BEEF TENDERLOIN OVER WILD MUSHROOM STUFFED ENCHILADAS

MUSHROOM STUFFING INGREDIENTS: 1/2 c. vegetable oil 6 yellow onions, diced 3 lbs. medium mushrooms, diced 1 lb. potatoes, pan fried 2 lbs. pepper jack cheese 2 c. cilantro, rough chopped Kosher salt and pepper to taste Sautee onions, mushrooms, and potatoes until medium soft. Let ingredients cool. Once cooled add remaining ingredients and mix well.

ENCHILADA SAUCE INGREDIENTS: 2 g. water 3 1/2 c. flour 1/2 c. cumin 1 c. granulated garlic 1/4 c. ancho chili powder 1/4 c. coarse grind pepper 1/4 c. kosher salt 1 1/2 c. vegetable oil 3 c. fire roasted tomatoes 1/2 c. sugar Combine oil, flour, and spices in a large stock pan. This will become a spiced Roux. Add water and tomatoes and bring to a simmer for 15 minutes.

Prepare 7 oz. prime tenderloins grilled over mesquite wood.

Divide the mushroom mixture evenly between tortillas.

Place a couple of tablespoons of enchilada sauce over mushrooms mixture, and roll up. Place in a 7x11 inch baking dish. Repeat for each tortilla. Spoon remaining enchilada sauce over the top of the tortillas. Bake in preheated oven for 20 to 30 minutes. Place the grilled tenderloins on top and serve.
