool at room temperature for about 4 hours, then keep refrigerated.

Step 6: Roll out 3/4 of the pastry dough into an 11-inch circle and line the bottom and sides of a 9-inch springform pan.

Step 8: Pour filling into dough-lined pan. Criss-cross the lattice strips over the filling. Seal the lattice strips to the bottom pastry edge.

The store is an experience in itself. The aroma of hot, fresh brewed coffee fills the air, free samples of all things pecan (including coffee) are ready for tasting, and a toy train track runs along the bottom of wooden shelves that line the walls. Outside the store, visitors can even get a glimpse of old luxury passenger train cars, including a former Silver Hyacinth sleeper car and Seaboard luxury dining car. Although the inside of the cars are not currently used or able to be toured, they make an interesting novelty for customers. While the pecan company has had several owners through the years, Clint and Hannah Craycraft are the current owners and operators of Rattlesnake Ranch Pecan Company. Currently living in Huntsville, they are both Houston County natives, graduates of Texas A&M University in College Station, and grew up in local family-owned businesses themselves. “Growing up in families that owned businesses, we found many aspects of owning and operating a business of our own together appealing,” said Hannah. “We began researching different opportunities and decided to pursue the pecan business, which was located in the town we both grew up in.” After getting married in 2017, they bought the business that same year and now work with their

desks five feet apart, except when Hannah is busy taking care of their three-month-old son Cal. “We intentionally create a customer experience,” said Clint. “We like our customers to come in and stay a while. Texans really like their pecans, and they also love to tell stories about sitting around and shelling pecans. We really enjoy meeting and getting to know our customers. We come to think of them as friends and family.” When asked about some of his most notable encounters at the store, he smiled as he talks about the dad of Texas A&M University quarterback Haynes King. They were on their way to the football game and stopped in the store.“We meet a lot of cool people, and there is a lot of outof-town and out-of-state traffic from people travelling,” said Clint. He also recalled meeting a foreign exchange student from Indonesia, who came to the store and had never seen a pecan before. From basic raw pecans (native and papershell) to deep dark chocolate covered pecans, the pecan possibilities are endless. They offer a variety of flavored pecans and other pecan inspired goodies such as: pecan butter, pecan coffee, pecan syrup, candied pecans, pecan pralines, and (of course) traditional made-from-scratch southern pecan pies with their own custom-branded wooden box for shipping. “It’s a wellknown place in East Texas. I’ve given out the pecans as gifts in college and have been given them as a gift as well,” said Clint. So what makes their pecan products so special? Clint says they make sure only the best pecans are sold to their customers. “We harvest pecans from the ranch when we can, but we also source out part of our pecans from different places to make sure we have the freshest pecans for our customers,” explained Clint. “There have been times I have sent back trailer loads of pecans because they weren’t up to our standards.” Clint says to ensure that high level of quality, he samples the products before they ever go to the customers. “Quality makes us different – you can’t beat it.” While pecan lovers will have an abundance of products to choose from, the store has other unique items. Mason jars are filled with southern sliced peaches, sliced green tomatoes, quail eggs,

Hannah takes care of most of the store’s marketing and customer service, while Clint takes care of daily operations and making sure they have the best pecans to sell in the store and ship out to customers. “Hannah loves to help people and take care of them. She really enjoys the customer service side of it,” said Clint.

Along with the storefront, ecommerce is a large portion of their operation. On average, the company ships out 400 packages of pecans a day from its 10,000 square foot warehouses across the highway. While their busy season runs through the months of November and December, Clint says they are constantly shipping out corporate gifts (including custom tins with corporate logos or custom branded pie boxes), wholesale orders, and packaging products for various fundraisers. They’ve shipped all over the United States and internationally to France, Mexico, Canada, and Guam. An ecommerce customer Clint proudly mentions is Texas songwriter Robert Earl King, who sent the company a handwritten thank you note and gift box after ordering their pecans.

While Rattlesnake Ranch Pecan Company may be found along a desolate stretch of Hwy. 21, for those travelling, it is a sweet surprise of nostalgia--with rockers sitting outside welcoming visitors to sit and stay a while. Rattlesnake Ranch The Rattlesnake Ranch Pecan Company store and gift shop is surrounded on both sides by the ranches that gave it the name Rattlesnake. While the Craycrafts own and operate the pecan company, the ranches are owned by Randy Parten, formerly of Madisonville, and other Parten family members, along with nonfamily individuals. The Seven J/ Rattlesnake Ranches encompass 20,000 acres

of rich farmland and ranchland in the Trinity River Valley. Randy Parten currently calls the original ranch, Seven J, his home. His father, J. R. Parten, a native of Madisonville, bought the first 11,000-acre parcel of Seven J in 1948 while exploring for oil and gas. He later bought the adjoining Rattlesnake Pasture (now known as Rattlesnake Ranch) in 1959, which now encompasses about 9,000 acres. Both ranches produce oil and gas as well as pecans, cotton and grain, and Brangus cattle owned by SRR Ranches. Both the store and the Seven J headquarters are located 19 miles southwest of Crockett on Texas Highway 21, the original El Camino Real. Most of Rattlesnake’s trees are native pecans, some of which existed when Davy Crockett

and others made their trip to San Antonio to fight at the Alamo in 1836. Seven J’s hybrid orchard was first planted in 1992 to add hybrid pecans to list of products with 5 varieties: Pawnee, Kiowa, Choctaw, Desirable and Cheyenne. Parten said these varieties grow best in East Texas and are grafted onto native pecan rootstock to produce larger and more desirable pecans. While the hybrids provide the beautiful nuts seen on a fresh baked pecan pie, the small native pecans contain a higher oil content (and some believe better flavor). The pecans are harvested mechanically from October until January. Parten said Rattlesnake and Seven J added the pecan store in an abandoned cotton gin on the property in 1995 to allow customers to get the best and freshest pecans available.

Wildlife Wonders GOING HOG WILD By Cheryl Conley

If you’re new to Texas or a city-dweller, you may not be familiar with feral hogs, also known as wild pigs. Growing up in South Dakota, I was accustomed to seeing hogs being raised on farms, but soon after moving to an acreage near Houston, I became very familiar with feral hogs.

Pigs were first introduced to the United States as free-ranging livestock by Spanish explorer Hernando de Soto in 1539 when he landed on the Florida coast. Some of the pigs escaped and became feral.

Wild pigs are considered an invasive species and one of the most destructive and dangerous species in the United States. Invasive species have two main characteristics: they are non-native to the ecosystem, and their existence causes or is likely to cause harm to the environment or human health. Wild pigs can be found in at least 35 states. Currently, the wild pig population in our nation is estimated to be over 6 million. Texas Parks and Wildlife estimate there are over 1.5 million in Texas, making Texas the state with the highest population. Sows average between five and

six pigs per litter and have an average of 1.5 litters per year.

Hogs have four tusks (two on top and two on the bottom) that are used for defense. The lower tusks are referred to as cutters. They’re very sharp at the tip and are used to tear into a rival or predator. The upper tusks are called whetters (taken from the word “whetstone”, a sharpening tool) because these tusks help to sharpen the lower tusks. They leave a path of destruction in their search for food.

Feral hogs will use their tusks, snouts and hooves to tear up the ground in search of food. They are omnivores They eat grubs, worms, roots, nuts, and small insects. I’ve even read that they will kill and eat fawns. They are nocturnal, so you may never see them, but the damage they leave behind will let you know they’ve been there.

In addition to destroying fields and yards in search of food, wild pigs carry transmittable and zoonotic diseases--including rabies, swine brucellosis, and E. coli bacteria, Domestic pigs, humans, and pets can catch these wild hog diseases. During the summer of 2021, I (as well as many of my neighbors) experienced firsthand the damage they can do. Our lawns looked like they had been recently plowed, and my sprinkler system was even damaged. This happened numerous times. I researched how to get rid of them and came up empty-handed. One article I read said to remove their food source. Well, I can’t remove my lawn! The article also said that pigs can be hunted. That’s wasn’t going to happen. The solution for me was to fence my yard. Ten thousand dollars later, the problem was resolved. If you’re dealing with wild pigs, all I can say is that I feel your pain! They are indeed a nuisance.

Influenza in Horses Influenza (EIV) in horses is highly contagious, and the virus spreads rapidly through groups of horses in aerosolized droplets dispersed by coughing. The severity of clinical signs depends on the degree of existing immunity, among other factors. The disease is sporadically introduced to herds or barns by an infected horse or by contact with virus-contaminated feed and water buckets, tack, grooming equipment, and even clothing. Horses that are partially immune can become sub-clinically infected and shed virus. Immunity following vaccination with inactivated influenza vaccines can be short-lived, allowing recently vaccinated horses to become infected and shed virus, thereby contributing to maintenance and spread of infection within the equine population. For these reasons,

only vaccines of proven efficacy should be selected for use. Equine influenza, caused by the H3N8 orthomyxovirus, equine influenza A type 2 (A/equine 2), is one of the most common infectious diseases of the respiratory tract of horses. To date, the most important factors associated with increased risk of infection have been identified as: 1. Age: Horses 1 to 5 years old are more susceptible, although a recent study demonstrated an increased incidence of EIV among older horses (6-10 years old) and horses previously vaccinated against EIV within the previous 12 months. These results help support the belief that immunity to EIV can be overwhelmed in horses frequently exposed at shows or similar athletic events or when the current strains of EIV circulating within a given horse population become antigenically distinct from the vaccine strains contributing to incomplete clinical protection. 2. Frequent contact with large numbers of horses. The clinical signs of fully susceptible horses include: fever, depression, harsh dry couch, loss of appetite, nasal discharge, and muscle pain and/or weakness. Though clinical signs may resolve within 7-14 days in uncommlicated cases, it can take up to 6 months to completely eliminate the disease. A diagnosis of influenza A used to be presumed based on history, clinical presentation, and by ruling out other causes of fever, cough, and nasal discharge (i.e., strangles, bacterial pneumonia). Now experts recommend using the available technology to identify the exact cause of the infection. Accurately diagnosing the cause of respiratory disease is an important step in implementing proper management practices and controlling disease spread. An accurate diagnosis also is important for the industry to determine efficacy of the existing vaccines. Equine influenza infections are generally self-limiting, and no specific treatment exists. Owners should isolate affected horses from healthy horses and institute general supportive care. This includes encouraging the horse to eat and drink and administering non-steroidal antiinflammatory drugs as prescribed by a veterinarian to control high fevers. Resting affected horses (typically one week for every day of fever) is imperative. Contact your veterinarian if your horse shows any symptoms consistent with EIV. They can help to control symptoms and possibly reduce the risk of any secondary infections becoming severe.

Gordon’s contentions, none of which were supported by research or historical evidence, were taken up by the entire mental health professional community. Aided by the mainstream media, Gordon and his disciples completely altered America’s approach to childrearing. Fifty years into this social engineering experiment, it should be obvious that the paradigm shift in question has been nothing but bad for children, families, schools, and culture. “Because I said so” authority is nothing less than legitimate, as affirmed by the fact that since the paradigm shift in question—from “Because I said so” to “Will you do it, okay?”—every marker of positive mental health in children has declined, and significantly so. The children who are doing the best—emotionally, socially, and educationally—are those whose parents are not playing by the new rules, which boil down to “Keep your children happy at all cost.” My wife and I awakened to common sense—which had been coaxed into submission during my graduate school experience—when our kids were 10 and 6. One expression of our revived common sense found two children who had been on “family welfare” doing nearly all the housework, and for no reason other than we told them, in no uncertain terms, they were going to do it. Did they like the new regime? Absolutely not! They complained bitterly. But they did their chores, and they will tell you today their household responsibilities were indispensable to their successful adulthoods. By the way, when one of our children asked, “Why do I have to do this stuff?” we answered, “So you will have that much more reason to leave home when it’s time.” And they did!

A: I’m not for paying children to assume responsibility in the home. A child of capable age (beginning around 3) should be carrying his or her fair share of household responsibilities. The chores in question should be done because the child is a member of the family, period. Tying chores to reimbursement creates the impression in the child’s mind that he isn’t obligated to do his chores if he doesn’t want (at least for the time being) the reimbursement that’s being dangled in front of him. Today’s parents are generally uncomfortable with exercising what I call a “Because I said so” authority in the home. That hesitation/aversion traces back to early-1970s parenting pundits like psychologist Thomas Gordon, author of one of the best-selling parenting books of that decade. Gordon maintained that parents who adhere to a traditional parenting model will inflict apocalyptic psychological damage upon their children.

Q: Concerning chores, another expert recommends giving a child a certain number of chips (like poker chips) every month, and if he or she fails to do a chore or doesn’t do it properly, you take a chip away. The chips can be used to purchase clothes and other things the child wants but doesn’t necessarily need. The child can also make up for lost chips by doing extra chores. My wife and I are searching for a way to get our kids, ages 6 and 9, to do some light lifting around the house. What do you think of this system?

There Should be Elation about Motivation Providing Salvation To achieve and better yourself in life requires motivation. Motivation is the mindset so enough willpower is gathered to set about achieving a desired result. My mother repeatedly issued the challenge that “if you don’t continually better yourself in this life, you’ll wind up as sorry as dirt,” and I most assuredly did not want that to happen. MOTIVATING! As Dolly Parton aptly proclaimed, “If you don’t like the road you’re walking, start paving another one.” Mark Twain acknowledged, “The secret of getting ahead is getting started.” When achieving any goal, getting started seems to be a stopping block for many of us, and MOTIVATION is the means to begin. Motivation is prompted by perception of a need. Andrew Maslow proposed a hierarchy of human needs grouped by significance as Physiological (hunger, thirst), then Safety, then Social (love, friendship), then Self-esteem, and next Self-actualization (achievement of full

potential). What is there in your life that you want utmost to enhance? What aspect of your routine of living could/ should be improved? When you reconsider your full potential, have you reached it? Most of us can always stretch our abilities a bit, especially if we get into the habit of cultivating betterments in our lifestyles. THINK! In what aspect of your life have you settled into a drab “do as little as possible” attitude? Before I retired (and especially even before Covid), my mindset was to use time well to accomplish and (most important) avoid wasting time. To be successful in achieving goals, correct methodology must be adhered to, and I obtained the right way from the ideas of others. Consider a single feasible goal that can be divided into smaller tasks. Before starting, consider the benefits of achieving your goal. Bring family, friends, or better both for support into your

confidence about your plans, and seek their backing. Set reminders and times to complete each task. The quality of our lives is reflected by our principles, values, and goals--which are determinants of what we hold significant. COME ON QUALITY. My mother recurrently told me, “What determines how successful you are in life as a person is how many people you help.” Naturally, we wish to make our lives and the lives of our loved ones better as we continue, but how about others as well? I work to write Health Matters to do so, but there are nearly countless ways others’ lives can be helped. There is no doubt a great deal more gratification in our lives when we benefit others than when we benefit ourselves. The Golden Rule provides guidance that if we treat others as we would wish to be treated, wholesome self-satisfaction is a gain that really happens, and a feeling of living the GOOD LIFE is realized.

From the Mouths of Babes... A little boy got lost at the YMCA and found himself in the women’s locker room. When he was spotted, the room burst into shrieks, with ladies grabbing towels and running for cover. The little boy watched in amazement and then asked, ‘What’s the matter, haven’t you ever seen a little boy before?’

I was driving with my three young children one warm summer evening when a woman in the convertible ahead of us stood up and waved. She was stark naked! As I was reeling from the shock, I heard my 5-year-old shout from the back seat, ‘Mom, that lady isn’t wearing a seat belt!’

On the first day of school, a first-grader handed his teacher a note from his mother. The note read, ‘The opinions expressed by this child are not necessarily those of his parents.’

While walking along the sidewalk in front of his church, our minister heard the intoning of a prayer that nearly made his collar wilt. Apparently, his 5-year-old son and his playmates had found a dead robin. Feeling that proper burial should be performed, they had secured a small box and cottonwool, then dug a hole and made ready for the disposal of the deceased. The minister’s son was chosen to say the appropriate prayers and with sonorous dignity intoned his version of what he thought his father always said: ‘Glory be unto the Faaather, and unto the Sonnn, and into the hole he goooes.’

Along the Road

Trinity River The Trinity River is 710 miles long and is the longest river with a watershed entirely within Texas. It rises in extreme northern Texas, a few miles south of the Red River. The headwaters are separated by the high bluffs on the southern side of the Red River. In 1687, French explorer Robert Cavelier de La Salle originally named it Riviere des canoës (“River of Canoes”). In 1690, Spanish explorer Alonso de León named the river “La Santísima Trinidad” (“the Most Holy Trinity”), in the Spanish Catholic practice of memorializing places by religious references. Many often think it was named Trinity for having three branches, but the Trinity River actually has four branches: the West Fork, the Clear Fork, the Elm Fork, and the East Fork. The West Fork Trinity River has its headwaters in Archer County. From there it flows southeast, through the man-made reservoirs Lake Bridgeport and Eagle Mountain Lake, and eastward through Lake Worth and the city of Fort Worth.

The Clear Fork Trinity River begins north of Weatherford, Texas, and flows southeastward through Lake Weatherford and Benbrook Lake reservoirs. It flows northeastward, where it joins the West Fork near downtown Fort Worth and continues as the West Fork. The Elm Fork Trinity River flows south from near Gainesville through Ray Roberts Lake and east of the city of Denton, eventually through Lewisville Lake. The West Fork and the Elm Fork merge as they enter the city of Dallas. The East Fork Trinity River (on old maps the Bois d’Arc River) begins near McKinney, Texas, and flows through Lavon Lake and then Lake Ray Hubbard before joining the Trinity River just southeast of Dallas. The Trinity flows southeast from Dallas across a fertile floodplain and the pine forests of eastern Texas. The Trinity crosses Texas State Highway 31 in Henderson County, near Buffalo. Roughly 65 miles north of the mouth on Galveston Bay, an earthen dam was built in 1968 to form Lake Livingston. The river empties into Trinity Bay, an arm of Galveston Bay that is an inlet of the Gulf of Mexico. Its river mouth is near the town of Anahuac, southeast of Houston.

Number of grandchildren and age range? I have one beautiful granddaughter, Ellie, she is almost a year old.

Favorite activity with them? I love to play snuggle and read her a story.

Advice to other/new grandparents? They grow so fast! You will be surprised at how much God multiplies your love for them! And how much joy they bring to your life!

What’s your fondest memory of your grandparents? Sitting around the dinner table after lunches and talking with my grandmother, hugs from my grandfather, and of course the treats they always had for us in the kitchen!

In God We Can Trust The first year I was in church choir, I had an opportunity to be a part of the Easter production. Everything was going great until we got to the dress rehearsal. As I watched the crucifixion scene, I choked up. The sight of Jesus dying on the cross was too much for my heart to take. I was broken, more aware than ever of Jesus’ love for me. I was also angry at those shouting to crucify Jesus. Oh, if they only realized who He was! “Why, God, why?” I cried silently. “Why couldn’t there have been another way?” Just as the disciples were angry and scared when Jesus was arrested, and Mary wept at the sight of her son on the cross, we often only see what is in front of us, rather than the big picture that God sees. Just as He knew Jesus would be resurrected, God knows the outcome of everything we face as well. And, in the midst of it all, He promises to be right by our side. When we are faced with tragedies or frightening circumstances, it is easy to trust only in our feelings of anger, fear, and grief. Easter, however, reminds us that God has a plan even when we can’t see it. We would be wise, then, to trust God when He tells us in His Word, “Do not be afraid. Do not be terrified.”

May we be like David, who in Psalms said of the Lord, “He is my refuge and my fortress, my God in whom I trust.” We can trust not in what we see, but in who He is. “I will say of the LORD, ‘He is my refuge and my fortress, my God, in whom I trust.’” - Psalm 91:2 “So do not be afraid. I am with you. Do not be terrified. I am your God. I will make you strong and help you. I will hold you safe in my hands. I always do what is right.” - Isaiah 41:10 “For we live by faith, not by sight.” – 2 Corinthians 5:7
