T Once spanning the River Thames in England, the infamous London Bridge now crosses the Bridgewater Channel in Lake Havasu City.

First completed in 1831, the bridge could not withstand the weight of auto traffic as the 20th century progressed and was ready to be replaced by 1967. Lake Havasu City founder Robert P. McCulloch, Sr. placed the winning bid for the iconic structure, which was dismantled into thousands of pieces, shipped to America and carefully reconstructed. No-Bake StrawBerry CheeSeCake INGREDIENTS 1 lb.

Fresh strawberries

2 tsp

Vanilla extract

2 pkgs

Cream cheese

1 tsp

Finely grated lemon peel

¾ cup

Sweetened condensed milk

10-inch graham cracker crust

2 tbs

Fresh lemon juice

DIRECTIONS Remove & discard tops from half of the strawberries. Finely chop or puree strawberries. Reserve remaining half of strawberries for serving.

Beat cream cheese in large mixer bowl until creamy. Add sweetened condensed milk; beat until smooth. Add chopped or pureed strawberries, lemon juice, vanilla extract and lemon peel; beat well.

Spoon mixture into crust; smooth down top. Slice remaining whole strawberries. Top cheesecake with strawberries before serving.
