Do You Speak Grill? I was excited to be asked to write this introduction for our first ever Outdoor Kitchen Edition because grilling is something I do 12 months of the year. Ever since I was a kid, I’ve been captivated by cooking shows. I was always partial to Bobby Flay. Not only is Bobby a seasoned chef, but he also shares my passion for cooking on the grill. Despite my busy schedule here at Gasper as a Landscape Sales Designer and co-parenting my young daughter Lucy with my wife Kelly, I still like to find time to experiment in the kitchen and do my part to prepare delicious meals for my family—I just prefer to do it on the grill. Not to brag, but I make some mean wings—which I start with a good marinade, then grill with simple seasonings for a nice char, and finish off with a sweet and spicy glaze that caramelizes for the perfectly addictive wing. And don’t even get me started on my naan (Indian flatbread) pizzas which I make on the grill with roasted garlic and olive oil. While my own, outdoor kitchen is currently still in the design stage (we just had a baby, after all), every day I work to bring the dreams of amateur chefs, grill masters and self-proclaimed foodies like Jim K. just a little bit closer to the reality of an outdoor kitchen of their own. Jim’s outdoor kitchen is this issues’ featured project. Jim graciously cooked for our staff when we photographed his kitchen last summer and I still hear the buzz throughout the office on how great that meal was! Read more about Jim’s outdoor kitchen on pages 6-9. I think that an outdoor kitchen is one of the best investments a homeowner can make in their back yard. A good quality grill and cook station is an asset whether you are trying to pull together a quick dinner on a weeknight or planning a big Memorial Day bash surrounded by friends and family like Jim does. What it comes down to, at least for me and the many clients I work with, is creating spaces in your home to spend time with those you care about the most. . grills and an assortment of backyard cooking appliances, cooking enthusiast, Jim K., had a vision of what his perfect grill space could look like. What he lacked was someone with the experience, know-how and artistic vision to transform his vision into an outdoor reality. Then he called Gasper. An amateur cook and self-proclaimed foodie, Jim wasn’t looking for just any backyard grilling space. Because he loves to entertain and cook for his family and friends, the realities of a potential outdoor kitchen had to meet Jim’s vision for back yard cooking perfected, along with his big expectations for the ultimate outdoor kitchen. 6

“My wife Robin jokes that I just want an audience to watch me cook, but once we decided this house would be our forever home, I knew I wanted an outdoor kitchen and that I wanted to go big!,” recalled Jim. Going big meant finding someone who could turn an aging grill and a lot of separate side equipment into a more productive, better designed outdoor kitchen space. Initially, Jim said he couldn’t find a contractor with a good track record for both good design and quality construction, but on a recommendation from a friend, he and his wife Robin decided to call Gasper. After a few rounds of design iterations with Gasper Landscape Architect Christina Reeves, a kitchen plan was developed. The plan called for uniting the whole backyard
The power burner, grill and Big Green Egg all sit slightly outside of the roof line to comply with the equipment’s specifications, but otherwise the GASPER-BUILT STRUCTURE over Jim’s kitchen ensures that Jim is able to use his kitchen rain or shine. Recessed lighting in the PVC finished ceiling ensures that the food and entertainment can last long into the evening hours.

Jim (left) uses the large surface of his EVO FLATTOP GRILL to sear delicate foods such as these lobster tails and to grill veggies. It is also great for making breakfast foods such as eggs and pancakes for a crowd. With this grill there are no extra pots and pans to wash. A bird’s eye view (below) of the U-configured COUNTER SPACE displays ample counter space on either side of each of Jim’s three grills. The work counters are topped with a dark colored, leather finished GRANITE , while the bar height eating counter is topped with a contrasting lighter, polished granite.
into one integrated entertainment area, meeting all code requirements, and more importantly, incorporating all the different grills and equipment that Jim wanted in his dream outdoor kitchen. Moreover, the 3D model (see page 10) Gasper uses to help clients visualize the finished project proved extremely helpful, allowing Robin and Jim to contribute to the design process. Christina even helped integrate the proposed paver areas into existing paver areas on Jim and Robin’s property. Those existing pavers were in good shape, and by choosing to infill the new areas with a unique shaped paver, the Cambridge River Rock paver, Christina was able to create some efficiencies that worked stylistically. Because the river rock paver has an irregular feel to it,
the paver contrasted nicely with the older paver. Trying to match the pavers would have been nearly impossible, and starting over would only have added to the work and the costs. The resulting design is fun, economical and appreciated by both Jim and Robin. Reflecting on the design and construction, Jim said three things stood out to him about working with Gasper. The first was the quality of the work. Jim said he felt the carpenters were fantastic and that the finished structure exceeded his expectations. The second was the skill of the stone masons. “Frankly, they are artists. They cared so much about their work,” Jim raved. “They made sure everything was perfect.”

The third factor was the Gasper landscape foreman, Mike Konz. Jim works from home and said he felt Mike was always accommodating and exceptionally polite. “Mike went out of his way to explain everything and was truly phenomenal,” Jim explained. “The work site was always left in a very livable state and the construction was done twice as fast as I would have imagined.” “I am tickled to death at how it all turned out,” said Jim, beaming with pride. “People are wowed, and I am really proud of it. It is a true working space, not a display space.” Even Robin, who Jim said was a bit skeptical of the project at first, loves the space. “When we are not entertaining and it is just the two of us, we can still relax and enjoy the quiet of the backyard. I wouldn’t have done it any other way,” concluded Jim. Clearly enjoying his new “wow” space, Jim graciously gave Gasper’s photo team a sampling of his cooking last
year while we were working on this feature. “This is the best burger I have ever eaten,” is a comment heard more than once that day. We also learned that Jim’s “amateur” status as a cook may be somewhat understated. Every year, the couple hosts a big event known as the ‘Seafood Boil Party’ they have every Memorial Day, which features Snow Crab, King Crab, Langostino, Spot Prawns, sausage and corn. One additional act of kindness Jim was willing to share with the Gasper team, and our readers: For the Seafood Boil Party, one of Jim’s secrets is to use a combination of beer, apple cider vinegar and Old Bay Seasonings when steaming the food. The REAL STONE veneer on the cook station (top) is a light colored stone called Neshaminy Creek in an ashlar (a hewn, squared stone) pattern. True to his desire for this to be a working kitchen, the floor in the kitchen is concrete, which makes it easy for Jim to hose down and clean the floor.
One of the highlights of the meal was Jim’s steamed version of Mexican Street Corn (above). The corn is first slathered with a lime mayo dressing, covered in shredded, sweet but salty Cotija cheese and then finished with Trader Joe’s Chili Lime Seasoning Blend. Believe us…it was fabulous!

Just on the other side of the bar seating, (right) within arm’s reach, Jim has two built-in coolers where he keeps beverages such as wine, beer and soft drinks on ice. The coolers have bottom drains that make it easy to drain and clean the coolers after each use.

Steps for a Healthy Pond • Fertilize your plants. Fertilizer plugs go into the soil in the pot near the base of the plant and gradually dissolve. • Remove dead foliage from the pond. The leaves of plants will yellow and brown as they age. When this happens, it is best to cut them off. This reduces debris buildup in the pond, provides more room for new growth, and improves the appearance of the pond. • Feed your fish well. Do not over-feed. Feed no more than the fish will eat in 2 minutes. Feed 1-3 times per day.
