Our food

Behind the scenes of De Mark restaurant is a resolute team of culinary artists. Head Chef Koen Marees collaborates with Amsterdam’s gourmet heroes Richard van Oostenbrugge and Thomas Groot of Michelin-star restaurants 212 and Bistro de la Mer to forge a fresh, gastronomic voyage. With a food philosophy that sources from the sea, local cheese farmers and the fertile fields around De Durgerdam, the innovative, robust yet familiar menu is set to impress.

The Drawing Room

Where De Mark was designed to facilitate liveness and the rooms of De Durgerdam to provide respite and a place to retreat, the drawing room combines best of both worlds. Here guests can retreat to lowest part of the historical building to relax while hearing the buzz in the distance of what’s happening upstairs. “The eye has to travel” and travel it can with the carefully curated art and books that can be found in the lush drawing room of De Durgerdam. We encourage guests to make themselves at home and enjoy the ease of being able to take a nice glass of something or a bite from the honesty bar.

The Church

How lucky are we to have the lovely Durgerdam church just across the street from us? Built in the 17th century, this protected national monument makes a lofty, atmospheric place for any event or gathering. The church can fit up to 120 seated guests, 150 standing guests and 80 sit-down dinner guests. Its flexible usage is based upon availability. It's a highly sought after venue, but we know the caretaker.

De Eeuw

Boating is a great way to experience and discover both Amsterdam and Durgerdam from the water. A transfer from Amsterdam Central Station to De Durgerdam is a memorable one. Hop on board on our historic saloon boat De Eeuw (1905) and enjoy the ride. De Eeuw was used as a management ship of the Royal Dutch Steamboat Company (KNSM) for the daily management of crossings and special trips with guests. Restored to its former glory and modified with an electrical motor, De Eeuw offers modern comfort set within old charm and offers space up to 12 people.

Sustainability

Once the lively hub of the fishing village, its light had begun to fade. We’ve revived the building in which the De Durgerdam sits for a bright new future by taking bones from the past, creating an idyll for today, whilst safeguarding the building for over 250 years.

Achieving this is a process and requires several actions in all different stages from development to operations. Some are related to the building, some related to our people and the experience we offer, but all equally important.

We like to consider ourselves forerunners in sustainability. So that means doing better wherever we can. Lowering emissions is key, from the big, focal areas like heat pumps, solar panels, the reusage of 150.000 liters of water, a composting machine, and gas-free heat to the little details like our herb garden, insect hotel and the repurposed upholstery on the chair you sink into, wondering why it’s just so comfortable. And although we won’t ever sit back and relax when it comes to sustainability we may change and grow within this innovative field – because fluidity and flexibility are the core tools we will need to do better. We don’t see it as a choice; this is the only way forward. We hope you’ll join us on our journey.
