Selective dry cow therapy: Do the benets outweigh the costs?

ROCHESTER, Minn. – After decades of using blanket dry cow therapy, another option is emerging in the U.S. dairy industry.

Dairy farmers are toying with the use of selective dry cow therapy to treat cattle at dry off who are at a greater risk of infection, while not treating those who pose no risk.

“In November, we decided to try and implement a selective dry cow treatment program. Cost savings and better antibiotic stewardship were our reasons for trying selective dry cow therapy,” said Dr. Lindsey Borst of her family’s dry cow management decisions.

Borst is the herd veterinarian at Borst Family Dairy, LLC, where her husband, Kevin, and his family milk 230 cows near Rochester, Minn.

She also is a veterinarian with Northern Valley Dairy Production Medicine Center in Plainview, Minn.

Selective dry cow therapy has been a long-standing practice in New Zealand since the 1990s and was established as an acceptable practice in the Netherlands in 2012.

“Since 2012, preventative use of antimicrobials in livestock has been banned in the Netherlands. Some farmers may have been using selective dry cow therapy before that as a way to practice antimicrobial stewardship,” said Borst’s colleague, Dr. Jim Bennett.

As of recently, the practice has gained traction in the U.S. dairy industry.

“Over the last year, it’s become a greater topic of conversation as a way to reduce the use of antibiotics for preventing mastitis and to tighten costs on the farm,” Bennett said.

Blanket dry cow therapy was rst used to cure common pathogens, like Streptococcus agalactiae and Staphylococcus aureus, and prevent them from re-occurring shortly after dry off.

“For herds that were infected, it

was a slick way to get rid of and eliminate those pathogens,” Bennett said.

“Now, Strep ag and Staph aureus are no longer signicant problems on many farms; but blanket dry cow therapy is still benecial in treating old infections and preventing new ones caused by other organisms.”

Blanket dry cow therapy has also been known to improve udder health. In data recorded by the Council on Dairy Cattle Breeding, from 1995 to 2015, the average somatic cell count (SCC) dropped from 304,000 to 204,000 cells per milliliter in Dairy Herd Improvement herds.

However, as dairy farmers consider the use of antimicrobials on their farm and the public’s perception of antimicrobial use, selective dry cow therapy is now an option to closely consider.

While blanket dry cow therapy uses a dry tube and internal teat sealant to treat each quarter of every cow, selective dry cow therapy examines which cattle are at most risk for mastitis infection. Those animals are treated with a dry tube and internal teat sealant, while the remainder of the herd only receives an internal teat sealant.

If a dairy farmer chooses to use selective dry cow therapy, they must decide which cows to treat; but there is little current research available to help with this decision. Most commonly, farmers will use test day SCC and clinical mastitis to help, but they should talk to their veterinarian to develop the best criteria for their farm, Bennett said.

When the Borsts began using selective dry cow therapy, they followed a strict protocol in detecting any current infection or risk of infection.

“We were using a combination of SCC history, clinical mastitis history, milk culturing and CMT testing at dry off,” Borst said.

Cows with a SCC over 150,000, had any cases of clinical mastitis or showed growth cultures at dry off were treated with a dry tube and teat sealant.

A way to progress the farm

Schneiders develop niche with organic market

SACRED HEART, Minn. – When Jerry Schneider’s oldest son, Mike, wanted to return to the farm, changes were necessary to accommodate another family member.

While the opportunities for change were vast, the Schneiders focused on organic production, and have not once regretted that decision.

“When I was in college, I had to sit down with my parents and write down how the farm could make it if I came back,” Mike said. “I mentioned milking more cows, improving cow comfort and reducing feed costs. Dad wrote sell organic milk. Back then, I thought it was a pipe dream.”

Today, Mike and his younger brother, Jimmy, manage Schneider Farm LLP in Renville County near Sacred Heart, Minn. The farm consists of a 300-cow organic dairy herd and 1,300 acres of organic cropland for corn, soybeans, alfalfa and canning vegetables.

20 years ago, we had 50 cows and 200 acres,” Mike said.

“Because of the world we live in today, we had to become early adapters of different technology and practices.”

After Jerry and Mike’s conversation about farm progress and how to best incorporate Mike into the dairy, the Schneiders began transitioning from conventional to organic production. In 1994,

the land was certied organic, and six years later, the family joined Organic Valley Cooperative.

When Mike and Jimmy purchased the farming enterprise from Jerry in 2006, they continued developing the herd while maintaining longstanding practices.

The herd of Holsteins and Holstein-Jersey crossbreds are housed in two 100-stall

freestall barns, as well as an outdoor bedded pack.

After morning milking is complete, the herd is moved onto pasture for several hours before returning to the facilities for evening milking in a swing-14 parlor.

“All of our pasture is converted cropland, so there are no trees,” said Mike about the 100 acres of pastureland.

there, calm and sunny, we bring them inside. Our cows have no business being out in the elds in that weather.”

With permanent fencing, the land is divided into 60 paddocks and used throughout the grazing season – from May until October.

“We put up these fences many years ago,” Mike said.

Jimmy agreed.

“It works for us,” he said.

with the CMT test, they were also treated accordingly.

“All cows that were not treated only received a teat sealant,” Borst said.

Little research has conrmed the use of selective dry cow therapy as a measure to reduce costs on the farm, and it does not improve udder health.

“In general, the goal is to do no harm and maybe save money,” Bennett said.

A trial conducted by Cornell University’s Daryl Nydam, published this year, observed the economics of using selective dry cow therapy and found a benet of $6.87 per cow when only 35 percent of the herd was treated with dry cow tubes. However, it was noted more research is needed to conrm the ndings.

For the Borsts, any opportunity to reduce costs on the farm was quickly eliminated when two cows contracted toxic mastitis this past month.

“Cost-savings wise, we haven’t seen any because of the cases of toxic mastitis,” Borst said. “One case of toxic mastitis far outweighs any cost savings we might have seen.”

The Borsts have since returned to blanket dry cow therapy and have no intentions of reintroducing selective dry cow therapy into the herd in the near future.

“As a farm, we are always trying to stay ahead of the game, as far as what

ConƟnued from DRY COW | Page 3 our consumers are looking for, and that is one reason we tried to implement this program,” said Borst of selective dry cow therapy. “Up until this summer, our new program was going well, but as far as milk quality and animal health goes, there are no benets.”

To ensure selective dry cow therapy’s effectiveness, aside from deciding which cows are at a greater risk for infection, on-farm cleanliness needs to be a top priority for farmers using or considering using the management technique.

“We try to follow good hygiene procedures in the parlor, especially at dry off,” Borst said.

In the future, if the Borsts were to try selective dry cow therapy again, they would set the SCC perimeters at 120,000 or lower.

For farmers considering adopting new dry off protocols, they should speak with their herd veterinarian to develop a program most appropriate for their farm.

As with all protocols, the reasoning behind using selective dry cow therapy and how it relates to the farm’s overall goals should be closely evaluated before making any decisions.

“Some jump in and ask questions later, which is risky,” Bennett said.

“Talk with farmers who have done it and consider all the consequences and benets before diving in.”

the dairy side of Schneider Farm LLP during peak eldwork season, but there is also an economic incentive for the family.

“Our peak milk is in the winter, which correlates nicely with Organic Valley’s added $3 per hundredweight premium from December through February,” Mike said.

“We’re always zigging when everyone else zags.”

When the Schneiders were younger, they watched their dad develop the dairy herd by selecting traits conducive for organic production.

As the brothers now make the decisions on the farm, they continue developing the dairy herd in a similar manner.

The Schneiders use natural heat detection as well as patches to breed the cows

back quickly. They also use sexed semen.

“We like to milk young, fresh cows,” Mike said. “You can’t be afraid to cull cows and nd new ones. We try to keep a young lactating herd.”

Each decision made for the farm is aimed at improving herd health, whether that is breeding, facilities or protocols.

“You shouldn’t go organic because of the milk price,” Mike said. “It’s a management choice.”

“We’ve decided to rotate through the paddocks more often rather than moving fence line all the time.”

The cows are let out on a paddock when the alfalfa and variety of grasses reaches belly high. Once the cows eat the forage down to knee high, they are transferred to another paddock.

“There are two purposes for grazing – as a housing and feed source, or solely as a feed source,” Mike said.

“We’ve always used grazing as a way to provide the herd with fresh feed.”

The Schneiders also supplement with a TMR to reduce the risk of metabolic troubles when feeding fresh alfalfa. The ration, which is fed all-year round, consists of baleage, corn silage, earlage, ne ground corn, roasted ground soybeans and minerals, as well as free-choice kelp in the barns.

Organic dairying has been a benecial way for Mike and Jimmy to milk cows and also focus on crop production.

“We have a lot of moving parts,” Jimmy said. “By working together, but each having our own skills, we’re able to raise healthier crops and animals.”

The Schneiders rely on seven full-time and part-time employees to help with daily chores, while Jimmy tends to on-farm maintenance and eldwork and Mike oversees the dairy herd.

The herd seasonally calves from September through April, and during the summer months, heifers are relocated to heifer growers in Paynesville, Minn., and Sebeka, Minn.

a freestall barn.

Typically, the brothers do much of the work themselves.

“That’s the key to organic farming,” Jimmy said. “You have to be able to do your own maintenance.”

While the Schneiders hope these on-farm improvements will allow them to further grow the herd in the future, they are under quota with their milk cooperative, which was implemented in March 2017.

“We have no plans to add more animals, so we’re working on cow comfort, and in the long run, improving milk quality,” Mike said. “There is always a demand for quality cows and milk.”

What rst began as an option to involve more family members into the dairy operation, organic farming has become a sustainable business model for the Schneider brothers.

A learning opportunity at Uplands Cheese Farm shares seasonal milking schedule, awardwinning cheeses

DODGEVILLE, Wis. – Pasture walks are usually geared toward farmers. But, one in Iowa County June 5 was intended for county conservation department staff and other United States Department of Agriculture employees.

Robert Bauer, the grazing broker for Southwest Badger RC&D Council, explained the rationale for holding the pasture walk. It was set up, he said, so government employees could learn how to develop grazing networks and to promote the sustainability of the dairy industry by using well-managed grazing.

Uplands’ two farmstead cheeses have won several awards. Pleasant Ridge Reserve is an Alpine-style that is made with milk from cows grazing during the summer. This cheese is aged for up to two years.

Rush Creek Reserve is made in the fall when the cows eat hay. This cheese is soft-ripened and wrapped in spruce bark.

Mericka and Hatch apprenticed with the farm’s previous owners, Mike Ginrich and Dan Patenaude. The apprentices bought the business in 2014.

“It’s an awkward marriage that works,” Mericka said of their working relationship. “The cheesemaker always thinks he’s paying too much for the milk and the farmer thinks he’s not getting paid enough. So, the best way to solve that problem is to have it owned together.”

Mericka had good things to say about the farm’s seasonal calving method.

“It’s a great system,” he said. “With seasonal calving, we have a busy spring and summer and then things kind of taper off, and we focus on things like grazing, herd health and fencing.”

Theirs, said Mericka, is based on the way New Zealanders do things.

“We try to focus our energy on calving cows really well and getting good fresh-cow heats and good A.I.,”

he said. “Then we put the bulls in and go on vacation for a little while.”

He said the seasonal system lays things out in steps. They include calving, breeding, winter feeding, fall feeding and drying cows off. From 70-80 hours of work each week for employees and himself, things slow to 35-40 hours a week for most of the winter.

“Then we start calving in early March and all the fun begins again,” Mericka said.

He credited the farm’s previous owners with putting the grazing and calving system in place. Mericka said his family is from North Carolina. He worked in Virginia and then managed a large dairy farm in California.

Mericka said he would like to transform the farm into a hybrid system using managed grazing along with housing for the cows. As it is now, the cows are outwintered, meaning they stay outside and are fed hay in the pasture.

The pasture walk included a demonstration of a rainfall simulator. Katie Abbott, Iowa County conservationist, explained how the simulator works.

Water is pumped to an overhead nozzle that sprays onto a pan holding samples of various soils. The demonstration used samples of a silt loam soil from a beef farm near Dodgeville.

They included one from what Abbott called a well-managed pasture and one from a eld of harvested small grain with a mix of cover crops planted into it. One other sample was from a eld that had been conservation tilled and one came from a chisel-plowed eld and had no crop residue on it.

The slope of the pans containing the soil samples was set at 8.3 percent – not the steepest in southwest Wisconsin, Abbott said. Holes in the bottom of the simulator let water collect in jars and be compared for clarity and quantity. The water came from either inltration through the soil samples or by way of runoff.

A dime placed in the pan of chiselplowed soil illustrated the amount of erosion. The loss of a layer of soil the thickness of the dime, said Abbott, represented 8.3 tons per acre washed away.

The eld day offered an opportunity to conservation staff to fully understand what farmers, like Mericka and Hatch, are doing to promote soil health in a well-managed grazing system.

The “Mielke” Market Weekly By Lee Mielke Dairy pricing gets attention at G-7 Summit

Just as history was made in the meeting between North Korea’s Kim Jong Un and President Trump, who would have thought that dairy pricing would get the attention it received after the meeting of the G-7 nations in Quebec. The President is critical of Canada’s age-old quota supplymanagement program.

World trade and politics appear to be “trumped” in turmoil but the fallout may not be as great as some predict. FC Stone dairy broker Dave Kurzawski said in the June 18 Dairy Radio Now broadcast that he doesn’t think the Mexican buyer has much of an alternative, as “the U.S. is probably the most attractively priced, given current levels and proximity.”

He referenced the 2009 trucking dispute with Mexico when tariffs were imposed on U.S. cheese and said exports fell about 26 percent for the 14 month period. If the same scenario would develop today, “We’d be talking about 4.7 million pounds of cheese and since we price fresh Cheddar in the U.S. and Mexican imports tend to be other than fresh Cheddar, in rough numbers, we’re talking for every 1 million pounds of lost Cheddar exports to Mexico, it could knock about a penny per pound off the price of cheese. So 4.7 million pounds, we’re talking about 4 cents on the CME spot market. I don’t think that’s a game changer.”

He also reported that April American cheese demand was up 0.1 percent from March but 5.8 percent above a year ago, according to USDA’s latest data.

Demand for “other” cheese was down 2.7 percent from March but increased 0.5 percent from 2017. Total cheese use was down 1.6 percent from March but up 2.6 percent from a year ago, and year to date, total cheese use was up 3.4 percent from 2017.

Butter demand was off 14.3 percent from March and 0.1 percent below a year ago, though year to date it’s up 3.6 percent. Nonfat dry milk was up 9.8 percent from March, up 25.1 percent from a year ago, and up 20.4 percent year to date.

The Agriculture Department again lowered its 2018 milk production forecast in the latest World Agricultural Supply and Demand Estimates report (WASDE), on slightly lower cow numbers and slower expected growth in milk per cow. No change was made to the 2019 cow herd but the milk production forecast for 2019 was also lowered from last month on continued slow growth in milk per cow.

2018 production and marketings were projected at 218.0 and 217.1 billion pounds respectively, down 700 million pounds from last month’s estimates on production and down 600 million pounds on market-

ings. If realized, 2018 output would be up 2.5 billion pounds or 1.2 percent from 2017.

2019 production and marketings were estimated at 221.1 and 220.1 billion pounds respectively, down 400 million pounds on both. If realized, 2019 production would be up 3.1 billion pounds or 1.4 percent from 2018.

“Fat basis exports for 2018 were raised from the previous month as second-quarter exports are strong and continued strength in sales of a number of fatcontaining products will largely mitigate the impacts of Mexico’s tariffs on U.S. cheese,” the WASDE stated. “For 2019, the fat basis export forecast was lowered. Skim-solids basis export forecasts for 2018 and 2019 were raised from the previous month on robust demand for non-fat dry milk and lactose thus far in 2018, and this strength is expected to carry into 2019.”

“Fat basis imports for 2018 and 2019 were raised on higher imports of butterfat products, while skimsolids basis import forecasts for 2018 and 2019 were reduced on lower imports of milk proteins and a number of other dairy products.

The 2018 cheese price was unchanged at the midpoint of the range, but raised for 2019. The 2018 butter price forecast was raised, but reduced slightly for 2019. Nonfat dry milk (NDM) and whey price forecasts were raised for both 2018 and 2019 on strong demand and a reduced production forecast.”

The 2018 Class III milk price forecast was raised on the stronger whey price. Look for a range of $15.05-$15.45 per hundredweight (cwt.), up 15 cents on the high end and compares to $16.17 in 2017 and $14.87 in 2016. The 2019 average is projected to range $15.30-$16.30, up 50 cents from last month’s estimate.

The Class IV price forecasts reects higher butter and NDM prices and is expected to range $14.30$14.80, up 45 cents on the high end and compares to $15.16 in 2017 and $13.77 in 2016. Look for the 2910 Class IV average to range $13.70-$14.80, up a nickel from last month’s projection.

The WASDE says the U.S. corn outlook for 2018/19 is for reduced beginning stocks, lower feed and residual use, greater corn used for ethanol production, and lower ending stocks. Beginning stocks are down largely reecting a 75-million-bushel increase in projected exports for 2017/18 to 2.30 billion bushels, which if realized would be the highest since 2007/08.

port inspection data May implies continued robust global demand for U.S. corn, while old crop outstanding sales at this point in the marketing year are record high. Projected 2018/19 corn used for ethanol was raised 50 million bushels.

This month’s U.S. soybean supply and use projections for 2018/19 include lower beginning stocks, slightly higher crush, and lower ending stocks. Lower beginning stocks reect higher crush for 2017/18.

Soybean crush for 2017/18 was raised 25 million bushels to 2.015 billion, reecting an increase in projected soybean meal domestic disappearance and exports. Higher soybean meal domestic disappearance reects stronger than-expected use for the marketing year through April. Soybean meal exports were raised based in part on commitments through May, says USDA. Soybean ending stocks for 2017/18 are projected at 505 million bushels, down 25 million from last month. Ending stocks for 2018/19 are projected at 385 million bushels, down 30 million from last month.

Price forecasts for 2018/19 are unchanged this month.

The 2018/19 season-average price for soybeans is forecast at $8.75 to $11.25 per bushel; soybean meal and oil prices are projected at $330 to $370 per short ton and 29.5 to 33.5 cents per pound, respectively.

The most signicant revision to this month’s U.S. cotton supply and demand estimates is a 500,000-bale increase in 2017/18 exports, to 16.0 million bales, due to above- average late-season shipments. U.S. ending stocks are now forecast at 4.2 million bales in 2017/18, and 4.7 million bales in 2018/19, for a stocks-to-use ratio of 25 percent. The projected range of the marketing-year-average farm price is raised 5 cents at each end to 60-80 cents per pound.

Meanwhile; the latest Crop Progress report shows that 94 percent of the nation’s corn has emerged, as of the week ending June 10, up 1 percent from that week a year ago and 2 percent ahead of the ve year average. It also shows 77 percent of the corn is rated in good to excellent condition, up from 67 percent a year ago.

The report shows 93 percent of the soybeans have been planted, up from 91 percent a year ago and compares to 85 percent in the ve year average. There is 83 percent of the crop emerged, up 9 percent from a year ago and 14 percent ahead of the ve year average. Condition wise, 74 percent is rated good to excellent.

Cotton planting is at 90 percent, unchanged from a year ago but 2 percent ahead of the ve year average.

The cash dairy markets didn’t have a lot to feed on the week of June 11, in terms of USDA reports regularly monitored, but moved lower. The CME Cheddar blocks closed the week at $1.5950 per pound, down 4 cents and 2 cents below a year ago. Others say that most Mexican buyers have already purchased or contracted the amount of cheese they need for the remainder of this year; therefore exports to Mexico are unlikely to change much in the short term. “Nevertheless, uncertainty about other trade issues lingers,” says DMN, but “Cheddar inquiries from the Middle East are rising.”

Cash butter closed Friday at $2.3525 per pound, down 3 3/4-cents, and 20 3/4-cents below a year ago, with 13 carloads nding new homes on the week.

DMN says some butter producers who recently relayed tightness in cream in their area are suggesting that supplies have loosened. Butter demand is steady and sales of both salted and unsalted butter are “meeting or above expectations”but “The market tone is a little cloudy.”

Western butter inventories are a little higher than typical for this time of year, according to some contacts. Production has been driven by ample amounts of affordable cream, according to DMN, but a few would like to slow their butter output and begin to sell off some cream. Processors report demand that had been strong throughout the spring is easing slightly.

“Butter makers say that while production has been in generally good balance with sales, to churn at previous rates may likely overwhelm demand and cause stocks to balloon.”

Cash Grade A nonfat dry milk closed Friday at 78 3/4-cents per pound, down 1 3/4-cents on the week and 12 1/4-cents below a year ago, on 9 sales reported.

The spot dry whey hit a record high 41 3/4-cents per pound Monday but saw a Friday close at 41 cents, a quarter-cent lower on the week and ended six consecutive weeks of gain. There were 4 cars sold on the week at the CME. California’s July Class I milk price was announced by the California Department of Food and Agriculture at $16.86 per cwt. for the north and $17.13 for the south. Both are down 33 cents from June, $1.59 below July 2017, and reverse three months of gain.

The seven month average stands at $16.12 for the north, down from $17.77 a year ago and compares to $15.37 in 2016. The southern average, at $16.39, is down from $18.04 a year ago and compares to $15.64 in 2016. Only three more Class I announcements will come under California’s long standing state order.

Dairy producers there have voted to join the Federal Milk Market Order system.

Farm milk production varies throughout the nation, according to the USDA’s weekly update. Mountain states are at the top of the spring ush which is typical for this time of the year in that region. Northeast milk output is also trending higher. Milk intakes are steady or decreasing in the Southeast, Midwest, and Southwest, mainly due to higher temperatures.

Livestock producers are seeing better feed pricing values as corn futures have declined $.50 per bushel and soybean meal $68 per ton below May highs. It is amazing how a few fundamental changes can shift a commodity market from bullish to bearish.

Weather, and the reality of tariff ’s being placed on a growing list of commodities from trading partners are the primary culprits for lower grain prices. Rains and near ideal growing conditions continue to support record high crop ratings, with some of the driest regions of the corn belt benefiting from wetter weather patterns. A few analysts are throwing out guesses as high as 182 national average corn yield based on crop ratings. This would be 6 bushels per acre above trend line yield.

USDA reduced supply expectations by raising demand forecasts in the latest Supply and Demand report. The initial market response was a strong short term rally, only to be sold off as traders focused on other market factors.

Corn will need to see a national average yield above 175 bu/acre to keep carryout expectations above 1.5 billion

bushels for the current growing crop year vs. the 2017/18 carryout of 2.182 billion bushels.

The U.S. dollar is responding to the Feds higher rate announcement trading nearly 8% above Feb-April levels.

A cheap dollar is important for providing monetary price help to export buyers. Ironically, U.S. exports were strong early year when the dollar was trading the lowest levels since late 2014.

In agriculture one the most painful environments to trade is a politically influenced market. There is something about knowing that someone you helped get elected is making decisions that selectively hurt you financially.

Dairy markets were setting up for a bullish cycle, but now have to deal with tariff uncertainty. Deferred dairy futures remain somewhat optimistic because of improving demand, but will soon deal with the impact tariffs will have on buyer sentiment.

Simmental: The dairy cow of the Alps

Atypical breed for U.S. dairies thriving in Switzerland

with the goal of producing palatable beef for consumption. In Switzerland, where the breed originates, Simmental cows are producing milk for a third-generation dairyman.

and the Simmental breed,” Peter Wyssmüller said. “I gave everything for the Simmental cow.

I already had other cows, but for me here in Simmental, the Simmental cow is the best and adapted cow for this region.”

Wyssmüller and his wife, along with one of their two sons, manage a 24-cow Simmental dairy farm on 37 acres of land in the Simme Valley of Switzerland near the municipality of Oberwil in the canton of Bern.

The Simmental name is crafted from the area the breed came from, the Simme Valley of Switzerland. In German, “tal” means valley; Simmental translates to Simme Valley.

Wyssmüller works part time off the farm and his wife works off the farm as a nurse.

One son is involved in the farm part time, while Wyssmüller is the farm manager.

Mornings for Wyssmüller begin at 5:30 when he milks the cows in the farm’s DeLaval milking system. In the summer months of June to August, the cows graze in the Alps mountain range.

The herd has a rolling herd average of 15,432 pounds; however, the cows have produced as high as 18,700 pounds, Wyssmüller said.

While the family’s herd size is smaller than the average herd size in the United States, Wys-

smüller’s herd is larger than the 19-head average of Switzerland, he said.

The dairy herd is raised on grassland surrounding the farm, as well as in alpine pastures.

“Very little hay and protein are bought because on this altitude, it is not possible to farm hay,” Wyssmüller said.

The altitude of the area is 3,720 feet. While the cows are in the Alps, the altitude can reach up to 6,561 feet.

Wyssmüller said. “For grass hay, this farm is at limit because of the altitude.”

The farm experiences four distinct weather seasons. The winter brings snow and temperatures ranging from 15 to 40 degrees Fahrenheit, while the summer temperatures vary between 60 and 95 degrees Fahrenheit.

Wyssmüller said the area is saturated with dairy farms. As such, they have access to various dairy-related services.

“The farms are different from the systems and/or from the breeds,” Wyssmüller said. “Some neighbors also have Holsteins.”

The farm’s milk is used to produce cheese. The cheese is considered a specialty product because of the milk being produced from cows grazing in the Alps.

A cheese factory was recently built in the area, Wyssmüller said.

“We can sell (cheese) at a good price,” he said. “We focus solely on the cheese milk.”

Albeit the quality of the milk produced, Wyssmüller said the price his family receives for their milk is low, resembling the trend of the dairy industry seen around the world.

The family’s milk is Silo free, meaning the cows are given no silage feed in the winter and the raw milk is used for hard cheese production.

According to Cheese from Switzerland, over 450 varieties of cheeses are produced in Switzerland; just under half of all the milk produced is processed into cheese in the country.

Wyssmüller said they retain some milk to feed their youngstock, as well as for their family’s consumption.

With the daily chores of managing a dairy farm, as well as two part-time jobs, the Wyssmüller family is able to take a vacation every year when the cows are on pasture.

“This was always important for me that we travel with the kids, and we have another bond together than only cows,” Wyssmüller said. “This winter we visited New Zealand.”

When it comes to making breeding decisions, Wyssmüller said he focuses on the Simmental cow. In addition to milk production, Wyssmüller also breeds for type.

“I have very good type of cows for the show ring,” he said. “Some have won several times. I look at several factors to

get the more global and complete characteristics for my Simmental cows.”

Wyssmüller said the uniqueness of producing milk in his area of Switzerland is raising cows on grassland.

“They must eat grass and be robust to go on the Alp with good muscle and good fundament and exterior,” he said of the cows. “A healthy udder with good number cell is our breeding goal. We do not want cows which are producing 10,000 kg milk.”

Wyssmüller said his concern for the dairy industry lies in the industry’s milk price.

“The value of the milk is not at its real value,” he said. “This is a healthy food, which has not the merited added value.”

But, the future of his farm is certain and carrying the farm to the fourth generation is central for Wyssmüller.

“The future is to breed Simmental cows and then to give the farm to my son,” Wyssmüller said. “What he is doing, it is his choice. Maybe he wants to develop beef or he will stay with milk cows.”

Until his son makes the decision of producing beef or dairy, Wyssmüller will continue to operate his Simmentals cows in the place they truly call home.

“I want to be with the cow and not doing extra other things besides,” Wyssmüller said.

A day in the life of the Bechtold family

June 14 perfect weather for baling hay

ST. ROSA, Minn. – Each day is something new for Norb and Deborah Bechtold. June 14 was no different.

“Each day you get something else done,” Norb said.

Norb milks 66 cows on his farm near St. Rosa, Minn., which he has owned for 10 years. Previously he farmed with his brothers near St. Jo-

seph, Minn.

“I like this place,” Norb said. “It is peace and quiet out here.”

Norb married Deborah Brusewitz two years ago. As she is not originally from central Minnesota, they met on FarmersOnly.com.

Beginning at 5 a.m., Norb started his day with breakfast before heading to feed the cows and clean the barn.

works full time at the Mother of Mercy Nursing Home in Albany, Minn. But she does enjoy the dairy life.

“I like being outside and the freedom,” she said. “I don’t have to answer to anybody except myself. And, I like the animals. I have to be in scrubs at my other job, but here nobody cares what I wear.”

Half way though milking, neighbor Cory Herdering came to begin cutting hay.

After milking, the Bechtolds’ cleaned up and began the next thing on the to-do list.

Norb does all the breeding on the farm himself.

Keeping busy with random tasks throughout the day, Norb does not mind doing any of it.

“Its like I’m married to dairy farming,” Norb said. “You keep doing it…

I’ve just been doing it my whole life.”

Even though prices are not great, Norb still sticks with farming each day.

“I once told a young guy, ‘You don’t get rich farming. It’s a way of life,’” Norb said. “One guy once told me, ‘Farming is an addiction,’ and I had to agree with him.”

Norb will be 55 this year and eventually will not be able to keep doing this every day. Despite it all, Norb said he will miss dairying when he is done.

“Maybe one day I’ll be lucky enough to nd a young person who wants to take over my farm,” Norb said.

“Then I can teach him.”

On June 14, Norb had 15 acres of hay down and planned to be wrapped in the afternoon.

A legacy of expanding, improving Lazy J Dairy to celebrate latest updates with a July 14 open house

WOLSEY, S.D. – Lazy J Dairy is constantly striving to improve.

This is apparent in its most recent expansion, which happened last year.

The farm added another section onto its freestall barn and built a 48- by 160-foot wing, which houses a double-16 parallel parlor. To showcase this, the Jungemann family, who operates Lazy J Dairy, is planning a July 14 open house for the 920-cow herd near Wolsey, S.D. Russell and Janet Jungemann farm together with their son, Lucas, and his wife, Kari, and their son, Vonn, 2. Russell and Janet’s son, Adam, and two daughters: Libby Flemming, and her husband, Jamie, who have three daughters Mya, 6, Reagan, 4, and Jaiden, 1; and Dr. Emily Stahl, and her husband, Cody, and their newborn daughter, Ally Rose, help on the farm when they can.

Their expanded cross-ventilated freestall barn now measures 240- by 320-feet and has room for 920 head. The freestalls are bedded with sand. Manure is carried away by a ume system and a sand lane recovers most of the wasted sand. The Jungemanns also added another lagoon to their manure system, boosting its total capacity to 14 million gallons.

“We can go two years without pumping manure,” Russell said. “It’s good to have that exibility when the weather refuses to cooperate with the pumper’s schedule.”

The Jungemanns’ new milking parlor features a subway that contains some of the milking equipment. But instead of being underground, the subway is at ground level. The milking parlor is in the barn’s second story.

“We toured subway barns and liked the idea of keeping the equipment away from the parlor,” Russell said. “But subways tend to be out of sight and out of

mind, and some of them weren’t maintained very well. We thought that having the subway at ground level and the parlor on the second story would help keep things dry and make maintenance less of an issue.”

Another striking feature of the new parlor is a 8- by 40-foot hydraulic door on the east end of the building.

“The door gives us great ventilation in the parlor,” Russell said. “The cows love standing by the door and looking out at the farm after they’ve been milked.”

The Jungemann family reduced construction costs by performing much of the work themselves. They did all of the trenching and the plumbing, hung the freestalls and the headlocks, and installed the fans.

“We were our own general contractors,” Russell said. “The barn might have gotten done quicker if we had hired a general contractor, but doing it ourselves

The herd at Lazy J Dairy has responded well to the new milking parlor. The herd’s SCC, which has always been 200,000 or less, now hovers in the 130,000 to 170,000 range. And since more cows are now being milked with the same number of employees, the Jungemanns estimate they are saving 50 to 75 cents per hundredweight on labor costs.

Lazy J Dairy has embraced reproductive technology. They have made heavy use of sexed semen and have put SCR ear tags on their cows to track activity and rumination. Their herd pregnancy rate is currently 30 percent.

“The tags enable us to catch the repeat breeders a lot sooner,” Janet said.

This latest change in herd size has brought about some other changes. Kari quit her job as a CPA and is now in charge of calf care at Lazy J Dairy. She and Janet work together to track the herd’s reproduction status and keep the farm’s books. Emily comes to the farm on a regular basis to conrm pregnancies with blood tests.

The beginnings of Lazy J Dairy were quite humble.

“When I was a high school sophomore, I bought eight heifers and milked them in an old hog barn on my dad’s farm,” Russell said. “I milked my cows at 3:30 (a.m.) so that I could help Dad milk his 40 cows before I went to school.”

Russell and Janet were high school sweethearts. Shortly after marrying in 1980, they launched their own dairy operation.

“We moved onto a tree claim that had no buildings,” Russell said. “We bought an old trailer home to live in and purchased a couple of old barns for our cattle. The barns were in tough shape. You could throw a cat through the roofs or the walls.”

Within a few years, the

Jungemanns had built their milk herd up to 40 head. In 1992, they got the opportunity to purchase the farm where they presently live.

“The farm came with a 100cow freestall barn and a double-4 herringbone parlor,” Russell said. “The previous owners had used the facilities for 19 years and considered them shot.

But we went on to milk in that parlor for another 25 years.”

Jungemanns did upon moving to their new farm was increase the size of the milking parlor to a double-8. They also purchased additional cows and went from milking 40 head to 140 head.

The Jungemanns have made a habit of constantly upgrading their dairy.

“Every year, we made some kind of improvement without borrowing any money,” Russell said. “We might add a pen for some of our cattle or pour a con-

crete pad for our silage. We’ve gotten pretty good at pouring concrete.”

In 2006, the Jungemanns built a new freestall barn and increased their herd to 400 head.

They added onto their freestall barn in 2012 and expanded their milk herd to 550 head. But milking was still being done in the same original double-8 parlor.

Like all dairy farmers, the Jungemanns have endured their share of ups and downs.

“We have never tried to have the highest producing herd.

Our goal has always been to be as efcient as possible,” Russell said. “In 2009, when milk prices were low and feed prices were high, we only lost $1,000 for the year.”

Janet said its partly due to the farm’s diversication.

“We farm enough land to raise all of our own feed and have a little grain left to sell.

And we have always fattened out all of our steers. It’s good to have options,” she said.

The Jungemanns farm about 2,200 acres that are planted to corn, soybeans and alfalfa.

A beaming carved wooden cow greets visitors outside the new milking parlor at Lazy J Dairy. But she is not the only one who is smiling.

“Janet and I are very happy to have been blessed with the opportunity to work alongside our family every day,” Russell said with a broad grin.

And they are glad they have been able to continue improving over the years.

Produce business keeps Elsbernd busy year-round

CALMAR, Iowa – Glen Elsbernd knows his way around cows and cabbage, Holsteins and hot peppers. This northeast Iowa dairyman has blended his background in dairying with a growing interest in plants. “I like growing plants and working with them,� said the Winneshiek County farmer. “I’d always worked with animals and had a good feel for that already. So, I wanted to work more with plants.�

Elsbernd produce business, G It’s Fresh, was coined when he developed a business plan in high school.

He grows a variety of vegetables and ďƒžnds time to help his parents, Alan and Susan Elsbernd, on their 120-cow Holstein farm. Alan grows 600 acres of conventional and organic corn, oats and hay.

Some is sold as feed to organic livestock farmers.

Elsbernd’s wife, Beth, pitches in with one of the two daily milkings and also keeps the herd’s records. She also tends to Anthony, 4, and Nora, 4 months.

The dairy operation is not organic.

Elsbernd said going organic is one of the family’s long-term goals.

In high school, Elsbernd grew acorns and the seeds of other trees during the winter. That led to his interest in vegetable production. Next came courses in horticulture at Hawkeye Community College, Waterloo, Iowa. During college, Elsbernd worked on a farm that grew me-

dicinal herbs. He gained valuable experience on a produce farm near Chaseburg, Wis., followed by launching his Iowa venture.

Elsbernd has his produce business on two farms. At the home place are two greenhouses tucked behind the cows’ bedded-pack barn.

These greenhouses are called high tunnels. Each building is 30- by 72-feet and heated with LP gas and ventilated with louvered fans on one end wall.

High tunnels cost less to put up than regular greenhouses, Elsbernd said.

Yet they deliver the same beneďƒžt of being able to get plants going and growing sooner and keeping them growing later than conditions outside might allow.

The high tunnels are equipped with drip tape that efďƒžciently delivers water to the base of each plant. Between the rows of plants, landscape fabric provides a convenient and dry walking surface.

Elsbernd said he expected to start picking ripe fruit around mid-June. He trucks the tomatoes to a nearby farmers’ market.

The other high tunnels have benches and are a temporary home to onion plants, other vegetables and hanging baskets of ďƒ&#x;owers.

Each year, Elsbernd starts thousands of transplants. Many of his young onion plants are shipped to other commercial growers who do not have their own starting facilities. His onions are sent between

Other transplants are trucked to a site on another part of the farm.

There, Alan has some of his row crops and oats, while Elsbernd has vegetable transplants growing in the roughly 10 acres of rolling land. The sandy ground is good for vegetables, he said, because it warms early and drains well.

Later in the season, Elsbernd rents a refrigerated semitrailer as temporary storage for his crops until they are marketed.

Using a specialized machine, Elsbernd made raised beds to transplant into. Each bed is covered with black plastic to retain heat.

Each raised bed stretches 1,000 feet. Together, the beds are home to a diverse mix of

broccoli, cabbage, cauliower, cucumbers, kale, onions, peppers, tomatoes, watermelons and winter squash.

Kale, a type of leaf cabbage, is a popular crop. One reason kale is so well liked, said Elsbernd, is that it is nutritious.

Elsbernd said kale, potatoes and onions are his main crops.

Those sold the best last year.

Just as he grows a diversity of produce, Elsbernd markets his vegetables at various locations.

Along with the farmer’s market, he attends indoor markets in the area.

Another sale venue is State Line Produce, Lime Springs, Iowa.

Elsbernd’s produce business keeps him busy all year long. In January, he sets to work in the high tunnels, starting onions. By Valentine’s Day, it is on to planting owers in hanging baskets.

We wet baled some hay today (June 19) and are going to chop 10-15 acres tonight. We wrapped RAINFALL some and bagged TOTALS Last 2 some. Most of the hay in the area is Weeks done. Everything is looking good. The corn is canopied.

4.65” The sunflowers are doing well, but need to be sprayed. I tried Since April 25 to spray soybeans 5.7” yesterday, but really had to watch where I went. We have a lot of fencing to work on.

The first crop alfalfa on the older stands are done and we just finished cutting new seeding today (June 19). We plan to top off RAINFALL the silo and then bale the TOTALS rest. We have 100 acres Last 2 done and 50-60 acres Weeks left. So far, the hay has been very good quality.

We put it in the 20- by 65foot silo and got around 4 tons an acre, on a haylage basis. The wheat is looking good. We have some yellow leaves from Since April 25 too much water. The corn 6.1” is over a foot tall and the canola hasn’t started bolting yet. Most people are spraying now and adding 28 percent Nitrogen.

We then seeded it with a BMR hybrid Sudangrass.

I like it because it gives RAINFALL me flexibility with forages. TOTALS I can use it for the cows Last 2 or heifers. Last year, I got Weeks three crops off it. Because it was wet, I didn’t get to some of the fields for rock picking. We have to cut grass hay, but it’s a little wet. Some of the people that tried to make dry hay the past two weeks had it Since April 25 get too wet and then they 9.7” round baled it for bedding.

We finished making first crop hay June 14. The last field we did was an alfalfa/ grass upland 70- RAINFALL acre field that we TOTALS Last 2 wrapped. Most of the Weeks neighbors are done with first crop hay. We are pretty much done with rock picking, as 2.6” well. I am hoping to start on meadows tomorrow (June 20). Since April 25 We finished spraying 4.75” corn last week. The corn is knee high and the soybeans are 6-8 inches tall.

It’s knee high and has almost closed its canopy.

Some of our soybeans had spotty germination RAINFALL due to dry soil, but TOTALS recent rains have helped Last 2 with that. Most of our Weeks beans are 3 inches tall or so. The second crop of alfalfa looks excellent and is now 8-10 inches tall.

We have done sweeps for weevils and haven’t reached the threshold where we need to spray. Since April 25 We received 1.5 inches 3.8” of rain this week and a half inch the week before. Elkton, which is 6 miles away, received 6 inches and suffered some localized flooding.

We’re wet right now. We got about 5 inches, all since Friday (June 15).

The lawns were all brown and the hayfields went RAINFALL backwards pretty fast. TOTALS Everything is starting Last 2 to green up again. I just Weeks clipped about 10 acres of my new seeding because it was going backwards so fast. I got some heifer hay from that. Another 40 acres of the new seeding looks good, though. We Since April 25 won’t be ready to do 10.9” second crop until midJuly. There are some of the neighbors who haven’t gotten first crop finished up yet. The early corn is about waist high.

We’ve had about 7.2 inches in the past two weeks, almost 5 of that was last night (June 18). It’s been really spotty. If you go a RAINFALL half mile one direction, they TOTALS got less than an inch and a Last 2 mile in the other direction, Weeks they’re up around 9 inches. We’re looking to start second crop hay here as soon as the weather breaks. The hay looks pretty fair. It could have used some rain earlier, but it’s still decent, just not as Since April 25 good as normal. We did 12.5” get our oats cut, baled and wrapped. The corn is about chest high and the beans are all looking good. Overall, I’d say the crops all look pretty good.

A lot of guys got dry hay made last week.

We could have done RAINFALL more but the weather TOTALS didn’t look good. Next Last 2 week, we’ll see some Weeks guys around here get started on second crop hay. We have to do barley first. It’s headed 3.7” out and is ready to cut, but the fields aren’t fit.

We don’t sacrifice the field because there is Since April 25 16.2” no seeding underneath.

The early-planted corn has been canopied for a week and the guys have wrapped up spraying.

We’ve had some nice rains over the past few weeks, with a total rainfall of 2.3 inches.

Krull, Morrison awarded McKown Scholarships The Klussendorf Association and McKown Fund are excited to announce the seven $1,500 scholarship recipients totaling $10,500 in awards. These scholarships are presented annually to students in their rst, second, or third year at a two-year or four-year college or university in the United States or Canada majoring in dairy science, animal science, agri-business, or other related majors that will develop the skills needed to pursue a career in the dairy industry. In all, over 80 students applied for these prestigious scholarships.

Carly Krull and Tanner Morrison are among the seven recipients.

Krull is from Lake Mills, Wis., where her family has registered Holsteins, Red and Whites, and Jerseys. She is a junior at Iowa State University studying dairy science and international agriculture. After college, she would like to work with dairy reproduction, animal health, or farm management. Her drive to pursue a career in the dairy industry comes from the many true-life lessons she learned growing up, as well as the joy and happiness she experiences around cows.

Morrison grew up in Peterson, Minn., and is currently

a junior at the University of Minnesota. He feels incredibly blessed to have grown up working with his family on their dairy farm, Esperanza Cattle Company. His family’s herd is 100 percent registered Holsteins, and he owns eight animals himself. His interest is in dairy cattle genetics and nutrition.

Morrison has a passion for developing high-type show cattle and knows that formulating correct diets is part of developing elite cattle. In the future he wants to give back to the dairy community and coach youth dairy judging and serve as a volunteer for the Junior Holstein Association.

Six recognized as 2018 Outstanding Agricultural Mentors Six individuals were recognized as 2018 Outstanding Agricultural Mentors at the Women’s Agricultural Leadership Conference held recently in Chaska, Minn. This is the 16th year that District 11 Minnesota Agri-Women have sponsored this honor to recognize people who have served as mentors for women in agriculture. Midwest Dairy Iowa Division Board awards scholarships to college students The Iowa Division Board of Midwest Dairy awarded 11 $1,000 scholarships to college students who are from Iowa and who have a background in dairy. The annual scholarship is provided to students displaying leadership, academic performance, work experience, and participation in activities and events. The winners of the scholarship awards are the following: Thomas Lehmann, Durango; Shana Hilgerson, Elkader; Katelyn Goldsmith, Earlville; Jenna Chapman, Ruthven; Megan Bushman, Calmar; Jessica Schmitt, Fort Atkinson; Keeley Greco, Dorchester; Payton Duitscher, Rolfe; Ashley Schwartzhoff, Decorah; Meghan Hettinga, Orange City; Theodore Hilgerson, Elkader. Two additional scholarships will be awarded to the Iowa Dairy Princess and Alternate upon completion of their duties following the Iowa State Fair. The Iowa Dairy Princess and Alternate who will receive these scholarships are Rachel Grober from Ionia and Josie Buddenberg from Decorah.

Edge supports students with $1,000 scholarships Two young adults are getting help from Edge Dairy Farmer Cooperative to follow their dreams in agriculture.

Edge has awarded $1,000 education scholarships to Brandon Gilbertson and John Nagel. Gilbertson is a senior at Elk Mound High School in Elk Mound, Wis., with plans to attend Northeast Iowa Community College this fall to major in dairy science technology. He has been active in 4-H, FFA, athletics, band and choir in addition to working on his family’s farm. He hopes to return to his family’s dairy farm after college to continue farming as the sixth generation.

This is the fth year Edge has offered scholarships to help nance higher education for the children of its members.

Scott Munes, Edge’s director of membership development, said the co-op plans to continue to award scholarships for exceptional dairy-minded students in the years to come.

Students competing for the scholarships were judged on academic achievement, leadership and participation in school and community activities, academic honors, goals and aspirations, recommendations and work experience.

Form-A-Feed announces scholarship winners Form-A-Feed announced its scholarship winners for 2018. Each year scholarships are given to graduating high school seniors and rst year college students who are pursuing an agriculture related career at a 2- or 4-year college or university. This year, ve students were chosen to receive scholarships out of over 30 applicants.

Makenna Winkelmann from Morgan, Minn. received a $1,000 scholarship. She will be attending South Dakota State University where she will be studying Animal Science.

Shelby Kuechle from Eden Valley, Minn. has been awarded a $500 scholarship. In the fall she will be attending South Dakota State University where she will be studying Dairy Cattle Genetics.

Ashlynne Beninga from Inwood, Iowa was also given a $500 scholarship. She attends Iowa State University with a major in Agriculture and Society.

Receiving a $250 scholarship was Abbey Schiefelbein of Kimball, Minn. She will be going to Kansas State University with a major of Food Science.

Also receiving a $250 scholarship was Payton Diepold from Stewart, Minn. He will be studying Business Education at Winona State University in the fall.

2 1/2 cups uncooked elbow macaroni 6 Tbsp. butter, divided 1 tsp. salt 1 tsp. sugar 2 cups milk 8 oz. American or Velveeta cheese

1 1/3 cup cottage cheese 2/3 cup sour cream 2 cups (8 oz.) shredded sharp cheddar cheese 1 1/2 cups breadcrumbs

Cook macaroni according to package directions; drain. Meanwhile, in a saucepan, melt 4 Tbsp. butter. Stir in flour, salt and sugar until smooth; gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened.

Reduce heat; add American cheese, stirring until melted. Stir in cottage cheese and sour cream. Drain pasta, stir into cheese sauce. Pour into greased 2 1/2 quart baking dish. Make ahead mashed potatoes 5 pounds potatoes 3/4 cup butter 1 8 oz. pkg. cream cheese, softened

3/4 cup milk 1/4 tsp. Lawry’s salt 1/2 tsp. pepper

Peel potatoes and cut into smaller pieces. Boil until done. Drain in colander.

When the potatoes have finished draining, place them back into the dry pot and put pot back on stove. Mash potatoes over low heat. Turn off stove and add the rest of ingredients. Then mash, mash, mash. If making the day before, put in baking dish or crockpot and put in fridge with a note that says, ‘Do not eat.’ Take out next day and throw a few pats of butter on top and either bake at 350 for 45 min or put crockpot on low for 6 hours. This works good for family get togethers.

cups frozen broccoli, cooked large can of cream of chicken soup cup milk cups of shredded cheddar cheese

Make stuffing mix/per box and put into 9x13 pan. Layer cooked chicken and broccoli on top of stuffing. Mix soup with milk and pour all over. Top with cheese. Bake at 250 degrees until warm.

1 can sweetened condensed milk 2-3 cups mini marshmallows

Spread 1/2 jar of peanuts in a buttered 9x13 pan. Melt together in microwave bowl: peanut butter chips, butter and sweetened condensed milk. Cool.

Fold in marshmallows and mix well. Spread over peanuts and sprinkle rest of peanuts on top and pat down. Refrigerate.
