Ceviche De Camaron

Ingredients:

• 1 lbs raw shrimp (frozen or fresh) peeled and deveined

• 5 limes

• 1 cucumber diced into small chunks

• 1/3 cup white medium onion

• 2 small tomatoes – diced

• 2 serrano or jalapeño peppers

• 1/3 cup of fresh cilantro finely chopped

• 1 cup of clamato or V8 tomato juice

• Salt & Pepper to taste

• 1 Avocado diced into small chunks

DON’T DESERT YOUR A /C:

Directions:

1. Chop shrimp into small pieces and place in a plastic or glass container.

2. Cover completely with lime juice and refrigerate, 3 hours or overnight, until shrimp turns pink and opaque.

3. Mix all vegetables and chill. Once the shrimp is ready, combine with vegetables, Clamato juice, salt, and pepper. Mix well.

4. Serve chilled with tostadas, tortilla chips, or saltines. Add ketchup to individual servings if desired. Enjoy!
