Addressing a changing market

Inaugural forum gives people in dairy supply chain opportunity to learn, engage

BLOOMINGTON, Minn. – Midwest Dairy Association has seen a shift when it comes to how people are using dairy products. “… In our interviews with companies, processors, co-ops, retailers, food service and farmers, we discovered that the marketplace is changing,” said Lucas Lentsch, chief executive ofcer for Midwest Dairy.

This change is what pushed the checkoff organization to host the inaugural Dairy Experience Forum, which had a theme of “The Critical Connection – Engaging with Consumers to Build Dairy Demand.” Over 300 people attended the event July 24-25 in Bloomington, Minn.

“It’s a convening of the supply chain,” Lentsch said about who attended the event. “That just doesn’t happen often.”

Lentsch estimated that up to 70 percent of the participants were dairy farmers.

Midwest Dairy wanted to show how important it is to change marketing tactics to match the evolving consumer and receive feedback from the

“The vision we settled in on was really a focus to bring dairy to life and to do that by way of giving consumers an excellent dairy experience,” Lentsch said. “We realized we have to move in the conversation. … Repositioning the same things we were saying before, but in a conversational way that joins consumers where they are so we can connect on our shared values that help build trust.”

Allen Merrill, chairman of Midwest Dairy, said the forum was a good way to get farmers involved in the marketing process.

“We want to give dairy farmers some insight about how our consumer is changing and how we can adapt to them,” said Merrill, who milks 150 cows near Parker, S.D. “We also want that dairy farmer input because they have an invested interest here.”

Although dairy farmers have had

the opportunity to submit their suggestions to Midwest Dairy in the past, Merrill said the forum is a new way to tap into those ideas.

“We’ve always encouraged dairy farmers to share what they’re doing,” he said. “Maybe we struggled to give them the right venue to bring that thought process out. That’s what we’re trying to accomplish – sharing, Turn to FORUM | Page 4

communicating and nding out what challenges there are.”

One of the most talked-about sessions of the forum was a consumer panel. Midwest Dairy selected six participants to answer questions about their food purchasing habits in their household.

“The consumer panel was a tremendous opportunity to look into the day in the life of a conicted health seeker. That’s the focus we have settled in on, on the dairy check off side is to look at that moveable middle in the country – the people who are likely to have dairy in their grocery cart, but may have other alternatives in their grocery cart, too,” Lentsch said.

All six panel participants consume dairy products, although not all of them drink milk. A few purchase dairy for themselves along with children in their family, while others buy it for themselves or another adult in their household. One participant buys yogurt for her dogs. A few buy whole milk, while another said she purchases skim milk, partly because it is what she had growing up and what she is used to. Sometimes, panel participants said they do not like certain dairy products because of texture or taste.

A few have ties to dairy with family members or distant relatives who milk or have cows. One purchases organic milk because she wants to support a friend who is an organic dairy farmer. Others rely on the internet for information about dairy farms. If given the chance, several said they

A few panel members did not know if they want to visit a dairy because they did not want to see or experience something that might deter them from drinking milk.

Although most of them purchase conventional dairy products, a few said they try to buy organic if possible.

To one person, local means within 50 miles, while another person said up to 100 miles. They are willing to pay extra for these products.

To one participant, food is a big topic of discussion to her group of friends. Sometimes she feels like it is a competition between them to see

who can test a new product rst. Since many of her friends are vegan and vegetarian, this panel participant does not always choose dairy.

ConƟnued from FORUM | Page 4 especially one participant who works with kids in a sport-related eld. He likes several dairy products because of the amount of protein they provide. Another mentioned the protein in cheese she serves to her kids for snacks.

A few panel participants mentioned labeling can be confusing and would prefer it to be more straightforward. Many of them said they do not fully understand GMOs and sometimes feel they would prefer dairy products from cows not fed GMO crops; however, they said they know that probably would not always happen.

“There’s a real enjoyment we know consumers can have with dairy,” Lentsch said. “We saw that on display.

We also saw six different people, personalities and consumer sense of interest from having their favorites on

one end of the spectrum to things they wouldn’t eat on the other. That’s what this conversation is about – joining consumers, listening to where they’re at, what messages are resonating and being willing to navigate together as

That is why Merrill sees the forum as a benet to the dairy community.

“One thing we’ve always seen is when dairy farmers get together in a room and they have the chance to interact with each other … it spurs that thought process,” he said. “We are looking to change how we do business moving forward, but we know we have to because our consumer is changing ahead of us.”

The food industry is changing

Lee shares what current, future consumers want

BLOOMINGTON, Minn. – Mike Lee knows people have a different dynamic with food now than they did years ago.

“The food industry is rapidly changing,” said Lee, owner of The Future Market.

Lee presented the seminar, “The Future of Food,” July 25 during the Dairy Experience Forum in Bloomington, Minn.

“One thing we’re seeing … is small food is becoming big food,” Lee said.

This is evident in two statistics he shared. Since 2009, the top 25 U.S. food and beverage companies have lost $18 billion in market share; and 88 percent of about the 900 food and beverage products that have been added to store shelves in the last ve years have come from smalland medium-sized companies.

Food choice is now more consumerdriven and geared towards the 21st Century eater, he said. Lee expects the future food market to be more exible, more experiential and more productive.

There is more exibility these days in where to buy food.

“People used to have to abide by the rules of the grocery store, meaning it was at this location, open these hours and arranged in this aisle,” Lee said. “That’s not the case anymore.”

Digital grocery delivery is becoming the norm with about 20 percent of all grocery sales coming from online shopping, he said.

“We are in the me generation of food,” Lee said. “It’s demand driven, not supply driven.”

In the future, Lee sees this becoming enhanced. There are early-stage technologies coming out to have drone delivery and other autonomous food delivery robots. There is also a pilot program for a big-name company to

deliver food to a person’s house, access their kitchen and put their food away for them.

“A grocery store is no longer contained within the walls of a single building,” Lee said. “The market of the future is really in ex to t around the lives of shoppers and not the other way around.”

Lee also sees the future food market as being experienced-based.

“Brick and mortar retail has to be more of a trip, especially for center aisle goods,” Lee said. “When I can click on the couch and get all this stuff sent to me, why would I need to put pants on to go to the grocery store? You have to make it worth your while.”

To enliven the environment, grocery stores are adding restaurants, which Lee called groceraunts.

“It’s the excuse they’re trying to create to go to the retail,” Lee said.

Stores are also adding more to the produce aisle.

“Everyone has an idyllic vision of going to the farmers market,” Lee said. “This is a fanaticized experience of shopping for food, but it can’t be everywhere all the time.”

Certain stores are trying to recreate the farmers market feel with their displays, along with a touch-screen video system where shoppers can pick up a vegetable and have a meaningful conversation with someone – a chef, nutritionist or farmer – through the screen.

How food is produced is also changing in the future market, Lee said.

“What used to be grown on the farm is now being challenged,” he said.

Greens are being grown in temperature-controlled environments inside and garden rooftops are redening the meaning of locally-grown in urban areas.

“Where will this end up in the next 10 years?” Lee said.

Although still far off on the horizon, Lee said lab-grown meat is an area to watch.

“It upends the whole system of what it means to be meat or grow food,” he said.

This same type of technology might also creep into the milk market.

“It’s shrinking the footprint of what is required to produce food and it’s feasible; these products … could imbed themselves in the supermarket,” he said.

The 21st Century eater is changing the way food is marketed because he or she is demanding certain factors from their food.

“There is no one consumer anymore; however, the pattern we’re seeing in 21st Century eaters are at the intersection of health, sustainability and experience,” Lee said. “The future eater wants all these things at the same time.”

Experience is a big part of this pattern.

“Food has now become an extension of our identities,” Lee said. “For the rst time ever, teens are spending more money on food than clothes.”

They are trying to control what they can in their life through their food choices.

“Basically they’re saying … I’m not a farmer, but this is the type of farmer I would be if I was,” Lee said.

There has also been a shift in food choice with 20 percent of people following strict diets, whether for health or personal reasons.

“It’s never been easier to nd your tribe online,” Lee said. “Before it was hard to address all these markets because they weren’t connected. They’re distributing now, have buying power and are changing the face of food.”

This is driving a multitude of brands to emerge.

“I don’t think right now you can create a Coke or a Pepsi like they did in the old days,” Lee said. “We were much blockier as a segment … and could mass market. It’s harder to do that now because you have to speak to these food choices. We want to express ourselves through food.”

Sustainability is another factor the 21st Century eater wants.

“I think the dairy industry has done a really great job of it over the years becoming more efcient with how to produce milk,” Lee said. “The 21st Century consumer should embrace that.

But what does sustainability taste like?”

Brands and restaurants are starting to revolve their focus around using foods and products that are more sustainable, and marketing them to people that way. For example, one restaurant Lee mentioned focuses on making meals using cover crops.

“We have to nd a way in the next wave to make sustainability delicious,” Lee said.

Health is the third aspect 21st Century eaters want from their food.

“We’re moving to a place where food ties to a person’s specic health,” Lee said Much of this includes upcoming technology of tracking and measuring food, portable food scanners that analyze chemical composition of a food item and image recognition of food to gain nutritional data. Lee said companies might take it further and use technology in order to analyze a person’s gut in order for them to make personalized food choices.

“It’s creates this dashboard that I think we’re eventually going to get to,” Lee said. “As a person who sells food at scale, this is extremely daunting. It’s personalized food.”

To many consumers, health means plant-based. Lee said about one-third of Americans are exitarians, which means they try to eat mostly plant-based foods, but will eat meat every once in awhile.

“I don’t think this is going away,” Lee said.

Companies are inltrating the meat and dairy cases with imitation products that are continually putting more money and research into making their products taste like the real thing.

“Many are 80 percent there,” Lee said. “Right now [dairy] has an advantage because there’s a gap in taste for most of these things. That gap is closing every single day. You have to assume they will one day close that taste gap. It’s necessary to be prepared for when that happens. What do I do?”

Overall, when it comes to the future, Lee said dairy has opportunity and needs to focus on innovation and choice in product.

Tveten trying to get more dairy into food shelves

Milk for those in need

LEWISTON, Minn. – What started as donating food for a church drive has now morphed into something bigger.

For the past few months, Kristi Tveten has tried to get more milk and dairy products to people in need through two local nonprot organizations: Food For Families through the Hometown Resource Center in St. Charles, Minn., and the Rushford Food Shelf in Rushford, Minn.

“To me, we have this wonderful [dairy] product that’s good for you and there are so many varieties … and here we have hungry people in our country and in our backdoor. How do we get this to them? I don’t know any other way than to physically do it myself. I’m just trying to do something. It’s not about me,” said Tveten, who milks 40 cows with her husband, Dave, near Lewiston, Minn.

The food shelf came back with an enthusiastic yes. It had been nearly a year since

the food shelf had received any milk as a donation, said manager, Andrea Andresen.

“The biggest issue in having dairy is that it’s perishable so we need to have fridge space,” Andresen said. “And people come in once a month

so we have some weeks where we’ll serve 30 households in one day and the next serve eight households in one day.”

The Rushford Food Shelf helps about 110 households with a total of about 300 people, 90 of whom are children.

After talking with the Rushford Food Shelf, Tveten wanted to see if the situation was the same in other communities so she called the food shelf in St. Charles. There, the supplemental food shelf that helps about 70 to 100 families per month is a part of the Hometown Resource Center, which also has a thrift store to cover the operating expenses.

It also offers a one-time-amonth program called Food For Families, which distributes food to about 60 families in need.

“That’s where we try to get the fresh produce and milk,” said JoAnn Wegman, who works with the Hometown Resource Center.

Like the Rushford Food Shelf, Food For Families rarely received dairy products to distribute.

“We have food drives that wonderful civic organizations help us with, but it’s also the canned goods,” Wegman said.

“What we have a difcult time getting are the highly perishable products, which includes dairy and produce.”

Tveten decided to help.

The organizations have been grateful.

“People were very happy to have milk,” Wegman said. “Because we now have a healthy supply, we don’t have to limit how much milk we give to a family. We do receive some dairy products through Channel One [the food bank in Rochester, Minn.] when we order our food, but dating and shelf life is one of the biggest issues.”

Andresen has also been grateful for the donations.

“Milk is just such a basic staple … and it’s such a healthy thing for people to drink,” she said. “It pro-

The Tvetens donated enough milk for the Food For Families program for one month.

“It was getting a little bit bigger than I could do nancially, especially as the milk price takes a dive,” Tveten said.

Since then, a family friend of the Tvetens stepped up to donate milk and butter one month along with the Winona County American Dairy Association another month. Tveten is hoping to nd other organizations that are willing to help donate dairy products to the program in the months to come. She is also working with the Food For Families program to potentially set up a dairy fund or a voucher system where people could donate money to go towards dairy products rather than needing to have the products on hand all the time.

“It’s nothing grand or great,” Tveten said. “I’m just trying to get a little bit of milk in the food shelf.”

But working with these organizations has also meant more to Tveten than getting food to those who might not be able to afford it.

“It makes me sad to know dairy farmers are losing hope,” Tveten said. “We are being told we’re over producing, but there is a need for our product. Dave and I have been milking cows for a long time, and I don’t ever remember seeing it be such a long stretch [of low milk price]. … I really wish we could turn it around, especially for the young men and women who want to make this their life. I felt there had to be something I could do.”

Tveten hopes her small actions will help spur others to do the same or come up with ideas to help others and move the milk market at the same time.

“I also believe by getting this out to families, we might encourage new habits with kids,” Tveten said.

“We all know how important it is for a kid to have their milk. I shudder at the thought of a child not having it at their ngertips. I know there are hungry people out there who need our product.”

Pizza cheesemakers gearing up for heavier sales

The Agriculture Department announced the July Federal order Class III benchmark milk price at $14.10 per hundredweight (cwt.), down $1.11 from June, $1.35 below July 2017, and the lowest Class III since February 2018. It equates to $1.21 per gallon, down from $1.31 a month ago and $1.33 a year ago.

The seven month Class III average is at $14.37, down from $16.02 at this time a year ago and compares to $13.73 in 2016.

Late Friday morning Class III futures portended an August price at $14.82; September, $15.63; October, $16.19; November, $16.28; and December $16.12.

The July Class IV price is $14.14, down 77 cents from June, $2.46 below a year ago, and the lowest Class IV since April 2018. Its seven month average is at $13.73, down from $15.30 a year ago and compares to $13.42 in 2016.

California’s July Class 4b cheese milk price is $14.09, down 34 cents from June, $1.20 below a year ago, a penny below the FO Class III price (smallest differential since February’s 2-cents) and the lowest 4b price since March 2018. Its seven month average is at $14.06, down from $15.14 a year ago and compares $13.02 in 2016.

The July Class 4a butter-powder milk price is $13.72, down 50 cents from June and $2.69 below a year ago. Its seven month average is at $13.42, down from $15.07 a year ago and compares to $13.11 in 2016 You’ll recall that preliminary USDA data reported June 50-State milk production at 18.3 billion pounds, up 1.2 percent from June 2017. USDA’s latest Dairy Products report shows where that milk went.

Cheese output totaled 1.06 billion pounds, down 1.9 percent from May but 1.8 percent above June 2017. Year-to-date output stands at 6.4 billion pounds, up 2.2 percent from a year ago. June was the 63rd consecutive month that output exceeded that of a year ago.

Wisconsin remains the Number 1 cheese producer, hitting 276.5 million pounds in June, down 3.1 percent from May and 0.7 percent below a year ago.

Number two, California produced a tad under 205 million pounds, down 5.5 percent from May and 1.1 percent below a year ago.

Idaho provided 83.7 million pounds, up 8.1 percent from May and 1.1 percent above a year ago. Minnesota, at 62 million, was down 2.6 percent from May but 2.6 percent above a year ago. New Mexico output

totaled 73.9 million pounds, down 2.0 percent from May but a whopping 16.2 percent above a year ago.

Italian cheese totaled 449.7 million pounds, down 1.8 percent from May and 0.1 percent below a year ago. Year to date (YTD) Italian is at 2.7 billion pounds, up 2.4 percent from a year ago. Mozzarella, at 354.4 million pounds, was up 1.4 percent, with YTD at 2.1 billion pounds, up 2.7 percent.

American type cheese production totaled 430.5 million pounds, down 2.9 percent from May but 2.7 percent above a year ago, with YTD at 2.6 billion pounds, up 1.6 percent. Cheddar output, the cheese which is traded daily at the CME, totaled 314.1 million pounds, down 1.8 percent from May but 4.0 percent above a year ago, with YTD Cheddar at 1.9 billion pounds, down 0.9 percent.

Churns produced 143.5 million pounds of butter, down 14.7 percent from May but 3.1 percent above a year ago. YTD output is at 1.02 billion, up 4.1 percent.

California butter totaled 44.5 million pounds, down 12.3 percent from May but a hefty 9.5 percent above a year ago. Pennsylvania output fell to 6.6 million pounds, down 23.1 percent from May and 10.7 percent below a year ago.

Yogurt output amounted to 369.3 million pounds, down 1.9 percent from a year ago, with YTD output hitting 2.2 billion pounds, down 3.0 percent.

Dry whey for human consumption totaled 85.9 million pounds, up 2.9 percent from May but down 0.8 percent from a year ago. Stocks totaled 71.3 million pounds, up 7.4 percent from May but 13.1 percent below those a year ago.

Nonfat dry milk production totaled 148.2 million pounds, down 7.3 percent from May and 9.0 percent below a year ago. YTD output stands at 968.8 million pounds, up 0.8 percent. Stocks climbed to 301.9 million pounds, up 31.2 million pounds or 11.5 percent from May and are 4.1 million pounds or 1.4 percent above those a year ago.

Skim milk powder production totaled 58.9 million pounds, up 16.9 percent from May and 49.1 percent above a year ago. YTD skim is at 284.2 million pounds, down 2.1 percent from a year ago.

FC Stone’s Dave Kurzawski says “The startling number out of this report was the powder stocks number over 300 million pounds.” He points out that “Stocks came in at 301.9 million up 11.5 percent month over month on relatively soft production of 148.2 million pounds. We assumed demand slowed in June, but not by this much. Using our estimates today’s report suggests domestic disappearance for

June was down 42 percent from last year. Something doesn’t quite add up there, either there will likely be a revision for the June number or we’ll see sharply higher July demand.”

The report was less dramatic for cheese, he said, with “a strong shift out of other American style cheeses into Cheddar,” and “Butter continued its grind higher as hot weather in the US and Europe was keeping bids beneath the market.” He says the market may be more focused on heat and tighter cream supplies than the Dairy Products report.”

July was the real hot month, especially in the West, he argues, “We really need to see those numbers later this month. What we can tell you is that we expect the heat to have a material impact on the fat content of milk. While you may say ‘this is normal,’ what’s not normal is the material decline in fat in European milk.”

A slightly higher U.S. All Milk price average and lower feed prices pushed the June milk feed price ratio up for the rst time in six months. The Agriculture Department’s latest Ag Prices report shows the June ratio at 1.98, up from 1.90 in May but down from 2.31 in June 2017.

The index is based on the current milk price in relationship to feed prices for a dairy ration consisting of 51 percent corn, 8 percent soybeans and 41 percent alfalfa hay. In other words, one pound of milk today purchases 1.98 pounds of dairy feed containing that blend.

The U.S. All-Milk price averaged $16.30 per cwt), up a dime from May but a dollar below June 2017. Michigan was on the bottom, with $14.80, unchanged from May; California was at $15.63, down 3 cents from May; and Wisconsin was at $16.50, down 20 cents from May. June corn averaged $3.58 per bushel, down 9 cents from May but is 15 cents per bushel above June 2017. Soybeans averaged $9.55 per bushel, down 29 cents from May but 45 cents per bushel above a year ago. Alfalfa hay averaged $181 per ton, down $8 from May but $27 per ton above a year ago.

Looking at the cow side of the ledger; the June cull price for beef and dairy combined averaged $66.30 per cwt., up a dime from May, $10.20 below June 2017 and $5.30 below the 2011 base average of $71.60 per cwt.

The Daily Dairy Report’s Sarina Sharp adds that “The price being paid across the country for quality Holstein springers has averaged $1,200 per head over the past month, putting the cost of replacement heifers at lows not seen in decades.”

Block Cheddar closed August 3 at $1.5875 per pound, up 6 3/4-cents on the week and the highest since June 18, but 11 cents below a year ago. The barrels nished at $1.4750, down 4 1/2-cents, 5 1/2-cents below a year ago, and 11 1/4-cents below the blocks, with 3 cars of block sold on the week and 52 of barrel.

FC Stone’s Kurzawski wrote in his August 2 Early Morning Update; “The relationship between blocks and barrels has been exacerbated by trade wars as less cheese exports means more surplus milk will move into barrel production that will have to nd a home domestically. Although there are some headlines that the US is making progress on trade deals with Mexico on autos. If there’s a deal made with Mexico that could signicantly change the perception of the cheese markets as we will have more certainty on the US export prospects.”

His rst point was that the U.S. will not likely lose 100 percent of its trade with either country. If we lose, say 20 percent of our sales with Mexico, for example, if other countries increased their purchases by 6 percent, we would offset that loss.

“I think we can certainly do that out of Southeast Asia, Indonesia, Vietnam, even Japan potentially, maybe the Middle East” Kurzawski concluded. “It’s not an insurmountable number. It is a number that remains to be seen. We don’t know if that’s going to be the case, to fully offset it. I think it will be responsive to price, so if the U.S. can maintain a little bit of discount to the world prices going forward, I think we have a seat at the table to move product globally in a bigger way.”

Dairy Market News reports that some Midwest specialty cheese producers plan to cut production by a day per week during their slower period while pizza cheesemakers are gearing up for heavier sales as schools and colleges prepare to open their doors, and football season draws near. Cheese producers are “slightly anxious, but hopeful regarding some steadiness moving forward in the cheese markets.” A majority of spot milk purchases moved closer to at market, while some discounts and premiums were reported.

The range was $3 under to $1 over Class III but producers who took on discounted spot milk do not expect the same deals the following week, according to DMN. Western cheese output is steady, and manufacturers have plenty of milk. Even with summer heat suppressing milk volumes and components, cheese output has been active. Inventories were at record levels in June. Cheddar stocks are in “relatively good balance, while mozzarella and hard Italian cheeses are long.” Cheese purveyors describe demand as not good enough but are hopeful that as schools start up and football seasons begin, institutional food service sales may improve and pizza sales may start to draw down mozzarella stocks.

CME butter nished Friday at $2.32 per pound, up 5 3/4-cents and the 4th consecutive week of gain, but is 41 cents below a year ago. 25 carloads found new homes on the week.

Butter makers continue to sell cream to the spot market instead of churning. Butter producers maintain that retail and food service sales are meeting summer expectations. Fall outlooks are mixed but most lean bullishly, with suggestions that the lack of churning currently will lead to “a balanced, if not favorable, supply/demand ratio.”

Tighter cream stocks are restricting Western butter manufacturing as ice cream and butter makers compete for available cream. Issues with truck obtainability combined with higher temperatures are making it tougher to move cream in some areas. Some processors are selling part of their cream to take advantage of the higher premiums and to save on storage. As a result, butter stocks, although still abundant, are not building. Butter demand is mixed, according to DMN. Cash Grade A nonfat dry milk closed a penny higher on the week, at 82 3/4-cents per pound, 3

1/2-cents below a year ago, with 21 cars selling on the week.

Spot dry whey closed Friday at a fresh high for the brand new market at 43 1/2-cents per pound, also up a penny on the week, with no sales reported.

Cooperatives Working Together (CWT) member cooperatives accepted offers of export assistance from CWT that helped them capture contracts to sell 908,305 pounds of Cheddar cheese and 14.495 million pounds of whole milk powder to customers in Asia and Oceania. The product has been contracted for delivery through December.

CWT’s 2018 exports now total 45.446 million pounds of American-type cheeses, 12.085 million pounds of butter (82 percent milkfat) and 27.106 million pounds of whole milk powder to 29 countries on ve continents. These sales are the equivalent of 889.245 million pounds of milk on a milkfat basis.

In politics the Senate, in an 84 to 14 vote, defeated a proposed amendment to an appropriations bill that would have prohibited the Food and Drug Administration from enforcing dairy standards of identity on product labels. At issue is the practice of plant-based beverages calling themselves “milk.”

The National Milk Producers Federation praised the action, stating; “We are very pleased with the Senate’s overwhelming rejection of Senator Mike Lee’s (R-UT) blatant attempt to interfere with the ability of the Food and Drug Administration to enforce standards of identity for dairy products and other foods.

We fought this amendment because it would have undermined the decades-long policy, established by Congress, that the FDA should regulate food names in order to promote honesty and fair dealing in the interest of consumers.”

International milk prices have been in a weaker trend as buyers and sellers adapt to shifting demand patterns due to tariff pricing impacts. However, prices may have found a bottom as New Zealand butter and cheese prices firmed this week. U.S. milk product prices and CME Group futures are trying to move higher but continue to struggle with regional sellers needing to lighten temporary cheese inventory surpluses. Buyers at the CME spot session remain active when this product hits the market as they see value at the lower end of the trading range and expect supplies to tighten.

Rumors are circulating out of the EU that hot and dry conditions may be impacting milk production. Higher EU milk product prices in AMS weekly reports will likely provide the first indication of tightening supplies.

Details of the new dairy revenue protection program (DRP) are just being released. As an insurance provider of LGM and the new DRP products, DVi got a glimpse of how the program will function. Although early in the evaluation process, it does appear that DRP could be another effective

tool to manage milk revenue, but producers will need a good understanding of its complexities to maximize benefits.

Talk to anyone in the industry that used the MPP program and you will likely hear a story of disappointment. No matter what you think of this or other government programs, the reality is that producers need to educate themselves on how to successfully use them. As hard as this is to hear, dairy producers who had a bad first year MPP experience had nobody to blame but themselves as there were much better and cheaper options at the time to manage a market value.

Grain markets are seeing strength as the critical fill period raises production concerns. Crop conditions have a Goldilocks story to them. Some areas are hot and dry, others cold and wet, but over 70% of the acres are just right.

Production should be adequate, with markets watching demand for price direction.

New Jersey dairyman bridging consumer-producer gap

RINGOES, N.J. – With a simple question of how much ice cream a customer would like, Jared Weeks has the opportunity to inform consumers on his dairy farm, the milk his cows produce and his way of life.

First-generation dairyman Weeks and his wife, Treacy, are the owners of Hun-Val

Dairy and the Red Barn Milk Company, both near Ringoes, N.J. The Weekses milk 50 registered Brown Swiss and Holstein cows in a tiestall barn equipped with tunnel ventilation and mattresses.

Weeks manages 250 acres of land to supply his herd’s total mixed ration of corn, soybeans, alfalfa and grass hay.

The cows also have access to 25 acres of pasture.

Not having been raised on a dairy farm, Weeks was rst exposed to the industry through a 4-H dairy project when he was 8.

“I have three older sisters, and they all got involved in dairy 4-H,” Weeks said. “I got into it as well. They were going, and I kind of got dragged along being the youngest.”

Weeks’ experience in 4-H morphed into obtaining his rst part-time job at a neighboring dairy farm. He then worked at several other dairy farms before graduating high school in 2005.

“I decided [farming is] what I wanted to do,” Weeks said. “I opted to jump in with both feet. I rented a barn and started milking on my own in

2006.”

Weeks started his Hun-Val Dairy herd with 14 cows, in part with funding from a youth loan with the United States Department of Agriculture Farm Service Agency.

In 2008, Weeks built the current tiestall barn on Treacy’s parent’s farmstead. The Weekses live on an adjoining farm where Treacy trains horses.

“It was a nice t to diversify the farm a little bit and to allow myself and my wife to stay here and carve out our own niche,” Weeks said of building the tiestall barn. “[Her family] still operates the way they always have.”

They are aided in the dayto-day tasks of the dairy by one part-time employee.

The majority of the milk produced at Hun-Val Dairy is sold to Readington Farms, Inc., a processor in Whitehouse Station, N.J. Their milk is also sent to a creamery in Pennsylvania where it is pasteurized and bottled, and then returned to them to be sold in New Jersey.

The milk offered for sale is non-homogenized and was the rst dairy in the state to bottle their milk. The milk now carries the “Made with Jersey Fresh Milk” logo.

Red Barn Milk Co., was founded in 2017 and also offers a small food menu with the beef and pork coming from the two farms’ animals.

Weeks said the value-added avenue of his dairy was formed out of necessity and a way to keep his farm diversied.

“Milking cows is what I always wanted to do,” Weeks said. “With the way milk prices are right now, just milking cows … is not good enough.

When it comes to paying bills and keeping a positive cash ow, 50 cows doesn’t cut it. We branched into the milk bottling rst and then later on got into the ice cream and restaurant side of things.”

In addition to providing a supplementary income stream, Red Barn Milk Co. has allowed Weeks to connect with a population not familiar with agriculture.

“It’s a good way to connect with consumers,” he said. “We try our best to educate them on the industry and what producers are up against as far as challenges. The ultimate goal is that we try to use the platform we have to shed a positive light on the industry in general and get people more connected to where their food comes from.”

Weeks said being in New Jersey, home to over 9 million people, the vast majority of visitors to their ice cream parlor do not know what is involved in producing milk.

“The sad reality of how most people think is that milk comes from the grocery store,” Weeks said. “We need to do a better job. Customers are our biggest assets. Well-informed customers are an even stronger asset.”

For the future of Hun-Val Dairy, Weeks said the plan is to build a processing facility in order to bottle their own milk.

“My main focus now is really honing in what we are already doing and doing the best possible job we can with what we already have going,” Weeks said. “As far as the retail side of things, growing that side of the business out to its full potential. And, doing the best possible job we can with the cows.”

Weeks has advice for others searching to enter the retail space with their milk.

“It’s not for everyone,” he said.

“Producers have a rosy view on doing the retail side of things. … There’s a lot of other things that factor into that extra prot. And, some of it is extra cost.”

Weeks said he would recommend beginning bottling as he did: nding someone else to bottle the milk rst to cut down on expenses and maintenance. Even with the cost of paying someone to bottle his milk, doing so allowed Weeks to get his start while not being burdened with debt upfront.

“It’s invaluable … one of the key things when I went to my banker and said this is what we want to do [to build a processing facility], instead of giving them projections on what my potential income would be, I can hand them actual gures,” he said. “Bankers don’t work off of hopes and dreams, they work off of facts and gures.”

As a dairyman who carved his own start in dairy, Weeks is contented with his role in the industry.

“I’m rst generation,” he said. “I got into this on my own accord. It’s more of a legacy than an occupation.

We need to nd a way to bring new people in like myself and nd a way to keep the farms that are already operational and in business.”

Combs harvests barley Aug. 2

NEW LONDON, Minn.

– Waterview Dairy is most often a one-man dairy operation, with Steve Combs tending to his cattle and land.

But on days like Aug. 2, Combs is grateful for the help he receives from his wife, granddaughter and neighbor

on his 65-cow dairy in Kandiyohi County near New London, Minn.

“The best day on the farm is when you can spend all day to do half of a day’s work,” said Combs. “It’s supposed to rain on Saturday, so I have 1.5-day’s work to get done today.”

While Aug. 2 began like any other, Combs had a busy to-do list in front of him. He

Combs left the house at 5 a.m. and prepared the 12-stall step-up parlor for morning milking.

“We always try and have two people milking,” said Combs, who redistributes feed for the milk cows as they

After a short break from the chores, Combs was back outside mixing TMR for the milk cows, which was stored for evening chores. He also fed the youngstock and dry cows.

“When I’m doing chores, I like to look out and keep tabs on the alfalfa eld for deer,”

said Combs, whose dairy farm oversees his elds.

With the nice weather, Combs did not need to bed the cows, which are housed in an open-sided shed located north of the parlor. During the summer months, they are put out on pasture in the day and return to the facilities in the evening.

“The milk doesn’t suffer until it’s 20 degrees below and

The dairyman has been farming all of his life, working in a partnership with his father for 30 years before taking sole ownership eight years ago.

Today, Combs runs 280 acres of tillable land – 140 acres of corn, 40 acres of barley and the remainder used for alfalfa.

“I’ve done baleage for about 20 years,” Combs said.

“It’s a lot easier to put up hay without worrying about rain.”

Combs hires out corn silage harvest in the fall but tends to his small grains every summer.

“I’ve always done small grains,” Combs said. “It’s something I can make use of with the cattle because I don’t have the equipment for planting and harvesting soybeans.”

This year, Combs planted enough barley to make up 20 percent of his ration for his milk cows. The small grain provides about 3 percent more protein than corn.

By 11 a.m., Combs had completed his routine chores and was lling the grain bin with barley.

“I had to put the trailer away and button up the yard before I could get started with this,” Combs said. “The day is going good so far, so why change anything?”

After a quick lunch, Combs retreated to the elds with empty grain carts and a desire to nish as much barley harvest as possible.

In the late afternoon, Combs had three full carts of barley to unload. As he unloaded the grain, he also began evening chores around 4:30 p.m.

Combs used his skidloader to feed the milking herd their TMR in outdoor feed bunks as two young girls began milking.

During the days, Combs does all the chores by himself. However, in the evenings, high school students, neighbors or one of his grandchildren accompanies him. Those who help throughout the week are Chloe Lien, Kade Neal, Markus Sundin, Gavin Johnson, Rowan Johnson, Marshel Johnson and Juele Johnson.

“I’ve learned not to fret (about help),” Combs said. “It’s always worked out.”

Lien, and Combs’ granddaughter, Juele, milked on the evening of Aug. 2 so Combs could continue combining.

The girls managed 12 milking units and completed the chore in two hours.

“It’s especially nice to have their help when I want to keep going with a routine,” Combs said. “I know they can handle [milking] on their own.”

Both Lien and Juele appreciate the opportunity to work for Combs.

“This is just the perfect t. I love cows,” said Lien, who has helped Combs for 16 months.

Juele agreed.

“Milking is a job that you’re constantly busy,” she said. “Those two

hours y by.”

The day of Aug. 2 went as Combs had planned, thankfully with no hiccups. As evening fell, had combined 20 acres of barley, with 10 acres yet to complete in the coming days.

Deep roots in dairy Vinkemeiers named Carver County Farm Family of the Year

NORWOOD YOUNG AMERICA, Minn. – Jeff and Tina Vinkemeier are the sixth generation of the family to operate their 159-year-old dairy farm, Seven C Dairy, in Carver County. This year, the Vinkemeiers were recognized as the Carver County’s Farm Family of the Year from the University of Minnesota.

“We’re honored to be named farm family of the year,” Jeff said.

The Vinkemeiers, along with their six children – Courtney, 27, Carley, 21, twins Collin and Caleb, 19, Canton, 16, and Cadee, 14 – milk 150 cows and nish 40 dairy steers on their farm near Norwood Young America, Minn. They also grow corn, soybeans and alfalfa on 350 acres.

The Vinkemeiers’ farm has developed by diversifying their herd. The herd is made up of Ayrshire, Guernsey, Jersey, Brown Swiss, Milking Shorthorn, Holstein and Red and White Holstein.

“The breeds in the herd kind of stemmed from the kids’ 4-H projects,” Jeff said. “Each one wanted to show a different breed, and they just merged into our dairy herd.”

Carley said.

“Our farm is actually called Seven C Dairy because all of our names start with a C,” she said.

Jeff agreed.

“Tina’s name is Christina,” he said. “That’s where the seventh C comes from.”

Throughout the years, the children have gained a sense of ownership and responsibility on the farm. They each own a few head of cattle and help with chores.

With their dedication to the dairy farm, all of the children have also been involved in FFA and showing dairy cattle through 4-H. “Almost every day during the summer the kids will be walking up and down the driveway with a cow to prepare for the shows,” Jeff said.

The Vinkemeier children enjoy showing as they build connections with other youth across the state.

“Other kids do summer sports, we show cows,” Cadee said.

Jeff and Tina are involved in dairy organizations, too. Jeff is the coach for the county’s 4-H dairy judging team;

Tina served as the treasurer for the Carver County American Dairy Association. She is also a coordinator for the dairy ambassador program. Both serve on a committee for the Region 7 Dairy Show.

A lot has changed on the farm since it was homesteaded in 1859 by Jeff’s ancestors.

“Back in those days, farmers had a little bit of everything,” Jeff said.

“Pigs, chickens, dairy, crops. It was diverse, but it was smaller, too.”

After graduating high school, Jeff attended Hutchinson Community College and came back to farm with his parents, Gary and Colleen, in 1992.

“Farming was all I ever wanted to do,” Jeff said.

When Jeff and Tina took over the dairy operation in 1997, they were looking forward to advancing the operation. Although none of the original buildings remain standing today, the logs from a barn that once stood on the property were repurposed into beams for the current barn.

Jeff has made other changes to improve efciency on the farm such as a TMR feed mixer and a manure pit.

“The changes have made chores easier to do on the farm,” Jeff said.

There is a promise of a seventh

generation managing Seven C Dairy.

Collin is studying dairy management at Ridgewater Community College in Willmar, Minn., while Carley graduated with degrees in dairy science and agricultural business from Northeast Iowa Community College in Calmar, Iowa.

Both Courtney and Caleb reside in Oregon where they raise a variety of animals. Canton and Cadee are in high school and continue to be active in 4-H and on the farm.

“I’m happy that my children are interested in continuing the farm,” Jeff said. “The plan is to continue on and improve and possibly expand, depending on how many kids want to be on the farm.”

Collin agreed.

“You have to take it one day at a time,” he said.

Should I top-dress my alfalfa?

With current milk prices many dairy farmers are asking the question is it necessary to top-dress potassium on their alfalfa elds? To answer this question we rst need some information about the elds in question.

1. Is there a current soil test to evaluate the potassium level in the eld?

2. What is the past fertilizer applications of either manure or fertilizer?

If there is a soil test is available for your hay elds review the chart at the bottom of the test. This chart will give a snapshot of your current potassium (K) level in your eld. Now also review the K ppm in the chart on the test report, if K is below 70 ppm this is very low, 71-90 ppm is a low, 91-120 ppm is considered an optimum level, 121-150 ppm high, 151-220 is very high and above 220 ppm is excessively high.

The fertility removed by a 3.5-4.5 ton of dry matter yield of alfalfa or a mixed forage for the season will be about 240 pounds of K2O. Next, if you look at your report there is a recommendation for established alfalfa. If the soil test K is low the recommendation will be 280 pounds of K2O per acre or 465 pounds of potash. An optimum test would require 240 pounds of K2O per acre or 400 pounds of potash. A high test would require 120 pounds of K2O or 200 pounds of potash. A very high test would require 60 pounds of K2O or 100 pounds of potash per acre and excessively high would require no K2O. The amounts of fertilizer would be for the entire growing season and it is best to split the applications during the growing season. If the eld in question has a soil test we can determine the amount of fertilizer required to prevent a drop in soil fertility with forage crop removal.

What would happen if I decide that fertilizer will not be purchased because of tight margins? If your soil is high or excessive on the soil test you will essentially drawn down the nutrition level that is available in the eld. At the optimum or lower levels of fertility it could reduce yields of alfalfa, provide more stress on the alfalfa crop and ultimately reduce the stand life.

So as a dairy farmer what can I do if some funds are available for topdressing hay elds? If you have soil test and have applied manure or fertilizer in the past we need to credit those nutrients. Example the soil test was pulled and then corn was planted the past two years and you applied dairy manure at 10,000 gallons per acre. The corn crop didn’t use all of the potassium that was applied and some is available for future years of hay.

The next option would be to apply potash at the rate of crop removal at the minimum if your eld test low or optimum for potassium. Crop removal at 4 tons of dry matter (DM) will equal 240 pounds of K2O or 400 pounds of potash for the season. If your eld is high or very high you can reduce the amount of fertilizer you apply to 150 - 200 lbs. of potash for the season and if it is excessive no additional fertizlizer may be required.

If it is an older alfalfa stand and manure is available, application dairy manure at 5,000 gallons per acre will supply 85 lbs. K2O per acre using book values of K/1,000 gallon application rate.

So the question is should we top-dress potassium on our alfalfa elds in periods of tight margins? To maintain a stand for a number of years will require K fertilizing to maintain yield and the persistency of the stand. Farmer’s must pay attention to soil test levels and apply fertilizer at rates that are economical. Fields with high and excessive levels of K may have applications reduced while elds with lower test levels applications at crop removal will provide a return on investment in yield and persistence of the alfalfa stand.

Remember, seeding cost for alfalfa must be recovered over multiple productive years.

Bottom line if funds are available top-dressing alfalfa will return higher yields per year and an alfalfa stand with many more productive years for a return on your seeding investment.

If funds allow apply sulfur (S) and boron (B) as many areas of the state are low on these nutrients, which alfalfa requires. Use a sulfate source rather than dispersible sulfur as plants take in sulfur in the sulfate form.

Iowa State creamery set for fall debut

AMES, Iowa – Iowa State University students will soon be able to produce ice cream and cheese right on campus, thanks to a new micro-creamery operation set to debut at the university this fall.

Since she joined the ISU community back in 2009, Professor Stephanie Clark in the Department of Food Science and Human Nutrition has been dreaming of creating a full-edged creamery at the university to provide hands-on education about dairy product producing, processing and selling. And the rst phase of that dream will become a reality this fall, with the opening of a micro-creamery in the Center for Crops Utilization Research pilot plant, located within the Food Sciences Building.

“The students will have the handson training that will propel them into dairy processing positions nationwide,” Clark said of the micro-creamery. “Positions that some of our students are getting hired for now, but it will increase the number of students. This will put them into those jobs faster.”

Set to be located in the southeast corner of the pilot plant, the microcreamery will, at minimum, include a pasteurizer cheese vat, a separator to separate cream from milk and sanitation equipment. Additionally, walk-in refrigerator and freezer space to house nished products is slated to be located elsewhere in the Food Sciences Building.

Ideally, beginning this fall, Clark will train up to six students to work in the micro-creamery. Together, Clark and the student employees will start by producing ice cream, including the university’s signature ice cream avor, which was created by a team of university students last year.

In December 2017, senior food science students Mikaela Galdonik, Tim Lott, Evan McCoy and Geena Whalen won the ISU Signature Ice Cream Contest, with a recipe inspired by wellknown alumni. The creation, called “Cyscream,” features peanut butter ice cream with chocolate-covered rice crisps and fudge swirls, in honor of George Washington Carver (who made a signicant impact in the peanut industry) and Mildred Day (who is credited with inventing the Rice Krispie Treat).

The micro-creamery will also produce cheese, including an ISU signature cheese, although that recipe is still in the works.

“The idea is to use an educational environment to prepare students for working in either a dairy creamery or making cheese, making ice cream, yogurt, that sort of thing,” said Ruth MacDonald, chair of the Department of Food Science and Human Nutrition. “The idea is the cheeses and the ice creams that we will make will be for special occasions, events on campus.”

The milk used to produce the ice cream, and later on, cheese, will come from cows at the ISU Dairy Farm.

According to a university news release, funding for the micro-creamery is coming from Clark’s Virginia M. Gladney Professorship, as well as from the Midwest Dairy Association. Additional funding will be sought from dairy industry stakeholders in cooperation with

The soon-to-be micro-creamery is just the rst step of ultimately building and opening a large-scale creamery at the university, to be called the ISU Dairy Products Innovation Center (DPIC). Like the micro-creamery, the DPIC will produce ice cream and cheese, and serve as a place for students to gain experience working in the dairy industry. But it will double as a location for Iowa dairy farmers to visit to learn about how to turn their milk into products in a small-scale environment, rather than selling their extra milk to other states to use in production, Clark said.

Retail space would be included at the DPIC as well, according to the news release, where cheese and ice cream products would be sold. The DPIC is estimated to cost approximately $5.7 million and funding will be sought from private industry and alumni in cooperation with the ISU Foundation, the release added.

“A lot of other schools have this already in place,” MacDonald said.

“Penn State...it’s a huge facility on their campus, and students work there and learn how to make ice cream and cheeses, and they have an ice cream parlor.

We’d like to get to that point. We’re years away from that, but that would be our goal; to have an educational area, but also a fun place for people to come on campus.”

This summer, Clark will work with students in the CyBIZ Lab, which operates through the Ivy College of Business. Together, the students will go over Clark’s business plan and help her conduct feasibility studies as part of the process of turning her DPIC dream into a reality.

According to the news release, once the DPIC is up and running, Clark’s hope is that the micro-creamery will continue to operate in the Food Sciences Building to produce only the signature ice cream (to keep peanuts out of the DPIC).

“Having a commercial creamery is something that is missing here at Iowa State,” Clark said. “We’re an educational institution with roots in agriculture, and we should be producing, processing and selling dairy products, and teaching students how to do that.”

We cut third crop hay July 30 and chopped it July 31. We pile and pack it and cover it with plastic. It wasn’t quite RAINFALL as good as second TOTALS crop. There is still some Last 2 straw laying in the field. Weeks It was combined in late July and we’ve had a lot of drizzling days that hasn’t allowed it to dry.

We are getting dry. We had a half of an inch the last three days of July, but nothing since. We have been irrigating, RAINFALL but areas we don’t TOTALS get the irrigator to are Last 2 starting to show. We Weeks cut oats July 27-28 and started combining Aug. 2-3. We had armyworms take out 0.5” a 20-acre field. They just stripped the stalk.

We round baled straw all day today. I put 60 Since April 25 9.25” acres in late that we still have to cut. We have to do third crop hay; it’s a real nice stand. .5

We are so dry. The soybeans are aborting pods and the corn is starting to spiral in areas and not make RAINFALL ears. If we don’t get TOTALS rain this week the Last 2 corn and soybeans Weeks will be really hurting.

The alfalfa looks, though, and has only 4-6 inches regrowth 0.31” on third crop. The sunflowers and canola seem to be OK because they are more of a dry Since April 25 8.76” season crop. A couple guys around here just started straight cutting wheat. We’ll be at ours later this week.

We are almost done with third crop alfalfa.

We cut the final stuff today (Aug. 7). The hay was pretty decent, RAINFALL but didn’t mature as TOTALS quickly as possible. It Last 2 tested 211 on 34 days. Weeks We swatted our oats today and it was nice and ripe. We hope to combine on Thursday.

It’s been misting and raining enough to keep us from getting things done. When I went to check the rain gauge RAINFALL this morning (Aug 8), TOTALS there wasn’t a drop in Last 2 it, even though it’s been Weeks misty and damp. I’ve got a lot of hay down, but the weather screws it up every day. The third crop has been OK so far. Some isn’t too bad, but some has had a lot of bugs, especially grasshoppers, Since April 25 even though we sprayed.

13.8” The corn is hanging in there and maturing. Some on the sand is brown up to the ears. For the most part ours looks pretty good. The beans look pretty good, too.

We got an inch of rain last Tuesday (July 31) and another half inch yesterday (Aug 7). We have the third crop hay RAINFALL just about done. The TOTALS third crop was really light Last 2 with not having rain for Weeks the month of July, but the rain this last week should help the fourth crop get going. The beans look awesome. They are nice and tall and not suffering from the dry weather.

The corn looks great, tall Since April 25 8.9” and dark. For silage, it’s one of the best looking corn crops we’ve had in a long time. I’m guessing we’ll be looking at chopping corn mid to late September.

Things are looking pretty good right now. We were really dry. We’ve had about 3 inches in the past RAINFALL TOTALS two weeks. About a since July week ago, we got 2 25 inches. There was some spotty hail. We got lucky and didn’t get hit, but the guys 3” that did, stuff was stripped pretty bad.

Otherwise, the corn looks good; it’s all pollinated and starting to fill grain.

We’re starting out third crop this week. Again, we’ve been lucky, but our neighbors have had some trouble with armyworms.

The rain has been really spotty around here. One field will get none, while another field will get hammered. About 15 RAINFALL miles from here, it’s still TOTALS really dry. We’ve got our Last 2 third crop done. It was Weeks a lot of feed; it did well.

We got some rain right after we finished the third crop, so the fourth crop should grow well.

We’ve got all our wheat and straw off. The wheat yielded really well, in the Since April 25 mid 80’s. The corn is all 15.5” tasseled and looks good, especially after getting some rain.

We’re looking at starting to chop mid September. The beans are just starting to set pods, but they are looking good.

We are wet again. My brother is spraying fourth crop alfalfa RAINFALL for bugs and fertilizing TOTALS the field. The fourth Last 2 crop is two weeks away.

Weeks The silage corn is about a month out yet for chopping. We sprayed fungicide on our BMR corn last week. They are wrapping up the small grain harvest around here. We buy straw Since April 25 from a neighbor and we 24.3” brought it home Saturday (Aug. 4). The pastures have had plenty of moisture and look good. Everything looks really good around here.

Outstanding youth recognized as Distinguished Junior Members Holstein Association USA recently recognized six ďƒžnalists as 2018 National Distinguished Junior Members (DJM) at the National Junior Holstein Convention on July 3 in Acme, Michigan. This is the highest honor a Junior Holstein member may receive and is based on outstanding work throughout their dairy project career.

The ďƒžnalists for this year’s competition are Alexandra Gambonini, Petaluma, Calif.; Kayla Leiding, Fountain, Minn.; Erin Norris, Westhampton, Mass.; Joseph Opsal, Blue Mounds, Wis.; Nicholas Logan Potts, Purcellville, Va.; and Mary Scott, Westgate, Iowa.

Applicants completed two judging phases. Phase one, the Junior’s entry book, is worth 60 percent of the ďƒžnal score. The book highlights the Junior’s Holstein work, activities and projects, breeding program and personal views.

Phase two takes place at the National Junior Holstein Convention, where the twelve semiďƒžnalists are interviewed by a second committee. The interview accounts for 40 percent of the ďƒžnal score. The six individuals with the highest combined scores are recognized at the National Junior Awards Banquet as Distinguished Junior Member Finalists and receive an annual renewed membership to the Holstein Association.

The Young Distinguished Junior Member (YDJM) Contest selected eight Junior members as ďƒžnalists and were also recognized at the National Convention. The YDJM winners were judged on similar criteria to the Distinguished Junior Member Contest, but do not complete the interview phase.

SDSU Dairy and Food Science Professor Sanjeev Anand wins national teaching award Sanjeev Anand, professor in South Dakota State University’s Dairy and Food Science Department, is the recipient of the International Dairy Foods Association Teaching Award in dairy manufacturing. The award recognizes outstanding teaching of undergraduate students in dairy foods.

In the past ďƒžve years, Anand has inďƒ&#x;uenced approximately 250 students through his teaching and mentored 25 undergraduate research students. Additionally, two doctorate and 15 master’s students have graduated under his supervision.

Currently, Anand teaches two undergraduate courses with labs, dairy microbiology and food microbiology, and one graduate course, advanced dairy and food microbiology. He also advises graduate students and serves as a mentor for undergraduate research.

While teaching food safety, Anand realized the need to develop a 10-week on-line summer course dedicated completely to learning and applying the principles of Hazard Analysis Critical Control Point (HACCP) in the dairy industry using the SDSU Davis Dairy Plant as a model. Once this is initiated, Anand will be able to provide comprehensive dairy microbiology training to students from around the world.

A bumper crop Jennifer Zumbach had a few moments over the winter while her four kids were falling off to sleep to drop me a note and share some family favorite recipes she discovered. With a bumper crop of zucchini, she was looking for new ways to use up the produce. The jam is a true hit. She then ran across a raspberry pepper jam to use up extra jalapeno and green peppers she traded out with a neighbor for tomatoes. She froze the amount of each in bags, then dug them out later and used raspberries that she buys in 48-ounce bags from the store. In a few quick steps, she had jam to serve at Thanksgiving with crackers or pretzels and topped with cream cheese. It was such a hit with the family that she made up another batch for Christmas gifts. Wrapping up her recipes is the county fair dessert winner.

It has all my favorite parts – chocolate, raspberries and cream cheese. Thanks for sharing your stories and recipes with us, Jennifer. What new recipes have you discovered this summer? I would love to try them.

Apricot-zucchini jam 6 cups peeled and shredded zucchini 6 cups sugar 1/2 cup lemon juice 20-ounce can crushed pineapple 2 small packages of apricot Jell-O Bring zucchini and sugar to a boil.

Then, on medium heat, cook for 15 minutes. Add lemon juice and pineapple and cook for another 5 minutes.

Remove from heat and stir in Jell-O until dissolved. Pour into jars and boil in a hot water bath for 10 minutes for pints. Very refreshing.

Jalapeno raspberry jam 1 cup jalapeno peppers, diced nely 1 cup green pepper, diced nely 3 cups fresh or frozen raspberries 1 1/2 cups cider vinegar 1 package Sure-Jell 6 cups sugar Combine peppers, raspberries and cider vinegar. Stir in Sure-Jell. Bring to rolling boil. Quickly stir in sugar. Return to rolling boil, stirring constantly. Boil exactly 1 minute. Remove from heat.

Ladle into hot, sterilized jars and place hot lids and bands on. Hot water bath for 10 minutes (adjusted for altitude).

Zucchini pizza casserole 4 cups shredded unpeeled zucchini 1/2 tsp. salt 2 large eggs 1/2 cup grated Parmesan cheese 2 cups shredded part-skim mozzarella cheese, divided 1 cup shredded cheddar cheese, divided 1 pound ground beef or Italian sausage (can top with browned bacon) 1/2 cup chopped onion 15 ounces Italian tomato sauce 1 medium green or sweet red pepper, chopped Preheat oven to 400 degrees Fahrenheit. Place zucchini in colander; sprinkle with salt. Let stand 10 minutes, then squeeze out moisture. Combine zucchini with eggs, Parmesan and half of mozzarella and cheddar cheeses.

Press into a greased 9- by 13-inch or 3-quart baking dish. Bake 20 minutes.

Meanwhile, in a large saucepan, cook beef and onion over medium heat, crumbling beef until meat is no longer pink; drain. Add tomato sauce; spoon over zucchini mixture. Sprinkle with remaining cheeses; add red pepper.

Bake until heated through, about 20 minutes longer.

Grease and our a 9- by 13-inch pan. In a large saucepan, melt butter. Remove from heat, and stir in sugar, eggs and vanilla. Beat in cocoa, our, salt and baking powder. Spread batter into prepared pan. Bake in preheated oven for 20 to 25 minutes.

Combine all raspberry sauce ingredients in saucepan. Heat until boiling, reduce heat and simmer until thinker. Pour over cooled brownie.

Beat cream cheese and sugar until light. Fold in vanilla and whipped cream. Add chocolate chips. Pour on top of raspberry lling. Refrigerate for four hours. Can serve with chocolate syrup drizzle.

Natalie, Mark and his brother, Al, Schmitt farm together near Rice, Minn. They milk 100 registered Holsteins under the RALMA prex.

Sunday brunch casserole 1 (8oz.) tube of crescent rolls 1 lb. pork sausage or bacon 2 cups frozen hashbrown potatoes 1 cup cheddar cheese 5 eggs

2 cups milk 1 tsp. salt 1/2 tsp. pepper 1 tsp. dry mustard 2 Tbsp. Parmesan cheese

Pat crescent rolls in bottom of a 9- by13-inch pan, pressing edges together.

Brown sausage or bacon; drain fat off. Sprinkle meat over the crescent rolls.

Sprinkle with the hashbrowns. Sprinkle cheese on top. Beat the eggs, milk, salt, pepper and dry mustard together and pour over mixture over the cheese.

Sprinkle parmesan over the top. Bake at 375 for 45 min. to 1 hour. Can make the night before and bake in morning. I cover mine with foil and bake it the first 45 min. with it on, then take off and bake until a knife stuck in center it comes out clean.

Lazy lasagna 1 12 oz. pkg of egg noodles cooked 1 lb. hamburger 1/2 lb. pork sausage 1 medium onion 1/2 tsp. garlic powder 1 tsp. salt

1 tsp. pepper 1 tsp. italian seasoning 1/2 cup cottage cheese 1/2 cup sour cream 1 jar spaghetti sauce 1-2 cups shredded cheese

Cook and drain noodles. Brown meats and onion together, add spices and spaghetti sauce and simmer for 10-15 minutes. Put the cooked noodles in a bowl and add the sour cream and cottage cheese. Stir to coat the noodles. In a casserole dish, layer the meat and noodles twice starting with the noodles.

Sprinkle top with cheese of your choice and bake at 375 for 30-45 minutes uncovered.
