THE FLAVOUS It knows all about everybody that ball of a cat by the home oven

For everyone the flavours of Parma are Prosciutto and Fried Dough and Anolini in meat stock with Parmigiano Reggiano.

But the flavour here is not only food related, although meal time is a serious moment.

With the spirit of bon vivant charmers who take their passion extremely seriously, those who live in Parma do not like to leave the table dissatisfied – and that will not be the case with the refined products of the Osteria della Gatta Matta.

The taste of this city that we want to tell you is also that of cobbled streets and narrow shaded alleys, which, just around the corner, open up to the view of Piazza Duomo and the Baptistery: ancient and beautiful monuments that tell so much about the city and its having been a capital.

Knowing this corner of history means visiting it on foot and fully enjoying its beauty, with your nose up, discovering Correggio and Parmigianino.

The church of San Giovanni Evangelista, the Camera di San Paolo, the Basilica of Saint Mary of Steccata are not only masterpieces, they are family treasures for those who live here and, while enjoying their greatness every day, consider them part of themselves.

While wondering in the centre you can discover another very original corner of the city: the Antica Spezieria of San Giovanni, which still preserves the monks’ officinal tradition enclosed in precious stills and earthenware jars. But, as Parma’s own fame tells us, you only know it halfway if you haven’t enjoyed its cooking.

Dodging the bicycles that cross the centre and following the scent of freshly baked bread, it will be easy to reach the Rosetta Bakery, where the owner Giorgio, prodigal with tales no less than delicacies, tells sixty years of history: his, which is also that of the city.

Light but sparkling conversation is in fact another of our features.

An example? Try to stop in Piazza Garibaldi. Large and full of people in perennial coming and going it is the heart of the city, the ideal place to steal the bitter sweet flavour its people. Three crickets are enough to make a mid summer night

At night, the city speaks to you in its most romantic voice.

The street lights slowly come on and, in winter, the sidewalks and faces of people are illuminated by the glare of the shop windows still open: curious, desiring eyes.

With the good season for us the evening begins late, when the screeching of the swallows fades, and the desire to go out and be among the people is even stronger.

The city changes its face a little but there is no risk of getting lost: Parma remains familiar, even if barely known. After the day, having visited the city or finished work, you should first award yourself with an aperitif.

In the centre of town, at the Enoteca Fontana, at the Degusteria Romani.Maybe before an evening at the theatre, where music has made history modestly.

Of course theatres are visited during the day too, but there is no comparison with the sparkle of lights, the elegance, that feeling of a unique occasion that every performance gives us.

A few useful tips: the Teatro Regio is an institution and a proving ground for artists and singers since the time of Giuseppe Verdi. Just outside Parma, a short distance from the centre, in the ancient Abbey of Valserena with its heavy exposed brick walls is housed the CSAC (Study Centre and Communication Archive).
