my Katsikas, MSN, ACNS-BC, founder and owner of Pure 111 Medical Aesthetics in O'Fallon, Ill., has an extensive career in many facets of medicine including neurosurgery, ENT, plastic surgery, and head and neck cancer. "I was the receptionist, injector, scheduler, janitor and did my own ordering...all in one room but I loved every second of it. They credit word of mouth for their early success. "Our clients were our billboard and they sent in their friends and family," she said. Today, Pure 111 has grown to a team of seven including three nurse injectors, a medical aesthetician and certified laser tech, two patient care coordinators and a marketing director. They are located on the fifth floor of the 1818 Chophouse building. "The field of non-invasive medical aesthetics allows individuals to feel better about themselves. The truth is... aesthetics is for everyone, real people of all ages, genders and ethnicities," Katsikas said. "We see firsthand the influence these treatments have on instilling confidence and raising the self esteem in our clients. A major life stressor

For Your Health: Welcome spring with healthier comfort foods By Dr. Graham A. Colditz, Siteman Cancer Center

A

bright spot for many last year was the opportunity to hone cooking skills. This may have been more from necessity than any real desire to be the next José Andrés or Rachael Ray. Still, reluctantly or not, some have joined the ranks of friends and family who already enjoyed cooking; learning how to double recipes, not burn the garlic and quickly convert teaspoons to tablespoons. While there’s no doubt folks missed supporting their favorite restaurants like before the pandemic, cooking at home has allowed some to explore a range of dishes they might not otherwise prepare, and to bring a personal touch to them. And with a wee bit of early spring chill still in the air, it’s likely that many home cooks have continued to turn to some of the hearty, flavorful favorites that helped people get through a very long winter. These may include classic “comfort” foods like chili, casseroles, meatloaf and dumplings, but can really be any of the dishes enjoyed on a cold night. As comforting as they may feel, though, these types of foods typically aren’t the healthiest choices. Red meat, cheese, full-fat dairy and refined grains can often be key ingredients. Happily, it turns out, it’s pretty easy to liven up these dishes for spring, making them healthier while keeping the qualities that are loved about them. “I like to add ingredients that make these dishes more nutrient-dense, which often results in a lighter version overall,” said Lauren Gallen, a registered dietitian at Siteman Cancer Center in St. Louis. “Amp up the produce by, say, sneaking butternut squash, mushrooms or green pepper into chili, or mushrooms, cherry tomatoes, onions or bell peppers into sauce for lasagna.” The result can be a healthier dish with even more flavor. Other healthy modifications, Gallen said, can include substituting Greek yogurt or lowerfat half-and-half for some of the cream, mayonnaise or sour cream in recipes; choosing whole-grain pasta over standard refined options; and cutting

back on red and processed meats by working in leaner proteins like turkey, chicken, fish, lentils or beans. “Your family might not even notice!” Outside of individual ingredients, it’s important to keep calories in mind as well, even when making healthier, lighter versions of comfort foods. In normal times, keeping calories and weight in check is hard for many. Not surprisingly, there’s some evidence that it’s been even harder than usual during the pandemic. But some simple tips can be helpful. Following serving sizes listed on recipes is one way, Gallen said. Starting with a reasonable amount of food on a plate when you sit down to eat can make it easier to avoid eating too much. “Another tip is to slow down, really savor each bite,” which gives the stomach more time to tell the mind when it’s had enough, she said. Coming off this long year, with the pandemic so prominent in daily lives, it’s important to not forget about overall wellness. The foods home cooks prepare and enjoy, and find comfort in, can be a big part of that. “Whatever ‘comfort food’ brings to mind for you,” Gallen said, “selecting dishes and meals that are balanced with lean proteins, vegetables and fiber are your best bet.”

Eye Doctor Helps Legally Blind To See

A Mascoutah optometrist, Dr. Marianne McDaniel, is using miniaturized telescopes that are mounted in glasses to help people who have lost vision from macular degeneration and other eye conditions.

The British medical journal BMC Ophthalmology recently reported that 50 percent of patients treated with a high-dose combination of vitamins experienced improved vision after six months. While age is the most significant risk factor for developing the disease, heredity, smoking, cardiovascular disease and high blood pressure have also been identified as risk factors.

Patients with vision in the 20/200 range can many times be improved to 20/50 or better. Macular degeneration is the leading cause of blindness and vision loss in people over 50. Despite this, most adults are not familiar with the condition. As many as 25 percent of those over the age of 50 have some degree of macular degeneration. The macula is only one small part of the retina; however, it is the most sensitive and gives us sharp central vision. When it degenerates, macular degeneration leaves a blind spot right in the center of vision, making it difficult or impossible to recognize faces,

hat seems like a lifetime ago, we lived in Austin right about the time cooking with herbs became "all that." I found this recipe somewhere and it's evolved into my own dish that we love on special occasions like Mother's Day brunch, lunch, picnic or appetizer for dinner. You can always purchase a pesto in a jar, but it's so easy and the whole house will smell like garlic and basil for a day! Delish!

Basil Cheese Torte 8 ounces cream cheese, softened 4 Tbsp. butter, softened

3/4 cup basil pesto (see recipe here) 1/2 pound provolone, sliced PAPER thin 1/4 cup toasted pine nuts 1 red bell pepper, roasted, peeled, seeded and cut into thin strips (see recipe here) 1 small jar sun dried tomatoes, cut in strips Fresh basil for garnish Mix cream cheese and butter in a food processor; add pesto and combine. Small-Batch Culinary Herbs Add Flavor To Gardening Menu By Jennifer Fishburn Horticulture Educator, Illinois Extension

C

ulinary herbs can add variety and splashes of color to any deck, balcony or patio. This makes them an excellent option for many small space gardeners.

“My favorite group of plants to grow is culinary herbs,” said Jennifer Fishburn, a University of Illinois Extension horticulture educator based in Sangamon County. “These plants are good fillers in perennial and herb gardens, and many are a source of pollen and nectar for pollinating insects.” The same herbs that add flavor to favorite food dishes do well in containers, said Fishburn. The herbs used in container gardening can be planted either alone or mixed with annual flowers or vegetables. They will need to receive full sun. Creative gardeners can use containers made out of most anything that holds growing media and has drainage holes. The latter prevents root rot. Be sure to plant the appropriate number of plants in the right-sized vessel. “Select a container large enough to allow space for root growth,” said Fishburn. “For good root growth, most herb plants will need a soil depth of 6 to 8 inches. Taller plants, such as dill and fennel, need at least a depth of 10 inches to thrive.” A 12-inch container will hold about three or four herb plants, while a 15inch container can support about five or six of them. Gardeners can also choose plants based on a theme. For example, pair chocolate mint with a strawberry plant for a take on chocolate-covered strawberries. Design a pizza garden with a container filled with oregano, sage, thyme, marjoram and winter savory. Or create a “lemon drop” using lemon basil, lemongrass and lemon verbena. Every container must contain a good quality potting media that is sterile, retains moisture and allows for aeration. And since container-grown plants will need fertilizer throughout the growing season, purchase a potting media with slow-release fertilizer. A soluble complete fertilizer added after planting is also a good solution. “Apply soluble fertilizers at a low application rate,” said Fishburn. “Too much fertilizer will cause herb plants to grow quickly, reducing flavor and aroma.”

Drought-tolerant herbs do particularly well in containers. Tender, perennial herbs such as rosemary are good choices as well. Plants with a trailing habit look nice cascading over the edge of a pot. Container gardens must be carefully watered; their most common problem is under- or over-watering. Over-watering may cause root rot, fungal problems or fungus gnats. Symptoms of over-watering include wilting and reduced growth. Under-watering symptoms include wilting and scorching. As with over-watering, repeated wilting will stunt growth. To water correctly, apply water until it runs out the drainage holes. Containers dry out quickly so check containers at least twice a day on hot, dry, windy days. Harvest herbs regularly to keep the plant growth compact and bushy. Herb plants are easy to maintain, can grow in almost any full sun location. Most importantly, they give gardeners the satisfaction of eating the fruits of their labor. Need Help Socializing A New Dog Or Puppy? Lucky Dog To The Rescue

s there a new puppy or dog in the household? An estimated 11.3 million U.S households have gotten a new pet during the pandemic. For many people, the mutually rewarding relationship afforded by a furry companion is a wonderful way of life. Yet, there are many who suffer from an extreme fear of dogs, which is called cynophobia and is often caused by a traumatic encounter with a dog or because of a lack of early socialization.

Here are a few ways to facilitate a stress-free introduction: 1. Socialization. The American Veterinary Medical Association defines Socialization as the process of preparing a dog to enjoy interactions and be comfortable with other animals, people, places and activities. Socializing dogs and introducing them to new people should always be a positive and stress-free experience. 2. Create a safe space. Obedience training provides a sense of security when the dog experiences a new situation or meets someone new. In public, placing the dog in a “sit” next to his person, or in a “down” command, helps promote an overall positive experience. At home, utilize the dog’s crate or teach them a “climb” command to create a safe space in the house while welcoming new guests.

3. Positive introductions. Introductions should always be positive and never forced. If either the dog or guest is nervous, skip the introduction all together. Give guests treats and instruct them to say "Yes" and give the dog a small treat every time she shows good behavior for attention. 4. Family gatherings. Read the room! A new dog might get easily overwhelmed with the added noise and influx of new people. It may be wise to book a daycare or boarding reservation at Lucky Dog. 5. Enlist Professional Help! Booking a one-on-one session with one of the team's Lucky Sitters for a walk, bringing the pup in for a day of doggy daycare or signing up for one of the training programs is a great way to help socialize a new dog.
