Heat oil in sauté pan until very hot. Sear tuna quickly on both sides. In separate pan, heat oil until very hot. Add shitakes. Sauté until caramelized, then add tomatoes, scallions, and noodles. Add Hong Kong Broth.

Slice tuna into ¼” slices. Arrange stir-fry in center of bowl.

Pour broth over stir-fry. Fan sliced tuna around noodles and vegetables and garnish with wasabi, ginger, and sprouts.
