known as Hari Diwali, and although the customs have slight variations compared to those in India, the essence remains intact. The day begins with an oil bath in the morning, followed by temple visits for prayers. As the sale of fireworks is prohibited in Malaysia, people commemorate the festival by sharing sweets, gifts, and warm wishes.

Mauritius Diwali is a national holiday in Mauritius, where nearly two-thirds of the population is of Indian descent. The celebrations include lighting oil lamps, decorating homes, and exchanging gifts. The local Hindu temples are beautifully adorned with colorful lights and decorations.

Sri Lanka

In Nepal, Diwali is celebrated as Tihar, a fiveday festival dedicated to various animals. Each day has its own significance, with dogs, cows, crows, and oxen being honored on different days. On the third day, Laxmi Puja is observed, dedicated to the goddess of wealth.

Diwali holds a special place in the hearts of Sri Lankans, making it one of the country's most cherished festivals. Recognizing its significance, Sri Lanka designates Diwali as a public holiday. People light small lamps to dispel malevolent forces, symbolizing the hope for a brighter future.

Singapore In Singapore, Diwali is celebrated with a multicultural twist. The streets of Little India are adorned with intricate rangoli patterns, and major shopping districts, such as Orchard Road, come alive with festive decorations. The entire nation revels in the spirit of Diwali, reflecting the multicultural fabric of the country.

South Africa In South Africa, Diwali is a significant celebration for the large Indian community. The festival is marked by lighting lamps, exchanging sweets, and visiting friends and family. Durban, with its substantial Indian population, hosts one of the most impressive Diwali festivals in the country.

Thailand In Thailand, Diwali is celebrated as Lam Kriyongh, and the festivities closely resemble those of Diwali. It is observed on the full moon day of the 12th month according to the Thai calendar. Aweinspiring and extravagant fireworks displays grace the occasion.

Trinidad and Tobago This Caribbean nation boasts a vibrant Diwali celebration, thanks to its Indo-Trinidadian and Tobagonian population. The festival is marked by the lighting of diyas and elaborate fireworks displays. Traditional Indian sweets and delicacies, such as barfi and saffron rice, are shared with friends and neighbors.

In the United Kingdom, Diwali has become a significant cultural and religious event. Leicester, a city in the Midlands, hosts one of the largest Diwali celebrations outside of India. Tens of thousands of people gather for a grand procession through the streets, accompanied by traditional music and dance. The Golden Mile, known for its abundance of Indian restaurants and shops, is beautifully illuminated during this time.

Diwali is celebrated with great enthusiasm in the United States, especially in areas with a significant Indian diaspora. The White House annually hosts a Diwali celebration, where the President lights a diya (oil lamp) to mark the festival. In places like New York, New Jersey, and California, public Diwali events, parades, and cultural programs bring the community together.

In entertainment, one name that shines brightly today is that of the feisty actress Shweta Tripathi Sharma. Effortlessly transitioning from one diverse role to another, Shweta has emerged as a force to be reckoned with.

From her stellar portrayal of complex roles in films like Masaan, Gone Kesh and Haraamkhor to her OTT outings like Mirzapur, Yeh Kali Kali Ankhein, and the recently applauded Kaalkoot — Shweta has captivated audiences across the globe and has left an indelible mark with her versatility. Off-screen, Shweta is as endearing as her on-screen personas, embracing festive rituals and celebrations with utmost warmth. Amidst her bustling schedule, DARPAN Magazine caught up with this spirited actress to delve into her thoughts on the festival of lights, cherished Diwali memories, journey in the entertainment industry, and career goals. Excerpts from the interview..

Diwali is around the corner; how do you plan to celebrate the festival? I am leaving for Delhi soon with my husband to spend time with our family there. Upon my return, I shall celebrate Diwali again with my friends and other family here in Mumbai. So, I celebrate Diwali twice, thus ensuring I enjoy the festivities to the fullest.

Do you have any specific Diwali traditions or rituals that you particularly enjoy? I love the Diwali aarti. As a child, I used to just sing it because I was told to do so, but as I grew older, I wanted to know more about our traditions and customs and why we do what we do. So, I delved deeper into understanding the significance of DIWALI 2023 15

Not just Diwali, but festivals were a year-round affair at my home because we would celebrate all the festivals, be it Diwali, Christmas, or Eid. DIWALI Cover Story ing cards, we often have pakoras and chat to munch on. That is a must during Diwali. That apart, I enjoy all the feast prepared at home. I love ghar ka khaana.

Diwali is a time for family gathering and bonding. Are there any unique family traditions that you follow during this festive season? Since childhood, during Diwali, what we do is we put candles and earthen diyas across all the walls. Not one or two but a lot of candles and diyas. So, the effect that you get with fairy lights, we would create it with lamps and candles. That is one must-do Diwali activity for us. Firecrackers obviously are a big no because some things look very pretty, but at what cost? Another thing we do is heat a spoon on the gas and apply the black soot collected on it in the eyes as soorma. I need to ask my mom why we do it. Don't know why I never asked her about it before. And lastly, buying gold on Dhanteras is a tradition that we follow. This year, I have exchanged some of my heavy gold jewellery and got some everyday jewellery custommade. I am excited to go get it on Dhanteras Day.

What message do you have for your fans and audience for Diwali? Khoob khau (eat a lot), khoob celebrate karo (celebrate a lot), but be mindful of everything you do. And while you celebrate Diwali with others, don't forget to celebrate the festival in its true essence with yourself, too. Because we need to keep that spark within us alive. We don't need to get lost in the crowd. So, keep the fire in your soul, that akhand diya (forever burning lamp), alive.

Speaking about keeping the spark within us alive, what are you up to these days professionally? I am shooting for Mirzapur season 3, it should come out next year, and then by the year's end, hopefully,

the season 2 of Yeh Kaali Kaali Ankhein will release.

You have worked across both film and OTT platforms. With the changing landscape, do you believe there's more scope for OTT today? The storytelling landscape has evolved significantly today. In films, you have about 1 hour 30 minutes to 2 hours of screen time, whereas OTT platforms offer extended screen time. By that time, I mean the time you must tell your story. Because of the length of the episodes, OTT allows characters to develop gradually. Films are more like sprints and web series are marathons. If we stretch a feature film story into a series, it will get boring, and vice versa; if we try to fit an OTT idea into a feature, we will lose out on many things. Both have their unique charm, and the choice depends on the story being told.

Be it films or OTT, the audience has thoroughly enjoyed seeing you on screen. Can you share a bit about your journey into the entertainment industry? What inspired you to become an actress? DIWALI 2023 19

DIWALI Cover Story Growing up, I aspired to be a lawyer, driven by the desire to make a positive impact on society. I am incredibly fortunate to have a supportive family where creative pursuits were encouraged. I feel I am a person of borrowed interest. My parents, with their diverse interests, instilled in me a love for various art forms. My elder sister loved reading, photography, theatre and stage, and her artistic inclinations further shaped my journey. Our upbringing and the environment at home play a crucial role in nurturing our passions and shaping our character. And I am so happy that I got all these things from my family only. With acting, because of my sister's interest in stage, I found myself always on stage too. And I don't know how destiny works, but I feel that our dreams and desires often become our destiny. So, I have been on stage ever since I can remember. And while a lot of places make

me happy, being on stage or being in front of the camera makes me a different kind of alive. Being an actor, even though I am Shweta, I also feel like Gollu from Mirzapur, I also feel like Shikha from Yeh Kaali Kaali Ankhein, I also feel like Shaalu from Masaan… So, I feel I am expanding my emotional bandwidth with my characters and that I am very grateful for.

Most of the characters you have played have been quite intense. How do you detach from these roles after immersing yourself so deeply in them? Does it ever affect you personally? I think it does. See, there is a book by Nirupama Subramanian called Powerful. In that, she talks about the different archetypes that women have, which are present in all of us. Now, those archetypes are Kanya, Rani, Veera, Apsara, Rishika and Maa — all these archetypes reside within us. So, it is up to us which energy to channel and when. Immersing myself in intense characters

does have an impact. But then I draw from the different archetypes within me and channel the energies as required. But it's crucial to balance this by reminding myself of who I am outside those characters. It's essential to engage in activities that bring me joy, like meditation, reading, or travelling, to detach from the roles. Finding that balance is a challenge, but it's necessary to maintain my emotional well-being.

Amongst the variety of roles you have portrayed in your career. Is there a particular character that you found most challenging or rewarding to play? Why? Golu Gupta from Mirzapur has indeed been the most challenging. The character's evolution over multiple seasons, coupled with intense emotional stakes, made it a unique challenge. Especially because even though only a few

DIWALI Cover Story months have passed in the character's life, in your life, eight years have passed. This role demanded significant growth and depth, both personally and professionally, making it the most complex character I've portrayed so far.

Critical acclaim and success have undoubtedly been a constant companion on your journey. How has it changed you as a person and as an artist? To be honest, I don't have a concrete answer for this. Having said that, success hasn't changed my fundamental essence. My hunger for storytelling remains unaltered. However, success does bring a certain responsibility. It gives you a voice to spark conversations and address issues through our work, which is why, for instance, I did Kalkoot. It challenged societal judgments, reflecting the need for change.

Speaking of your voice, as a public figure, your opinions carry weight. Do you find it challeng22 DIWALI 2023

ing to express your views openly, given the scrutiny public figures often face? Being a public figure does come with responsibility. People look up to us, so it's crucial to be aware of the impact our words can have. While I am mindful, I am not afraid to express my opinions. I've never been taught to fear expressing myself. Mistakes are inevitable, but it's essential to speak our truth, learn, and grow.

Looking ahead, what are your career goals? What aspirations do you have for the future?

My primary goal is to continue telling stories that evoke emotions. While numbers are essential in show business, the purity of intent matters most to me. I want my work to be driven by passion, not dictated by commercial considerations. Additionally, as an artist, I would like to keep exploring. Also, I want to travel to the film festivals of the world and show them what we are making in India. Well, that is something we would love too! This year, as we celebrate Diwali in the middle of global turmoil, it serves as a reminder of the importance of peace, gratitude, and unity. The Israel-Palestine conflict, along with other ongoing tensions, underscores the need for inter-community and inter-religious harmony. As we light our diyas and celebrate this Diwali, let us reflect on the tranquillity we enjoy and the importance of not allowing anyone to dim our light. 24 DIWALI 2023

Diwali is a deeply symbolic festival. It is a time when people light lamps to signify the victory of light over darkness, good over evil, and knowledge over ignorance. But the symbolism goes beyond the physical act of lighting lamps. Diwali invites us to ignite the light within ourselves, embrace positive thinking, and let go of conflicts and negativity. The world, much like the elements of air, water, fire, and earth, often appears to be in conflict with itself. Just as these elements can be seemingly disparate, people from different backgrounds and faiths can find themselves at odds. But, the intervention of divinity can elevate our consciousness, helping us recognize the underlying harmony and beauty that connects us all. It's our spirit and perception that shape our world. Much like the blind King Dhritrashtra in the Mahabharata, who remained oblivious to the suffering around him, our ignorance and division only bring pain. This Diwali, let there be light in every heart and mind, illuminating the path to unity and understanding. Diwali is a celebration that begins with Dhanteras, a day where, in olden times, people would place their wealth in front of their homes and give thanks, feeling a sense of abundance

and trust that what is needed will come. It is a reminder for us to embrace an abundant mindset, acknowledging not just material wealth but also the richness of wisdom, courage, and compassion. The more we believe we have, the more we will receive. As we celebrate Diwali, let us not only light lamps but also kindle the flames of resilience and compassion within ourselves. The world needs these virtues now more than ever. Resilience enables

us to face challenges with strength and determination, while compassion connects us to others in times of joy and sorrow. It is through these qualities that we can foster a more harmonious and peaceful world. In a world characterized by conflict and turmoil, Diwali serves as a profound reminder of the values of peace, gratitude, and unity. Its symbolism of lighting lamps and positive thinking calls us to be a source of light in the lives of others, to let go of conflicts, and to embrace

the blessings of living in a peaceful country like Canada. This Diwali, let's embrace the light within and work toward a brighter, more harmonious world for all. Just as Lord Rama returned home, let us return to our center, consciousness, and awareness. By incorporating these symbols and cultivating qualities like resilience and compassion, we can collectively move toward the light and celebrate the essence of Diwali.

Bandi Chorh Divas, also known as Diwali for Sikhs, is a significant Sikh festival celebrated to honor Guru Hargobind Ji's release from imprisonment. In 1619, Guru Hargobind Ji refused to leave Gwalior Fort without the release of 52 Rajput kings who were unjustly imprisoned there. He negotiated their release, emphasizing the importance of standing up for the oppressed. This event signifies the triumph of righteousness over tyranny and the importance of freedom and justice. Just as Guru Hargobind Ji and the other princes were physically confined, in today’s world, we often confine ourselves mentally. These self-imposed mental prisons manifest in various ways. We doubt our abilities, fear failure, and hesitate to pursue our dreams. We trap ourselves in vicious cycles of negative thinking and self-criticism, conveniently coupled with fear of judgment. Ironically, these self-imposed limitations can

be more constraining than any physical prison. Self-doubt is a significant barrier to growth, as we question our abilities, worthiness, and potential. The key lies in embracing self-confidence. It's crucial to recognize that self-doubt is a mental construct and often not rooted in realism. By challenging and reframing our self-perceptions, we can reach our full potential in multiple realms of life - be it personal, professional, or spiritual. As for the fear of failure, that is also merely a cell in our mental prison. We hesitate to pursue our dreams because we're afraid of falling short. However, historical milestones of commitment to justice and righteousness serve as a reminder that the pursuit of a just cause is worth the effort, regardless of the potential hurdles. Just as we advocate so fiercely for others, we must also stand up for ourselves and practice self-compassion. Instead of being overly critical, we should treat ourselves with

kindness, forgiving our imperfections and allowing ourselves to grow. Upon his release from Gwalior fort during the reign of Jahangir, Guru Hargobind Ji arrived in Amritsar on the eve of Diwali. The Golden Temple and the entire city were adorned with brilliant illuminations to mark the joyous return of their Guru. Since then, Diwali has been celebrated in Amritsar - and around the world - with tremendous enthusiasm, grandeur, and a deep sense of religious devotion. Similarly, we must savor life's moments, unburdened by mental constraints. Instead of dwelling on the past or worrying about the future, we can learn to find joy in the present moment and the beauty of our being. Beautifully encapsulating many lessons, Bandi Chorh Divas goes deeper than just a historical moment in time; it is a powerful reminder to stand up for what is right and, upon deeper introspection, to liberate ourselves from the mental prisons we construct. Only then can we set ourselves on a journey toward personal freedom. Let us bow with respect to the valor of Guru Hargobind Ji and let this festival be a symbol of our own liberation from the limitations of the mind!

iwali, annually falling between mid-October to mid-November, is celebrated in many ways and by millions of people from all walks of life. It has its roots in drastically broad cultural and religious values.

Diwali is one of the most prominent holidays in Hinduism. It relates to the Hindu epic, Ramayana, which centers around Prince Rama, the avatar of Vishnu. Diwali celebrates the day of the return of the beloved Prince Rama from a 14year exile, after the defeat of the demon king Ravana. The people of Ayodhya lit up the streets with lamps and fireworks, welcoming their prince home. The day is also associated with

symbolize the victory of good over evil. Diwali, also known as Bandi Chhor Divas in Sikhism, is celebrated for similar reasons as Diwali in Hinduism. The day marks the release of the sixth guru, Guru Hargobind Ji, from the Gwalior Fort prison, along with 52 Rajput kings, by the

Lakshmi, the wife of Vishnu and the goddess of wealth and prosperity. Several customs such as cleansing of the home, Lakshmi puja, and setting up plates of sweets for the goddess are often followed. Hindus of eastern India associate the day with goddess Durga, while others in northern India associate it with Krishna, both of whom

Mughal emperor Jahangir. However, what many may not know is that the importance of Diwali in Sikhism actually goes further back. The third guru, Guru Amar Das Ji, had built a well in Goindwal with 84 steps, a famous place of pilgrimage even now, and invited Sikhs to bathe there on Vaisakhi and Diwali. Moreover, Diwali also relates to two other key events in Sikh history; it is the day of the founding of the city of Amritsar, and Bhai Mani Singh’s martyrdom was brought on by a failure to pay a fine imposed in 1738 for celebrating Diwali, and his refusal to convert to Islam. Both Buddhism and Jainism also have unique customs and histories linked to Diwali. The festival is not as widely celebrated in Buddhism as the aforementioned, except perhaps in Nepal and Newar. Sikhism and Hinduism host perhaps the more prominent and well-known forms of celebration associated with Diwali. However, both Buddhism and Jainism also have unique customs and histories linked to Diwali.

Vajrayana Buddhism are worshipped and Lakshmi is also offered prayers. In Jainism, Diwali is observed for ‘Mahavira Nirvana Divas’, in remembrance of the physical death of Mahavira. There are some similar practices to Hinduism in which the customs include the lighting of diya and praying to Lakshmi. The focus, however, remains on Mahavira. According to Jainism, the tradition of the lighting of the lamps began at the passing of Mahavira. The 18 kings who had gathered started the practice in remembrance. Diwali has another, more westernized definition as well; the Festival of Lights, which aptly captures the hope and goodwill attached to the many interpretations. Additionally, despite these

different interpretations, Diwali is centered on a very fundamental concept of the victory of good over evil. There is a common theme of righteousness and of overcoming the darkness in whatever form it might take in our lives. Diwali helps remind those who celebrate it, that despite their differences, they share a respect for a strong moral code, that resonates across cultures.

Paan Ice Cream

Ingredients

Preparation

Vanilla ice cream: 1 box

Sweet Paan: 2 pcs

Place two store-bought sweet paan and two scoops of vanilla ice cream in a blender, then blend them.

Flavoured fennel seeds sprinkle: 2 tbsp

Mukhwas: 1 tbsp

In a bowl, create a layer of store-bought vanilla ice cream, and on top of that, add dollops of the sweet paan paste. Use a toothpick to create swirls.

Rose petals for Garnishing

Sprinkle flavoured fennel seeds and paan-flavored mukhwas (mouth freshener) over the layer.

Repeat the layering process one more time.

Cover the bowl with aluminum foil or cling wrap.

Freeze it for 4-6 hours or leave it overnight.

Serve it and enjoy.

Gulkand Cupcakes

Preparation

Oil: 1/4 cup

Curd: 1/2 cup

In a mixing bowl, add all the wet ingredients and mix everything nicely.

Gulkand: 2 tbsp

Kewra/Rose water: 1 tsp

In a separate bowl, add dry ingredients and make sure you sieve everything before adding. Mix all the dry ingredients together.

Red food color: 2 drops

Powdered sugar: 1/2 cup

Wheat flour: 1 cup

Add dry ingredients gradually over the wet ingredients and mix until everything combines. Don't over-mix the batter after adding dry ingredients to the wet; otherwise, it will lead to a dense cake.

Baking powder: 1/2 tsp

Baking soda: 1/4 tsp

Grease the katori/ mould with oil and dust it with flour or line cupcake moulds.

Preheat the oven for 10 mins at 170°C before baking. (Do this while preparing cake batter)

Bake the cupcakes at 170°C for 15-22mins

Decorate it with whipped cream, rose and white chocolate.

Take the leftover idlis and cut them into bite-sized pieces.

In a pan, heat oil and add mustard seeds, chana dal, urad dal, hing, and curry leaves. Allow them to sizzle and pop.

Next, add all the spices and the cut idlis. Cook this mixture for a few minutes until it's well combined and heated.

Place the masala idlis in a serving bowl, then top them with sweetened curd, tamarind chutney, green chutney, chaat masala, pomegranate seeds, sev, and fresh coriander leaves.

Serve and savour this delightful dish. Enjoy!

Preparation

Marinate jackfruit chunks in yogurt mixture consisting of salt, ginger garlic paste, mustard oil, chilli powder, kasturi methi, garam masala and chickpea flour Marinate for 1/2 to 1 hour and then cook in the oven at 350 C for about 20 minutes or until soft. Allow it to cool, and then pull apart the pieces.

Shred red cabbage and then put in a brine mixture. See recipe below.

Bring 1 cup of water, 2 cups of vinegar, four pc of black pepper, two bay-leaf, 1 Tbsp salt, 2 Tbsp sugar and 1 tsp fennel seeds to boil.

Let the water cool down to room temperature, put shredded red cabbage in the mixture and let it soak for 6 hours.

Blend 100 gms of your favourite tangy pickles into a puree and mix it with 1 cup of mayo, salt to taste, chaat masala, bhuna jeera and lemon juice.

Stuff taco sheets with pulled jackfruit and cook it in the oven at 375 C for 5 mins. Garnish with pickled cabbage, sliced onion, and drizzle achaari mayo.

Ajwaini Salmon in Malabari Sauce

Ajwaini Salmon •

Blend 2 tbsp of cumin seed, 1 tbsp of coriander seed, 1/2 tsp of mustard seeds, four cloves of garlic, one green chilli, one whole red chilli, 100ml of mustard oil and 50ml water. Add the mixture to 250gms of Greek yogurt along with 1 tbsp of carom seeds, salt to taste, lemon juice and turmeric powder.

Marinate 6oz of salmon fillets with the marination for 30 mins.

Cook in the oven at 425 C for 15-18 mins till it's cooked to perfection.

Add 1 cup of onion puree and cook till it turns golden brown. Add 1 cup of tomato puree and cook till it releases oil.

Add half tsp of mango powder, coriander powder, turmeric powder and still it well. Add salt to taste.

Add 150 ml of coconut milk and 20 gms of shredded coconut, cook until the sauce thickens and add chopped coriander.

Malabari Sauce

Assemble

Heat some oil in a pan, add 1 tbsp of ginger-garlic paste and saute on low flame for 2 mins. Add 6-8 curry leaves, one whole chilly, 1/2 tsp mustard seeds and a pinch of asafoetida.

100g clarified butter /ghee, melted, cooled

50g oil

300g castor sugar

1 tsp vanilla extract

175g thick yogurt

2 tbsp corn flour

1¼ tsp baking powder

½ tsp baking soda

290g all-purpose flour

240g buttermilk

Preparation •

Preheat the oven to 180c. Lightly grease & flour a 12-cup Bundt tin.

Place the ghee, oil, sugar & vanilla in the bowl of a stand mixer/or a large bowl & whisk on medium-high speed until well mixed. Add the yogurt, cornflour, baking powder, baking soda & salt. Whisk again, scraping the sides down a couple of times.

Add the plain flour with buttermilk & whisk until smooth.

Pour about 520g of the batter into the tin. Bake for 15-20 minutes until the top is slightly firm & light brown.

Take out of the oven, top with the vanilla cream, followed by the remaining batter. Return to the oven and bake for approximately 45 minutes until a tester comes out clean.

Cool completely in the tin, gently loosen the edges and turn out. Pour over the glaze if desired.

Ingredients

(makes a 6' cheesecake)

2 tbsp saffron milk {2 tbsp milk + generous pinch saffron, infused overnight}

10 angoori gulab jamuns {recipe below}

To garnish: Pistachio slivers, gulab jamuns, rose petals to top

Biscuit base

115g digestive biscuits

25g almonds

45g clarified butter/ghee, melted, cooled

Saffron cheesecake filling

200g cream, Amul fresh

Preparation

1.5 tbsp cornstarch

Preheat the oven to 180C.

75g white chocolate, chopped

250g hung yogurt {from 400g store-bought yogurt}

Lightly grease and line the bottom and sides of a loose bottom 6" tin with parchment paper.

200g / 1/2 tin sweetened condensed milk

In a hand blender, finely grind the biscuits and almonds, then stir in the clarified butter/ghee. Turn into the prepared tin, build up the sides, then the base with a spoon. Bake for 12-15 minutes.

Cool the base completely in the tin, then place a circle of angoori saffron gulab jamuns { I used ten small ones} on the base.

Lower the oven temperature to 150 C

Whisk the cream and cornflour until smooth, then add the white chocolate to the bowl. Heat over a double boiler gently until the chocolate melts. Stir until smooth and leave to cool.

In a large bowl, whisk the hung yogurt until smooth. Add the condensed milk, white chocolate/cream mix and saffron milk and whisk until smooth.

Gently pour over the gulab jamuns on the base. Return to the oven and bake for an hour 15 minutes. Leave to cool in the oven, then refrigerate overnight to set. Demold gently onto a serving platter and top with gulab jamuns, pistachio slivers and rose petals.

10ml extra virgin olive oil

Place the chocolate in a bowl. Heat the cream to almost boiling, then pour the chocolate 2023 and let 86overDIWALI

Stir in the nut butter and dried cranberries, then cling wrap and refrigerate for a couple of hours or overnight until firm enough to shape into balls. Roll into walnut-sized balls, and place in the freezer while you make the melted chocolate dip.

To Dip •

Place the chocolate over a double boiler and stir until melted. Whisk in the olive oil. Immediately dip the truffles into the melted chocolate

Walnut Butter •

250g walnuts

Pinch sea salt

2 tbsp jaggery powder

Preheat the oven to 180C.

Bake the walnuts at 180C for 10-12 minutes until fragrant. Make sure they don't get over-brown, or else the walnut butter will get bitter.

Place in blender and process in short pulses until the walnuts get pasty, then begin releasing oil.

Add a pinch of salt and the jaggery powder.

Transfer to a glass bottle and store in the fridge.

Galaouti Kebab

Ingredients

Preparation

1/2 cup Rajma (Large Kidney Beans)

Begin by soaking the Rajma for a minimum of 6-8 hours.

2 Potatoes boiled and mashed

6 Mint Leaves

1/4 cup Cashew nuts (roasted preferred)

Cook the Rajma with salt until it becomes very soft. To check for doneness, try mashing the Rajma between your fingers, and it should easily break apart. For optimal results, use a pressure cooker to cook the Rajma, adding salt and 2-1/2 cups of water. After cooking, drain any excess water.

1 inch Ginger

Three Cloves Garlic

1 Green Chilli

Start by grinding mint leaves, green chillies, ginger, garlic, cashew nuts, and caramelized onions in a food processor until you achieve a fine paste. Add the cooked Rajma to the mixture and blend it again.

1 tsp Rose water

4-5 Saffron strands (in hot water 1 tbsp)

Transfer this Kebab mixture into a large mixing bowl, and then add the remaining Kebab ingredients along with one tablespoon of Ghee. Mix everything thoroughly.

1 LB Chicken Thighs, skinless, boneless

1 tbsp Lemon Juice

Salt to taste

Begin by cleaning, rinsing, and cutting the chicken into cubes.

In a large bowl, combine the chicken with lemon juice and salt, ensuring a thorough mix. Allow it to marinate in the refrigerator for 30 minutes.

Grate the cheese and combine it with the rest of the ingredients to create a smooth marinade.

Add the chicken to this mixture and rub the marinade onto the chicken pieces. Let the chicken marinate in this mixture for 5-6 hours, or for even better results, marinate it overnight.

Second Marinade •

3 tsp Cashew Paste

¼ tsp Green Cardamom powder

1 tbsp Garlic paste

Preheat the oven to 350 degrees F.

1 tbsp Ginger paste

1 Crushed green chillies

1 tsp Cumin powder

Remove the marinated chicken from the fridge and thread the pieces onto skewers, evenly distributing them among six skewers.

2 tsp Garam Masala

Salt to taste

Cook the skewers in the oven for 10-15 minutes, turning them once in between to ensure they are cooked through.

¼ cup Greek Yoghurt

¼ cup Shredded Mozzarella cheese

Once done, remove the skewers from the oven and generously brush them with butter.

1 tbsp Chopped cilantro leaves

Transfer the skewers to a serving platter and serve them hot, accompanied by Mint Chutney.

3 tbsp whipping Cream

Optionally, pickle some onions according to your preference to serve alongside.

Rangoli: A Timeless Tradition

The word rangoli is derived from two words – ‘rang’ and ‘aavali’ – meaning ‘rows of colours,’ and this holds true as rangolis are placed in the entryway or foyer of the home as a beautiful gesture to welcome Goddess Lakshmi with open arms during Diwali. A timeless tradition,

rangoli is an ancient art form that has been passed on through generations within a household, and some designs are hundreds of years old. This Diwali, teach your children the art of rangoli-making and if you don’t have a familial pattern, come up with a new pattern that can be passed among current and future generations within your family. Throughout India, rangoli designs differ throughout the diverse states but there is a

common theme. For example, rangoli designs that are circular in shape represent a sense of eternity and timelessness, whereas rangolis with geometrical patterns incorporating dots and lines to make squares and swastikas to footprints, trees and lotus flowers represent unification between humans and nature. In addition, celestial symbols – the sun, moon and zodiac signs – are also common themes for rangoli designs. Where to start? Rangolis can be made from a number of materials, such as coloured chalk, crushed limestone, and rice powder. Rangolis range in size and depth, but most homes showcase rangolis the size of a doormat near the entrance. Moreover, rangoli designs can be simple or difficult depending on the intricacy of the pattern. A great way to get your kids involved is to print out colouring pages of rangolis from the Internet or Pinterest, and get them excited to create their own colourful designs. Once you decide the location of your design, you can outline the pattern directly on the floor or draw it on paper of a thicker stock. To give dimension to your outline, use white, textured material like semolina, rice or sand.

he luminous yellow-orange flame exuding from the array of oil-lamps adds a warm glow to everything around and sets the quintessential mood for Diwali, symbolizing the spirit of good over evil and victory of light over darkness. However, while every Hindu proudly lights the lamps that signify the festival, owing to the cultural diversity of India, the legend behind them and its significance differ from state to state and so does the festive celebrations. Thus, from Kashmir to Kanyakumari, Diwali is celebrated in more than one way, with every community adding its own distinctive local touch to it but retaining the essence of the festival of lights.

In North India, Diwali commemorates the homecoming of Lord Rama to Ayodhya after 14 years of exile and his victory over the demon king Ravana. The festivities that run over for five days begin with Dhanteras.

The divine energies of Goddess Lakshmi – the creator of wealth, Lord Kuber – the distributor of wealth, and Lord Ganesha – the remover of obstacles, are worshiped on this day. The day is also considered auspicious to buy utensils, gold and silver. Choti Diwali, the second day, takes the celebrations forward, where a small Rama puja is performed followed by singing bhajans and songs in his honour. However, the face of Choti Diwali

changes as you move down South, where it is celebrated as Naraka Chaturdashi. It is a day of great significance, which again highlights the conquest of good over evil but with a different fable. A demon named Narakasura was beheaded by Krishna on this day and before dying the asura requested a boon that his death anniversary should be celebrated by all people on earth, and so Naraka Chaturdashi was born. South Indians usually celebrate the day by waking up early, lighting diyas and bathing with scented oils. The cleansing ritual signifies getting rid of laziness and the evil from our system.

In Goa, paper-made effigies of Narakasura, are burnt at four o’clock in the morning and people return home to take a scented oil-bath. A slightly different version of the aforementioned legend, where instead of Lord Krishna, his wife Satyabhama killed the demon, is known as Kali Choudas in Gujarat, Rajasthan and few parts of Maharashtra. There is also a social significance in the festival of Choudas as it marks the time of the harvest. South Indians and Maharashtrians often cook mouth-watering delicacies prepared from pounded semi-cooked rice, which is taken from the fresh harvest of the season. Talking of Maharashtra, the Diwali celebration in this state actually begins with Vasubaras – a ritual of performing aarti to a cow and its calf. The tradition

symbolizes a woman’s gratitude towards cows for serving them and their children. The third day of Diwali – Lakshmi puja, is celebrated with grandeur across various regions of India. Generally, the traders do not make any payments on this day to preserve Lakshmi at home. In every household, cash, jewellery, and an idol of Lakshmi are worshiped. But, Bengalis, Oriyas, and Assamese celebrate this day as Kali puja. People light lamps in Kali Maa’s honour and in return, she promises a renewal of life and justice on earth. The festivities of Diwali continue with Padva or Bali Pratipada in Maharashtra and as Bali Padyami in the South. Bali Padyami commemorates the victory of God Vishnu in his dwarf incarnation Vamana, defeating Bali and pushing him

to the nether world. But Bali was bestowed a boon by Vishnu to return to earth for one day to be honoured. Thus, Hindus celebrate this day in Bali’s honour. The farming community in Tamil Nadu celebrates this day by performing Kedar gauri vratam (worship of goddess Kedar-Gauri – a form of Parvati), and Go puja (worship of cow). The day is celebrated as Govardhan puja in the North, it is believed that Lord Krishna lifted the Govardhana hill to save people and cattle from rain and floods on this day. Bhai Dooj marks the end of the five-day long festival, where sisters pray for their brothers’ happy life. Supposedly, after slaying Narakasura, Krishna visited his sister Subhadra who gave him a warm welcome with sweets and flowers. She also affectionately applied tilak on Krish-

na’s forehead. South Indians celebrate the day as Yamadvitiya, after a legendary meeting between Yama the god of death and his sister Yamuna. Interestingly, while the above festivities sum up Diwali for Hindus, the Jain community celebrates the festival of lights to mark the attainment of moksha by Mahavira. Whereas, Sikhs celebrate Bandi Chhor Divas during Diwali – a day when Guru Har Gobind freed himself and Hindu Kings from Fort Gwalior, from the prison of the Mughal emperor, Jahangir, and arrived at the Golden Temple in Amritsar. Well, whether it’s the South Indians, North Indians, Maharashtrians, Bengalis or Sikhs, what matters is that each one celebrates the festival of light in it’s true essence i.e. victory of good over evil and spreading the light of hope.

STEP 1: Fold the A4-sized card paper in half. STEP 2: Cut out a rectangle on a paper of your choice. Make sure to keep it slightly smaller in size than the front of your card. Glue this rectangle on one side of your card. STEP 3: Cut three diyas from three different types of paper or fabric and glue them to the card. STEP 4: Cut three flames from yellow or gold paper. Glue them onto the card above the diyas. STEP 5: Decorate your card further if you like with glitter or sequins. 112 DIWALI 2023

How to Make a Festival Lantern

STEP 1: Cut out a 7 by 14 inch rectangle of coloured cardsheet. Make it into a cylinder shape and stick the ends together. STEP 2: Then, for the cut-outs to be pasted on the cylinder, cut out cardsheet squares of size 4.5 inch. You will need at least 10-12 squares for the lantern. STEP 3: Stick together the opposite corners of the square sheets, overlapping the corners. Then, leaving a gap of at least 0.35 inch from the top and bottom edges, stick the squares on the cylinder next to each other till the cylinder is completely covered. STEP 4: For the base strips, use butter paper/tracing paper that is about 14 inch wide and 11-15 inch long, depending on how long you want the strips. Cut the strips leaving about 0.5-0.75 inch on top.

STEP 5: Stick the strips to the cylinder by applying glue to the top edge. To give the lantern a more finished look, stick a colourful or sequin strip on the top and bottom edge of the cylinder. STEP 6: You can decorate the lantern further by adding colourful cut outs of either flowers, moons or other designs on the overlapping ends of the square. STEP 7: Lastly, attach a string at the top to hang the lantern from.
