DIRECTIONS De-vein shrimp and pat dry, then coat with tempura batter and fry until golden brown. Place in mixing bowl. Season with salt and Togarashi.

Stack shrimp in a row, side by side, then on top like a long pyramid.

Apply sauce in a zig-zag pattern over the top. Sprinkle with micro chives, micro cilantro and black sesame seeds. Finish with caviar.

Serves 4.
