BLOOMINGTON, Minn. – When it comes to who consumers trust and who they hold accountable, the two categories do not always match.

Roxi Beck with the Center for Food Integrity presented ““Responsibility vs.

Trust: Consumer Perceptions on Government” July 26 at the inaugural Dairy Experience Forum in Bloomington, Minn.

Research from the Center for Food Integrity shows there are three ways people feel they can have the greatest impact on society: in their purchasing decisions, how they vote and how they are involved in their local community.

While the Baby Boomer generation puts more emphasis on voting decisions, Generation X and Millennials feel they have more inuence based on what they buy.

“This absolutely applies to food,” Beck said. “… You start to see a clear picture of why the food system is changing based on perceptions, beliefs and the way people make decisions.”

Politicians and other decision makers are starting to respond and listen to those concerns from the consumer about their food.

“But, there is a big disconnect who I as a consumer trust and who I uphold when it comes to responsibility,” Beck said.

In a Center for Food Integrity study, consumers were asked who they trust to ensure their food was healthy. They ranked 11 sources with family, family doctor, farmers and dietitian being close to the top. Government ofcials were at the bottom.

“It’s amazing,” Beck said. “People trust farmers. We’ve known this for a really long time. It’s been consistent over the years. Farmers and the connec-

tion to family values and doing what’s right is incredibly strong. So we need to be able to leverage that.”

The same consumers were asked to rank the sources based on who they hold accountable to ensure their food is healthy, the ndings somewhat changed.

“While people don’t have a high level of trust for federal regulatory agencies or food companies, they still hold them accountable,” Beck said.

“They’re saying, ‘I don’t trust you, but when something goes wrong you’re the rst person I call.’ That’s the position the government is being put in. The same thing with food companies.”

Farmers are held to the same level of responsibility as they are trust.

“Farmers are in a good position,” Beck said. … “You have a level of trust and when it comes to being held responsible, I’m going to be in the conversation.”

When it comes to consumer perception, 55 percent of the public strongly agrees they have no problem consuming meat, milk and eggs if animals are treated decently.

“This is good,” Beck said. “We have room for improvement obviously.”

However, only 25 percent of people believe farm animals are treated decently and humanely. About 60 percent of people are personally concerned about the use of hormones in farm animals and 54 percent are personally concerned about antibiotic residue in meat, milk and eggs.

“We see a different picture emerge,” Beck said. “There’s low level of education and there’s low access [to farms], which is driving some of that concern and uncertainty.”

The rotational grazing paddocks are made up of grasses and clover. The cows are also fed a TMR. The Malone’s have been Organic milk and crop producers for 10 years. Justin didn’t always have registered Holsteins. He took advantage of an opportunity to buy some embryos that were registered. Justin and his sons have been picking out good blood lines to grow their registered herd. In years to come it will be exciting to see the genetics from this herd. “It’s not just about having the information, it’s about being able to connect in a way where that information is heard,” Beck said.

Beck said there are three elements to establish trust. The rst is who the information comes from, also called inuential others. This includes family, friends and other experts with credentials. The second is competence, or the facts about certain topics. The third is condence. This is seeking opinions from others who share the same values.

“Condence was three to ve times more important to people than competence,” Beck said. “We see this in an anti-science, anti-facts environment we’re dealing with right now with our consumer public, but this is the reality.”

This means when talking to people about dairy, conversations should start with trying to connect with people on values.

“If we can start to address the ethical issues, that’s going to impact feelings and beliefs, which are going to allow people to feel right about the industry,” Beck said.

There are also three things Beck said need to be set aside in these conversations.

“We have to set aside persuasion as a goal,” Beck said as the rst one.

The second is correcting.

“Correcting is important, but if it’s our rst or our only goal, we’re going to feel like a bully going into these conversations …,” Beck said.

The third is to stop educating.

“If we say we need to educate the public, ... I believe this is true, but we don’t have the time, energy or resources to put out enough education campaigns

to make a full-focused educational effort,” Beck said. “We can’t make it our goal to educate everybody about everything we know.”

In order to engage people in meaningful conversations about dairy, Beck said there are three simple steps. The rst is to listen without judgment.

“That’s the hard part,” she said.

“Listen to underlying shared values.

Seek rst to understand where they’re coming from.”

The second step is to ask questions to invite dialogue.

“We can’t ask questions to educate people,” Beck said. “Really be in a position to be open to a conversation to why what is true in their life has come to be.”

The third step is to share knowledge about one area of dairy.

“This only happens after you have listened and asked questions at least three times,” Beck said. “Not everything you know has to be put into one sound bite.”

This is also the time to connect with people through shared values.

“You have to think about the titles you hold that are relevant to people and in common with people as a human being with a heart and a gut, who has to make decisions just the same way you do,” Beck said. “Those will showcase why you care and why this person can trust you.”

This is how Beck feels the dairy community will be able to gain more condence and trust from others.

“If we can be open and be transparent, we have an opportunity to connect with the consuming public that demands transparency and a government that really needs our help,” Beck said.

DOVER, Minn. – Although Chuck Henry started his dairy career with a conventional herd, he gradually made changes that steered him in the organic direction.

“It was a natural progression that got us to this point and a combination of a lot of little things that culminated to where we are today,” Henry said.

Henry and his wife, Sue, along with two part-time employees, now operate a 200-cow grass-fed organic dairy near Dover, Minn. Their farm and herd have been certied organic since 2006.

“We wanted to farm in a way that was more sustainable

with no use of chemicals,” Henry said.

After graduating from college in 1973 with an animal science degree, Henry returned to the farm and took over for his dad who retired shortly after.

Throughout the years, Henry simplied areas on the farm to make them easier, which eventually led him to his organic status.

Moving away from using herbicides became an important part of Henry’s dairy.

“We had bad experiences with it,” he said. “I would get enormous headaches, so we wanted to get away from the stuff.”

After that move, Henry started pasturing his cows, too.

“We liked the lifestyle and everything about it,” he said.

Because of these changes, Henry started thinking about organically certifying his farm.

“A good friend of mine told me they were thinking about the same thing,” Henry said. “Our operations were very similar, and we helped each other out in a big way.”

After starting the transition process in 2003, Henry’s herd was certied on April 27, 2006; however, the night after their rst organic milking, a re engulfed and destroyed the barn that contained the step-up. It overshadowed what should have been an exciting change.

“We couldn’t move our cows off the farm because we probably would have lost our or-

ganic status,” Henry said.

They quickly set up a temporary parlor while they made plans for a more permanent milking facility at their second farm site down the road, where they would retrot their new parlor into a former farrowing barn that had been used to house steers.

To allow time for construction, they went to once-a-day milking for the 60-cow herd.

“To this day I’m a little mad at myself for moving away from once-a-day milking because that summer was the best summer we ever had,” Henry said. “The kids were young, and we could go do things we wanted to do.

timely manner.”

The new swing-15 parlor was ready for use by mid June, but haying and other nishing touches delayed its start until towards the end of summer.

“I had heard so many horror stories about starting up a new parlor that I wasn’t anxious to start,” Henry said.

So, Henry decided to do things his own way. The night before starting, he let the cows go through the parlor area to become familiar with it. It did not go well. But, Henry remained patient. The next morning, he milked alone – the way he wanted it to be – and only used one

“It would take about 10 to 15 minutes to load. But I took my sweet time,” Henry said.

“I wanted them to remain calm while learning our new system.”

Henry liked his new parlor; however, the rest of the setup wasn’t ideal for his herd.

“I didn’t have a good place to feed grain or silage because this was a hog farm,” Henry said. “I tried feeding grain in the parlor, but that was a mess.”

After a few years of struggling with feeding corn silage, Henry decided to fully pasture his animals and stop planting corn.

“I would never brag about the milk yield, but I don’t care about per cow production,” Henry said. “You spend what you want to spend, but there are just a lot of things we don’t need and fewer inputs are required. It takes some adjustment because your milk yield is less, but once you gure that part out, it’s easier. It wasn’t a big shocker to us.”

The farm is about 600 acres with 530 tillable acres. Of that land, about 150 acres are designated pasture. Henry plants oats and peas, along with sudangrass, in the spring. After the oats, peas and sudangrass have been taken off, various combinations of cover crop mixes are planted.

Alfalfa and grass hay rounds out the rest of the farm.

Every spring, Henry interseeds a mix of Italian rye grass, Festolium, meadow fescue and red clover on pastures, which also includes orchardgrass, bromegrass, timothy and white clover.

Henry said the change in their farming practices have increased soil structure, organic matter and soil health, and have decreased soil erosion.

The change to an all pasture-based system also led to Henry enrolling his herd in his cooperative’s grass-fed only program where he would receive a premium for the milk for not feeding his cows grain.

Schmitt crowned 65th Iowa Dairy Princess

Howe named alternate at 2018 coronation

DES MOINES, Iowa – When the crown rst landed on Jessica Schmitt, she felt honored.

“I couldn’t stop shaking,” Schmitt, 18, said. “I have been looking forward to this moment for a long time.”

Schmitt was crowned the 65th Iowa Dairy Princess Aug. 8 at the Iowa State Fairgrounds in Des Moines, Iowa.

Schmitt is the daughter of Carl and Terry Schmitt who milk 50 cows on their family farm in Fort Atkinson, Iowa. She will spend her year representing Iowa dairy farmers by making public appearances and connecting with consumers to help them understand the dedication of dairy farmers to their cows, their land and the milk they produce.

“Representing Iowa’s dairy farmers is more than just wearing the crown and sash,” Schmitt said. “It’s about being able to represent what I love and what other people love, the dairy community.”

Reecting on her time growing up on the farm, Schmitt said her favorite part was making chores a competition with her older sister.

“Whether it was feeding bottle calves or bedding older calves, everything with my sister was a race, and we would race to see who could nish the job quickest,” Schmitt said. “It made chores easier.”

As she got older and more involved in the farm, she took owner-

ship of a small herd of her own. “[It] made me get more involved with milking and keeping track of breeding and calving records,” Schmitt said. “Now I have a rsthand account of what it takes to ensure cows and calves are happy and healthy.”

Schmitt is looking forward to using her communication and leadership skills to promote the passion behind the product and the hard work that goes into each glass of milk.

In addition to winning the crown, Schmitt also won the public speaking portion on the contest with her speech on dairy sustainability.

“Our dairy farm is something that my family has passed down for generations,” Schmitt said. “Like other families might have artifacts that have been passed down for generations, and

we’re really proud of it and work hard to ensure that it can be passed down to the next generation.”

Schmitt will be attending Iowa State University this fall studying dairy science and agricultural communications. She plans to stay involved in the dairy community upon graduation.

For Grace Howe, Alternate Iowa Dairy Princess, the crowning moment was a little different but equally exciting.

“I was very surprised because I was the youngest girl competing,” Howe said. “I gured that I’d go through the process and get a feel for it this year and then run again next year.

Twelve girls ran for Iowa Dairy Princess this year, and they were all from Northeast Iowa.

“It was really fun to make friends who share my passion for dairy,” Howe said.

Howe, 17, the daughter of Shelly and the late Matt Howe, will share duties with Schmitt.

“I’m looking forward to spreading the dairy story to consumers and meeting producers to hear their dairy stories,” Howe said.

Howe grew up one generation off the farm but spent time at her grandparent’s farm where they milk 200 Holsteins. She is becoming more invested in the farm, too, with her own herd of 10 Jerseys. She enjoyed showing at the fair growing up and wants to get more involved in shows in the future. Howe will

be a senior at Waukon High School this fall.

Both girls have family ties to the crown.

Both girls are also embracing social media during their reign, which begins Sept. 1, as they will be managing the Iowa Dairy Princess Facebook page.

“I’d like to reach out on social media more and be in public eye where maybe the dairy princess hasn’t been before to reach a new consumer base,” Schmitt said.

Howe agreed.

“Watch for our posts on Facebook,” she said.

“We’ll be doing a lot of promotion on there.”

The bulls were fed the week of Aug. 13. Barrel cheese marched higher, commercial dairy product disappearance looked solid, the U.S. and Mexico appeared to be coming together in their trade spat, and even China’s commerce ministry stated that its commerce viceminister had been invited by the U.S. to discuss economic and trade issues. And, for the rst time ever, the USDA announced that it will purchase $50 million in pasteurized uid milk.

Speaking in the Aug. 20 Dairy Radio Now broadcast, HighGround Dairy’s Lucas Fuess added that reports of heat stress in the Western U.S., Europe, Australia, and Japan is a cause for concern that feeds the bulls, and CME barrel cheese trading above the blocks for the rst time since Dec. 19, 2017, bows well for prices and “we could have a trade deal with Mexico yet this month.”

“We’re in a seasonal time of the year here in midAugust where people are looking to the holidays, trying to make sure that there will be sufcient inventories and this is causing pricing to climb as we move into fall,” Fuess said.

He was hesitant to predict how high cheese will go, reminding us that U.S. milk production remains fairly strong and we have considerable inventories so “by no means is there a shortage of cheese in the U.S.” The milk purchased by the Agriculture Department will be distributed through food assistance programs and food banks, according to a press release from the International Dairy Foods Association (IDFA). Purchases are expected to reach 12-15 million gallons of fat free, low-fat, reduced-fat, and whole milk as part of the initiative, which is not part of the funding the Administration allocated to support farmers and producers negatively impacted by unfair trade practices.

Meanwhile, the Agriculture Department left its 2018 milk production estimate unchanged in the latest World Agricultural Supply and Demand Estimates.

2019 output was raised on slightly higher cow numbers and increased milk per cow.

2018 production and marketings were projected at 217.9 and 216.9 billion pounds respectively, unchanged from last month’s estimates. If realized, 2018 production would be up 2.4 billion pounds or 1.1 percent from 2017.

2019 production and marketings were estimated at 220.9 and 219.9 billion pounds respectively, up 300 million pounds on both. If realized, 2019 production

would be up 3.0 billion pounds or 1.4 percent from 2018.

Fat basis 2018 exports were raised from the previous month on higher sales of butter and other fatcontaining products. The fat basis import forecast also raised on higher expected imports of butterfat products. The 2018 skim-solids basis export forecast was lowered on weaker sales of nonfat dry milk (NDM) and the imposition of tariffs by China on lactose and other dairy products. The import forecast was unchanged however.

Cheese, butter, NDM and whey price forecasts were raised for 2018. Prices for cheese, NDM and whey were also raised for 2019 as demand strength is expected to carry into next year. The 2019 butter price forecast was unchanged.

The 2018 Class III and Class IV milk price forecasts were raised from last month to reect the higher dairy product price forecasts. The 2019 Class III price forecast was raised on higher forecast cheese and whey prices.

Look for a 2018 Class III average of $14.50$14.70 per hundredweight (cwt.), up from the $14.30$14.60 predicted a month ago and compares to the 2017 average of $16.17 and $14.87 in 2016. The 2019 average is now expected at $14.95-$15.95, up from the $14.70-$15.70 projected in last month’s report.

The Class IV price forecast was raised on the stronger forecast NDM price. It’s projected to average $13.95-$14.25, up from the $13.65-$14.05 expected a month ago and compares to $15.16 in 2017 and $13.77 in 2016. The 2019 average was projected at $13.75-$14.85, up a dime from last month’s estimate.

U.S. corn production was forecast at 14.6 billion bushels, according to USDA’s Crop Production report, down less than 1 percent from last year. Based on conditions as of August 1, yields are expected to average a record high 178.4 bushels per acre, up 4.4 bushels from last month’s estimate and 1.8 bushels above 2017. If realized, this would be the highest yield on record for the U.S. The WASDE states; With supply rising faster than use, ending stocks are raised 132 million bushels to 1.7 billion. The season-average corn price received by producers is down 20 cents at the midpoint at a range of $3.10-$4.10 per bushel.

Soybean production was forecast at a record 4.59 billion bushels, up 4 percent from last year. Based on conditions as of Aug. 1, yields are expected to average 51.6 bushels per acre, up 2.5 bushels from last year.

for 2018/19 are projected at a record 5.04 million bushels, 5 percent above last month. With larger supplies, crush and exports were raised 15 and 20 million bushels, respectively. Ending stocks are projected at 785 million bushels, up 205 million from last month.

The U.S. season-average soybean price for 2018/19 is forecast at $8.90 per bushel at the midpoint, down 35 cents from last month. The soybean meal price forecast, at $295 to $335 per short ton, is down $20 at the midpoint. The soybean oil price forecast was unchanged at 28 to 32 cents per pound.”

FC Stones adds that if USDA’s soybean carryout is realized, “It will be burdensome, if not a glut supply. Clearly, the USDA published a worst-case scenario that includes the idea that the trade spat with China won’t go away soon. There are traders who think trade agreements will be in place by the US November elections; clearly the USDA is thinking otherwise. We could make the case that the USDA had to publish a worst-case scenario to alert participants as to just how bad things could get. Given the fact that half of US soybeans are destined for export, it’s hard to argue against the huge carryout estimates.”

Cotton production is forecast at 19.2 million 480-pound bales, down 8 percent from last year. Yield is expected to average 911 pounds per harvested acre, up 6 pounds from last year.

The latest Margin Watch (MW) from Chicagobased Commodity & Ingredient Hedging LLC. says “Dairy margins were largely steady over the rst half of August, with the exception of spot Third Quarter where margins strengthened back above breakeven due to rising milk prices. Much of the strength in the nearby milk market appears to be seasonal, with backto-school buying for lunch programs boosting uid milk consumption,” according to the MW. Meanwhile, U.S. cheese demand appears to be solid. American cheese demand was up 1.4 percent in June from a year ago and up 6.2 percent from May, according to the latest Livestock, Dairy, and Poultry Outlook.

Demand for the “other” cheese category was up 1.9 percent from 2017 and up 2.98 percent from May. That put total cheese use up 1.7 percent from a year ago and 4.3 percent above May. Year to date American cheese use is up 2.6 percent and other than American cheese is up 1.97 percent, putting total cheese use up 2.2 percent than at this time a year ago.

Butter demand was up 3.5 percent from a year ago and, on a month-to-month basis, it increased 11.3 percent but FC Stone points out that June butter imports were the highest since 2004 and perhaps a cause of June’s price weakness. Spot butter fell 28 cents in June though it has since recovered most of that.

“Butter still looks poised for more upside as cream tightens and gets pulled out of butter production and put towards other products,” says FC Stone.

“We do have what appears to be plenty of inventory in cold storage warehouses, but to the extent that those inventories are 82 percent salted bulk butter that can be brought to the exchange is debatable right now.”

Nonfat dry milk use plunged 19 percent in June but is up 11.1 percent year to date while butter use is up 2.4 percent.

Mid-August cash dairy prices roller-coasted a bit.

Block Cheddar, after hitting $1.66 per pound Monday, closed the third Friday of August at $1.6550, down a quarter-cent on the week and 10 cents below a year ago as traders awaited Monday’s July Milk Production report and Tuesday’s GDT. The barrels climbed to $1.6750 Wednesday, highest price since November 15, 2017, but nished Friday at $1.67, up a nickel on

Cheese demand remained on par with previous weeks, according to Dairy Market News. Spot milk prices ranged 50 cents under to $2 over Class III. Some cheese producers report that they will not take any spot milk over Class, as current sales points do not warrant adding to production and inventories.

Market tones are somewhat positive, but a few contacts suggest buyers are “skeptical of the increased prices, particularly for barrels.”

Western cheese output remains active with plenty of milk to run through the vats, but “the seasonal easing of milk production and the restart of school milk bottling has taken some of the pressure off.” “Some processors say they have not seen any change in demand the last few weeks. Buyers seem to be on vacation or not very motivated to get extra coverage.

Other contacts suggest that there is light at the end of the summer doldrum tunnel. Food service demand is picking up as schools start up and pizza manufacturing pulls a bit more cheese. Inventories remain heavy, but contacts are hopeful domestic and international cheese demand can pick up to the point of cutting into the stock piles of cheese.”

Butter climbed to $2.3875 Tuesday, highest CME price since June 11, 2018, but closed Friday at $2.3050, down 3 1/2-cents on the week, ending ve consecutive weeks of gain, and 34 below a year ago.

DMN reports that, “As cream prices shifted downward this week, churn activity increased. Plant managers sought out spot cream at a more vigorous clip than in the past month. Retail butter sales are reportedly ahead of last year’s gures, and meeting or better than expectations.”

Western butter output is steady. Contacts say that spot loads of cream going into butter have not increased signicantly. Good demand from ice cream and cream cheese processors has incited some butter plants to sell cream. Butter inventories are unchanged from a week ago and sales are steady to weakening.

Cash Grade A nonfat dry milk closed Friday at 86 1/4-cents per pound, highest CME price since August 1, 2017, up 3 1/4-cents on the week, and 3 cents above a year ago, with 14 carloads exchanging hands.

Spot dry whey hit a new high at 44 1/2-cents per pound, up a quarter-cent.

The California Department of Food and Agriculture announced its September Class I milk price at $16.87 per hundredweight for the north and $17.14 for the south. Both are up 73 cents from August but $1.78 below September 2017.

That put the nine month average at $16.21 for the north, down from $17.93 at this time a year ago and compares to $15.78 in 2016. The southern average, at $16.48, is down from $18.20 a year ago and compares to $16.05 in 2016.

As reported last week, the USDA’s Risk Management Agency (RMA) announced a new insurance plan for dairy producers that insures against unexpected declines in quarterly milk sales. Sign-up for the new product begins Oct. 9, with the rst available coverage starting the rst quarter of 2019.

The new plan, called Dairy Revenue Protection, provides insurance for the difference between the nal revenue guarantee and actual milk revenue if prices fall. It also provides a greater choice of prices, from those that focus on cheese to fresh milk, protein or butterfat. Coverage levels are available from 70 to 95 percent of revenue and protection is available in all counties in all 50 states. Those interested in purchasing Dairy Revenue Protection must do so through an agent selling on behalf of an approved insurance provider.

In politics, the National Milk Producers Federation called on the U.S. Environmental Protection

Agency (EPA) and the U.S. Army Corps of Engineers (ACE) this week to permanently rescind the 2015 version of the Waters of the U.S. (WOTUS) rule, and recodify the prior version of the regulation in order to provide certainty for dairy farmers.

In comments submitted to the agencies, NMPF outlined its support for both agencies proposal to “repeal the current denition of WOTUS and rewrite it to reect common-sense approaches to protecting the environment” and joined numerous other farm and food organizations to submit an additional 22 pages of comments that provided an extensive legal and technical assessment of what the two agencies did wrong three years ago in an attempt to update the regulation.

Cooperatives Working Together member export sales this week totaled 341,717 pounds of Cheddar cheese and 2.097 million pounds of whole milk powder. The product is headed to Asia, Central and South America through December.

Dairy and grain markets spent the last several weeks chopping around in a volatile yet narrow range. World milk prices are providing more confidence that market participants have fully accounted for tariffs and demand shifts.

Dairy exports have been at or above record levels for months, but may start to see more buyer resistance if the U.S. dollar continues to strengthen. Front end milk price weakness is likely starting to reflect the impact of the last 30 day firming dollar trend.

Cheddar barrel supplies are tightening, as more plants shift production into other cheese types. This is causing barrels to trade premium to blocks at the CME Group spot session. Blocks typically trade 3 cents over barrels due to production cost differentials in the federal order price calculations. As of this writing, barrels are trading at a 1.5 cent premium to blocks.

Grain markets remain under pressure from above average crop condition ratings and soybean tariffs. Soybean futures and cash basis remain under extreme pressure at levels

not seen for quite some time. Meal and soybean prices are trading at a wider than normal price relationship providing strong crush margins to plants, and leaving grain sellers and meal buyers desiring better values.

Corn prices are holding up surprisingly well considering the large old crop carryout position and expectations of a big new crop getting closer to making its way into bins.

Basis values in many Midwest locations remain firmer than expected late in the season as producers have not yet thrown in the towel to make room for fall harvest.

Grain futures may start to see mild price strength from expanding areas of dry soil conditions. Drought maps reflect significant drought in Missouri, Southern Iowa, and Eastern Kansas. Crops are maturing much quicker than normal, raising concerns of shallow kernel depth, disappointing fill, and impacts on final yield.

The inuence a cow can make Doyle travels to Africa to see impact of father’s donation

MOATE, Westmeath, Ireland – A dairy heifer to Colm Doyle means more than another replacement in his herd.

The fth-generation farmer and his wife, Sinead, along with their four young children milk 60 British Friesian and Rotbunt, a German red and white breed, near the town of Moate in the Westmeath County of Ireland. They had been producing organic beef and sheep, and recently switched to organic dairying with hopes to install a robotic milking system in the coming year.

“There’s maybe between 30-40 organic dairy farms in the whole country,” Doyle said. … “Beef and sheep wouldn’t support the family on its own, so I was either going to have to go back to working outside the farm or go dairying.”

Along with being an organic farmer, Doyle carries on the legacy started by his late father, Jimmie Doyle, who, one decade ago, donated a bred dairy heifer to a family in Rwanda.

The donation was made through Bóthar, an Irish charity equipping families and communities abroad to overcome hunger and poverty through gifting them with the ownership of animals.

“Bóthar started in Ireland maybe 25 years ago with a couple of lads trying to send a couple of heifers out to Africa and to fundraise for that,” Doyle said. “They expanded from that to try to ll one plane load of

heifers. Then, they also started sending dairy goats to families in the developing world.”

In Irish, cow is translated to bó; road is translated as bóthar. Doyle said bóthar can mean the way of the cow.

Bóthar is based in Limerick, Ireland, but is operating in 20 countries across the world. The organization collaborates with other non-prots, such as Heifer International. Besides dairy heifers and goats, Bóthar pro-

vides families with bees, sheep, camels, sows and rabbits, among others.

Bóthar also supplies straws of semen for A.I. use.

Doyle’s father was a founding member of the Moate Bóthar group 20 years ago. Citizens wanted to send a dairy goat to a family in need.

“It started out with one or two heifers; now with our small group here we average anywhere from 2030 heifers a year, and the same with goats,” Doyle said. “We are a volunteer organization. We support the main organization of Bóthar.”

The Moate Bóthar group meets every couple weeks and conducts fundraising throughout the year.

Funds are used to purchase heifers to send to families in need. Animals are donated to Bóthar, as well.

For the Ewing family, it is a family affair to care for their herd of 100 cows near Gilman, Wis. Bruce Ewing Jr., his wife, Samantha, their chil-

Bruce Jr. understands the value of these lessons after having learned them himself on the farm.

accident left him partially paralyzed. He had been operating a grain truck when he entered a blind intersection, was struck by another truck and ejected from the vehicle.

It was a moment that led to lasting changes on the farm.

“At the time, Ella was 9 months old,” Samantha said.

“Not only did we lose someone who helped on the farm, but he was also our babysitter once I got out to the barn to milk. Suddenly we didn’t have that. We had to improvise.”

The couple found themselves in a new normal.

“We cut back on cows for a little while; it might seem like we are doing chores all day now, but back then, there never was an end,” Bruce Jr.

said. “During that time, most days we would go see him at the hospital in Marsheld after chores were done.”

After recovering for ve years, Bruce Sr. returned to the farm in 2014. Through AgrAbility of Wisconsin, he was able to receive a truck with a lift to help him get in and out, as well as a modied skidsteer with hand controls to help him get around.

In 2015, Bruce Sr. purchased cows of his own and today owns 50 percent of the herd.

All the Ewings appreciate having Bruce Sr. on the farm.

at the end of the day, we truly enjoy being together.”

After morning chores are completed, most days on the farm are lled with projects depending on the day or season. The project Aug. 20 was moving calves from individual hutches to group pens. The afternoon was spent assembling pens, loading calves and unloading the trailers. Throughout

it all, the Ewing children played a role, whether they were helping lead calves, hold pen panels or complete other tasks.

While helpful, Bruce Jr. said there is a level of stress that comes with working with children on the farm.

“No matter what I’m doing or how close by they are, I always worry about where they are or what they up

to,” Bruce Jr. said. “We are always trying to show and teach them the importance of safety.”

As the day wound down and evening milking began, the Ewings appreciated another day spent on the farm together. While they love caring for the cows, they all agreed the greatest joy of what they do is being able to do it together.

Hunter provides update on Kernza research at eld day

MORRIS, Minn. – As research continues, farmers could see a new crop popping up in elds.

“Kernza is a new crop we are trying to develop with people around the world,” said Mitch Hunter, researcher at the University of Minnesota. “Hopefully this can be a good new option for farmers with a high organic premium and hopefully, a dual-purpose crop with both grain and forage.”

Kernza research started 15 years ago in Kansas and four years ago in Minnesota.

Breeding for Kernza is nonGMO and marketed for people who care about the environmental impact of food, Hunter said.

Kernza is a perennial grain crop with large seeds and a deep root system, Hunter said.

“Most wheat varieties are annuals, which requires replanting each year,” Hunter said. “However, Kernza is a perennial, hoping to reduce

“How do we manage Kernza for good yield, nitrogen rate, row spacing, harvest timing, harvest method?” Hunter said about the research he is completing. “How do we increase the value of forage and make it a duel use crop? How do you keep the yields up over time? This is all the things we are looking for.”

With further research and development, Kernza still needs a market.

“How can we sell Kernza and make money?” Hunter said. “We need to have a market. General Mills has publicly said they will use Kernza in a product. This would be a massive market. There is demand

out there, we just need to get the rest of the system put together to serve it.”

Hoping to release Minnesota’s rst variety, Hunter is excited to continue improving the product, adapting it to Minnesota’s climate.

“Save money and get money for crop growing, this could be a really good situation,” Hunter said.

In any livestock operation, managing costs is a critical factor in staying protable. Feed costs are one of the largest costs associated with raising an animal, often accounting for 60-70 percent of costs.

Supplemental protein is a necessary, but expensive component of the diet. Traditionally, soybean meal has been the gold standard when it comes to protein sources, but for dairy producers, canola meal can be an effective protein that cuts costs and actually increases production.

Canola meal is a byproduct of canola oil processing. As demand for canola oil has increased, acreage grown to canola in Canada and parts of the Northern Plains has increased as well. Because of this, there are ample quantities of canola meal that can be shipped down from our northern neighbors.

Canola meal has a lower percentage of crude protein than soybean meal. Canola meal features about 38-40 percent crude protein, compared to 46-48 percent, which is common with soybean meal. Additionally, canola meal has less metabolizable energy and higher fat contents than soybean meal.

In feeding trials, canola meal has been shown to increase milk production in middle lactation dairy cows. Research performed at the U.S. Dairy Forage Research Center in Madison, Wisconsin tested the differences in milk yield, protein content, and fat levels in the milk. Their ndings were a bit surprising, as middle lactation cows increased production by 2.2 pounds per day when fed canola meal instead of soybean meal. Not only was there an increase in milk production, as fat was increased by 0.11 pounds and protein saw an increase of 0.07 pounds per pound of milk. Additionally, dry matter intake was increased by 0.9 pounds per day. Canola meal also has a more complete amino acid prole than soybean meal, with research showing little difference in diets adding methionine as compared to canola meal with no supplementation.

A general rule of thumb is that 1.3 pounds of canola meal should be fed for every 1 pound of soybean meal that was included in the diet. Due to this change, and the fact that canola meal has less energy than soybean meal, there will be less energy present in the diet. Any time you are making a nutritional change, the ration should be recalculated to determine if all of the animal’s needs are being met.

From an economic standpoint, canola meal could be a more attractive option for supplemental protein than soybean meal. Currently, there is about an $80 per ton benet to using canola meal compared to soybean meal. Even with an inclusion rate of 1.3:1 for canola meal, it can still show an economic savings to using canola meal.

Canola meal can be a way to maintain or increase production while cutting feed costs. However, higher inclusion rates and decreased energy values can be potential drawbacks of making this substitution in your herd.

Dehorning methods for organic calves

MORRIS, Minn. – Dehorning calves is a hot topic and a welfare concern, especially for organic herds.

“We dehorn to maintain human and animal safety,” said Hannah Phillips, a doctorate student at the University of Minnesota. “However, dehorning causes pain and stress to the calves, which is a welfare concern.”

Phillips was one of the presenters at the Organic Dairy Research Day hosted Aug. 14 at the West Central Research and Outreach Center in Morris, Minn.

Through research with the University of Minnesota, Phillips monitored stress levels for methods of dehorning and pain response options.

“Disbudding is removing the horns before horn development, where dehorning is removing the horns after 8 weeks of age when the horns are developed and connected to the scull,” Phillips said.

Veterinarians recommend disbudding rather than dehorning, Phillips said.

“Disbudding is better for the farmer and the animal,” Phillips said.

One common method of disbudding uses a hot iron, which involves cauterizing horn buds and tissues on the horn so the horns cannot grow.

Another method includes caustic paste, a chemical paste applied to horn buds of calves under 24 hours of age. The paste burns the horn bud area and inhibits horn growth. However, this is not recommended and may not be approved for organic herds.

“There are many issues with caustic paste,” Phillips said. “The calves may not seem in pain at rst, but 45 minutes to 1 hour later, the pain becomes apparent. Also, in group housing, calves can rub off the paste on to each other. I personally do not recommend this.”

The No. 1 recommendation by veterinarians is polled genetics, Phillips said.

“Because veterinarians realize this is not proactive, they recommend disbudding with a hot iron at 4-6 weeks of age, before the horn base is 1 inch in diameter,” Phillips said.

Although disbudding is the best method for removing horns, it still causes pain and stress to the calves.

In this case, Phillips recommends combining an anti-inammatory medication with lidocaine.

“Be proactive. Look at how you adapt to new regulations involved in welfare rules.”

“Lidocaine numbs the horn area, causing less pain during the disbudding process,” Phillips said.

“However, the lidocaine wears off and the calves become in pain. Anti-inammatory helps with pain after the lidocaine wears off. This is why I recommend a cocktail of medicine.”

Some alternatives include an herbal product called dull it.

“Dull it is a tincture of ingredients that includes alcohol and apple cider vinegar that are drained out,” Phillips said. “However, research has shown it

to be similar to an anti-inammatory.”

Throughout the research, Phillips and her team measured head jerks and ear icks during dehorning.

“Be proactive,” Phillips said. “Look at how you adapt to new regulations involved in welfare rules.

Remember, disbudding is better, with the use of a hot iron, lidocaine and an anti-inammatory cocktail.”

Checkoff-funded research centers create future workforce The National Dairy Foods Research Center program helps drive innovation in dairy products and the latest best practices, thanks to support from the dairy checkoff.

But these centers, located on college campuses across the country, provide another asset to the industry: a future workforce.

Dr. Vikram Mistry, who heads the Dairy and Food Science Department at South Dakota State University (SDSU), said dairy science graduates have little trouble nding employment in one of three majors: dairy production, manufacturing and food science.

“What’s unique is that we’re a farm-to-product program that offers students hands-on training,” Mistry said. “For this reason, graduates have an incredible opportunity for placement – in fact, 100 percent placement. I’ve been here since 1986 and have seen that most students graduate with one to ve job offers within the industry.

“We denitely have an impact on the dairy industry across the board.”

SDSU is part of the Midwest Dairy Foods Research Center along with the University of Minnesota, Iowa State University, Kansas State University, University of Missouri and University

of Nebraska.

The other centers are: California: Cal Poly State University Northeast: Cornell University Southeast: North Carolina State University Western: Utah State University, Brigham Young University, Oregon State University, Texas A&M, University of Idaho and Weber State University Wisconsin: University of Wisconsin-Madison Since 1987, these centers have received nancial support from national and local dairy checkoffs. They collaborate with farmer-founded organizations National Dairy Council, Innovation Center for U.S. Dairy and U.S. Dairy Export Council. Processors and manufacturers also provide nancial resources to the centers.

Each center has its own prociencies. Some have food safety expertise while another may be the go-to source for cheese production or ingredients.

All have the facilities and technical experts needed to help the industry improve or introduce products into the marketplace. They accelerate innovation, helping the checkoff’s goal of pro-

viding consumers with the dairy products they want and enjoy.

“What’s so important about this network are the research outcomes that are helping to drive innovation, plus the pipeline of dairy leaders and advocates that are developed by these centers,” said Bill Graves, Senior Vice President of Product Research for National Dairy Council. “That’s your future workforce.

Ultimately, they are the people who are implementing the outcomes of the research who are driving innovation and leading companies in the marketplace.”

SDSU has built a reputation for its processing ingenuity, with students creating cheese that pushes the imagination. One student recently created Jack Daniels Cheese while another produced maple bacon cheese.

Mistry gives a nod to John Haberkorn for providing a life-like experience for students. Haberkorn is a 1985 SDSU graduate who spent 30 years in the eld before returning to manage the Davis Dairy Plant at his alma mater.

“That in itself is a statement to the value of our program,” Mistry said.

“When he came back, he brought extensive industry experience and that’s what he’s practicing here and teaching

students.”

Products such as Jack Daniels Cheese and other student-created products are sold at the campus’ Dairy Bar. Some also are available at area grocery stores.

Similar experiences are happening at the university’s 130-cow dairy farm, managed by another SDSU graduate, Pete Linke. Mistry said the program specializes in nutrition research and was at the forefront of learning how to convert distillers grain and other byproducts into cattle feed.

Mistry said experiences such as these would not be possible without support from the dairy checkoff and processors. He said many students also have benetted from scholarships awarded annually by the National Dairy Board.

“This is the type of partnership that we dream of,” Mistry said. “Farmers (and importers) are investing their hard-earned dollars in us, so we can generate new information and human resource capital for the future to keep our industry strong. We are very thankful and fortunate to have this type of relationship and I hope the farmers see value in it as well.”

Manure testing and utilization

By Jan Shepel BONDUEL, Wis. – As crops continue to mature across the Midwest, farmers are thinking ahead to when they will be able to get those crops harvested and what comes next. If they are livestock farmers, they are planning when they will get their manure onto elds to replenish the soil’s nutrients for next year’s crop.

It’s important for those livestock producers to remember that the nutrients in manure are valuable and should be handled appropriately and responsibly to make the most of them. While there are generally accepted “book values” for various kinds of manure – based on the kind of livestock it’s generated from and how it has been stored – it’s a much better practice to test that manure and know exactly what nutrients are in it.

Jim Friedericks, who is the Director of Outreach and Education for AgSource Laboratories, notes that how animals are raised, fed and handled will affect their manure. Sows in a farrowing house will produce manure that is different from hogs in nishing houses. Dairy cows in freestall barns will have different manure than heifers in a loang shed. “The best practice is to take a sample of the manure and have it tested by a certied laboratory,” he said. “How manure is stored will also have an impact and should be accounted for when pulling samples for testing.”

“Taking a sample lets you nd out what’s in it, but the samples have to be taken in such a way that they truly represent what’s in the manure,” he said. If the manure is stacked, he recommends taking samples three feet into the stack rather than taking dry material on the outside of the pile. Taking ve to 10 samples from various locations and then mixing them together in a bucket is the best way to as-

sure there is a good, representative sample.

Lagoons or manure pits are a bit trickier since that manure will stratify the longer it is stored. Manure in pits is generally very stable but it’s somewhat tougher to get a representative sample. The best samples would be taken once manure is agitated. Some farmers or custom manure haulers take samples as they pull manure out of the pit. Pulling one gallon for every million gallons incorporated will give the farmer a good idea of how well manure agitation is working and offers a great average manure nutrient rate to work with.

Previous year’s samples are then used as a guide for manure application rates.

Once manure samples are collected, they should be cooled or preferably frozen right away. If samples are frozen they are completely stable. AgSource Laboratories in Bonduel, Wis. is already starting to receive manure samples from farmers in anticipation of crop harvest and manure spreading. If sending in samples, please use plastic containers supplied by the laboratory for manure samples which can be loaded and safely shipped to the lab.

What farmers and manure applicators should be most concerned with when reviewing their results are total nitrogen (N), total phosphorus (P), total potassium (K) and sulfur (S). Generally, the nitrogen number is the one that determines spreading rates, unless regular soil testing shows high levels of phosphorus - which then becomes the most important criteria and limiting factor for manure spreading. Additionally, a manure report will typically include percentage solids or dry matter.

For most Midwestern farmers, the nitrogen information will be the most important criteria when it comes to deciding how to use it on the land. Nutrient management plans are generally designed to provide enough manure-based nitrogen

How manure is applied is criƟcal to the availabilty of nitrogen for the following crop. for the crop that will grow in that soil in the coming year. Due to phosphorus restrictions and the crops being grown, manure may not be able to be spread on a eld every year.

How the manure is applied is critical to the availability of nitrogen for the following crop. For example, if liquid manure is injected, 98 to 100 percent of the nitrogen is considered to be available to the crop in the rst year. If the manure is surface-applied and incorporated within one hour, 80 percent is considered to be available to the crop in that rst year.

The least desirable option, which is land spreading without incorporating, means that only 60 percent of the nitrogen will be available for the crop in the rst year because ammonia in the manure will volatilize and be lost from the soil.

It should be noted that nutrient management plans are also conservation plans. In some cases where incorporation is not an option, to meet tolerable soil loss levels, other best management practices should

be implemented.

The lab report will show how much of each nutrient the farmer can expect to carryover for the second year’s crop and the third year’s crop based on the manure analysis and the type of manure.

Manure reports will also inform the farmer about how much of each nutrient is there in various measurements – pounds per thousand gallons or pounds per ton of manure.

While spreading manure closer to the time when the crop will need it would be ideal – which is to say in the spring – that’s often not possible, given the workload on a farm and time constraints in the spring.

As a result, fall spreading and emptying of manure pits is a time-honored tradition.

Testing of manure, coupled with regular soil testing, will make that tradition more productive and allow the manure’s nutrients to best be used.

Farm nancial counseling still available

For over a year, University of Minnesota Extension has been offering one-to-one nancial counseling to farmers in serious nancial stress. The program is ongoing and still available to farms interested.

Dean of Extension, Bev Durgan, said, “We know that due to a variety of factors, including ongoing low prices, some farmers nd themselves facing difcult circumstances. With our new program, Extension offers distressed farmers help in understanding their nancial situation and exploring options to keep

The Extension program is expected to run for two years and will be modeled after similar services offered in states including Kansas and Iowa. It will augment services currently available in Minnesota, including the Farmer-Lender Mediation program, which is overseen by Extension, and the state Department of Agriculture’s Minnesota Farm Advocates assistance.

To set up a condential appointment with an Extension farm nancial analyst, farmers can call the Farm Information Line at 1-800-232-9077.

Financial analysts include retired agricultural business professionals from Extension and other organizations. The program is setup to provide analysts at geographically diverse locations in Minnesota.

They’ve undergone training to update their capabilities and will work closely with current Extension colleagues.

Extension agricultural economist Kevin Klair says, “Compared to the 1980s, the magnitude of the nancial stress on Minnesota farms is not as widespread. That’s good news, but it may also keep the many farmers in difcult circumstances from seeking the kind of help that they need. That’s why we’re working with a variety of agriculture interests in Minnesota, including the banking industry, to reach out and let farmers know we can help them explore their options.”

Everyone around us gets rain, but we don’t.

Surprisingly, the crops look as good as they do.

I was out walking the RAINFALL corn the other day and TOTALS there are some pretty Last 2 good ears out there. We Weeks finished chopping the Sudex, and then chopped the corn that was burned up, which was about four loads. We’ll probably start the rest of it in about 10 days or so. We finished up our third Since April 25 crop, but the hay is pretty 14.1” much at a standstill with no moisture. The third crop was pretty good. We made about 1,200 small squares and chopped a bunch.

We’ve had a lot of foggy days lately, and I think that’s helping to retain the moisture in the soil some. We haven’t had RAINFALL any rain in the past two TOTALS weeks, maybe a sprinkle Last 2 to wet the blacktop, Weeks but nothing in the rain gauge. Our corn hasn’t starting denting yet. No one around here is in a panic mode to start chopping yet. We’ll plan to do our fourth crop hay right after Labor Day Since April 25 8.9” weekend. It’s maybe a little short, but close to as good as third crop. The beans all look good.

We have heavy enough ground we’re still doing OK, but we are losing yield every RAINFALL day on the corn. I’m TOTALS figuring we’ll start Last 2 chopping corn right Weeks after Labor Day. The soybeans up here are really taking a beating with how dry 0.46” it’s been. The fourth crop hay is looking good. I’m hoping I Since April 25 don’t have to make 10.56” it. We got 3.5 inches of rain from the big storm that went through Monday night (Aug. 20). We’ve had enough rain now RAINFALL for a while. Things are TOTALS looking good though.

We checked the corn the other day and it was at 74.5 percent moisture, so we are looking at starting to chop mid-week next Since April 25 week. The beans are really tall, and they’ve 31.25” got enough moisture that the pods are filling out nicely. The really early beans are starting to turn a bit.

We have started chopping our fourth cutting of RAINFALL alfalfa and the fields are TOTALS a bit muddy. It looks Last 2 like we’ll be getting Weeks good tonnage, though.

There are a few guys in our area who are nearly out of silage and 2” have started chopping corn, but our corn is still really green. It will be at least three Since April 25 26.3” weeks before we start making corn silage.

We haven’t seen 2” any insect problems in our soybeans, although we had to treat our Since April 25 alfalfa for aphids. Our 27.8” fourth cutting of alfalfa should be ready to go in about 14 days.

Blend together until smooth.

I really like this recipe because I can customize it with the fruit I already have at home. You can also add some honey if you like a sweeter smoothie.

8 oz. package of cream cheese 1 box German chocolate cake mix

Mix German Chocolate cake mix according to directions. Place cake mix in a greased 10x15 pan (can be put in a 9x13 cake pan). Mix 1 egg, 1/3 cup of sugar and 8 oz. of cream cheese (soften). Drop spoonfuls of cream cheese mixture in cake batter and swirl with butter knife. Bake at 350 until cake portion springs back up when touched (approximately 25-30 minutes).

Chocolate scones 2 cups flour 1/2 cup sugar 1/3 cup unsweetened cocoa powder 1 Tbsp. baking powder 1/2 tsp. salt

In a large bowl, stir together flour, sugar, cocoa powder, and salt. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Make a well in the center and set aside. In another bowl stir egg, cream, and vanilla together. Add to the flour mixture. Add in chocolate chips. Using a fork, stir until just moistened, being careful not to over mix. Turn the dough on a lightly floured surface. Gently knead until it’s nearly smooth, adding more cream if necessary. Divide in half. Make two circles and cut each into 6 wedges. Brush heavy cream onto each of the wedges and sprinkle with powdered sugar.

Place wedges 1 inch apart on a baking sheet and bake at 400 degrees for 1214 minutes or until bottoms are lightly browned. Cool on a wire rack. Enjoy!

Greek yogurt creme brulee 2 cups plain Greek yogurt 3 Tbsp. sweetener of choice 3 egg yolks

1 tsp. vanilla extract 1/4 tsp. cinnamon

Blend together until smooth. Pour into ramekins. Set ramekins in baking dish. Fill baking dish with hot water around the ramekins. Bake 25 minutes.

They should still be quite jiggly and not puffed up. Remove and cool. Then refrigerate for at least 1 hour. Prior to serving, sprinkle with 1 Tbsp. of sweetener and torch to melt and caramelize.
