BEHIND THE SCENES: DISNEY FROZEN Each DecoSet and cake design tells a story that connects kids with their favorite characters and brands. Throughout the creative process, we work with our licensing partners to capture the authenticity and play value of the identities and icons kids know and love. Here’s how we created a playful DecoSet for Disney Frozen’s loveable snowman, Olaf!

GETTING TO THE HEART OF THE CHARACTER We brainstorm ideas and create sketches that depict the main essence of the character. For Olaf, it’s humor that rings true. We create schematics of the concept, using official artwork to capture the likeness kids will instantly recognize. Then we work directly with each licensor to refine the concept design.

STAYING TRUE TO THE BRAND Our DecoSets and cake designs work together to tell a story or set a scene that accurately brings the character and brand to life. Each design considers cake decorator execution with an efficient use of colors and tips. We often provide airbrush and non-airbrush options, versions in different formats, and some designs include a PhotoCake® DecoSet Background Image, too. #WINNING IN THE DECOPAC: How can bakeries better funnel these cake requests?

It’s happening more and more. Consumers email or bring in a picture of a cake found on Pinterest, or elsewhere, and want your bakery to recreate it. For tips on handling these requests and pricing them profitably, we spoke with Beth Fahey, President, Retail Bakers of America and Owner of Creative Cakes in Tinley Park, IL.

The more processes you can have in place the better. It reduces stress levels and minimizes burnout, helping you attract and retain the best people for your bakery.”

BETH FAHEY: Most bakeries are encountering customers who want a quick quote for a Pinterest-style, one-of-a-kind cake. Many times the request comes via email with only a cake photo. Essential details such as number of guests, event date and the budget are often missing. In these instances, we direct customers to the “request a quote” section of our website. We also ask them to come into our bakery for consultation, which is required DP: How does Creative for all wedding cake orders. AGE OF PINNING DP: Do you have tips regarding

technology?

DP: How does a bakery go about

pricing Pinterest-style cakes?

BF: First, I recommend a time

study of different techniques to determine the effort involved. Then I suggest setting hourly rates for your junior and senior decorators, taking into account overhead and labor. And not just the decorator’s labor, but the baker’s, dishwasher’s, delivery driver’s, too. Our formula resulted in $100 per hour for junior decorators and $200 per hour for senior decorators. We then applied these hourly rates to the time study information to create a pricing grid for every regular technique. It’s important to include the time required

for different structures, single or multiple colors, and customizing products such as sugar flowers. Knowing your actual costs by compiling this data supports accurate pricing and helps your bakery stay profitable. It also formalizes your pricing process with a pricing sheet you can use when consulting with customers.

BF: iPads come in handy, and we use them to take advantage of our Flickr images. We’ve found Flickr to be a much easier way to catalog and display our photos. Then we post our photos to Pinterest, making sure to include our website URL in the description. We feature six different wedding albums of cake designs ranging from classic to elaborate. Our classic album has over 100 pictures. During wedding consultations we use these albums to guide decisionmaking and pricing. Your POS system can also support pricing accuracy, allowing you to build the cake by size, filling, icing, decorating and add-ons directly in the system. Although it requires programming time, POS technology helps ensure the right price every time.

DP: What about cakes

that replicate licensed characters?

BF: In these cases you need to deliver disappointment in the nicest way possible. Offer to use similar colors and techniques and review licensed products from the official supplier to see if there’s a product that fits the desired result.

Every baker knows the right recipe is essential for success. For Kirk Michaelis, co-owner of El Bolillo Bakery, that recipe is listening to his customers. Nineteen years ago, Michaelis opened his first El Bolillo Bakery to serve Kirk Michaelis, Co-Owner the Hispanic community of Houston, Texas. He is currently planning his fourth location, and the customers keep coming – as many as 5,000 each day. Designed to make customers feel as if they’ve stepped into a traditional Mexican panadería (bakery), El Bolillo Bakery’s welcoming atmosphere doesn’t stop there. Michaelis’ passion for understanding his customers’ needs and wants has created an environment where familiar faces are greeted by name and generations of families have grown up in front of his eyes.

HERE ARE SOME OF EL BOLILLO BAKERY’S KEY INGREDIENTS: ENGAGE – Connect with customers. Ask about their experiences. Encourage them to share feedback and desires. If you listen, they will tell you what they want most. INCORPORATE – Put customer feedback to use. Create products they’ve requested and make changes they’ve suggested. ADD THE SPECIAL SAUCE – Let customers know you’ve used their suggestions. Be sure to tell them, “We made this for you.” It not only makes customers feel special, it bonds them to your bakery, creating intense loyalty. Michaelis listens to his employees, too. Cake decorators are given freedom to experiment during the final hours of their shifts. This practice has created products so popular other bakeries are now replicating them.
