napologetically fearless, the firebrand actress Swara Bhasker is no less of a phataka in reel life as well as real! While as a powerhouse performer, she has effortlessly walked from one diverse role to another on-screen, off-screen the gutsy gal never shieds away from speaking her mind when the need arises. Even if it means getting constantly subjected to trolls and haters on the internet. A self-confessed feminist, Swara has carved an impressive niche for herself in the Hindi film industry with her memorable and power-packed characters — in both art-house and commercial movies. From playing the unconventional friend – Payal to Kangana Ranaut’s character in the Tanu Weds Manu franchise to the determined household help Chanda of Nil Battey Sannata, who was willing to go to any length to educate her daughter… To the outspoken and
bold Sakshi of Veere Di Wedding, who seamlessly brought to the commercial screens the subject of women’s sexual desire, to portraying a smalltown dancer in Anaarkali of Aarah – Swara has portrayed each character unabashedly, giving the audience a glimpse of her versatility. Currently, gathering praises from all quarters for her recently released web-series – Flesh and Rasbhari, Swara is now all set to wow the audience yet again with another OTT serving - Bhaag Beanie Bhaag. As the festive season sets in, Darpan caught hold of the feisty actress amid her busy schedule to talk about the festival of lights, her fondest memories of Diwali, her journey to B-town and her upcoming projects. Excerpts from the interview:
The festival of lights is finally upon us, what is the significance of Diwali for you? Diwali's significance for me will always be a reminder that we can find light and happiness even in the darkest of times. The festival brings people together and there is always hope for a better future. Diwali is all about spending time with your family and loved ones, bingeing on delicacies, lighting up the house…
What do you like the most about the festival of lights? Diwali has always been such a special day for me and my family. More than anything, I think it is about making memories. The festivity, the food, the bonding and the joy Diwali brings, is something very close to my heart.
important to me. But there have been exceptions to that because of my work schedule.
Do you have any special plans for Diwali this year? I will be celebrating Diwali with my parents this year.
So, what’s happening on the work front? I am finishing Bhaag Beanie Bhag for Netflix and waiting for Sheer Qorma to reach the audience.
Diwaliʼs significance for me will always be a reminder that we can find light and happiness even in the darkest of times. Diwali brings people together and there is always hope for a better future.” 8
Like you mentioned, the festival of Diwali is about making memories, can you share your fondest memory of the festival? There are so many memories of Diwali that it is difficult to pick one over the other. But I think decorating the house every year with my family brings a strong sense of nostalgia for me.
How do you usually celebrate Diwali? I try to be with my parents every year. That is very
Apart from these exciting projects, we have even recently heard about the sequel to your 2018 hit Veere Di Wedding, can you tell us a bit more about the project? I think it would be superb if the sequel to Veere Di Wedding happens. I would love to be part of it. It is a very special film and a sequel to it would be as kickass as it the first one!
Speaking about kickass, there is a lot of buzz about your recent web-series Flesh and Rasbhari as well, what do you have to say about the response?

How would you define your professional journey, from doing plays in Delhi to carving a remarkable niche for yourself in the entertainment industry? It has been fun and satisfying so far, but I have miles to go and so many more characters to explore. I have been very grateful that the audience has loved my work and that has only encouraged me to work harder and continue entertaining them as long as I can.
What has been the most defining moment of your career? I loved the response both Flesh and Rasbhari got! It goes on to say so much about the changing demand of the audience. They were two very different characters and I am very grateful to the audience for loving them and giving so much admiration!
Can you share a little bit about your upcoming show Bhaag Beanie Bhaag and elaborate on the character you play in the series? I play a stand-up comic in the show. There has never been a story on a female stand-

You made your web debut in 2016, and now you have more web projects lined up‌ Are you enjoying being on the OTT space? Absolutely! It's a new kind of storytelling and has a lot of new things to offer. It is challenging and exciting at the same time and it gives a great deal of satisfaction to an actor.
The most defining moment of my career was playing Anaarkali of Aarah.
As a creative person, what are your strongest and weakest points? My strongest point is being able to connect emotionally with every character I play and my weakest point is lack of discipline.

Diwali this year from home. Though Diwali is that time of the year when all of the family comes together, this year the only way to celebrate it is by maintaining social distancing, wearing a mask, and not assemble in larger groups. We wish you a happy and safe Diwali with virtual parties, lots of sweets, and savories, plus unlimited fun!
Every year, we advocate taking a step towards being green. For all special occasions - be it birthdays, anniversaries, or just any festival, how about buying a plant or planting a tree? This way you are building your own garden or nursery (buy your favourite plants). When the weather permits, also plant a tree that will be special and can be a special gift for every birthday. This could easily be the best way to go green.
Send Diwali cards Go back to the days when there were no cell phones or Internet. Old fashioned can never go out of trend - especially the ones that you make yourself. Design a handmade card and send one to your near and dear ones, for something more polished, you could take a picture of your family in festive wear and send a lovely photo card.

Indulge in pottery, flower decoration, or just painting for your special one. If you choose to buy a gift, you could at least wrap it at home, or write a personalized note. After all, it is the thought that matters, doesn't it?

Charity This year will be difficult for the entire world but a little charity and giving back to your community can go a long way. Buy new clothes for the underprivileged, donate to NGOs back in India, or just feed the poor everybody needs a little hug and smile to get through the tough times.

Do a driving parade Since visiting friends and having parties can be difficult this year, the idea for the year is to get on a car parade. What is that? Remember how kids graduated this year? Well, this is similar to that. Decorate your car with garlands, pathaka stickers, and anything quirky and fun. Drive-by your friend's place and wish them from the safety of your car. This way you will cover everyone's house, get to see your loved one, and dress up as well. While this might not be as fun as the real parties are, we will retrieve the fact that this year will be different. Get all your friends to decorate their cars and see which ones are the craziest of them all.

gurdwaras, singing shabads (sacred songs) in praise of the Guru, langar (free meal served to visitors at community kitchens in gurdwaras), and bursting of fireworks. Jains celebrate it as the day when the 24th and last Jain Tirthankara Lord Mahavira, attained Moksha, that is, liberation of the soul. Lord Mahavira attained Moksha at Pawapuri in the Nalanda district of Bihar at the dawn of the Amavasya (new moon). The presence of many Gods on the occasion illuminated the darkness. The following night was pitch-black, so people light up their houses to symbolically keep the light of their Master’s knowledge alive. iwali is most commonly known as “The Festival of Lights” by people all across the globe, yet often the reasoning behind the significance of lights at this time of year is unknown by many. Various cultures and religions come together to celebrate this auspicious festival in their own unique ways, but the use of light is common to all, as it is considered to be a way to eradicate the world of darkness and despair. Let us now embark on a cultural journey, where Diwali serves a
different purpose and reason to celebrate this light festival. In the Sikh religion, Diwali marks the day the religion’s sixth guru, Guru Hargobind Singh Ji, and 52 other kings were released from prison. Guru Hargobind Ji was able to devise a clever scheme in which all 52 kings could grab hold of his cloak, in order to be freed, as ordered by the emperor who had imprisoned them. Once Sikhs learned of the incredible feat, the Golden Temple was lit up with many lights and candles to welcome them back, and that soon turned into a tradition still celebrated today. Each year, not just the Golden Temple is decorated in lights, but Sikh temples around the world do their part to bring in extra light on Diwali, and remember the auspicious day which signified freedom back in the year 1619. In the Hindu religion, Diwali surprisingly has more than just one purpose for celebrating it. In West Bengal, Odisha and Bangladesh, for instance, those who are avid worshippers of the goddess Durga celebrate Diwali as a way of welcoming Maa Kali, which is the goddess’ avatar. These festivities continue for three days, and people bring sculptures of the goddess Durga to their homes and nearby temples, where offerings of flowers, sweets, food and sacrificed animals are made. In West Bengal, these prayers and offerings are often made at night

in cremation grounds, and run until dawn. A huge population of Indians use Diwali as a time to celebrate the goddess Lakshmi, who is the goddess of wealth. In order to receive her blessings, along with good health and wealth for the year, families work hard to clean and decorate their homes in preparation for her arrival. or ‘diyas’, waiting for the goddess to arrive. Sweets are exchanged amongst families, and once prayers are offered, fireworks light up the night skies in every neighbourhood. Constellations and stars also have a significance in determining the timing of the Lakshmi Puja, so people look out for constellations such as Libra that night, which symbolizes balance and stability. In Trinidad, Diwali is celebrated for the longest
time – nine days! Since many Indians were forced to become slaves and move to Trinidad in the 19th century, Diwali marks a time they celebrate their independence and freedom. Diwali has also been turned into a national holiday in Trinidad, and is known as ‘Divali’, the celebration of good winning over evil, and spiritual darkness being eradicated. Thus, it is celebrated in nearly every household, and not just as a religious holiday. When we think of light, we automatically think of its brightness, and how it brings a sense of joy or comfort which makes us happy. Similarly, during Diwali, people light many candles, fireworks and lanterns to spread the feeling of joy they get when they celebrate the happy festivities of the occasion. As this tradition continues, take time to spend it with loved ones and also remember the deep historic roots which encourage us to bring more light into our world on this special day.

Diwali is one of the most prominent holidays in Hinduism. It relates to the Hindu epic, Ramayana, which centers around Prince Rama, the avatar of Vishnu. Diwali celebrates the day of the return of the beloved Prince Rama from a 14year exile, after the defeat of the demon king Ravana. The people of Ayodhya lit up the streets with lamps and fireworks, welcoming their prince home. The day is also associated with

with 52 other newly freed kings, by the Mughal emperor Jahangir. However, what many may not know is that the importance of Diwali for Sikhism actually goes further back. The third guru, Guru Amar Das Ji, had built a well in Goindwal with 84 steps, a famous place of pilgrimage even now, and invited Sikhs to bathe there on Vaisakhi and Diwali. Moreover, Diwali also relates to two other key events in Sikh history; it is the day of the founding of the city of Amritsar, and Bhai Mani Singh’s martyrdom was brought on by a failure to pay a fine imposed in 1738 for celebrating Diwali, and his refusal to convert to Islam. Sikhism and Hinduism host perhaps the more prominent and well-known forms of celebration associated with Diwali. However, both Buddhism and Jainism also

Sikhism and Hinduism host perhaps the more prominent and well-known forms of celebration associated with Diwali. However, both Buddhism and Jainism also have unique customs and histories linked to Diwali.
have unique customs and histories linked to Diwali. The festival is not as widely celebrated in Buddhism as the aforementioned, except perhaps in Nepal and Newar. Several deities in the Vajrayana Buddhism are worshipped and Lakshmi is also offered prayers. In Jainism, Diwali is observed for ‘Mahavira Nirvana Divas’, in remembrance of the physical death of Mahavira. There are some similar practices to Hinduism in which the customs include the lighting of deva and praying to Lakshmi. The focus, however, remains on Mahavira. According to Jainism, the tradition of the lighting of the lamps began at the passing of Mahavira. The 18 kings who had gathered started the practice in remembrance.
Diwali has another, more westernized definition as well; the Festival of Lights, which aptly captures the hope and goodwill attached to the many interpretations. Additionally, despite these different interpretations, Diwali is centered on a very fundamental concept of the victory of good over evil. There is a common theme of righteousness and of overcoming the darkness in whatever form it might take in our lives. Diwali helps remind those who celebrate it, that despite their differences, they share a respect for a strong moral code, that resonates across cultures.

changing the mailbox, or putting up a new nameplate. You can choose a traditional theme décor for the entrance that can add a festive new look to the house.
Spruce Up The Walls The easiest way to bring a brilliant burst of freshness to your home spaces is by jazzing up your walls. Either give your washed-out walls a whole new look with a bright new coat of paint or opt for decorative wallpapers that will add to the celebration mood. It’s the oldest trick in the book that can help you transform your home instantly. Choose cheerful colour themes or textures as they go perfectly well with the festive vibe. Alternatively, you can even discard your
old wall decorations and deck up the walls with a fancy new décor to ensure a complete makeover. Bring down the old paintings and artefacts and replace them with contemporary art-pieces or simply add a personal touch by decorating your walls with family photographs.
It is not always feasible to splurge on new furniture to change the appearance of your home, but it is possible to turn your old furniture from boring to fab with simple innovative ideas that ensure the feeling of newness. You can either style the old furniture with stencils, refinish it to give a brand-new look, paint or stain it, or simply use a slipcover to revamp your furniture and change the whole feel of your house. The Internet is loaded with plenty of DIY solutions to enliven your old furniture this festive season.
Brighten Up The Ceiling While re-doing the house, one often tends to forget about the fifth wall of our house – The ceiling. You will simply be amazed as to how your house can suddenly feel brand new with just a pop of colour on the ceiling. Hence a simple and budget-friendly way to ensure that your house breathes freshness this festive season is by pepping
up your ceiling. A dash of hue on the usually white painted ceiling can instantly change the way your room looks. Just ensure to choose a colour that compliments the rest of the décor.

Change Light Fixtures Replacing your old light fixtures with new ones can improve the look and feel of any room. If you don’t wish to invest in new fixtures, you can even simply swap light fixtures from one room with another and still achieve your home makeover goal for Diwali. You can even revamp your old light fixtures by just replacing the cover. Replacing a light fixture is easy, quick and can instantly update your home.
Update The Kitchen Hardware Kitchen is the heart of every house and during the festive season, the one space that you often look forward to jazzing up is your kitchen space. Well, the simplest and budget-friendly way to

The one space in your house that is used the most during Diwali is your dining area. And the good news is you can easily add a dash of newness to this space with a few simple changes. Buy new table runners or you can easily make some new ones from old sarees and left-over fabrics that have highlights of gold. You can further give a festive upgrade to your dining space by using candle stands, table mats, adding new lights or simply by buying new crockery. So, all you need to do is a few amendments here and there, and your house shall be festive ready.

How to Embrace
Diwali This Year By Mrinalini Sundar
Either get your mithai ke dabbe from a store, or experiment this year by making these sweets at home. Make this Diwali extra special and pack the sweets for your loved ones in a fancy box. 44 DIWALI 2020
he festival of lights aka Diwali aka one of the most celebrated festivals in India is fast approaching. But 2020 has put a full stop on all the celebrations, and so we have to come up with new ways to enjoy the festivities. If one was to go by the mythological texts then Diwali is all about good taking over the bad, and with that hope we will be embracing the festivities this year, albeit a little differently. Here are a few steps I hope to follow for the upcoming Diwali, and enjoy this time with my family. Read on..
Go virtual: Zoom has become the one-point-solution to all communication issues. But this year Zoom will also be useful for all sorts of virtual events. So sit back, relax, and watch some family friendly shows such as Virtual Diwali, Family Day, Friends Of India Diwali Celebrations, Diwali London, and the mega Times Square events is also said to have an online version of the event. Several other events will also be streamed live on Facebook, etc so the day can look quite busy. Do make a list of these shows and don’t miss out the fun on the big day.

This year is all about sanitizing and cleaning up. But Diwali is also that time of the year when the house gets a makeover and major cleanup and face lift. Bring the sanitizers in, clean the house, get rid of what you don’t need, decorate the space, and give the house a new feel and look. While at it, make sure you also indulge in organising and categorizing the house. This way you are not just bringing in positive vibes to your house and your mind alike.
Crackerless festivities: The need of the hour is for everyone to indulge in self-care. Mental health is of utmost importance to everyone at this point of time, anything to relieve stress or anxiety is a gift that you can present yourself this Diwali.

Self-care is primary: This year has been very difficult for everyone courtesy COVID-9.The need of the hour is for everyone to indulge in self-care. Mental health is of utmost importance to everyone at this point of time, anything to relieve stress or anxiety is a gift that you can present yourself this Diwali. A self-care package from any of the top brands that includes lotions, bath products, creams, hair creams and products can be very useful. Another idea is to draw yourself a relaxing bath, light the candles, and wish you a Happy Diwali.
For the past several years, the use of crackers has gradually reduced. With people getting aware about child labour and the chemical and environmental harm that the crackers do has been the major cause for the reduction in crackers. But this year, the use of crackers is going to be in its minimum. So what is the alternative? Well, that's why we are here to help. Try procuring glow sticks, colourful balloon firecrackers which are harmless and can be a tad noisy for your liking. You can also get paper popper which are easy to make and is fun for kids. If the kids want something noisier, then get them a vuvuzela which makes a loud sound and is a good alternative for the chemical

bombs. These crackers are harmless and there is no fear of your child incurring injuries or a burn.
Buy local: This year the best way to embrace any festival for that matter is by supporting local businesses. From shopping your lehenga, kurta, or children's clothes, make sure you buy them from the Indian handicraft store that hardly sees any customer these days. For all the return gifts that you generally give you’re closed one, head over to that artist who makes handmade goodies. If you are feeling lazy to make mithai at home, that's alright, too.
Diwali is a time when you can indulge in sweets and nobody will judge you for those extra holiday kilos. Gobble up as many rasgoolas, gulab jamuns, and kaju katlis as you want, for this is Diwali. Either get your mithai ke dabbe from a store, or experiment this year by making these sweets at home. Our favourite however are the moti choor ke laddo that can never be too many of them. We also plan to take it a step further and try making some delicacies such as shahi tukda and modak. Make this Diwali extra special and pack the sweets for your loved ones in a fancy box. Now you and your family have truly embraced Diwali. While you can be bummed about this year and its festivities going downhill, we believe it is all about living in the moment and embracing everything that comes our way. Happy Diwali, give your family member a hug and enjoy the season of lights with a smile.

Exploring the Importance of Human Connections

Having deep, meaningful relationships and affiliation with a group of people creates a sense of acceptance and helps people feel supported. 50 DIWALI 2020
A heart-to-heart talk with your best friend, an exchange of laughter with the store cashier, a video shared on the family WhatsApp group: as social animals, humans thrive on connection. It is widely accepted in psychology, that after a person’s physiological (water, food, sleep) and safety-oriented (shelter, protection) needs, love and belonging are
essential to one’s well-being. Having deep, meaningful relationships and affiliation with a group of people creates a sense of acceptance and helps people feel supported. During times of celebrations and festivals, these connections become amplified and bonds are nurtured. These conversations help people share their experiences with one another and creates a safe space for discussing ideas and issues. Moreover, time spent with others often exposes one to different schools of thoughts, culture, traditions and beliefs, which further develops empathy
and tolerance. Being part of such a group can tackle depression, decrease anxiety and stress, combat loneliness and enhance one’s selfperception. In fact, studies show that those with social support from family, friends and coworkers have better health. Note that not all connections come from intense relationships or family gatherings.
Socializing at a work or school Diwali event or even wishing the restaurant waiter ‘Happy Diwali’ is sometimes enough to lift your spirits. he festival of lights, love, laughter and FOOD is finally here — which also means it is time for our tummies to get loaded with some extra calories. Irrespective of how particular we are about our fitness regime and diet; it is simply impossible to resist the scrumptious festive feast during Diwali celebrations. The fragrance of ghee laden sweets and fried snacks gets to the best of us, and we often tend to overeat, completely throwing our health and fitness goals off the track.
According to health experts, while most individuals usually consume about 1500-2000 calories daily, during the festivities, one meal itself contributes to up to 2000 calories or more. Naturally, the impact of all this bingeing is not only visible on the weighing scales but also takes a toll on our health. So, does this mean one should simply skip all the mouth-watering delicacies? Hell, no!!! It is absolutely possible to satiate our festive food cravings without it taking a toll on our health. Here are some tips that will help you enjoy sweets,

Practice Portion Control : If you wish to relish all the festive treats sans feeling guilty and getting too worked up about your calorie intake — portion control is the key. Since most of the Diwali delicacies have a high content of monosaturated fats, sodium and sugar, it is best to strictly stick to smaller portions. So instead of wolfing down one whole ladoo, break it into half and

Bingeing aside, it is also important to nourish your body with all the essential nutrients that it needs daily, especially during this COVID-19 pandemic where keeping your immunity up-todate is paramount. During this festive season, make an effort to at least have two healthy meals that will provide all the necessary proteins, fibres, carbs, vitamins and good fats. Perhaps you can start your day with a healthy meal before you began your indulgence for the day. Furthermore, don’t forget to have a portion of salad before digging into your festive meals. This will help reduce your fried food cravings. Keep in mind, while you binge, your body needs proper nutrition to stay healthy.

When you are indulging throughout the day it is essential to dedicate at least 20-30 minutes daily to exercise, particularly cardio workouts which will help burn the extra calories.
Stay Hydrated: This is one healthy practice that one should follow not just during the festive period but every single day. Keeping your body hydrated is vital as water helps flush out toxins from the body and also aid with the digestion process. Health experts say that potassium and other minerals in water can help keep a check on your blood pressure level that might get impacted due to all the fried and salty food that is consumed during the festive celebrations. Drinking a glass of water after every alcoholic drink also prevents dehydration, hangovers, nausea and indigestion.
Practice Intermittent Fasting: One sure shot way to minimize the harm of all the festive bingeing is to practice intermittent fasting. Intermittent fasting is an ideal detox you need after consuming fried food, sweets and alcohol. Practicing intermittent fasting also generally reduce your calorie intake and boosts your metabolism. Try to binge all that you want during the day and avoid high-calorie intake after 8 pm.

Make Sensible Food Choices:
Health experts believe that it is always wise to opt for homemade sweets and snacks as they are fresh, light on the stomach and made from quality ingredients.
Lastly, it is all about the choices you make. Agreed, Diwali is all about droolworthy treats but who said you can’t make them at home. Health experts believe that it is always wise to opt for homemade sweets and snacks as they are fresh, light on the stomach and made from quality ingredients. And given the COVID-19 times, it is best to stick to healthier homemade alternatives. Try to strike a balance between healthier and unhealthier options so instead of constantly snacking on fried and oily items like chips and namkeen balance it out with a regular intake of dry fruits and nuts. Instead of fried and khoya sweets
try to have sweets made with dry fruits and jaggery. Choose nimboo pani, fruit juice or coconut water over aerated drinks. Remember a few conscious changes in your lifestyle during the festive period can help you enjoy all the festive treats to the fullest. So, go ahead and have a guilt-free Diwali binge. • Grease the sev mould. Stuff a portion of dough in the mould and hold it above the kadai and start pressing it so the sev directly goes into the hot oil. • Press it in the circular motion and when it is enough cut with scissors. Fry till golden brown and crisp in texture. Remove with perforated spoon and drain excess oil. Repeat with the remaining dough. • When it cools down crack the sev in small pieces and serve or store in an airtight container.

the pan and the cornflour is cooked. Cool and add the spring onion, pepper and coriander. Taste and adjust seasoning.
By Chef Anjum Anand
For the dough:
For the filling:
• 100 g plain flour plus extra for rolling out
• 1 tsp rose syrup • 2 ½ tbs vegetable oil • 550 g chestnut mushrooms, cleaned and finely chopped • 1 small-medium red onion, finely chopped • 1 rounded tsp fresh black pepper or to taste • 6 fat garlic cloves, finely chopped • 1 ½ tsp cornflour, mixed into a slurry with 50 ml water 25 ml dark soy sauce • 12 g finely chopped ginger • 3 tsp white or red wine vinegar • Small fistful of fresh chopped coriander • 2 small spring onions, chopped • 4 tbs finely chopped green pepper
• 4 ½-5 ½ tbs cold water
• Make the filling first. Heat the oil in a small medium sized non-stick saucepan. Add the onion and some salt and fry until soft and colouring at the edges. Add the ginger and garlic and cook for 40-50 seconds or until the garlic is cooked through. • Add the mushrooms and soya sauce and cook until the mushrooms release water and then it dries up. Add the vinegar, black pepper and cornflour slurry and cook for three to four minutes or until there is no more moisture in
• Take out the dough and knead well again. Roll out the dough into three equal long sausages and cut each into six equal pieces. Make little round balls of each and cover them with damp kitchen roll. Taking one at a time roll into 2 ½-3” diameter circles using a little extra flour. • To make the momos, I place the wrapper in my left hand and spoon in 1½ teaspoon of the filling (around 15 g) in the middle. • Then making sure the filling stays away from the edge, with my right hand I seal the tops together, making little pleated folds along the way and then make sure the edges are properly sealed. You basically need to enclose the filling in the dough without any tears; you can do it any way which feels easy. • Oil the surface of your steamer or some greaseproof paper. Arrange the momos on the oiled surface as you make them leaving some space between them as they expand a little. Cover and steam on a rolling boil for 11-13 minutes. • Serve hot with the spicy tomato chutney or some simple soya sauce in which you have sliced some green chillies and added some finely chopped ginger.

Kheer By Chef Priya Krishna
he quinoa grains turn soft and silky, adding a hint of nuttiness to the kheer. They also do an even better job than rice of soaking up the cardamom flavor. Start to finish, this takes about as long as an episode of TV to make, so now you have something to do while you stir! Kheer can be eaten warm or cold, but I like it straight out of the fridge, as it has more thickness and body when chilled.
Ingredients • ½ gallon (2 quarts) whole milk • ½ cup dry (uncooked) white quinoa, rinsed and drained • ½ cup granulated sugar • Seeds from 5 green cardamom pods, crushed into a powder, or 1¼ teaspoons ground cardamom (freshly ground is best) • 2 tbsps roughly chopped unsalted pistachios, for garnish
• Evenly coat the bottom of a large pot or Dutch oven with two tablespoons water (this will prevent the milk from sticking to the bottom of the pot). Pour the milk into the pot and bring it to a boil over high heat. Watch the milk very closely — as soon as you start to see bubbles forming, reduce the heat to low (otherwise, the milk will boil over!). • Add the quinoa. Increase the heat to medium and cook, stirring continuously, for 15 minutes, then increase the heat to medium-high and cook, stirring continuously, for 30 to 35 minutes more, until the milk resembles heavy cream (it should be thick enough to coat the back of a spoon) and the quinoa is fully cooked. Don’t worry if there still seems to be a lot of milk left — it’ll soak into the quinoa as the kheer cools. • Stir in the sugar and cardamom and let the kheer cool to room temperature. Transfer to a bowl, cover with plastic wrap, and refrigerate overnight or for up to 12 hours — it should resemble a loose rice pudding. When you’re ready to serve the kheer, garnish with the pistachios. Photo credit: Excerpted from Indianish © 2019 by Priya Krishna with Ritu Krishna. Photography © 2019 by Mackenzie Kelley. If you want to seriously impress, this appetizer is the one to make. The rosette shape is created with a handheld rosette waffle iron.
• 1 cup gram flour • ¼ cup chopped coriander • 1 egg • 1 tsp salt • ½ tsp garlic puree • Canola oil for frying
Preparation • In a saucepan, bring two cups of water to a boil. Add the beets to the saucepan and cook for about 20 minutes or until the beets are tender. Remove from heat and let the beets and water cool.
• Place the cooled beets and water from the saucepan into a blender. Add half a cup of cold water to the blender and puree. • In a mixing bowl, combine the gram flour, coriander, egg, salt, garlic puree, and pureed beet mixture. • In a small pot, heat oil over medium to high heat. Place the waffle iron into the pot to heat for one minute.
• Holding the handle of the waffle iron, dip the iron into the batter, ensuring it does not go above the edges. Hold it in the pot of oil for about 30-50 seconds or until the batter is cooked. • If the rosette is detached from the waffle iron, remove it and place on a paper towel–lined tray to absorb the excess oil. If it did not detach, remove the rosette by gently prying it off with the tip of a knife and place on the tray.

hen I was younger my grandma would bring me a Fudgsicle when she would pick me up from school during the summer. We’d walk home hand in hand enjoying our frozen treats. When she got older, she moved to India and whenever I would visit her, she would give me money to sneak away and pick up an ice cream for us from the corner store. Our little secret inspired this kulfi recipe, which uses the traditional method of boiling full-fat milk down until it is thick and creamy.
98 DIWALI 2020
Makes 6 to 10 servings, depending on the size of the mold
Ingredients • 4 cups (960 ml) whole milk • ¾ cup (180 ml) heavy cream • 2/3 cup (115 g) high-quality milk chocolate morsels • ¼ tsp salt • ½ tsp ground cinnamon • ¼ cup (40 g) roasted unsalted almonds, finely chopped Photo courtesy of Hetal Vasavada
• Add the milk, heavy cream, chocolate, salt and cinnamon into a heavy-bottom saucepan over medium-high heat. Stir continuously until the milk comes to a boil, about six minutes. Simmer on low heat for 30 minutes, stirring often. Make sure to keep an eye on the milk as it might overflow. • Add the chopped almonds and simmer for an additional five minutes. The mixture should be thick enough to coat the back of a spoon. Pour the mixture into ice pop molds and freeze for at least five hours. Set the kulfi out on the counter for five minutes before unmolding. Note: To make a no-mess, no-drip version for your kids, use a block of Abuelita Mexican chocolate instead of regular chocolate. It contains carrageenan, a thickener made from seaweed, which prevents the kulfi from dripping all over the place!

Count on us when it comes to dealing with ICBC My wife and I were recently clients of Perminder Tung in our ICBC claim case. Perminder was very professional, friendly, and upfront with us. He kept us in the loop with his negotiations with ICBC and assured us that he will do the best he can to make sure we get what we deserve. In the end, Perminder was able to settle for an amount that was beyond what we thought we would get. My wife and I are very satisfied with Perminder's work and highly recommend him to anyone who is looking for a great and honest lawyer.”

easy ways to give back to your community this Diwali season.
Volunteer your Time
Light By Naina Grewal
ur community shapes us into the individuals we are. Communities nurture us during our childhood and contribute to our development well into our youth. In times of celebration, we then have the humble responsibility to give back to the community that contributes to our happiness. Amidst the festivities that lace the celebrations of our nears and dears, here are seven easy ways to give back to your community this Diwali season:
Find a charitable organization, cause or group that you identify with and volunteer your services at a food shelter, hospital or soup kitchen. A great idea is to light up the day of a senior who may not have a friend to celebrate Diwali with. The options are endless and so are the many blessings you will get in return.
Donate Donations are not just financial. If you have the means and the health to do so, helping others in need through hair or blood donations are potential options. Furthermore, participating in seasonal food or toy drives that begin this time of the year can help the underprivileged. As you indulge in the Diwali cleaning, consider donating items such as books, lightly used clothing, bicycles, school supplies, or bags that you would otherwise throw away.
Spread Positivity A simple smile or ‘hello’ can turn a bad day into a good one. Diwali is about illuminating those around you by treating all as your own. Hold the door open, help a senior cross the road and do not hesitate to give compliments. If you want to take this to the pro level, leave an anonymous motivational note for someone to find and read. Sometimes, an effortless act such as lending your ear to an acquaintance can be a game-changer in someone’s life.
DIWALI 2020 109
Share your Knowledge

educational institutions are speaking for professionals or even students that can share their experiences with others. Educating community members about opportunities and sharing resources is an investment back into the community that invested in you.
Promote Local Businesses and Talent Given that your community has led you to be the professional or student that you are, help others achieve their dreams by buying local whenever you can. This is not just limited to goods, but also attending events put together by local artists, especially surrounding artistic expressions of the Diwali spirit.
Bringing light into the world is not someone else’s responsibility. Often, we leave communal vices to be managed by others. If you see litter, instead of blaming others, be proactive and throw it in the garbage. If someone is in trouble, assist them in a safe manner rather than being a bystander.
Start at Home This Diwali, reflect on yourself. Make your living space, lifestyle and those you live with a reflection on the community you want. If something seems amiss in the community, look first into the values being embedded in your household. Teach the younger ones what you would like to spread into the world and become a compelling role model! The rewarding experience of taking such small steps to contribute to your community paves the path to common good. Being a good citizen triggers a chain reaction and creates a network of change-makers. With just a small gesture, you can create an everlasting impact that transcends well beyond the act. Spread the light within you!

Ditch The Conventional Blouse
Double The Elegance Quotient The most attractive feature of a saree, undoubtedly, is its pallu or the end piece. And ever since designer Shaina NC devised the surreal double pallu saree draping method, every actress in B-town has been going gaga over it. If you love the classic saree draped look but also want to experiment with fashion, then you definitely must give this new saree draping trend a try. All you need to try out this style is an embellished dupatta matching your saree or another saree. Agreed, it’s a bit tricky style but once you get the hang of it, you shall be ready to rock.
Enough of breaking your head to get that perfect fitting blouse. Honestly, there are several ways to style your saree without it. You can simply grab your favourite shirt and drape a printed or plain saree over it. Alternatively, a saree paired with a crop top, bustier, vest or printed tee can instantly make you stand out in style in the
crowd. Get creative, look up to your favourite Bollywood celebs for inspiration and nail this quirky saree style like a pro.
Best Of Both Worlds If you ever have to make that tough choice between your favourite lehenga or saree – simply grab them both. Believe us, a saree can be beautifully draped with a lehenga to help you effortlessly steal the show this Diwali.
DIWALI 2020 121
Pants To The Rescue Give an easy contemporary twist to your saree game by simply ditching the petticoat and draping your six-yards around pants, jeggings or even denim. Trust us, you will slay and how!!!
