Q: What makes you special? A: LIDAR, vision, ultrasound and infrared. I’ve basically got superhero-level senses. Q: Your key stats? A: I am 133 cm tall and 57 kg of pure efficiency with a 75-litre delivery capacity and a 10-hour battery life. My top speed is 1.2 m/s and I can tackle 10° slopes and small obstacles without drama. WORDS: CAROL-ANNE BRUNT AERIAL PHOTO: BLUE FLAG VISUAL

The Story of Sópers House Hi! I’m Carol-Anne, co-owner of Sópers House alongside my husband, Nigel. Our journey began around 2018/19 when we were planning to redevelop Media House, a building we’ve owned for about 14 years. Our vision was to transform it into a serviced office block with a gym and a restaurant. Just as we were getting excited about this project, COVID hit. During the pandemic, our construction company – Titchfield – kept going strong, with about 50 team members working throughout 2020 and 2021. It was during this time that inspiration struck. One day, while I was waiting in line at a local coffee shop, I noticed how everyone was silent; just staring at their phones. Coming from the North of England, where chatting with strangers is the norm, I felt we needed to create a community space within our industrial unit.

I rushed home to Nigel to pitch the idea. After a bit of convincing, he was on board, saying, “You design it and I’ll build it!” That was the spark we needed to get started. Fast forward four years, and Sópers House has blossomed into something beyond my wildest dreams. We’ve expanded; adding an indoor spa just two years after opening our doors. Today, we’re proud to say we have over 1,500 members and the place is buzzing with energy! I absolutely love walking into The Terrace and seeing people working, chatting, eating, and truly feeling at home. What brings me joy is watching relationships form and friendships grow. It warms my heart to see our members connect with one another. A personal favourite is the range of classes we offer; they’ve become an essential part of my daily routine. I especially love the boxing classes, and both mat and Reformer Pilates.

‘ Fast forward four years, and Sópers House has blossomed into something beyond my wildest dreams.’ 4

Here’s a fun fact: despite being the co-owner of Sópers House and overseeing its development, I haven’t actually been in the pool or spa since it was built! I spent countless hours in it before it was filled with water, but I still haven’t had the chance to enjoy it since the work was completed. I’m so proud of how Sópers House has evolved into a community hub, a place where people come together. I couldn’t be happier with how far we’ve come. It’s not just a business; it’s a space where connections flourish and lives are enriched. I can’t wait to see what the future holds for us! O 5

Introducing Sópers House head chef Matus Hanuscin

NA M E : Matu s Hanu scin ROL E : Head Chef at Sópers Hous e

Specially selected sirloin and leg of lamb are cooked to exacting temperatures to ensure exceptional juiciness and flavour. The kitchen prepares around 80kg of potatoes and 30kg of vegetables for a single service. Potatoes are roasted in duck fat with thyme, rosemary and garlic (with the vegan alternative made using vegetable oil). Vegetables are steamed, then lightly roasted with golden syrup, thyme and garlic for a subtle caramelised finish.

Matus’s Favourite Dish While Sunday roast may be the star of the weekend, Matus’s personal favourite dish is a classic, executed with finesse: Beef Tartare. Below, he shares his own recipe – a reflection of his precision, his love of balancing acidity and richness, and his belief that great food doesn’t need to be complicated to be extraordinary.

Ingredients 500g diced beef fillet (best cut while slightly frozen) Tartare sauce 100ml ketchup 2 egg yolks 20g Dijon mustard 5ml cherry vinegar 5ml Worcestershire sauce 10ml Tamari soy sauce 10g chopped capers 1 finely chopped shallot 20g finely chopped parsley 20g finely chopped chives 5g salt Pickling mixture for the shallots and chanterelle mushrooms 100g red wine vinegar 100g sherry vinegar 100g sugar Bring both vinegars and the sugar to a boil, then pour the mixture over shallot rings and chanterelle mushrooms. Let everything cool in the liquid. To serve: Mix the diced beef with the tartare sauce, spoon onto the plate and finish with a garnish of pickled shallots and mushrooms. Serve with toasted sourdough.

W

ITH MORE than a decade of experience, spanning fine dining, luxury catering venues and exclusive private members’ clubs, head chef Matus Hanuscin brings confident elegance to the kitchen at Sópers House. He is proud to have worked for some of the world’s most recognisable names, including Princess Anne, Lady Chief Justice Baroness Carr of Walton-on-the-Hill, Usain Bolt, Rihanna, the Brazilian National Football Team and Kim Kardashian. Despite the high-profile names he’s cooked for, Matus’s food is grounded in his Eastern European roots and his genuine love of food. One of his greatest joys is pickling. If it grows, he’s probably pickled it; everything from blackberries, shallots, mushrooms, and even strawberries! “There’s something deeply satisfying about transforming an ingredient,” he says. “It’s tradition and creativity in one moment.”

Kitchen preparations start early at Sópers House; the Yorkshire pudding batter – a generous 16 litres of it – is prepared the day before, then baked fresh from 8am on a Sunday morning. Even the desserts are homemade; a huge 10kg of apples contribute to making our signature apple crumble! “It’s all those small touches, the extra steps, the time we put in… that’s what makes it feel special,” says Matus. “When you start with the best ingredients and give them the respect they deserve, the flavour speaks for itself”. O www.sopershouse.co.uk

It’s this blend of heritage, craftsmanship and deep love of food that shapes everything Matus creates in the Sópers House kitchen. Matus’s signature Sunday roast The Sunday roast at Sópers is crafted in a process that begins days before guests even arrive at the restaurant. It all starts with the gravy: this rich cornerstone of every roast dinner is created by roasting chicken bones, veal bones, guinea fowl and calf’s feet, along with carrots, onions and other vegetable offcuts from the kitchen. It’s a labour-intensive, three-day ritual that reflects the team’s commitment to both depth of flavour and a zero-waste philosophy. 7

Peter Newman: Sópers House reforming Reformer! Peter’s journey to becoming a Reformer Pilates instructor

M

Y PATH to becoming a Reformer Pilates instructor began on the courts, tracks, and sports halls I’ve been competing in for most of my life. Sport has always been my anchor. Movement, discipline, and the thrill of pushing my body to its limits have shaped not only my fitness, but my identity as well. Woven through all of it was a love of teaching and inspiring others to discover just how strong they can be.

A brief history of Reformer Pilates Reformer Pilates was invented by Joseph Pilates during WW1 as a rehabilitation tool for injured soldiers in internment camps in Britain. He repurposed hospital beds, attaching springs to them to create resistance which evolved into the Pilates Reformer Bed. The system he developed was first known as ‘Contrology’, and evolved into the Pilates method taught today. Joseph returned to Germany after the war, but moved to the U.S in 1923, where he set up a New York Contrology studio, attracting dancers and performers alike. It wasn’t until 1970 that the Pilates method was finally brought back to the UK by Alan Herdman. Herdman had been asked by the London School of Contemporary Dance to visit New York and investigate Joseph Pilates’ methods. He set up the first pilates studio at The Place in London in the same year.

It was squash that first introduced me to Reformer Pilates. During my competitive years, the group of national players I trained with incorporated Reformer sessions into our programme. At the time, I saw it simply as part of the routine; a tool to improve performance, increase mobility, and build resilience. I had no idea then how integral it would become to my future. My journey took an unexpected turn when my property business enabled me to acquire two Squash & Health Clubs. Suddenly, I wasn’t just training, I was shaping environments where others could discover movement for themselves. I went on to qualify as a National Squash Coach and a Group Exercise Instructor, specialising in Spinning, another discipline I grew to love. Owning the clubs also gave me the freedom to travel and play around the world. One of my proudest moments was winning Bronze at the World Masters Games in Vancouver in 2015. Sport can give, but it can also take away. In the Hertfordshire County Final in 2019, I suffered a knee injury that abruptly ended my squash-playing days. Losing the sport that had defined so much of my life was incredibly hard, but movement often has a way of finding us again. I slowly returned to teaching, and began instructing classes at Sópers House when it first opened, fitting sessions around my main business. Then came an opportunity that truly shifted the direction of my

10

career; Sópers House offered me the chance to train as a Reformer Pilates instructor alongside the in-house gym PT team. The training was exceptional; technical, and challenging in all the best ways. It sparked a determination to become not just good, but truly strong and confident in my teaching. That drive led me to gain further qualifications, completing both Focus Award Reformer Pilates and Mat Pilates courses. These deepened my understanding of Pilates as a system, refined my technical skills, and strengthened my belief in the power of mindful movement. Today, I’m proud to teach six Reformer classes a week at Sópers House. Every session reminds me why I chose this path. Helping people build strength, restore balance, and move in ways that support both body and mind is a privilege I never take for granted. There’s something incredibly rewarding about seeing someone walk out of the studio standing a little taller, breathing more deeply, or simply feeling more at ease than when they arrived. I’m grateful every day for the chance to teach, to keep learning, and to support others as they find their own way toward better movement and well-being. What I love about Reformer Pilates Reformer Pilates is unique for its remarkable health benefits and inclusive nature. The Reformer bed and instructor together provide a full-body, low-impact workout, with variable resistance and adaptable exercises to suit every participant. Strength

If there is one class at Sópers House that feels like a non-negotiable part of my wellness routine, it’s Peter’s Friday 10:30am Reformer Pilates. FLEXIBILITY AND RANGE OF MOTION One study found that after 3 x 60-min sessions a week for 8 weeks, sedentary women improved their fingertip-to-floor reach by 4.6 cm. Another study on older adults found increased range of motion in the hips and ankles after 10 weeks of once-weekly sessions.

CORE STRENGTH AND MUSCLE ACTIVITY Reformer Pilates is highly effective for building core strength. The use of springs on the reformer allows for variable resistance, which can increase core muscle activity and stability. Some exercises show a 228% increase in rectus abdominis activity on an unstable platform compared to a fixed one.

Studies show statistically significant improvement in posture, bone density, body composition, cardiovascular and metabolic health, respiratory function, stress reduction, cognitive function and anxiety and depression.

The approximate number of people (17% of the UK Population) that participate in some form of Pilates, though only 8% have tried a Reformer class, showing there’s significant room for growth.

Winter warming sweet potato detox bowl Whoever said detoxing is only about a juice cleanse clearly hasn’t tried this! Preheat oven: to 200°C / 400°F.

For the quinoa: ¾ cup quinoa, rinsed 1 ½ cups water Pinch of salt For the roasted chickpeas: 1 cup cooked or canned chickpeas, drained and rinsed 1 tsp olive oil 1 tsp cumin 1 tsp paprika Pinch of salt For the tahini dressing: 2 tbsp tahini Juice of ½ lemon 1 tsp grated fresh ginger 1 clove garlic, crushed 2-3 tbsp water (adjust to desired consistency) Pinch of cayenne pepper (optional, for metabolism boost) Optional topping: Chopped fresh coriander.

Roast your vegetables: Toss the sweet potato, beetroot, and red onion with olive oil, smoked paprika, salt, and pepper. Spread on a baking tray and roast for 25–30 minutes, turning halfway, until tender and slightly caramelised. Add kale in the last 5-7 minutes of roasting to lightly crisp. Cook the quinoa: In a medium saucepan, bring water or broth to a boil, add quinoa and a pinch of salt. Reduce heat to low, cover, and simmer for 12-15 minutes until water is absorbed. Fluff up with a fork. Prepare the chickpeas: Heat the olive oil in a small pan over medium heat. Add the chickpeas, cumin, paprika, and salt. Sauté for 5-7 minutes until slightly crispy. Make the dressing: Whisk together tahini, lemon juice, grated ginger, crushed garlic, cayenne, and water until smooth. Adjust consistency as needed by adding water. To serve: Divide quinoa between bowls. Top with roasted vegetables, chickpeas, and kale. Drizzle generously with tahini dressing. Garnish with chopped fresh coriander. 17

Meet Dan Marriott: Personal trainer at Sópers House

Can you tell us a bit about yourself and your approach to training? DAN: Over the past decade, I’ve been helping people move, grow, and build consistency in the gym. My speciality is finding each client’s purpose and creating a feeling of belonging. I’m all about positive energy, constant encouragement, and building a community where progress feels natural, supported, and fun. My mission is simple; make exercise something you look forward to, not something you dread! Sustainability is key. I want people to enjoy the journey as much as the results. What’s your favourite session to teach? DAN: Oh, there are a few! Friday 8:30am Blitz is a highlight, especially when Abba comes on! Saturday mornings are for boxing, which I love too. Honestly, I enjoy all my classes. Each session is fun in its own way, and the vibe our community creates really keeps it special.

18

The perfect playlist for a workout? DAN: Hands down, my Kanye West mix. It’s still in the top 10 most streamed on Spotify, so that says it all! Music is huge for keeping energy high and motivation strong.

Any fun fitness facts you’d like to share with clients? DAN: Muscle is the body’s most metabolically active tissue. Every extra kilogram burns roughly 10-15 extra calories per day at rest. Sounds small on a day-to-day basis, but adds up to a huge impact over months!

What foods fuel you through your week? DAN: I like to keep it balanced and simple:

The best programme is the one you actually do. Consistency beats complexity every time. A simple, repeatable plan is better than a ‘perfect’ one done inconsistently.

Breakfast staples: Overnight oats with dates, cashews, and peanut butter. Weekly treat: The Sópers House veggie breakfast – I can’t resist it! Special recipe: Our healthy pancakes at Sópers House, made with Polish cheese, eggs, vanilla, Stevia, and semolina. Least favourite food: Big Daddy Pork Pie. It’s a no-go for me. What’s your workout of the month? DAN: I love a full-body challenge, and this one can be completed in 20 minutes: 1k row / 1k ski / 2k bike / 1k run It’s fast, efficient, and hits every muscle group. You’ll feel it the next day!

How do you keep clients motivated? DAN: I make it about more than just exercise. It’s about creating a supportive environment where everyone feels part of something bigger. We celebrate wins together, push each other, and make the hard work fun. When people enjoy their workouts, they stick with them, and that’s when real transformation happens. Thank you for your time Dan! We’ve loved getting to know more about you and your business here at Sópers House. O www.sopershouse.co.uk
