A WORD FROM THE PUBLISHER

The unmistakable scent of burning pinon, the joyful sounds of children and adults alike watching hot air balloons taking off and floating over the Rio Grande during Albuquerque International Balloon Festival as well as picking your own pumpkin, making your own crafts and stomping grapes during the Santa Fe Harvest Festival!

All these and more herald in Fall in the Land of Enchantment

It’s no wonder Santa Fe ranked #2 by Travel + Leisure for best cities to visit in 2023! Our artistic culture, exceptional shopping and world class dining scene had a high score of 88.5 out of 100!

Speaking of world class dining, historic El Nido restaurant is gracing this issue’s cover. Located in Tesuque, El Nido is two incredible cuisines under one roof. Chef Ziggy Montalvo works his magic with the wood burning grill in El Nido, while Chef Alexander Gayton serves up some fantastic sushi dishes in Su, the cozy back area of the restaurant. I highly recommend both!

Also in this issue, you will be introduced to Latin Big Band Gafiera. Check out their latest hit by scanning the QR code in their article.

If traveling is your passion, we introduce you to Portugal’s Azores Islands. There are nine volcanic islands to explore, and beautiful lakes known as one of the Seven Natural Wonders of Portugal, lake Lagoa Verde and Lagoa Azul, have become a symbolic image of the Azores.

Just in time for holiday shopping, check out the Shopping and Business guide. There are new businesses to shop at by using your phone and scanning the QR codes next to each business.

As always, our goal at FineLifestyles is to inform, entertain and keep you in touch with the very best our vibrant community has to offer. We hope you enjoy this issue and will take time to explore some of the products and services featured in these pages.

deBella Fine Gems

A Cut Above The Rest!

deBella Fine Gems and Jewelry is a well-established Santa Fe fixture. What sets it apart is the quality and purity of everything sold in the store. Owner, designer, jeweler and graduate gemologist Joe deBella, has traveled the world in search of fine gems for the past 45 years. “I travel to all these different countries, so I can buy directly from the source and by doing that I can offer at a value to my clients,” he says. If he gets a special request for that rare alexandrite, ruby, sapphire, spinel, emerald or diamond, he knows where to go to find it.

“I specialize in brilliant colors and rare stones,” he explains, “created by nature and fashioned by some of the best gem cutters in the world.” Since his clients come, not only from the US, but also from around the world, Joe’s inventory of rare colored gemstones and diamonds is constantly changing. Most of his gems are certified by the Gemological Institute of America, and his diamonds have a serial number laser engraved on the diamond itself, that corresponds to the certification.

The new, elegant deBella Jewelry Gallery downtown, across from the Plaza on East San Francisco Street, showcases Joe’s one-of-a-

kind jewelry, or as he likes to call it, ‘body art to be worn’. His designs are different from most jewelry out there because he works around what the gem is telling him. One prime example is a rare Mymar ‘Burma’ ruby, which lay in Joe’s treasure chest for 20 years, accompanied by numerous sketches. None of them felt right, until he finally came up with the perfect one.

At the new gallery you will be greeted by his son John, who came on board 8 years ago, after earning his MBA from Denver University, and is currently working on his Graduate Gemologist Degree. The other associate is Samuel Esque, who has a Professional Jeweler Degree from the Gemological Institute of America.

Joe is available for private consultations, either at the downtown gallery, or the smaller one next to the Lensic, to discuss everything from custom designs and evaluations to estate appraisals and liquidations.

After maintaining a successful business in Santa Fe for so many years, he and his family believe it is important and necessary to give back and be part of the Santa Fe community. They are therefore involved with several different charities, including the Lensic Foundation, Cancer Foundation, Boys and Girls Club and many others.

Age-defying Ways TO

STAY HEALTHY AND FIT

Getting older is inevitable, but aging is not. Most of us expect aging to include poor memory, aches and pains, tooth decay and less energy, but it doesn’t have to be that way. The following offers some thoughts from the specialists featured in this issue, on how to stay fit and well with the passing years.

Santa Fe is indeed fortunate to have the assistance of such gifted practitioners as we journey through the years. Scan their QR codes in the business guide to learn more.

Dr. Peter Fisk understands that pain is the body’s way of telling you that something is wrong. Chiropractic is both a science and an art, that uncovers and deals with the cause of a problem; unlike medications, that are designed to cover up the symptoms. Taking care of the cause can completely transform a person’s quality of life, which inevitably means healthier and happier aging.

The connection between physical and mental wellbeing is something that has attracted an increasing amount of attention since marijuana became legal. Already well established is how marijuana can help with issues like stress, pain, lack of sleep… all common concerns of aging. Owner of Love for Life Dispensary , Gyana Basse, points out that research is still ongoing and new discoveries are being made all the time.

Investing in oneself, with ongoing activities and services, is clearly the best way to go when it comes to staying fit and healthy with the passing years. And what better way to invest than by becoming a member of Restore Hyper Wellness, with centers in Santa Fe and Albuquerque? Membership includes special rates on all cutting-edge wellness modalities for every goal, including optimizing sleep, decreasing inflammation, boosting energy and defying the signs of aging.

Vida Dental is all too familiar with how time impacts dental health, and Dr. Giron and Dr. Detrik specialize in dealing with both physical and aesthetic concerns. A main reason for dental decay is simple neglect, not realizing that dental health is the key to bodily health. Restoring the ability to smile, with the aid of veneers, crowns, and creative dentistry, is incredibly rejuvenating too, and Vida’s advice is act now, don’t wait! The longer you wait, the more widespread the problem becomes, because everything is connected.

LOVE FOR LIFE DISPENSARY/HEMP APOTHEKE This Place has it All!

Are you looking for a one-stop shop for the best quality THC and CBD products (marijuana and hemp) in Santa Fe? Then Love for Life Dispensary/Hemp Apotheke has you covered.

There are several things that set this business apart from others out there. First of all, the range of products is extensive and varied, including top quality recreational and medicinal marijuana; edibles; handcrafted glass pipes; locally made THC and CBD tinctures, capsules and salves; a complete line of essential oils, and even jewelry and pet treats.

But the main thing that distinguishes this womanowned business is the outstanding customer service. “We make it a priority to spend time with our customers,” says owner, Gyana Basse. “Many people are looking for advice and guidance to assist with particular needs, or they want a kind of guided tour, to better understand what’s available, how the products vary, and how they can help.”

Ongoing research is increasingly focused on terpenes, the elements found in all plants, that determine smell, taste, and overall physical and emotional impact. Lavender, for example, has a familiar scent and is wellknown for its calming and healing properties, which are the direct result of the plant’s terpenes connecting with receptors in the human body.

“Many of our products are locally crafted by an offshoot of Aromaland, the company that first brought essential oils into the market,” explains Gyana. “They have many years of experience with terpenes and are experts at creating products that work synergistically with cannabinoid receptors, to affect the overall experience.” Higher terpene levels produce better smelling and tasting products, and different strains can be customized to produce certain effects as well.

Love for Life dispensary is excited to be offering the first terpene-infused pre-rolls—more on that to follow, so watch this space—and is also offering small tins of mini joints, for those times when you want just a couple of hits. So whatever your wants or needs, recreational or medicinal, THC or CBD, head over to the most welcoming one-stop shop in Santa Fe and treat yourself to something that is sure to brighten your day.

RESTORE HYPER WELLNESS

A Place to Relax, Renew, Rebuild and Rejuvenate

It was conventional medicine’s inability to solve her own health challenges that first got Elizabeth Lutes interested in alternative healing modalities. That was the start of a journey that not only led her to discover therapies that were key to addressing her own health issues, but also inspired her to become passionate about health and wellness overall.

“None of the modalities I explored, like acupuncture, chiropractic and massage, were new,” she recalls, “and less traditional therapies, like cold, light and heat, had been around for thousands of years. I began to imagine a place with a wide variety of therapies, a kind of one-stop-shop where people could experience new ways to build their energy, feel better and restore their health.

That vision never faded, but it remained a fantasy until 2018, when Elizabeth discovered one of the first Restore Hyper Wellness establishments in Connecticut. “I immediately fell in love with the business,” she says, “and when I found out that it was a franchise, I knew I had to do it.”

Restore Hyper Wellness was launched in 2017, and had not yet arrived in New Mexico, so Elizabeth—a long-time resident of the southwest—decided to go full steam ahead and establish centers in Santa Fe and Albuquerque. Despite the challenges presented by Covid in 2020, she was able to find and build out great locations and open them both in the summer of 2022.

The environment is contemporary, professional, and well equipped, and the services offered are cutting-edge and well researched, with proven efficacy. They include infrared sauna, red and near-infrared light therapy, compression, and whole-body and local cryotherapy, among others. Similar to a cold plunge, cryotherapy exposes the body to extreme cold for three minutes, stimulating circulation, reducing inflammation and releasing ‘feel good’ endorphins. An energizing red light and cryotherapy session takes less than 20 minutes and can be squeezed in during a lunch break, usually without an appointment.

Key to promoting health and wellness are the medical services, including hyperbaric oxygen, Intramuscular shots and IV infusions, administered by licensed nurses. Medical clearance is required to participate, and drips are customized to deliver the maximum benefit for individual needs.

Cutting-edge esthetic services are also available, with healing facials and body treatments including HydraFacial and CryoSkin, designed to cleanse, hydrate, oxygenate and rejuvenate the skin, diminishing the signs of aging. Equipment is state-of-the-art, and all spa procedures are carried out by licensed estheticians.

To best take advantage of the wide variety of treatments, people become members, choosing the type of membership that works best for their wallet and their goals. Memberships include credits for core services or IV Drips as well as generous discounts on all services. “We really want this to be a place people incorporate into their daily lives, like going to work out,” explains Elizabeth. Judging by the enthusiastic, and growing, response to this innovative resource, her vision has finally become a full-fledged reality.

INTEGRATIVE CHIROPRACTIC Activating the Healing Power Within

When Dr. Peter Fisk was in his early 20s, a car accident left him with severe headaches and debilitating pain that no traditional treatment was able to resolve. Painkillers provided some relief, but only until their effects wore off. As a last resort, despite knowing virtually nothing about this form of care, he sought help from a

chiropractor. Several weeks and a few sessions later, he was finally pain free.

A trained massage therapist at the time, Dr. Fisk knew that what he had just experienced was something he wanted to share with others. “I had always believed in the body’s innate power to heal,” he says, “and I knew that becoming a chiropractor would enable me to connect with that power.”

He sailed through chiropractic college, graduating Summa Cum Laude in 1991. His practice has evolved over the years and is clearly influenced, not only by his training and experience as a massage therapist, but also by his studies in other, complementary areas of healthcare, like cranial therapeutics and Noetic Field Therapy (a spiritual approach to inner harmony, clarity, and alignment.)

26 Fine Lifestyles SANTA FE & ALBUQUERQUE HEALTH & WELLNESS

“In chiropractic school you learn to take note of someone’s health history, focusing on what’s gone wrong,” he says. “I prefer to notice what’s wrong, but to focus on connecting with the body’s innate power to build what’s right.”

This wholistic approach—treating the mind/body/spirit as one unit – is the guiding principle behind Network Spinal Analysis, or NSA. This chiropractic technique focuses on the connection between the spine and nervous system, recognizing that any misalignment or damage to the spine impacts the nervous system as well. This can affect the body in any number of different ways. “The nervous system is the most complex thing in the universe,” explains Dr. Fisk. “Every cell in the human body has a nerve component, except for red blood cells,

and it’s the brain/spine working together that orchestrates everything.”

Dr. Fisk has taught NSA to doctors worldwide and has over 30 years’ experience. Unlike traditional chiropractic treatment, it is very gentle, organized, and specific, working with just the lightest touch to different parts of the spine, without any of the usual twisting, cracking, popping, manual adjustments, or equipment. The results speak for themselves, for research shows that Network Chiropractic reduces stress, anxiety, depression, and pain, and increases overall wellbeing. “I have seen people’s whole awareness of themselves change,” he says.

Every new patient starts out with a consultation and evaluation, followed by a specially prepared, individual

treatment plan, since this is a process of transformation, not a one-shot miracle or a magic bullet. The goal, however, is self-empowerment, because Dr. Fisk firmly believes that well-being is something that people can sustain for themselves. “We have been programmed to believe that with age comes infirmity, so that’s what we expect, and regard as normal,” he points out. “I regularly see people suffering from chronic health issues that haven’t responded to years of pharmaceutical care, who are amazed by what can be done to improve the quality of their lives. I am still in awe of the miracles that my patients experience each and every day!”

“TREATING THE MIND/BODY/SPIRIT AS ONE UNIT—IS THE GUIDING PRINCIPLE OF INTEGRATIVE CHIROPRACTIC”

“Everything about my experience with VIDA dental was outstanding from the minute I walked in, to the moment I left. I am SO happy I found a dental practice that provides such conscientious patient care! ”

“Friendly and caring staff, everyone is super kind and considerate. I have never experienced this level of care in a dental office. 10/10 recommended! ”

“Dr. Giron and Dr. Detrik are great dentists and excellent communicators. The office is super nice, and the staff is friendly and courteous. Recently, Dr. Giron was able to see me for an emergency. He provided immediate pain relief and got me into a specialist quickly! I highly recommend Vida Dental!”

“I had a great experience getting a new crown on the same day. Plus, I was offered all the creature comforts while I waited... they even have a paraffin hand treatment.”

“Went here after my dentist retired. Got new upper dentures and bottom veneers and they look great. Dr Detrik and all his assistants and office staff were amazing. Couldn’t imagine a better experience. ”

“Outstanding dental care, all staff members make you feel welcome. We are extremely pleased with the dental care and family atmosphere. Vida Dental Studio is one of a kind, a gem!!!”

“Absolutely love this office and all their staff. I usually have a bit of dental anxiety, but this office, its environment and staff members, made this the most comfortable experience I could have had. I would give this place 10 stars if I could.”

You can’t tell a narrative of Brazilian music without acknowledging the substantial influence the favelas add to the mix. The favelas (ghettos or shanty towns) are scattered throughout Brazil’s vibrant urban landscape. From these marginalized neighborhoods comes an indispensable wealth of creativity with themes of resilience, struggle, and hope. Brazilian Bassist and Latin GRAMMY-Winner Diogo Brown’s new group, Gafieira Rio Miami, brings to life an overlooked genre of music born in often overlooked neighborhoods of Brazil.

“Basically, gafieira was a place where people would hang out and dance because samba back then in the 1920s and 30s was just like jazz here in the U.S. It was really marginalized,” says Diogo Brown. People would see it as a “no good” element like you’re a no-good kind of guy if you played it. People would even harass you because the majority of musicians were black and so people decide to find a spot to have some fun and play the music they want to play.”

During the pandemic, Diogo felt a calling to rescue and bring back this specific type of samba for a new generation to enjoy. He began collaborating virtually with musicians in Brazil.

Reviving the essence of gafieira, Bring Back Samba is the first album by Gafieira Rio Miami. Rooted in Miami but composed of worldclass musicians from Brazil, Cuba, Venezuela, and the United States. The music elegantly joins the traditional era of samba while encompassing a musical ensemble that echoes the spirit of gafieira.

BRING BACKSamba

“Bossa Nova was born in the 1950s in a very sophisticated and privileged neighborhood. You didn’t see many black Brazilian artists playing that type of music. The lyrics in samba talk about the realities of the favela, the struggle, but it also speaks of the hope and willingness to keep going.”

Brown recruited musician and composer Ricardo Gill, along with several special guests, including the late maestro João Donato, clarinetist Anat Cohen, guitarist Chico Pinheiro and vocalists Jair Oliveira, Vanessa Moreno, Liz Rosa, Moyseis Marques, and Alfredo Del-Penho. The group is big because it’s a big vision with a big sound. There are few bands outside of Brazil playing this brand of classic samba with a contemporary flare for people to get up and dance.

“You’ll never see a gafieira party where people are dancing alone. People can get down to traditional samba alone but gafieira samba is meant for partner dancing. It’s such a beautiful type of music.”

Kaleidoscope Gala

The Lensic’s annual gala transported guests to a bright and brilliant place of endless possibilities this past June. The stage was transformed into a kaleidoscope with incredible colors—an ode to how the arts can change the way we see the world.

Guests gathered on stage for a fabulous dinner with entertainment by flamenco star La Emi and her youth troupe, and raised their paddles in support of their largest fundraiser for Lensic education programs. From free matinees in the theater to internships, masterclasses in schools, and many more, the Lensic’s education programs bring the arts to nearly 13,000 New Mexico students annually.

Thanks to the generosity of the community, who came dressed to the nines in the most vibrant colors, the Lensic was able to raise an astonishing $330,000 for the Lensic’s arts education programs! The Lensic is incredibly grateful to all who attended the gala and helped create the foundation of their education programs.

Don’t miss out on our 2024 gala! Save the date for June 15!

T-BANG DOES AMERICA

It started out as a joke. Terrell Powell was traveling around the country, selling his paintings at art fairs and spending a lot of time in hotel rooms, when he found himself in a room with two black velvet paintings hanging over the bed. “They were really cheesy,” he says, “the kind of thing you’d find in a garage sale, and they really bothered me. I finally thought, what kind of artist am I if I don’t do something to doctor them up?” Since he was not able to get them off the wall, he put a ‘Do Not Disturb’ notice on the door and stood on the bed to paint over them.

“I shared the result with my artist friends, and we all had a good laugh about it,” he recalls. “That was that, until a few weeks later when I was in another hotel room in Texas that inspired me to do it again. Then it became a mission.”

Terrell has now ‘doctored’ paintings in many hotel rooms where he has stayed, while doing art shows all around the country. Sometimes he takes the finished works with him when he checks out, but usually he just leaves them, and as far as he knows, most are still there. One hotel manager did follow up with him, to let him know that the painting was now on permanent display, with a plaque showing the date when T-Bang, the name Terrell uses for his alter ego ‘hotel enhancements’, had stayed there.

Some of T-Bang’s artworks can be found at the Calliope Gallery in Madrid, New Mexico, and many have been snapped up by collectors. One buyer was so intrigued by his story that she asked if she could pass it on to her daughter, who covered topics of special interest for the Wall Street Journal. That newspaper article led to a call from NBC Nightly News, which inspired the Today Show to cover it, and then the BBC took it up as well.

Terrell’s artwork has a very distinctive personality, which almost always brings a smile, and he never interferes with anything of intrinsic artistic worth, which is probably why his novel ideas have never landed him in trouble. On the contrary, he transforms things that are basically worthless, into paintings of significant value. “I would never do anything to a Picasso or Warhol print, or something on archival paper that could be displayed in a museum,” he says. “I just enhance mass produced, hotel décor and I’m happy to say that people really get a kick out of what I do.”

He has now left his mark in hotels in most of the 52 states, and his work has inspired an award-winning documentary on YouTube, called, Your Hotel has been T-Banged. Terrell is now focusing on states that have not yet been exposed to his unique form of art enhancement, and a book is in progress as well. A coffee table book, it will feature a representative ‘before-and-after’ selection of his hotel handiwork from all over the country.

In the meantime, Terrell Powell’s 100% original artworks - paintings and sculptures - are on display at Dominique Boisjoli Fine Art on Canyon Road, and in the adjoining sculpture garden. Guaranteed to brighten your day, as well as bring a smile to your face, they are definitely worth taking the time to check out!

Holiday Cocktails

October heralds in fall and a crispness to the clear New Mexican evening air! Nothing like sitting next to a warm fire with family and friends and talking about all the wonderful events that are coming up while enjoying your favorite holiday cocktail!

Here is a short historical background for using Gin vs. Vodka for your martini. The argument has always been that a dry martini is best served with gin. Gin has more flavor than vodka and if you want a true dry martini, gin was the way to go. Using vodka led some patrons to “dirtying” up their martinis with olive brine to give them more taste. When it comes to making craft martinis, vodka is the way to go. The neutral flavor of vodka allows the various unique ingredient flavors to come forward with little interference. Martinis have grown in popularity, now surpassing the vodka-based Moscow Mule for the second spot in CGA’s top 10 cocktails in the final quarter of 2022.

Below is the recipe for one of my favorite holiday spins on the classic martini that uses some great seasonal ingredients, The Pumpkin Pie Martini! Martinis have grown in popularity, now surpassing the vodka-based Moscow Mule for the second spot in CGA’s top 10 cocktails in the final quarter of 2022.

Historic EL NIDO

At the crossroads of culinary artistry, El Nido is more than a restaurant–El Nido celebrates heritage, flavor, and innovation. Nestled in Tesuque, a short drive North of Santa Fe, the restaurant seamlessly blends contemporary tastes with time-honored wood fire cooking techniques, resulting in an authentic dining experience.

“We have an eclectic, chef-driven menu focused on wood fire cooking,” says El Nido general manager Dan Jessel. “We have a split concept with a sushi room, SU, with Chef Alexander Gayton, that seats thirty-five and El Nido.”

El Nido, with Chef Ziggy Montalvo, is best known for its open-fire grilling, spit-roasting, smoking, and ember cooking techniques. Equal measure to the cooking methods are the ingredients that embrace the flame of their wood fire. The menu incorporates local Northern New Mexico ingredients whenever possible.

“Quality comes first, but there’s no shortage of quality ingredients. It’s more than that. Santa Fe is a bigger town with a small-town feel to it. The more you can support your neighbors, the more they can support you.”

The dining area exudes an inviting charm, featuring authentic tin chandeliers suspended overhead, vibrant murals embellishing the walls, and a captivating view of the live-fire cooking station. Conversely, the bar exudes sophistication and liveliness, serving inventive cocktails, an extensive wine collection, artisanal beers, and a delightful array of saké options.

This holiday season, El Nido will offer unique dishes like its renowned limoncello chicken and signature cocktail, Voltear, which has a whole egg and tastes like eggnog. The restaurant excels in the art of cocktail pairing, a contemporary trend embraced by innovative eateries throughout Santa Fe.

“It has been overlooked at times. Restaurants really focus on wine pairings or think of a cocktail as a before dinner or after dinner type thing, but it really doesn’t have to be. There are so many different flavor profiles between spirits and mixers that can go with so many kinds of food, including sushi. It doesn’t always have to be sake.”

Located just a short 10-minute drive from downtown Santa Fe, El Nido offers a unique dining experience that seamlessly combines the time-honored art of wood-fire cooking with innovative contemporary flavors, making it a truly unforgettable culinary destination.

Sassella

EAT, DRINK AND CELEBRATE, ITALIAN STYLE

Already the recipient of multiple awards, Sassella’s Cristian Pontiggia has just been declared ‘Chef of the Year’ by the New Mexico Restaurant Association. In addition to this distinction, he is currently one of 20 chefs chosen by the James Beard Foundation to take part in their annual Taste America event. This brings together chefs, diners, and guests from around the country, culminating in a series of special dinners to celebrate independent, local restaurants. Cristian will be partnering with chef Jezabel Caragea, of Jezabel’s in Philadelphia, and their collaborative dinner at Sassella, with two sittings that include beverage pairings for each course, will be held on November 8th.

Some mouth-watering new dishes have already been added to the menu, to celebrate the shift in the seasons, including a spectacular, baked bone marrow entrée, with basil parmesan, chorizo and poached lobster tail. There is also a red wine risotto, with foie gras, pistachios and parmesan, and an eye-catching seared tuna dish, topped with a beautiful cloud formation, created from rice flour.

A novel new addition is a chocolate dessert, served with a candy dinosaur and a chocolate cartoon character, that just happens to be the favorite of Cristian’s young son.

His busy life notwithstanding, Cristian has always made time to work with and mentor children and has been a Super Chef with Cooking with Kids

for a number of years now. He also supports the local culinary scene by mentoring young chefs, preparing them to compete locally, regionally and then nationally. Giving back to the community is important for Sassella, and Owner Lawrence Becerra is an active board member with several charitable organizations as well.

One of the restaurant’s top priorities is its constantly evolving list of wines, and several new ones have been added for the holiday season. Of special note are some red wines from the Mt. Etna region of Italy. Vines in this unique location are very old, with roots that had to work their way down through layers of volcanic formations to reach the aquifer below. That deep-rooted connection produces wines of great complexity and a distinctive aroma that is exceptional and quite unique. “They also pair perfectly with the risotto, as well as our venison, beef, lamb, and of course turkey, dishes,” points out Lawrence.

The restaurant’s sommelier and manager, Izabella Conforti, has put together a short video, introducing you to some of the restaurant’s top wines for the coming season. Check it out by scanning the QR code below. And happy holidays!

SAZÓN Where Every Visit is a Special Occasion

The well-earned superstar status achieved by Sazón is now recognized far and wide, with last year’s James Beard award given to Fernando Olea, for Best Chef of the Southwest, being the latest of many accolades.

Sazón’s menu offers experiences that are truly unique, being primarily the result of Fernando’s exceptional creativity and artistry. Where else would you find rack of lamb, served with sweet potato purée, shaved beets and a small bouquet of exotic mushrooms, with your own choice of one of the chef’s famous moles? His poblano mole is the most traditional choice, but there is also one specially created for New Mexico, featuring apricots, and available year-round. Or how about his signature dessert, Symphonia? This remarkable dish really is a symphony of flavors, each identifiable, not blended, and made entirely from vegetables.

The wines and spirits available at Sazón are also exceptional, including some that are exclusive to the restaurant. “We have just acquired

a high-end tequila, new to us as well as to the state of New Mexico,” says co-owner Lawrence Becerra. “It’s a Don Julio Ultra, aged over 2 years in French sherry barrels. I put it right up there with great French cognacs.”

Sazón recently welcomed Damon Lobato, a third-level sommelier (a rarity in Santa Fe) as the new Front of House and bar manager. A Santa Fe native, he traveled extensively, gaining an impressive depth of knowledge from experts in the field, before deciding to come back to his home town. Scan the QR code to watch a video of Damon preparing some unusual and quite delightful holiday cocktails.

Being a sophisticated, upscale Mexican restaurant, Sazón offers a variety of tequilas and mezcals, ranging from those aged over 3 years, to traditional ones that have not been aged at all.

“You can really taste the agave plant in those that haven’t been aged,” says Lawrence, “because they come straight from the soil.”

If you think of Sazón as a place to reserve for special occasions, you may want to think again. The unique environment, beautiful paintings and warm welcome, together with the exceptional cuisine, make it a special occasion as soon as you walk in the door.

Come Celebrate the Seasons with JOSEPH’S CULINARY PUB

Now that summer has drawn to a close, it’s time to bid farewell to summer dishes, as Joseph’s Culinary Pub turns to fully embracing and celebrating the changing seasons. “People tend to think things die down after the summer months,” points out chef/owner Joseph Wrede, “but this is a great time for us, with special events, as well as new, seasonal dishes.”

Two very popular events, held about every three months, are the restaurant’s wine dinners and jazz concerts. The wine dinners consist of several courses, featuring specially chosen, curated wines to accompany each one. “It’s also a good opportunity to test out new dishes and see how people respond,” says Joseph. “The most popular ones might then be added to the regular menu.”

Wine lovers would be interested to know that the restaurant’s wine list, put together by sommelier Starr Bowers, is one of the most respected in the city. She was one of the first, back in 2016, to start promoting natural wines, which are now catching on, big-time, both nationally and globally.

For those not yet familiar with natural wines, they are made using organic ingredients, and are fermented with native yeast and bacteria. “In other words,” explains Starr, “it’s a return to basics, and because it’s wine in its purest form, it tastes more like the land, the vineyard, that it comes from.”

As for the jazz concerts, they are a combination of great food and live music, performed by some of the best musicians flown in from New York specially

for the occasion. Like the wine dinners, these events sell out well in advance, so do check the website for the most up-to-date information.

This is also, of course, the time of year to start planning for the upcoming holidays, and Joseph’s has acquired a well-earned reputation for celebrating things differently. The unique ‘turkey roulade’ that appears at holiday time, is the restaurant’s hallmark dish. The turkey is stuffed with an in-house, gluten-free filling, de-boned, rolled, and finally pan-seared to make the skin crisp. There are also imaginative vegetarian options, together with in-house made pasta dishes, to choose from.

Ingredients are locally sourced, whenever possible, with New Mexico lamb, in particular, a regular feature on the menu. Keeping things local includes the bar as well, with cocktails made from local spirits, and a selection of craft beers on tap. “Good quality ingredients and bold, clean flavors are an increasingly popular trend,” says Joseph, “and most important, the food has to taste good!”

That is something Joseph’s Culinary Pub— and their loyal customers—invariably take for granted. Reservations are advised, and for holiday dinners, essential. Scan the QR code in the restaurant guide on page 53 to view the current menu.

A Place to Satisfy More Than Just Your Taste Buds

There are many things that contribute to Palace Prime’s popularity as a dining destination. The food is exceptional, with everything made in-house, from scratch; the historic setting—the place has been around for almost 200 years and was a popular, high-class brothel back in the 19th century—has been beautifully preserved and updated; the walls display an amazing collection of curated paintings; and the bar, which has the largest selection of spirits in New Mexico, offers an extensive variety of specialty cocktails.

If all that sounds a little daunting, it is refreshing to find that there is no need to dress up to come here. “We want everyone to feel comfortable, whether they’re just stopping by for a drink, or coming in for a special dinner celebration,” says General Manager, Charles Dampf. “We are primarily concerned with serving the needs of the local community, and the kitchen and bar stay open late on weekends, so people can come in and relax after a concert or a show at the Lensic.”

The location also makes it a perfect place to stop in for a drink or dinner on Christmas Eve, after a celebratory stroll down Canyon Road. Reservations are advised since the restaurant fills up well in advance. “We’re closed for Christmas and New Year,” says Charles, “but on Christmas Eve and New Year’s Eve, the menu always features dishes created especially for the holidays by our executive chef, Douglas Hesselgesser.”

46 Fine Lifestyles SANTA FE & ALBUQUERQUE DINING

This is also the time of year for office parties and special events, and Palace Prime has a separate room, seating up to 14 people, available for private gatherings. The entire dining room, capable of accommodating up to 75 people, can also be booked for weddings or other festive occasions.

As for the menu itself, there are a number of things that are different from the norm. All the beef is cut and ground in-house and comes from LaFrieda Meat Purveyors, based in New Jersey. This private company specializes in beef from Black Angus steers, pasture-raised, hormone and antibiotic-free, on small, family-owned farms. Chef Douglas makes a point of preparing and presenting his cuts in original ways, and his hamburgers attract a devoted following year-round.

Fish has not been forgotten either, with seafood flown in fresh daily. Oysters are a Palace Prime specialty, with the restaurant offering the largest selection in town. The menu also features a unique Seafood Tower, consisting of a combination of Maine lobster, shrimp, crab, tuna, and oysters on the half shell. Listed as a starter, it can easily be shared by as many as four people. A grilled Maine lobster tail can also be added to any main dish, for those who would like to try a combination of turf and surf.

Pasta dishes, made in-house with local, free-range eggs and flour imported from Italy, are always included as well, with gluten-free items and vegetarian-friendly choices also listed on the menu. The selection of wines is impressive and extensive, and can easily accommodate all kinds of different dishes and taste preferences.

So whatever your dietary requirements, time limitations, or mood, Palace Prime is sure to be able to provide whatever it is you need. Open Wednesday through Sunday, from 5pm. with late night bar closing on Friday and Saturday at 11:15pm. Closed Monday and Tuesday.

SWEETWATER HARVEST KITCHEN GATHER, NOURISH, INSPIRE, REPEAT

Soma Franks had no experience running a restaurant when she opened Sweetwater Harvest Kitchen in 2012, but she did have a goal. “My driving mission was to offer a food sanctuary, where people could come and eat healthy food that tastes good,” she says. “We source consciously and carefully, and we also pay special attention to people’s needs around food.” The result is a restaurant where vegans, vegetarians and meat-eaters can all enjoy the benefits of health-conscious, fine dining, defined by Soma as, ‘a place where healthy is yummy’.

Santa Fe has been her home since 1999. “I never felt at home until I arrived here. Santa Fe just called to me, like it does,” she says simply. Having always been a food lover, things fell into place after her arrival and she spent several years working at Geronimo and Pasqual’s, getting to know some of the best chefs in the business, who then inspired her to open a place of her own.

“I wanted to give back to the community, to establish connections with local suppliers, farmers, ranches, and breweries, and make it a place where people could come and feel good about what they were eating,” she explains.” That was my mission.”

That mission still drives her business today. Ingredients are locally sourced whenever possible, sustainably and organically produced, and everything is made inhouse, including breads, wraps and desserts, all gluten free. The restaurant has always included a community table, to accommodate large parties, or to offer strangers the opportunity to strike up connections with one another. “It really works,” says Soma. “I’ve seen friendships grow from that first meeting over a meal at the community table.”

The menu inevitably reflects the changing seasons, but also includes dishes that have become permanent fixtures due to their popularity. Dishes are ownerinspired and chef-refined, and the whole place operates like an extended family. “The staff have become my partners,” says Soma. “Everyone here is invested in a common goal, which is to ensure that this business continues to succeed.”

The most food-focused holidays—Thanksgiving, Christmas, and New Year—are coming up once again, and ideas about how to celebrate have been evolving.

The traditional table centerpiece is, of course, turkey, and those wishing to preserve that tradition can order one of the best from Beck & Bulow. But be sure to do it well in advance because these high-quality birds sell out fast.

Perhaps it was cooking turkey for Thanksgiving, and again a few weeks later for Christmas, that inspired the variety of other options that are now available to choose from.

Bison, which is becoming increasingly popular, is one of them. It is also a Beck & Bulow specialty, since it comes directly from Tony Beck and J.P Bulow’s local bison ranch. Prime rib and tenderloin are the most popular cuts. Rub with bison tallow (also available at the store) season generously with sea salt, black pepper, and your favorite herbs, and oven roast to medium rare. Beef is also available.

For those who prefer fish, salmon makes a festive and esthetically pleasing centerpiece. Or, for something completely different, how about lobster? Not only does that qualify as a ‘special occasion’ dish, but Beck & Bulow also has the only live lobster tank in Santa Fe.

There are many other delicious alternatives out there, and if you are not sure how to cook something, the knowledgeable team at Beck & Bulow will be glad to assist. More and more people are thinking outside the box and looking forward to celebrating the holidays in more unconventional ways. So why not ask around, check with family and friends, and see how they feel about deviating from the norm? Whatever you finally decide on as your centerpiece, meat or fish, usual or unusual, you can be sure that Beck and Bulow has you covered. Happy holidays!

DISCOVER THE AZORES’ WONDROUS SÃO MIGUEL ISLAND

If you’re looking for treasure in the middle of the Atlantic Ocean, head to Portugal’s Azores Islands. You’ll find breathtaking scenery, geological marvels, inspiring UNESCO Heritage Sites, and a rich culture marked by old world customs and traditions.

The Azores were formed when volcanoes under the Atlantic erupted, creating nine major islands: São Miguel, Santa Maria, Graciosa, Terceira, São Jorge, Pico, Faial, Flores and Corvo. São Miguel is the most populated. It’s known as the “Green Island” due to its lush landscapes and rolling, verdant hills, and feels a bit like Ireland, Iceland and Hawaii bundled up into one enchanting place.

São Miguel’s major city is Ponta Delgada, a town noted for its centuries-old architecture, cobbled streets and vibrant waterfront. Enter the main square through its arched city gates. Nearby is the Church of St. Sebastian, a grand Gothic and Baroque style building with basalt-carved sculptures and a magnificent entrance door.

Other religious-oriented sites include the Jesuit College with its handsome church containing an impressively carved, gold altar and nave, and the ornate 16th century chapel of Nossa Senhora da Esperanca Convent.

São Miguel’s largest fortress, Forte de São Brás, is also a popular attraction. This formidable bastion once protected the island from

pirate attacks. Today, it’s home to the Military Museum of the Azores.

After visiting Ponta Delgada, explore the island’s natural marvels, including its many volcanic features. Head to Sete Cidades, the Seven Cities area, named for the seven peaks surrounding a large caldera with twin lakes. As one of the Seven Natural Wonders of Portugal, these lakes, Lagoa Verde and Lagoa Azul, have become a symbolic image of the Azores.

The formation of these green and blue lakes is often explained by a legend involving the tears of a green-eyed princess and a blue-eyed shepherd who shared a forbidden love. The scientific explanation, though, is simple: the depth of the larger lake, Azul, reflects the sky, while the smaller, shallower Verde mirrors the verdant hues of its surroundings.

Mosteiros is where the Islets of the Monasteries are located. These four sea stacks constitute the remains of a coastal caldera destroyed in an eruption. Together, they look like a monastery.

On the west coast is Ponta da Ferraria, where you can swim in a volcanic hot pool. The water is naturally heated by underwater vents from the Sete Cidades caldera.

A favorite destination on the island is the Furnas Valley. Here, you can witness an otherworldly scene of bubbling mud pools and sulfurous steam vents, akin to a mini Yellowstone, albeit with a burial ground of cooking holes!

These holes serve as ovens for the area’s traditional dish, Cozido das Furnas, a stew that’s cooked in the ground for six to eight hours using natural geothermal heat.

Terra Nostra Park is another must-see attraction. It’s a paradise of botanical gardens that also has its own natural hot springs, which feed a ginormous thermal, soaking pool.

Tea drinkers will delight in touring Gorreana Tea Plantation, the oldest operating tea factory in Europe. The island’s mild climate and its acidic volcanic soil are ideal for production of the company’s organic black and green teas.

São Miguel has numerous viewpoints offering memorable vistas. Waves crash against the rocks, as you peer down from the cliffs at the dramatic seascape.

BOOK REVIEW

In the wake of the Oppenheimer movie with a bit of Hidden Figures thrown in, comes Shoot the Moon by Isa Arsén, a novel of historical fiction that centers on the daughter of a 1940s Los Alamos scientist. After growing up in Santa Fe with her secretive and often-sequestered father whom she adored, Annie Fisk likewise decides to pursue a career in space science. Not much opportunity for female scientists back then, but Annie is a follows-her-own-convictions girl. She pursues a life of her own making as she goes to work as a secretary at NASA in Houston. There, her brilliance leads her beyond the official mission of prepping for the 1960s moon landing.

A completely original, non-chronological take on the forties, fifties, and sixties, seen from the viewpoint of an unconventional feminist whose scientific acumen extends beyond the atomic bomb and moon landing into the metaphysics of time travel, Shoot the Moon paints a picture of mid-century America that’s simultaneously nostalgic and speculative. Annie’s brushes with time travel begin in girlhood when she meets an unusual friend in her garden. It’s while working at NASA on the Apollo 11 mission that she stumbles upon another dimension when she encounters what Einstein termed a wormhole, or hypothetical structure connecting two different points in space and time. Or was she just exhausted by the long hours? Her memories of Santa Fe and her dad’s scientist colleagues come flooding back, like how, “The day the man came from nowhere, Annie should have known something was different. The air felt thicker than usual by the roses, greasy with a sharp and metallic smell.” Even as Annie gets swept up in the sci-fi potential of this suspected anomaly portal, her yearnings for love, closeness, and a home where she belongs tug at her just as strongly.

Author Isa Arsén is slated to discuss the book at Collected Works Bookstore in Santa Fe on October 22 at 4pm, and BookWorks in Albuquerque on October 23 at 6pm.
