The New Year Brings Even More In 2016, we are firmly focused on how we can best service, you – the customer, driving the category as a whole and providing solutions that drive bakery sales.

Our recent acquisition of Bakery Crafts, a privately held marketer and distributor of cake decorations based in West Chester, Ohio now allows us to bring you new synergies. This includes a unified Print on Demand cake decorating system so you will not have to choose between DecoPac’s PhotoCake® or Bakery Crafts’ Copy Confection® system. As these systems come together, an extended library of images will be available on both - and both will be operating on the same operating system. In addition, more licensed characters are now available through DecoPac allowing you one point of contact for all your licensed cake needs. In this issue, there is plenty to be inspired by, we are excited to bring you our new Inspirations feature: “Behind The Bakery Business”. Centered on how other bakeries achieve success - we will feature one story, each issue, throughout the year. To further inspire, our new Wedding Elegance cake designs now include PhotoCake & SugarSoft®, two cake decorating solutions sure to delight consumers and increase your profits. Be on the look-out in our August Inspirations Issue for our complete Wedding program. THE ART OF COLOR Mastering the art of mixing color takes time, color is subjective and we want to help you learn about color starting with the basics. Here are some basics to guide you.

Let’s start with the primary, secondary and tertiary colors and the 3 modes of color. PRIMARY COLORS

There are only three primary colors: RED, BLUE & YELLOW These colors CANNOT be mixed by combining any other colors.

TERTIARY COLORS

A mixture of one primary color and one secondary color.

GEL

AIRBRUSH

• Specially formulated for airbrush systems to prevent clogging • Main purpose is application to the surface of the icing with no mixing required • Color application for gum paste, fondant, SugarSoft® and buttercream.

PASTE

• A very concentrated formula • Works best for projects that require deep color • Mix with icings or piping gels in small amounts

ALL-NATURAL GEL

• Exceptional colors made from all-natural ingredients • Produces great results in fondant and buttercream icing

SHIMMER AIRBRUSH

• Sparkling color with smooth, even flow • A legitimate way to add shimmer to food products

CANDY COLORS

• Oil-soluble for white chocolate and other high-fat mediums

RIGHT COLOR FOR THE RIGHT JOB The type of cake topping you are using will determine which type of color is best to use, below is a good reference to guide you.

BUTTERCREAM (OIL-BASED)

Due to the shortening base, buttercream has a tendency to darken with time. If you plan on doing a lot of blacks for Graduation or reds for Christmas, mixing your colors a day ahead of time will intensify your colors, allowing you to use less color. Premium Gel and Paste mix in well. Airbrush and Shimmer Airbrush deliver great results for an application to the icing.

WHIPPED ICING (WATER-BASED)

Premium Gel or Airbrush colors give optimal results. All colors have a tendency to bleed in whipped icing because the primary ingredient is water. A little color goes a long way. It is best to use lighter colors and avoid any black or red intense colors when making whipped icing decorations. Airbrushing over them will darken them more than trying to color the product by mixing all the way through.

FONDANT

Color recipes will need to be adjusted slightly in fondant when compared to buttercream. As with buttercream icing, coloring fondant the day before and wrapping it tightly will help the color to mature allowing you to use less color than if you colored it the day you mixed. Either Premium Gel or Paste colors can be used with fondant.

PIPING GEL

Go lightly. Always stir your colors into the piping gel. If you fold the piping gel while you are mixing your colors you will fill your piping gel with air bubbles. Since piping gel is clear or translucent, a little color goes a long way. Recommend mixing with Premium Gel Color for best results.
