The tomato fight has been a strong tradition in Buñol since 1944 or 1945. No one is completely certain how this event originated. One of the most popular theories is that disgruntled townspeople attacked city councilmen with tomatoes during a town celebration. Whatever happened to begin the tradition, it was enjoyed so much that it was repeated the next year, and the year after that, and so on.

Una città tutta blu. Case, negozi, marciapiedi, luoghi di culto, tutto color del cielo. Non vi preoccupate però, i suoi abitanti non sono alti due mele o più, ma sono gente orgogliosa e fiera con una grande storia alle spalle. Questa città si chiama Chefchaouen e si trova nel cuore del Marocco, abbarbicata sulle ripide pendici della catena montuosa del Rif. I suoi abitanti sono gli antichi discendenti di musulmani ed ebrei fuggiti dall’Andalusia alla metà del 1400 e arrivati fin qui alla ricerca di un luogo sicuro dove poter ricominciare. La città sorge all’interno di una piccola valle e si arrampica lungo i fianchi della montagna.

An entirely city painted in blue. Houses, shops, pavements, worship places, everything has the colour of the sky. Don’t get worried, though, its inhabitants are not three apples tall, but they are proud, dignified and with a great history.

The name of the city is Chefchaouen and it is in the heart of Morocco, clinging to the steep slopes of the Rif mountains.

The inhabitants are the descendents of Muslims and Hebrews who run away from Andalusia in the mid 15th century and who arrived here searching for a safe place where starting again. The city is within a small valley and lies on the mountain’s slopes.

Nel punto più alto si trovano le sorgenti di Ras al-Ma da dove tutta la zona da secoli trae il suo sostentamento e la propria ricchezza. Il centro della città è la piazza di Uta al-Hamman, dove si trova la fortezza e una moschea con torre di base ottagonale. La città nuova è stata costruita più in basso.

Per tutti gli abitanti del Marocco e non solo Chefchaouen è un luogo assolutamente particolare, non a caso per secoli fu considerata come una città sacra, dove era proibita l’entrata agli stranieri. I cambi sono molto recenti.

Furono le truppe spagnole che aprirono Chefchaouen una volta preso il controllo della zona nord del Marocco per instaurare il loro protettorato.

In the highest part, there are the Ras al-Ma springs, from which the area has derived its richness. The city centre is the Uta al-Hamman square, where you can see a fortress and a mosque with an octagonal base. The newest part of the city has been built below the old one.

Chefchaouen is a very particular place for all the people of Morocco and not. It is not by chance that it was considered a holy city for centuries, and the entrance was forbidden to foreigners. Changes are quite new.

The Spanish troops opened Chefchaouen when they took control of the northern Morocco to establish their protectorate.

Il fascino di quella che è giustamente considerata la perla del Rif va però molto più in là del suo passato di roccaforte inespugnabile. Fin da quando comincerete ad arrampicarvi verso la parte alta della città non potrete che rimanere come storditi di fronte ai forti contrasti di questo luogo unico al mondo.

Il verde dei boschi, il blu del cielo e l’azzurro, il giallo e il rosso delle case di Chefchaouen, in questi luoghi non sembrano esserci vie di mezzo, tutto quello su cui poserete lo sguardo ha contorni netti e definiti ed è dotato di un fascino assolutamente suggestivo. Il centro della città porta ancora oggi ben visibili i segni tangibili delle origini andaluse della città.

The charm of what is rightly seen as the jewel of the Rif goes beyond its past as an unconquerable stronghold. Once you start climbing towards the highest part of the city, you couldn’t help being bewildered by the deep contrasts of this place unique in the world.

The woods’ green, the sky’s blue and the Chefchaouen houses’ azure, yellow and red. Here there is no middle ground, and everything you set your eyes on has clear and defined outlines and an absolutely evocative charm. The city centre still shows the tangible signs of its Andalusian origins.

UN FASCINO SUGGESTIVO AN EVOCATIVE CHARM Completamente circondata da alte mura che si adagiano sui fianchi della collina e delimitano i confini della città nuova, incredibile è l’atmosfera che si respira per le strade della medina, un vero e proprio gioiello architettonico dove è facile, e bello, perdersi per le sue strade dai colori del cielo.

Completely surrounded by tall walls which lean on the hill’s slopes and mark the borders of the new city, it is incredible the atmosphere you can experience on the streets of the medina, a true and authentic architecture jewel where it is easy, and beautiful, to get lost among the roads with the same colours of the sky.

Nonostante la sua particolarità e le tante cose da vedere Chefchaouen rimane ancora fuori dai grandi flussi turistici. Qui le strade si intrecciano l’una con l’altra in un vero e proprio calendoscopio di tonalità da cui spiccano non solo il bianco e blu delle case ma anche il rosso dei muri della kasba.

Although it is peculiar and has many things to see, Chefchaouen is still out of the main tourism flows. Here every road crosses each other to create a true and authentic kaleidoscope of hues, from which not only stand out the white and blue of the houses, but also the red of the kasbah walls.

The centre of the medina revolves around Uta Hammam square, where you can sip a cocktail while enjoying the panorama of the Rif valley. The Bab Suk, Bab el Majarrol, Bab el Ansar and Bab el Ain doors are greatly charming, both architectonically and artistically, they are an example of the unique style of this part of Morocco.

Il centro della medina gravita attorno alla Piazza Uta el Hammam, dove si può prendere un aperitivo mentre si apprezzano gli stupendi panorami sulla vallata del Rif. Di grande fascino architettonico e artistico sono poi le porte di Bab Suk, Bab el Majarrol, Bab el Ansar e Bab el Ain, esempi molto interessanti dello stile unico di questa parte del Marocco.

La kasba, invece, è un congiunto di edifici separati da un giardino centrale. Negli edifici della kasba si trovano una piccola galleria d’arte, un museo etnografico dove si espongono foto antiche della città e costumi tradizionali. Uno degli edifici possiede una torre da dove si può ammirare la città, le montagne e le valli dei dintorni.

Quello che più affascina di questi luoghi sono però gli scorci e l’atmosfera stessa che vi si respira, quasi che il tempo si fosse fermato e prosegua lento nei suoi riti e nelle sue tradizioni secolari.

The kasbah is a combination of buildings divided by a central garden. In these buildings you can find a little art gallery and an ethnographic museum, where old photographs of the city and its traditions are exhibited.

One of the buildings has a tower from where you can admire the city, and the surrounding mountains and valley.

What are most fascinating are the glimpses of the city and its atmosphere, though. It is like time stopped and has started flowing slowly with its centennial rites and traditions.

Proprio nel centro della città, ancora oggi non è raro imbattersi in gruppi di donne berbere che scendono dalle montagne per lavare i tappeti alla sorgente. In questo gesto semplice rivivono usanze che sono parte integrante di questi luoghi. In quattro persone prendono il tappeto, lo lavano, lo scrollano dall’acqua e poi vi stendono sopra le pietre perché si asciughi al sole.

Right in the centre of the city, it is still not rare to stumble upon groups of Berber women who climb down the mountain to wash carpets in the springs. Customs, which are an important part of the region, live again through simple gesture like that. Four people take, wash and squeeze the carpet, and after that they place stones on it and let it dry in the sun.

Chefchaouen è anche un punto di partenza ideale per tantissime escursioni alla scoperta del Rif. Da qui anche solo percorrere la strada che conduce a Al Hoceima è un’esperienza piena e gratificante e, non a caso, è considerato uno dei percorsi più spettacolari del Marocco.

Chefchaouen is also an ideal starting point for many excursions to explore the Rif. From here, just walking on the road towards Al Hoceima is a fulfilling and satisfying experience, and that is why it is considered one of the most amazing itineraries of Morocco.

Si trova lungo lo stesso asse centrale della catena montuosa del Rif e gli automobilisti possono godere di un susseguirsi di magnifici paesaggi che raccontano di tutta la varietà e ricchezza di questa zona del Nord Africa: picchi innevati, prati, oliveti, borghi, campi coltivati, letti di fiumi e poi finalmente il mare.

It is along the same central axis of the Rif and drivers may enjoy a succession of wonderful landscapes which tell about the variety and richness of this area of Northern Africa: snowy peaks, meadows, olive groves, villages, cultivated fields, riverbeds and finally the sea.

ESCURSIONI PAESAGGISTICHE LANDSCAPE EXCURSIONS Nei dintorni di Chefchaouen merita poi una visita il parco nazionale di Talassemtane. Questa zona é l’ideale per godersi i sentieri e le escursioni per la zona del Rif. Qui si trovano cime mozzafiato come il monte Kela, ma anche valli profonde e piene di foreste di cedri, querce, ulivi ed abeti dove vivono tantissime specie animali tra cui i macachi e molti rapaci. Un vero e proprio paradiso nel paradiso è poi l’area naturalistica di “Akchour”.

Si tratta di uno scrigno di tesori che si trova sulle mappe solo associato a una piccola diga sul fiume Laou, ma che nasconde un’infinità di sorprese.

La zona è un’area naturale di grande interesse, ma ha due cose che la rendono ancora più particolare: risalendo il fiume Farda si trova il ponte di Dio, ponte di roccia naturale sospeso a 35 metri d’altezza che il fiume ha eroso col passare dei secoli e l’imponente cascata del fiume Kelaa.

Around Chefchaouen it is worth visiting the Talassemtane national park. This area is perfect for enjoying paths and excursions by the Rif. Here you can find breathtaking peaks, such as the mount Kela, but also deep valley covered with cedar, oak, olive tree and spruce forests where many animal species live, such as macaques and several birds of prey. A true and authentic paradise within the paradise is the “Akchour” naturalistic area.

It is a treasure chest that you can find on maps only when associated to a small dam on the river Laou, but it is full of surprises. This is a natural area of great interest, two things make it peculiar, though: going back up with the river Farda you will find the God’s bridge, natural construction made of rock hanging at 35 metres above the river which has eroded and built it over the centuries, and the mighty waterfall of the river Kelaa.

IL MARMO RACCONTA NUOVE STORIE TRA ARTE, MUSICA E DESIGN Il marmo come materiale identificativo del territorio apuo-versiliese avrà un ruolo cardine nelle attività dello spazio espositivo. Opere come la poltrona “Proust” in marmo, progettata da Alessandro Mendini, che ha accettato di sviluppare con il prezioso materiale una delle sue realizzazioni più iconiche, presente in alcune delle principali collezioni internazionali, oppure le sedute polifunzionali di Paolo Ulian, sono state le protagoniste del primo evento dal titolo “Solid Senses” , che ha già raccolto ampi consensi di pubblico, critica e attenzione mediatica nel contesto della Milan Design Week tenutasi a Milano dal 8 al 13 aprile scorso.

Dal 12 Luglio per tutta l’estate, invece sarà protagonista la mostra “The Beauty and The Beast” dove sarà esposto “Cinderella Table”, il celebre tavolo in stile Rococò, nato da una collaborazione tra GVM La Civiltà del Marmo e lo studio Demarkersvan del designer olandese Jeroen Verhoeven. Nello stesso periodo sarà presentata una retrospettiva sull’artista francese Philippe Pasqua dal tema “Vanitè”in cui spiccheranno i suoi celebri teschi con farfalle.

MARBLE TELLS NEW STORIES THROUGH ART, MUSIC AND DESIGN Marble, as the identifying material of the apuan-versilian territory will have a fundamental role in the exhibition. Works such as the “Proust” armchair in marble designed by Alessandro Mendini who decided to develop one of his most iconic pieces using the precious rock, will be present in his International collection; Paolo Ulian’s polyfunctional seats were the protagonists of the first “Solid Senses” event which has already gained great public, critical and media acclaim at Milan Design Week held in Milan from April 8-13th.

From July 12th til the end of the summer, the “Cinderella Table”, the famous table in Rococo style born from the collaboration between “GVM La Civilta’ del Marmo” and the Demarkersvan studio of the Dutch designer Jeroen Verhoeven, will be shown at “The Beauty and the Beast” exhibition. During the same time, a retrospective will be held on the French artist Phillipe Pasqua.

The theme will be “Vanite’” in which his famous skulls with butterflies will be highlighted.

David Bryan, keyboard player and cofounded of the Jon BonJovi rock band, also author of the famous rock musical “Memphis” (which after having broken every box office record and receiving many awards will play in London in the fall) is the godfather of the exhibition and the living symbol of the energy of rock music which makes the “violent energy” used in the search for beauty the banner of his own poetic expression. On this occasion David Bryan will present “Elvis—The King is Dead”, a marble creation adorned with gold and diamonds, born from the artistic collaboration of Gualtiero Vanelli.

Ospite d’eccezione, a battezzare il nuovo evento, David Bryan, tastierista e co-fondatore della band rock americana BonJovi. David Bryan, autore anche del celebratissimo musical rock “Memphis” (che dopo aver frantumato ogni record d’incasso, fatto incetta di premi, sbarcherà in autunno a Londra) è il padrino della mostra. In mostra artisti che hanno ormai raggiunto una fama internazionale, tra questi l’uber artist Damien Hirst, che sin dagli esordi della sua carriera ha gettato le basi di una poetica basata sul contrasto fra ricerca della bellezza e proposta formalmente “bestiale” della stessa per stimolare riflessioni nello spettatore (si ricordi l’opera epocale “The Physical Impossibility of Death in the Mind of Someone Living”, il famoso squalo in formaldeide).

The artists of the exhibition have gained international fame by now, among these the uber artist Damien Hirst who since the beginning of his career laid the foundations of a poetics based on the contrast between the pursuit of beauty and the formally “beastly” proposal to stimulate thought in the viewer (remember the epic work “The Physical Impossibility of Death in the Mind of Someone Living”: the famous formaldehyde shark).

Hirst sottolinea costantemente il rinvio dell’elemento selvaggio all’istinto di morte, rovesciando il tabu occidentale della morte sulla bellezza, come testimonia ampiamente la storia dell’arte del XX secolo.

Hirst continuously underlines the savage element’s deferment to its death instinct, overthrowing the western taboo of death and beauty, as the as evidenced by the impressive history of twentieth century art.

Per Philippe Pasqua la dialettica si articola esteticamente fra il disfacimento delle carni nei suoi dipinti, traduzione dell’operato del tiranno Chronos sulla bellezza e la simbologia del teschio declinata in chiave pop – che ne derubrica la forza mortale - nelle forme plastiche.

For Philippe Pasqua the dialogue is aesthetically articulated between the decomposition of the flesh in his paintings, a translation of the work of the tyrant Chronos on beauty, and the symbolism of the skull interpreted through rock’n’roll—robbing it of its mortal force—in plastic forms.

Aron Demetz, atteso nel mese di agosto per un’importante consacrazione, con la mostra personale all’Hans Arp Museum in Germania, è portabandiera della secolare tradizione della lavorazione del legno caratteristica della Valgardena.

Aron Demetz, who is expected in August for the opening of his personal works at the Hans Arp Museum in Germany, is the flagholder for the centuriesold tradition of woodworking characteristic in the Valgardena region.

Il teschio di Demetz è armonico e ingloba lo strumento tecnologico mortifero destituito della sua funzione, perché già espletata da altri, con la natura principale indiziata.

Jean Pierre Raynaud, articola il suo stile pop, traducendolo in forme geometriche, in valori plastici sia che si tratti di vasi che di teschi, sublimando la dimensione formale in geometrie concettuali, in puro pensiero affrancato dal referente reale.

Nel percorso espositivo il “Cinderella Table” concepito e realizzato dai gemelli olandesi Verhoeven dello studio di design Demakersvan in collaborazione con GVM La Civiltà del Marmo, rappresenta l’accumulatore di bellezza e di armonia ma anche la dialettica fra natura e cultura, resistenza e potenzialità della preziosa materia marmorea e perizia artigianale abbinata a quella tecnologica.

Demetz’s skull is harmonic and incorporates the technological deadly instrument priven of its own function already completed by others.

Jean Pierre Raynaud articulates his own pop style translating it into geometric forms and plastic, whether they be vases or skulls, sublimating the formal dimension in conceptual geometry, the pure thought freed from the actual referent.

The “Cinderella Table” exhibition was conceived and carried out by the Dutch Verhoeven twins in the Demakersvan design studio in collaboration with GVM La Civiltà del Marmo and represents the accumulator of beauty and harmony but also the dialectic between nature and culture, resistance and potential of the precious marble material and craftsmanship combined with that technology.

A REFLECTION ON BEAUTY AND LIFE

Una mostra quella progettata da Italian Art Factory che intende fornire spunti per una riflessione più generale sui concetti di bellezza. Un concetto che spazia dalle sue origini, dalla Teogonia di Esiodo con la nascita di Venere dalle Acque, ed è per un lungo periodo non legato alle “arti belle” ma connesso alla natura e più precisamente agli esseri viventi. Com’è noto nell’antichità la bellezza assume anche un significato morale, ciò che è bello è anche buono.

This Italian Art Factory exhibition aims to provide insights for a more general reflection on the concept of beauty. This concept distances itself from its origins, from the Theogony of Hesiod with the birth of Venus from the waters, and is for a long period of time not strictly tied to “beautiful arts” but more connected to nature and precisely living things.

As it has been seen throughout history, beauty takes on a moral meaning: what is beautiful must therefore also be good.

Gli artisti contemporanei, come testimoniano esaustivamente quelli in mostra, si sono confrontati con un declino e spesso un’avversione del 900’ per la bellezza nelle sue molteplici forme. La pop art – con Andy Warhol in prima fila – ha sancito la rinascita della bellezza come finalità dell’operato artistico, che torna a proporsi , sia pure ironicamente, quale misura dell’essere e del mondo stesso.

The contemporary artists, as the ones exhibited exhaustively testify, have had to deal with a decline and often a 20th century aversion to beauty in its various forms. Pop art—firstly Andy Warhol— launched the rebirth of beauty as the finality of the artistic work which then reproposes itself, through irony, as the measurement of being and of the world itself.

Il teschio invece è un simbolo utilizzato in tutti i contesti e in tutti i periodi storici, accomunati dal riferimento a un concetto di morte e transitorietà dell’esistenza: dal Jolly Roger dei pirati a quello dei sommergibilisti della marina militare inglese (come concetto di coraggio e segretezza), dal Totenkopf dei corpi militari del Regno di Prussia, alle società segrete americane, ai cimiteri spagnoli fino al culto dei morti messicano.

Instead, the skull is a symbol used in all settings and in different moments in history; they all use this symbol to refer to a concept of death and the transient nature of existence: from the Jolly Roger of pirates to English Marine Military submarine commanders (as a concept for courage and secrecy) to the Totenkopf of the military body of Prussia, to the American secret societies to the Spanish cemeteries to the Mexican culture of death.

Da qui prende spunto la mostra e l’operato degli artisti riuniti e dallo stesso concetto si sostanzia il programma dell’Italian Art Factory, la bellezza – nella sua dialettica con il selvaggio e il mortale, fra sublime e grottesco – ripensata in termini “classici” con linguaggio contemporaneo, individuata come antidoto alla decadenza estetica e morale, come misura “ecologica” in grado di promuovere un nuovo modo di pensare e percepire per il futuro.

The exhibition is inspired by the works of all these artists reunited around the same concept from which the Italian Art Factory draws inspiration for its program: the dialogue between the savage and the mortal, the sublime and the grotesque—revisited in “classical” terms through contemporary language, used as an antidote to the aesthetic and moral decadence as an “ecological” measure capable of promoting a new way of thinking and perceiving for the future.

VENDEMMIA D’ARTISTA

ORNELLAIA INTERPRETA L’INFINITO ORNELLAIA INTERPRETS THE INFINITE Andrea Orsini Scataglini

Per interpretare il carattere unico: L’Infinito, scelto per la Vendemmia 2011, Ornellaia ha invitato l’artista canadese Rodney Graham a creare un’opera ed esclusive etichette singolarmente firmate in originale che vestono 111 grandi formati di Ornellaia: 100 bottiglie doppio Magnum (3 litri), 10 bottiglie Imperiali (6 litri) e un’unica Salmanazar (9 litri).

L’artista ha lavorato sul tema dell’Infinito, della parola poetica e del vino come fonte d’ispirazione per l’anima e per i sensi. Ha così composto alcune poesie, stampate poi sulle etichette con tecniche tipografiche tradizionali, con l’attenzione e la competenza proprie dell’eccellenza artigianale italiana.

To interpret the distinctive theme selected for the vintage 2011, “L’infinito” (Infinity), Ornellaia invited Canadian artist Rodney Graham to create an artwork and exclusive wine labels, each personally signed by the artist, that adorn the 111 large-format bottles of Ornellaia: 100 3-litre Double Magnums, 10 6-litre Imperials, and 1 one-of-a-kind 9-litre Salmanazar.

Graham, embracing the poetic theme Infinity as well as that of wine as a fountain of inspiration for both the senses and the soul, created poems that were then printed on the labels, using traditional printing procedures, with the painstaking attention and expertise classic to Italian art craftsmanship.

I 100 Doppio Magnum presentano una poesia impaginata in un’etichetta dalla sagoma geometrica e regolare, mentre le 10 Imperiali e l’unica Salmanazar, ciascuna contraddistinta da una poesia e un’etichetta di forma diversa, sono esemplari unici ed esclusivi.

Rodney Graham ha infine raccolto tutti i componimenti poetici nel libro d’artista Short Poems of Merit che, firmato e numerato, accompagnerà ogni bottiglia.

Il Progetto Vendemmia d’Artista, avviato nel 2009, si propone il recupero della tradizione rinascimentale e del valore del mecenatismo culturale rivisitato in chiave moderna.

The 100 Double Magnums bear a poem enclosed in a geometrical, normally-shaped label, while the 10 Imperials and the single Salmanazar are each adorned with a different poem and a different-contoured label, which make each individual bottle an artwork unto itself.

In addition, Graham collected all of the poems into a numbered and signed art-book entitled Short Poems of Merit, which will accompany each bottle.

The project, now in its sixth year, has collected more than one million euros, all of which has been donated to foundations across the globe that effectively promote and assist art, in all of its varied expressions, including the Whitney Museum in New York, the Neue Nationalgalerie in Berlin; the Royal Opera House in London, and the H2 Foundation in Hong Kong, without forgetting the Poldi Pezzoli Musem in Milan.

On 12 June 2014, ORNELLAIA was in the spotlight at a charity auction and gala dinner with 9 lots, which included 8 special bottles. Under the gavel of Jamie Ritchie, CEO & President Sotheby’s Americas & Asia, the auction raised funds that all went to the Art Gallery of Ontario (AGO) of Toronto.

THE HEART OF THE PLANET FROM 5TH SEPTEMBER IN CARRARA Sarà la “culla dell’umanità” la protagonista della nona edizione del festival Con-vivere. La manifestazione della Fondazione CRC porterà nella città di Carrara, nel week end dal 5 al 7 settembre grandi protagonisti del dibattito politico e culturale quali Igiaba Scego, Walter Veltroni, Giobbe Covatta, Francesco Cavalli Sforza, Nadia Fusini, Efrem Tresoldi, Daniela Colombo, Remo Bodei e musicisti del calibro di Angelique Kidjo.

L’edizione di quest’anno dal titolo “Africa: il cuore del pianeta” ci condurrà in un viaggio che spazierà nei più diversi campi disciplinari attraverso 70 eventi diffusi in 10 location: dall’antropologia alla genetica, dalla letteratura al cinema, dalla musica alla gastronomia con il coinvolgimento di docenti universitari, scienziati, politici, esperti di settore e giornalisti.

Dell’Africa si ha spesso in occidente, l’idea “di una realtà subalterna, condannata all’arretratezza e incline a conflitti endemici”, sottolinea il direttore scientifico del festival, Remo Bodei.

Le conferenze e gli altri appuntamenti di Con-vivere cercheranno di portarci oltre quegli stereotipi, presentandoci il continente per quel che è: un mosaico dinamico e “per nulla privo di storia, dalla straordinaria vitalità e dal fascino di culture e tradizioni millenarie”, come ricorda ancora Bodei.

Nella giornata inaugurale, venerdì 5 settembre saranno Walter Veltroni e Giobbe Covatta, muovendo dalla loro personalissima esperienza nel continente, ad aprire una panoramica complessiva sul tema dell’edizione 2014: il primo incentrandosi più sugli aspetti politici ed economici, il secondo sulla povertà e sulla sostenibilità ambientale.

In Western civilisation, we often look at Africa as a “subaltern reality, condemned by underdevelopment and disposed to endemic conflicts,” it says Remo Bodei, scientific director of the festival.

The lectures and the other events of Con-vivere will try and push us beyond stereotypes, presenting the continent for what it is: a dynamic mosaic and “not at all without history, with an extraordinary vitality and the charm of millennial cultures and traditions”, Remo Bodei says too.

In the opening day, Friday 5th September, Walter Veltroni and Giobbe Covatta will open a complete overview on the 2014 edition theme, starting from their personal experiences in the continent: the first one focusing more on political and economical aspects, the second one on poverty and environment sustainability.

Da quella giornata ogni aspetto del continente nero sarà approfondito: dalla conoscenza delle genti africane con l’antropologo Francesco Remotti, al concetto di culla dell’umanità, con il docente di genetica Francesco Cavalli-Sforza, dalla letteratura con Nadia Fusini, al colonialismo con Nicola Labanca, storico dell’Università di Siena. Si parlerà anche di migranti, con Mons. Giancarlo Perego, direttore di Migrantes e con la scrittrice Igiaba Scego.

Starting from day one, every aspect of the continent will be analysed deeply: from getting to know African peoples with the anthropologist Francesco Remotti, to the concept of cradle of mankind with the genetics professor Francesco Cavalli-Sforza, from literature with Nadia Fusini, to colonialism with Nicola Labanca, historian at Siena University. We will also talk about immigrants, with Mons. Giancarlo Perego, editor of Migrantes, and Igiaba Scego, writer.

Tra gli abitanti di Ama e il luogo si è stabilito un rapporto di reciproco dono. Da una parte, Lorenza Sebasti e Marco Pallanti ne spremono il succo divino, carezzando e stimolando la terra a fare il suo dovere di madre, ma dall’altra, con pari generosità e costanza, danno all’arte la possibilità di mettere radici.

La storia d’arte di Ama, che ha il suo riferimento essenziale nella cura dei vigneti, di ogni singola parcella di terreno, prende forma con le opere di Michelangelo Pistoletto, di Daniel Buren, di Giulio Paolini, di Kendell Geers, di Anish Kapoor, di Chen Zhen, di Carlos Garaicoa, di Nedko Solakov di Cristina Iglesias di Louise Bourgeois, di Ilya&Emilia Kabakov e di Pascale Marthine Tayou.

Among Ama’s residents and the village a relationship of mutual gift has been established. On one side, Lorenza Sebasti and Marco Pallanti squeeze the (de)wine juice, caressing and stimulating the soil to do its mother’s duty, on the other side, with equal generosity and commitment, they give art the chance of rooting.

Ama’s history of art, which has its essential reference in taking care of vineyards and every single soil’s square, is given shape by the work of Michelangelo Pistoletto, Daniel Buren, Giulio Paolini, Kendell Geers, Anish Kapoor, Chen Zhen, Carlos Garaicoa, Nedko Solakov, Cristina Iglesias, Louise Bourgeois, Ilya and Emilia Kabakov, and Pascale Marthine Tayou

TERRA EARTH AIR ARIA ACQUA WATER FIRE FUOCO Radici d’arte contemporanea, installazioni che, di anno in anno, entrano in comunione con l’organismo complesso delle due ville settecentesche e con il vasto teatro delle colline, dialogando con il genius del Chianti. Non è difficile scorgere un legame simbolico tra le opere e il luogo e tra ognuna di esse.

L’albero di Ama di Pistoletto, un albero percorso all’interno da un gioco di specchi che amplifica e converte la luce sotterranea; il muro di finestre e di specchi di Buren a cui lo spettatore di Ama si avvicina, scrutando involontariamente i propri movimenti e liberando l’eccesso di ego nella contemplazione degli uliveti e dei vigneti sottostanti; l’opera di Paolini che in una stanza che affaccia su un grande terrazzo ha smontato la rabbia della pietra frantumata in schegge affilate sotto l’effetto di un nuovo, volontario caos.

Contemporary art roots, installations that, from one year to another, commune with the complex organism of the 18th century villas and the wide theatre set by the hills, dialoguing with the Chianti genius. It is not difficult to spot a symbolic relationship between the artworks and the place, and among the different artworks.

The tree of Ama by Pistoletto, a tree with an internal game of mirrors which amplifies and converts the underground lights; the Buren’s wall made of windows and mirrors, towards which the Ama spectator gets closer, involuntarily observing their own movements and freeing the ego excess in contemplating the olive groves and vineyards below; the work of Paolini, in a room which looks on a big terrace, he has disassembled the rage of stone shattered in splinters under the effect of a new, voluntary chaos.

E ancora la scritta al neon di Geers, dove le lettere cambiano alchemicamente posto; l’opera di Kapoor, un’ostia rosso sangue di pura luce, posta nel pavimento in ferro della chiesetta di Ama; le forme organiche di Chen Zhen che riflettono gli aspetti positivi e negativi del mondo che ci circonda: si tratta di trecento ex voto in cristallo, organi del corpo umano che fluttuano sulle teste dei visitatori.

Ma esiste, forse, una relazione più ellittica con il senso dell’opera che si svolge, giornalmente, ad Ama. È probabile che lo splendore del vino, la sua magnifica forza persuasiva e lenitiva, raccolta in un bicchiere e consumata in un breve atto di bellezza e di piacere, abbia bisogno di un confronto con la storia, di un gesto d’amore, destinato alla durata, a lasciare un segno nel tempo e per il tempo. Sta tutta qui, la decisione impegnativa di volere solo opere “in situ” e, di conseguenza, non trasportabili, non alienabili.

And more, the neon sign by Geers, where the letters change places alchemically; the work by Kapoor, a blood red host made of pure light, placed in the iron floor of the little church of Ama; the organic shapes by Chen Zhen, which reflect the positive and negative aspects of the world that surrounds us: three-hundred crystal ex voto, human organs which fluctuate over visitors’ heads.

But it exists, maybe, a more elliptical relationship with the meaning of the artwork carried out in Ama daily. It is possible that the wine splendour, its magnificent force, persuasive and soothing, poured in a glass and consumed in a short deed of beauty and pleasure, needs a confrontation with history, a love gesture bound to endure, to leave its sign through the time and for the time. That is all, the binding decision of wanting only “in situ” artworks, thus not transportable and not alienable.

White stretches which extends as far as eye can see, crystal waters and very ancient archaeological sites. This and much more offers Pamukkale, a unique place, with an unordinary charm that has bewitched anybody who has passed by since Ancient Greece.

Distese bianche a perdita d’occhio, acque cristalline, piscine termali e siti archeologici antichissimi. Tutto questo e molto altro ancora è Pamukkale, un luogo unico, dotato di un fascino fuori dal comune che ha stregato chiunque passasse di qui sin dai tempi della Grecia antica.

The so-called “Castle of Cotton” is in the Denizli province, South-East Turkey. Every year, it is the destination for millions of visitors who come here for walking surrounded by a fable landscape, with petrified castles whose white is so dazzling that many people compare it to the Perito Moreno glacier’s, in Patagonia. The architect of this marvel was not ice but the water of the thermal springs nearby.

Il cosiddetto “Castello di cotone” si trova nella provincia di Denizli, nella Turchia sudorientale ed è ogni anno meta di milioni di visitatori che vengono qui per passeggiare in un paesaggio fiabesco con castelli pietrificati di un bianco abbagliante che molti paragonano a quelli del ghiacciaio del Perito moreno, in Patagonia. A creare tutto questo non sono stati però i ghiacci, ma le acque delle vicine sorgenti termali.

Scorrendo direttamente dalle sorgenti a Pamukkale le acque cariche di sale calcareo nel corso dei millenni hanno continuato senza mai fermarsi lungo i bordi dell’altopiano creando una vera e propria foresta pietrificata fatta di stalattiti, cataratte e bacini tutti di un bianco abbagliante.

Le cascate sono lunghe quasi tre chilometri e sono alte poco meno di 200 metri, tanto da dominare il paesaggio circostante. Ogni secondo dalle sorgenti sgorgano oltre 450 litri di acqua a una temperatura compresa tra i 35 e i 100 gradi le cui proprietà curative sono conosciute e apprezzate fin dai tempi antichi.

Flowing down directly from the springs to Pamukkale, the water laden with calcareous salt has kept going along the borders of the upland for thousands of years, creating a true and authentic petrified forest made of stalactites, cataracts and pools, so white they blind.

The waterfalls are about three-kilometre long and are about 200 metre high, so they dominate the surrounding landscape. From the water springs, 450 litres of water flow every second. The water temperature ranges between 35° and 100° Celsius degrees and its properties have been known and appreciated since ancient times.

Entrare poi nelle vasche di travertino di Pamukkale è un’esperienza fuori dal comune, qui l’acqua è tanto limpida da fare invidia ai mari tropicali e il contrasto con il cielo terso di questa regione della Turchia fa si che passeggiando sulle loro sponde dia quasi la sensazione di camminare sulle nuvole.

Lo stacco dei colori chiari dei depositi calcarei e di gesso è magnifico con il turchese delle acque che formano bacini sovrapposti a più livelli, dove poter fare il bagno nelle calde acque fumanti.

The contrast between the light colours of limestone and gypsum sediments and the turquoise of the multi-level and overlapping pools, where you can bathe in the piping hot water, is magnificent.

Non è un caso, dunque, che l’Unesco abbia inserito Pamukkale tra i patrimoni dell’umanità già da diversi anni e che questo sia uno dei set preferiti dai fotografi di tutto il mondo che vogliono immortalare questo scenario grandioso.

SCOPRIRE ALTRI “TESORI” DISCOVER OTHER “TREASURES” Le vasche di travertino sono, ovviamente, la grande attrazione di Pamukkale, ma non crediate che da queste parti non ci sia altro da fare che passeggiare e ammirare il paesaggio.

Attorno alle cascate si sono organizzate nel corso degli anni tantissime attrazioni turistiche: centri termali, hotel, ristoranti sono tra i più rinomati di tutta la Turchia e ospitano in qualsiasi stagione tantissimi visitatori da ogni parte del mondo.

Immancabili anche i negozi dove è possibile scatenarsi nello shopping. L’area di Pamukkale come tutta la provincia di Denizli è famosa per il cotone e per gli oggetti per la casa. Molti dei tipici souvenir turchi vengono prodotti da queste parti e hanno prezzi molto convenienti.

Travertine pools are, obviously, the great attraction of Pamukkale, but here, walking and admiring the landscape are not the only two things to do.

Close to the waterfalls, many touristic attractions have developed over the years: spas, hotels, restaurants are among the most renowned of all Turkey and they host numerous visitors from every part of the world all year long.

Sure there are also shops where you can lose yourself to shopping. The area of Pamukkale, and the Denizli province entirely, is famous for cotton and house-ware. Many of the typical Turkish souvenirs are produced in the region and their prices are very cheap here.

A Pamukkale non ci sono però solo occasioni di relax. Tutti questi luoghi trasudano il fascino proprio solo di quei posti dove si è scritta la storia. Da non perdere è la visita all’antica città di Hierapolis.

Here in Pamukkale there are opportunities not just to relax. This place exudes the charm typical of the places where history was written. Not to be missed is a visit to the ancient city of Hierapolis.

Posto in cima alle vasche, il sito archeologico si sviluppa lungo l’antica via lunga un chilometro sulla quale si affacciano numerose colonne antiche ed il il Tempio di Apollo.

On top of the pools, the archaeological site develops along the old street one-kilometre long, on which numerous ancient columns and the Temple of Apollo appear.

Absolutely evocative is the theatre which is in a panoramic position overlooking the whole valley and the marvellous pools. Built nearby a hill, it might host 10 thousand spectators.

Assolutamente suggestivo è poi il teatro che si trova in una posizione panoramica che dà sull’intera vallata e sulle meravigliose vasche. Costruito a ridosso di una collina, poteva accogliere 10mila spettatori.

Nella parte nord di Hierapolis si trovano una grande e suggestiva necropoli con tombe ben conservate e un museo che custodisce alcuni preziosi ritrovamenti.

All’ingresso di Hierapolis è però possibile visitare quella che è forse la principale attrazione di tutta l’area archeologica, la famosa piscina di Cleopatra.

Si tratta di una vasca unica nel suo genere, dove è possibile fare un tuffo nelle calde acque termali tra resti archeologici oppure ammirarla dall’alto grazie ad una passerella panoramica.

Quando vi sarete riposati abbastanza nei caldi bagni termali di Pamukkale allora vi consigliamo di partire e raggiungere Efeso.

Le sue attrazioni sono davvero tantissime, prima tra tutte la biblioteca di Celso.

In the northern part of Hierapolis there are a large, suggestive and well-preserved necropolis and a museum that conserves several precious findings.

Un’avventura iniziata 15 anni fa, quando Claudio Tipa con la sorella Maria Iris decisero di realizzare un sogno legato alla terra, al vino e alla Toscana. L’azienda ColleMassari, di cui sono proprietari, ne è la concretizzazione.

Tre tenute diverse ma che condividono la stessa visione legata al terroir rispettato con un profondo senso d’appartenenza e ad uno spirito imprenditoriale dinamico e strategico.

La storia del Castello di ColleMassari, tra le province di Grosseto e Siena, inizia nel 1998. La collina Montecucco, che presta il nome alla denominazione, si trova all’interno dei 1200 ettari che compongono la tenuta.

Più recente l’acquisizione della Fattoria Poggio di Sotto, che gode di una posizione invidiabile nella DOCG del Brunello di Montalcino: i vigneti sono posti a diverse altitudini, ben illuminati e attraversati dal vento che risale dalla valle del fiume Orcia fino al Monte Amiata.

L’acquisto di Grattamacco nel 2002 fu un fatto del tutto casuale. Il precedente proprietario, un pioniere del Bolgheri, per cedere la proprietà a cui aveva dedicato tutto sé stesso dal 1977, cercava un personaggio che potesse garantirgli la continuazione della stessa filosofia di produzione.

Lo trovò in Claudio Tipa, e i risultati che ne sono conseguiti non hanno tradito il preesistente spirito aziendale.

The more recently acquired Fattoria Poggio di Sotto enjoys an enviable position in the DOCG area of Brunello di Montalcino: the vineyards are located at different altitudes, well exposed to the sun and crossed by the wind that rises from the valley of the Orcia river up to Monte Amiata.

The purchase of Grattamacco in 2002 came about completely by chance.

The previous owner, a pioneer of Bolgheri wine making, wanting to sell the property to which he had devoted his whole self since 1977, was looking for someone who would guarantee him the continuation of the same production philosophy. He found the right person in Claudio Tipa, and the results achieved have not betrayed the pre-existing spirit of the winery.

RISPETTO PER LA TERRA, AMORE PER IL VINO RESPECT FOR EARTH, LOVE FOR WINE

Nella cantina Grattamacco siamo a 100 metri sul livello del mare, tra Castagneto Carducci e Bolgheri, in una zona particolarmente vocata - dato il clima asciutto e mite e le notevoli escursioni termiche - alla produzione di corposi vini rossi. In Grattamacco cellar we are located at 100 m asl, between Castagneto Carducci and Bolgheri, in an area particularly suitable - given the dry and mild climate and the considerable temperature fluctuations – for the production of full-bodied red wines. Of the estate’s 35 hectares of land, 14 are cultivated according to organic farming principles with Sangiovese, Cabernet Sauvignon and Merlot certified since 1998.

E ancora, conoscere da vicino tutti gli animali di fattoria e quelli dei grandi allevamenti, imparare come si fa il pane, come si innesta una rosa, come si raccoglie il miele o come si munge, e tanto altro.

IL RITORNO DI UNA RAZZA ANTICA: IL BOVINO PONTREMOLESE RECOVERING AN ANCIENT BREED: THE PONTREMOLESE COW Verdi foreste incontaminate, ruscelli, torrenti e fiumi che scendono rapidi verso valle, rocche, castelli e pievi ricche di storia, un popolo ospitale e fiero delle proprie tradizioni. Questo e molto altro ancora è la Lunigiana, un vero e proprio scrigno di tesori ambientalistici e culturali al confine tra Toscana, Liguria ed Emilia Romagna.

Stretta tra le Alpi Apuane e l’Appennino Tosco-emiliano, questa è sempre stata una terra di passaggio e di scambio tra popolazioni e i segni di questa lunga storia si possono trovare ancora oggi nella varietà della cucina lunigianese, dei suoi prodotti e delle abitudini dei suoi abitanti Green and uncontaminated forests; streams, brooks and rivers which rapidly flow down towards the valley; strongholds and parish churches full of history; welcoming people who are proud of their traditions. Close between the Apuan Alps and the Tuscan Apennines, this area has always been a transit and exchange land for peoples and the signs of this long history may be still found in the varieties of the Lunigiana cooking, its products and the habits of its inhabitants.

Proprio questa ricchezza ambientale, ma soprattutto storica ed economica ha fatto sì che la Lunigiana fosse inserita assieme alle Province Costiere della Toscana, alla Sardegna e alla Corsica nel Programma Operativo di Cooperazione Transfrontaliera Italia - Francia Marittimo con il Progetto denominato “Vagal+” (Valorizzazione del Germoplasma Animale Locale ).

Obiettivo del progetto è quello salvaguardare le razze autoctone (il bovino pontremolese, il suino macchiaiolo maremmano, le pecore Amiatina e Garfagnina bianca, il cavallo di Monterufoli, l’asina dell’Amiata) coniugando azioni di valorizzazione, commercializzazione e sicurezza alimentare dei prodotti nel rispetto della sostenibilità ambientale e favorendo l’aggregazione delle Piccole e Medie Imprese.

Il bovino pontremolese appartiene ad una razza molto antica, utilizzata fino al secolo scorso anche in tutta la zona di Carrara per il trasporto a valle dei grandi blocchi di marmo, ma che dal secondo dopo guerra in poi è divenuta estremamente rara.

Ad oggi, addirittura, è tra i vari bovini italiani quello di cui si contano il minor numero di esemplari.

Basti pensare che verso il 1940 il numero dei capi si aggirava attorno ai 15mila per passare nel 1960 a 5700 fino a giungere al definitivo tracollo della popolazione, 13 capi censiti nel 1983, per poi attestarsi agli attuali 45 capi.

E’ così successo che questa razza che oltre che con il suo latte e la sua carne anche con la sua fatica è stata per secoli una compagna insostituibile per gli abitanti di questa zona stesse quasi scomparendo.

It is this environmental, but also historical and economical, richness that has made it possible for Lunigiana to be included, together with Tuscany Coast area, Sardinia and Corsica in the The Operational Programme for the Cooperazione Transfrontaliera Italia (Transborder Cooperation Italy) - Maritime France, with the project called “Vagal +” (local animal germplasm developement).

The aim of the project is to safeguard native breeds (the Pontremoli bovine, the Macchiaiolo Maremmano pig, the Amiatina and white Garfagnina sheep, the Monterufoli horse and the Amiata donkey), by combining food promotion, commercialisation and safety with environmental sustainability and supporting the aggregation of small and medium companies (PMI).

This is a very ancient breed which was used in the Carrara area for the transportation of marble blocks down to valley until last century, but it has become increasingly rare since the end of WW2. Today, it is the one with the smaller number of specimens among Italian cow breeds.

It suffices to think that, in 1940, there were 15 thousand specimens, in the 1960 there were 5700, to arrive at the final cliff in the population number in 1983, 13 specimens. Now there are 45 animals.

It happened that this breed was on the verge of disappearing, despite its milk, meat and labour being irreplaceable companions to the inhabitants of the area for centuries.

TRA PASCOLI E SENTIERI BETWEEN GRAZING LANDS AND MOUNTAIN TRAILS

Nel 2011 il bovino pontremolese è tornato, dopo 40 anni di assenza, a pascolare in Lunigiana: L’Unione di Comuni Montana Lunigiana ha recuperato, grazie all’intervento della Regione Toscana, un nucleo di animali supersistiti nella vicina Garfagnana. Oggi i capi sono tutti ospitati nel Centro Pilota Azienda Agricola di Tonelli Matteo, San Terenzo Monti , Fivizzano (MS).

In 2011, the Pontremolese cow came back to pasture in Lunigiana, after 40 years of absence, thanks to a project of the Unione di Comuni Montana of the Lunigiana which recovered, with the help of Regione Toscana, some survived animals in the close region of Garfagnana. Today, the animals are hosted in the Centro Pilota Azienda Agricola of Tonelli Matteo, in San Terenzo Monti, Fivizzano (MS).

La professionalità e l’impegno del Centro Pilota stanno facendo perseguire importanti risultati: aumento della popolazione femminile, riduzione dell’incrocio con altre razze e della parentela tra gli individui allevati e, di fondamentale importanza, la riduzione dell’intervallo generazionale.

Thanks to the professionalism and the commitment of the Centro Pilota, important results have been pursued: locating and increasing of the female population, the reduction of crossbreeds and the relationships among breed animals and, what is fundamental, the reduction of the generation gap.

PAESAGGI INCONTAMINATI Ma visitare la Lunigiana significa anche ammirare le bellezze circostanti. Queste terre sono ancora oggi fuori dai grandi circuiti del turismo internazionale, ma sono comunque in grado di offrire emozioni che non temono rivali.

La Lunigiana è una terra ricchissima sotto ogni punto di vista: ambientale, storico, culturale e le cose da fare sono davvero tantissime. Per gli amanti della vita all’aria aperta sono centinaia i sentieri che si possono percorrere a piedi, a cavallo o in bici che risalgono montagne e colline sempre immerse in paesaggi da cartolina. Per chi invece vuole fare un passo indietro nel tempo è possibile ripercorrere l’antica via Francigena, la strada dei pellegrini che portava dalla Francia direttamente a Roma, oppure fermarsi a visitare uno degli oltre 20 castelli e rocche sparsi per queste vallate.

Ristorante Arnolfo Arnolfo Restaurant Una ricetta A 4 stars a 4 stelle recipe «I miei piatti nascono sempre in un book, come fossero disegni d’architettura», racconta lo chef Gaetano Trovato. Come poteva chiamare, allora, il suo ristorante, dato che sorge a due passi dalla casa natale di Arnolfo di Cambio, il celebre architetto e scultore toscano? Arnolfo, naturalmente, e con grande orgoglio.

“My dishes are always born in a book, as if they were architectural drawings,” says the chef Gaetano Trovato. How could he call it, then, his restaurant, as it lies a stone’s throw from the birthplace of Arnolfo di Cambio, the famous Tuscan architect and sculptor? Arnolfo, of course, and with great pride.

Il locale, ricavato in un edificio del Cinquecento nel centro storico di Colle Val d’Elsa e affacciato sul dolce mare immoto delle colline senesi del Chianti, è stato ristrutturato di recente con l’aristocratica semplicità dell’architettura arnolfiana, densa di spazialità antica ed elementi moderni.

The restaurant, housed in a sixteenth century building in the historic center of Colle Val d’Elsa, overlooking the sea motionless sweet Sienese hills of Chianti, has been recently renovated with the noble simplicity of Arnolfo, full of ancient and spatiality modern elements.

«Il ristorante – racconta Gaetano - è nato nel 1982.

Mia madre Concetta e le mie sorelle proponevano una cucina casalinga con una grande attenzione alle materie prime. Io e mio fratello Giovanni, che oggi è sommelier e direttore di sala, l’abbiamo rilevato alla metà degli anni Ottanta, cambiandone radicalmente la filosofia». Scelta vincente. A 26 anni, nell’ 87, riceve la sua prima stella Michelin. E nel 2000 la seconda confermata anche quest’anno da ben 14 anni.

«La mia filosofia è l’evoluzione della tradizione, vista oggi con i prodotti del territorio». Una classicità moderna, che forse gli deriva dal Rinascimento toscano in cui è immerso. A Gaetano piace scovare sempre nuove idee, ma anche nuovi produttori e nuove realtà gastronomiche.

«La cucina del territorio è un tesoro immenso da conservare, restaurare e rilanciare, come si fa coi monumenti, riproponendone il gusto, ma rendendola più fresca e leggera, più adatta ai giorni nostri».

500 gr. Fegato d’oca fresco 6 Scampi grossi sgusciati.

400 gr. di purè di Frutto della passione 50gr. di Glucosio 2 gr. di gelatina vegetale 10 gr di Ginger Brandy olio extra vergine di oliva, fior di sale 20 gr. di uova di Salmone

500 gr. fresh goose Liver 6 large shelled lobsters.

400 gr. Passion fruit puree 50 gr. Glucose 2 gr. of gelatin plant 10 g Ginger Brandy extra virgin olive oil, flower of salt 20 gr. of salmon roe

PREPARAZIONE: Tagliate il fegato d’oca in 4 fette uguali di circa 60 gr. cadauna.

PREPARATION: Cut the foie gras into 4 equal pieces of about 60 gr. each.

Pulite dalle vene il fegato che resta, marinatelo con un po’ di Brandy e sale, adagiatelo su una pellicola e chiudete con un foglio di alluminio a forma di cilindro cocete a 70 gradi per 35 minuti , lasciate raffreddare nel frattempo marinate 2 scampi con il succo del ginger, sale e olio extra vergine di oliva, tagliate il fegato alto circa 1 cm., adagiate sopra gli scampi marinati e guarnite con le uova di Salmone.

Per la salsa Unite la gelatina vegetale a 200 gr. di purè di frutto della passione guarnite con dei semi.

Dorate le scaloppe 1 minuto per lato, togliete dal fuoco e mantenete in caldo, in un’altra padella con un filo d’olio extra vergine di oliva dorate gli scampi per 1 minuto, sistemate le scaloppe di fegato d’oca dove sopra ad ogni una mettete uno scampo, condite con fior di sale.
