here are lots of fun things to do this month! Families will be preparing for Easter, which is Sunday, April 17th. Shopping for Easter outfits, dying eggs, filling baskets with goodies, and sunrise services are all traditions that many families still practice. They were all a big part of my childhood memories. My sisters, brothers and I would dress up in matching clothes for Easter Sunday and just about freeze at the sunrise service! Then we would go to our grandmother’s house for lunch and an egg hunt. I hope your family takes the opportunity to create similar memories.

Container Gardening

There is rarely an outdoor space too small to have a garden. Container gardens are popular for small spaces, and vertical plants or vines can utilize wall space or a trellis to create privacy. When designing for a small space, such as balconies, floor real estate is at a premium. Think up. Adding hanging plants or planter boxes on the railings, and a vertical shelf or wall shelves can make room for plants without using much, if any, floor space.

One approach to container gardening is the thriller, filler, spiller technique. You start with a tall (thriller) plant, perhaps a tall grass or flowering plant like snap dragons. Depending where you place your container, you would either put your thriller plant in the center of the pot or the center-back of the pot if it will sit close to a wall. Then you add your filler, which is a medium, mounded -shaped plant around the thriller. Last, but not least, add a plant that spills out over the pot, the spiller. This type of planting elevates your container garden…the different plants and heights make it more interesting . Large pots displayed at an entrance can bring lots of color and elegance to any curb appeal. Containers filled with plants can serve as a privacy barrier for patios, or divide an outdoor space into specific areas. Don’t be afraid to add potted flowers to your garden. A concrete pot filled with colorful blooms can be a welcomed addition when nestled in front of evergreen shrubs, and herb gardens do quite well in containers. If you like to drink mojitos consider planting mint in a pot on your patio or deck. Mint is a perennial herb that can become invasive if planted in the ground but is easy to grow in a pot—it will get about one to two feet tall.

A Passion for Cars By Peter Eisenhauer

Skill, enthusiasm, and care. Going into its fourth year in business this month, Conley Motorsports in Hickory has a proven track record of providing expert maintenance and repair work for owners of Porsche, Audi, and Volkswagen automobiles. Customer Reg Williams has entrusted his cars to owner Justin Conley since the time Justin was the repair supervisor at a local dealership. “He quickly became my go-to guy,” said Reg. “When he decided to go out on his own, it was a no-brainer to stay with him. Justin has always been passionate about the cars, and he has put his heart and soul into having his own shop.” 14

Like many youngsters in Catawba County, Justin grew up with a fascination for motor sports. He raced motorcycles for a while, and at an early age he developed a fondness for the German cars he works on now. His first car was a 2001 Audi S4. When he bought it used in 2005, it had a bad manual gearbox. Justin rebuilt it himself. So it was natural that immediately upon graduating from high school, Justin enrolled at the NASCAR Institute program in Mooresville—learning basic auto mechanics, as well as the more specific demands of servicing track cars. After finishing that program, he jumped at the chance to spend six months in Southern California to get certified as a mechanic on Porsche, Audi, and VW cars. “For no particular reason, other than I love those cars, and I was 19 and could do what I felt like doing.” With the training credentials in hand, Justin went to work for the dealership and spent the next ten years perfecting his craft, gaining experience with cars and the car business. While building up his experience and relations of trust with regular customers, Justin also kept a toe in the water in the racing world. Reg, who also owns and races track cars, notes that organizations like Gold Crest Motorsports from Atlanta, which services highpowered race teams, have hired Justin. “They recognize his talents and his ability to work with the high-tech sophisticated machines,” Reg said. “The tolerances are so much tighter, and the stakes are so much higher when you have $200,000 machines that run to 9000 rpm and hit speeds of 170 on the back straight.” Customers of Conley Motorsports can feel confident that if Justin can handle sophisticated racing machines, he has the skills for anything. And for those who do have the desire to take their street cars to the track, he obviously knows how to set up a car for those demands. Reg marveled at the way Justin quickly swapped out the entire motor of the car when one of his racers had timing chain issue at the Circuit of the Americas (COTA) in Austin, Texas. Similarly, at Sebring, Justin and Luke Buckner (who is the shop foreman at Conley Motorsports) saved the day with an overnight motor and clutch replacement.

sports, making for very satisfied customers. According to one online review: “In and out in 15 minutes! Came out to the parking lot, changed out a door latch, and I was on my way!” Justin says his business focus is firmly on the needs of those who enjoy the driving experience and feel of these makes for ordinary street driving. The shop’s online reviews reflect that focus. One describes Justin and his team as “conscientious, honest technicians who will put your safety first and foremost!” Another writes that “a customer that goes to this facility is treated like family!” Many customers would also agree with Reg’s comments about Justin’s straightforward approach. “I really appreciate his honesty,” Reg said. “When he tells you what the car needs, you can count on him to go out and find that part at the best price for you.” You’ll be welcome at Conley Motorsports by receptionist Heather Belton. Falsely Accused of Domestic Violence By Heather Higgins, Defense Attorney

A

fter the vows are made and the cake is cut, what is the next thing on a newlywed’s mind? Generally, it is not domestic violence issues worming their way into newly wedded bliss, but unfortunately, it is a more common occurrence than most people know. Who is an abuser? Are all abusers really what they seem? Unfortunately, the legal system has many loopholes, and one is that it can be used in a way that is not always proper or truthful. Many times, domestic violence protective orders, or DVOs, in the state of North Carolina are abused by the ones claiming to be the victims. Maybe the plaintiff/victim wants sole custody of the children. Maybe the plaintiff/victim wants to get the defendant out of the home to begin filing for divorce. There are many reasons a DVO can be taken out by a plaintiff, and it is smart to seek legal representation to talk through the specifics. If this is where you or a loved one finds yourself, the best advice is to seek legal counsel as soon as you are served with your official paperwork. As an attorney who handles domestic violence protective order cases, I always advise clients to get into my office as soon as possible. DVOs are much different than being served with any other type of civil ac-

tion in the court system. An individual will have a court date that is within 14 days of the filing of the action, and the individual will only have 10 days to answer and counterclaim against the original action once they are served. Further, DVO actions are very fact, date, and circumstance specific. Many differing details go into defending against the claims lodged in a complaint for a DVO. It is smart to seek guidance from an attorney who can direct you to the best possible evidence that will help aid in your defense. DVO court is an arm of the civil courts in North Carolina, and as such, an individual has a right to an attorney but not to court-appointed counsel. Many times, this leads individuals to forgo their right to an attorney in DVO court simply believing I they will go in and, “just tell the judge the truth.” Sadly, I have seen too many innocent people still have a DVO granted against them even after they attempted to fight it on their own. This is because in acting pro-se, or as your own counsel, you will be held to know the Rules of Evidence, The Rules of Civil Procedure, and all relevant case law in the state of North Carolina. Because of this, many defendants find themselves unable to show the judge evidence that they may have or unable to elicit the testimony needed to defend their claim as because

they are held to the level of an attorney, and they simply do not know the law at that level. As an attorney I know the law, I know court procedure, and I know the best practices to properly defend these actions. I stand as a line of defense to ensure that innocent people can come into court, and with my help, all they must do is, “tell the judge the truth.” I handle the rest. I hear it time and time again, “I never thought they would do this.” “I can’t believe this is happening to me.” Most people are shocked when served with a DVO. Conover Nursing & Rehabilitation Center Builds on its Strengths

Maybe it’s a form of resistance training, where you build strength by pressing against obstacles. Coming through all the challenges health care providers experienced in the two years of the pandemic, Conover Nursing and Rehabilitation Center (CNRC) has gained strength in its mission to provide the best possible therapy and nursing care. Retaining and developing staff are two of the keys. “We do not use agency supplied direct-care staff or therapists,” said Todd Roper, administrator. Even during the most demanding period of the Covid pandemic, they were able to rely on in-house staff. Proud of its identity as the only family-owned rehabilitation facility in Catawba County, CNRC also values giving back to the community. “When a lot of people were laid off during the pandemic, we saw a need to help those who were interested in getting into the health care field,” said Todd. CNRC developed a Certified Nursing Aide (CNA) community outreach program, the only one in the area offered by a working 28

HICKORY LIVING • APRIL 2022

nursing facility. Designed by CNRC’s Jennifer Haynes, MSN, RN, CDONA, the program offers candidates a paid position while they study and gain the experience and knowledge required for certification. CNRC also covers instructional costs and fees for the state exam, said Jennifer, CNRC’s director of nursing. Since gaining state approved in early 2020, the training program has proved popular. More than 60 applicants came from all over the state for a chance to earn one of the 10 seats available in each class. CNRC has now celebrated the graduation of four classes, approximately 40 students. The next program begins in late summer, and CNRC is welcoming applications. Nicole Roper, Ed.D, SLP, director of therapy, who is celebrating 15 years at CNRC this month, says the continuity of CNRC’s therapy staff is good for patients. “It’s nice that patients who return know their therapists and see a lot of familiar faces,” Nicole said. “We get many repeat customers due to patients’ positive experiences with our staff.” “When I came here, I couldn’t even get out of bed,” said Lee Reese. “Now I’m walking on my own.” Lee, who was referred to CNRC after being hospitalized with COVID-19, credits the specialized expertise of the therapists for his progress. “They have people who work on your upper extremities, and people who work on


your lower extremities,” he said. “They even have someone who helps with the COVID brain fog.” “If you need therapy after any kind of illness, we’re here for that,” said Nicole. She noted that CNRC offers all types of rehabilitation, from orthopedics to neurological for stroke patients. The Center also has a specialist who works with Parkinson’s patients.

CNRC continues to maintain and improve its facilities, keeping the needs of all patients a priority. Nicole points to a recent landscaping project. An outdoor area was resurfaced with artificial turf, leveled, and paved so patients in wheelchairs could enjoy this entire outdoor space. Summing it up from a patient’s point of view, Lee Reese said, “They keep the

place clean as a pin, and it’s just a wonderful place to get therapy.”

uring the past few years, weddings have taken on a new twist with microweddings and elopements. Large celebrations took a back seat because of the limits on the size of gatherings. Some couples said their vows at city hall and are now planning a party for their first anniversary when they will renew their vows in front of family and friends. Outdoor weddings are continuing to flourish due to the pandemic, and couples have been released from a lot of traditions. While some still embrace the intimacy of micro-weddings—no more than 50 guests—2022 is bringing back larger celebrations. We’re ready to celebrate in a big way! Look for over-the-top ceremonies and receptions this year. Choosing a destination wedding is popular again. Most are choosing to stay stateside, but for those considering traveling outside the United States, think of all the activities you can plan for your guests as you explore a new, exotic or old-world location. It doesn’t have to be a far-off destination to enjoy a weekend wedding. With events planned for several days leading up to the ceremony, everyone has more opportunities to socialize and experience the local atmosphere. October is still the most popular wedding month for the sixth year in a row. As far as color goes, greens are always in style. Spread it throughout

the centerpieces and room decor. It pairs well with any color or can stand on its own. Whether you want a monochromatic wedding scheme with blush or pastel colors, or you want to dress your wedding party in jewel tones, everything will be beautiful! Also, more casual weddings are gaining popularity.

Breaking Tradition

Small things, like wearing tennis shoes instead of dress shoes with your wedding attire, brides sporting jumpsuits instead of dresses, or opting for food trucks instead of a sit-down, catered meal are all ways of breaking tradition that can make your wedding your own. Although I’m not a big fan, some people are choosing to send electronic invites instead of traditional, mailed invitations. I think the invitation sets the stage for the event and getting an electronic invite doesn’t offer the same impact.

Wedding traditions have become more flexible over the years, and the pandemic forced people to get creative when they exchanged their vows. This trend in breaking tradition continues

…everyone should feel relaxed and taken care of. with the goal to make each couple’s nuptials a unique experience. Re-think a few traditions or all of them if you want, just keep your guests in mind when you do it. More and more, couples are focusing on their guests’ experience, while staying true to themselves and what they want their special day to be. If sustainability is important to you, use local vendors to support their businesses, don’t use plastic anything, donate your floral arrangements to nursing homes after the ceremony, or

One option that I do love is couples creating an experience-based wedding gift registry instead of the traditional china pattern and household registry. When you invite older guests, give them the option of purchasing a gift. However, one etiquette rule that should never go out of style is hand-written thank you notes. The evolution of weddings has created unique and beautiful options for those planning their nuptials. I’m so excited to see what this year brings!

factory but burned during the Civil War. Since waterpower was still available, it was then used as a laboratory to turn locally grown, indigenous plants into medicine for the Confederate troops. After the war, the mill was rebuilt into its current footprint by D.E. Rhyne and was operational until the 1990s as a yarn manufacturing plant. After being boarded up for more than a decade, it was donated by the Rhyne family to Preservation North Carolina who then sold it to John and Cyndi Dellinger in 2007. It took five and a half years to renovate. Among many other changes, floors were repaired, bricked up windows were restored, the roof was replaced, and a house moving company even jacked up one end of the mill so supporting pillars could be built to fix settling from previous water damage. The Laboratory Mill opened for its first official wedding in August of 2013. Many people who live in the area have parents and grandparents who worked in the mill, and the Dellingers are proud to be a continuing part of the rich history of the Laboratory Community. What’s Cooking?

Vibrant Spring Green vegetables are here! Crisp asparagus, tender greens, tasty spring peas, crunchy leeks, earthy spring mushrooms, spring onions, new potatoes, tarragon and dill… all will be coming into their peak of flavor soon! Here are 2 simple recipes to help you celebrate this beautiful new season and spring your plates forward with nature’s fresh spring green vegetables!

Spring Vegetable Orzo with Sea Bass Servings: 4 • Prep time: 10 minutes Cooking time: 25 minutes INGREDIENTS 2 tablespoons unsalted butter (or olive oil) 4 large scallions, thinly sliced 2 garlic cloves, minced 5 ounces baby spinach leaves (5 cups), coarsely chopped 1 teaspoon kosher salt 1 ¾ cups low-sodium chicken or vegetable stock 1 cup orzo 1 teaspoon finely grated lemon zest (from 1 lemon) ½ cup crumbled feta, plus more for garnish ½ cup frozen peas, thawed (optional) ½ cup chopped fresh dill or flat-leaf parsley ½ cup pine nuts, toasted (optional) 2 tablespoons olive oil 4 sea bass fillets (approx. 4 oz. each)

DIRECTIONS • Preheat the oven to 350 degrees. Melt butter in a large skillet over Medium heat. Stir in about three-quarters of the scallions (reserving green parts for garnish) and garlic, and cook until softened, stirring frequently, about 3 minutes. • Stir in stock and bring to a simmer. Stir in orzo and a sprinkle of lemon zest. Cover and simmer over Mediumlow heat until most of the liquid is absorbed, about 10 minutes, stirring occasionally. • Add chopped spinach, adding in batches if it doesn’t all fit in the pan at once, and 1 teaspoon salt. Continue to cook, while stirring, until spinach is wilted, about 3 minutes. (Note: Add a splash of water if needed, to get the spinach incorporated.) 38

• While orzo cooks, heat 1 tablespoon of olive oil in a separate skillet. Brush sea bass fillets with 1 tablespoon oil, and season both sides with salt & pepper. When the pan is hot, add fillets and sauté until browned, approximately 2 minutes each side. Finish cooking in the oven (top rack) for about 10 minutes. • Finally, stir crumbled feta and peas (if using) into orzo, cover the pan, and cook for another 1 minute, to finish cooking and warm the peas. To serve, sprinkle orzo with chopped parsley, lemon zest, more feta and the reserved scallions, alongside sea bass. Finish the dish off with a squeeze of lemon.


(trim off roots & coarse dark green parts) 2 tablespoons olive oil 3 cloves garlic- minced ½ pound yellow, yukon or white potatoes - peeled & diced 6 cups vegetable stock (low-sodium) ¼ teaspoon white pepper 1 teaspoon kosher salt 2 lbs. chopped fresh asparagus (approx 2 lbs to start, then trim the tough ends off) Note: reserve a few tips for garnish 2–3 tablespoons fresh tarragon 1/4 cup fresh basil or Italian parsley ½ cup sour cream (Not non-fat, does not blend well)

Beautiful, fresh asparagus–it’s a welcome sign of spring. This Creamy Asparagus Soup recipe is such a wonderful combination of flavors. Leeks and tarragon combine with the asparagus to create such a bright, fresh flavor profile. The soup is lightened up and made “creamy” with potatoes and a little sour cream, so it’s not overly rich, rather, just rich enough. This simple soup is elegant enough for spring gatherings, yet easy enough for weeknight meals. Perfect as a first course, or makes a lovely lunch with crusty bread and a crisp white wine.

Creamy Asparagus Soup Servings: 6 • Prep time: 20 minutes Cooking time: 30 minutes INGREDIENTS 1 large white or yellow onion, diced 2 medium leeks, split lengthwise, washed, thinly sliced

DIRECTIONS • In a large stock pot, saute onion and leeks in 2 tablespoons of oil over Medium heat, for 2 minutes, stirring constantly. Turn heat to Medium-low and continue cooking until softened, about 3 minutes. Add garlic and saute for 1 more minute, until garlic becomes fragrant. • Add vegetable stock, salt and pepper, and diced potatoes, and bring to a boil. Cover, simmer on low 15-20 minutes until potatoes are fork tender. • Add asparagus, turn heat up and return to a boil, and cook for 2-3 minutes, until tender yet vibrant green. Don’t overcook or you will lose the lovely color. Remove from heat and let cool a bit. • In batches, carefully blend soup in a hi-speed blender until creamy and very smooth, adding in the herbs. The herbs will give it this glorious color. Blend really well, so there are very few specks of herbs. • Return to the stove and reheat gently (do not boil, or you will lose the lovely color). Whisk in ½ cup sour cream, if using. Season with salt & pepper to taste. • Serve warm with a swirl of sour cream if you like, blanched asparagus tips, and fresh tarragon or chives.

Having Some Easter Fun! By Kathy Wheeler

Lunch Bag Easter Baskets

M

any years ago, I enjoyed my duties as a grade mother. Is there such a thing anymore? I think they just call them volunteers now. Anyways, I loved volunteering, coming up with craft projects that the kids could make, or providing assistance and materials for classroom parties. Around Easter, baskets made out of lunch bags were one of my favorite projects. I could easily make 20 or 30 baskets for their party, or as a craft for the children to decorate with bunny ears, stickers, etc. The baskets were small, so it didn’t take much to fill them...a cupcake, an egg with some candy. It was a very affordable project. Here is what you will need:

ying eggs is a fun activity to do with the kids, and it doesn’t require a kit. This simple recipe will offer you vibrant colors with a few ingredients you already have! Warning...make sure your children have an apron or old clothes on before starting and cover anything that might get stained with plastic. Using a jar or something that can handle the heat, mix: • 1/2 cup of boiling water • 1 teaspoon of white vinegar • 10-20 drops of food coloring Mixing colors like red and blue to make purple, or red and yellow to make orange can add to the fun. Dip hard boiled eggs into the mixture for 5 minutes. Turn the egg with a large spoon to make sure it all gets covered in dye and doesn’t leave light spots. Use an empty egg carton to place your dyed eggs in to drain and dry.

Supplies • Scissors • Stapler • Shredded paper or grass • Lunch bags (1 lunch bag per basket) You can use brown, white, or colored bags. It’s a good idea to have a few extra in case one of the bags tears during construction.

Cut the bag in half and then cut the top part so you have one long piece of paper. The bottom of the bag will be the basket and the top of the bag will be the handle.
