Do you know how to play Wheel of Fortune?
If you have a hearing loss, you do it all the time. The reason is that with all hearing losses, some speech sounds may come through quite well, while others are missed. For example, in the sentence,
All of the high frequency sounds have been hidden. This common pattern of hearing loss leaves the individual struggling to understand what the person said, grasping to fill in the missing blanks that their hearing loss doesn’t allow them to hear.
This pattern of hearing loss, over time, can lead to a lack of attention and loss of listening ability. It can make one cognitively slower and literally a step behind everyone else in the conversation.

Fortunately, this pattern of hearing loss can be greatly helped when treated by one of our Doctors of Audiology. In fact, our Doctors have had extensive, advanced training in learning about the acoustics of speech, how different patterns of hearing loss affect speech understanding, and extensive experience in utilizing today’s modern hearing aids to correct an individual’s hearing problems. The complete sentence above is“LET’S GO PLAY BASEBALL, GRANDAD!”. Isn’t it easy when you have the complete picture?
Now is the time to schedule a FREE Complete Hearing Consultation

taste the island

By Elle Rahilly
When Fishers Island Lemonade (FIL) launched 10 years ago, it made waves as a first-of-its-kind canned cocktail and a pioneer in the ready-to-drink category. A beverage that embodies the “New England Americana” lifestyle, its sensational taste—originating from Fishers Island, NY—is accompanied by a strong sense of nostalgia for many consumers throughout the coastal northeast, especially those along the Connecticut shoreline. The two communities are just a stone’s throw apart, and
there is a sense of pride in watching a local young female entrepreneur share a taste of the lifestyle so dearly loved by all who experience it.
“There is a synergistic relationship between the Connecticut shoreline and Fishers,” says founder Bronya Shillo. “I actually used the word ‘Lemonade’ in the logo as the coastline of Connecticut, with the ‘E’ being Rhode Island and the ‘L’ being Manhattan.” For Shillo, success is equal parts representation and preservation of the community behind the brand. “I wanted to make sure I was thoughtful about how I represented Fishers Island, what

that [exposure] would do to the community, and how I could always continue to give back as an entrepreneur and a resident.”
A Connecticut native who spent summers with family on Fishers growing up, where her parents owned and operated The Pequot Inn—the only place on the island to grab a bite and a drink or enjoy the nightlife—Shillo got a taste for both entrepreneurship and the culinary industry at a young age. “It’s something I appreciate so much,” she shares. “The work ethic, the pride of running a family business, and having my family tap into my sister’s and my opinion. I can’t thank my parents enough for that.”
Demand behind the bar at The Pequot Inn is high and consistent throughout the summers—especially for a Fishers Island Lemonade, the bar’s wildly popular cocktail. The recipe has been passed from bartender to bartender over the years. “It’s very refreshing. Lemonade, summertime, Americana, New England,” describes Shillo. “I was always taking a [jug] of FIL to beach parties or going fishing on the weekend. I wanted that sometimes versus a beer.”
One night behind the bar, Shillo wished she could can the cocktail. Its prebatch never quite made it through the late night crowd. In order to meet the high demand, the staff would have to stop serving to make more. She was inspired to mass-distribute this taste of the island’s lifestyle.
Paying homage to both the cult favorite cocktail and the storied history of The Pequot Inn, Shillo, who wanted to be a chef growing up, tapped into her culinary and mixology experience to develop a revolutionary ready-todrink beverage. Boasting barrel-aged whiskey and pre-

vodka paired with lemons, honey, and pure cane sugar, the canned cocktail was released Memorial Day weekend 2014 to an unprecedented response. “People were coming to the bar and taking it to greet their cousins at the ferry. Others were coming from Connecticut and Block Island to get a four-pack,” Shillo reflects. “I remember selling out before the Fourth of July and thinking, ‘This was supposed to last me all year.’ That was an interesting predicament.”
As Shillo was developing the product, the farm-totable movement was taking the culinary industry by storm. She realized that being able to provide the origins of the ingredients goes a long way with consumers. “When you sip on Fishers, you get that clean finish,” says Shillo. “People say, ‘I can’t believe this is actually 9% alcohol.’ And that is really a testament to the sourcing of the spirits that we use.” Distributors and retailers alike were pleasantly surprised by how smooth, refreshing, well-balanced, and uncarbonated FIL is. “There are few others that match our ABV or the quality of those spirits together. It’s fun watching people take their first sip.”
The packaging design was inspired by the coastal New England lifestyle. Shillo consulted with Director Pierce Rafferty of The Henry L. Ferguson Museum and frequently bounced ideas off her older sister and family. The yellow and white stripes that surround the FIL can are inspired by a beach towel Shillo’s mom would throw over a white wicker sofa on the porch to protect it from the sun.
The stripes are also a nod to servers. “When you’re at that speed of late-night bartending, you don’t look at
mium

labels. You just look at positions and colors, functioning off repetition. At least that’s how I operated,” she explains. “My observation of the beer industry was one that helped me own yellow and white stripes.”
Tapping into the brand's roots, Shillo was intent on minimizing waste. Packaging the cocktail in a can reduces shipping weights and avoids paper labels. “Sensitivity around the community is always being discussed when you think about sustainability,” she shares. “Fishers Island is a beautiful place with so much natural habitat. Preservation is at the forefront of the community.” FIL is committed to sustainability: all branded merchandise is held to the same standard as the ingredients they source. “Everything from the can to the swag we make is consistent with the quality of the cocktail,” says Shillo. “It’s higher quality merchandise that hopefully won’t end up in a dumpster.”
Shillo has been committed to giving back to the island since day one. As someone who worked in the Fishers Island school system and was the face of The Pequot Inn for years, it was important to Shillo that she made the community proud. “I love sharing the story; I love trying to inspire people to do so themselves,” she says. “Even if it’s a high school senior thinking about a career that’s entrepreneurship, and just stoking those flames. It’s rewarding to be involved with that intriguing moment of someone’s life.”
Since its launch, FIL has continued to give back to nonprofit organizations including the Island Sea Stretcher, field grass management, scholarships, and housing for year-round residents. “It’s fun to see how much the com-

munity loves to hear about the growth and continue to support the lemonade as well,” says Shillo.
Much of FIL’s success can be attributed to it coming from a real community. “I couldn’t be more thankful for the late nights behind the bar,” Shillo shares. She enjoyed connecting with customers and the community, and took immense pride in how much The Pequot Inn meant to the people of both Fishers and Connecticut. “They were my test market without even knowing.”
As FIL continued to expand along the east coast and farther west, Shillo tapped into the strong roots of the brand. “We have a story to tell. Not a lot of brands do. They
can also see the quality come through when sharing the product with customers,” she explains. FIL is now available in 19 states and is equipped with a passionate and robust sales team that educates consumers about the ethos of the brand and what separates it from lesser quality products. According to Shillo, a lot of thought goes into how FIL continues to develop, including being strategic about when and where to expand. She insists on “really being a part of the communities that we are distributed in.”

August 20 is National Lemonade Day, and what could be more perfect than celebrating with a Fishers Island Lemonade? Enjoy a can of the original cocktail, one of the delicious flavors, or take a tip from Bronya and experiment with different ingredients to create something brand new.
“If I’m not fishing and enjoying a Fishers, there’s usually a grill going. There’s some sort of activity. I like to be out and about enjoying summer with friends,” says Shillo. “Even in the winter months, we make fun recipes with it. Après ski, we’ll make it a hot toddy and heat it up with a cinnamon stick.”
She adds, “People at home can do it, too. Put it in a blender with ice, maybe add some fresh watermelon to it. Natural fruits really go a long way with lemonade. When you think about it, what doesn’t go with lemons? If people want to have some fun with it at home and mix and muddle it, it’s not going to combust, as it’s not carbonated. And lemons are very approachable with any mixology.”

Wave, and Nude Peach. All flavors have earned numerous accolades, including a Gold Medal at the San Francisco Spirits Awards, Double Gold and Platinum at the SIP Awards, and Gold Medals at the Denver International Spirits Competition and USA Spirit Ratings.
Shillo appreciates it when restaurants recognize that FIL is already a high-quality cocktail itself. However, she recommends a slushy machine for those looking to experiment with it. “It’s so simple,” says Shillo. “Crack it, pour it into the machine, let it freeze, and maybe garnish it with a sprig of mint.” One establishment that has taken that approach is The Blue Duck Bar & Kitchen in New London.

Shillo finds the success of FIL is congruent with a larger culinary renaissance throughout the region. “Mystic and Stonington have had a huge resurgence, and so has New London and all these different pockets. You can pull up on your boat in downtown Mystic and have a lobster roll on the water. It’s just a fun experience,” she says. “And I love seeing how the shoreline has become more of a destination and has had a breath of fresh air. That young entrepreneurs like Sal D’Angelo [of The Blue Duck] and myself wanted to come back and contribute to the places we grew up in. It’s like passing the torch.” She adds, “I have the vision of the Blue Duck patio as I’m setting
sail on the Fishers Island ferry. As you come back from Fishers, you’re welcomed by that beautiful array of FIL umbrellas.”
FIL is celebrating its tenth anniversary with a round of wins as it expands into the midwest through its Chicago launch along with a handful of states to fill out the east coast. The brand also recently teamed up with the Ladies Professional Golf Association (LPGA) to sponsor several events this year, a true partnership of two female-founded organizations. “We did one in New Jersey in early May that I actually got to play in, and we have another one Labor Day weekend in Boston, followed by a couple in Florida,” says Shillo. “The LPGA is a big partnership for us, and we look forward to growing with them.”
“We’ve seen so much evolution as a brand, and I think that’s commendable of something that went from a little old startup to now being available in 19 states,” Shillo reflects. “It was just this blend of living the island life, operating a bar, and having this recipe that was already so well known to our community. And putting it into this lovely, beautiful yellow-and-whitestriped can and taking it off the island. And sharing it with everybody else.”

an American

By Jennifer Carmichael / Photos courtesy of 100 Acre Wood
Kim and Yuri Grijalva, farmers from North Stonington, are living their dream. After relocating from Florida to the Northeast in 2020, the couple purchased a historic 300-year-old homestead in Connecticut, spanning 103 acres. Aptly named 100 Acre Wood, the property offers a captivating experience, with stunning pastoral views, an Airbnb, and a farm store where they sell beef from their very own Grijalva Cattle Co. and other products. The Longhorn cattle, in particular, stand out. With their stunning horns, these iconic American animals symbolize the Grijalvas' commitment to cultivating a healthy agroecosystem for the cattle and their natural habitat at 100 Acre Wood.
"When we decided to move here, we knew that we wanted to raise cattle and grow our food," says Kim, who grew up working at family-owned farms and orchards on the northeast shore of Long Island. "We also wanted to produce quality food for others, eventually open a store, and make a meaningful mark."
Yuri, originally from Ecuador, also grew up in the Northeast. His heritage was what drew him to the Longhorn. He previously worked for Fort Lauderdale Fire Rescue, while Kim ran a design firm for 20 years. Together, they enjoyed their land and horses in West Palm Beach. While they considered cattle ranching in Florida, they ultimately wanted to return to their roots.
"When we visited the area, we went out to several local restaurants in Stonington. The food was exceptional, and the restaurants seemed to really support a local agricultural economy, even calling out certain local farms by name," says Kim. "The area offered a unique combination of simplicity and a rich culinary scene. It was the perfect place to land."
The couple's first introduction to the Longhorn was many years ago at the supper table at their friends’ ranch, Tom and Trina Curtin, renowned horsemen and cattlemen. It wasn't

“The animal is good for the land, and the land is good for the animal, and hence, the meat is good for us.”
Kim Grijalva

long afterward that they uncovered the Longhorn's many remarkable qualities and realized they had found the perfect cattle to raise in Connecticut. Kim highlights that the Longhorn are often called "the beef that fed America," as it was the mainstay cattle in the United States and fed the Civil War troops.
The Curtins have always maintained a herd of Longhorns, breeding for quality beef production and hearthealthy lean meat, but also for the beauty of the animal and to maintain a living piece of American history, notes Kim. Today, the Curtins are mentors to the Grijalvas, who acquired the Curtins' entire herd of breeding cows.
"We feel honored to be stewards of this exceptional herd that our friends have spent 25 years selectively developing into the herd they are today," she says. "We also couldn't do what we do without the guidance and friendship of several local farmers, who are willing to share their knowledge and lend a hand from time to time at the farm."
Mindful about overgrazing, the North Stonington ranch is the breeding facility. They also lease land and work with the best breeders in the United States to purchase weanlings. In addition, they continue to work with their friends and mentors, the Curtins, who run a stockmanship program in Oklahoma. They raise Longhorn steers, which are then brought to the Grijalvas’ Connecticut ranch to finish on their mineral-rich New England coastal grass.

Yuri Grijalva with a prized Longhorn cow.
Recently awarded a Connecticut Department of Agriculture Climate Smart Restoration grant, the Grijalvas are embarking on a year-long project to develop better-quality forage on their historic farm. The Longhorns' ability to stock up on marginal pasture and their disease resistance make them a great fit in New England, says Kim. While there is talk about how the meat industry is unhealthy for the environment, the Grijalvas are out to prove that wrong, believing that these animals are essential to the environment and a sustainable agroecosystem.
"It's a symbiotic relationship," says Kim. "The animal is good for the land, and the land is good for the animal, and hence, the meat is good for us. People want to know where their food comes from, and we're happy to answer that question; we're USDA-certified Texas Longhorn. It's tender. It's delicious. And as Gordon Ramsay says, 'The best beef in America.'"
"We've fallen in love with this true American original and the journey it's set us on," she continues. "Our goal is to establish this breed as a mainstay in the Northeast due to its suitability for this region and sheer beauty."

The Grijalvas believe in creating alliances with other farms and producers and the age-old art of building community. This past April, the farm store opened to a positive response, attracting visitors from across Rhode Island and New Haven.
They encourage visitors to feel the magic of 100 Acre Wood, see the Longhorn, and stop by the store.

The following are brands and farms the Grijalvas support through the 100 Acre Wood store:
Zest Bakery, Stonington
Stone Acres, Stonington
Hosmer Sodas, Willimantic
Schooners - Lemonade , Mystic
Farmtrue Ghee, North Stonington
Ocean State Pepper Co, Warwick, RI
Ashlawn Coffee Roasters, Old Saybrook

Indulge in 60 to 90 minutes off the grid with effortless floating in one of the spa’s private float therapy rooms, each containing a pool filled with 11 inches of water infused with 1,000 pounds of medical-grade Epsom salt.
The purpose of float therapy is sensory deprivation, providing complete relaxation for the mind and body. Eliminating all sensory input allows the part of your brain that
is always active to pause for a moment while creativity and relaxation take over. Your body lowers its cortisol levels, and your brain releases heightened levels of dopamine and endorphins, resulting in a natural mood boost that lasts well past your float session.
Lying in water allows blood to flow freely throughout the entire body. Your body is renewed with extra resources usually used to support your weight and regulate your body temperature. With the salt and buoyancy taking over that job, your body can focus on resting. Magnesium sulfate (commonly known as Epsom salt) softens and replenishes skin, while helping to counteract the magnesium
deficiency that most people experience due to depleted magnesium levels in our soil. Magnesium also aids in the absorption of calcium and is most easily absorbed through the skin. About 40 minutes into a float session, the brain stops producing its normal alpha waves and starts churning out theta waves. These waves, responsible for the state of consciousness between waking and sleeping, are produced naturally every night before you fall asleep. While they last only moments in bed, you can achieve a prolonged theta state on the float room—a state of consciousness typically only seen in children and people who have spent years practicing meditation.
Float therapy rooms are virtually light- and sound-proof. The air and water are both heated to your skin temperature, eliminating the pressure of gravity from your bones, joints, and muscles. The spine lengthens an inch throughout a session in the float, and spending an hour in the float is comparable to four hours of deep sleep. In addition to relaxing the mind and body, float therapy also helps to relieve headaches, anxiety, insomnia, and depression.
The skin care and facial department has recently become a huge part of Tranquil Balance with the addition of Tammy Cooke to the team. Cooke’s product knowledge, attention to detail, and more than 20 years of experience allows her to treat the root of the problem when it comes to skin concerns. Tranquil Balance offers seven different types of facial treatments for every skin type. The Hydrofacial and Dermaplaning facial are some of the most popular services clients are loving right now. Whether you're looking to treat a specific condition or simply maintain your youthful glow, you’re in the right hands with the spa’s licensed esthetician who will have you feeling ultra pampered and refreshed.
The spa uses nutrient-rich products made with fresh fruit, pulps, plants, and exotic spices from organic environments for the most effective results. All products are free from parabens, petroleum, and other harsh cosmetic chemicals. Enhancements such as a collagen eye treatment and a hydrating lip treatment can be added to any facial for an additional fee. Waxing, brow and lash tint, lift, and lamination services are also available.
Tranquil Balance is a woman-owned business proud to support other local businesses and women in business. Owner and founder Tina von Flatern’s philosophy is that the most important benefit of massage is human touch, and her dedication to holistic healing can be felt by each client who walks through the spa’s doors.

Bill's Seafood is aptly situated at the base of Westbrook's Singing Bridge. While diners take to the sun-warmed picnic tables of the restaurant's deck to enjoy fried clams and steamed lobsters, Bill's comes alive on Friday nights with the sound of horns, pianos, reeds, and drums thanks to the music of the Bill's Seafood Jazz All-Stars.
According to band leader Tom Boates, Bill's Seafood Jazz All-Stars have been performing at this popular restaurant in Westbrook for over 40 years. Every Friday night from 7 to 9 p.m., the musicians play favorites from the “Great American Songbook,” a canon of the most important and influential American jazz songs in the 20th century. Once known as Dixieland jazz and now called traditional or New Orleans-style jazz, this music moves the body, brain, and soul.
Boates says the band’s vast collective knowledge includes hundreds of songs. Except for a few crowd-pleasers and favorite sing-along tunes, their set list changes every week. Bill’s is so popular in the

summer that the band must move tables to set up. But the service is efficient, and the turnover is fast, so when 7 p.m. rolls around, the regular fans are seated up close, where the band likes them. This intimate setting is a treat if you’re not used to live club performances.
Boates has taught music for 44 years and has been a professional trombonist for over 35 years. He retired from Guilford High School in 2021 after 20 years of leading their music department and awardwinning ensembles. Like the other Bill’s Seafood Jazz All-Stars, Boates will prob-

ably never retire from music and plays gigs with different groups throughout southern New England. The rest of the All-Stars quintet features Tom Palinko on drums, Lou Bocciarelli on bass, and rotating pianists Joe McWilliams and Matt DeChamplain. They are all veteran professional musicians, educators, and brilliant performers. They all bring unique strengths to the band, Boates says.
Internationally known, Palinko is one of Connecticut's most highly regarded drummers, Boates says. He plays with many well-known jazz groups and once toured with the Tommy Dorsey band.
Bassist Bocciarelli is a hard worker, Boates says.
“Our bassist Lou Bocciarelli performs
everywhere with everybody,” says Boates. “I think he’s the working-ist musician out of all of us.”
Boates is amazed by pianist McWilliam’s depth of musical knowledge, who plays and teaches all styles.
“He is a compendium of piano playing and information,” Boates says.
The band leader says he also loves watching the rising star of their youngest member, Matt DeChamplain, a professor at Hartt School of Music in his mid-thirties who “really has a handle on our early jazz,” Boates says.
The band’s reed section currently features a rotating cast of guest performers from southern New England. Last year, the Bill’s Seafood Jazz All-Stars lost their beloved saxophone and clarinet

player, Noel Kaletsky. They are still trying to find someone to fill Kaletsky’s empty chair and big shoes.
“Noel was a loveable and funny character, a really fun performer, and a great musician,” says Boates.
Bill’s restaurant dedicates a corner to Kaletsky, featuring framed photos and a clarinet mounted on the rustic wallboard. Last year's tribute concert drew a large crowd and numerous guest musicians who played to honor a man still dearly missed.
The cast of band members has changed over the decades. Palinko currently has the most longevity. Palinko says the band started over 40 years ago by pia-
nist Bill Sinclair from Trumbull, who at the time was playing in a Saturday night house band at Bill's Seafood. Sinclair first called the group “The Friday Band” until he settled on Bill's Seafood Jazz All-Stars.
“When it started, the music was a sort of ‘hard bop’ alternative to the more traditional Dixieland style played on Saturdays,” says Palinko. “The style of the band evolved from whatever influences different players brought, and it's New Orleans style now.”
“I've been told that people call the restaurant during bad weather to make sure we’re still playing,” Palinko adds. “We have musicians coming in from Boston and New York to play with us because it's such a great gig!”
Boates says on a typical Friday night, they play a little of everything.
“We do a singalong or two to get the audience in the mood. We modernize the New Orlean’s ‘second line style’ with a little funkier beat,” Boates says. “We have playful banter and definitely great musicianship. Our fans really like to be among us, to listen and watch as we are creating our music.”
Boates and Palinko say the band feels like part of the family at Bill's Seafood, and Manager Mark Leopoldino, Bill’s staff, and patrons treat them as such.
“We’re grateful to Bill’s for all the years of having us there,” says Boates.
While the band has a regular following on Friday nights, Boates says, “It’s neat
BILL'S SEAFOOD JAZZ ALL-STARS

to have newcomers be enchanted by the music. There’s an incredible amount of joy up on the bandstand. We just love to play and enjoy each other’s playing. I always end the evening by saying to the audience, ‘If you’ve had half as much fun as we’ve had up here, you’ve had a wonderful time tonight.’”
Bill’s Seafood Jazz All-Stars play every Friday night. The band can also be hired as the Stevedore Stompers for parties, events, concerts, and dances. For more information, email Tom Boates at ttbiii@me.com.
Bill’s Seafood is located at 548 Boston Post Road in Westbrook. It is open year-round, every day from 11 a.m. to 9 p.m. For more information, call 860-399-7224 or visit billsseafood.com
