ou’ll want to keep your eyes on the road mid-January as some of the coolest cars of all make, model, vintage and color can be spotted cruising into Scottsdale. Yep, it’s time for the annual Barrett-Jackson Collector Car Auction and auto enthusiasts from around the world are starting their engines!

It all began in 1967 when friends and fellow car enthusiasts Tom Barrett and Russ Jackson held their first car auction as a local fundraiser in Scottsdale.

It soon evolved into a classic car event that would raise the bar and smash records with the sales of such memorable vehicles as the Batmobile and Howard Hughes’ Buick Roadmaster, not to mention the 1966 Shelby Cobra 427 Super Snake that blew the doors off at $5.5 million in 2007.

The January event famously draw many celebrities, with some putting their own vehicles on the block. Past attendees include Jay Leno, William Shatner, Dale Earnhardt, Jr. and former president George W. Bush, plus the late Muhammed Ali and Burt Reynolds.

There are numerous applications available to download directly to your phone so you can get zen when and where you need to. Most of them, like Calm, Simply Being and Oak, offer guided and unguided forms of meditation

The philanthropy of the founders’ original auction is still a pillar of the events.

With the sale of 10 charity vehicles in the 2018 Scottsdale auction, BarrettJackson passed the $100 million mark in funds raised for charitable causes.

Just a few of the organizations benefiting over the years have included the American Heart Association, MLB Charities and St. Jude’s.

The Barrett-Jackson Collector Car Auctions have become a world-class event and were recently named the #1 attraction for car enthusiasts by USA Today.

BAKED PESTO CHICKEN INGREDIENTS 4

Chicken breast halves

/3 cup

Pesto with basil

½ cup

Shredded mozzarella cheese

DIRECTIONS Place chicken and pesto in medium bowl; toss to coat. Place chicken in large ovenproof skillet or on baking sheet lined with heavy-duty foil. Top chicken with tomato slices and cheese.

Bake at 400° F for 20 to 25 minutes or until chicken is no longer pink in center.

Remove from oven. Bake for an additional 3 to 5 minutes or until cheese is melted.

Garnish with basil, if desired.
