Fra’Mani is devoted to the handcraft of traditional Italian salumi and to the small batch production of highly unique foods for the high-end retail and foodservice market. They source meat of the highest quality, grown or raised according to sustainable farming practices. They work with family farm groups who are dedicated to the well being of their animals and their land. Their meat comes from animals born and raised in the U.S. and fed 100% vegetarian diets. The animals are raised without antibiotics, and they are never administered added hormones, non-food growth promotants or animal by-products of any kind.

STORAGE/EATING TIPS

DRY SALAMI

Ideally, unwrap each salame and hang in a cool room between 50-600 F with 70-75% humidity. Otherwise keep wrapped in Fra’Mani paper or other breathable wrapping (such as butcher paper or cheesecloth) and refrigerate. In general, the longer you store a salame, the more firm and dry it will become. We do not recommend freezing dry salami products.

COOKED SALUMI & PANCETTA

Keep refrigerated below 400 F until ready to serve. To preserve freshness, once opened, wrap airtight. Change the wrapping upon each successive opening.

Should you eat the casing on dry salami?

We recommend peeling back the natural casing before slicing and eating. If the casing is difficult to remove, soak the unpeeled dry salame in water for 20 minutes before peeling away the casing.

Should you cook your pancetta before eating/serving?

Smoked Uncured Pancetta is not raw. In fact, you will see the words “Fully Cooked” on the label. You can eat/serve Fra’Mani Smoked Pancetta “as is”, similar to other cooked deli meats. Uncured Pancetta (no “smoked” appears in the product name) should be cooked thoroughly according to the Safe Handling Instructions on the label prior to eating/serving.
