PUERTO NUEVO MEETS ANIMALON BY THE SEA: A SUNSET TO REMEMBER!

mong the culinary wonders Baja has to offer is the lobster prepared Puerto Nuevo Style. The town of Puerto Nuevo, Rosarito, is a sea side village in Baja California where chef Susana Plascencia and her family have owned the historic Puerto Nuevo I and II restaurants for decades. The recipe that has been passed down from generation consists in lobster pan-fried in lard and accompanied by rice, refried beans and the famous Sonora style flour tortillas.

Another highlight of Baja’s cuisine is chef Javier Plascencia’s kitchen. Surprisingly, although he shares the same last name as the family that runs the famous Puerto Nuevo Restaurants, they are not related. However, talent and tradition recognize each other. This led to an unforgettable collaboration between chef Susana Plascencia, her son Alan Bautista and chef Javier Plascencia, aboard the Animalon by The Sea. This dinner party, hosted for close friends and family, was one for the books!

Guests were welcomed at Javier’s floating restaurant with a refreshing drink as the hustle and bustle in the kitchen promised a spectacular meal. Watching the sky turn from blue to pink to orange until the stars peeked out was spectacle in itself, pairing it with such a remarkable culinary experience made it a sunset to remember. With the famous Arch and a full moon as witness, dinner was served. The traditional sides, huge flour tortillas, beans and rice adorned the plates as the pièce de resistance made its way to the tables. It was time to eat lobster! This particular way of eating lobster is far from glamourous, as chef Susana Plascencia taught the Destino team how to yank it from its shell using her hands and a fork. This collaboration goes to show all the wonderful dishes, recipes and chefs Baja has to offer the world!
