Welcome to the December issue. “December’s wintery breath is already clouding the pond, frosting the pane, obscuring summer’s memory...” – John Geddes, A Familiar Rain The holidays are officially in full swing! But as we cheerfully decorate our cozy homes with twinkling bulbs, ornaments, and tinsel, we hope everyone remembers those in our community who are not as fortunate as we are. Some of our neighbors do not have a warm place to sleep or food to eat. So, this month, JC Summerford tells us about a couple of local charities that could really use your generosity and volunteer spirit during this season of love and giving. Our contributor Linda Wilson profiles prolific North Carolina artist Bob Timberlake, whose artworks often depict nostalgic, natural winter scenes. By coincidence, it’s Bob’s 50th anniversary as a professional artist! For those of you who crave total holiday immersion, we offer some “Making Memories This Holiday” with destinations that offer unique light displays, Christmas music, hay rides, and much, much more, all within a short drive from home! Many towns begin holiday celebrations in November, but a few wait until early this month to put on their parades and festivals. The Hickory Music Factory hosts an old fashioned 1940s Christmas 4

Radio Hour at Drendel Auditorium, 243 Third Avenue NE on Saturday, December 14th. The live performance features local artists and the Hickory Jazz Orchestra. Audience members are encouraged to dress in period attire! The City of Conover’s Christmas in the Park takes place the evening of Tuesday, December 3rd at Downtown Park. It features a choir, Santa’s arrival, and the annual tree lighting. Valdese’s Holiday Decoration and Downtown Window Display Contest starts December 2nd and runs through the 20th.

lmost every town puts on holiday celebrations, from parades to shopping events to light shows. But for those of you who are looking to make more Christmas memories, we’re offering a few ideas that might be worth a bit of a drive! Biltmore Estate More than fifty hand-decorated trees grace this year’s Biltmore House Christmas displays, including a 35foot Fraser fir. Around the magical estate, you’ll find a 100 more trees, plus thousands of poinsettias, garlands, wreaths, and kissing balls. Day and night tours are available through January 5th, but you’ll need a reservation. For details, visit biltmore.com. National Gingerbread House Competition If you’re visiting Biltmore, check out the 27th annual National Gingerbread House Competition in nearby Grove Park, which runs through January 4th. The Omni Grove Park Inn welcomes visitors Monday through Thursday, and Sunday afternoons, excluding holidays and certain other dates. Check out omnihotels.com for more. Lake Norman Flotilla The Wrightsville and Carolina Beach Flotillas are impressive, but Lake Norman’s annual Keelboat Flotilla and Parade of Lights on December 7th promises to be equally spectacular! Winter Lights at North Carolina Arboretum This nationally renowned botanical garden near Asheville presents a three-acre holiday walking tour through January 4th. Christmas Town USA For a totally immersive Christmas experience, you must visit McAdenville. This year marks their 64th annual Christmas Town, which kicks off with the tree lighting on December 2nd and runs (evenings) through the 26th. Zootastic Park Christmas Wonderland of Lights Through January 1st, visitors to this Troutman animal park can drive through a holiday light display and reindeer forest, plus visit the animals, for $8. For details visit zootasticpark.com. Moravian Cookie Trail Moravian cookies boast a distinctive North Carolina history. The Moravians, a religious group from Eastern Europe, settled in today’s Winston-Salem in 1753. They brought with them special recipes for super-thin cookies, flavored with ginger, molasses, and cloves, made especially for the Christmas holidays. Tanglewood Festival of Lights If you’re in the Winston-Salem area, you could also stop by the Tanglewood Park Festival of Lights in Clemmons. Lean Into Your Dreams

Imagine you’re shopping for Christmas presents for sisters, moms, girlfriends. You stumble upon a boutique you’ve never shopped. Fashions in the window catch your eye, so you wander in. The first thing you hear are two lovely women, Kelley and Michele, obviously shopping with sweaters and necklaces in hand, saying, “This is such a fun store!” “I’ll drive back from Durham to shop here!” “I love this hat!” It makes you wonder what’s going on. This was my experience at Splentique, and I will tell you, I’ll be back, too. I bought two gifts and had the pleasure of chatting with owner and retail diva Regina Stiltner—I learned a lot. “It took me several personal life changes and challenges to real12
HICKORY LIVING • DECEMBER 2019
ize that life is too short…that we need to lean into our passion,” Regina told me. “This business, Splentique, is a result of knowing that time is our greatest gift, family is who we are, and community is where we live.” A BIT OF HISTORY Regina’s story is impressive. She has been in the retail industry for over 20 years, wearing many hats with large and small companies. She started as a sales associate in high school with a family-owned business that eventually became a 300+ store chain, Body Central. She worked her way into management, moving to Asheville and Charlotte. Later, “I went to the Art Institute of Charlotte focusing on interior design,” she said, “but actually ended up back with Body Central in many roles—from district manager, learning and development, and finally in marketing as the head of visual merchandising for that brand.” Those roles took her from North Carolina to Pennsylvania and then to Jacksonville, Florida. She eventually moved back to Hickory, bringing her experience to Talbot’s, a fine women’s clothing retailer where she was district director for over 20 stores.
“I learned so much about working with customers and employees—building brand loyalty—I got a lot from that experience.” Regina’s passion however is in buying, merchandising, visual, marketing—the creative side of retail. Her passion also lies with her family. This was when Regina’s epiphany moment happened. “I was a busy working mom, traveling with long hours, very involved in my work, but when my son, Gavin, was born premature, and when Gary and I had to spend so much time with him in the NICU, I learned how precious time really is,” Regina shared. “I knew I needed to change my life and find ways to make a difference in the world. Being faced with what is truly important, that changed me.”

THINK DIFFERENTLY After a deep family brainstorming session with her husband, Gary, and daughter, Taylor, Regina put the idea of an online store out to the universe, but, “after giving that a try, nothing happened,” she said. “I’m used to brick and mortar—I was out of my comfort zone. short, I started out by hosting in-home parties and got valuable feedback watching what women looked at, what they touched, what they tried on.” From parties to pop-up events, traveling mini-stores, barn sales, and learning from other entrepreneurs who were marketing this way, Regina saw her experience and ideas all merging into her first store in downtown Hickory. And the rest, as they say, is history. “If you’re in business for the right reasons and realize that your product is just a moment in time—something bought and sold—then your mission becomes your focus, really,” Regina explained. “This store allows me to reflect on everything I’ve learned and to share that with others—my employees, my customers, and the community. It’s very satisfying, and I love it all!” STYLE IS A LIFESTYLE “Taylor actually came up with Splentique,” Regina said. “She felt it says it all—Splendid-Boutique. Taylor’s in 8th grade now, she loves to draw, loves playing piano and guitar with her sister Zoey, and best of all, she helps me a lot.” Indeed, Splentique is a beautiful boutique and fanciful gift gallery. The displays are whimsical, artistic, and many are hand-made. In fact, redesigning and fashioning the interiors was a labor of love. With sunny windows, hardwood floors, and rustic details, you’ll enjoy being there. “A huge part of my mission is to create a store with heart, a brand with soul and character,” Regina said with a smile, “to do a little good in the world helping women feel great and look amazing. Bob Timberlake North Carolina Artist for almost 50 years By Linda B. Wilson

Last month when Gloria Hager, owner of GG’s in downtown Statesville, celebrated 50 years in retail business, she did it with her usual, tasteful flair. Selling quality art and featuring local artists are a major part of her business, so it was no surprise that her special guest was North Carolina’s own, Bob Timberlake.

The Inn at Chetola Resort in Blowing Rock is one of his designs. It features his furniture and home decor. “Blowing Rock is one of my favorite places to fish and enjoy the mountains,” Bob says.
You may have heard that Bob is as down-to-earth as anyone you are likely to meet. That is very true of this renowned artist, top designer of furniture, cottages, and home décor. Bob is a true southern gentleman. 2020 marks Timberlake’s 50 years as a professional artist. All the fame he has experienced these last 50 years hasn’t changed the man who loves the outdoors and finds beauty in simple rural settings. His renown lies in his depiction of these iconic places in detailed watercolor paintings and reproductions. Internationally acclaimed realist painter, Timberlake is also known for his furni22

After graduating from UNC Chapel Hill, he made his home in Lexington, where he and his wife have three children and seven grandchildren. In 1990, he launched a very successful furniture line which has passed the $1.5 billion
mark in wholesale sales. These designs led to Timberlake being inducted into the American Home Furnishings Hall of Fame. Bob is also a great sportsman, enjoying many outside activities. If you have followed his career, you know his paintings have been exhibited in the world’s most prestigious museums and galleries. He was the first artist to sell out a one-man show at Hammer Gallery in New York before the opening. He has been honored by US presidents for his accomplishments and was summoned to Buckingham Palace by Prince Charles. Quite an accomplished life for a man who never had any formal art instruction. “I never remember a time when I didn’t draw and sketch,” he recalls. His legacy will no doubt live on with his children and grandchildren. Working closely with Timberlake is his granddaughter Evanne. “She has been working with me in the gallery since she was three, and she’s one of the most creative people I know. Evanne is a
talented artist in her own right but not in my shadow,” Timberlake explains. “We work together on projects, and she knows she has my love and support in whatever she chooses to do.” Reflecting on his career he says, “I have been fortunate to have a supporting family, friends, and acquaintances who have helped me achieve my dreams,” Timberlake adds. “In the future, I want to continue doing all the things I love to do, art, design, outdoors, and time with family and people I love. People ask me if I still paint. I can’t imagine not doing what I love the best. If I lived a thousand lifetimes, I wouldn’t have time to paint everything I want to paint or do all the things I want to do.” In other words, Bob isn’t slowing down any time soon. Timberlake says one of his favorite quotes is, “A love unexpressed is only an illusion.” Look for press releases next year on the celebration of his 50th year as a professional artist. For a day trip, I recommend visiting The Bob Timberlake Gallery, a 15,000-square-foot retail space at 1714 E. Center Street, Lexington, NC. The building features his art, apparel, furniture, home accessories, and gift selections. Thank you, Gloria Hager, for bringing Bob Timberlake to Statesville. He said he especially enjoyed seeing old friends and making new ones.

he holidays are traditional times to feel love and generosity toward friends and family, and needy causes. Many of us will give seasonal gifts and cash to non-profit organizations or volunteer our time. Maybe you already have a favorite charity. But if you’re still looking for a cause, first consider your beliefs. Do you care deeply about environmental issues? Education? Homeless people? Animals? Once you decide where your heart resides, do a bit of online research to learn about organizations’ missions, operations, and financial makeup. Sites like CharityNavigator.org, GuideStar.org, or GiveWell. org can assist you. It’s a good idea to call or write your chosen charity to get a feel for who they are and what they do. There’s no question that giving strengthens our personal values and principles and sets a strong example for children. If you’re short of money this year, volunteer. Sometimes a strong back, valuable skill, or loving attitude is worth much more than cash! Other benefits of big-heartedness are a feeling of oneness with your community and a sincere gratefulness for everything we have. In fact, why not consider giving to your chosen charity year-round? Greater Hickory Cooperative Christian Ministry By JC Summerford | Photos provided by GHCCM The mission of Greater Hickory Cooperative Christian Ministry (GHCCM) is to provide hope, help, and healing for people in need through service, advocacy, and community support. GHCCM began non-profit operations in 1969, funded by Hickory area churches. Today, the Ministry has a full staff of employees and more than 300 volunteers. GHCCM assists about 2,000 people each month from a variety of backgrounds and circumstances. These individuals and families from Catawba County and surrounding areas typically fall 200% below the poverty level, according to US government guidelines. Many of them face difficult life issues, such as drug dependency, emotional and mental challenges, abuse, homelessness, unemploy-
ment, poor health, disabilities, a lack of education, and inadequate money for day-to-day living. For that reason, GHCCM offers a wide array of services: Financial assistance for rent, utilities, and transportation. Once an immediate crisis is resolved, clients may receive additional support in order to gain stability. Food for both emergencies and ongoing nutritional needs. Clothing and housewares for homeless folks. Donations and purchases at the group’s thrift store support all services offered through the Ministry.
Healthcare services, including low and no-cost prescription drugs, specialty care, limited primary care, dental, and vision care. GHCCM also offers counseling for those suffering from mental health problems and substance abuse. NETworX is a faith-based initiative that engages the community in helping lift families out of poverty. Wellness-Recovery-Action Plan (WRAP) helps GHCCM understand and work with local residents to improve their emotional, financial, and spiritual stability. The SOAR program assists people in applying for Supplemental Security Income

Whole Life Center offers holistic next-step services to help people gain independence and live abundant lives in a convenient and accessible location. The Center addresses housing, employment, nutrition, financial difficulties, healthcare, education, and more. GHCCM depends on donations year round, but the holidays and colder months bring even more urgent needs. As winter approaches, their clients need blankets and warm clothing, food, household items, medications for colds and flu, and medical care. A
bout twenty years ago, Debbie Haynes, the founding director of Safe Harbor, started ministering through her church, Hickory Community Chapel, to women incarcerated at the Catawba County Jail. Seeing the brokenness and despondency of these women, she prayed fervently for a ministry that could help them upon release. In 2006, the first arm of Safe Harbor’s ministry, The New Day Program, began operations. Safe Harbor’s main mission is life transformation. “Our mission statement is ‘A Christ-centered community for rebuilding, renewing and recovery,’” according to Jackie McKool, director of development. “The purpose behind everything Safe Harbor does is to be the hand up and to empower people to walk out into all that God has called them to be and do.”
Through their day program, called NOW, Safe Harbor provides services to women and children experiencing homelessness, assessing their needs and connecting them to badly needed resources such as housing, employment, education, emotional wellness, recovery and parenting. Their Whole Woman Residential Recovery Program helps women heal from the traumas that led them into addiction, and to recover from it. “Those served through the NOW program primarily come from the immediate area,” Jackie says. “We collaborate closely with Salvation Army, where a lot of these women are sleeping at night. The women in our residential recovery program come from all over the state and even beyond. A lot of the time they are coming from prison, the court systems refer them to us, along with a handful of detox centers.”
Safe Harbor also provides transitional housing for women. This year, the group launched a co-ed Recovery Community Center where folks in recovery can gather in the evenings. Here, they learn that the opposite of recovery is not sobriety, it’s community. “99% of the women we serve in the Whole Woman residential recovery program have been sexually and/or physically abused at some point in their lives, a lot of the time as a child and at the hand of their protector,” Jackie says. “Through the love, nurturing, counseling, and holistic healing provided by Safe Harbor and community professionals, this trauma can be overcome, and a life healed.” ReSource Warehouse, an upscale thrift store and Safe Harbor’s social enterprise, provides work experience for the women

in the Whole Woman program. Typical items for sale include furniture, housewares, books, and clothing. Proceeds from all sales go directly back into the ministry. The number of women served varies. The group’s residential home houses up to six women, and there are plans to add more. They also offer 13 transitional apartments for women and children. Crisis relief services vary by the day, but through September 2019, such visits for this year exceeded 1500.
Most of Safe Harbor’s clients need housing and transportation. Donations of money to the charity are most helpful, but they also accept cleaning and paper products, and personal care items such as deodorant and body wash. 125g (4½ ounces) dark peppermint chocolate (Equal Exchange brand is my favorite.) 4 responsibly laid eggs, separated 4 tablespoons (40 g) coconut palm sugar 2 tablespoons cacao powder, plus a little extra for dusting (I love Navitas brand.) For the filling ¾-cup organic powdered sugar 7 tablespoons unsalted butter, softened 7 ounces goats’ cheese 1 dark chocolate mint crunch bar, chopped (I prefer Equal Exchange brand.)

Flourless Dark Chocolate Peppermint Cream Cheese Roulade
This chocolate roulade has a dark, heart-quickening chocolate intensity that’s paired with a creamy meltin-the-mouth filling that passes all the crucial tests for depth of flavor, supreme lightness, stick-to-the-fork moistness and neverending bliss. A roulade that is a gift from heaven, as it’s low in sugar, gluten free, and chock full of protein and antioxidants, too. It’s a perfect holiday (or anyday) dessert, just be sure to leave a piece or two for Santa!

Line a 9 x14-inch baking tray with parchment paper, and preheat the oven to 350 F. Melt the chocolate in a heavy enamel pot on low heat just until melted. In another bowl, mix the egg yolks with the sugar and add the cocoa powder, stirring until the mixture is thick. Pour the melted chocolate into the egg yolk mixture, and stir until combined. In a separate bowl, whisk with clean beaters the egg whites until stiff, and then beat or fold the egg yolk mixture in gently. Pour the mixture into the pan, and bake for 15 to 18 minutes until springy when touched.

Invert cake onto a piece of parchment paper dusted with cocoa and powdered sugar, remove cooking paper and cool. For the filling, beat the butter, cheese and sugar until light and fluffy. Add a little water if too thick. Spread onto the cake, and sprinkle with some of the chocolate peppermint. Roll up the cake from the long horizontal side onto a serving platter. (Don’t worry if it cracks a bit.) Place remaining frosting in a plastic bag with one tip cut off, and drizzle over the cake. Garnish with the rest of chocolate peppermint and mint leaves. Cut across into slices to serve. Makes 8 to 10 servings.
