HOW TO USE WHITE QUINS Creating a beautiful quin-covered cake is easier than it looks. Follow these simple steps to all-over quin perfection.

Base ice your cake. No need to carefully smooth the icing since you will be covering in quins.

On the sides of the cake, scoop quins and pat firmly so there are no loose quins.

Using gloved hands, apply white quins to your freshlyiced cake. On top, pour quins and spread with your hands, patting well so quins adhere to the icing.

To apply color, airbrush all around cake. Adjust your angle to ensure full color coverage.

DÍA DE LOS MUERTOS Día de los Muertos, Day of the Dead, is a time to joyously celebrate the dearly departed. Families prepare loved ones’ favorite foods, build altars in tribute, and hold picnics at gravesites in remembrance. Historians believe Día de los Muertos is based on centuries-old rituals of the Aztecs, Mayans and Toltecs, where a full month was reserved to celebrate the deceased. After Spain conquered the Aztec empire, these celebrations eventually overlapped with All Saint’s Day (November 1) and All Soul’s Day (November 2) due to Roman Catholicism influence. On the heels of Halloween, many bakeries – especially in Texas, Arizona, Southern California, and New Mexico – already offer Day of the Dead products to meet the needs of MexicanAmerican consumers. If you’re not featuring Day of the Dead in your bakery yet, it’s time to start. According to 2015 census data, the U.S. Hispanic population exceeds 56 million, including 38.8 million people of Mexican origin. Featuring Day of the Dead cakes, cookies and cupcakes allows you to serve a valuable consumer segment by honoring their cultural celebrations. But the appeal is even greater than one day of the year – Día de los Muertos is a growing design trend, too. The fanciful skulls, marigold images and vibrant color palette are showing up on apparel, tattoos and even wedding cakes. The intricate designs and bright colors are also a perfect way to extended Halloween sales by using the sophisticated look to age up Halloween treats. Use your cake board palette when mixing two colors. Mix each color with a little icing first, then mix equal parts of those two icings together. Play with color until your desired shade comes through.

Too much liquid gel color tastes bitter and makes icing hard to use. Instead use gel paste. You will use less to get your desired color.
Buttercream has a tendency to darken while the color is absorbed. Mix it a day ahead of time, and slightly lighter than your desired shade to allow it to deepen to the perfect hue.

Did you know you can use a sheet cake board like a painter’s palette? Mix color in small amounts of icing to see how each color reacts with different types of icing, as well as how much color to use to achieve your desired hues.

In non-dairy whipped topping the liquid or gel paste colors both work. All colors have a tendency to bleed in non-dairy whipped toppings because the primary ingredient is water. A little goes a long way. It is best to use lighter colors and avoid any black or red intense colors when making whipped topping decorations. Airbrushing over them will darken them more than trying to color the product all the way through.
