Does the thought of cooking Christmas dinner send shivers down your spine? This year, leave the panic at the kitchen door – after all, it is just another dinner. We spoke to Glasgow’s very own MasterChef, Gary Maclean, to find out his juiciest Christmas dinner secrets

S

ince the start of his career, chef Gary Maclean has opened his own restaurant, worked as the head chef in prestigious kitchens, is a senior lecturer at City of Glasgow College, and battled against 47 respected chefs to be crowned MasterChef: The Professionals Champion 2016.

Despite the impressive CV, Gary remains a grounded and humble individual who enjoys cooking food that will make people happy. Family is at the heart of Christmas for Gary; with five children, it’s important that a good, hearty meal is served on the big day.

After all, that’s what we’re all trying to

achieve in the kitchen on the 25th.

PLANNING, PREPERATION, PORTIONS

“The main thing is planning – you have to really plan it out and understand what you’re doing,” Gary advises. “Secondly, make sure to work in advance. My biggest memory as a kid at Christmas was seeing my mum stressed out, trying to feed everyone. I always make sure I have my preparation done the day before so that I can spend time with my family on Christmas Day. Thirdly, don’t plate the food – what I would do is family service. That’s when you carve all the meat, chipolatas, stuffing, put vegetables Family Life - Festive 2017

in bowls, and put it all on the table alongside the plates so people can just help themselves. It’s all about planning, preparation and family service.”

Getting everything organised for Christmas dinner can be stressful – especially when you’re cooking for a large group of people. It doesn’t have to be this way, as Gary says: “I’ll be honest, the first thing I do on Christmas Day is open a bottle of Champagne, so that relaxes me anyway! Christmas Day is for the family, kids, and having that time together and I don’t get too fussed if the wee ones don’t eat all their vegetables on that day.” A day of celebrating and spending time with family, getting gastro-style food on the go in the kitchen isn’t vital – it’s all about cooking seasonal produce properly.

SEASONAL

Winter brings many things, and the cold is certainly up there, meaning vegetables we readily get in summer aren’t going to be available during the colder months. Making sure to purchase meat, vegetables and fruit that are in season is the secret to a delicious dinner.

“There are a lot of good Christmas markets still open right until 23 December – it’s managing to get out.

If you are really busy, it’s obviously just hitting the supermarkets,” explains Gary.

“You go to a supermarket and anything that is at the front door is the stuff you should buy – that’s the stock that’s in season, and it’s always really cheap because it is in season. Don’t go buying strawberries and asparagus, buy what is there and available.”

With the veggies sorted, Christmas dinner wouldn’t be complete without the main event – a traditional turkey roast. Gary advises that the best thing to do is purchase the best turkey you can afford; it is a special occasion after all. “Something like a Kelly Bronze freerange turkey is great – the difference in that over a mass-produced turkey is incredible – the flavour is amazing.

You have never tasted turkey until you have tasted a Kelly Bronze type of turkey. If you can spend extra, you should,” adds Gary.

IN THE OVEN

Let’s face it, cooking the perfect turkey is fear-inducing and can cause arguments in the most experienced of households.

This is the crowning moment for dinner time, but it is so easy to have a turkey come out the oven overcooked and dry – not what we’re looking for.

Gary reveals: “The main secret is to cook the turkey upside down. It is 8

Christmas Day is for the family, kids, and having that time together – I don’t get too fussed if the wee ones don’t eat all their vegetables common sense because if you put a turkey in the oven with the breasts at the top, gravity pulls all the liquid and juice out of it into the carcass. You carve the turkey, and then throw away the carcass with all the flavour in it. If you cook it upside down, all the flavour from the carcass then goes into the flesh and keeps it moist.”

Granted, turkey isn’t the meal of choice for everyone but that doesn’t mean cooking for vegetarians has to be dramatic. Gary explains that no matter a person’s lifestyle choice or health needs, it is still important to feel special and get a nice treat on Christmas Day. He says: “I think there’s nothing better than homemade pasta with butternut squash, pine nuts, ricotta cheese – make

a tortellini or ravioli.” Looks like catering for all the family has never been easier.

Brussels sprouts, mulled wine, turkey with all the trimmings – the tradition of Christmas dinner is one that will last for years to come. Cooking the perfect festive meal doesn’t have to be stressful; with a bit or preparation and forwardplanning, it’s actually quite a simple process. Make sure that you’re fully prepared, have all the seasonal goods to hand and plan ahead of time, so that you’re not spending the day slaving away in the kitchen, and can enjoy a nice glass of fizz with the family.

WHITE CHOCOLATE WINTER WONDERLAND CAKE The YouTube sensation shares a recipe from her new festive book, Tanya’s Christmas

SERVES 8-10 PREP TIME: 45 MINUTES COOKING TIME: 20 MINUTES, PLUS CHILLING

If you are not a fan of the traditional Christmas cake (and I know a lot of people who aren’t), this is a great alternative. I use my white chocolate sponge recipe as it makes the best celebration cake and most amazing centrepiece. Go crazy with the decorating!

FOR THE CAKE: 300g unsalted butter, softened, plus extra for greasing 200g white chocolate, broken into chunks 300g golden caster sugar 4 large eggs 350g plain flour 1½ tsp bicarbonate of soda 1½ tsp baking powder ½ tsp salt 200ml buttermilk

Preheat the oven to 180ºC/350ºF/gas mark 4. Grease the base and sides of the cake tins and line the bases with baking parchment.

Melt the white chocolate in a heatproof bowl set over a pan of simmering water, making sure that the bottom of the bowl doesn’t touch the water, stirring occasionally until smooth.

Remove the bowl from the pan and allow to cool slightly.

Beat the butter and sugar together in a bowl with an electric whisk until light and fluffy. Add the eggs one at a time, making sure each one is fully incorporated before adding the next, then fold in the flour, bicarbonate of soda, baking powder and salt. Add the buttermilk and melted white chocolate, and mix to form a smooth, silky batter.

Divide the batter between the cake tins and spread it out slightly with a spatula.

Bake for 20 minutes, or until the cakes are golden and risen and a skewer poked into the centre of the cakes comes out clean. Remove from the oven and leave to cool in the tins for 10 minutes before transferring to

wire racks to cool completely.

Make the icing by creaming the butter in a bowl, then slowly adding the icing sugar and beating until smooth and light.

Stir in the vanilla extract.

Sandwich the cakes together with one third of the icing on a cake stand or serving plate, then spread a very thin layer (another third of the icing) over the top and around the outside to catch the crumbs.

Chill in the fridge for 30 minutes to set the icing slightly, then use the remaining icing to fully cover the cake.

Dust the work surface with icing sugar and roll out the royal icing.

Cut out snowflake shapes and stick them carefully to the side and top of the cake.

Decorate the top with white chocolate stars or curls, more snowflakes, glitter and silver balls – I also crushed some to scatter around the base of the cake.

Serve with sparklers, if using.

ariah Carey is being blasted in all the shops, the mulled wine is flowing and markets fill the city streets – Christmas really is the most wonderful time of the year. But amidst all the joy the festive season has to offer, we can’t forget to help those less fortunate.

This doesn’t mean spending lots of money – it could simply be spending time supporting a local cause, working on a helpline or dishing up Christmas dinner to the homeless. The opportunities are endless, and will make a big difference to the lives of others.

FOOD FOR THOUGHT It’s a sad fact that homelessness is a problem here in Scotland, and it’s even tougher for those affected during the winter months – but there are ways that you can help alleviate some of the struggles, even if you blew the budget on presents. Not a new concept, and not something that only happens during Christmas, is soup kitchens.

The basic concept of a soup kitchen is to hand out free, hearty meals for those in a situation of homelessness or those who will find it hard to get food. There are soup kitchens in every major city across Scotland and community groups helping the homeless in smaller towns and rural landscapes.

In the bitter winter air, there is no denying that a bowl of homemade lentil soup really hits the spot. Spread the warmth and volunteer your time at a soup kitchen – information on times and dates of available food runs can be found on the Streets Kitchen website (www.streetskitchen.co.uk).

GRAND GESTURE On a much larger scale, why not get your friends involved in an attempt to tackle homelessness head on? Social enterprise Social Bite are hosting their version of Live Aid in a bid to raise £4 million for anti-homelessness projects.

Sleep in the Park (www.sleepinthepark. co.uk) will take place on 9 December, and will see 9,000 people grabbing their sleeping bags and having a kip in Princes Street Gardens in Edinburgh – alongside some very famous faces.

To help warm you up, there will be stripped back performances from Liam Gallagher, Amy MacDonald, Frightened Rabbit and more. Most importantly, you will be helping to get thousands of Scotland’s rough sleepers into accommodation and employment.

You could class this as one of the biggest events to tackle homelessness in Scotland to date, and you can be involved. Go solo or head in as a group and get fundraising before experiencing first-hand how difficult sleeping rough can be in the winter months – we live in Scotland after all.

There are ways you can help alleviate some of the struggles, even if you blew the budget on presents

ON THE LINE Loneliness is another growing problem during the festive season. It is not uncommon for families to be spread across the world, and getting together for Christmas can be challenging. As more of us live longer, there are more elderly members of the community facing periods of loneliness, but you could help end their feelings of isolation. Call in Time is a free public telephone befriending service run by Age UK (www.ageuk.org.uk) and will see you paired with an older member of the public who you will get to speak with for half an hour.

Age UK will work to ensure you are paired with an older person who has similar interests so you can get chatting – this might be the start of a wonderful friendship. Yet another simple and effective way to give back to your local community, while making someone feel loved and recognised. During the

festive period, knowing you are the reason an older person’s day has been made will mean so much more than a new handbag.

FURTHER AFIELD Caring for your local community is enriching, but what about less fortunate people abroad? Similar to sending a shoebox filled with gifts to children in need overseas, there is now a huge number of alternative ways to provide gifts that will be beneficial to people living in far-off countries.

Running for 14 years, The Good Gift Catalogue (www.goodgifts.org) has been providing presents that can help people get out of poverty – and you are safe in the knowledge that your money is going precisely towards what you have purchased. A great stocking filler, give the gift of textbooks for pupils in Africa, a week of hot dinners for a pensioner, or provide the funds to train an African eye surgeon in the name of someone you know who will appreciate the kind gesture.

Similarly, Oxfam (www.oxfam.org.uk) will help you give a gift that changes lives worldwide. Gifts available vary from pigs for a farmer to earn a better living, to combating climate change to letting a village grow vegetables. This has to be one of the simplest ways of giving, and it doesn’t break the bank. No longer will gifts be left unused in cupboards or accidently thrown away, as Oxfam, and similar charities, work to ensure those in need are supported. Saves on the wrapping paper too…

By lending a helping hand to those in your local community or on the other side of the world, you can spread even more festive cheer this year. Help tackle the big issues of homelessness and loneliness in the UK, or spend a penny to help educate a nurse for a small African community – what are you waiting for? It’s time to give back.

CHRISTMAS The deadline is fast approaching to buy in those much-anticipated gifts, enough food to feed the street and maybe a bottle of bubbly or six, too – but how do you get through Christmas when finances are an issue? We’ve got some quick tips to help you manage

BUDGET FIRST

Look at what you’ve spent so far, see what’s still to be purchased and measure it all against what you can reasonably afford to spend. Decide how much you can spend on different people and items, and stick to it. Operating in cash when you’re shopping really helps with budgeting too.

CUT BACK

If your budget won’t stretch this year? It could be time to cut back. This doesn’t mean a festive celebration that Scrooge and the Grinch would be proud of – you can still have a great Christmas on a budget. There’s no point in getting into lots of debt if you really can’t afford it – now or after Christmas.

SECURE BORROWING You may be at the point where you have to borrow cash to make Christmas happen. Remember that you’ll have to pay it back, plus interest, over a set time, so it will end up costing you more in the long run. And if you can’t make the repayments? You could find yourself in court.

When it comes to borrowing, avoid payday loan companies, which have huge interest rates. Instead, look into a credit card, or investigate borrowing from your current bank, or a credit union. Credit unions are owned by their members – so their interests are at the forefront of their services.

Don’t buy that toy the kids are after in the first place you see it. Get onto Google and search for it in the ‘Shopping’ tab to see how much it is elsewhere. Look out for discount days too, like Black Friday or pre-Christmas sales, to try get the very most for your money.

SAVE UP

While saving for Christmas might be out of the question now, start thinking ahead to next year. You can set up a savings account with your current bank, shop around for saving options which offer a competitive interest rate, or Scotwest (www.scotwest. co.uk) offer a Christmas savings account, which sees members pay in throughout the year and pays out in November.

Savers aren’t allowed to withdraw from the account unless they close it, giving them a bit more discipline with their savings. “This year, we’ll be paying out over £2 million,” says Scotwest CEO Kenny MacLeod.

“About 3,000 people have saved with us, so they’re each getting an average of £700.

They’re not resorting to borrowing for Christmas by saving on a monthly basis.”
