It’s the Most Wonderful Time of the Year!

Waking up and seeing frost on the ground, transforming our area into a winter wonderland, announces that the winter season has arrived in North Carolina! It’s the time of year for snow skiing, fires in the fireplace, snuggling under a warm blanket, and decorating for the Christmas holiday. To me, December is the most enchanting month of the year and the winter season!

The month is filled with all things Christmas. There is shopping, decorating, wrapping gifts, visiting local theatres for Christmas productions and churches for pageants. Cities and towns across North Carolina offer holiday light shows where residents try and outdo themselves from year to year– McAdenville is a popular one. Biltmore Estate decorates the historic mansion for their Candlelight Christmas Evenings–a major task for such a large home. You can check their website for ticket information at www.biltmore.com. The Omni Grove Park Inn in Asheville hosts the Annual National Gingerbread House Competition. It is amazing what contestants can do to create these culinary masterpieces. Grove Park Inn also is immaculately decorated for the holidays with Christmas trees of every theme. Parking is $20 with half of the proceeds going to non-profits within the community. Guests not staying at the resort are welcome to visit the Gingerbread House Competition on Sundays after 3:00 p.m. and anytime Monday through Thursday.

If you are getting a bit bored with your holiday traditions, try something new this season. Enjoy a show, or get a group of friends together for a day of shopping or baking. Prepara8

tion for the holiday is so much more fun when it is done with friends. Consider resurrecting an old tradition like Christmas caroling or sending out Christmas cards. With email, text messages, and social media, letters and cards are a dying tradition.

Change things up with gift giving as well. Instead of purchasing a gift for someone who has everything, make a donation to a charity in their name, or instead of buying each other gifts, use the money to make the holiday special for a family in need. It is, after all, the season for giving.

Christmas is not the only thing going on in December. For those who love winter sports and spending time outdoors, we have access to plenty of ski resorts in the Appalachian Mountains, and the scenery is breathtaking. Easy Baking for the Holidays

A holiday season filled with gatherings calls for simple recipes that make baking for family and friends easy and enjoyable. Individually portioned desserts and pies are ideal for entertaining and gift giving.

Mini Marbled Cherry Cheesecakes 18 2 ¹/ ³ 2 1 1

chocolate cookies with white filling packages (8 ounces each) cream cheese, softened cup sugar eggs teaspoon vanilla can (21 ounces) Cherry Fruit Filling, divided

Directions

Heat oven to 350° F. Line muffin tins with 18 paper liners and place one chocolate cookie in the bottom of each paper liner.

In a mixing bowl, beat cream cheese, sugar, eggs and vanilla until light and fluffy. Take half of cherry fruit filling and fold into batter. Fill each muffin liner about three-fourths full with mixture.

Bake 20-25 minutes, or until done. Cool.

Top each cheesecake with a spoonful of remaining fruit filling.

Cinnamon Apple Pie 1 1 2

refrigerated pie crust tablespoon butter, melted teaspoons ground cinnamon

cans (21 ounces each) Apple Fruit Filling stick (8 tablespoons) butter, softened cup flour cup light brown sugar cup powdered sugar, plus additional (optional) teaspoon vanilla teaspoon cinnamon teaspoons milk, plus additional (optional)

Directions

Heat oven to 400° F. On lightly floured surface, unroll pie crust.

Brush with melted butter and sprinkle evenly with cinnamon.

Roll up tightly and slice into 1/2inch rounds, like miniature cinnamon rolls.

Press miniature cinnamon rolls evenly into bottom and sides of

9-inch pie plate, making sure there are no spaces between rolls. Pour fruit filling on top of crust.

In a large bowl, using pastry blender, combine butter, flour and brown sugar, until crumbly.

Sprinkle over apple filling.

Bake pie until top and crust are golden brown and filling is bubbling, about 40-45 minutes (cover top and crust with foil, if necessary, to prevent from getting too dark). Remove from oven and allow to cool.

In a small bowl, whisk together powdered sugar, vanilla, cinnamon and milk to form icing. Add more sugar or milk, if necessary, to reach desired consistency. Drizzle icing over cooled pie.

Having A Heart For Giving

It is better to give than receive.

What if we all lived by this motto and chose to give all year ‘round, not just once a year? December is definitely the month of giving. Fruitcakes, cheese straws, homemade cookies, and ornaments go to our neighbors and friends.

We buy gift cards, clothes, perfume, watches, books, and electronics for our loved ones and toys galore for children. If you don’t believe me, go to any retailer on Black Friday. It’s amazing all that we buy, buy, and buy some more.

Annually, 30% of retail sales occur between Black Friday and Christmas. Last year alone, a survey found that 108.5 million people shopped Black Friday deals online, while 99 million shopped in stores. Consumers spent almost $2 billion online in 2016, and a record amount over the Thanksgiving holiday.

We give an abundance of material things, but have you thought of giving a gift that isn’t tangible?

I believe giving of your time is a precious best gift. One of my favorites is

traditionally, each December, I spend time with two friends who are widows.

We drive around town enjoying Christmas lights, listening to the season’s lovely music. We order hot chocolate at a drive-thru, laughing and catching up all the while. Our time together is truly a gift!

Everyone you meet has challenges you know nothing about.

Be kind always!

I may forget from year to year what someone bought me, but I never forget the hours spent with these dear ladies… memories I will cherish for a lifetime.

Consider giving the gift of time by sitting and listening to someone who is lonely; visit with folks at an assisted living facility. Clean up and landscape yards for the elderly and read books or tutor children who need some love and attention. There are plenty of leaves that need to be raked and driveways that need to be shoveled when it snows.

It’s nice to give those we love presents at Christmas time, but think about ways to give to others all through the year.

I encourage you to find a non-profit organization you can help. Find one you’re passionate about, and make a donation of time or money this coming year. Serve a hot meal or buy groceries for a family in need. Buy a cup of hot coffee or tea and give it to someone walking down the street to warm their soul and brighten their day. Pay for a stranger’s meal in a restaurant. Buy a drink or meal for the car behind you in the drive-thru. Help pay an electric bill or mortgage. Can’t afford to do that?

Send an encouraging card, letter, text, or email.

Pay it forward, and I promise the reward is far greater than any gift you might receive.

Remember, everyone you meet has challenges you know nothing about.

Be kind always! You just never know when you can make a difference in someone’s life…a difference that can last a lifetime!
