he belief that you have to kill yourself to be fit is still alive and well. At our studio, we believe that clients can achieve their fitness goals in a calm supportive way that will give lasting results. We offer Pilates and yoga training as an alternative to traditional training. We believe that exercise should be done in a mindful way. We teach our students to slow down and breathe as a way to connect to their bodies and minds. Research shows that when people discover a more mindful way of moving that it translates into other areas of their lives. Self care and self love become a priority and the punishing thoughts begin to calm down, making life more enjoyable.

From Washington Avenue bordering on the North and Forest Park Parkway on the south, the Euclid Avenue strip offers shoppers, diners, gallery viewers, and wine enthusiasts a bit of everything in one diverse neighborhood.

If you’re a shopper, you’ll be drawn to the unique shopping experience that the Central West End has to offer. In fact, the centrally located Central West End is a first-class shopping destination for shoppers and also offers one of the largest selections of independently owned business. The Central West End restaurants offer delicious, unique cuisine in a bustling outdoor scene or a quieter, intimate dining room setting. A few of my favorite restaurants are Bar Italia, The Tenderloin Room at The Chase Park Plaza, Tom’s Bar & Grill, Liluma, Kopperman’s Specialty & Deli, and Eau Café and Bistro.

Forest Park lends helps to create the New York City mindset of the Central West End. Presenting a closer look at those wizards behind the kitchen curtain. Their culinary artistry makes it so worth while to go out to dinner in St. Louis.

o wonder Bistro 1130 is rated the sexiest French restaurant in town. Featuring French and Mediterranean cuisine from all over the south of France, the restaurant has at its Gallic heart, a true French Chef - Karim Bouzammour.

Karim (36) was born in multi cultured Tangier, Morocco on the North African Mediterranean coast. His early life was filled with the flavors and aromas of that exotic region. Hours spent in his mother’s kitchen helped him on the road to his eventual culinary career. Those past experiences are reflected in Bistro 1130’s cuisine, which offers such distinct flavors and ingredients as citrus, herbs, lavender, lemon, basil, and olives. Karim said, “I grew up with spices and herbs. My mother was the chef in our family and her family recipes remain with me today. They inspired my love of food.” Later he obtained classical training in French cooking, honing his craft in the Mediterranean kitchens of Marseille, and the Provence region of southwest France. Karim immigrated to the US in 1999, and proceeded to work in the Greenville, SC area. His specialty was the re-opening of French, American and Mediterranean restaurants. “I would take over a restaurant having problems and completely revamp it,” said Karim.

Karim left Hilton Head, South Carolina, and came to St. Louis in August 2010. Here he joined his friends Eric and Mikki Jones Miranne to open Bistro 1130. Karim owes his present success to their old friendship. He had previously worked with Eric in France, and they complement each other very well. Together, Chef Karim, General Manager Eric, and Owner Mikki work as a team creating new dishes. The trio is the reason behind Bistro 1130’s success.

“We prep together, and every dish is designed and prepared by us.

It’s not just work, it’s a seamless art form. Eric, Mikki and I come up with all the dishes ourselves. We understand each other very well, and use the same cooking techniques.”

Attention to detail abounds throughout Bistro 1130, especially in the kitchen, where every delectable dish is superbly presented. Karim said, “All of our dishes have a distinctive signature, each has its own character. I don’t have a favorite – they are all my favorites.”

Karim has lived in the St. Louis area for ten years. Married with two children, he enjoys traveling and fishing when not creating cuisine fantastique.

on Lowe of Oceano Bistro, was born and raised in Central Kentucky. Since the age of eleven he began working toward his goal of becoming an Executive Chef. After graduating from Johnson & Wales University in 1998, Jon accepted a Sous Chef position at a nearby catering company in Charleston, South Carolina. Vanna White and Bill Murray were a few of the celebrities he entertained. While at the Charleston Grill, he experimented with what the locals call “low country cooking” and blended it with French influences. In 2000, Jon moved to Memphis to open a Mediterranean concept for a restaurant near Kansas City, MO. Eventually he was transferred to St. Louis and has been with Oceano Bistro since early 2007.

Upscale comfort food style describes Jon’s cuisine specialty. He focuses on creating seafood dishes. “OB is St. Louis' premiere fresh fish bistro. Our chefs are in partnership with fisherman, farmers and food artisans who bring to the St. Louis area what is enjoyed by people who live on the coasts. We then pair it with innovative and enticing fresh local produce.”

Jon continued, “The OB menu is a little more upscale than the food we would traditionally prepare down South. I try and take the best of both worlds and mash them together by preparing a higher quality center of the plate with a southern garnish. I may use a lighter southern style starch and sauce to compliment the protein portion of the dish.”

Jon spends a lot of his work time in the back of the restaurant.

“Most people don't even know I'm here until we get busy. Then they can hear my voice calling tickets.”

Jon (32) and his wife Nicole live in O’Fallon, MO and have a four month old daughter named Savannah. To the question what does a chef do on days off, Lowe replied, “I usually make comfort food or fire up the grill. It doesn't matter what time of the year it is, the grill is just another appliance to me. Most of the time I cook whatever catches my eye at the market.” Aside from cooking at home, Jon enjoys golf, working out at the gym, home beer brewing, collecting DVD's, spending time with his family, and watching the Cardinals play.

ohn Stuhlman (36) brings over twenty years of restaurant experience to Eclipse Restaurant in the Moonrise Hotel on Delmar. An exceptional self-made man, John is a Florissant native, where he started his career while in high school, scrubbing pots and pans at a neighborhood “mom and pop” Italian establishment. There, he rose through the ranks while building firm ground for his future career. “I just seemed to fall into this field that I now love,” said John. His resume is highlighted by a year spent cooking in one of New Orleans finest restaurants, the Palace Cafe. It was there that John finally realized his vocation.

He then returned home to St. Louis, resolved on remaining in the culinary business for life.

John spent over seven years in the kitchens of St. Louis’ exclusive private country clubs, and was the executive chef of two successful restaurants. He also worked as Executive Chef at Pietro’s in Fenton; and most recently at Jefferson Grill in Kirkwood. John was their original chef and created the menu. Other former jobs included KC Masterpiece and Trailhead Brewing Company. He even improved his skills by taking a basic chef course at Forest Park Community College.

Now twenty years later, John is excited to bring what he has learned over the years to his new home at Eclipse. Just after six months, John has become the man behind Eclipse’s creative cosmic cuisine. As Chef de Cuisine, he develops menus, but still works the kitchen. John said, “I love the environment – we’re a team and work on menu ideas as a group. There’s good communication here.” John, along with his culinary team at Eclipse, offers menus with exciting new flavors and updated preparations of classic American cuisine. “I especially love cooking seafood dishes and building plates with lots of color to them. To say I cook with a lot veggies would be an understatement.”

He lives an active life in University City. “I love the outdoors, you name it - hiking, kayaking, biking, and fishing. Obviously, I do love food and cooking, but baseball is in my blood as well. I’m a big Cardinals fan. I’m fortunate doing what I love. To think it all started as a high school job.”

aya Café in the heart of Maplewood's arts district offers a unique south-of-the-border menu. Its popular Pan-Latin cuisine can be credited to the talents of Chef Rafael Hurtado.

Rafael’s dishes have been inspired by a variety of Latin influences from Spain, Central, and South American Countries to name just a few. “I’ve been told that Pan-Latin means we cook much of our food in a pan.” said Rafael.

Rafael comes from a rather large family. “My grandmother had ten kids who spread out all over the country; Veracruz, Durango, Oaxaca, and other regions of Mexico. I am from Puebla. My grandmother was always the cook at family gatherings, and at the age of six, I began as her kitchen helper. She had a great influence on me and helped me develop my love for cooking.”

The variety of foods and cooking styles at those reunions sparked his desire to become a chef.

Rafael’s holds an interest in both the culinary and crea tive arts.

“Since I was young I have loved cooking and all kinds of art. I always wanted to combine them both to make creative dishes.

At age 18, I decided to study gastronomy at UPAEP, a major university in my hometown of Puebla, Mexico. That was when I began my career in Latin restaurants.”

Rafael reflected on his favorite creations. “I like to create cuisine using classic Latin dishes giving them my own contemporary and unique touch. Specifically, I enjoy making and experimenting with mole. I consider Mole poblano to be the best type of mole. Its origin is from my home region in Mexico.”

Rafael is 25 years old and single. “I like to read, draw, and paint in my free time… anything that has to do with art and allows creativity.” Rafael has been cooking and working in restaurants for five years and has been at Maya Café for the last seven months.

ong before The Jersey Boys/Four Seasons made their claim to fame, a set of four violin concertos, The Four Seasons, was composed in 1723 by Antonio Vivaldi. Perhaps Vivaldi’s best-known work, it remains among the world’s most popular pieces of Baroque music. Just as the musical texture of each Vivaldi concerto is varied, resembling its respective season, so is our spotlighted restaurant’s varied menus. Each Vivaldi movement has its own special notes, each different, as are the menus at Seasons American Cuisine.

Opened with rave diner reviews in mid November of 2010, Seasons is now well on its way to becoming a go-to destination restaurant in Chesterfield. Not surprisingly, it seems to have a growing fan club. Simply put, Seasons offers creative American cuisine created from local sources in each of the four seasons. With its definite American comfort food accent, Seasons combines excellent service with fine dining in a casual setting at reasonable prices. Its eclectic menus include everything from homemade soups to fresh seafood, steaks and specialty raviolis, along with delicious side dishes of the freshest in season vegetables.

The Executive Chef, and justly proud owner, is Kevin Smith. Smith’s culinary resume is a long one, culminating in the last twelve years 34

as Executive Chef of Greenbriar Hills Country Club in Kirkwood.

At Greenbriar, Smith honed his talents by hosting numerous chef 's dinners, club manager's dinners, and gourmet wine dinners. Now, with a dream fulfilled, Chef Smith said of his new restaurant, “Our focus is on using only the best available ingredients in each of the four seasons. We incorporate only locally sourced products from surrounding markets.”

The restaurant’s ambience is both comfortable and casual, as is the dress code. Diners can simply drop in, sit back and relax at the bar, or grab a table. The full sit-down bar and dining room offer seating for about 65 guests. Seasons also has a knowledgeable and affable staff. The servers truly know the menus, so any questions are always promptly answered. Just as the seasons of the year change, so do the menus. In order to help with dishy decisions, samples of that particular season are served gratis, just to give a taste of what’s to come. (For example, a recent sample included risotto with bay scallops.) Regular diners at Seasons are impressed with how much the staff obviously cares about their customers, and makes them feel so welcomed. Most importantly, Chef Smith always manages to personally greet his guests during the course of each evening.

For starters – some particularly delicious appetizers are Shrimp Tempura served with raspberry dipping sauce. Fantastic ravioli are filled with cabernet braised beef short rib, topped with crispy parsnip chips. Of all the delicious items on the Seasons menu,

customers especially love the soups, like Kansas City Steak, New England Clam Chowder, and the most favorite Baked Five Onion made up from a variety of roasted onions, shallots, garlic and leeks, served in a dry sherry beef broth, and topped with a garlic crouton and melted gruyere cheese. Of course, there’s always a basket of freshly baked bread on each table – a warm variety of olive loaf, wheat bread, corn bread and rolls.

Diners are then allowed to mix it up a bit from a diverse dinner menu such as fresh seafood, various beef, pork and chicken selections, all complemented by delicious sides. Be sure to try the grilled double cut pork loin chops.

Another dining favorite, Chicken Modiga, lightly pounded chicken breast with Italian bread crumbs, melted mozzarella cheese in a chardonnay, lemon, garlic sauce, is served with roasted potatoes and carrots. We urge you to try the Braised Short Rib with egg noodles. Saturday night featured specials include roast prime rib of beef, and every Sunday night, southern fried chicken with mashed potatoes and country milk gravy are offered.

Designer Kitchens Home is Where the Hearth Is

treamlined sinks whoosh unwanted vegetable stems down the sink with the push of a button. Ovens with built-in screens guide the hesitant chef with pictures and directions on how to prepare lasagna. Fireplaces seemingly float mid-air without a mantle or hearth. No, these are not appliances from the set of The Jetsons movie, these are just a few of the amazing options available when designing kitchens these days.

It used to be we tried keep guests out of the kitchen. Now, like it or not, they tend to linger there and that room you couldn't usher people out of fast enough has become the entertainment, information and relaxation epicenter of the home. "The flow of the kitchen has always been the heartbeat of the house" says Diane Rosen, of Diane Rosen Interiors.

Today's kitchens are designed to be "adaptable for entertaining." To accomplish that feat, designers are getting away from boxy kitchens.

"You're taking the walls down and opening it up to the greater room area or hearth room." The result is a modernized space, that flows seamlessly with the rest of the house.

Pamela Calvert of Savvy Surroundings has designed homes for clients across the country and even across the globe in China. Knowing how much time is spent in the kitchen, she incorporates artistic elements to give the room a greater feel of a living space and less like one that functions under the umbrella of appliances. One way she achieves this is by "making the pantry be a piece of art." By adding legs and accents to custom built-ins she adds flair and personality into what could otherwise be strictly functional. "It's like a piece of furniture that is artful." Another method she employs to add ambiance and warmth is to introduce a fireplace in those kitchens without a hearth room. Fireplaces can be placed midway up a wall or stand alone and act as a piece of living art.

When possible, she will incorporate a separate seating area in the kitchen where you can relax or play a game. This makes the room more inviting, yet still retains its functionality. Quick bites can be had at the island, but there's nothing like sitting down to a table together to teach your kids manners and the art of conversation. Throughout her designs she consistently uses a variety of textures to enhance the

look. Stone, rough-hewn wood, glass, stainless accents, bamboo, and polished marble are just some of the many kitchen surface choices that can be blended to add more interest. But as Calvert cautions "there's a fine line and you have to balance that out."

This expanded variety of surface choices allows designers to truly individualize the kitchen. Rosen loves the flexibility of some of the new materials. Countertops made from concrete or recycled glass "are great fun because, seriously, you can make it whatever you want." She also finds "stone tiles and ceramics make it really interesting to put in individual patterns and customize it to the person or the client." The specialized individuality is really what makes it a "designer kitchen."

To create that unique kitchen, Rosen "starts from the basics, and application of need" as she does with any room. This prescribed function was never more present than in one of her first kitchen designs.

The kitchen was created for a gourmet cook who loved to entertain but Rosen had to contend with unusual constraints. The client was wheelchair bound and the kitchen limited to a ten by ten space. As a result, counter heights were adjusted so she could sit and chop while she visited with her guests, and custom cabinetry was installed to house all her gourmet kitchen "toys". Because of immoveable brick walls Rosen was unable to expand the space to embrace the outdoors as she would have liked. Instead, she "was able to go up and create a nice skylight with 30 degree angles giving it a great depth perspective". The end result was a personalized space that accommodated the client's needs and limitations and allowed her to simultaneously entertain, cook, sit and enjoy the outdoors.

Rosen often sees kitchens designed to bring the outdoors in so they "open up to the patio and or the lanai." Some clients even create their own indoor greenery. One of Rosen's current clients, who used to have a window box atrium for her herbs, will soon have a dedicated space with solar panels that generate energy efficient heat and allow her to work on her tarragon indoors. Another way to integrate the outdoors is by incorporating eco-friendly materials. Utilized extensively, especially in kitchens, these resources come in a variety of surfaces and textures.

Rapidly renewable bamboo is now used in flooring, butcher block counter tops, cabinetry and even clothing. Counters and back splashes employ recycled glass and plastics. Look for wheat board, a recycled, tough and sturdy, natural material to be widely used in cabinetry.

The biggest advances continue to be in the appliances themselves.These workhorses have gone high-tech with aerodynamic lines, and built in TVs. House Beautiful's 2010 Kitchen of the Year features a faucetless sink which gives a clean uninterrupted line across the counter and flushes food down the drain with the press of a button. Aero burners, available next year, have a retractable cooktop (ideal for cleaning) and a sparkless ignition and instantaneous flame. Siemens' multimedia ventilation hood features a 17-inch LCD screen with selections for watching television and DVDs or listening to music. Refrigerators come with built-in TVs and advanced options like ExpressChill, which cools drinks in minutes, ExpressThaw, which thaws meats in hours, and humidity control. In an effort to "get the oven out of the way" Rosen explains, "warming ovens are really coming back strong.

They sit real snug underneath the cabinet and allow you to slip in a platter or a tray."

Mark says, “We have definitely seen an increase in the sale of decorative Romanstone paving stones for pool applications. Consumers are looking well beyond the basic four foot concrete apron most pool installers include with the basic pool package. Romanstone pavers and other natural stone pavers can often satisfy several design concerns. Paving stones are commonly made with white cement to produce lighter colors to reduce heat gain with afternoon sun. They also have a more natural size and scale when compared to slabs of concrete which creates a more friendly atmosphere. One aspect that is not often considered up front with paving stones is the ability to pull up pavers when necessary to make necessary repairs to pool equipment. After the repairs are made, you simply

replace the pavers. No sign of a patch will be visible like there is with poured or stamped concrete. The installation of paving stones doesn’t have to be limited to new construction. Planning a trip to the Caribbean? Where exactly is it, anyway?

Is it one country or several? Who flies there from St. Louis?

Where is the best place to scuba? Which is the most romantic location?

Who has the best weather? Does everyone speak English?

Welcome to Caribbean 101. If you would like to experience sandy beaches, swaying palm trees, warm, sapphire blue water, whether by boat or plane, then look no further than the Caribbean Islands.

Supposedly, the Caribbean was originally a portion of land that was a connecting bridge between North and South America but ultimately sank into the ocean. The islands are merely the tops of mountains, some coral formations and some that perhaps are the remains of the lost city of Atlantis.

The West Indies were misnamed by Christopher Columbus in1492, This was not his fault as he couldn't very well ask for directions, however, he thought he was west of the The name of the Caribbean Sea comes from the Carib people coast of India. Tiny islands of all sizes and shapes abound who inhabited the area when Spanish explorers arrived in the area, however the main ones are the Windward and there in the 15th century, thus the islands and coast line Leeward Islands, aptly named due to the directions of the areas in that beautiful body of water are all considered "the trade winds. The Windward Islands include Dominica, Caribbean". The northwest top of the sea is at the Gulf of Mexico so we count Cancun, the Riviera Maya and Cozumel Grenada, Martinique, Saint Lucia and Saint Vincent and in the Yucatan peninsula, the Bahamas off the east coast of the Grenadines. The Bahamas are a favorite of cruise ships and tourists because of the close proximity to the Mainland (Florida). Three and four day cruises out of Ft. Lauderdale and Miami can easily stop in Nassau or a privately owned island and allow passengers to experience a day of sands, gardens and shopping, open markets, and museums., Paradise Island with casinos and a variety of fantastic resorts and properties.

Bermuda is approximately 675 miles southeast from Nags Head, North Carolina and is not considered part of the Caribbean as it sits in the Atlantic Ocean and not the Caribbean Sea.. Bermuda is British and yes, the police do actually wear the shorts and look much better than your grandfather probably did when he mowed the lawn.

Cuba is a part of the Caribbean but travel there is complicated due to government relations.

You need a passport to go anywhere in the Caribbean except Puerto Rico and the U. S. Virgin Islands, which include St. Thomas, St. John and St. Croix. These are a favorites of cruise ships because they are "America's Caribbean" and have dutyfree luxury goods, speak flawless English and accept American dollars. St. Croix is the largest of the three and sporty, with great scuba diving and hiking and kayaking. St. Thomas is sophisticated with imported perfumes, crystal, watches and other fine items which you can purchase without having to pay duty and there are no sales tax! St. John is the smallest at only 20 square miles and 9,485 acres of national park, with more than 800 plant species growing on hilly tropical forests.

Fish Market at Georgetown

The British Virgin Islands is a group of 50 islands, 16 which are inhabited, and which lie east of Puerto Rico between the Atlantic and Caribbean Sea. The most famous are Tortola and Virgin Gorda. Most of the islands are mountainous and green and have white sandy beaches.

Caribbean from the Cayman's

The Grand Caymans are located only 480 miles south of Miami and have 500 international banks including most of the top 50 in the world! Even though there are plenty of tourist attractions, you can fine peace and quiet on some of the smaller islands. By the way, Grand Cayman offers great scuba. Divers love the Great Wall just off North Cayman and the Bloody Bay Wall on Little Cayman.

We are blessed in St Louis by having Apple Vacations and Funjet who offer charters to the Caribbean. These are non-stop flights to Jamaica, Punta Cana (Dominican Republic) and Cancun/Riviera Maya and now, brand new, leaving on Fridays, starting May 6, Apple offers non-stop flights to Guanacaste, Costa Rica. If you don't take a charter, you need to take regularly scheduled airlines, which might be better times, but are connections and take up valuable beach time. Apple and Funjet also have the advantage of setting their own prices based on availability and their agreements with resorts.

Travelers love all-inclusive resorts. One prepaid price covers all food and drink at a great choice of restaurants and eateries on site and you don't have to pay gratuities.

Imagine yourself on the beach and your waiter offering you a Mai Tai without having to grab your wallet or purse.

Eat and drink to your tummy's delight. You have already paid for it. You don't have to pay for the glass bottom boat, for the fine dining restaurant or the buffet at lunch or the poolside drinks and tacos. Use the swim up bar freely. Compare this to the cruise where you can eat all you want but are hit with that soda/bar bill upon debarking or having to tip the steward and maitre' d. Ouch.

Cruises sail either the Western or Easter Caribbean and vary in size, amenities, luxury, ports, itineraries and days at sea.

PARTIES IN THE PARK MOVES TO DOWNTOWN CLAYTON

2011 Season of the Original Outdoor Happy Hour Held on Meramec Ave. The region’s original outdoor happy hour, Parties in the Park, hosted by the Clayton Chamber of Commerce, is moving out of Shaw Park and onto the streets of downtown Clayton.

In its 28th season of live music, cold drinks, and meeting up with friends old and new, Parties in the Park is now “Parties in the Park in Downtown Clayton.” Meramec Avenue, between Forsyth Boulevard and Maryland Avenue, will be THE place to be after work this summer, and best of all, admission to one of the city’s most familiar and eagerly anticipated parties in town is free and open to the public. The revamped Parties in the Park in Downtown Clayton 2011 season kicks off Wednesday, May 11 from 5 to 8:30 p.m., a half hour longer than years past, and continues on the second Wednesday of the month through September. With live music and a DJ soon to be announced, the Clayton Chamber of Commerce hopes to stimulate the retail and restaurant business in Clayton by moving the party closer to the business district. The move also falls in line with the city of Clayton’s master plan to have more events on the streets.

“We really wanted do something new this year,” said Ellen Gale, executive director of the Clayton Chamber of Commerce. “We are so excited to bring this Clayton tradition to the heart of the City. We know it will bring a new sense of fun and vibrancy to the scene and will stimulate economic growth for the restaurants and retail businesses.”

The move also creates more opportunities for sponsors and more room for food vendors, which in turn creates a fun, lively atmosphere for Clayton professionals and residents.

“We joked that people think Parties in the Park is in downtown anyway, so why not make it true?” said Brent Stevens, president and longtime volunteer of Parties in the Park. The new setting will include a stage for live music, lounge furniture, lush tropical plants, tented tables, cold beer, and delicious edibles from local restaurants.This summer, catch up with friends old and new at the longest running outdoor happy hour. And come early each month for the best drink special in town: half-priced beer from 5 to 5:30 p.m.

Whether looking to mingle with friends and colleagues, meet new people or just relax after a hard day’s work with an ice-cold beer, you won’t want to miss the new Parties in the Park in Downtown Clayton.
