Combining their heritage Voegeli, Candinas team up to make Swiss-style yogurt

MONTICELLO, Wis. – Early in life, Markus Candinas fell in love with his Swiss heritage. A child of Swiss immigrants, he often travelled to his parent’s home country to visit family and experience the culture. Meanwhile, Bryan Voegeli of Monticello, Wis., was growing up with a similar Swiss appreciation. Also a descendent of Swiss immigrants, Voegeli is the fth generation to milk his 220-cow registered Brown Swiss herd.

After being introduced through a mutual friend, Candinas and Voegeli are combining their Swiss heritage in the form of Yodelay yogurt – a Swiss yogurt created by Candinas with the milk of Voegeli’s cows.

“My chocolate had received great press and was doing very well. I had this urge for a new challenge and continuation of learning,” Candinas said.

The idea began to unfold in 2003, as Candinas began the lengthy process of developing a recipe and nding the right yogurt cultures. He wanted the product to be as true to form as possible and knew nding a Brown Swiss herd was a key to making that possible.

“I remember my father talking in the barn when I was a kid about how he wanted our milk to make yogurt; he always wanted to do something different,” Voegeli said. “Suddenly, this guy was knocking at my door looking to do just that; there certainly was a sense of déjà vu.”

With a business and product still under development, one would understand Voegeli’s hesitation for selling his milk to Candinas. On the contrary, Voegeli said he was committed to Yodelay from the start.

“My dad had always looked for something unique to do with our milk, whether that be yogurt or cheese.

He always wanted a special product to be a part of,” Voegeli said. “Right after Markus left the farm, my brother, Jimmy, and I knew it was going to be cool.

We were in on it right out of the gate.”

Since meeting four years ago, Candinas has been assembling a factory near Madison, Wis. After the long process of perfecting the product, Yodelay rst hit store shelves this March. Located in 20 stores across Dane County, Voegeli said it is a must-try product he is proud to be a part of.

that really is different. Once people realize what it is all about, it catches on well,” Voegeli said. “While Yodelay is still in an infancy stage, we are grateful that Markus approached us as he started from scratch to where he is today.”

Voegeli currently ships one load of milk to Yodelay per week in addition to Chalet Cheese Cooperative in Monroe, Wis. He said he is thankful he can provide milk for two products which align with his father’s farming vision.

“Chalet makes an excellent product,” Voegeli said. “It is great to be a part of two products we can say we are very proud of.”

Just as Voegeli is gracious for his involvement with Yodelay, Candinas is gracious to work with a farm with high standards, he said.

“What drew me here is the sense of family you feel; the care that the Voegelis have for their herd resonated with me. They pay attention to the little details, so you know it’s a quality product in the bigger picture,” Candinas said.

Both Candinas and Voegeli thank the DBIC, Norm Monsen and Monsen’s colleagues, Dan Smith and Dan Carter, for their support in launching Yodelay. While the product is still in its beginning stages, Voegeli said he has a great feeling about the yogurt’s future.

“There are going to be challenges in any startup, and sure, there is no guarantee to this,” Voegeli said.

“But we do have passion. Once in a while in life, you just have to take a chance.”

OGEMA, Wis. – If Levi Ulrich worked hard enough in high school to be listed on the honor roll, his grandpa promised to buy him a Jersey cow.

Five years later, Ulrich still has that cow along with many more on his dairy farm south of Ogema, Wis. “I’m milking six cows right now, but I’ll have 19 by the end of the year,” Ulrich said. “All in all, I have 24 females.”

While his herd might be small, Ulrich’s dreams are anything but. He’s also already achieved a few of his farming goals. Up until he started milking that rst cow, Gracie, the barn hadn’t seen any dairy cows in some time.

“We milked cows until 2001, and then tore out the stanchions so we could start milking goats,” said Ulrich’s grandmother, Kathy. “Then, we sold the goats about 10 years ago, gutted the barn and lled in the gutters, and had just steers and horses for a while.”

“I had to get a new pipeline and everything,” Ulrich said.

In between daily chores and focusing on growing his herd, Ulrich attended college, recently graduating with an as-

sociate degree in dairy science from Northcentral Technical College in Wausau, Wis. With a lengthy commute back and forth to class, and holding two internships during

the course of the two-year program, Ulrich already had a lot on his plate. However, he didn’t let that deter him from growing his dairy.

“I had an hour commute to Wausau for school, so I had to milk earlier in the morning in order to make it to class on time,” Ulrich said. “It was go, go, go for about two years.”

The young dairyman has encountered his share of challenges while getting his farm up and running. For example, the soils in northern Wisconsin are highly variable from either straight sand to marshy clay ground.

Ulrich has had to wrestle with the latter, relying mainly on rotational grazing to fulll his cattle’s forage requirements.

“If it were a drought year, I could farm any crop I wanted to here,” Ulrich said, jokingly.

He’s also had to battle with an older barn that shows its age.

“I have to pitch out stalls by hand, and the most cows this barn can handle is 25,” Ulrich said.

He began shipping milk last June, but his dreams almost dried up when the processor he had lined up to take his milk bailed on him. “[The creamery] that picked me up wouldn’t take me unless I was grade A,” Ulrich said. “So we got that taken care

Now that he’s nished with his degree, Ulrich is enjoying being able to focus on his beloved Jerseys that he said live up to their reputation as inquisitive and social cattle.

“I can do just about anything I want with them. I’ve got a whole herd of pets,” Ulrich said, jokingly.

Ulrich pays particular attention to milk quality, shipping milk with nearly a 6 percent butterfat and low somatic cell count.

His grandma reminded him that he once shipped a load of milk with a cell count of 5,000.

“I get antsy when my cell count gets above 100,000 even though my eld man kind of laughs at me for it,” Ulrich said. “One time, I had a milk price of $25 per hundredweight [with premiums].”

Ulrich learned how to breed cows at college and does all of the A.I. work himself, selecting sires based on production, components and type. He chose his registered prex, Cream-Line, because the cream line is nearly always visible in the receiving jar in the milkhouse during milking.

He has also been enrolling previously grade cows in the American Jersey Cattle Association through their genetic recovery program and purchasing 100 percent registered animals, as well.

“The genetic recovery cows have a different colored band around their papers, and the purchased animals have a green band. I’d like for them all to have a green band someday,” he said. “This year, I’d like to take a couple of animals to the Central Wisconsin State Fair in Marsheld, Wis.” In addition to building his herd’s genetics, Ulrich has his sights set on expanding his herd and lifting anchor to nd a new farm where he isn’t limited by barn size. However, he is hesitant to take on debt in order to do so.

“I’d like to get up to 50 cows eventually. I feel safer at that size with what’s been happening in the industry,” Ulrich said. “I also want to nd a house with acreage and a sand-bedded freestall barn with a small parlor because this barn is maxed out.”

While Levi Ulrich certainly has big aspirations for Cream-Line Dairy Farm, he’s content with growing slowly for now.

After all, from one animal ve years ago to over 20 now, it only takes one cow at a time.

Tell us about the farm you currently operate.

Riverview LLP. We have operations in ve states with dairy, beef and crops. I work on the construction side, mostly with design and installation of water, manure and drainage systems. Over the last ve years we have installed evaporative cooling systems in the majority of our barns. In the fall, I help with corn silage for about three weeks.

Tell us about the farm you currently operate. We milk 150 cows in a parallel parlor. We also farm 300 acres of corn and alfalfa. We house all youngstock on site.

Ocheda Dairy’s roots trace back to an FFA project of my father-in-law, Dave. In 2000, when my husband graduated from the University of Minnesota, the farm transitioned from two, 80-cow tiestall barns to a 500-cow freestall. We have continued to grow in steps over the years.

How did you get into farming? I started here 10 years ago with a referral from a college friend.

How did you get into farming? I was born and raised on a dairy farm. My parents moved to the Pierz area in 1981, and I bought the farm from my parents in 2012.

Our computer with DelPro software is a valuable tool for heat detection and herd monitoring. It helps manage our herd in ways that I always dreamed of while growing up.

What is one fundamental philosophy you learned growing up and still stand by on your farm? My dad was the most understanding person about kids making mistakes. He also was very fair. I strive to be more like my dad every day.

What’s a highlight for you and your dairy each year? We always have an open house for the public and it is a huge draw from the local community.

What does the dairy industry mean to you? It is a great way to raise a family in a rural environment.

Who do you network with besides family? Being at a large company, I have the luxury of many great coworkers and also several vendors to help keep me up to date.

What’s a highlight for you and your dairy each year? We attend World Dairy Expo every year and enjoy watching the shows and visiting the trade booths. It’s also a great place to see family and catch up. This year is the rst time Juliette will show cattle there as well.

What does the dairy industry mean to you? Dairy is a way of life for our family. It is our passion. I enjoy being my own boss and making decisions.

Juliette and I take pride in healthy, high type cattle.

Who do you network with besides family? We talk bi-weekly with our nutritionist, have a close relationship with our veterinarian and talk with our neighbors.

What piece of technology/equipment do you have now that you wished you had growing up?

All this technology we have now has so dramatically changed dairying. I honestly can’t say I would change much of the way I grew up on the farm.

What’s a highlight for you and your dairy each year? Finishing corn silage. We do some custom forage harvesting and really treasure the time together again when the work is done.

What does the dairy industry mean to you? When my daughter, Ava, had her farm accident two years ago, we were overwhelmed when we opened the mailbox day after day, receiving untold amounts of cards from caring people in the industry. So many of the people we had never even met. In the dairy industry, we work with incredibly thoughtful and understanding people who pull together to help each other out in those really rough times.

Who do you network with besides family? I kind of bleed maroon and gold. The connections Joe and I made at the University of Minnesota are incredibly valuable. Of course, we love getting together with many other farmers in the area, too, within our milk cooperative or at the Central Plains Dairy Expo.

Milk price climbs 35 cents with start of June Dairy Month

Happy June Dairy Month, which is an annual reminder to consumers of the wonderful contributions milk and dairy products make to health and well-being.

Meanwhile; the benchmark Federal order Class III milk price for May crept 35 cents higher, to $15.57 per hundredweight (cwt.), $2.81 above May 2016, and equates to $1.34 per gallon, up 3 cents from April.

The ve month average stands at $16.05, up from $13.53 at this time a year ago and compares to $15.84 in 2015 and $22.94 in 2014.

Class III futures late Friday morning portended a June price of $16.51; July, $16.93; August, $17.18; and a peak of $17.26 in September.

FC Stone’s Dave Kurzawski wrote in his June 2 Early Morning Update (EMU) that “Producers seem to be locking in attractive second half margins a little more aggressively at the moment, but commercial buyers have a buy the dip mentality. Throw in the speculative community who is continually hedging off new option positions with futures and a volatile two-sided trade is the net result.”

The Class IV price is $14.49, up 48 cents from April and $1.40 above a year ago. Its ve month average is at $14.92, up from $13.06 in 2016 and $13.65 in 2015.

The Ag Market Service-surveyed cheese price used in calculating the Class milk prices averaged $1.5390 per pound, up 4.3 cents from April. Butter averaged $2.1644, up 4.8 cents. Nonfat dry milk averaged 87.04 cents per pound, up 3.2 cents, and dry whey averaged 50.94 cents per pound, down 1.5 cents from April.

California’s comparable May Class 4b cheese milk price is $15.25 per cwt., up 95 cents from April and $3.88 above a year ago, but is 32 cents below the comparable Federal order Class III price, smallest gap since June 2016.

The 4b average stands at $15.02, up from $12.69 a year ago, $14.07 in 2015, and compares to $20.94 in 2014.

The May 4a butter-powder milk price is $14.43, up 70 cents from April, $1.86 above a year ago, and reversed three months of decline. The 2017 average now stands at $14.64, up from $12.81 a year ago and $13.45 in 2015.

Cash butter soared in the Memorial Day holiday shortened week, skyrocketing to $2.41 per pound Wednesday and closed Friday at $2.4850. That’s the highest spot price since December 9, 2015, up 12 1/2-cents on the week, up 39 1/4-cents since May 1, and is 38 1/2-cents above a year ago. Fourteen cars were sold on the week at the CME. Dave Kurzawski says the U.S. remains at a competitive advantage to that of Europe and Oceania in fat prices. He admits U.S. export business “has been quiet, but the price discrepancy does open the door for sales opportunities to open up.”

Dairy Market News (DMN) says churns are active, as Central region producers are looking to pack away butter for the late summer and early fall. Adding to the mix is post-holiday cream availability, which had some producers opting to churn more cream as opposed to offering it on the spot market. Retail and food service demand continues to be strong and the butter market tone is “steady.”

Western butter makers are also steadily churning but holding back when they can. Cream is generally plentiful, but a number of processors anticipate cream supplies will tighten as summer takes hold and ice cream manufacturers pull more cream. Stocks are “comfortable” however, in some secondary markets, butter supplies are tight. Buyers are looking for butter at favorable prices and store. Some end users are eager to cover late year needs. Demand is steady with a few describing demand to be “better than expected for this time of year.”

Block Cheddar cheese climbed to $1.7450 per pound Wednesday, highest spot price since February 2, 2017, but closed Friday at $1.70, down 3 1/4-cents on the week and ending four weeks of gain, but is 26 cents above a year ago. The barrels climbed to $1.5450 Wednesday, highest price since February 22, 2017, but closed the week at $1.49, up a penny, 4 1/2-cents above a year ago, and still at an unsustainable 21 cents below the blocks. Fourteen cars of block traded hands on the week at the CME and 35 of barrel.

DMN says milk continues to be readily available for cheese production in the Midwest, where cheese has become Wisconsin’s “ofcial State dairy product.” Spot milk prices ranged $3.50 to $6.00 under Class. Packaged retail cheese, pizza cheese and specialty type cheeses are selling well. Some process cheese producers report contractually steady demand, but barrel sales are expected to pick up in line with warming temperatures.

The barrel inventory is “generally long.” Some

block producers report balanced inventories while others are concerned about limited storage space. The cheese market tone is “mixed” as many contacts are anxious about the large spread and consider a gap above 10 cents “a sign of instability.”

Western contacts report that cheese is moving well, but buyers are not seeking a lot of additional loads. Export opportunities are developing as U.S. cheese prices coincide with international prices and the dollar has weakened some against other currencies. A few contacts say warehouses are full and premiums are being charged for additional space. Barrels are reportedly heavy but blocks are tight. Cheese with age is harder to move and cheese output is active, “following the wave of milk production,” according to DMN. FC Stone’s Kurzawski wrote in the June 1 EMU that “Seasonally speaking barrel sales tend to increase during the summer months as processed cheese consumption increases. But, with the increase in barrel production in the U.S., the question remains if demand will pick up enough to match the new supply.”

Cash Grade A nonfat dry milk hit the highest price since February 9, 2017 on Wednesday, but closed Friday at 94 3/4-cents per pound, up 2 cents on the week and 13 1/2-cents above a year ago, with 18 cars exchanging hands on the week at the CME. “However, we are approaching price levels that might be incentive for the EU to let go of some inventories in intervention, which should put a cap on this rally,” he warned, but he added Friday that there are reports of “strong demand from Mexico and prices rising handsomely.”

Down on the farm; lower corn and soybean prices could not offset another drop in the All-Milk price plus the higher alfalfa hay price, so the latest milk feed price ratio headed lower for the fourth consecutive month.

The April ratio is 2.23, down from 2.39 in March, but is up from 1.99 in April 2016, according to the Agriculture Department’s latest Ag Prices report. The index is based on the current milk price in relationship to feed prices for a dairy ration consisting of 51 percent corn, 8 percent soybeans and 41 percent alfalfa hay. In other words, one pound of milk today purchases 2.23 pounds of dairy feed containing that blend.

The National Dairy Farmers Assuring Responsible Management (FARM) Program, in collaboration with Colorado State University, is conducting a dairy farmer survey to learn more about perceptions of the FARM Program and how it can continue to improve the resources it offers producers.

The voluntary survey will probe producers’ knowledge of the program and the value they think it provides to their operations. The study will help FARM Animal Care better provide cooperatives and farmers with the appropriate guidance and materials required of FARM Program participants.

The April U.S. average All-Milk price dropped to $16.50 per cwt., down 80 cents from March but $1.40 above April 2016. The price ranged from $14.50 in New Mexico to $20.50 in Florida. California’s $15.45 was down 28 cents from March but $1.82 above a year ago and $1.65 below Wisconsin’s. The Badger State saw $17.10, down 90 cents from March but $1.50 above a year ago.

April corn averaged $3.43 per bushel, down 6 cents from March and 13 cents per bushel below April 2016. Soybeans averaged $9.32 per bushel, down 37 cents from March but 31 cents per bushel above April 2016. Alfalfa hay averaged $148 per ton, up $13 from March but $6 per ton below a year ago.

Looking at the cow side of the ledger; the report shows the April cull price for beef and dairy combined averaged $72.20 per cwt., up $2.70 from March, $9.30 per cwt. below April 2016, but 60 cents above the 2011 base average of $71.60.

The April Margin Protection Program (MPP) milk-feed margin was $8.5460 per cwt. Combined with the March milk-feed margin of $9.3519 per cwt., the average dairy production margin for the twomonth period was $8.9490 per cwt.

The May issue of the Dairy Market Report from Dairy Management Incorporated and the National Milk Producers Federation states that “The rate of milk production growth began to moderate during the rst quarter, but additional milk production continues to generate American cheese at a faster rate than total consumption, driving up inventories and putting some pressure on cheese prices.

Still, exports of most products showed strong year-over-year growth during the rst quarter of 2017. Federal order class prices have dropped monthto-month during most of 2017 and the March all-milk price was $1.60 per cwt. under January.

The March MPP margin was down $1.75 per cwt. from last December. However, a mid-May rally in cash and futures prices for butter and Cheddar cheese provided a strong indication that the milk price erosion during the rst months of this year may have run its course.”

The latest Crop Progress report shows 91 percent of the U.S. corn crop is planted, as of the week of May 28, up from 84 percent the previous week, 2 percent behind a year ago, and 2 percent behind of the ve year average. Seventy three percent of the corn is emerged, up from 54 percent the previous week, 2 percent behind a year ago, and 2 percent behind the ve year average.

Sixty seven percent of soybeans are in the ground, up from 53 percent the previous week, 4 percent behind a year ago and 1 percent behind the ve year average.

Sixty three percent of the cotton is planted, up from 52 percent the week before, 6 percent ahead of a year ago and 1 percent ahead of the average.

The April Consumer Price Index for all food is 249.7, up 0.5 percent from 2016. The dairy products index was 217.8, down 0.2 percent. Fresh whole milk was up 0.1 percent; cheese, down 0.8 percent; and butter was off 0.3 percent.

Global Dairy Trade (GDT) Event #189 concluded today with the composite index rising a nominal 0.6% above the previous auction. Despite the nearly unchanged performance, individual product outcomes varied. The most surprising result was Cheddar cheese rising 14.5%; it was also the be performer at today’s auction.

That puts GDT Cheddar cheese at $1.94/ lb. and the highest price since Apr. 1, 2014. CME spot Cheddar blocks were unchanged. Cheddar barrels retreated another 3.25¢ to close at $1.425/lb. CME OCT17 cash-settled cheese futures traded at $1.76/lb. – the highest projected price for the year and asubstantial discount to today’s GDT index, which reflects prices through November. Butter prices increased, sustaining a run that started nearly a year ago in July. Contract 1 butter deliveries increased 12.9% suggesting that market participants are looking for immediate shipments. Ahead of the GDT results, CME butter futures traded higher; however, post auction the CME spot market increased just 1¢, less than expectations. Futures traders discounted the higher GDT result, and most 2017 contracts ended the day in negative territory. Skim milk powder (SMP) mounted an impressive increase, rising 7.9%.

In April, U.S. butter production totaled 164 million pounds, down 4.1% from a year ago. Despite powder plants taking in more milk in April, cream moved to uses other than butter. The United States produced 171 million pounds of nonfat dry milk (NDM) in April, unchanged from last year. At the same time, output of skim milk powder (SMP) increased to 50.2 million pounds, up 16% vs. the prior year. As evidenced by April’s export performance there is good interest from overseas in U.S. milk powder, supporting higher SMP output. U.S. cheese production continues to rise along with milk output in mostly cheeseproducing states.

Cheddar cheese production totaled 314 million pounds in April – the highest monthly total since record-keeping began.

Total cheese production was an impressive 1.04 billion pounds in April, 3.7% higher than the previous year. Mozzarella output amounted to 348 million pounds, up 2.3% vs. 2016. CME spot markets started the week mostly lower. Cheddar blocks and barrels slipped 3.5¢ and 3.25¢, respectively to close at $1.665/lb. and $1.4575. NDM closed at 94.5¢ down 0.25¢. Butter continued to move higher, up 3¢, settling at $2.515/lb.

Nonfat dry milk (NDM) closed at 92.5¢, down 2.5¢ after two trades. Despite the higher GDT performance, CME NDM futures remained under pressure, closing lower on the day. In the end, the GDT and CME were in opposition leaving market participants to sift through the data to glean information about market direction in the coming days.

June 7 - Currency Increases Competitiveness

The strengthening peso has muted the impact of rising milk powder prices for Mexican consumers. The National Dairy Product Sales Report shows nonfat dry milk (NDM) at 89.66¢/lb. in the week ending June 3. Since reaching a near-term low in early April, NDM prices have rallied 8.6%. But to Mexican buyers, prices appear to be up just 6.3%. USDA’s Dairy Market News reported last week, “A few contacts suggest that sales to Mexico, China, and the Southeastern markets have strengthened lately.” If the dollar continues to slip or stabilize around current levels, U.S. dairy product exports are likely to beneÀt. NDM prices slipped at the CME spot market today.

Cheddar blocks also fell, narrowing the block-barrel spread to a still wide 22.5¢.

But the real loser was butter. CME spot butter plunged 6.25¢ to $2.4625/ lb. JUL, AUG, and DEC butter futures traded a nickel lower, at their downside daily trading limit, although they settled above limit-down.

Slaytons diversify organic dairy, recognized for milk quality

AVOCA, N.Y. – Tucked in the rolling hills of Upstate New York’s Finger Lakes Region, Hemlock Ridge Farm has been producing organic milk since 2014. Kelvin and Jessie Slayton, along with their daughters, Madeline, 6, and Caroline, 2, are the farm’s owners, milking 50 cows near Avoca, N.Y. But milk is not the only commodity leaving the Slayton’s farmstead; hay, corn, soybeans, grains, maple syrup, organic chickens, eggs, owers and vegetables are all part of the farm’s 700-acre operation.

Kelvin was born and raised on a dairy farm. When he and his wife made the decision to enter the dairy business themselves, however, inheritance was not an option.

“My parents still operate our family’s dairy farm,” Kelvin said. “Inheritance was not an option at the time, so Jessie and I set out on our own.”

The couple purchased Hemlock Ridge Farm in 2006. In the early years, the Slayton’s cash cropped corn, rye, buckwheat and hay as they established themselves as beginning farmers. In 2013, the couple purchased 40 heifers they would later transition into an organic dairy herd. In 2014, they in-

The Slaytons have received numerous awards for their farm’s milk quality since they began milking in 2014. They are three-time recipients of the New York State Super Milk Award, the 2015 Organic Valley’s Cream of the Cropp Award, the 2016 Organic Valley Northeast Region Gold Quality Award and most recently ranked in the top 40 in the 2016 National Dairy Quality Awards.

Kelvin carefully monitors his herd. In cows with suspicious quarters, he performs a California Mastitis Test (CMT) to determine mastitis presence and severity. All animals testing positive on CMT have milk samples sent to Quality Milk for analysis. If samples return positive, the Slaytons determine what bacteria is causing the problem. However, their area does suit them for organic production. According to Jessie, their location has served them well while marketing their products in the rst three years of production.

“We have the advantage of a good market for organic crops and milk market in this area,” Jessie said.

Quality milk and a diverse business keep the Slaytons optimistic as they continue their dairying career. They said they are proud of the products they are raising and providing for their community.

A day in the life of the Beard family Winneshiek County dairy focuses on making hay June 2

DECORAH, Iowa – With a bright sun in the sky and high temperatures, June 2 turned out to be a eld day for many farmers.

This included the Beard family at Canoe Creek Dairy near Decorah, Iowa. Dan and Bonnie Beard milk 92 cows on their dairy with help from their sons, Sam and Tom. Their youngest son, Parker, recently graduated from college and is completing an internship on a small grains farm in New York before he plans to return to his family’s farm. Their daughter, Erin, and her husband, Torray Wilson, live with their family

in northwest Iowa where they also dairy farm.

The day started at about 6:45 a.m. with milking in their swing-16 parlor. Dan, Bonnie and Sam worked together on this rst chore of the day.

“We’re still freshening, so it goes better with three people, but two people can usually handle milking. It would not be a nice job with one,” Bonnie said.

The herd is bred seasonally, with all cows calving in the spring and drying up by the middle of January.

As of May 1, the herd is no longer fed grain and the milk is considered to be part of the grass-fed program through their cooperative.

Other than the grass they eat in the pasture, the cows are given baleage, kelp and salt at a

bunk outside the parlor before they head out to the pasture each morning. On June 2, Dan fed the cows their additional feed, while Tom gave an organic-approved treatment to a cow with a uterine infection.

“He really doesn’t have to treat cows that much,” Bonnie said.

Out of 92 cows that calved in this spring, two had to have some sort of treatment.

“I think that’s pretty good,” Bonnie said.

At this time, Bonnie fed the newest calves on the farm.

In the former stanchion barn, calves are fed in individual pens for about one or two weeks of age before they are put into small groups with four to 10 calves to adjust to socialization. Once there is a group large enough, the calves are moved to a small section of pasture where they continue to receive milk, but also start grazing.

After loading up the back of the side-by-side vehicle with ve-gallon buckets full of milk on June 2, Sam headed out to the pasture to feed the calves in the pasture that are not yet weaned.

“We try to get them out on grass as fast as we can,” Sam said. “They seem to get sick less easily when they graze.”

The four-month mark is weaning time.

“The milk helps keep the worms and parasites away,” Sam said.

Although Sam is currently working full time on the farm, his schedule uctuates during the year. Since graduating from high school in 2011, Sam has interweaved farming and traveling. Last year, he spent eight months for work in Australia and Pennsylvania. It was the longest he had ever been away from the farm.

“The farm is my returning place,” Sam said. “It has

“I’m trying to gure out what I want to do,” he said.

“We eat well and we try to eat what we grow,” said Bonnie, whose specialty is pesto pasta. “I like to feed people and feed them good food. Casseroles have been big this week.”

Some days she delivers lunch to the eld.

“It’s fun to get out. I’m not a tractor person so it’s fun to take lunch to everyone and see what’s going on,” Bonnie said.

On June 2, everyone gathered for a meal around the kitchen table, with a diverse array of conversation. Tom talked about the progress of the pizza farm he and his wife, Maren, are currently in the process of building on their farm just down the road from the dairy. Along with helping Dan and Bonnie, he and Maren grow a large veg-

etable garden and have a ock of sheep. Once they open their pizza farm in the fall, they plan to make the pizza using homegrown ingredients.

Groux had recently own in from Virginia. Although he works as an attorney on the East Coast for the majority of the year, Groux is able to be a farmer for at least six weeks.

His mother’s family is from the Decorah area, and he grew up spending time on his uncle’s

farm each summer. It became another place he considers home. After meeting the Beard family at a grazing conference in Texas in 1999, they became partners in the beef business and have been friends ever since.

After a pleasant lunch, the day picked up speed again as each person got back on task with various jobs, including baling, picking up bales, mowing and preparing equipment

for wrapping bales for baleage.

“We’re extra motivated this year to get a good hay crop because of getting on the grass[milk] truck,” Dan said.

“The cows seem to do well on just grass.”

Tractors lled the shop area, right in front of the family’s line of solar panels. For the past two years, the Beards have relied mostly on solar energy to power the farm, cutting their electric bill from $600 to $27 each month.

“They are zero maintenance. They’re worth it,” Bon-

nie said about the solar panels, which will pay for themselves within seven to nine years.

It is just one of the changes they’ve made over the years.

Dan and Bonnie moved to and began renting their current farmsite in 1980. In 1983, they added a dairy herd to the farm.

Grazing started in the mid-90s and they were certied organic in 2003.

“We were basically organic anyway,” Dan said. “We didn’t really use any chemicals.”

It is part of the way they feel they are preserving the

countryside and picturesque farmstead.

“We tend to be so busy we forget how beautiful it is,” Dan said. “But we try to remember to stop and take it in. We’re pretty blessed to live where we do.”

Although days like June 2 get busy, especially with the regular routine of chores rounding out the day, the Beards try to take time to enjoy the evening hours with bicycling, gardening or enjoying a meal together.

Iowa Dairy Princess candidates sought

Midwest Dairy Association’s Iowa Division is seeking candidates to serve as Iowa’s 64th Dairy Princess. The entry deadline is Saturday, July 1.

The Iowa Dairy Princess serves as the ofcial goodwill ambassador for the state’s dairy industry, helping communicate with people about dairy farmers’ stewardship for animals and natural resources, the safety and wholesomeness of dairy products, and the economic importance of dairy to Iowa’s economy.

Eligible candidates include young women from 16 to 22 years old from active Iowa dairy farms, who work on a dairy farm or whose parents are employees of an Iowa dairy farm. Young women who live in counties with a local princess contest managed by a dairy promotion board must be nominated through their county program. However, candidates who live in counties without an active princess contest can apply to represent their own county. Potential candidates can learn more about the contest and dairy princess program at the Dairy Iowa Youth Communications Workshop Thursday, June 8, 2017, at the Heartland Acres Agribition Center in Independence, Iowa. The 2017-18 Iowa Dairy Princess and Alternate will both receive $1,000 scholarships from Midwest Dairy Association’s Iowa Division.

A future in dairy Schock’s outlook shaped by experiences on grandparents’ farm

SALEM, S.D. – Cole Schock is a young man who knows exactly what he wants.

“I want to learn everything there is to know about dairy cows,” he said. “I think that dairy cattle are the most fasci-

nating creatures on the face of the earth.”

Cole recently graduated from McCook Central High School and will begin classes this fall at South Dakota State University where he will be majoring in dairy production.

“Ever since he was a toddler, Cole was Larry’s right hand man,” Judy said. “He would follow Grandpa around everywhere he went. He even had to wear a cap that looked just like his grandpa’s.”

Cole’s parents, Travis and Dawn, live on a farm about two miles away from the dairy.

Travis works at CHS Farmers Alliance Coop in Mitchell and Dawn is a program technician at the FSA ofce in Salem.

Cole’s brother, Matthew, is a high school student.

“Cole has always had a knack for working with dairy cattle,” Brian said. “It’s something he was born with.”

During his formative years, Cole spent as much time as possible working on his family’s dairy farm.

“Grandpa would often pick me up after school, and I would help him do things like work cattle or x fences,” Cole said.

Larry and Judy paid Cole for his labor. Cole squirreled the money away and used it to purchase dairy cattle. He currently owns about two dozen head.

“Grandpa loved to go to dairy cattle auctions,” Cole said. “He would hook his pickup onto his trailer, tell me to hop in and off we’d go. We drove as far away as Kansas and eastern Iowa to look at dairy cattle.”

During one of these forays, Cole purchased a Brown Swiss heifer calf named Autumn. That

“I like working on a dairy farm because there’s something different to do every day.”

At age 9, Cole joined 4-H and began to show and judge dairy animals. During high school, Cole became very active with his local FFA chapter.

In his junior year, he was a national FFA prociency diversied livestock nalist and won the state prociency award for dairy production. This year, he won the state entrepreneurship award for dairy production and was named state FFA Star Farmer.

When he was a sophomore, Cole’s FFA dairy judging team won the state dairy judging contest. They then placed

Cole Schock purchased Autumn, his favorite show cow, when she was a calf. Last year, Autumn won grand champion at the McCook County Fair and was awarded reserve champion in the Brown Swiss division at the South Dakota State Fair. calf grew to become Cole’s favorite show cow, and for good reason. Last year, Autumn was named grand champion of the dairy show at the McCook County Fair and was awarded reserve grand champion in the Brown Swiss division at the South Dakota State Fair.

Sadly, Larry wasn’t able to share in Cole’s most recent successes. Larry suddenly passed away of a heart attack on Aug. 23, 2015.

“It was such a shock for me and for the entire family,” Brian said. “I was talking with Dad at the kitchen table at 8:30 that evening. I went home and at 10:30 I got the call from Mom. It was tough for everyone, but I think it was especially hard on Cole.”

“There will be days when I’m doing chores and I’ll catch myself looking up toward the house to see if Larry is going to come out to help,” Judy said. “He had been a part of this farm for so long, it still doesn’t seem like he’s really gone.”

“I looked up to Grandpa,” Cole said. “He gave me the experience of being on the farm and the opportunity to purchase my own cattle. I am deeply grateful for all of the opportunities he gave to me.”

After Larry’s passing, Judy and Brian decided to give Cole the very rst tractor Larry had ever owned – a shiny red Farmall Super MTA. “That tractor means a lot to me,” Cole said. “It’s a tangible reminder of the many great experiences that Grandpa and I shared.”

Cole’s decision to attend SDSU was partially inuenced by Brian, who is a SDSU Dairy Science grad.

“I had talked to Brian about which college I should choose,” Cole said. “But one of the things that affected my decision was a Dairy Camp I attended at SDSU when I was in eighth grade. They let us reach into a stulated cow and bring out some of the feed she had eaten. Some of the kids were grossed out, but I thought it was awesome.”

Cole’s interest in animal health care led him to take a part-time job as an assistant at the Salem Vet Clinic.

“I really enjoy working with large animals and learning what makes them tick and guring out how to x what’s wrong with them,” Cole said. “My experience at the vet clinic has got me thinking about going to veterinary college after I graduate from SDSU.” The Schock family is justiably pleased with Cole’s many accomplishments.

“I think it’s quite an achievement to go out and go to college,” Judy said. “Cole’s parents did a wonderful job of raising him. We are all very proud of him. We hope he comes back to the farm after he graduates, but no matter what he chooses to do, I know that he’s going to be just ne.”

Brian said Cole is self-motivated and a natural leader.

“He’s always there when you need him and is always willing to help out. He’s also a great kid jut to sit and talk with,” he said.

While nobody knows what the future may hold, Cole is determined to stay deeply involved with the dairy industry.

“Growing up on a dairy farm has taught me that hard work pays off,” Cole said. “How you treat your animals will make a big difference on the amount of money that you have in your pocket. No matter what happens, I know that I’m going to end up somewhere in the dairy industry.”

More ag plastics free recycling dumpster dispersal events In response to calls for a solution to the ever growing piles of used lm plastic on farms and at boat dealers, the Recycling Association of Minnesota, and nine central Minnesota counties; Stearns, Benton, Sherburne, Pope, Douglas, Otter Tail, Sibley, Nicollet and Le Sueur, have teamed up with the Revolution Plastics Company to collect and recycle many types of these plastics.

There is still time for farmers throughout the entire state of Minnesota to sign up to get on the list to pick up a free dumpster to use for recycling their bale wrap, silage bunker covers and silage bags at no charge. Depending on farm location and plastic use, Revolution will spot and empty a dumpster on farms or dairies at no cost to the farmer. The program is limited to these approved plastics: bale wrap, Ag/ silage bags, most bunker covers and oxygen barrier lm.

They also accept used irrigation tape and tubing, greenhouse, hoophouse and other cover lms.

The next dispersals of the free dumpsters for collection and recycling of waste agricultural plastics will be June 20 at Blue Lakes Plastics in Sauk Centre. Farmers will need to call Revolution Plastics toll

After farmers are notied by Revolution Plastics that they have qualied, they will receive information on where and when to come to pick up

their dumpsters. This is by appointment only since there is a specic number of dumpsters and Revolution Plastics wants to be sure that everyone who has been given an appointment receives the dumpsters they signed up for.

The no-cost Revolution Plastics program is not government subsidized, but rather is run by the company itself. The collected plastic is sent to their Revolution Bag factory in Arkansas where it is remanufactured into garbage can liners

and construction lms which are actually sold back into Minnesota and across the country within a few short months of collection from our area farms.

This is a one of a kind system whose success rests upon providing a very clean, consistent feedstock to the bag manufacturing plant to assure that the can liners produced meet their very high quality standards.

There are no guarantees that additional dumpsters will be given out after this summer, so if farmers want to have this free service, they should join the other 700+ Minnesota farmers who already have one or more of these recycling dumpsters on their farms, and sign up right away.

Hawk High Dairy to display parlor at open house June 15

Celebrating a milestone

NORWALK, Wis. – After milking in a double-8 herringbone parlor for nearly 18 years, Andi Rynes said her family was ready for a change.

The Rynes family – Andi, her husband, Mike, their children, Walker, Zoey and Tanner, and Andi’s parents, Connie and Bob Radke – milk their 540cow herd three times a day on their farm, Hawk High Dairy, LLC, near Norwalk, Wis. To accommodate their herd and employees, Hawk High Dairy recently built a double-12 Champion parallel parlor which will be on display during the Mondovi Dairy Systems Open House on Thursday, June 15.

With 55 dairy cows and a handful of youngstock, the family milked under lease until they made their full purchase in 1993. Over time, the farm continued to grow.

“We raised all our own heifers and made purchases over the years that got us to the size we are today,” Connie said.

The farm’s rst expansion took place in 1997, when

a 200-cow curtained freestall barn was built and the stanchion barn was retrotted to a double-8 herringbone parlor with a holding area and maternity pens. In 2009, a second barn was built to house an additional 200 cows.

By 2015, the herd was growing and the facilities were in need of updates. The farm’s rst freestall barn needed repair and additional space.

were to the point they could no longer hold a snow load, so we had to do something,” Andi said. “We gutted the barn and tore it down before building it back in sections. In the timespan from when we rst built the barn to that point, we had gotten smarter and were able to identify and incorporate the things we needed.”

One such need was a new parlor. Having considered the idea, Andi said it was time to

build.

“If we were going to jump, we had to jump,” Andi said.

“We wanted more efciency for our employees and cows, so it was time to take the plunge.”

The family worked closely with their dealer, Terry Leland, who Andi said provided the family with a lineup of farms with parlors similar to what they were considering.

“Terry knew what we were after and took us to farms he thought may be of interest,” Andi said. “We didn’t want anything fancy, just something that would t us best.”

The family chose a double-12 parallel parlor and construction began in June of 2016. The cows began using the system on Dec. 14.

“Mike walked into the house right before the rst milking and said, ‘Get ready,’” Andi said. “Those rst three days were crazy; we were milking around the clock just to get the cows used to [the parlor].”

The parlor is complete with an Alpro Herd Management System, instant cooling and direct ll.

Walker, who is currently attending University of Wisconsin-Platteville, is excited about the new parlor, particularly how the Alpro system has beneted their herd.

“We used Alpro in the old parlor, but never to its full potential,” Walker said. “We are learning something new every day.”

Walker said the system is a valuable tool that he believes was worth the investment.

“The old parlor served its purpose, but the cows are much more content here.”

“We are able to detect heats and monitor sicknesses 24/7,” Walker said.

“Now that we are using the system to its full potential, it really has paid for itself.”

The instant cooling and direct ll tankers were one of the nal decisions the family made when building the parlor. Having had two bulk tanks in the old parlor, Andi said she liked the peace of mind she gets with the tankers.

“We didn’t decide to go with the direct ll and instant cooling until November,” Andi said. “It is easier for the milk hauler to take a load of milk and

go without us worrying about our load being too much to t on his truck.”

Andi also said she was sold on the idea when considering the added details of the bulk tanks.

“There are numerous things that can go wrong when it comes to bulk tanks,” Andi said. “You have to trust that the bulk tank is getting cleaned and maintained by the employees and that they know what to do if something goes wrong. The tankers give us a little more predictability that way.”

Finally, the parlor was built with a holding area over double the size of the old parlor. The holding area is complete with a crowd gate and footbath.

“The footbath was designed with a room so all materials are readily available,” Connie said. “It was something we had seen on another farm that we liked and decided to make happen.”

Andi continues to use the double-8 parlor to milk fresh and sick cows. The milk is pasteurized for feeding calves.

She said while the parlor continues to be of value to the farm, the new investment has made an incredible difference.

“From there to here, it is night and day,” Andi said. “The old parlor served its purpose, but the cows are much more content here.”

The recent updates to Hawk High Dairy can be viewed during the Mondovi Dairy Systems Open House on Thursday, June 15 from 10 a.m. until 3 p.m. There will be light refreshments and the family will be available to answer questions. About the 2017 election There were 11 certied candidates running for nine board member positions. Of the 3,477 dairy producers living in the election districts, per DATCP records, 11.8 percent returned ballots. That number is down from 12 percent in 2016, 13 percent in 2015, 15 percent in 2014 and 21 percent in 2013.

District 16, which had two candidates, recorded the most election participation with 22.9 percent of eligible producers in that district voting. The election closed May 25, 2017. People in the dairy community National Dairy Shrine announces 2017 award winners National Dairy Shrine (NDS) announced the winners of the Guest of Honor: Bonnie Mohr, Glencoe, Minn.; Distinguished Dairy Cattle Breeder: Tom Kestell, Waldo, Wis. and Arnold Knight, Markesan, Wis., Frank Kosikowski, Ithaca, NY, Edward Guthrie, Ithaca, NY, Jack Remsberg, Middletown, Md. and Larry Tande, Medford, Minn., have all been selected as National Dairy Shrine Pioneers. The NDS Progressive Commercial Dairy Managers award goes to brothers Andrew and Brian Schilling of Darlington, Wis. Garrett Eiholzer of Stanley, NY has been selected as the Graduate Dairy Production Grant winner.

CRI CEO announces retirement Doug Wilson, CEO of Cooperative Resources International (CRI), will retire from the agricultural holding cooperative in August. Wilson has spent 49 years in the A.I. industry, of which 39 were with CRI. Early in his career, he worked in cattle genetics and came to GENEX, part of CRI, as the vice president of genetic programs. Later, he took on the role of leading GENEX domestic marketing as well. In 1993, Wilson was named COO of GENEX. Then, in March 2002, he was named CEO of CRI. Under Wilson’s leadership, CRI grew by revenue and employees. CRI reported $189 million in revenue in 2016 and employs more than 1,350 people across the globe. The CRI board of directors will begin the search for a new CEO immediately.

Holstein Association USA recognizes Young Distinguished Junior Member nalists Regan Demmer and Isaac Nelson were among eight nalists who have been named in Holstein Association USA’s annual Young Distinguished Junior Member (YDJM) competition. The YDJM recognition is the highest award given to National Junior Holstein members, ages 9 to 16, and honors their dairy project work and involvement with other agricultural and community organizations.

The eight nalists will be honored during the 2017 National Holstein Convention, June 27 – July 1 in Bellevue, Wash. Applicants for the YDJM award complete an entry book, which summarizes their involvement with Holstein cattle and programs, as well as other extracurricular activities.

Nelson, Baier named Outstanding Seniors in CAFES at UWRF Kristopher Nelson, a double major in agricultural business and dairy science from Arena, and Faith Baier, an animal science major from Durand were presented with awards for being outstanding seniors in the College. The awards were announced at the 34th Annual CAFES Senior Supper on April 26. The Dr. Earl Hildebrand Memorial Award for the Outstanding Senior in CAFES was presented to Nelson. Baier received the Rochelle Junkman Seymour Award as the graduating senior in the College with the highest GPA. Wisconsin Holstein Association awards scholarships to members The Wisconsin Holstein Association is proud to award nearly $14,000 in scholarships to 15 youth in 2017. Scholarships were awarded to members studying in agriculture or related elds at a two-year or four-year University. These outstanding members will receive their scholarships at the 2018 Wisconsin Junior Holstein Convention, to be held in Stevens Point.

Amanda Gehrke of Arpin, will receive the $1,000 Gordon Berg Memorial Scholarship. Gordon was a long-time Wisconsin Holstein member and breeder from Brownsville. Receiving the $1,000 Doris Morris Memorial Scholarship is Meikah Dado of Amery.

Kalista Hodorff of Eden will receive the $1,000 Bradley Fust Memorial Scholarship. Hannah Nelson of Ellsworth will receive the $1,000 John Klossner Memorial Scholarship. Receiving the $1,000 John Selz Memorial Scholarship is Paige Nelson of Ellsworth.

Marlowe Nelson Memorial Scholarship. Nine additional Wisconsin Holstein Junior members will receive four-year or two-year scholarships. Governor Mark Dayton signed ten budget bills that included a rst-of-its-kind beginning farmer tax credit. Authored by Rep. Nels Pierson (R-Rochester) and Sen. Mike Goggin (R-Redwing), the bill supports the transition of land to young and beginning farmers through a tax credit incentive.

Central Minnesota Young Farmers Coalition cofounder (CMNYFC) Matthew Fitzgerald, an organic grain farmer, said, “This bill offers a win-win solution for the future of farming in Minnesota. In turn, the beginning farmer must take a farm management course to qualify for the tax incentive and would be eligible for a tax credit covering the full cost of training. The tax credit is effective in the 2018 tax year and is funded at 12 million dollars for the 2020-2021 biennium. The funds are available on a rst-come-rst-served basis. Finally, the sunset for the credit is 2023 with the Rural Finance Authority issuing a report on the effectiveness of the credit no later than Feb. 1, 2022.

Beginning farmer and Central Minnesota Young Farmers Coalition co-leader Andrew Barsness talked about the organizing effort to pass the bill: “Young farmers across the state worked hard to see this pass.

We organized, testied, and worked with the authors to get a good piece of legislation. For many of us, this was our rst time getting political. This effort showed that by working with a broad coalition and staying focused on practical solutions, beginning farmers have a voice and power.”

The bill had bi-partisan support: House File 608 was co-authored by Representatives Jason Rarick (RPine City), Josh Heintzeman (R-Baxter), Mary Franson (R-Alexandria), Greg Davids (R-Preston), Jeanne Poppe (DFL-Austin), Gene Pelowski (DFL-Winona), Clark Johnson (DFL-North Mankato) and David Bly (DFL-Northeld). In the Senate, the bill (SF 1414) was chief authored by Sen. Michael Goggin (R-Redwing) and co-authored by Senators Andrew Mathews (R-Milaca), Rich Draheim (R-Madison Lake), Kent Eken (DFL-Twin Valley) and Dan Sparks (DFL-Austin).

Additionally, the Central Minnesota Young Farmers Coalition worked with major agricultural groups that included: Minnesota Farm Bureau, Minnesota Farmers Union, Land Stewardship Project, and the Minnesota Catholic Conference.

Rachel Brann, a beginning cut-ower farmer, summarized the impact of the bills by saying: “More beginning farmers on the land means stronger communities for Minnesota. This bill helps all farmers -big or small, rural or urban, conventional or organic.”

I finished planting my short day corn in the rye stubble. I cut the rye the beginning of last week and we baled it the next RAINFALL day. We made first crop TOTALS hay May 31-June 2. We Last 2 will bale the last bit of Weeks first crop hay tonight when the dew comes out and we can save the top leaves. We round bale 0.35” and wrap all our first crop hay. Our triticale and peas we planted April 15 should be ready Since April 1 in a couple weeks. The 5.25” corn we planted in early May is 3 inches tall. A neighbor had to replant some corn.

Since the sun came out and it warmed up, the crops are looking good. Our corn might take a yield hit in the low, poorly drained areas, but it’s not enough to RAINFALL replant. I’d say 90 percent TOTALS of our ďŹ elds are planted. The Last 2 hay is looking really good.

Weeks We cut grass on June 2, and it was about 4 wet tons per acre. We started cutting hay yesterday (June 5) and are hoping to ďŹ nish it up tonight or tomorrow morning. It’s standing 24 inches tall and in the early budding stages.

We’re yielding 5-7 wet tons Since April 1 15.5� per acre, which is really nice.

Next, we’ll start spraying everything and getting nitrogen on the corn.

I’m going walleye ďŹ shing next weekend, so there’s incentive to get everything done.

We started cutting hay Memorial Day weekend and chopped it to put in the silo.

The rain has been really spotty – we got 1 inch over the weekend, but a mile south, they received 2.5 inches. By the end of the week, hay will be three- RAINFALL fourths or completely TOTALS done. We’re done with Last 2 corn, but I’d bet there’s still Weeks 25 percent left to do in the area. We had a population issue with the corn we planted around Mother’s Day. On a 100-acre ďŹ eld, 1â€?

I have a 60 percent stand, but at this point it doesn’t pay to replant. No one has planted beans yet, but if the Since April 1 8.5� weather holds up, I’d say a majority of beans would be done by the end of the week. Right now, we’re just enjoying the warm weather with the sun out.

This area has not received any rain in the past two weeks other than maybe a sprinkle – nothing enough to measure. With no-till ground I’m not worried about not RAINFALL having any moisture on the TOTALS ground yet, but if we don’t Last 2 get rain in another week I Weeks might start to worry a little.

Everyone’s hitting hay hard right now. We are done with ďŹ rst crop and are looking at starting second crop around June 20. After cutting, the alfalfa got off to a slow start for second crop because the ďŹ elds were wet. They’re Since April 1 looking better each day. We 11.7â€? did our second pass spray on the corn yesterday (June 5). Right now, the corn is about 3-4 inches tall. I would say about 90 percent of the soybeans in the area are planted.

There’s a lot of hay and it’s looking like it will be a good crop. We cut hay this past weekend and will be 0.25� chopping it tomorrow (June 7). We plan to store it in a bag. Some people are at least a half week ahead of me, but Since April 1 the majority of people in the 11.25� county are cutting or have cut hay right now. We hope to get it all done on Wednesday since there is rain forecasted for Thursday.

WASHINGTON, D.C. – Look for the 2017 U.S. all-milk price to range between $17.35 and $17.85 per hundredweight (cwt.). That’s the forecast from the May 16 Dairy, Poultry and Livestock Outlook.

The report comes from the USDA’s Economic Research Service (ERS). Its authors said they expect the Class III milk price – the price paid for milk that’s made into cheese – to stay at $15.57 per cwt., or $2.81 higher than at this time a year ago.

Meanwhile, expectations for the Class IV milk price have been boosted to $14.35 to $14.95 per cwt., because a higher expected price of nonfat dry milk (NDM) more than offsets the lower price that’s expected for butter, the ERS economists explained. “Based on higher expected export demand, the NDM price forecast for 2017 has been raised to 87.5 cents to 91.5 cents per pound. The butter price forecast has been lowered to $2.115 to $2.195 per pound, based upon recent price movements,� the report said.

The ERS’s forecast for the number of milk cows on U.S. farms is unchanged at 9.385 million. However, milk production expectations have been lowered to an average of 23,110 pounds per cow. That forecast is down 40 pounds per head from the April estimate.

Forecasts for U.S. exports of dairy products have been raised. They have increased by 0.3 billion pounds when a milk fat basis is used to make the calculation, and by 0.6 billion pounds when skim milk and milk solids are used in the calculation. The ERS report looks for the United States to export more product – cheese along with whey products, lactose, skim milk powder and nonfat dry milk.

At the same time, ERS economists expect less cheese to be brought into the U.S. Because of that, the forecast for

imports on a milk fat basis has lowered by 0.4 billion pounds.

But the ERS also expects higher amounts of food preparations that contain substantial dairy content to come into the United States. That expectation prompted the ERS to bump up this year’s forecast of imported dairy ingredients by 0.1 billion pounds.

On the domestic side of the equation, commercial usage of dairy products is expected to come back later in the year.

Commercial usage was down during January, February and March, the ERS stated.

Domestic usage of dairy products is seen rising by 1.9 percent this year, over 2016. If it does, it would total 213 million pounds.

Turning to next year, ERS economists see United States milk production continuing to climb.

With higher expected milk prices and relatively low feed prices, the milk production forecast for 2018 is 222.0 billion pounds, a 2.4 percent increase above the 2017 forecast, according to the May outlook report. Milk cow numbers are forecast to average 9.425 million head for the year, and the 2017 yield forecast is 23,560 pounds per cow.

Despite the expectation that milk production next year will rise by an average of 450 pounds per cow, the ERS set the all-milk price at $17.55 to $18.55.

If those prices materialize, they will be 20 to 40 cents higher than those expected for this year.

The Class III price is seen going higher next year, as is the Class IV price. A range of $16.40 to $17.40 is expected for the Class III price, with the Class IV price running a bit lower at $14.40 to $14.50.

The ERS continues to expect feed prices to stay low. Corn is expected to be $3.25 to $3.55 per bushel. Soybean meal is seen selling at $320 a ton.

For alfalfa hay, the price averaged $135 a ton in March. That was $4 under the average in March 2016.

Feed prices for the rest of this year and into 2018 are expected to also stay low, according to the ERS. The forecast for corn is $3 to $3.80 a bushel. For soybean meal, it’s $295 to $335 a ton.

Cream of the crop June Dairy Month celebrates all that is good about the products we produce. Many will claim ice cream, yogurt or a tall glass of chocolate milk as their favorite dairy product. Mine is a nger swipe of sweetened whipped cream. It is too bad that with all of today’s conveniences we have forgotten how easy and sweet it is to have real whipped cream on a bowl of fresh strawberries. I am guilty of grabbing a container of non-dairy topping in the freezer section because I don’t think I have time to whip up whipped cream.

I need to change my shopping habit.

Making whipped cream can be as quick as ipping the switch on your mixer or as fun as handing a jar for kids to shake. Like anything in the kitchen, there are a few tricks to keep in mind. Everything needs to be cold, the cream and the utensils. I put my mixer bowl and whisk attachment in the freezer 15 minutes before I’m ready to start whipping the cream.

You can even put ice cubes in a large bowl and then place your mixing bowl on top of the ice cubes to keep things chilled while you whip up the cream. The coldness helps the cream whip quickly and helps increase the volume.

Now some people feel the best way to whip cream is by hand. It doesn’t take much longer and you can t in your arm exercise. The best thing about whipping cream by hand is that you don’t have to worry about over

beating the cream. You’ll tire out before you reach the butter stage. To test if the cream has reached the soft peak stage, lift the whisk straight out of the bowl, ip it over and see if a dollop falls slightly off to the side. Then, it is just right. If you use a mixer, start on a low speed as you gradually add the sugar and vanilla. Then you can speed up to dissolve the sugar and increase the volume of the cream. Remember not to over beat the cream. It will eventually turn to butter if whipped too much. If you want to hand off the job to the kids, ll a jar half full with all the ingredients. I would use powdered sugar with this process for more stability. Seal the jar and start shaking till thickened.

As milk comes in different varieties (whole, 2 percent, 1 percent and skim) so does cream. While milk can be interchangeable without losing nutrient value, creams cannot be substituted for each other. The greater the butterfat content, the better the whipping ability. Look for whipping cream or heavy cream with a butterfat content of at least 30 to 35 percent. Coffee creamers are generally around 20 percent butter fat while half-and-half is only 10-12 percent butterfat. Also, ultra-high pasteurization whipping cream will have a longer shelf life.

By buying this, you can always have whipping cream on hand for those surprise guests. Nothing dresses up simple brownies more than a dollop

With fresh strawberries just around the corner and light summer desserts on the menu, whipping up a batch of fresh whipped cream to top off your June dairy month is simple.

Enjoy.

Whipped Cream 1 cup heavy cream or whipping cream, cold 3 Tbsp. sugar, granulated or powdered 1 tsp vanilla or another avor extract Whisk together until soft peaks form. Do not overbeat. Keep refrigerated.

Éclair Dessert 1 stick butter 1 cup water 1 cup our 4 eggs Preheat oven to 350 degrees.

Grease a 9- by 13-inch pan. Boil butter and water. Add our. Stir to form a ball. Cool 1 minute. Add eggs one at a time. Beat with spoon. Spread in bottom of pan. Bake until brown, 30-40 minutes. Cool.

Filling: 3 cups milk 11 ounces cream cheese, softened 2 small packages instant vanilla pudding 1 cup heavy cream, whipped Chocolate syrup (optional) Beat the rst three lling ingredients together until thickened. Pour over cooled pastry. Spread whipped cream over top. Drizzle chocolate syrup over top for decoration if you want.

Mix and set aside the butter, powdered sugar and cream cheese. Mix the pudding and milk together until stiff in a large bowl. Mix the two batches together and then add the Cool Whip. Layer the cookies and filling in a big bowl.

Fill and roll soft shells with onion, cheese and chicken. Place in greased 9x13-inch pan. Make white sauce in sauce pan by melting butter, stir in flour to make paste. Add the butter and sugar, and then eggs to a mixing bowl and mix until smooth. Then add sour cream and ripe bananas and mix well. Lastly, add baking soda, salt and add flour and mix until blended.

Place in a well greased 9x5-inch pan and bake at 350 for about an hour.

Cool for 15 minutes and remove from pan.

Crust Preheat oven to 325°F. Line a 9-inch springform pan with parchment paper in the bottom and grease the sides. Mix together the crust ingredients until well combined and press the mixture into the bottom and up the sides of the springform pan. Bake the crust for 10 minutes, then set aside to cool.

Cover the outsides of the pan with aluminum foil to prepare it for a water bath.

Filling Reduce oven temperature to 300°F. In a large bowl, mix the ricotta cheese, mascarpone cheese, sugar and flour on low speed until combined and smooth. Be sure to use low speed to reduce the amount of air added to the batter, which can cause cracks, and to make sure you don’t over mix.

Scrape down the sides of the bowl. Add the cinnamon and vanilla extract and mix on low speed until well combined. Add the eggs one at a time, mixing slowly to combine. Scrape down the sides of the bowl as needed to make sure everything is well combined. Pour the cheesecake batter into the crust and spread evenly. Place the springform pan inside another larger pan. Fill the outside pan with enough warm water to go about halfway up the sides of the springform pan. The water should not go above the top edge of the aluminum foil on the springform pan.

Bake the cheesecake for 1 hour and 45 minutes, or until the edges are set and the center is still jiggly when moved (but not liquidy). Turn off the oven and leave the cheesecake in oven with the door closed for 30 minutes.

Do not open the door. Crack oven door and leave the cheesecake in the oven for another 30 minutes. This cooling process helps the cheesecake cool slowly to prevent cracks.

Remove the cheesecake from the oven, then remove the pan from the water bath and remove the aluminum foil. Refrigerate the cheesecake until completely cooled and firm, 6-7 hours or overnight. When the cheesecake is cooled and firm, remove it from the springform pan.

To make the whipped cream, add the heavy whipping cream, powdered sugar, ricotta cheese and vanilla extract to a large mixer bowl.

Whip on high speed until stiff peaks form. Spread the whipped cream on top of the cheesecake, then sprinkle with mini chocolate chips and a little additional powdered sugar, if desired. Refrigerate until ready to serve.

Cheesecake is best for 3-4 days.
