A WORD FROM THE

PUBLISHER

S

pring in Santa Fe is always a time of seasonal contradictions, and local residents have learned not to put away their winter clothes until the wide variations in weather conditions have settled down and summer is finally on the horizon. That time has now arrived and we can all look forward to a Santa Fe summer that promises to be more ‘normal’ than it has been for the last couple of years. Our renowned, signature events are back in full force once again: Indian Market (which celebrates its 100th anniversary this year); the International Folk Art Market; the Santa Fe Opera and Spanish Market. And this year we welcome a new one as well—the Santa Fe Literary Festival, featuring well-known local and national literary figures like George R R Martin and John Grisham. This is clearly a time to get out and about, and with the warmer weather comes the opportunity to enjoy eating outdoors. Many of our restaurants offer patio dining, and picnic enthusiasts can also take advantage of takeout dishes, as can opera-lovers for pre-performance tailgating. Enjoying a fine meal on a warm summer evening, in a natural environment with decorative lighting, is one of the great pleasures Santa Fe has to offer. All those many months of being home-bound and sedentary, connecting and meeting via Zoom, have inspired many of us to become more focused on improving both our health in general, and our physical appearance in particular. This issue highlights a range of opportunities for achieving both those goals, starting with the services offered by the two notable practitioners featured on the cover—Dr. Robyn Benson of Soul Santa Fe, and Raymond Kurshals of Santa Fe Pilates. We are fortunate to live in a time when there are many ways to enhance wellbeing and turn back the clock without resorting to surgical intervention, and a number of them can be found in the following pages. How you choose to proceed is, of course, a matter of personal choice, always bearing in mind that taking advantage of more than one of them would bring about the best result. As always, our goal at Fine Lifestyles is to inform, entertain and keep you in touch with the very best our vibrant community has to offer. We hope you enjoy this issue and will take time to explore some of the products and services featured in these pages, that will enable you feel good, look good and take full advantage of the summer months to come.

HEALTH & WELLNESS

Spring is a Time for Renewal Anya Sebastian

Santa Fe is widely recognized as a hub for natural and alternative healthcare. The options are many and varied, from acupuncture and Pilates, to the latest non-invasive techniques. In this issue of Fine Lifestyles magazine, we feature some of the best health and wellness practitioners in our community, experts in helping people to both feel and look their best.

“Most people have never been taught how to maintain a healthy lifestyle, so they have no idea what it entails, or how important it is,” says Raymond Kurshals, the founder of Pilates Santa Fe. “What we offer is an opportunity to keep the body healthy and young, with proper alignment, balance, strength and flexibility. We also have a number of ways to combat and detoxify the environmental waste we accumulate simply by living in these times. You cannot eat or pay your way to good health; you have to do the work necessary to get there.”

If your primary focus is external rejuvenation, then check out the Santa Fe Skin Institute for some really innovative, cutting-edge options All the practitioners are experienced medical professionals and the results are as good as, if not better than, cosmetic surgery.

Robyn Benson, DOM, the founder of Santa Fe Soul, agrees with Raymond Kurshals (Pilates Santa Fe). “Acupuncture opens the life force in your body,” she explains, “helping to eliminate pain, while fortifying the immune, organ, and brain systems.” Regenerative medicine, one of the fastest growing areas in medicine today, is also a prime focus of her practice. “Believe it or not, just as aging is a natural process, so is regeneration,” she says. “My team and I are here to help support that regeneration by design, instead of allowing degeneration and accelerated aging by default.”

At Mariposa Health & Beauty Spa, Mary Ellen Lopez, a certified nurse practitioner, bridges the gap between Western and alternative medicine. “I don’t believe in sticking with just one or the other,” she says. “They both have valuable things to contribute.” Mariposa offers a wide range of services, from hormone therapy, vitamin injections and IVs, to dermal fillers and weight loss. “We are deeply committed to whole health and wellness,” she says, “and I just want to help in any way I can.”

So if you are looking to turn back the clock, either by addressing and enhancing internal health and wellness, or by engaging in external physical renewal, you are in the right place. Getting to know some of the top-rated practitioners featured in these pages will set you on the right path to achieving your goals.

SANTA FE SOUL CENTER FOR REGENERATION By Kelly Koepke

R

egenerative medicine harnesses one’s own biology to create new healthy tissue. In effect, it’s the reverse of aging and degenerative disease. For 16 years, Santa Fe Soul Center for Regenerative Medicine, uses this science of naturally boosting healing in damaged tissues and under functioning endocrine and immune systems. Patients achieve the benefits of restored healthy joints, regrowth of hair, skin rejuvenation and improved sexual function. No going under the knife, harsh chemicals or risky, invasive surgical procedures. The Santa Fe Soul Center is different from any health clinic out there, too. It’s not the typical med-spa where facials and massages are the extent of treatment. This center is science based, with cutting-edge technologies applied to your health and wellness, truly a place where feeling and looking better comes first. Because regenerative health medicine’s revolutionary breakthroughs empower patients to take healing into their own hands, whether it’s sleep issues, weight, chronic headaches, pain, hormonal imbalances, digestive distress, anxiety, or depression. Dr. Robyn Benson (now in her 30th year in practice) and her team specialize in teaching patients how to support their regeneration by design, rather than degenerating and accelerating their health challenges by default. She’s treated well over 100,000 patients and trained other doctors in the art of regeneration, too. She’s found that there are five effective, game changing therapies in addition to acupuncture that truly empower and amplify the existing process of regeneration. Platelet Rich Plasma Therapy uses your own blood and its highly concentrated platelets to stimulate new, youthful tissue, including areas in the face, sex organs, breasts and joints. Prolozone is a method by which a proliferative agent such as dextrose, combined with ozone stimulates the body’s natural healing cascade in order to facilitate recovery from musculoskeletal injury.

t is by no means an exaggeration to call Raymond Kurshals, the founder of Pilates Santa Fe, a Renaissance man of healthcare. In addition to being a Pilates grand master, who studied with pupils of the original founder, Joe Pilates, he is trained in chiropractic and osteopathic medicine; ozone and oxygen therapy; certified in applied kinesiology, homeopathy and nutrition; trained in cold light laser and pulsed electromagnetic field therapy (PEMF) and is also experienced in 5 different styles of massage. Even that is not a complete list. The first Pilates instructor to be asked to be an Olympic coach, Ray has worked with athletes of all kinds, from gymnasts and skiers, to swimmers and equestrians and has been a trainer with the NBA and NFL. He also helps professional golfers to improve their game and is a practicing, licensed EMT (emergency medical technician) as well. With such a wide assortment of knowledge and expertise, it is not surprising—but could well be Santa Fe’s best kept secret—that Pilates Santa Fe offers much more than classes and exceptional Pilates certification training. “There’s so much more to health and wellness than just physical

fitness,” explains Ray. “Human beings have a physical, mental, emotional and spiritual body, and all need to be addressed, because everything is connected.” There are many treatment options to choose from and clients can request a consultation, to determine the best approach for their particular needs. A total health scan is also available, which will provide an analysis of flexibility, strength and neuro-muscular coordination. This can then be used to create a program specifically designed to address physical weaknesses and/or nutritional deficiencies. Some of the services offered by the studio, such as the far infrared sauna, can be used on an ongoing basis. Unlike a traditional sauna, the heat it produces is able to penetrate the body to a depth of 1.5 to 2 inches, boosting the body’s ability to detoxify. A well-established treatment, it is recognized by doctors around the world as the most effective way to remove heavy metals, including mercury. It can also help to relieve anxiety and depression, reduce pain, stimulate the immune system, and assist with weight control, among other positive benefits.

HUMAN BEINGS HAVE A PHYSICAL, MENTAL, EMOTIONAL AND SPIRITUAL BODY, AND ALL NEED TO BE ADDRESSED, BECAUSE EVERYTHING IS CONNECTED Another beneficial wellness option is the ion detox footbath. This particular appliance, made in the USA, was acquired after extensive research and is top of the line. The 30- minute treatment draws out toxic elements like heavy metals, pesticides, herbicides, preservatives, mold, and other chemicals. These pollutants and toxins in the environment build up inside the body, eventually reaching a point where the body’s natural detoxification process is unable to cope, resulting in sickness or disease. Detoxification removes excess toxins and enhances the body’s own natural ability to detoxify itself.

For those living in the high altitude of Santa Fe, Los Alamos and Albuquerque, the oxygen therapy available at Pilates Santa Fe is of particular benefit. It would also help visitors and tourists seeking relief from altitude sickness. Another beneficial treatment commonly used in Europe and elsewhere is ozone therapy. Administered through the ears, since ozone cannot be inhaled, it has been extensively studied for over a century and has been proven to kill off 99 percent of all viruses and bacteria, as well as boosting the immune system. It can safely be repeated a couple of times a week.

The studio also offers a line of supplements only available to professional health practitioners, and now has a certified naprapathic doctor on staff, trained to work with injuries and connective soft tissue disorders. With such an extensive variety of treatments and services available, Pilates Santa Fe may well be able to offer assistance for whatever ails you, physically, mentally or emotionally. ime marches on and combating the inevitable signs of aging has become a booming business. The cosmetic surgery market in the US, valued at over $50 billion dollars in 2018, is projected to reach a staggering $67 billion by 2026. But a shift is also underway. Statistics show that since the year 2000, minimally invasive cosmetic procedures have increased nearly 200 percent, as more and more Americans turn to new, innovative ways to re-shape their bodies and rejuvenate their faces without going under the knife. The Santa Fe Skin Institute is ahead of the curve. “I realized that there was nothing like this in this part of the world,” explains Garrett Werner, the Executive Director, and an aesthetics professional for over 25 years. “Santa Fe seemed like a good place to establish a base for what we are offering.” There are a number of things that make the Santa Fe Skin Institute unique. The first, and most important, is that every member of the team is a board-certified, practicing medical professional, including dermatologists, facial plastic surgeons

Secondly, the services offered include cutting-edge treatments that produce results which are as good as, if not better than, plastic surgery. The prime, top-ofthe-line procedure is RF—a combination of microneedling and radio frequency energy—and two kinds are available, called Agnes and Scarlet. Scarlet can be used anywhere on the face, body or scalp, while Agnes is more intense and targets one specific area, or areas, of the face and neck. These treatments smooth, tighten and firm the skin, while improving tone and texture; three to six appointments are usually required to get the best results. They can be used to address many things, including wrinkles, veins, stretch marks, sagging skin, acne, sun damage… and unlike other, more conventional treatments, there is no downtime, and side-effects, if any, are minimal.

WHERE NATURE AND SCIENCE MEET By Anya Sebastian

My dog was in an accident and was limping with obvious discomfort. I thought about giving him CBD and after just a few days, he made an amazing recovery! Carol, Santa Fe

H

emp Apotheke is not only an exceptional hemp store, it is also a one-stop-shop for health and wellness issues of all kinds, for both people and pets, from allergies to insomnia, stress and pain relief. Owner Gyana Basse is constantly on the lookout for effective new items to add to her inventory. "Hemp and CBD products are constantly evolving and expanding in response to ongoing research," she says, "and we also have other plant-based items like mushroom extracts, essential oils, natural sleep aids and much more." Products come in a variety of different forms - capsules, tinctures, powders, salves, lotions, edibles and smokables with the final choice primarily a matter of personal preference. An exciting new product has just been launched for those who prefer to smoke CBD, rather than ingest it. This new vaporizer completely bypasses the carbon that is usually released when inhaling. Powered by a rechargeable battery, it gently heats the flower, which is loaded into a small, ceramic or quartz chamber, just enough to release the surface oils (trichomes) but not enough to burn the flower and produce carbon. Being produced by zero combustion, the inhaled vapor is both clean and fast-acting, causing neither harshness to the throat, nor inflammation to the lungs. As for common health concerns, like insomnia, pain and stress, Hemp Apotheke offers a wide range of natural aids, including mushroom extracts and essential oils, as well as CBD tinctures, edibles, salves and lotions. With more and more people actively searching for ways to take care of their health without resorting to prescription drugs, it is reassuring to know that there are many natural-based remedies out there, just waiting to be discovered. An exceptionally effective supplement, called kratom, is now available in capsule form, in bulk, in the store. This gives customers the opportunity to try it before

buying a pre-determined amount. Native to Southeast Asia, kratom is a tropical evergreen tree that belongs to the same family as coffee. Traditionally used for medicinal purposes for centuries, the leaves can be chewed, or, after drying, put into capsules, tablets or tinctures, or made into a tea. Laboratory analysis of kratom has shown that it contains powerful, natural opioid properties, that make it particularly effective for the relief of discomfort. It is not, however, suitable for everyone and the knowledgeable sales team in the store will be glad to advise on whether it is appropriate for your particular needs. As for edibles, there are several kinds to choose from, including gummies, cookies, chocolate, energy bars, pecan bars and turmeric paste with CBD, which can be added to warm dairy or non-dairy milk to make 'golden milk.' There is also CBD-infused coffee and tea, that maintain the mental high, but without the nervous jitters, resulting in both mental stimulation and physical relaxation at the same time. Healthy skin has not been forgotten either, as Hemp Apotheke has just launched an exciting new line of stem cell infused skincare products. The star of the show is a break-through anti-aging serum, that mimics the skin sebum of a 22 year-old. Components from the macadamia nut tree, jojoba bush, and green olive tree, are combined with pure essential oils and Hemp Apotheke's broad spectrum CBD, resulting in a powerful, collagen-boosting, anti-aging product that visibly diminishes the appearance of wrinkles and fine lines. Hand-crafted in small batches by Aromaland, the line also includes a facial cleanser, toner, moisturizer and body oil. Products can also be purchased by mail order, at hempapotheke.com. So if taking care of your health and wellbeing, from the inside out, is important to you, head over to Hemp Apotheke to discover and explore the ever-expanding range of possibilities that nature has in store. You'll be glad you did. Hemp Apotheke 1330 Rufina Circle, Santa Fe 505.985.5704 hempapotheke.com

MARIPOSA HEALTH & BEAUTY SPA Where Wellness and Aesthetics Come Together By Anya Sebastian

he name Mariposa Health & Beauty Spa was deliberately chosen to convey something beyond the pretty butterfly logo. “It’s about transformation,” explains Mary Ellen Lopez, nurse practitioner and founder. “A butterfly starts out as a caterpillar, and our goal is to help people to move on to a place where they both feel better and look good.”

She now has an impressive list of qualifications to call upon. In addition to her medical training, Mary Ellen is also a certified fitness instructor, personal trainer and nutrition counselor and she has over 15 years’ experience in aesthetics. She has completed multiple, advanced, in-depth training courses in procedures like Botox and other dermal fillers, and is an experienced, advanced injector.

Mary Ellen began her nursing career at St. Vincent’s hospital and became a Board–Certified Nurse Practitioner after studying at UNM. Born and raised in Santa Fe, she has known, since high school, that she wanted to help others and give back to the community and she finally left the hospital in order to explore a more holistic approach to medical issues. “I respect both Western and so-called ‘alternative’ medicine,” she says, “and they both have their place. I work with both, depending on what people are dealing with. I’m here to help in whatever way I can.”

Her medical background enables her to incorporate blood work, IV treatments, and hormone replacement therapy into the services she offers. The IVs are made-to-measure, and Mary Ellen puts them together herself, incorporating vitamins, minerals, amino acids and whatever else may be required to meet individual needs. There is also a menu book of ingredients that people can choose from. The IV ‘bags’ are created to focus on five main areas: overall wellness, athletic performance and recovery, migraines, hydration, and beauty. For maximum effect, they can be repeated once or twice a month, and are available for both men and women.

Other issues that Mary Ellen is able to assist with include weight loss, depression, general fitness and lifestyle changes. Her medical qualifications enable her to offer assistance in the form of therapeutic injections, including vitamin D, vitamin B12 and her own special formula for weight loss. A blend of vitamins and amino acids, it will boost energy, increase metabolism and utilize fat for fuel. “Hormone replacement therapy is also a big one,” she says, “and it’s something I’ve devoted a lot of time to researching, because it affects many people, but doesn’t get a lot of attention. Getting the right hormone adjustment can be really life-changing, for men as well as for women.” A line of medical grade skincare products, available only to professional healthcare providers, is also available at Mariposa. Specially formulated to deal with a range of issues, including acne, pigment, wrinkles and more, they provide valuable support for spa treatments and can also be purchased independently. The New Arrival is Growing and Expanding By Anya Sebastian

T

he line of breakthrough skincare products, launched less than five years ago by sisters-in-law Dr. Kristina Trujillo and Katie Uilk, has really taken off. The company is now so successful that, in response to popular demand, two new products have been added, an exfoliating scrub and, just in time for summer, a sunshield. Consistent with K&K’s existing line of products, the new additions are both natural and uniquely different. The exfoliating scrub comes in the form of a cream that contains apricot oil as a prime ingredient. High in antioxidants and rich in omegas 6 and 9, it improves skin tone and lightens blemishes and dark spots. Other ingredients include jojoba beads for gentle exfoliation, and antiinflammatory oat kernel flour. The result is a scrub which is both effective and gentle enough to be used a couple of times a week. The cream is simply massaged into a clean, damp face, left on for up to 5 minutes, and washed off with warm water.

28

FineLifestyles SANTA FE & ALBUQUERQUE

Unlike the majority of commercial sunscreens out there, K&K’s sunshield contains neither artificial chemical additives, nor artificial preservatives. The main ingredient is zinc oxide, which is blended with oils that not only have natural sun protective and hydrating properties, but are also anti-microbial and antiinflammatory. It is absorbed quickly, leaving no residue, and for maximum effectiveness, can be applied every 2 to 4 hours. If these products are not yet available on the company website, the QR code below will enable you to check out the rest of the range of products, including the company’s signature breakthrough product, BioVer-X™️, to keep your skin glowing and healthy throughout the summer months and beyond.

ord on the street is that this is going to be a bumper summer season for Santa Fe. The Indian Market is celebrating its 100th birthday, the International Folk Art Market and the Opera are back in full swing, and the inaugural Santa Fe Literary Festival, featuring prominent literary figures like John Grisham and George R R Martin, was also launched this year.

LONGWORTH GALLERY

People who have been confined to their homes for far too long are itching to get out and travel, and Santa Fe, with its unique environment and notable artistic and culinary attractions, is a popular destination. Canyon Road is, of course, high on everyone’s list and the two galleries featured in this section, with their lush, colorful outdoor settings, are especially attractive places to visit at this time of year. The Tierra Mar Gallery welcomes visitors with a prominent display of distinctive, super-size sculptures by ceramic artist Jarrett West, in and around the grounds in front of the entrance. These unique works, inspired by the natural world, are all molded, put together, glazed and finished by hand, by the artist himself, and are intended to live outdoors. They both reflect and complement the environment, their personality shifting and changing with the different seasons, weather patterns, or time of day. West is a well-established local artist and any one of his pieces (there are also smaller ones for inside the home) would be a genuine and enduring Santa Fe treasure. A little further up Canyon Road is the Longworth Gallery, a fine art gallery specializing in metaphorical realism. There are actually two galleries, set inside a beautifully landscaped garden area, and in addition to wonderful paintings, they also offer a limited selection of jewelry, lamps, vases and unusual artefacts. Something you are certain to see nowhere else is a stunning set of kaleidoscopes, each one attached to a base of healing stones, such as quartz or malachite. These kaleidoscopes/sculptures are fully operational, at the same time as being exceptional works of art and would make wonderful family heirlooms.

TIERRA MAR GALLERY

All in all, Santa Fe offers a complete package, able to satisfy a wide range of different tastes—wonderful arts and crafts, great restaurants, live music, cross-cultural history, a range of outdoor pursuits and world-renowned spas. No wonder tourists flock here in droves. How fortunate we are to live here.

JARRETT WEST

SCULPTOR CLAY REDEFINED Anya Sebastian

From the moment he started working with clay, Jarrett West knew what he wanted to do. “I was a high school student at the time and I took to it immediately,” he recalls. “I was a natural.”

THE ARTS

B

orn in Santa Fe and raised on ranches and farms in New Mexico, Wyoming and Idaho, Jarrett had been drawn to the rural outdoors since early childhood and had little interest in, or exposure to, the arts growing up. It was his experience with clay that set him on the road to becoming an artist and after graduating he returned to Santa Fe, where some of the most renowned ceramic artists were living and working at the time. “I started making a nuisance of myself,” he says, “knocking on doors and asking to be taken on as an apprentice. It was the 1980s and I guess things were different then.” His persistence paid off and he completed several apprenticeships over the next nine years or so, learning his craft from people who knew he was serious and really took the time to help and educate him. “I’ll always be grateful to the Santa Fe art community and to my mentors,” he says. “They were definitely my greatest artistic influence.” Jarrett began by making practical objects, like bowls, plates, mugs and teapots, but as time went on he learned how to build kilns, dig native clay and master special glazing techniques. He even ended up designing and building homes. Working on a much larger scale prompted a significant shift in his artistic evolution, especially as the work of JapaneseAmerican artist Jun Kaneko was attracting much attention at that time. Kaneko was completely re-imagining the accepted size and shape of ceramic art, creating sculptures that were as much as 13 feet high, with very distinctive, glazed surfaces, a combination of sculpture and painting. “Having worked in construction for a number of years, that really spoke to me,” recalls Jarrett, “and I remember thinking I could do that.” And that is what Jarrett West is now renowned for, larger-than-life ceramic sculptures, often consisting of several layers that can be as much as 10 feet high, with very distinctive, hand-made glazes and textures that reflect the colors of the natural environment. His work, which is typically very feminine, with soft contours and shapes that reflect the harmony and symmetry of Mother Nature, has often been described as ‘huggable.’ Because they are designed to live outdoors, his sculptures are crafted specifically to withstand the impact of snow, hail, wind,

rain, ice and UV rays from sunlight. They also interact with the environment, their energy shifting to reflect the different seasons and even the time of day, since sunshine and shadows, light and dark, create nuances that produce subtle differences in their shapes and surfaces. As for the meaning of his work, Jarrett prefers to leave that to the viewer to decide. “Like any abstract art, I think it’s important to let people’s imagination run free,” he says simply. A show featuring Jarrett West’s work will be held in July at Tierra Mar Gallery on Canyon Rd., which is proud to provide exclusive representation of his natureinspired outdoor sculptures. The show, called Summertide, will open on July 8th. and run until July 17th. Tierra Mar Gallery 225 Canyon Road 505.372.7087 tierramargallery.com

GAJA WINERY

Giovanni Gaja founded the GAJA winery in 1937 and began producing wines from the family’s 2 hectares of vines in what is now the Barbaresco appellation. Focusing on quality over quantity, Giovanni kept up production during World War II, and in the 1960’s he began purchasing some of the best vineyards of Barbaresco, including the three historic cru plots that have become the flagships of the winery: Sori Tildin, Sori San Lorenzo and Costa Russi. While it was Giovanni who provided the foundations for the family’s winemaking empire, it was his son Angelo Gaja who elevated the family name to the legendary status it enjoys today. From early on, Angelo dedicated himself fully to Angelo Gaja changing the image of the wines of GAJA and of Barbaresco overall by applying his broad, international perspective gained from his travels. He began experimenting with green harvest and other techniques he had learned in France, often against the advice of his father. By the time he fully took over the family business in 1970, he had introduced sweeping changes in both the vineyards and the winery, including green harvesting, planting at higher densities, limiting yields, shortening the pruning of the vines, vinifications with temperature control, shortening maceration time and, perhaps most importantly, the introduction of French oak barriques for maturation with the 1975 Barbaresco cuvée. Angelo believed the French oak barriques would tame and refine the powerful tannins of Nebbiolo, resulting in a softer, smoother style. Gaja’s holdings are now extensive, ranging from Barolo wines from the Sperss vineyard in Serralunga d’Alba, Piedmont; Brunello wines from the Pieve Santa Restituta vineyard in Montalcino, Tuscany; the Super Tuscan wines from the Ca’Marcanda vineyard in Bolgheri, Tuscany; and the IDDA wines from Mt. Etna in Sicily. The world owes a great debt to Angelo Gaja and his remarkable vision. Drinking a Gaja wine is a journey of excellence and an experience not to be missed. hef Fernando Olea, chef and co-owner of Mexican fine dining restaurant Sazón, garnered his second coveted James Beard Award Best Chef in the Southwest finalist title this year. He and Sazón’s co-owners Lawrence and Suzanna Becerra will be heading to Chicago in June for the awards ceremony to see if Chef Fernando takes the title. “Just to have Chef Fernando nominated is an honor for everyone at Sazón,” says Lawrence Becerra. “What’s different this time is that New Mexico and Texas are no longer in the same category – that’s a big deal and gives our small state some room to shine.” Whether or not he receives this great distinction, Chef Fernando will continue to dazzle diners with his sophisticated takes on traditional Mexican cuisine. His culinary artistry, décor designed by Suzanna that spotlights original artwork from contemporary Mexican artists, and exceptional and lauded wine list curated by Lawrence, have combined to contribute to

Sazón’s immediate and ongoing success. Reservations can be hard to come by during peak times like Santa Fe’s busy summer festival season unless booked well in advance. Chef Fernando loves to tweak his recipes with the freshest seasonal ingredients, garnishes and sides. That means that even the same protein – whether seafood, lamb, beef or pork – will be a new and different experience every time a guest comes in. And speaking of wines, Sazón is the place for oenophiles interested in learning more about the little known but exceptional offerings from some of Mexico’s best winemakers. “For a while we couldn’t get anything because of shipping and travel logistics. But with so many good winemakers in the Baja region now, we knew we had to expand our selection. We worked with a distributor to taste them here and added 16 more Mexican wines to the list. Among the new additions are two new reds of note – a Casa Jipi Nebbiolo and a Solar Fortun Syrah,” says Lawrence. “We’ve also added two whites that are perfect for summer: a Palafox Pionero Blanco, a classic Chenin Blanc with a fresh and aromatic palate that pairs perfectly with seafood. The other, a Vinsur Reflejo is a Chenin Blanc/Sauvignon Blanc blend that’s equally delicious that everyone is sure to enjoy.” Already known for its leading selection of tequilas and mescals offered by the glass, Sazón is equally well regarded for its regular Wednesday and Friday flight tastings. Guest sip five tequilas and mezcals and two flavors of Sazón’s house made sangritas, paired with a savor of Chef Fernando’s famous home-made moles. Space is limited for these special events, and pre-paid reservations must be made in advance. Sazón’s talented bartenders also often create special, limited availability cocktails to suit the season. Of course, diners will never be disappointed that their favorite, regular menu libations will disappear. Sazón is not an establishment that tries to fix what isn’t broken. As we head into a Santa Fe summer, pair authentic ambience and exceptional service with delicious, sophisticated interpretations of traditional Mexican cuisine at Sazón. Sassella LUNCH OR DINNER FOR SANTA FE’S SUMMER SEASON

By Kelly Koepke Photography by Herschel Mair

W

hen summer arrives in Santa Fe, there’s no excuse for not being outside and enjoying the mild weather, abundant sunshine and distinctive adobe architecture. And those are just a few of the reasons that lunch or dinner at Sassella, the City Different’s premiere Italian fine dining restaurant, should be on anyone’s menu. That’s right, lunch service is back, every day except Wednesdays. That also means Sassella’s spacious, leaf-shaded courtyard is the perfect spot for al fresco brunch or whiling away the afternoon with a new cocktail in perhaps the most romantic outdoor patio the city offers. And to celebrate the return of lunch service, Executive Chef and co-owner Cristian Pontiggia has added several tempting choices to Sassella’s already delicious menu of traditional Italian favorites, salads and of course, oysters and champagne. A fresh, light pear carpaccio, dotted with Meredith Farms goat cheese, artichoke, encapsulated lemon and mango pearls, mint, pistachios, and aged balsamic is a reinvention of the traditional shaved beef classic. For those interested in heartier fare, the Muffola di Gamberi – seasoned fried shrimp, baguette, pancetta, romaine, tomatoes, giardiniera, and basil mayo served with house made potato chips, plays on the New Orleans classic with Chef’s Italian flair. At dinner, Chef Cristian has outdone himself with a new quail dish, too. The partially de-boned bird is stuffed with sausage, drizzled with red wine rosemary orange demi-glace, and served with Brussels sprouts and mashed potatoes. It’s one of co-owner Lawrence Becerra’s favorites, especially when paired with an Italian wine from Sassella’s exceptional, specially curated wine list. “Here at Sassella, we’re interested in exploring the best Italian wines, particularly from parts of the country that people don’t know as well. They are delicious, lighter pinot style wines and good values, too. We also added two special reserve wines: Bruno Giacosa, Barolo ‘Falletto’, Piedmont, 2017 and Giuseppi Quintarelli, Alzero, 2007. They are both magnificent wines.” Sipping a cocktail is also a welcome pleasure at Sassella, whether on the patio, the bar, or in the gorgeous dining room with its exposed stone walls and décor designed by co-owner Suzanna Becerra. New this season are a number of specialty cocktails made with Amaro, a quintessentially Italian herbal liqueur. The Sicilian Sling is a Tiki classic reimagined with an Italian twist, while the Il Vialé (Italian for boulevard) is a bourbon-based Negroni rooted in the classic Boulevardier. JOSEPH’S CULINARY PUB Embracing the New Normal By Anya Sebastian

T

he unprecedented challenges faced by restaurants over the last couple of years have resulted in significant changes that are likely to be felt for some time to come. “The new normal is not the same as it was,” declares Joseph Wrede, chef/owner of Joseph’s Culinary Pub. “Everything is in a state of flux and people are still adapting to the changes, but the old normal is definitely not coming back.” One of the positive things that Wrede has been noticing in both customers

40

FineLifestyles SANTA FE & ALBUQUERQUE

and staff, is an increased sense of appreciation. After long periods of isolation and a lack of social interaction, eating out is now a special occasion, even a luxury. Everything is taken care of - the food is cooked, expertly presented and brought to the table, together with drinks and any special requests. Unlike eating at home, diners can linger over their meal for a couple of hours and can finally leave without having had to do anything except enjoy their meal. “People have definitely been showing their appreciation by

DINING

leaving generous tips,” says Wrede, “and for the staff as a whole, the fact that we survived the storm and are now back in a familiar social setting, is something we are all immensely grateful for.” People also seem to be becoming more adventurous in their food choices, opting for dishes they cannot, or do not, cook at home. Wrede has definitely noticed an increase in the popularity of items that are labor intensive and time-consuming to prepare, such as his Pad Thai Duck

Confit, with Thai style cabbage, peanuts, egg, rice noodles and crispy duck skin, or Banana Lamb Curry, with lemon turmeric rice. There is also a discernible trend towards eating healthier food and exploring new things. “People are more open to dishes that expand on traditional themes,” observes Wrede. “The status quo is not as valued as it once was.” Hence the popularity of Joseph’s Vegetable Enchilada, with acorn squash, corn, local mushrooms, red chile, Cotija cheese crumble, spinach purée & green rice. Another popular dish is his Root Vegetable Napoleon, with roasted root vegetables, Brussels sprout leaves, sheep cheese, carrot custard, honey, cardamom & espresso dusted phyllo. Perhaps because it is something that people seem reluctant to cook regularly at home, Joseph’s Fish du Jour is also a consistent winner. The ‘special’ features

wild-caught, fresh fish, flown in daily and prepared with Wrede’s customary culinary flair and originality. See page 45 for a typical dish. Fish is also popular with visiting tourists. “For some reason, people seem to associate fish with being on vacation,” says Wrede.“ Because we’re so far from the ocean, we make a point of putting together something really special. It has to be good and fresh; none of our fish is frozen.” Local produce is also favored as much as possible. “Not only does it taste better, but it avoids long supply chains and dealing with corporate farming with no personal connection,” he explains. “Having a local business model is also the most logical way to deal with the economic uncertainty we are dealing with right now.”

DINING

As for the future, Joseph’s is looking forward to acquiring a spirits license, an exciting and welcome new addition to the restaurant, that should be up and running soon. Check the website for updates and opening hours. “We have definitely learned and grown from the experience of the past couple of years,” says Wrede, “and my gift, my contribution to the culture of Santa Fe is to provide a place where the community can gather for an exceptional dining experience. No live music, no entertainment, just good quality food, that tastes good and is prepared with love. I do believe that those who put love into their food will always be appreciated.” Joseph’s Culinary Pub 428 Agua Fria St., Santa Fe 505.982.1272 josephsofsantafe.com

Whether it’s a romantic dinner or just a quiet evening with friends, an evening dining in the patio is a must! Located on W. For the past 7 years, the restaurant has become a favorite with both locals and tourists alike. Food takes a center stage under the highly capable helm of Executive chef Angel Estrada. Estrada is co-owner of the restaurant with longtime Santa Fe restaurateur, Edmund Catanach. “Growing up on a farm, I learned how important it is cooking with fresh produce we had available to us. Making our meals from scratch taught me a valuable lesson in the importance of using locally sourced products that we carry through with in our menu at Midtown Bistro.”

For dinner, try the grilled sterling silver rib eye with green beans and green chile mashed potatoes, the grilled New Zealand rack of lamb, or the Pacific blue crab cakes. All are cooked to perfection and a delight to the palate! For dessert, their carrot cake is a local favorite as well as the chocolate mousse with Chantilly. CHEF'S

MOST POPULAR DISH Sopa de Amor signature soup of Chef Olea My mother used to roast peppers and I remember how the kitchen was filled with this intoxicating aroma. Over the years I experimented with many different ways to serve roasted peppers, and after a lot of experimentation I settled on a soup presentation we call Sopa de Amor, or Soup of Love. The dish plays with sweet and savory with the use of roasted poblano peppers and chocolate; hot and cold with the use of a heated soup topped with a cold almond foam; all served over a lump of blue crab. The effect is extraordinary and it is not only one of my favorite dishes to prepare, but the most popular dish at Sazon.

The now classic Ceasar’s salad made its first appearance in 1924 when restaurateur Caesar Cardini, a northern Italian immigrant who operated Hotel Caesar in Tijuana, Mexico, invented the dish out of necessity when a July 4th. rush on business forced him to use whatever food products he had left in the kitchen. My interpretation of this classic dish is to use a tonnato sauce which is a typically Piedmontese sauce used in a dish called Vitello Tonnato. Made with tuna, anchovies and olive oil, the sauce brings a spicy zing to the Romaine salad, which is presented with a focaccia crostini, parmesan crisp and anchovy filets.

SANTA FE’S RISE At the end of 2020, we thought we had seen it all, but 2021 proved us wrong. The rate of change in our real estate market has been hard to quantify but here we have some standout numbers: an increase of nearly 12.5% in the number of sales and a massive increase of 32% in total sales volume over an already record-setting 2020. Santa Fe is a popular destination for many Buyers. We saw continued interest from major metro areas with inbound buys coming from Los Angeles, Dallas, Denver, and Seattle. We expect this type of demand to continue. *Data from the Santa Fe MLS, BrokerMetrics, and internal metrics.

EXPERT ADVICE SCORPIONS STIRRING IN SANTA FE

WITH SPRING’S RECENT ARRIVAL and temperatures beginning to rise, one of nature’s toughest pests has begun stirring: Scorpions. Notoriously one of the most difficult pests to eliminate, Scorpions spend most of their time tucked away in cracks or crevices and are even found in children’s sand boxes. Although they are not aggressive hunters, their sting can be quite painful, and in the case of one species found in the U.S. (Arizona Bark Scorpion), it can sometimes be fatal. However, it is important to note that scorpion stings can pose a medical threat especially to the young, elderly, and pets. Get immediate medical care for any child stung by a scorpion. If you ever experience any of the following serious symptoms, call Poison Control (800) 222-1222 or go to the emergency room immediately: breathing difficulties; difficulty swallowing or talking; dizziness; drooling/salivation; extreme or persistent pain; hyperactivity; muscle twitching or thrashing; numbness that spreads to entire extremity; paralysis of area or extremity; unusually high or low blood pressure; vomiting; or weakness. Some things homeowners can do to help prevent scorpions include keeping their house clean, de-cluttering floors, keeping your home insect-free, eliminating hiding places like loose rocks, piles of leaves, trash, and other unnecessary debris, consistently trimming tree branches away from a home’s exterior, and sealing

all points of entry such as outdoor cracks and weather stripping such as surrounding doors & garage doors. Most of all, be advised that scorpions are sedentary and prefer the most humid available locations. Being aware of areas conducive

I highly recommend Truly Nolan for pest and rodent control. George thoroughly inspected the interior/exterior of our home. He was professional, knowledgeable and kind.

I signed up for the monthly program that Truly Nolen has in Santa Fe back in November/December 2020. I am so happy that I did! I have a massive ant problem in my house which has been causing me a lot of anxiety. Thomas has been to my house twice - the first time to treat for sugar ants in the kitchen and the second time to begin a treatment plan for carpenter ants. He is incredibly methodical in assessing how the treatment should be done. He is personable and very professional - he’s happy to answer all my questions about ants and explaining his observations regarding how they could have gotten into my house, etc. Finally, I really appreciate him taking my hatred of ants seriously by listening to the problems they’ve caused in my house, as well as walking from room to room with a flashlight and diligently looking for signs of ants, and treating accordingly. Thanks Thomas!

Our long-standing technician, Thomas is efficient and very thorough. He is knowledgeable and considerate in answering all of my questions. Also offering an appropriate amount of small talk while getting the job done. Not to mention he has always been on schedule! We have used their services for over a year, which has dramatically lowered the prevalence of mice/ants in and around our home. Thank you George and Thomas for getting our mice/ant problem under control! JACLYN L. After a long winter, we started seeing some unusual beetle-type bugs. thanks to ongoing service from Truly Nolan year round, they were dead when we saw them. We called Truly Nolan and they came the next day to provide an additional service and identify the bugs. THOMAS THE TECH is our hero. He ALWAYS goes above and beyond. he is pleasant, courteous and knowledgable (and he loves our dogs). Can’t commend Thomas or Truly Nolan enough!

to a scorpion infestation is also important in preventing them from getting comfortable. Such areas include: • Under Garbage cans • Organic matter in and around gardens and plant pots • Under and around rock beds • Untrimmed palm trees, since the fronds collect moisture • and other insects • Old lumber or bricks • Decaying debris such as leaves or bark • Stored boxes • Water meter / irrigation boxes • Wall voids and conduits • Insect infested areas such as attics • Cracks in crevices in J-Trim and built up BBQ grills If you have a scorpion infestation after following the above tips, a call to your local pest control professional may be in order as they will have the expertise and experience to safely remove these pests from your home. SANTA FE A NING KEEPING IT CHILL

S

By Anya Sebastian

anta Fe Awning was started almost 30 years ago by a single dad with two young kids and virtually no income. Jeff Maul did everything himself, working out of his home. He completed design work at the kitchen table, sewed awnings in the living room, and welded steel frames on the back patio. His 12 year-old daughter, Sara, would frequently answer the phone. The company has come a long way since then and recently moved from a 6,000sq. foot building to a 12,000sq. foot space on Rodeo Park Drive. Sara, who went on to get a degree in business, now runs the company and is celebrating her 20th anniversary with Santa Fe Awning this year. “My dad is still very much involved,” she says, “and my goal is to continue to support and expand his vision.” The company’s handiwork can be seen all over town, from the awnings at Meow Wolf, to the impressive, outside shade structure at the Opera House. “Everything is made to order,” says Sara, “and we do all kinds of jobs, from specialty work like the opera, which took 4500 tons of steel to complete and had us working seven days a week, to small window screens and skylight covers.”

the view and the sun would just go underneath them anyway, so screens are really the best option.” Jeff was actually the first to bring 126 inch-wide milled fabric onto the market about 18 years ago. Before that, there was a seam running down the middle of the screen, which interfered with the view and he really wanted it to be a seamless view.

About 80 percent of the company’s business is, in fact, residential and most of that consists of patio screens. ‘Many homes in Santa Fe are west-facing, in order to take advantage of the wonderful sunsets,” explains Sara, “and traditional awnings would block

Technology has, of course, manifested progress in other areas as well. Patio and window screens can now be motorized and operated by cell phone, making it possible for them to be raised or lowered from anywhere in the world.

Warren the rep at Santa Fe Awning, showed us his expertise by designing and engineering a 40 foot, 3 panel shade all operating together. The awning shades the westside of our house which makes evening entertaining more comfortable and prevents the furniture outside and inside from fading. After a couple of months we noticed that one of the fabric panels had a defect, when we called Santa Fe Awning, they came out immediately to look at it. Then they made a new replacement panel at no cost to us.

Patio screens are a popular item, because they block the sun, but not the view, and make it possible to still enjoy the summer weather outside without being exposed to damaging solar rays. Screens also protect carpets, rugs, furniture and works of art from fading and sun damage. Every project starts out with a complimentary on-site design consultation, so if your home has a sun problem in need of a solution, call the experts at Santa Fe Awning. Those summer months are only going to get hotter, after all!

Santa Fe Awning stands behind their work, are always friendly and kept us informed. We are beyond pleased with the results and since the shade has been installed we now enjoy sitting outside anytime of the day and not worrying about the sun shining into the portal and living room. -Debar K.

ACADIA NATIONAL PARK The Crown Jewel of Coastal Maine by Debbie Stone

I

t took one bite of my Jordan Pond House popover to know the accolades about these treats were true. The muffin-like concoction was fluffy and buttery, and served piping hot with strawberry jam. A glass of blueberry lemonade made the perfect accompaniment, as did the picturesque view of Jordan Pond and the Bubble Mountains of Maine’s Acadia National Park. Acadia boasts towering, rocky headlands, a rich cultural heritage and an abundance of diverse environments. Much of the park lies on Mount Desert Island. Use the Park Loop Road to access the island’s notable spots and hiking trails. One highlight is Thunder Hole, a natural rock formation affected by sea conditions. Watch as waves crash into the hole with a thundering boom. Sand Beach is another point of interest. “Polar bears” might enjoy swimming here, as the warmest water temps are a balmy 55 degrees in August. Spectacular vistas can be found at Otter Point and Otter Cliffs, but no otters. Monument Cove is known for its namesake pillar— the result of wave action over centuries—and nearby Boulder Beach boasts bowling ball-sized rocks. At 1,530 feet, Cadillac Mountain is the park’s highest point. If you don’t want to hike to the summit, you can drive to the top for the same vistas.

Lighthouses are iconic in Maine

Biking is also popular at Acadia, particularly on the rustic carriage roads. We have John D. Rockefeller Jr. to thank for this system, as the philanthropist wanted to travel on motor-free byways via horse and carriage into the park. For another view of the area, take a boat trip. Bar Harbor Whales offers daily excursions departing from the town of Bar Harbor. Prepare to be regaled with details about the history, geology, wildlife and more. You’ll hear about “Millionaire’s Row” and its notable residences. Kenarden, for example, belongs to the Campbell Soup family and during the summer, they fly a white flag with a big red tomato on it. Another, the High Seas Estate, was owned by a Princeton professor. Story has it he built the house to entice his fiancé to move here from Europe and marry him. The good news—she agreed. The bad news—he booked her on the Titanic! As for lighthouses, we saw several, including photogenic and purportedly haunted Bass Harbor Light. Staying in Bar Harbor makes the most sense during your visit. This charming community has a colorful harbor, numerous shops and plenty of choices when it comes to accommodations. This is also the case when it comes to dining options. Of course, fresh seafood reigns supreme. I ate “lobstah” in every combination possible. I even tried it in ice cream, which is the only form of lobster I discovered I didn’t like!
