Metro Phoenix’s home buying and selling season is in full swing. Spring typically marks the beginning of the busiest time of year for home selling and buying nationally. This is true for the Phoenix metro area as well, with a spike in sales occurring in March, peaking in May and continuing strong until the end of summer. Fall and winter are considered off-seasons in many places, but because of the outstanding weather in Phoenix’s winter months and the increasing number of visitors we have each year, the time to sell your home is upon us. February is considered the big kick-off month for the Valley’s housing market. The Waste Management Open exposes visitors to Phoenix’s greater weather when it’s freezing in the Midwest and back East. You also have a ton of visitors flocking to the area in March for Spring Training. Families that hope to move once school ends also tend to start the process this time of year.

4 cups

Sliced carrots

4 1/2 cups

Vegetable broth

1 1/4 cups

Chopped yellow onion

1/2 tsp

Salt

1 tsp

Ground coriander seed

1/2 tsp

Ground black pepper

1/2 tsp

Ground cumin

Chopped cilantro for garnish

DIRECTIONS Heat oil in large saucepan over medium heat. Add carrots and onion; cook, stirring occasionally, for 8 to 10 minutes. Add coriander, cumin and chili powder; cook, stirring frequently, for 1 minute.

Add broth; bring to a boil. Reduce heat to medium-low; cover. Cook for 30 to 40 minutes or until carrots are tender.

Transfer mixture to food processor or blender (in batches, if necessary); cover. Process until smooth. Return to saucepan; season with salt and pepper.

Reheat if needed. Serve garnished with chopped cilantro.
