Cobham's Queen Of Pilates The secret of pilates has turned it into a worldwide phenomenon. Cobham Pilates Studio Founder, Donna Pourteymour, is a living testament to its magic

T

here was a time when Pilates was considered a form of exercise for middleaged women or those suffering from sports injuries. Nowadays, it's not only the answer for many acclaimed sports people, but is also one of the hottest forms of exercise. PHILIPPA HENNESSY talks to Donna Pourteymour about how she has changed people's lives, why her clients keep coming back for more and her perfect weekend.

When was the studio founded?

In 2006. I leased a small room on the top floor above Farrants on the high street.

What made you take up Pilates?

Before I had children I was heavily into power sports: I was a mountain climber, a keen cyclist, a runner and I competed in triathlons and a half Ironman.

Following a caesarian birth of my second child, I experienced acute back pain and tried everything to find a cure from osteopathy to healers. Nothing worked. An osteopath then recommended Pilates. I started going to classes and that was that – it cured my back and I became hooked.

Did you ever think you would end up running a Pilates studio?

Never in a million years. My first real proper job was in IT. I graduated with an MBA in my homeland of Seattle and travelled the world working for Oracle.

I met my husband when I was based in Switzerland - he grew up in Manchester and eventually we moved back to the UK. We lived in Cheshire for seven years and it was there that I pursued the necessary training to gain a teachers qualification in Pilates.

My husband's work brought us down south to Cobham in 2005.

What was the level of interest in Pilates in those days?

There was no other Pilates studio in Cobham, which spurred me on to set up my own. The level of interest spiralled as more and more ladies (and men) came through the door – at first, I think my clients were intrigued to see what all the fuss was about, but over time, the same clients kept returning and remain loyal clients to this day.

How quickly did the studio grow into what it is now?

I started teaching 10 hours a week – within two years I was teaching 40 hours a week. There was a shortage of teachers so I

persuaded a few clients to train up - eventually there were ten of us. I took additional space at the Cobham Rugby Club to accommodate the increasing demand for classes and by 2008, the capacity for classes had doubled. In 2010, I acquired our current space which was a 1970's office building and took three months to refurbish.

You now have over 500 clients - can you describe your typical client?

There isn't really a typical client – the studio attracts a large number of women between the ages of 13 and 76, as well as men between the ages of 13 and 81! Men account for 20% of our client-base and are mostly those suffering from sports injuries or back pain. We help sportsmen get back on their bike or back on their feet running – for them, Pilates is a means to an end.

Many of our female clients are local women, but we also have some London-based clients who come to us for specialist private instruction. We have a number of teens (13 years up) who come to us with sports injuries. We are currently working with a group of elite 16 year old tennis players from Reeds School and we also teach young musicians from the Yehudi Menuhin School – we love teaching these young people as their bodies correct so quickly.

It's been said that you have changed people's lives – is this true?

I am very honoured if clients believe this and there are clients who have transformed their bodies.

Pilates is a fabulous way to lose weight because it strengthens and tones the body at the same time.

What is your vision over the next 10 years?

I could never emulate what I have now. As long as the studio remains about our clients, I will be achieving what I set out to achieve. I would like to offer athletes more rehabilitation and to work more with athletes in different sports such as skiing and tennis. I also plan to increase the five-day retreats that we offer.

How do you relax?

I do a lot of pilates! I rarely switch off. Coffee is my vice and I often take refuge in Carluccios to enjoy a cappuccino. Travelling is my favourite hobby and holidays are very important to me and my family.

We spend Christmas in Barbados and regularly go skiing, as well as trips to America to visit relatives.

One day I hope to go to Nepal and I harbour a strange obsession with visiting Afghanistan!

What do you enjoy most about living in Cobham?

I love the sense of community – it's so different to living in America. It's very hard in such a technology-driven world to find a small homely town like Cobham where everybody knows each other.

What is your idea of a perfect weekend?

A family walk with the dog in Painshill Park, followed by Sunday lunch at The Cricketers.

How will you spend Mother's day?

My own mother passed away six years ago, so I always think about her on this day. We don't have a set tradition but we always do something to celebrate and I always get out of cooking!

Do you have any New Year's resolutions?

Yes, to stop wearing my Pilates clothes so much!

NEW YEAR, NEW YOU It's the time of year when you may want a different look. Seek the advice of your stylist for the latest on-trend looks and choose one that will suit your lifestyle perfectly. You may want to change the appearance of your hair colour or you may just want to try a new style. Fabio Capozzi offers a few seasonal suggestions Balayage Highlights It may take months of hard-core training and dieting to achieve a body like Gisele's, but you can steal the supermodel's sun-kissed hair in just a couple of hours.

If you wish to inject some life back into your colour, but you don't want to do anything too drastic, the Balayage hair method could be the look for you. A French hair colouring technique that lets you skip the foils and directly paint the dye onto your locks, the Balayage is designed to enhance texture and draw attention to layered and choppy styles. Current trends dictate that the colour should transcend from very dark tones (in the roots and the top section of the head) down into lighter ends and tips. For best results, the ends should be rich gold or caramel tones. During the process the hair colour is applied using a spatula with a fine comb

- a sweeping motion is used which spreads the mixture from the roots to the tips of the hair.

Unlike the foil technique, the Balayage lasts longer because there is a thinner application of colour to the base or root of the hair, which makes regrowth less obvious. The end result? The hair looks highlighted and more natural in appearance.

The 90’s grunge look is back Follow these steps to achieve a style that is edgy and sassy: You will need a good hair dryer, such as the Parlux 3200 compact.

Wash and condition your hair, turn your head upside down and scrunch dry the hair until completely dry.

Flip your head back up and create a centre parting. Spray the roots and mid-lengths with Alterna Rootblast to give extra volume.

Using a large tong such as the Babyliss Pro Tong, pick up large and uneven sections of hair wrapping each section, one after the other, around the tong and hold for 10-15 seconds.

Move around the head to create an unstructured style with lots of movement.

SPRUCE YOUR HOUSE UP FOR SPRING A touch of flair can go a long way, shows Jeremy Simpson. He shares a few practical suggestions on how to approach giving your home a facelift

T

he beginning of a new year is the perfect time to embark on a touch of interior improvements. The chilly weather looks set to stay for a while, the house has lost its sparkle and the rooms are looking rather bland. The problem is where to start?

Planning is key - agree a budget and compile a list, addressing each room individually. Any interior designer will tell you that the overall décor of your home should flow seamlessly from room to room.

Enlist the help of an expert Browse through home interior magazines and even if you have impeccable taste, visit a local interior designer - it's time and money well spent. A designer can have as much or as little input as you require. Most of us can do with some help when it comes to the arduous process of selecting fabrics and choosing furnishings to dress a room. Take their advice, but be honest. If you don't like something, then say.

Personal taste is very subjective and often the strangest of selections can look striking.

What stays and what goes Sell any pieces of furniture that you are not particularly fond of or simply do not aesthetically fit in. Recycle inherited pieces that you are emotionally attached to - a lick of paint and a new set of handles can transform an old chest of drawers or a pair of bedside tables. Smarten up your bed with a new headboard covered in a luxurious fabric, reupholster the ageing sofas in a bolder fabric, add new lampshades to freshen up old lamp stands or simply attach sequin or beaded fringing to the existing ones. All these things will immediately bring a room to life.

Set a realistic budget Have a figure in mind but don't be surprised if you exceed it.

There will be items that are worth spending more on and others that you can get away with spending less on. Perhaps opt for cheaper fabric in the less formal areas – expensive fabric is more suitable for the main living room and dining room. To minimise the cost, your designer may suggest a pair of elegant dress curtains over a pair of plainer functional curtains. Should you stumble across a unique statement piece that is perfect for a particular space, don't hesitate to purchase it - it will be worth every hard-earned penny.

Once you have mastered the basic mechanics of how to play poker, you next need to learn about the odds involved. Knowing these will help you make the correct decisions in making and calling bets.

There is a very simple calculation poker players use to determine their outs and correct odds.

‘Outs’ are the cards that you need to complete your hand. Using this information gives you the correct ‘Odds’ as to whether you should call or fold. For example, say you are holding a Jack and a 10, and the flop comes up as King, Queen and 4. In this situation, you are looking for either an ace or a 9 to complete your hand and make a 'Straight.' You are assuming that there are 8 cards left in the deck (4 aces & 4 nines).

As there are 52 cards in a deck each card has an approximate percentage of 2%, so the chances of finding one of your cards is 16% (8x2). However, there are 2 cards to come ('Turn' & 'River') so this is doubled to 32%. If there are 300 chips in the pot and one of your opponents bets 100 chips you should always call because you are getting 4:1 on your money for approximately a 3:1 chance. Equally, if there were only 100 chips in the pot and you are facing a bet of 100, you should now fold.

Once you have mastered these simple methods and thrown luck aside, you will improve your game as you are playing pure math poker.

A Passion for Tradition With news that one of our oldest traditional pubs has recently undergone some exciting new changes, Darling caught up with general manager Max Pintus, and new head chef, Charlie Uwins at The Cricketers Tell me what has been happening at the pub over the past few months?

Max: Life at the pub has been very busy.

The refurbishment of the dining room is now completed and looking great. We have turned up the party atmosphere on Saturday nights with a mix of speciality cocktails, live DJ and dancing. Most importantly, we have a new chef and a new menu.

I've been hearing great things about the menu – what's your favourite dish on it?

Max: Charlie joins us from Minley Manor where she worked for the Officers' Mess – her specialities are traditional dishes such as pork belly, pies, lamb stew and her signature homemade dumplings. She brings a wealth of experience to the kitchen.

QUICK GUIDE TO COOKING SPRING LAMB

HEALTHY PANCAKE TOPPINGS

Preheat oven at 180˚c / 190˚c.

2 large sweet eating apples – peeled & chopped

Cook for 20 mins to the pound.

½ tsp cinnamon

Cook a 5lb (2.25kg) leg of lamb for 1hr 40mins then leave to rest for 15mins before carving. A small 4lbs leg will feed 6 where a larger leg 6lbs+(3kgs) will feed 8-10.

8 fl oz orange juice

Traditional leg of lamb

Carve thick end to thin, rump to shank, along the length. Ask your butcher to remove the bone if you wish. The shank bone can be left in for appearance.

Shoulder of lamb

Stewed Apple & Cinnamon

½ tsp orange zest Place all ingredients into a saucepan and boil until the liquid has reduced by half and the mixture thickens. Softened apples can be left chunky or blended in a processor.

Preheat oven to 150˚c

1 tbsp icing sugar

Stuff with herbs and cloves of garlic.

Slow roast for 3hrs minimum (up to 5hrs depending on size).

By roasting the lamb slowly we reduce the fat content, flavouring the meat at the same time.

Use a roasting tray with a trivet at the bottom to allow the fat to drain off.

No need for carving - simply pull the tender meat apart with a fork.

SALMON AND ASPARAGUS BAKE 1 tblsp of olive oil

225g dairy-free spread (or butter)

225g raisins

1 small chopped onion

Small glass of sherry

1 fresh bay leaf

2 tsps of fresh lemon juice

200g soft brown sugar

125g sultanas Grated zest of 1 lemon

A sprinkling of fennel seeds

Fresh dill

500 ml of milk

Asparagus spears

1-2 tbsp apricot jam

2 knobs of butter

680 grams new potatoes

1 free-range egg, beaten for glazing

30 grams of plain white flour

2 knobs of butter

210 ml of cream

Freshly chopped chives

4 free-range eggs 225g plain gluten-free flour (Dove’s Farm is fine) 2 level tsps gluten-free baking powder Half a tsp xanthan gum

Grated zest of 1 orange

450g almond paste/Marzipan (shaped into 2 x 20cm/8in circles and 12 small balls for the top).

• Preheat oven to 150C/Gas mark 2.

• Beat together the butter, sugar, eggs, flour, baking powder, xanthan gum and mixed spice until pale and fluffy. Add enough milk, a spoonful at a time, until mixture is creamy. Add the mixed dried fruit and grated zest and stir into the mixture.

• Put half the mixture into a greased and lined 20cm/8in cake tin.

Smooth the top and cover with one circle of almond paste. Add the rest of the cake mixture and smooth the top leaving a slight dip in the centre allowing the cake to rise.

• Bake the cake for 2 hours 30 mins until well risen and firm to the touch. Cover with foil after 1 hour if the top is browning too quickly. Allow the cake to cool before turning out onto a wire rack.

• When the cake has cooled, brush the top with the warmed apricot jam and cover with the other circle of almond paste.

Press firmly on the top and crimp the edges.

• Mark a criss-cross pattern on the almond paste with a sharp knife. Form the remaining almond paste into 12 balls (to represent the 12 apostles). Arrange the balls around the outside.

• Preheat the grill. Place the cake under the preheated grill to turn the almond paste golden.

• Decorate with a ribbon.

• Prepare the sauce. Cook the onions with fennel seeds & bay leaves until soft. Leave to simmer for 45 minutes.

• Melt the butter, add the salt and flour, mixing well. Leave on a med-low heat.

• Reduce the white wine, sherry and lemon juice to two tblsp • Strain the simmered milk, discarding the onions, bay leaves and fennel seeds. Reduce to 500ml – put to one side.

• Slowly add the milk to the butter & flour and bring to the boil before switching off.

• Add the remaining cream and wine reduction, bringing it to the boil again before switching off.

• Season with fresh dill.

• Boil the potatoes and melt the butter in a pan ready for the potatoes.

• Drain the cooked potatoes before returning them to the pan to dry out on a low heat.

• Crush the potatoes in the butter, seasoning with salt and pepper.

• Put the salmon into an oven dish and sprinkle with the asparagus spears • Pour over the cream sauce and allow to sit for around ten minutes (this will mean that your potatoes won’t sink when you put them over your salmon).

• Completely cover the salmon with an even layer of crushed potatoes, then place in the oven to bake.

• Finish with a sprinkling of chives

Restoring the heart back into Cobham The Riverhill banks are all set for Spring - Nikki Perkins describes the extensive work that has captured the community The Cobham Conservation and Heritage Trust has embarked on its most ambitious restoration scheme to date – the regeneration of Riverhill, an area of riverbank alongside the River Mole from the end of the High Street to Cobham Mill. Work began last year 2012 after the fundraising total reached a staggering £150,000, thanks to the generosity of the local community and Elmbridge Borough Council.

The whole area was cleared of invasive plant species, trees

pruned, new paths created and old paths re-laid providing access for those with restricted mobility, banks re-graded, shuttering work completed and the crumbling stone steps removed. The main works were completed in November and access to the stunning viewing platform (fondly renamed the 'Cobham Pier') is now open. Specialist planting will take place in the Spring creating grassy banks and wild flower areas for both local residents and local wildlife to enjoy.

The success of this truly

community-led project has ensured that Cobham’s residents for generations to come are able to continue to enjoy this vital part of our Heritage.

But, have you invested in the right clothing and will you be prepared for the unexpected?

I

t is essential that you are comfortable and warm whilst out riding. As the winter weather takes a grip, there is no such thing as bad weather, just bad clothing. Deciding what to wear for a ride can often be just as hard as choosing what outfit to wear on a night out.

The clothing you wear can make a significant difference to your ride experience. You need to wear the right kit and that requires some layering, so that you can unzip, add or take away a layer to keep you warm, cool or dry.

Clothing essentials: Upper body layers • A good sports bra • A base layer – provides warmth and quick moisture management by pulling the moisture away from the skin and transferring it to the outer layers to be evaporated.

• A mid layer (long or short sleeve) – a standard cycle jersey top with a zip provides warmth without weight and should be the one layer you can remove if the weather suddenly warms up.

• A gilet – occasionally referred to as a sleeveless vest, this is versatile and can be worn first thing in the morning until it warms sufficiently to remove it. When not required, it can be folded up and takes up little pocket space.

• A lightweight shell jacket – there will be plenty of times when a gilet isn't quite enough to deal with the elements and you will need a windproof and water-resistant shell jacket.

• A waterproof jacket - use the combination of high-tech breathable material such as GoreTex with taped seams to keep you dry. It can double up as a windproof jacket on dry, colder days.

Lower body-half layers • Cycle shorts with leg warmers – opt for bib shorts to give you freedom of movement and comfort. Leg warmers are handy to slip on or off should the weather turn colder or warmer.

• Full tights - in bitter cold weather, it's advisable to wear these. Suitable padding on your shorts or tights is an absolute must.

• If you are wearing proper cycling shoes then you should consider overshoes in winter and wet weather.

A run through the woodlands, forests, heaths or a gentle meander down the river bank – there is a walk to suit you and your dog at whatever pace you travel at.

Oxshott Heath, Warren Lane, Oxshott Best time to go – after the morning school run to avoid heavy traffic along Copsem Lane/Warren Lane first thing.

Length – a leisurely 45 minutes.

Terrain – woodland, often muddy and steep in some parts.

Walk straight up from the car park, through the stiles and to the top - catch your breath while admiring the view.

Follow the track down the wooden steps, either turn left towards an area of open land or right and branch off left along a delightful escarpment with lovely views. Alternatively, turn right and walk a circuit, running parallel to the railway line.

The sandpit is worth a detour - turn right at the top where the war memorial is sited.

Eager to reclaim her fitness after the birth of her second child, Lisa began her indoor cycling journey – after three classes she

A SCHOOL WITH A DIFFERENCE It's humbling that some of the most talented musicians in the country start their professional journeys in Cobham. Philippa Hennessy chats to Dr Richard Hillier, the head of the Yehudi Menuhin School, to find out just what it takes to hit the high notes The smallest and most specialised of music schools is situated in Stoke D'Abernon. The Yehudi Menuhin School (YMS) offers tuition to around 70 pupils aged 8-19 in stringed instruments and piano. Its pupils are not ordinary and this is no ordinary school.

But, as Dr Hillier explains, they do all the things that they would do in a ‘normal’ school - they have academic lessons, they do homework and they play sport.

The key difference is that they spend half their day, every day, in musical activities from individual instrumental lessons through to orchestral rehearsals or choir practice. Each child's timetable is designed specifically for him or her with the integration of music throughout the day.

Dr Hillier believes that the students lead a more ‘normal’ life here than they would do at a mainstream school, where they would be singled out and treated differently. At YMS, all the students share the same interests and passions. The students do not have much opportunity to participate in activities outside the school, but some dedicate their free time at weekends to sing in church choirs, participate

in the Duke of Edinburgh Award Scheme or volunteer to help in local charity shops.

When asked if their musical skills help towards their academic achievements, Dr Hillier tells me that because musicians have to be organised with their time, this usually means that they are organised about their academic work as well: 'Music may be the most important thing in their lives, but most of them also want to excel in their academic subjects.'

We take the music out into the community and bring the community into the school' The school takes its communityled initiatives seriously and runs an active Partnership Programme which involves many of the local schools. It performs with the Surrey Youth Choir and Surrey County Arts Youth Jazz Band, as well as sitting on the governing body of the Surrey Music Hub which delivers music services to Surrey's young people.

There are a number of high achieving students from in and around the area. 'It's all about talent and potential,' says Dr Hillier. 'The majority of the pupils are on bursaries from the Department of Education.

We have around seven places (bursaries worth up to 100% of the fees) available for pupils who have been resident in the UK for 2 years for entry in September 2013.'

ove is in the air at this time of year when marriage proposals are abundant and jewellers are preparing for their busiest time in the calendar.

Valentine's Day is a popular time for romantics to whisk away their loved ones for a weekend break and pop the question. Picture the scene – a delicious lunch at a traditional English Inn, followed by a short stroll through beautiful countryside with the sun setting in the background and suddenly your partner kneels down, fumbles through his pockets and produces a sparkling ring. It's official – you are engaged!

Prenuptial agreements have been very common in many parts of the world for some time, but not so much in this country until the recent case of Radmacher hit the newspaper headlines. Quite simply, a prenuptial agreement is a formal written agreement that sets out terms which are to govern what will happen to a couple's individual and jointly owned assets and properties, and how they will provide for each other should the marriage ever come to an end. Such an agreement should be tailored to each of the partner's individual circumstances and both need to take independent legal advice.

Perhaps your wedding plans are already well underway and you are looking forward to your big day later this year.

Your life is no doubt consumed with dress fittings, flowers, the reception, bridesmaid dresses, music and wedding cars, not to mention seating plans and the constant rows with your parents and future husband's family over the guest list. There is so much to organise. But, have you considered a prenuptial agreement?

Some people view prenuptial agreements as rather unromantic – nobody enters into marriage thinking that the partnership will not last forever.

However, in reality, many marriages do end in divorce and when they do, arrangements then have to be agreed or court orders sought to deal with financial arrangements.

This can often be an extremely harrowing and painful process.

and more popular – consider it no different to taking out insurance for other unpleasant, but possible events – after all, one never knows what is around the corner. We all hope that we never have to take out such a type of insurance, but it can save so much emotional trauma should the worst happen.

It is strongly advised to consult a solicitor early on so that an agreement can be drawn up well in advance, leaving you free to enjoy the excitement and build-up in the lead up to your wedding.

BREAKING FREE OF MY FEAR Facing the fear that had taken over her life for so long, Kirsten Brown eventually overcame her battle with depression.

She describes her symptoms, seeking treatment and how she came out the other side a happier and more confident person

I

shouldn’t have been surprised when I was diagnosed with clinical depression in 2004 after all, it had affected most of my family over the years.

When I was eight years old, my dad suffered a breakdown and disappeared out of my life for several months. My eldest brother was bipolar and his destructive behaviour affected everyone around him. My sister was anorexic and a drug addict, and my mum took valium to keep her anxiety under control.

There were telling symptoms for my condition: I became totally irrational and was unable to look anyone in the eye - I couldn’t understand how anyone could be positive. I was in tears when I woke in the mornings and felt sick for years from constant anxiety.

The compound effect of a sequence of tragic events over the five years prior to going into hospital resulted in the need for intensive therapy. Six months after I had my second child in 1999, I lost my mum to Alzheimer's. A month later we moved house but I was unable to settle. The following year I had a miscarriage, my best friend moved away, my marriage deteriorated and my eldest brother died.

Many of my problems in later life stem back to the secrets my family kept from others I felt guilt and shame at the fact I was unable to smile at my girls with any sincerity and despite being so emotional and anxious, I felt dead inside. I didn’t share much with friends or siblings.

My girls bore the brunt of it and dealt with my moods, my anger, my tears and my desperation.

Eventually I went to see my GP and for two years he supported me whenever I deteriorated.

In the autumn of 2004, I was referred to a psychiatrist at the Priory and was hospitalised for six weeks. I was terrified of counselling but knew that I had to do it in order to deal with the depression.

Once I was on the correct medication, I was able to throw myself into therapy and the more sessions I attended, the more confident I became. During my stay in hospital, I experienced many low points – one of which was receiving a letter from my employer terminating my employment. On Christmas Eve

I was allowed to go home – like most children, my girls were expecting a tree, presents and decorations, but my ex-husband hadn’t prepared anything. I ran around the shops frantically buying everything and anything.

I struggled through Christmas day, but by Boxing day, I couldn’t wait to get back into hospital where I didn’t have any responsibilities.

I spent over two years in therapy and by 2005 a ‘new’ me was emerging. After seven years of working for a Mental Health Charity, the opportunity arose to start my own business. I have been an Independent Consultant for Arbonne, a Swiss Skincare company, for six months now – after all this time I am happy and enjoying life.

On reflection, out of my immediate family, I was the one who was lucky enough to come out the other side and share my experience with my girls.

Depression can be hereditary and it's important that they know the symptoms.
