Custom raisers provide start for healthy herd Juvens’ focus on youngstock benets dairymen

FERGUS FALLS, Minn.

– When bred heifers leave Jerry and Sarah Juven’s farm property, they have done everything they can to ensure those animals will be a productive asset to the farm they are relocating to.

For nearly 20 years, Juven and his wife, Sarah, have raised dairy animals from young calves to springing heifers, and then sold the animals to Brookside Dairy, owned by Ken and Arlan Herbranson.

“At any given time, we’re raising 400 animals, calves or heifers,” said Jerry of Fergus Falls, Minn.

Unlike other custom heifer raisers, Jerry and Sarah have a contract with Brookside Dairy for the purchase of the animals.

When a calf is only a few days old, Jerry will purchase the animal and raise them as his own.

Then, when the calf becomes a springing heifer, Juven sells the animal to the dairy farmers.

“We’ve always purchased calves and resold them as heifers,” Jerry said. “We buy about 20 calves a month, and then

our goal is to get 90 percent back to the dairy.”

On the Juvens’ farm site, calves are raised in individual hutches until weaned. From there, they are moved throughout the farm in groups until they leave the farm site.

Young calves are fed fresh milk from the Juvens’ 15-cow milking herd of Jerseys and are given free-choice starter grain.

“We have a deep history in the dairy industry and a small herd of our own Jerseys,” Jerry said.

The Juvens’ milking herd stems from Sarah’s ancestors.

She grew up on her father, Bernard Scott’s, dairy farm, which was sold in the 1990s with some of the herd remaining on another family member’s farm site.

Then, in 2008 when the family’s herd was for sale, again, the Juvens purchased a bred heifer with bloodlines that led back to Sarah’s father’s herd.

The Juvens do not sell any milk, but rather use it all to feed the calves. The cows are milked twice daily, and provide enough milk for each calf to have 2.5 quarts morning and evening.

“Milk is directly transported with a pipeline into a gar-

bage can in the milk house for the calves,” Jerry said.

The calves are weaned when they are able to consume a bucket-full of grain and water. They do not receive any forages until they are 300 pounds.

The Juvens grow their own forages on 400 acres; 215 acres are dedicated to baleage and

the remainder is used for cash corn and soybeans.

“Baleage is our main feed source,” Jerry said. “We raise and feed about half of our corn and then sell the remainder. We also bale corn stalks and use it as bedding throughout the year.”

CALUMETVILLE, Wis. – Cheesemaking is a meticulous art that Terry Beckman helps make easier for cheesemakers of all sizes. In fact, he may be considered a cheesemaker’s best friend.

Beckman is a craftsman of curd knives, a key component in the cheesemaking process. He founded Dairy Fab LLC in 2001, which is located in Calumetville, Wis. “You can’t make cheese without these knives,” Beckman said. “While still in the vat, curd knives cut the cheese into cubes to dispel the whey or remove liquid from the cheese. All that remains is the curd, and that’s what is used to make cheese.”

These special knives look different than one would expect. They do not resemble traditional knives; rather some look more like a musical instrument.

That is why they are also referred to as cheese harps. The stainless-steel knives are composed of a frame strung with wire evenly spaced and complete with a handle.

Beckman’s passion for cheese began long ago while working for Stoelting, a cheese equipment manufacturing company in Kiel, Wis., where he spent 25 years building and servicing cheesemaking equipment. His travels took him as far as Poland to set up the country’s rst cottage cheese plant.

“I loved the work, but spent more days on the road than at home,” Beckman said. “I knew it was nally time for a change.”

This gave him an idea for a new niche business. He began repairing curd knives, eventually working his way into knife building, as well.

Beckman’s son, Chris, built Dairy Fab’s rst website when he was in middle school.

“That site is what really got this company going,” Beckman said.

His daughter, Kim, helped spread the word by calling cheese factories.

His wife, Nancy, took care of the books while Beckman’s two sisters helped strip down knives during busy times.

“It was truly a family affair,” Beckman said.

Within four years, Beckman moved the business to a shop in Calumetville, Wis., just minutes from his home.

“I like working with my hands,” Beckman said, who has lived in the area his whole life. “And, making these knives allows me to do just that.”

Each knife is custom made.

“Customer vats are unique in size and shape; therefore, every order is different,” Beckman said.

All knives are built to match vat dimensions, and Dairy Fab makes knives in various shapes and sizes, measuring as large as 4- by 4-feet or as small as 4- by 4-inch.

For the past three years, Stefan Severson, of Arcadia, Wis., has worked alongside Beckman.

“Stefan’s brother is married to my daughter, so it’s still essentially a family operation,” Beckman said.

The two-man business prides itself on perfection, serving artisan and farmstead cheese makers throughout the United States, as well as in Canada. On occasion, he has even made a knife or two for Central and South America, England, Africa, Sweden and Australia.

“We denitely serve a niche and are fortunate to have very little competition,” Beckman said.

Making cheese from cow’s milk, goat’s milk, sheep’s milk and even water buffalo milk in a few instances, Dairy Fab’s customer base numbers are close to 250 and consists of home cheesemakers to the largest cottage cheese plants in the country. Beckman has even made knives for nuns in a cloistered convent in California.

“It’s hard for me to say no to anyone,” Beckman said.

Cheesemakers typically use two knives per vat – one knife to slice cheese horizontally and the other to slice vertically in order to make the desired cube shape. Therefore, knives are often sold in pairs. Wire spacing ranges from a quarter-inch to three-quarter-inch, depending on the cut size preferred. A hard cheese, like Romano, is cut smaller to get rid of more moisture, whereas a soft cheese, like goat, requires a bigger cut size to retain moisture.

depending on the style. After stringing the wire, they painstakingly ll in every slot and groove with silver solder, then grind and polish the knife smooth. This high-end nish eliminates any entrance for bacteria, ensuring the knife is sanitary.

“Soldering is intricate work and the most labor-intensive step, but it really sets us apart,” Severson said. “You can’t see where the wire is strung on the end, which gives it a really clean look.”

Dairy Fab produces well over 100 knives per year – about half are new and half are repair work. Beckman builds a miniature curd knife that serves as décor for a trophy awarded each year by the Wisconsin Cheesemakers Association.

“This industry has given me so much, and I like to give back wherever I can,” Beckman said. “I love what I do, and there’s never been a day I didn’t care for, no matter how long that day has gotten. But, what I like even more than my job are the people. Cheesemakers have an amazing work ethic and dedication.

The artisan cheesemakers, in particular, really impress me. They’ve often given up careers in business or health care to try something different, something that allows them to reconnect with nature, and they make some really great cheeses.”

Beckman said the industry is welcoming to newcomers and goes above and beyond to help cheesemakers get started.

“My wife and I like to travel, and we love incorporating visits to our customers all around the country, something I hope to do more of once I retire,” said Beckman, whose successor is already mapped out. “At some point in the future, I hope Stefan will take over the business.

We need somebody to do this work, and it would be in good hands with Stefan.”

A very memorable fair Zoellners take home top awards at South Dakota State Fair

HURON, S.D. – The 2018 South Dakota State Fair was a memorable event for the Zoellner family.

Along with numerous prizes, the Zoellners brought home the grand champion award for three different breeds during this year’s fair.

Two of their animals were awarded the titles of junior supreme champion and senior supreme champion in the open class dairy division.

“I showed my rst cow at the South Dakota State Fair in 1953 when I was a 9-year-old 4-H club member,” said Alan Zoellner, patriarch of the Zoellner family.

Alan and his wife, Sharon, have been married for 44 years.

“We registered our farm as AlShar Holsteins shortly after we got married,” Alan said. “I guess the boys have decided to carry it on.”

The Zoellner dairy operation includes Alan and Sharon’s sons, Troy and Darin. Troy has two sons, Jordan, 13, and Riley, 10. Darin and his wife, Anne, have three sons,

cows when I was growing up,” Alan said. “I took over from him in 1960 right after I graduated from high school. In 1967, our Holstein bull attacked me. He shoved me up against a wall and cracked three of my ribs. We sold him the next day and have been 100 percent A.I. ever since.

We’ve been doing embryo transplants since 2000. We usually get between eight to 16 embryos per ush, but there have been times when we’ve gotten more than 50.”

Alan built a new 46-cow tiestall barn in 1980 and expanded it to 70 tiestalls in 1995. The Zoellners’ dairy facilities include 10 climatecontrolled box stalls for their show animals. All of the cattle at Al-Shar Holsteins are registered.

In addition to milking their 70 head of dairy cows, the Zoellners farm 1,100 acres of corn,

soybeans and alfalfa.

“Showing cattle doesn’t start at the fair,” said Troy, who has been showing dairy animals since he was 8 years old. “It isn’t a one-day event. It’s a 365-day event. Showing cattle takes a lot of hard work the whole year through.”

The Zoellner family brought a personal record number of cattle to the South Dakota State Fair this year, including six cows and 12 heifers.

About ve years ago, they began to lease show animals to neighboring 4-H club members. This year, they leased out four head.

“The kids who lease our animals have to break them to lead, wash them and get them ready for the show ring,” Troy said. “They will be getting the 4-H premiums, and we want them to work for it.”

The Zoellners have traditionally shown cattle at the Brown County Fair, the Minnesota State Holstein Show and the South Dakota State Fair.

“When we were kids, showing cattle at the

Brown County Fair and the South Dakota State Fair were about the only two days we got off,” Darin said. “Showing dairy cattle is a part of who we are.”

In 1999, they added World Dairy Expo to their lineup of show events.

“We will be taking three or four head to Madison this fall,” Troy said. “A couple of years ago, we sold a Holstein cow at the World Dairy Expo. She is now living in Quebec, Canada, and is scored at 96 points. She’s also been nominated for All-American Holstein and All-Canadian Holstein. Even though we don’t own her, she’s still working for us because she’s still wearing the Al-Shar Holsteins prex.”

There was a time when Al-Shar Holsteins was strictly a black and white operation. That changed some years ago when they added a few Jerseys to their herd. Five years ago, Milking Shorthorn cattle appeared in the barn.

At this year’s South Dakota State Fair, Al-Shar Holsteins ex-

hibited nine Holsteins, six Jerseys and three Milking Shorthorns.

“I fell in love with the Milking Shorthorn breed,” Anne said.

“Darin indulged me by purchasing a Milking Shorthorn heifer sight unseen. We have also introduced some Red and White Holsteins into our herd by developing our own genetics. It’s wonderful to see all of that color in the barn.”

The tradition of dairy showmanship is being passed down to the next generation of the Zoellner family. Carter participated in the peewee division of the youth showmanship event this year. Carter was assisted by his brother, Walker, as he led his Holstein heifer into the show ring.

“There’s no big secret to breeding cattle that can bring home prizes. You just have to study their pedigrees and use bulls that you think will improve their bloodlines,” said Alan, reecting on his 65 years of showing dairy cattle.

Troy is happy his children can experience showing as he did.

PIERZ, Minn. — The fruits of a 15-year plan are available for harvest for Minnesota farmers. Thanks to Minnesota state legislative changes passed in January 2017, 40 Square Cooperative Solutions was able to swing the barn doors open for disenfranchised farmers of Minnesota by offering an alternative healthcare plan.

40 Square is a self-insured independent agricultural health care cooperative. In 2018 – the inaugural year – 40 Square is covering 1,100 people across the state. The program hopes to create competition and specically serve the agricultural community in the healthcare marketplace.

“In 2016, going into 2017, at least seven Minnesotan counties were to have no individual insurance options due to major carriers leaving the marketplace,” said Charlene Vrieze, 40 Square Executive Director. “Most recently, some plans are now dropping small groups who only have their spouse as their sole employee.”

It was this gap in coverage, along with several other concerns, that fueled 40 Square’s creation and purpose.

40 Square is centered in St. Paul and it began offering coverage Jan. 1. Last fall, the co-op conducted informational meetings in over 30 communities around the state beginning in September 2017.

“We are a grassroots organization trying to get the word out,” Vrieze said. “We are a one-of-a-kind provider, specic to the agricultural community within the state of Minnesota.”

Representatives from 40 Square hosted an informational meeting at the Pierz Ballroom Aug. 22 in Pierz.

At the presentation, Vrieze and an EBSO, Inc. Senior Sales Specialist, Terri Moxley, explained what being a member of 40 Square entailed.

“40 Square exists with the goal of offering Minnesota farmers a transparent program that fullls the shortcomings of existing healthcare and provides additional healthcare plans,” Moxley said.

The co-op believes its service is unique in that they offer ownership of the co-op to all members within the program through purchase voting and common stock.

“Reserves from premiums that members pay stay within the plan,” Moxley said. “Since the members have ownership of the co-op, they get to decide how to spend the reserved money.”

Another unique facet of 40 Square is the offering of 24/7 telemedicine services and the ability for farmers to add their spouses to the plan as an employee.

Six health plans are available through the program – some of which are compatible with the health savings account programs. The 40 Square deductible plans range from $1,500-

$6,550.

According to an informational handout created by 40 Square, eligible co-op members must be considered an employer, having at least one common law employee [W-2]. Members must actively work in production agriculture and le either Form 1065 or Schedule F with their income tax return, or provide direct services to production agriculture within Minnesota.

40 Square is a self-funded program that relies on a grouping of employers.

The grouping takes on the risk of the plan by purchasing reinsurance through Munich Reinsurance America to limit risk for the plan and its members. The co-op partners with Preferred One for their Minnesota doctor network, MultiPlan for nationwide doctor coverage, Alithias for member assistance, EBSO as their third-party administrator, MedTrakRX for prescription drugs and HealthiestYou for their telemedicine program.

40 Square’s intent is to provide a specialized plan for farmers that will be more tailored and competitive than coverage offered through other providers and the Patient Protection and Affordable Care Act. Allan Welle, dairy farmer and truck driver, expressed interest in the alternative healthcare plan at the meeting.

“Affordability is the big draw for me,” Welle said. “Obamacare was one of the hardest things for a lot of us farmers. Healthcare premiums morethan doubled. It was the Affordable Care Act, but for who?”

For farmers the program comes as a relief. Though the program is still young, the alternative healthcare plan is going well for the farmers enrolled within.

“Through the month of May, the 40 Square members used HealthiestYou enough that the administrative costs were offset for that telemedicine service feature for the rest of the year,” Moxley said.

Vrieze agreed and expounded on the benets of the telemedicine service.

“Through HealthiestYou, our members can be treated for common conditions such as sinus infections, ear infections, rashes over the phone without a copay or deductible,” Vrieze said. “Our customer service also provides costcomparison for medical procedures.

Benets like these puts the power in the hands of our members, makes it more convenient for our members and severely cuts the overall economic burden on them as individuals and on the program.”

Open enrollment takes place Nov. 1-Dec. 19. Coverage will start Jan. 1, 2019 for those who do enroll.

40 Square is setting its sights on doubling its 1,100-membership and spreading awareness for its healthcare program for the 2018 calendar year in order to grow the program’s members and embolden their coverage options.

Additional community informational meetings will take place around the state, now through December.

As it stands, the 40 Square health plans are only offered within Minnesota but the board of directors is interested in expanding to other states in the future.

People in the dairy community Ebert appointed to Dairy Farmers of Wisconsin board The Dairy Farmers of Wisconsin board of directors appoint dairy farmer Randy Ebert to serve as the representative for District 10 covering Brown, Kewaunee and Door counties. This appointment follows the resignation of Julie Veldhuis.

Well-known to many farmers in the area, Ebert farms with his wife, Renee, and family in Algoma, where they hosted Wisconsin Farm Technology Days in 2017.

Ebert also served on the Kewaunee County Dairy Promotion Committee for many years. Ebert will serve for the remaining term representing District 10. This seat will be open for election in 2020.

Brown Swiss Association selects Ambassadors and Alternate Ambassadors The Brown Swiss Association has selected the 2018-2019 Ambassador and Alternate Ambassadors during the National Brown Swiss convention in Coralville, Iowa, on June 28. Eight individuals competed for the Youth Ambassador position.

The National Youth Ambassador supports and promotes the Brown Swiss Cattle Breeders’ Association and National Programs. As the Ambassador, they will represent the breed at local, state and national shows, the national convention and other breed events. The 2018-2019 Ambassador is Jax Bauer from Hayeld, Minn. He is the 20-year-old son of Tony and Paula Bauer. The 2018-2019 Alternate Ambassador is Jaynie Rule from Dodgeville, Wis. She is the 19-year-old daughter of Randy and Tammy Rule.

Wisconsin Farm Technology Days, Inc. announces 2018 scholarship recipients Wisconsin Farm Technology Days Inc, has announced the recipients of three scholarships presented to youth who were involved as volunteers in the recent Wisconsin Farm Technology Days hosted by Wood County. Scholarship recipients were chosen on the basis of their volunteer efforts before and during the recent Wood County Show, scholastic achievements, as well as school and community activities. GENEX releases dairy bull search app Searching and sorting dairy bulls from across the industry just got easier with the release of a new app from GENEX. The GENEX Dairy Bull Search app available for iOS, Android and Windows devices – includes genetic and pedigree data on over 40,000 bulls.

The app enables producers to search for Holstein, Jersey, Brown Swiss, Guernsey, Ayrshire or Milking Shorthorn bulls by entering their short name, NAAB code or registration number.

“The app also allows users to lter active bulls by genetic criteria to generate a list of sires that meets the dairy’s breeding objectives,” explains Joe Binversie, GENEX Value Added Programs Manager. “This list can then be downloaded as a Microsoft Excel or CSV le which users can save to their device or send via email or text message. It makes bull searching and sorting quick and easy.”

Look for the Bull Search app in an app store today. After the initial download, an internet connection is not required for searching or sorting bulls.

First-ever ‘Gathering of the Grads’ planned Calling all Agriculture, Home Economics, and Natural Resources graduates from the University of Minnesota, St. Paul and Waseca Campuses! The rstever “Gathering of the Grads” from this area will be held Saturday, Sept. 15 at Bernadotte Lutheran Church Park, rural Lafayette.

The park is located at 34122 515th Avenue (Nicollet County Road 10), about ve miles east and a mile north of Lafayette. Road construction might necessitate reaching the church park only from the north. Watch Facebook and other media sources for last minute information.

The gathering will be an opportunity for CFANS (College of Agriculture) alumni of all ages, friends, and their families from central, south central, and southwestern Minnesota to get together for fun, socializing, reminiscing, and some Ski-U-Mah. The event will feature a noon potluck dinner, as well as before (11 a.m. to noon) and after (2-3 p.m.) tours of the Cow Collector’s Mooseum, across the road from the church. The gathering will be held rain or shine, moving into the church if necessary.

Those attending are asked to bring a dish(es) to share. Table service will be provided. A donation box will be available to help defray costs.

Consuming milk at breakfast lowers blood glucose throughout the day A change in breakfast routine may provide benets for the management of type 2 diabetes, according to a new study published in the Journal of Dairy Science.

H. Douglas Goff, PhD, and the team of scientists from the Human Nutraceutical Research Unit at the University of Guelph, in collaboration with the University of Toronto, examined the effects of consuming high-protein milk at breakfast on blood glucose levels and satiety after breakfast and after a second meal. Milk consumed with breakfast cereal reduced postprandial blood glucose concentration compared with water, and high dairy protein concentration reduced postprandial blood glucose concentration compared with normal dairy protein concentration.

The high-protein treatment also reduced appetite after the second meal compared with the low-protein equivalent.

“Metabolic diseases are on the rise globally, with type 2 diabetes and obesity as leading concerns in human health,” Dr. Goff and team said. “Thus, there is impetus to develop dietary strategies for the risk reduction and management of Turn to UDDER STUFF | Page 16

In this randomized, controlled, double-blinded study, the team examined the effects of increasing protein concentration and increasing the proportion of whey protein in milk consumed with a high-carbohydrate breakfast cereal on blood glucose, feelings of satiety, and food consumption later in the day. Digestion of the whey and casein proteins naturally present in milk releases gastric hormones that slow digestion, increasing feelings of fullness. Digestion of whey proteins achieves this effect more quickly, whereas casein proteins provide a longer lasting effect.

Although the team only found a modest difference in food consumption at the lunch meal when increasing whey protein at breakfast, they did nd that milk consumed with a high-carbohydrate breakfast reduced blood glucose even after lunch, and high-protein milk had a greater effect. Milk with an increased proportion of whey protein had a modest effect on pre-lunch blood glucose, achieving a greater decrease than that provided by regular milk.

According to Dr. Goff and colleagues, “This study conrms the importance of milk at breakfast time to aid in the slower digestion of carbohydrate and to help maintain lower blood sugar levels. Nutritionists have always stressed the importance of a healthy breakfast, and this study should encourage consumers to include milk.” The study is available online at https://doi.org/10.3168/jds.201814419.

Scotty Moes Memorial Fund continues to grow Two years ago, members of the dairy community made the decision to celebrate the life of Scotty Moes and honor his memory through a fund at Lake Area Tech called the Scotty A. Moes Memorial Fund. Scott “Scotty” Moes, 35, of Goodwin, passed away March 20, 2016 in a single-vehicle rollover accident.

Moes had a strong connection with the Lake Area Tech agriculture program faculty, staff and students as co-owner of MoDak Dairy, Chairman of the Midwest Dairy Association, and a member of the South Dakota Dairy Producers. The fund, which was established at Lake Area Technical Institute for the Agriculture Program-Dairy Option and has now grown to the sum of $33,000 thanks to individual donations from dairy producers, the dairy industry, and numerous fundraising events.

Scotty’s mother, Julie Moes comments, “The dairy businesses and producers in South Dakota have been so generous to raise money and donate to the fund.

This adventure has been two-fold in that we are supporting great students in the Lake Area Tech dairy program and raising awareness of the dairy industry.”

The rst-ever Scotty A. Moes Memorial Fund Scholarship was awarded to Ag-Dairy student, Mackenzie Streich of Marietta, MN. Streich graduated May 2018 from Lake Area Tech and began her dairy career as the current South Dakota Dairy Inspector. The second scholarship recipient, Brady Wielenga, of Akron, IA, is currently enrolled in the Ag-Dairy option as a rst-year student.

Lake Area Tech is the Aspen Institute’s #1 Two-Year College in the Nation”.
